Champagne. Just the word evokes visions of, well, some sort of champagne lifestyle, doesn’t it. And while most of us can’t inhabit that elevated terrain for sustained periods of time, it is quite nice just to pop in and visit every now and then. From atop our effervescent empire, we have noted that there’s a lot more to the region of Champagne than one might have previously imagined; and far from being mired in tradition, it is very much a dynamic force and a place on the move. There are many options; from the sleek million-dollar brands to the intriguing independent Grower champagnes, the groundbreaking left-fielders to the aspirational prestige cuvées. Is small better? The Grower champagnes are certainly very interesting, and the quality is undeniably there. In the end, all of the categories have something to offer. Diversity is a good thing. The big houses, the négociants, have the skills, the resources and the experience to ensure consistency of quality year in, year out. As for the Growers, they are very individual expressions, terroir-focused wines with a great deal of character. If you’re looking for something different, they are going to be just the thing. The sometimes litigious Comité Interprofessionnel du vin de Champagne, tasked with safeguarding the champagne name from the encroaching hordes, has developed a wide-ranging set of regulations around viticultural and winemaking processes. With the French ever the branding geniuses, it’s all about maintaining standards and celebrating colourful histories stretching back over generations; nothing has quite the cachet of a bottle from Champagne itself. Those names are famous for a reason.

BOLLINGER
VEUVE CLICQUOT
Veuve Clicquot, with their almost unrivalled cachet and unmistakable branding, are the epitome of elegance. With over two centuries of champagnemaking expertise, they have forged an enviable reputation. The flagship nonvintage model, with its distinctive yellow label and high proportion of Pinot Noir, is a triumph of consistency and individual character, the perfect balance of finesse and forcefulness. The whole range, right through to the exquisite prestige cuvée, La Grande Dame, is superb.
In a world where big corporate ownership is often disparaged, champagne continues to write its own set of rules. Champagne’s unique character comes not only from its hallowed terroir, but also from centuries of painstakingly accumulated experience, particularly when it comes to blending. For sheer consistency, the non-vintage expressions from the big players are in a league of their own, and their frequently eye-watering financial resources allow them to stockpile vintage upon vintage in order to create a seamless transition of excellence from one year to the next.

ROSÉ DE SAIGNÉE BRUT NV
$59.99
There is a certain blushing and ethereal quality to rosé champagne that is quite appealing. Made from the same grapes as their more standard siblings, rosé champagnes are produced by either blending in small portions of red wine – either Pinot Noir or Pinot Meunier – and putting it through the second fermentation (rosé d’assemblage), or by giving the red varieties minimal skin contact to extract the pink colour, otherwise known as the saignée method, a process that can also enhance the wine aromatically. Rosé champagnes tend to exhibit a noticeable richness, with a distinct weight and vibrancy to the red fruit flavours.
Exponents of organic and traditional practices, the Drappiers aspire to a position of natural authenticity, employing minimal amounts of sulphur along with a low dosage approach that bestows a dry and aromatic elegance on their expressions. The pride of the house, the limestone-rich vineyards were initially established by the Romans 2,000 years ago. They are one of the few houses producing rosé by the saignée method. Dry in style, exquisitely fresh and expressive.
These are the champagnes made exclusively from Chardonnay grapes. They are known for their favourable natural acidity, elegant minerality and ability to age well. They are often at their best south of Épernay in the Côte des Blancs, where the chalkladen soils are particularly suited to white grape production. The Grand cru-rated commune Le Mesnil-sur-Oger, home to the legendary Salon, is here. Chardonnay-based champagnes lean into notes of citrus and minerality when young, acquiring more toasty, honeyed characters as they mature. CHARLES HEIDSIECK

CASE OF 6 $79.99 A BOT TLE
Established in 1760 and stablemate to the stellar Salon, Delamotte is one of Champagne’s best kept secrets. Situated in the top-tier village of Les Mesnil, the majority of its vineyards are Chardonnay and all are Grand cru. With Salon made only from the very best vintages and in tiny quantities, in the years it is not made, the first right to its fruit goes to Delamotte. The Delamotte wines are elegant and refined, with the NV exhibiting a deliciously understated purity and style.
While the name might not be as universally recognised as those of some houses, Charles Heidsieck produce brilliant champagnes that are prized by aficionados across the globe. Their provenance is immense, with origins stretching back as far as 1785. Matured 25 metres beneath the ground in chalk cellars constructed in the 11th century, the NV rosé is a delicately subtle, beautifully aromatic and evocative expression boasting creamy notes of strawberry, peach and cinnamon.

BERTRAND LILBERT
In places like the UK and New York, many of the top wine lists are now 100% Grower champagnes. These are the family enterprises, often stretching back over generations, who own their own vineyards in the heart of the Champagne appellation, from where they grow the grapes to make their own wine, often bottling it on the premises as well. If it’s individuality and character you’re after, the Grower champagnes have that in spades. Lacking the gargantuan resources of the big players, they are more reliant on the characters to be found within particular vintages and locations, and some would say they are all the better for it. Things are moving at such a pace that in places like the UK and New York, many of the top wine lists are now 100% Grower champagnes.
Established in 1756, this champagne house has been in the Lilbert family’s hands for eight generations. The first three were grape growers, selling their fruit to cooperatives and negociants. In 1907, with Alphonse Lilbert, the family became winemakers, finally taking their grapes from the vineyard through to the bottle. Since then, Jules, André, Georges and current winemaker, Bertrand, have maintained the family tradition, and the Lilberts now find themselves in their fifth generation of winemaking.
J LASSALLE
Located just outside Reims in Chigny-les-Roses, the boutique producer J Lassalle is run by three generations of women, with 50% of the small-scale 100,000-bottle production heading to the US. Lassalle led the way, the first of the Growers to really make waves in that market. Production is very traditional, with stainless steel, no oak, malolactic and 8-9gm dosage. They have 11ha, all Premier Cru, in Chigny-les-Roses, divided into 45 different parcels (50% Pinot Meunier, 25% Chardonnay and 25% Pinot Noir). The vineyards were planted by Angéline Templier’s late grandfather, with the company officially becoming a partnership between grandmother, mother and daughter in 2006.

Bertrand studied oenology, graduating in 1992 and travelling to work in California’s Sonoma Valley before returning home to work as a consultant. In 1998 he became the winemaker for his family house. Lilbert is all about Chardonnay, their vineyards sited within Champagne’s most prestigious area for the variety. The vineyards consist of just 3.5 hectares, planted on chalk soils in the villages of Cramant, Chouilly and Oiry. The villages are all Grands crus of Champagne’s legendary Côte des Blancs. Lilbert craft three different champagnes, all of them made exclusively from Chardonnay, with all of the fruit Grand cru. Total production is about 26,000 bottles, with 75% of it exported. The family do zero advertising and marketing, something Bertrand seems rather proud of. Those who know and appreciate quality eventually find Lilbert and make their way to them.

CRISTAL 2008
$359.99 Vintage champagne is created from the fruit of a single year, evoking the singular conditions that prevailed at the time. Their non-vintage siblings, on the other hand, are drawn from a pool of reserve wines from a number of vintages, in order to maintain a consistent house style. With the NV champagnes you get guaranteed consistency, while with vintage champagnes comes the potential for magic. Despite looking to be a pretty average season, 2008 ultimately arrived at the perfect conditions, delivering the vital ingredients of excellent fruit purity and fresh acidity that, when combined, can deliver exceptional vintage expressions. It is now being referred to in the same breath as some of champagne’s most legendary vintages.
60% Pinot Noir and 40% Chardonnay, this is an ultraprecise Cristal with superb potential, finishing with a mere suggestion of savouriness and warmth to come. Along with the Dom Pérignon, this sits at the top of the 2008 ladder, the Cristal gaining 100/100 from many wine writers. Louis Roederer’s chef de cave, Jean-Baptiste Lecaillon, considers it may be his “best Cristal to date.”

Salon is unique, exceptional and legendary, famed for producing tiny quantities of wine from a single variety and a single cru vineyard, and only in a few select years. A mere 38 since 1921, in fact. Named after the tiny walled Grand cru vineyard from which the fruit is sourced and made exclusively from Chardonnay fruit, the Salon wines are breathtaking, their extraordinary structure enabling them to age gracefully, often over several decades. 2008 was the smallest harvest ever, the release highly anticipated. The resulting wine is one of the most sensational champagnes ever produced. In recognition of its significance, Salon decided to bottle the entire 2008 vintage in magnums, allowing the wine to age at the associated graceful pace. Just 8,000 magnums have been produced (a standard Salon release being around 60,000 bottles). To celebrate such a rarity, Salon have taken things a step further and put each magnum in a special case together with three other vintages (two 750mL bottles of each). To cement this singular piece of their history, the bottles from the 2004, 2006 and 2007 vintages were all disgorged at exactly the same moment as the magnums of 2008. This one’s for you fearless aficionados out there.

Dom Pérignon. Cristal. Salon. La Grand Dame. Winston Churchill. These evocative names and their ilk represent the pinnacle of each house’s champagne production. With the French most adept at creating hype around their wines, the Champenois have excelled themselves when it comes to generating mythology and magic to market their ultimate expressions. Typically, prestige champagnes are produced exclusively from the oldest Grand cru grapes and extensively aged prior to release. They include single vintage wines, but are generally built on a profound depth of reserve wines from exceptional vintages. And yes, there is magic here. You’ll find a number of these stellar wines, as well, placed across the page under the Vintage 2008 banner.

Beyond the air of largesse that it invokes, the magnum’s size is ideal thanks to the greater surface area of glass: more contact between the yeast cells on the inside of the bottle and the wine generates more fizz. Man O’ War is a superbly positioned piece of island paradise, 150 acres of vines owned by the Spencer family. The name is derived from Man O’ War Bay, courtesy of James Cook during his first voyage around the islands of NZ. The family planted their first vineyard in 1993, subsequently developing a patchwork of around ninety separate vineyard blocks across the eastern end of the island, including a block on Ponui Island. Sited on hillsides and in gullies, the individual blocks enjoy distinctive soil types and micro-climates and are meticulously managed by viticulturist, Matt Allen. White varieties have been sited high on the exposed volcanic hilltops of Man O’ War to catch the cooling sea breezes, extending their growing season and bestowing good concentration and minerality, while the red vines cascade down steep, sheltered clay hillsides, where the heat and drainage promote excellent intensity and depth. The diversity of fruit provides winemaker Duncan McTavish with an excellent palette from which to blend his wines. Old World techniques combine with a New World approach to create elegant and unique expressions of this outstanding island terroir.

BRUICHLADDICH STILL HOUSE
Bruichladdich Octomore is the Godzilla of the peated whisky world. There is nothing else that even comes close. The first Edition 01.1 release in 2002 had a staggering phenol level of 131ppm (parts per million). The phenols in peat dried barley are the chemical compounds that impart what we perceive as the smoky/peated flavours; it doesn’t take much for us to notice. To put this in context, two of the most famous peated whiskies from Islay are Lagavulin and Laphroaig, at 35ppm and 45ppm respectively. The name comes from James Brown’s farm Ochdamh-mòr, above Port Charlotte, that once housed a distillery. Now we have two new releases from this iconic range. Edition 09.1 and 09.3 Dialogos. Edition 09.1 is malted to 156ppm. Made exclusively from Scottish-grown barley harvested in 2011 and distilled in 2012, it was matured on Islay for five years in ex-American whiskey casks, bottled at 59.1% alc./vol and limited to 42,000 bottles. Edition 0.9.3 is a single malt whisky of uber-provenance; one field, one farm, one vintage. Just 52 tonnes of precious Islay Concerto barley were harvested from Irene’s field on Octomore farm in 2011. This was malted to 133ppm and distilled in 2012. It was then matured on Islay for five years in a combination of 134 ex-American whiskey and French wine casks. The gentler influence of the wood allows more of the locally grown barley flavours to cut through the legendary peat smoke. Bottled at 62.9% alc./vol and limited to 18,000 bottles, so this will go very fast. RM

When it comes to the resurgence of gin on the global stage, Ireland is not the first country that springs to mind; however, being no slouches in the distilling world, they, too, have entered the fray, with good results. Now that Graham Norton has fully embraced the thrill of messing about with alcohol, his attention has shifted to this increasingly versatile spirit. The Graham Norton’s Own gins are produced at West Cork Distillers, Irish whiskey makers who are steadfast in their pursuit of excellence. The Irish packs a serious flavour punch, with a lovely rich floral aspect and a silkysmooth palate. Norton’s pink gin is made with Irish grain and 12 botanicals that include lemon and orange peel, elderflower and fuchsia flowers. The team at West Cork use rose petals to invest it with its pink hues. The Glendalough Distillery in County Wicklow claims to be Ireland’s first craft distillery. They produce a wild botanical gin and a rose gin, using seasonally foraged Irish botanicals, including alexander seeds, hawthorn berries, sloe berries, ground ivy, sage, rowan berries and rosehips. It’s the introduction of the local botanicals that gives the Irish gins their distinctive character, so take the time to take a look – it’s worth the effort. MP

MASTER DISTILLER OF THE YEAR, DR BILL LUMSDEN
Described by Master Distiller Jim McEwan as “the Olympics of whisky competitions,” edition 2019 of the International Whisky Competition announced its winners from Las Vegas on the 14th of June. In the tenth year of this prestigious competition, every entry was scored on a 100-point rating system by a panel of whisky professionals, with one gold, silver and bronze awarded in each of the categories. The big winners on the night were Glenmorangie and Ardbeg. The Glenmorangie Grand Vintage Malt 1991 took out the overall prize as the world’s premier whisky with a score of 97 points, its sister whisky, the Grand Vintage Malt 1993, taking out second, with the Ardbeg An Oa rounding out the top three. Ardbeg, for the second year in a row, won the prize for Distillery of the Year, also taking home gold for the best Islay 10-Year-Old, No Age Statement and Cask Strength Whiskies. As the mastermind behind so much of the success of the two companies, Dr Bill Lumsden was recognised as the Master Distiller of the Year. This is the third time in four years that Dr Lumsden has won this award, cementing his place as the world’s finest maker of the water of life. DL

Boneface is the brainchild of husband and wife team, Matt and Selena Dainty. Head brewer Matt is by no means new to craft beer, first working at Renaissance Brewery in Blenheim with Søren Erikson, now the Head Brewer at 8 Wired. Over seven years, Matt worked his way up to the coveted role of Head Brewer before moving to Upper Hutt, where he worked briefly at Panhead as a production brewer. In 2017 Boneface signed a five-year lease for a 1,000 square metre factory in Upper Hutt’s developing Brewtown complex. Matt and Selena ambitiously aimed for an annual capacity of 100,000 litres per year. Boneface The Big Unit received Wellington Region Beer of the Year in SOBA’s 2018 People’s Choice Awards. Today, they have amped up production to produce 300,000 litres per year. It is thanks to the success of Boneface that the Upper Hutt Brewtown has become a destination in its own right. The concept behind Boneface came out of the couple’s mutual love of all things beer and sci-fi, with their creation, Planet Hoptron (complete with backstory), the source of all craft beer and the Boneface beers supposedly brewed in a parallel universe. The beers are hop-forward without being overly bitter, with extra hops added to those that wouldn’t conventionally have them, such as The Darkness India Stout, The Juice Dry Hopped Gose and Outlaw IPL. The Boneface team are planning new summer seasonal beers. At their Brewtown brewery and tap room they have recently installed a kitchen to accommodate the hordes of beer-lovers that pour through its doors. A new beer cellar is planned for barrel-aging sour beers, and they get the Duty Managers at the brewery to brew small batch beers, available cellar door only. And what’s currently in Matt Dainty’s fridge? “Belgium-style sour beers, and the mandatory Hoptron APA of course.” TM

Beer and crisps, a match made in heaven no doubt. But what if you switched it up and made beer with potatoes and crisps with hops? Well, the Garage Project team set out to find out. Embarking on yet another epic collaboration, Garage Project have teamed up with the Proper Crisps folk to answer this burning question.
Based in the US, Stone Brewing are the Kings of Colabs, often collaborating with fellow craftsmen to create something unique and exciting. Traditionally, such colabs will be with other breweries, but in this case they have teamed up with Metallica. Enter Night is a beer with a Metallica-ish difference. At first glance a pale and refreshing, classic German pilsner, the addition of all-American hops turns it up to eleven. An absolutely smashable pilsner sitting at 5.7% ABV and 45 IBUs, you surely won’t get lost as you mosh your way to never-never land. WM
Proper Crisps have cooked up an all new beer-inspired crisp, uniquely flavoured with Nelson Sauvin hops, yeast from the by-product of brewing, and maca and molasses to resemble malt notes, creating a crisp that is designed to complement Garage Project’s Crisp Beer, not just mimic it. Garage Project have brewed a crisp lager made with Proper Crisps’ very own potatoes, Nelson’s best hops and pilsner malt. The result? The perfect Crisp Beer designed to be enjoyed with Beer Crisps. When it comes to packaging, both Garage Project and Proper Crisps agree, sustainability is key. They’ve used the eco-friendliest packaging available to them, aluminium cans and a home compostable bag with artwork inspired by potato stamps, so you can rest easy and enjoy your Crisp Beer and Beer Crisps, guilt-free.
