As this most difficult of years draws ever nearer to a close, we're sending out our best wishes to all of you and hope that a bit of healing is on its way via the summer that's coming. These are no ordinary low-priced vinos – in true Glengarry style we've headed out into the world and expended considerable effort seeking out wines that deliver far more than their low price would suggest. Acknowledged as one of Italy’s finest vinous craftsmen, Dino’s drive has taken Illuminati to great heights, with 150 acres of the finest terrain in the whole region in his Montepulciano-stained hands.

Californian Mark Shannon nursed an affection for the Primitivo grape that rapidly turned into an obsession. In California, the Primitivo variety is known as Zinfandel. These brilliant champagnes are superb value While Moutard may lack the fame of some of the other marques, their softly textured wines are nonetheless very impressive, and flying, as they do, somewhat under the radar, they offer exceptional value. The Moutard-Diligent family can trace their history of viticulture as far back as 1642, but it was not until the 1920s that they began producing champagne under their own name. Along with Pinot Noir, Pinot Meunier and Chardonnay, the family is one of the few to still nurture the permitted Arbane, Petit Meslier and Pinot Blanc grapes, instilling these almost forgotten varieties with a new lease of life. The non-vintage wines are all aged for at least three years, the vintage and prestige champagnes for ten to fifteen. Both Moutard’s rosé and Grande Cuvée non-vintage bottlings are produced from 100% Pinot Noir, with additional complexity achieved through the use of older reserve stocks. The Grande Cuvée is a stand-out wine, wonderfully fresh, with a creamy texture and the weight and presence to accompany food.

Clam Linguine 2 tablespoons Himalayan salt 12 garlic cloves 100g sourdough, crusts removed, cut into ½-inch pieces (or breadcrumbs) 2 tablespoons plus ¼ cup olive oil, plus more for serving 2 teaspoons finely grated lemon zest ½ teaspoon crushed red pepper flakes, & more for serving ⅓ cup dry white wine 1kg clams, scrubbed 340g linguine finely chopped parsley 50g Unsalted butter

1 | Bring a pot of salted water to boil 2 | Heat 2 tbsp of oil in a large casserole dish on mediumhigh. Add breadcrumb mixture, 3 garlic cloves of minced garlic and cook, stirring often, until crumbs are golden and crisp. Add lemon zest, season with salt, and toss to combine. Set aside. 3 | Thinly slice the remaining 9 garlic cloves. Heat ¼ cup oil in a large fry pan. Cook garlic, stirring often, until golden around the edges. Add ½ tsp of red pepper flakes and cook. Quickly stir in wine and simmer. Chuck clams in and toss to combine. Cover and cook until clams are open, 5–7 minutes. Uncover pot and transfer clams to a medium bowl, leaving liquid in pot. If any clams are still closed, cover pot again and cook a few minutes longer, then transfer to bowl with others (discard any that have not opened at this point). Cover clams with foil.

4 | Cook pasta in boiling water 5 minutes. Using a ladle, scoop out about 2 cups of pasta water. Using tongs transfer pasta to the pot with clam liquid. Add 1 cup of pasta cooking liquid and bring to a boil. Cook, tossing constantly and adding more pasta cooking liquid a splash at a time if needed, until pasta is al dente and sauce is glossy and thick enough to cling to noodles.

1 | Preheat oven to 1750C. Mix sugar, egg, vanilla, orange and lemon rind and grated nutmeg in a large mixing bowl until combined. Add butter and mix, followed by mixing in the almond meal. Add enough flour to get a dough-like consistency. As in most Croatian recipes, you simply get a feel for what's right rather than a fixed quantity. Combine and knead the mixture. Leave to rest for 5-10 mins. 2 | Sprinkle flour onto a work surface and softly combine all the ingredients until it holds its shape. Roll a cherry tomato quantity of the dough into a tubular shape. Form a crescent shape and place biscuits about 2cm apart onto a baking tray lined with non-stick baking paper. If the batter is sticky, add more flour so when rolling the mixture between your hands none should be sticking. 3 | Bake in the middle of the oven for approximately 8 minutes. Check the base of the biscuit – if golden brown remove from oven. Place biscuits in an oven-safe dish. When all batches have been baked return to the oven and bake at 1000C for a further 5 minutes until biscuits become crispy. Sprinkle with icing sugar or caster sugar and store in an airtight container.

TIP | the dough can be prepared and wrapped in cling film and refrigerated to be shaped and baked the following day.

In a year of unalleviated sameness, this might be one of the most exciting innovations in the local wine scene. It begins with one piece of dirt – a vineyard in the Pisa sub-region of Central Otago. Situated in the Cromwell Basin on a terrace against the Mount Pisa range and to the west of Lake Dunstan, the Pisa Terrace vineyard is subject to dramatic climate swings, the slowly elevating daytime temperatures co-existing with cool nights that can descend into frost. Sited on a bed of ancient rock and gravel, the organically-maintained vineyard is Biogro certified. Into this singular terroir insert four gifted winemakers: Zephyr's Ben Glover, Dicey's Matt Dicey, Mount Edward's Duncan Forsyth and Maude's Sarah Kate Dineen. If they were a band, it would probably be a supergroup. Collectively referred to as F.W.A. inc, the four winemakers all took a parcel of the same Pinot Noir fruit off the same vineyard, then went home to their individual cellars to craft their unique interpretation. The resulting creations come in a cool 4-pack – one of each of the individually-labelled wines – that you’ll find available online and instore (when instore is a thing) at Glengarry. Botanicals including coriander, elderflower and orange peel have been carefully selected to enhance and reflect the natural citrus and floral flavours found in Bacchus wine. Chapel Down’s Pinot Noir gin is billed as the world’s first of its kind. A distillate produced from Pinot Noir is blended with English wheat spirit, then matched by botanicals intended to enhance the natural character. Rosebuds, dried red berries and rosehip augment the ubiquitous juniper. The result is a gin not quite like any other sharing a similar shade of salmon, and indeed Chapel Down themselves shy away from calling it a pink gin; this is proudly and distinctively a Pinot Noir gin. Completing the trio is the Chardonnay vodka, triple distilled from the Chardonnay skins left over from sparkling wine production, resulting in a smooth, light vodka of citrus and stonefruit flavours. Thomson & Glengarry team up on a new whisky Over the past decade, New Zealand has experienced a whisky renaissance that has nurtured the emergence of new distilleries. Whisky making here is not a new undertaking, dating back to the 1830s when the first Scottish settlers landed with their whisky expertise. The most famous distillery, Willowbank, was mothballed in 1997, an event that marked the end of local whisky production for many years. Parts of the Willowbank distillery were disassembled, destined for different parts of the world. Laid up in warehouses, Willowbank's remaining barrels of whisky had another life to live. Some of them ended up in the hands of keen, young distiller, Mat Thomson. Thus Thomson Whisky was launched into the New Zealand market, releasing these old single malts as independent bottlers. Back in the days when Thomson Whisky was just a gleam in the Thomson eye, Mat and Rachael Thomson started attending the Glengarry Malt Club. Little did they know when they wandered into Jak Jakicevich’s monthly whisky tastings that they were embarking on a lifetime of whisky devotion. Rachael’s passion and marketing smarts merged seamlessly with Mat’s tenacious tendencies and a good old Kiwi doit-yourself attitude to find the whisky, beat the copper still and sell it to the world. It was only a matter of time until the Thomson and the Jakicevich families released something together; both have the whisky-loving bug, and both hail from the mighty West Auckland. This special limited bottling celebrates the connection and meeting of spirits: two barrels harmoniously married together, made from locallygrown, unsmoked malted barley, distilled through hand-beaten copper pot stills and matured in New Zealand wine casks, then finished in Tennessee whiskey barrels. The Grain & Grape is beautifully golden in the glass and a nutty indulgence on the nose. We grab the last barrel of NZWC's historic collection When Dunedin’s Willowbank Distillery ceased operations in 1997 it was the end of an era stretching back to 1974, and for a time the end of whisky distillation in New Zealand. Willowbank’s many thousands of litres of whisky still aging away in cask were auctioned off or stored away safely, with the NZ Whisky Company buying the last 443 barrels in 2010. Since then NZWC have blended and bottled several releases from that original purchase, with many of them winning international acclaim.
