Schloss Vollrads is one of the world's oldest wineries. It has been in continuous operation for longer than any other estate, with one of its vineyards mentioned as far back as 850 years ago. Records found at the estate notate wines being sold to nearby Monks in 1211. And the record book doesn’t close there: the term Kabinett was first used by Schloss Vollrads in 1716, in reference to the winemaker’s top selection from that year, making it the first ever official classification of wine in the world. The estate is situated on Germany’s Rhine River in the wine region of Rheingau. Under the guidance of Dr Rowald Hepp, the Schloss Vollrads team apply a searing focus to just one variety, producing Riesling in its myriad forms and nothing else. Running the whole gamut of styles, 60% of production at Schloss Vollrads is dry, and always has been. The wines are elegant and complex, combining the finest soils and climatic conditions with a profound understanding of Riesling and a huge legacy of winemaking nous. All are fermented in stainless steel and made with minimum intervention, harnessing the magic found in the deep and chalky Rheingau soils, warm, mineral-rich and graced with many different layers of loam, sand and gravel as a result of their ocean- and mountain-influenced formation millons of years ago.

One of Burgundy's oldest estates, Domaine Lamarche is located in Vosne-Romanée, where the Lamarche family settled in 1740. Since its creation, the domaine has been run by successive generations of the family. From 1985, it was under the guidance of François Lamarche, who with his sister, Geneviève, owned the vineyards. Carefully managed over generations, the Lamarche vineyard portfolio includes a selection of parcels in Grand cru appellations Clos de Vougeot, Grands-Échezeaux and Échezeaux, plus four Premier crus in Vougeot-Romanée and one in Nuits-Saint-Georges. The jewel in the crown is their Monopole Grand cru vineyard, La Grande Rue. François retired in 2006, and his daughter Nicole took over the management of the viticulture and winemaking. Geneviève’s daughter, Nathalie, runs the commercial aspects of the domaine. The two cousins have made a number of profound changes that have injected new life into the family business, implementing an organic viticultural regime and restricting yields in the vineyards. They have as well made major investments in the winery, upgrading equipment and adjusting oak aging to better reflect the individuality of each vineyard and vintage. Bottled without fining or filtration, the Lamarche wines display a lush, shimmering flamboyance and great sophistication, where subtlety trumps power. Under Nicole's astute hands, the quality and consistency of the wines have been significantly lifted, the Lamarche women transforming their legacy into one of Burgundy's top domaines.

Eskdale Winegrowers was established by Canadian ex-pats Kim and Trish Salonius. They arrived in New Zealand in the 1960s, wasting no time in immersing themselves in the burgeoning wine industry that was just beginning to find its feet.

Historic winery delivering wonderful quality and value at every price point. This smartly crafted Pinot Gris offers appealing aromatics of peach, pear, florals and spice, the silky, medium-sweet palate displaying good balance and depth of fresh, ripe flavours.
Kim is decidedly in the hands-on camp; he makes the wine himself, largely from the vineyard he and Trish planted in the 1970s, and back then he built a small winery featuring old timbers, arched brick doorways and stained glass. Allowed to ripen to very advanced levels, the grapes are hand harvested, matured in 500-litre oak barrels and bottled at least two or three years after harvest. Kim likes to hold his wines back for a few years before letting them out into the world. One of the Bay's unsung heroes, he avoids the limelight, preferring to stay at home working on his craft and turning out his small range of superb and singular wines.

Garrison Brothers is one of the rare bourbon whiskeys made outside of Kentucky or Tennessee. It was, in fact, the first legal bourbon distillery in Texas, and until recently, it was almost impossible to find a bottle outside the State. In 2005, Dan Garrison purchased a small ranch outside the city and started building his own distillery. The first batch was not a success. The scorching 54-degree Texas heat destroyed the barrels. They cracked, leaked, and some broke altogether, in the process losing hundreds of gallons. Dan’s spirit was stronger than his casks though, and he eventually found a cooperage in Minnesota that was willing to form custom barrels for him. It then took years of trial and error, involving more than 50 different recipes, to perfect the bourbon, with numerous trips to Kentucky to learn from expert producers. The final result is made from organic Texas-grown corn and wheat, sourcing limestone-rich rainwater from the distillery rooftop. It stands out for its use of a far more expensive fresh sweet mash for each batch, rather than the usual multi-year sour mash. Over at least three years in oak, the extreme heat forces the bourbon further into the wood’s crevices than it does in Kentucky, extracting more sugars and colour from the pores. They vary the mash bill and alter the distillation proof each season, meaning every vintage is unique and individually labelled. They’re not that concerned with consistency, because consistency is boring. Each spring, Dan recruits local volunteers, to help him bottle the latest batch in between rounds of shots. They wax dunk each neck and stamp the top with the iconic Texas Star logo. Once inspected and polished, the bottle number is handwritten, and each one is hand-signed with a silver marker. Dan’s special batch ‘Cowboy Bourbon’ has now been Jim Murray’s American Whiskey Of The Year twice. Everything is bigger in Texas, and it’s safe to say Garrison Brothers is living up to that reputation. RM

Within the historic town of Waipu lies a boutique, independent brewery. When you think of Waipu, its iconic Pizza Barn may spring to mind, but with a reputation for making good beer under its belt, McLeod’s Brewery is changing that. Brothers Geoff and Clayton Gwynne started McLeod’s back in 2014, when they decided to brew their own beer for the Pizza Barn, which, incidentally, they had owned since 2003. Their aim was to produce world-class beers that offered a sense of place from their little slice of heaven in Northland, and to say they have succeeded seems like an understatement. Winning several major awards over the past few years, including Champion International Small Brewery at this year’s Australian International Brewing Awards, the world’s biggest beer competition, and taking out the trophy for Best Amber/Dark Ale as well, they had a lot to celebrate when they turned five last month. Head brewer Jason Bathgate has been with McLeod's since 2016, building a solid reputation for his dexterity with a range of beer styles. Passionate about mixed ferment and barrelaged brews, his barrel program has amassed a serious following. The artwork for the McLeod's seasonal brews is painted by grammy-nominated visual artist Sarah Larnach, whose watercolours bring the McLeod’s beers to life on the bottle. The Far North Chili Pils features her work. About to be re-released, it is a great example of McLeod’s Northland style, with Kaitaia Fire Chili Pepper Sauce added during the brewing process. Mexico is home to one of the globe’s oldest and most diverse food cultures, with roots in the Old World, via Spain, and the even more ancient Aztec and Mayan cuisines. The Mexican national holiday Dia de los Muertos is a unique opportunity to experience how these disparate roots combine to create a uniquely Mexican experience. A day of remembrance for those who have passed, it is also a celebration of Life, where the macabre is transformed into the festive. Since 2011, Garage Project have made a range of beers celebrating Day of the Dead using distinctive Mexican ingredients. Their flagship Day of the Dead beer is inspired by the Aztec spicy hot chocolate beverage, Xocolatl. Garage Project make a black lager with cacao, smoked chipotle chilli, vanilla pods, agave syrup, and cacao nibs. It has a restrained heat that builds as you drink. La Calavera Catrina is embraced as a Mexican image of Death, the skeleton woman wearing a fancy hat embodying its bitter sweet nature. The Garage Project salute to her is a blonde maize lager with generous habanero chilli notes balanced with the sweetness of rosewater and watermelon. Triple Day of the Dead is the original recipe brewed strong, with additional flavourings. It is then aged in tequila barrels for up to a year. Try these beers paired with carnitas wrapped in a real corn tortilla doused in lime. TM
George Duncan and Waimatao Familton ventured overseas after uni. With Canadian working holiday visas in hand, they were off, but not without making a vital detour involving a van, 22,000km, 50 US states, campfire dinners and the sampling of local brews. To this day, Waimatao continues to rave about Sierra Nevada Pale Ale ('Only $20 a dozen!'). Eventually, George and Waimatao made it to Canada. Their memories of America, however, sowed a seed, which sprouted into the aspiration to have their very own microbrewery. The duo eventually returned to George’s home town of Paraparaumu with another dream, one of starting their own family. A compromise had to be made, which turned out to be quite an easy one: why choose at all? And like clockwork, Duncan’s Brewing Company was opened just down the road, a commute most city folk can only dream of. Recipes are explored and critiqued, sometimes using American hops in homage to the inspirational trip. The experimental side has also grown. At Beervanna this year, Duncan's Raspberry Ripple Ice Cream Sour was rated 2nd by thirsty patrons, and rumoured to be brewing for another release, along with two new flavours. WM
