Key stakeholders in the hospitality industry in Cork have said 2014 has brought their best Christmas in six years, as increased consumer spending brings a giant boost for Leeside along with the creation of seasonal jobs. Cork Business Association president Claire Nash of Nash 19 Restaurant on Princes Street told The Cork News that the rise in spending began at

the Guinness Cork Jazz Festival, in the last week of October. “Without a doubt, since the beginning of the recession, this is the best Christmas in five or six years,” she said. “Hospitality is always last on people’s list of spending, so this is significant.” She added that in relation to the same busy period last year, she has also witnessed a drop in credit card spend, with more customers using debit cards or cash to pay for purchases. “Last year, a busy day saw 45% of purchases through credit cards, while last Saturday, which was our busiest day so

far, there was just 17% through credit cards. That’s hugely significant as, come January and February, customers won’t have the huge bills coming through their doors.” Chair of the Irish Hotels Federation Cork branch and owner of Vienna Woods Hotel in Glanmire, Michael Magner highlighted that increased spend in the hospitality industry is a “good barometer” of people’s disposable income. continued on page 2

W

ell, the big day is very nearly upon us. All the cakes have been decorated, the stockings have been hung by the fireside with care and the baubles have been baubled. All over Cork, trees are dressed in their finest clothes just waiting for a rotund man in a snazzy red outfit to come down the chimney (don’t worry, kids, he can use flues for central heating boilers too), eat some of the food that’s been left out for him and deposit special presents for all of the county’s good little boys and girls. This will be the final edition of The Cork News for 2014, a year which has seen Cork go from strength to strength. As I write this I can hear hustle, bustle, chatter and laughter down below on Carey’s Lane in the heart of the city, buskers playing in the background and the chink of change dropping into charity collectors’ boxes. And, in spite of dull mornings and early evenings, the mood around the city really seems to be one of genuine joy and anticipation. I’ve made note here before of being somewhat reserved, personally, when it comes to Christmas, but if the warm buzz of friendliness and excitement continues in town I may yet be convinced to seek out the tackiest, fuzziest, most ridiculous Christmas jumper I can find and wear it with pride. It may even have one of those ludicrous set–ups where you push a button and a reindeer’s nose lights up. Stranger things have happened, but not many. There’s considerable excitement here in our offices too, which has been building to a crescendo over the last few days as we get everything in order for this week and prepare to look ahead into 2015, when we’ll hit the ground running with our first issue of the new year on January 2nd. It’s been quite a momentous year for us and I’d like to express my sincere gratitude to everyone here and to all our contributors over the last 12 months for lots and lots of hard graft, dedication, cooperation, teamwork and outstanding professionalism. They’re all very good boys and girls who deserve everything that Santa will leave under the tree for them, as well as at least three kilos of trifle and Christmas cake and maybe even a glass or two of wine each to celebrate a job well done. Finally, I’d like to thank you, our readers, without whom there would be no point at all in us turning up to work in the mornings. Your attention, interaction and feedback — whether by mail or e–mail or through our Facebook page or Twitter, is every bit as much a part of The Cork News as the hard work of our team and on behalf of everyone here, I’m proud to have this opportunity to wish you all a riotously happy Christmas, full to the brim with joy and love. Joy as Catherine celebrates Christmas at home By Maria Tracey maria@thecorknews.ie

A Cork mother of one who suffers from locked–in syndrome will celebrate Christmas at home this year for the first time since she was struck down with the condition six years ago. Catherine O’Leary (38), who has been unable to speak, swallow or move and can only communicate by blinking her eyes after suffering two strokes while undergoing surgery to remove a tumour, will be surrounded by her family at her parents’ home this Christmas.

Last year, a settlement was agreed with the Health Service Executive, without admission of liability, for €2.5m to cover Catherine’s care. This has enabled her father Pat O’Leary and mother Margaret to build a fully-equipped extension for their daughter at their house in Carrigaline and, after spending six years in hospital and nursing home care, Catherine finally came home in September this year. Catherine’s time at home is currently at five and a half days a week, with respite for the remaining time in Farranlea Nursing Home. Her father

told The Cork News that her time at home will increase to seven days in 2015. “This Christmas will be the first time in six years that Catherine has been home for Christmas. Thrilled is not even the word to describe how we feel!” said Pat. “It’s going to be so good to have Christmas here with Catherine. However, if she was in care again this year, we would gladly travel to see her on the day, as we have done for years. “We now just can’t wait for her to be actually discharged from Farranlea, and we are nearly there now.”

Pat praised the nurses and carers who look after Catherine, saying that Christmas carols can be heard coming from her room and her ceiling has been decorated with special lights. “We didn’t want to do too much, but it’s enough and she smiles at the lights,” he said. “Catherine definitely knows when she is home, and it’s unbelievable the change in her. There is no rush about getting up in the morning and the nurses are fantastic with her. She also gets her nails done, and hair, and has a physio coming in. After what she’s been through, it’s well deserved.”

“You have to insure your car, and tax it. These are things you have to do, whereas our industry is based on fully disposable income, as people can decide not to go out for a meal, decide not to stay in your hotel or defer a wedding for 12 months or put it off. So when we see the volume of people coming through the doors increasing and the spend up, there’s a few extra bob certainly in people’s pockets. “We always rely on part-time

personnel to keep us ticking over during busier periods and this year we would have more demand and more hours for part-time staff than in previous Decembers,” he continued. “Weddings are up, and Christmas parties have been very strong. This year, which we haven’t seen for a long time, companies are having bar tabs or ordering wine for the table, which suggests there’s a few extra bob in the kitty to reward people and acknowledge the hard work they have done, “Without a shadow of a doubt, this has been the best year in six years. We’re not going to see the

level for quite a while of what we experienced in 2005 or 2006 but as 2009 was such a terrible year altogether, it’s fantastic to see growth.” Cork publican Con Dennehy, long-associated with Dennehy’s Bar on Cornmarket St and who recently took over The Venue in Ballintemple, stated there’s “most definitely been an upturn, especially for city bars”. “It maybe hasn’t hit the suburbs as much yet but I am confident that it will,” he said. Mr Dennehy said that the surge in spending is due to the rise in consumer confidence. “People need certainty about

where they are going, and they are beginning to see that now, and feel it. People know where they stand in relation to taxes and charges and they can move forward in confidence that there’s nothing hidden coming in down the road,” he said. However, Mr Dennehy added that publicans have “found it difficult for the last year”, hit by below–cost alcohol sales. He stated this “needs to be tackled” in 2015. “But there is an upturn there, which is positive, and we would urge people to rediscover the pub over Christmas, and for young people to discover it,” he concluded.

Buttimer confident of equality “yes” In five months, the people of Cork will take to the ballot boxes and vote in a national referendum for marriage equality in Ireland. Fine Gael Cork South Central TD Jerry Buttimer is committed to leaving no stone unturned in that time to ensure the people of Cork vote in favour of marriage equality. He is confident that it will be a “yes” vote and a landmark day for the country. Over the past number of years, Deputy Buttimer has seen a change in attitudes and opinions of the people of Cork, and has welcomed the support for the lesbian, gay, bisexual and transsexual community in the county. In particular, he says more people are mentioning LGBT rights and marriage equality at the doors of houses when he canvasses, from parents of young LGBT people, their friends and families. Speaking to The Cork News, Deputy Buttimer described the upcoming referendum as a “once in a generation opportunity which, if passed,

This will be done by debating with all citizens, spreading the word to friends, family and co-workers in Cork and engaging in a campaign that is persuasive and convincing but respectful to all views and opinions. An important aspect will be for the people of Cork to discuss why marriage equality is for the good of society. “This campaign is about the people in our lives, the people of Cork, having the same rights as straight people. It’s about the lives of people in society and the love for people and the love we share for our partners” added Deputy Buttimer. For the Cork TD, a “yes” vote in the marriage equality referendum will ensure that everyone in society can have the same aspirations to fall in love and get married. “Having civil partnership was a huge step, but it’s a journey we must continue on and every vote will be critical to make this happen” he said.

Also known as the winter vomiting bug, hospitals are exceptionally susceptible to it and bans are regularly put in place to prevent the spread of the virus. Such was the case at Cork’s Mercy University Hospital (MUH) this week, where management cancelled all hospital visits on Tuesday (De-

By the numbers: A Cork Christmas A new survey carried out by TK Maxx in Cork has shown just how much Christmas has changed in the Rebel County in just a few years, as people give (and get) more, eat more, travel more and spend, on average, more than three days out shopping before they’ve bought enough for everyone. We’ve also developed a habit of buying Christmas presents for our pets, though the research has yet to turn up a single instance of them returning the gesture.

Among the more eye-opening stats, the average Cork adult will spend a grand total of just under 79 hours wandering around shops in the run–up to the big day, which means that if you haven’t

started or, indeed, finished by now, you’re in for a rough few days ahead of Christmas Eve. Of that, most of us will spend eight hours searching for the perfect gift for that special someone. We’ll also travel almost 200 miles each this Christmas to make sure we visit as many people as possible and, to go along with all of those visits, some of us will eat not three, not four, but five Christmas Dinners.

Pav resurrection Future planning from An Post A government backed Business Development Group has been established to secure the future of the post office network in Ireland. The group will consist of representation from the government, An Post and the Irish Postmasters Union (IPU) and will be chaired by an independent. Fine Gael Cork South West TD Noel Harrington, a postmaster in Castletownbere for over twenty years, has welcomed the establishment of the group. He told The Cork News “the current contract with AIB is a classic case of how the post office network can succeed, by

making it more economically viable to its customers and including banking services with other Irish financial institutions”. The Business Development Group has been set up to find new ways in which the An Post network can do more business, especially in rural areas. “If the Business Development Group can maintain the number of offices currently in the network, I would see it as a success” added Deputy Harrington. The group is to provide an interim report by the end of March 2015 and a full report by June 2015.

The Pavilion is to re–open as ‘The Pav’ in March after its sudden closure in July of this year, while the downstairs bar will be renamed ‘Pana’ and will open in the coming weeks. The changes come as a new team takes over the premises, which has lain idle since The Pavilion closed its doors unexpectedly last July.

Hook uncorked Whether you think something is a sport or not is irrelevant, says George Hook: It's all in the game. george@thecorknews.ie

Y

ou have to hand it to Barry Hearne, the sporting events promoter. The man sure knows how to sell a product and hype up the machine. There was a time, not so long ago, when darts was consigned to the outer reaches of the BBC television schedule; a bit–part pastime for beer swilling bar boffins with steady hands. Now, the PDC World Championships take centre stage in the Sky Sports Christmas line-up. The big push is already on this year to attract the numbers in. It even has its own dedicated channel! Hearne deserves a lot of credit for taking a mediocre sideshow on the sporting calendar and transforming it into a party time festival of large crowds, loud music, and exciting darts. It is amazing what one man with a clear and well–thought–out vision can achieve. Know your market, right? Hearne is also responsible for revolutionising the snooker world. I can remember a time, again not too long ago, when professional snooker players competed in a handful of major tournaments during the course of a calendar year. Of course, in those days, the tobacco industry puffed up the sponsorship fees and prize money to such an extent that snooker simply would not have survived without it. All the greats used to smoke during matches. Alex ‘Hurricane’ Higgins, Cliff Thorburn, Ray Riordan, Jimmy ‘The Whirwind’ White…smoking was to snooker what a pint of lager was to darts. Who remembers Andy Fordham? In his pomp, ‘The Viking’ was a whopping 31 stone. Most of that was probably alcohol. He famously used to consume 25 bottles of lager before going on stage. Today professional snooker players enjoy an action–

For guys like Fergal O’Brien, old enough to remember the pre-Hearne era, the injection of new life into what was a dying sport has given him a new sense of purpose and determination. Kilkenny’s David Morris, too, came back from the brink of early retirement with a new found swagger and dedication. Snooker, like

darts, has been transformed in the space of a few of years and the party looks like continuing for a long time. Despite this new lease of life, the two sports continue to have their knockers and detractors. “Snooker is not a sport”, some suggest. “And darts is just a pastime for overweight beer swillers with too much time on their hands.” It is probably fair to say that

very few players on the professional darts circuit would give the Chippendales a run for their money. The stereotypical image of the portly darts man wasn’t conjured out of thin air! They may not be the fittest athletes in the world, but to suggest for one moment that these guys aren’t sportsmen is to do their commitment and skill a gross injustice. After all, if everyone could

do it, why isn’t the world teaming with 180s in local clubs and pubs? Have any of you witnessed any of your friends or family throw a nine-dart finish? Didn’t think so. How about a 147 break on the snooker table? Or a century break, even? Let’s settle for a break of 50? Just because a sport isn’t dominated by chiseled 17– stone bricks, throwing them-

selves into human contact, or lightening quick speedsters sprinting from one end to another, it doesn’t mean that it isn’t sport. A friend of mine used to have his own standard through which he measured the definition of sport: “It’s not a sport”, he would say, “if you don’t have to change your shoes”. It always used to evoke a bit of a chuckle from yours truly, but I would never agree with him. He stubbornly refused to recognise darts or snooker as a true sport. The irony was that this fella was a Formula One nut! He raced cars, he followed the Grands Prix all over the world and his ultimate sporting hero was Ayrton Senna. “How can you suggest, on the one hand, that fellas potting snooker balls and throwing darts aren’t sports people”, I used to protest, “yet a guy sitting in a racing car is the ultimate athlete?” I never got a satisfactory answer. The twitter world exploded into mayhem on Sunday night when Lewis Hamilton beat Rory McIlroy to win the BBC Sports personality of the year award. McIlroy looked like someone had just kicked him in the crotch when his name was confirmed in the runner up spot. Personally, I thought McIlroy deserved to win on the basis of his achievements over the past 12 months; two major titles, world number one, a key cog in the victorious Ryder Cup team, but that’s just my opinion. There were over 400,000 voters who saw it differently. McIlroy is also nominated for the RTÉ Sports Award this Sunday and there’s no doubt that he deserves to win. But, as last weekend proved, nothing is certain. That’s sport, though. Nothing is ever certain in the field of play, no matter what your chosen sport may be. Isn’t that why most of us love it?

Cork gets world–class tech connection A brand new “nationally significant” internet connection has been confirmed for Cork, linking the city directly to the US and the UK without the need to route through Dublin. Hibernia Networks will establish what’s known as ‘Tier 1’ fibre connectivity from Cork, offering a new access point, called ‘Express’, for the south of Ireland. The delivery of the enhanced infrastructure has been a focus of the technology community and Cork Chamber for a number of years. Speaking at the launch of the new project Gillian Keating, President of Cork Chamber, said “The arrival of Express in Cork opens a new international telecommunications access point from Cork delivering the lowest latency between Ireland, the US and the EU. The new Express cable, added to other recent developments in the region such as One Albert Quay, the re-development of Páirc Uí Chaoimh and the soon–to– be–announced events centre underscores Cork’s position as a driver of economic development regionally and nationally.”

Members sought Scholarship honours Cork engineer for Low Pay Commission An appeal has gone out for people in Cork from working and employment backgrounds, as well as civil society groups and labour market experts, to apply to become a member of a new low–pay body. The nine–member Low Pay Commission is being established to advise the government on the appropriate rate of the national minimum wage on an annual basis. The commission is expected to consider a range of issues in making their recommendations, including changes in earnings since the minimum wage was last increased in 2011, unemployment and employment rates generally and the expected impact of a change to the minimum wage on employment, the cost of living and national

competitiveness. The positions are being advertised through stateboards.ie with the closing date for expressions of interest Monday, January 12th. Labour Party Deputy for Cork South-West Michael McCarthy said: “There is a strong social and economic argument for increasing the minimum wage. It would benefit the economy in Cork by putting more money in consumers’ pockets and help struggling families in the locality meet the cost of living. “The body will be made up of an independent chair, three people with a deep understanding of low-paid workers, three people with expertise in employers’ interests and two further members who have an economic background.”

University College Cork will award the inaugral Dr Elmer Morrissey Memorial Scholarship, worth €1,500 to an engineering student, next year to honour Dr Elmer Morrissey, who died tragically in 2012. Elmer, who had been living and working in San Francisco, died in a sailing race off the California coast in April 2012. A year later, some of his closest friends convened a scholarship committee to create a lasting legacy in Elmer’s name. After an incredible fund raising drive, including a charity ball, the Dr Elmer Morrissey Memorial Scholarship was established. The Friends of Elmer Morrissey have established the fund to provide engineering students at UCC with the opportunity to apply for the annual scholarship. The scholarship will be awarded to an undergraduate or postgraduate School of Engineering student who has completed at least one year of study and has obtained a minimum 2.1 grade in their most recent exams. Louise Smith, a close friend of Dr Morrissey, said “Elmer lived college life to its full-

It’s probably the only time you can ever look down on the people of Cork city.

Ain’t no mountain high enough A maverick mountaineer who scaled Yosemite’s El Capitán — one of the hardest walls in America — over 24 times will give a talk in Cork tonight, Friday. Climber, author and comedian Andy Kirkpatrick will be addressing an audience at the Boole Lecture Theatre in UCC from 7.30pm, with the event in aid of Cork Youth Climbing Club. Kirkpatrick’s El Capitán climbs have included three solo ascents and a one–day ascent, as well as making the climb with paralympic adventurer

Karen Darke, his 13–year– old daughter and a visually impaired friend, Steve Bates. This year he also made the first ascent of the South Ridge of Ulvetanna in Antarctica, spending 14 days at sub–zero temperatures. One month later, battling frostbitten toes, he led TV presenter Alex Jones up Moonlight Buttress for Sports Relief, raising £1.5m (€1.9m). His talk is hosted by Kerry Climbing, in association with UCC Mountaineering Club, and tickets are €12 at the door.

Council workers dig deep for charities Employees of Cork County Council have raised over €21,000 so far this year through various endeavours in aid of local charities. Clare Zuk, who along with Dolores Galvin started doing small sales and raffles five years ago at Christ-

mas to raise money for Cork Penny Dinners and Marymount, told The Cork News that in their first year €200 was raised. Last year, that figure had risen to €5,671, raised at the Christmas charity market which takes place in the foyer of County Hall.

Get on your bike in Beara Thousands of cyclists are expected to get on their bikes on May 23rd, 2015 to participate in the new Ring of Beara Cycle, Kenmare. Cyclists will take in some of Ireland’s most spectacular peninsulas in Cork and Kerry, and embrace the unspoiled beauty of the Wild Atlantic Way. The event is an initiative undertaken by the Kenmare Marketing and Events Group, and was launched this week by members of the organizing committee. “The event is an exciting addition to the cycling calendar. We have so much to offer in Kenmare and the Ring of Beara, and the best way to see the Wild Atlantic Way is on your bike” said Mickey Ned O’Sullivan, committee member. Meanwhile Fine Gael Cork South West TD Noel Harrington has said that the provision of an additional €850,000 for Fáilte Ireland, much of which will be invested in developing the web presence of the Wild Atlantic Way, is great news for tourism in west Cork.

“Fáilte Ireland has been granted €850,000 in additional funding as part of the Supplementary Estimate for the Department of Transport, Tourism and Sport, which was recently announced by Minister Paschal Donohoe. Much of this

funding will be spent on the promoting the Wild Atlantic Way via marketing, social media and IT investments. “The government has already provided €8 million in funding this year to establish discovery points and enhance signage along the

Wild Atlantic Way. This extra funding for the online promotion of the popular Way will really help to promote the many tourist attractions along the route such as those in west Cork. “Many businesses in the towns and villages of west

Cork are solely dependent on tourism for their livelihoods. The Wild Atlantic Way has been fantastic in helping to promote the region to visitors overseas and it is great to see this government commitment to the project.”

Happy Nova year 2015 Leading broadband service provider Nova Broadband celebrated 10 years in business and their most successful year to date in 2014. The Cork–based business that grew from being a small one–man show in 2004 managed to increase its subscriber base by 54% in 2014 alone. The increase in customers is due to a number of factors including additional product offerings, improved services and their expansion into Limerick and Tipperary which created eight new jobs in the areas of sales, technical support, installations and billing. Daytripper Public relations and fundraising manager for FirstLight Louise O'Sullivan-Geary lives in Shanbally with her husband Alan, their two daughters Molly (4) and Sophie (9) and their dog, Digger. “I’m an early riser, as my four year old wakes me up at 6.30am! And I won’t get out my sad violin about rising at 4.30am for Dublin on Tuesdays. There are people presenting breakfast shows every day so I really can’t complain. Once a week I get the Aircoach up, which for €22 is brilliant. I can’t fault it, leaving at 5am and being in the office by 8.20am. On Dublin days, breakfast is a banana, and other days I love porridge. No tea or coffee though, just water. I’m very pure…well, apart from red wine! We all need one vice! Essentially the way I run my day is that the more people I meet, the better it is. I’m the public relations and fundraising manager for FirstLight, which supports suddenly bereaved parents and families, and I try to do two face–to–face meetings a day, whether that’s increasing awareness levels of the charity in one of the hospitals or meeting somebody in the financial service about engaging in employee fundraising. I’m never without my smartphone, and the rest of the day is phone calls and emails. I’ve an Android, but do want an iPhone. I have i– nothing. Maybe it’s like being a child: you want what you don’t have. It sounds really twee and beauty queen–esque, but I wanted to get into charity work to make a difference. I trained in music and I was hoping to be the next big thing, but that didn’t happen. When I was looking for work in the early 2000s, I asked myself, ‘what could I offer to organisations?’. I could work well with people, and write, and was lucky to get a break with the Communications Regulation in Dublin, where I learned public relations. I moved back to Cork, worked with LeisureWorld, and then our second child was born at 27 weeks.

“If you’re not happy, do something about it. If you don’t like where you work, change it. If you don’t like the colour of the wall, paint it.”

She was very sick — just 1lb and 3oz — and I took a year off work to get her well and out of the hospital, which thankfully she is. When I went back to look for work, I wanted to make a difference. I had seen what the hospital staff did for my daughter and at the same time, my dad was sick in CUH and had passed away. I had a lot of interface with people whose everyday lives were about helping people in the worst circumstances. Being a singer, I’ve always been involved in fundraising, so I started looking around and was lucky to get my first break in the Cork Association for Autism. I loved it, making tangible chang-

es to people’s lives. Now with FirstLight, every day I come across strong parents, children, grandparents and friends who are making a difficult journey. They inspire me to do the best I can for the charity. Parents use words like ‘devastating’, and from working here, it’s the first time I genuinely understood the word. Imagine on a Saturday morning at noon, your child is out the front of the house, playing football or skipping. However, by 12.30pm, through a sudden tragic accident, they are no longer. That’s the moment, when you think about it, it takes your breath away. How do you move on? Our counsellors can’t fix the situation

but they can support the family in what they have to go through. When you work remotely, you need to be driven, passionate and disciplined. I feel very strongly about working for a charity, and always had a strong work ethic. That must come from my parents, who ran a guesthouse for years. While professionally I’m very motivated, luckily, from the musical side of things, I’m also blessed that I can still sing . I do 12 concerts a year, and the next one is with the City of Cork Male Voice Choir in aid of Simon on Friday (today, December 19th) at St Francis Church with baritone Darragh McGann. My husband is fantastic, and

takes care of the kids when I’m at rehearsals. My mum and Alan’s mother and father are also great, and I wouldn’t be able to do so much without their support. Life is busy, so when we get a chance as a family, we’re normally in Currabinny Woods with the dog. Fresh air can cure a multitude of things. My nine year old is also getting into shopping so Mahon Point is becoming all about Claire’s Accessories, which is nice. I also love meeting friends. One of my mottos is “you’ve got to laugh”. Meal wise, it’s always slow– release foods, like non–salted nuts during the day. I’ve lost 10 stone, as I knew I needed to change. I was never

a Skinny Lizzy, and always had curves, but one day, after having the kids, I suddenly realised I was 20 stone. Obviously it had gone on gradually, but I couldn’t see me anymore. In June 2011, I decided to change, with the help of a psychologist, nutritionist and GP. There’s no point in saying anything other than it was hard work. There were days I said ‘why did I let myself get to this point?’. I walk everywhere now, and park the car further away too. My mum lives in Douglas, so if I’ve an appointment in town, I’ll park at hers and I’m in 25 minutes. Truthfully, I’m not really the chef in the house. This sounds very bad, but as my husband manages the fresh food section at Scallys SuperValu in Blackrock the chefs in there are our chefs! They do fabulous curries and enchiladas, and Alan’s mother makes a great shepherd’s pie. However, I do a mean stir-fry with vegetables, chicken, sauce, and sesame seeds. I’m quite bad about getting to bed, and usually head to sleep around midnight. I’ve slight OCD and downstairs has to be tidy, school bags and lunches prepared, and what I’m wearing ready. The kids’ rooms upstairs don’t matter but downstairs has to be organised. I do feel as you’ve only one life, you have to live it. If you’re not happy, do something about it. If you don’t like where you work, change it. If you don’t like the colour of the wall, paint it. While I’m not the international opera singer I promised my parents I’d be, I’d love to have been a vet. Or a nurse or midwife. I watch One Born Every Minute and Call the Midwife and find it all fascinating. Taking my own life motto, I did consider going into the field. However, when I counted up the years of studying, by the time I’d graduate, I’d almost be retired!”

This week, UCC recognised Nobel Prize winner Professor John O’Keefe for his ground breaking contributions to neuroscience with an Honorary Doctor of Science (DSc) degree. Professor O’Keefe, who is based at University College London, was jointly awarded the 2014 Nobel Prize in Physiology or Medicine with Norwegian neuroscientists May-Britt Moser and Edvard Moser, for discovering an ‘inner GPS’ that helps the brain to navigate. Professor O’Keefe, whose father hailed from Newmarket in north Cork and whose mother is from County Mayo, delivered the main lecture at a UCC symposium, The Hippocampus in Health & Disease, which also featured a number of other renowned Irish neuroscientists. The symposium was organised by Science Foundation Ireland–funded investigators Dr Yvonne Nolan and Professor John F Cryan of UCC’s Department of Anatomy and Neuroscience.

Thousands raised for BUMBLEance in Cork A children’s ambulance service is buzzing, as a University College Cork fundraiser for the charity nears €5,000. A fundraising candlelight walk

and concert were held at the university in aid of BUMBLEance, the world’s first interactive ambulance service designed specifically for chil-

dren. The ‘Shiverfest’ Christmas walk and concert has already raised €4,600 and hopes to reach €5000 by early January 2015.

Elf help guru Róisín Thornhill managed to grab a few minutes with the exceptionally busy inventor of Elf On The Shelf, Carol Aebersold, on her recent trip to Cork and asked her about the origins of the newly-minted Christmas tradition.

O

n her recent whistle-stop tour of Ireland, The Cork News chatted with Carol Aebersold, the amiable creator of the latest awardwinning Christmas phenomenon The Elf on the Shelf. This mischievous little guy (who arrives with his own book to tell his magical tale) has been delighting children all over the world since 2005 and now he has arrived in Ireland. The story begins when a special scout elf is sent from the North Pole, is adopted by a family and given a name. The elf keeps a watchful eye

on the children during the day to see who’s being naughty or nice, flying back to the North Pole each night to tell Santa Claus all the adventures it’s been having before returning to perch in a different spot somewhere in the house for the children to find the next morning. Recently, The Cork News ran a competition over three weeks featuring the elf and, even though the elves themselves hadn’t been in Ireland for very long at that stage, it was clear that their reputation had arrived long before they did. The paper received several hundred entries for

the compeition, not just from all over Cork but also the rest of the country and Northern Ireland too. There were also hopefuls who tried their luck from Britain and even a few from North America - both

the US and Canada - which is testament to the vast appeal the little guy has. To say Aebersold is a very busy lady would be a bit of an understatement. She’s been travelling worldwide to

promote her little elf and his story since the beginning of November she jetted into Ireland for a brief four-day visit after Thanksgiving was over in her native USA. “We had a balloon in the Macy’s parade

The funny thing about children is that they tend to grow up, and when Aebersold found herself experiencing empty nest syndrome her daughter suggested she write a book based on Fisbee’s story. Aebersold, who was originally a music and theatre teacher, was initially hesitant but decided co–write the book with her daughter. The Elf on the Shelf struggled to find a publisher. “Our agent knew it was a

story that would be a success. but no one would publish it. It worked out for the best; we self-published and had complete control over advertising, copywriting and illustration. It allowed us a lot of freedom,” she said. Today Aebersold and her twin daughters — co-author Chanda Bell and her sister Christa Pitt ­— head up the company they founded, Creatively Classic Books, and spread The Elf on the Shelf tradition worldwide, travelling to as many as 100 events in the lead-up to Christmas. Aebersold’s recent trips to Cork and Dublin have been part of this enormous world tour. Working so closely with family can be a challenge for some, Abersold agrees, but she says she is delighted to

share such a close relationship with her daughters: “It’s been wonderful getting to know them as adults and being able to work alongside them. Sure, we have our disagreements over certain things, but afterwards we’ll have a hug and leave all that stuff behind us before we go home.” Despite such a packed schedule and little time to spend getting to see Ireland, the hectic schedule hasn’t put Aebersold off returning to our shores in the future: “Oh I’m definitely coming back, I’d be happy to move here. Ingredients: • One good–quality chicken; free–range, organic or the best you can afford. • 80 g butter • 200g rough–chopped chorizo • One rough–chopped onion • Three sliced cloves of garlic • Two cups bread crumb • 200g Parmesan, grated • One bunch of rough– chopped parsley Tell your butcher you would like the chicken boned out but ask him not to roll it ( you will be doing that). You need the legs left on but with all the bones removed.

Method In a good sized pot, sweat off your onions, garlic and chorizo with the butter on a low–to–medium heat, which means no color on your onions and garlic and gives all the flavors time to get to know each other. It should take 20 to 30 minutes. Then add your cheese and bread crumbs and mix together until all the cheese is melted. Remove from the heat and mix in your parsley. Lay a sheet of parchment paper about three times the size of the chicken’s surface area on your work surface. Lay the chicken on top and

cover with another sheet of parchment. Now, beat the living daylights out of the chicken with the back of a pot, a mallet or any heavy object. Once it’s flattened and and one to two sizes bigger than it was before, remove the top layer of parchment, place your stuffing and roll it up. Then roll it in tinfoil. You should end up with a big chicken sausage. Roast in pre–heated oven for about 45 minutes on 180 degrees. The centre of your chicken should be above 75C. Allow to rest, then serve with a white bean cassoulet and some broccoli.

Expect a clear straw colour with lovely fresh floral notes: honeysuckle and orange blossom on top of green apple and apricot. It’s aromatically intriguing. Your first sip will find it light and crisp in a typical Sauvignon Blanc fashion; with green apple peel, kiwi and green melon flavours. It has a nice little dance of mineral notes on the finish, which is brilliant with seafood and salads. Dona Paula Malbec/Syrah, Argentina, 2011. Was €16.99, now €10.99 This represents everything that’s good about Argentinan wines; incredible fruit, structure and style. The Syrah adds some extra seasoning to the Malbec. An attractive intense violet colour, this blend of 60% Malbec and 40% Syrah has delicious ripe plums on the nose, and once you sip you’ll find lovely round tannins, great balance and a nice long finish. Cork’s Cornstore racks up the wins in 2014 2014 was a very successful year for the Cornstore Restaurant, with the Cork establisment racking up an impressive tally of awards and commendations. The Cornstore and its Limerick sister were the only premises outside Dublin to be nominated for the 2014 Cocktail Bar of the Year Awards before winning the national award outright. At the 2014 Blas na hÉireann awards, Cornstore Restaurant received silver for its Fig Whiskey Jam and bronze for its Plum Whiskey Chut-

ney, in addition to the Chef ’s Choice award which they received for their unbeatable and distinctive Steak Rub, also the Gold Medal winner in 2013. Victorian pop-up bar coming to Cork Unique Christmas concoctions such as warm mulled Beamish will be served at a quirky Victorian pop-up bar in Cork next week. Local cocktail catering company Raise the Bar is organising the event, called Merry Monkey, for Jim Cashmans on Academy Street this Monday, December 22nd from 2pm. This is the company’s first sortie

into the pop-up scene. Cocktails with a unique twist will be served on the night, while food such as eggnog marshmallows is being prepared by Eoin O’Reilly, who is the creative force behind the House Café at Cork Opera House. There will also be Christmas carols, an opera singer, and music from an old Victorian gramophone.

Try your hand at this seasonal drink from across the pond for something a little different this Christmas, but beware: because it contains raw egg it’s not recommended for the elderly, pregnant women, children under four, or people with weakened immune systems. Recipe by Claire Saffitz in association with Bonappetit.com. Ingredients Serves 12 • 1 cup cashews • 1 cup hazelnuts • 2 wide strips orange zest • 2 cinnamon sticks • 2 star anise pods • 4 whole cloves • 1 can coconut milk • 2 tablespoons agave syrup

• 1 teaspoon vanilla extract • 4 large egg whites • ¼ cup powdered sugar • 1 tablespoon cornstarch • ¼ teaspoon cream of tartar • 1 cup dark or spiced rum (optional) • Freshly grated nutmeg (for serving) Method Make nut milk by combining the cashews, hazelnuts, and four cups of hot water in a blender or a large bowl. Then do up a Christmassy spice pouch by tying up the orange zest, cinnamon, star anise, and cloves in a layer of cheesecloth. Lightly crush the spices with a wooden spoon to release their oils and add the pouch to nut–milk mixture

before allowing it to sit overnight. On Christmas morning remove and discard the pouch of spices. Blend the nut mixture for two minutes. Strain through a fine-mesh sieve lined with a layer of cheesecloth into a large pitcher, squeezing out as much liquid as possible. Whisk the coconut milk, agave, and vanilla into the nut milk. Cover it up and chill for at least three hours. Just before serving, beat the egg whites in a medium bowl to soft peaks and blend in the powdered sugar, cornstarch, and cream of tartar. Combine the rum and nut milk mixture in a punch bowl, top with meringue or whipped cream and sprinkle with nutmeg.

Legend has it that the poinsettia’s association with Christmas began in 16th-century Mexico, when a girl who was too poor to provide a gift for the celebration of Jesus’ birthday was inspired by an angel to gather weeds from the roadside and place them in front of the church altar. Crimson blossoms sprouted from the weeds and became beautiful poinsettias. Today, scarlet splashes of poinsettias herald the holiday season, and this year at Hanleys you’ll find variations on the much-loved Christmas plant to give you a wider choice for seasonal decoration in your home. In addition to the traditional

Anthurium

Anthuriums are an easy care, long–lasting flowering plant with big shiny heart–shaped leaves and lots of waxy, almost sculptural–looking flowers. They also like a natural light source during the day; as if you place them in insufficient light growth will slow down. Water them well and allow them to dry out before you water them again as if they are too moist, they’ll get root damage. Fertilizing is not as important with an anthurium as it is with other houseplants. Don’t fertilize until you see the plant start to produce new leaves; this may be several months after you have bought it or received it as a gift. When you do fertilise, dilute it to a quarter or half strength.

Poinsettia Care Place your plant in indirect sunlight near a window for at least six hours per day. There’s little danger of overexposure to sunlight in our gloomy climate. Provide room temperatures that are not too hot or too chilly. Generally speaking, if you are comfortable, so is your poinsettia. Fertilize your plant after the blooming season with a balanced, all–purpose fertilizer; Damien at Hanley’s Garden Centre has a range of fertilisers to take home with your Christmas plants. Water your plant when the soil feels dry to the

Christmas Cherry

Christmas Cherry is also known as the Jerusalem Cherry, and can be grown indoors or outdoors. They’re hardy little plants with cheerful, orange-red winter berries. These evergreen perennial shrubs have glossy small leaves, and the plant can be pruned into shape to keep it compact. Don’t prune it until all the berries are gone, though, and before the white flowers come out mid–summer — if you cut off the flowers, you get no berries!

Going for that Christmas dip? Be mindful! Festive swimmers are being urged to take “extreme care” when taking the plunge over Christmas. Irish Water Safety is appealing to the public to be aware of the dangers that could occur during sponsored swims, as participants can be distracted by the occasion and take chances beyond what is acceptably safe. Cold winter waters can cause “cold shock” and hypothermia which can set in within minutes, overwhelming even the fittest of swimmers. IWS has also urged the organisers of Christmas swims to ensure that they provide

comprehensive details of each event to the Irish Coast Guard and their local gardaí. Each event should have a safety officer appointed, who will advise those concerned on safety and have the ultimate responsibility for making decisions in relation to the swim being on or off on the day, dependent on weather and tidal conditions. IWS stated that there is a new moon on Monday, December 22nd, meaning there will be spring tides which will lead to strong tidal streams on Christmas day. Irish Water Safety also advised that inexperienced

swimmers should wear a wetsuit, highlighting that the temperature of the water at this time of year will be below 10°C. “Christmas day charity swimmers occasionally remain too long in the water in a gesture of bravado and can find themselves left without sufficient strength to climb out of the water, becoming unbalanced and disoriented due to them becoming hypothermic. Two or three minutes is plenty of time in the water for the inexperienced,” IWS said in a statement. “Remember: shivering and teeth chattering are the first signs of hypothermia.”

Opel’s venerable Corsa is getting a long– overdue facelift as a Christmas present and the latest generation — the Corsa E — is packed with treats, says Seán Creedon

O

pel’s Corsa is the latest car to get a makeover just in time for the New Year 151 C number plates. Once again it’s a case of evolution rather than revolution and, like the Polo last week, the changes to Opel’s best– selling car are discreet and not immediately visible from the outside.

This is the fifth generation of the Corsa and it certainly needed a revamp as it has been eight years since the last upgrade. It will be known as the Corsa E. Opel are naturally proud of the fact that 12.4 million units have been sold worldwide since the Corsa was first launched in 1982. At the Irish launch last month Laura Condron, brand and PR Manager for Opel, said

The Corsa has been described as a supermini, but I think it’s surprisingly spacious. There is room for five adults and the boot is very deep. And there is still room for a space-saver spare wheel. At the rear you get a new three-dimensional tail light, and overall the tail end is very well finished. I drove a black version. Now, black is fine in some cars, but after looking at other models at the launch, I thought red or silver were more striking. Prices start at €14,895 for the two-door version, while the four-door starts at €15,495. The engines available immediately are the 1.2 and 1.4 petrol, and there will be a 1.0 turbo and 1.3 diesel too, coming next year.

Up! Up! And away! Volkswagen’s cool little supermini may not be the best– known car on our roads, but it’s certainly among the most fun, writes Lorcan MacMuiris

I

’m not entirely sure how they managed it, but Volkswagen have obviously roped The Doctor into their design team and his influence is plain to see in the TARDIS–like Up!; ultra compact on the outside but almost unfeasibly large on the inside. Ford managed something similar in the supermini class with the original Ka, but the Germans seem to have taken it to the next level. The ceiling soars over my head, I can do a variant of the chicken dance (apologies to the lady in the BMW who was somewhat bemused by my behaviour while

we were waiting at the traffic lights at Dunkettle) without my elbow hitting the door and even the back seat has massive amounts of leg room. The innovative split-level boot is impressively spacious too. The Up! is deceptive in more ways than one when it comes to size. Not only is it relatively cavernous on the inside compared to the exterior, but it feels like a much bigger car to drive, too. Part of this is to do with its large wheel–base: the tyres are positioned as close to each corner of the car as possible, which gives it a real feeling of connection with the road and avoids

that skittish sensation that bedevils most very small cars. A lot of it, however, is to do with its construction. From the outside, the Up! looks as if you and a few of your buddies might be able to pick it up and put it on a shelf without too much effort, but once you’re in there and in motion this car feels solid as a rock and tonnes heavier than it really is. It sits on the road perfectly, corners exceptionally, and hunkers down even over less–than–ideal surfaces with

the sure–footedness of a car many times its size and many times its price tag. Even road noise, another big issue for little autos, is minimal at speed, which adds to the impression that you’re in control of a car two classes bigger. Speaking of which, speed is not an issue for the Up!. It has a one–litre, 75 BHP engine tucked away under the bonnet and, while that may not sound like much, it’s more than enough to give the car serious oomph. A little tip of the accelerator and the engine responds with a happy crescendo as the Up! leaps forward, again using its size to its advantage and delivering, in spite of its solidity, a sensation of speed which gets lost in bigger, heavier models.

Between the perfect steering and the stability of the Up!, I can’t remember the last time a roundabout was so much fun. Motor journalists reserve the word “nippy” for cars like this. There’s plenty more to commend the Up! than just the driving experience. This model is the High Up!, which means heated seats, heated mirrors, alloys and air conditioning. It may be a city car, and following some brief drives through town and a search for a parking space I have to admit its credentials in that regard — including its City Brake system — are unimpeachable. But, unusually for something so primed for an urban existence, I could easily picture myself whizzing up and down the country’s main

roads in it. That’s an impression I had just minutes after I drove it off the forecourt at Blackwater Motors and began the long, slow crawl up the hill to the Wilton Roundabout, its top–class sound system blocking out the beeping Christmas outrage of the other drivers as they did their best to get one over on each other. This Up! had one owner, who drove it for just 9,000 miles, and it’s ready to go now at Blackwater Motors at Victoria Cross for just €11,995. If you’re in the market for a car in perfect condition which is not only exceptionally practical for city life but also brilliant fun as soon as you’ve left the traffic behind, I can’t say enough about this fantastic little specimen.

A long-standing Cork rugby rivalry will come to a head as two of the city’s teams battle it out to win the inaugural Kearys Cup. Cork Constitution FC take on Dolphin RFC today, Friday, at Cork Con’s Temple Hill ground at

7.30pm, with both sides vying for the title. Cork Constitution FC are currently third in the table, having just edged out Old Belvedere in a tight contest last weekend, and Dolphin are hoping to kick start their season after a re-

cent defeat at home to Landsdowne. Kearys is a sponsor of both sides, and the event between two of Cork’s fiercest rival teams promises to be a close– fought game. The Managing director of Kearys Mo-

The first ever GAA World Games are to be held in Abu Dhabi next March. “A Munster team will fight until the bitter end” Confidence from Munster’s head coach Munster Rugby’s head coach has said his side will “fight to the end” in the European Champions Cup and will not stop “until the 80th minute against Sale in Thomond Park”. Following on from securing a losing bonus point in defeat to Clermont Auvergne at the Stade Marcel Michelin last weekend — ensuring that hopes of a quarter–final qualification are kept alive in the European Champions Cup — head coach Anthony Foley stated his side still has a lot to play for. It was a much improved performance by the

Munster men, after a 9–16 home defeat to the French men earlier this month. Foley outlined that the ‘never say die’ attitude could prove crucial come the end of January.

“We don’t know how valuable that is until round six,” he said. “We do take it for granted that a Munster team will fight until the bitter end anyway but sometimes you’ve

UCC and CIT clash in Sigerson Cup derby Reigning champions UCC and will take on Cork IT in an epic first round clash of the 2015 Sigerson Cup. The home derby takes place in late January or early February and the winner will meet either Queens or IT Sligo in the quarter final on the weekend of February 11th and 12th. The final will then take place at UCC on Saturday, February 21st. UCC is awarded home advantage in all rounds as hosts. In the Fitzgibbon Cup, Cork IT has been drawn in Group 1 with DCU, UCD and St Pats while UCC is in Group 2 with GMIT, NUI Galway and UL. The opening round takes place on Thursday, January 29th with Cork IT playing DCU and UCC playing GMIT.

The father of two and IT worker at RCI in Mahon has established City Jogging Irish Tours, which offers both visitors to Cork and Corkonians themselves the opportunity to see the city in a completely different way to your standard sightseeing tour, with

an 8km jog taking in landmarks such as St Fin Barre’s Cathedral, University College Cork, The Shaky Bridge, Fitzgerald’s Park and the Shandon Bells. “This just ticked all the boxes for me,” Jim told The Cork News. “There’s been a lot of interest in it, and most weekends I’m out. Sometimes it’s just one person, but that doesn’t matter.

It’s not about the money. After I’m finished every tour, I phone home and I’m buzzing. It is great to hear from people afterwards that they can’t believe what Cork has to offer. I’m very proud of that fact.” Jim said that people’s attitude to running has changed in recent years: “It’s gone full circle, and certainly with the recession, when gym mem-

We’re all more conscious of our fitness and health.” Jim outlined that this focus on fitness, combined with the novelty aspect of running tours, has attracted positive feedback, with the activity rated number 11 on travel website TripAdvisor’s list of attractions in Cork. City Jogging Irish Tours will also feature on TV3’s The Holiday Show in the new year. “I’ve been on bus tours where a man points to something, and you think ‘great, how do we get there?’ and before you know it, you’re off somewhere else,” said Jim. “By jogging, you can see everything you want to see in Cork, and everyone from a novice jogger to a super fit athlete can do it.”

onna native Nicole Maguire has been, at this stage, playing music and writing songs for most of her life. It had been a long time since I’d heard her singing before I was in the audience for a broadcast of Seán Moncrieff ’s show on Newstalk at the end of November, where Nicole was a guest. Unusually, she chose not to sing one of her own songs but instead covered Joni Mitchell’s much– loved River, and within seconds everyone — the host included — was agape. It’s not an easy song (later Nicole told me that she was just starting to recover from a nasty ‘flu, to boot) yet there it was, flowing around the room, carried by a voice as brittle and beautiful and strong as glass, every little twist and turn twanging people’s heartstrings. Seán Moncrieff himself, seldom lost for words, was reduced to a stunned “wow…” when his microphone was faded back in. It’s a bittersweet song about an ending, yet for this exceptional singer things are just getting started. “I got my first guitar when I was 12 and started writing straight away” she tells me, “and the songs were brutal. I started learning covers and figured that I’d try some songs of my own. When I was about 16 they started to get a little better.” They’ve been improving ever since and Nicole has never stopped working hard. With a sense of ambition and purpose very rare in teenagers, she set her sights firmly on a future filled with playing, writing and singing. She hasn’t deviated since. “I knew what I wanted. I knew I was going to go and do the music management course in Stiofán Naofa,” she recalls. “The staff were brilliant and to this day I’m still in touch with them; people like Chris Ahern and Ursula O’Sullivan, who was the theory teacher and is an amazing piano player as well. You learned a little bit of everything. There was sound engi-

neering (which I wasn’t very good at), the business part (which I wasn’t very good at), and then the song writing part, which I got the most out of.” She certainly did, and listening to her own songs I realise that I could just as easily be listening to cover versions of rare Joni Mitchell songs, or Joan Baez, or deeprooted folk or…well, you name it. Versatility is one of Nicole’s most prominent musical traits. She’s philosophical when I ask her about her knack for variety. “Ah you know the way it is. You write lots of different things. I tried everything to see what suited me. My favourites were acoustic and folk and Americana, and that’s what’s stuck with me.” Nicole’s still in her twenties, but has racked up a musical CV and thousands of miles worth of experience which

would be the envy of most musicians twice her age. She’s well accustomed to life in Los Angeles and Nashville, where she was taken on board by well–known producer Mitchell Froom on the strength of a single listen to a single demo track. She worked nearly every waking hour for two years and sold her car to finance her time in his studio, where she recorded with Elvis Costello’s drummer; Crosby, Stills and Nash’s bass player and Cheryl Crowe’s guitarist under the watchful eye of Grammy Award–winning engineer David Boucher. Vonda Shepherd, a familiar name to fans of Allie McBeal, was her backing singer. It wasn’t a jet setting experience. She spent every penny she had on it and lived in a tiny box of a bedsit. To have had the guts and determination to take that plunge, and the nous to stand at the head of industry legends, highlights another of her

I ask if she’s always been that way, and she pauses just for a moment. “I suppose the easiest answer to that is that I have no idea how I didn’t give up,” she says

candidly. “There was once or twice even in the last twelve months where I thought ‘is it actually worth it?’ I was going to write songs forever, I knew that, but trying to get into the industry…there were times when I was really really really close to just stopping. I rang my mother and I swore to her that when I came home I was going to give up. She was surprised. She had never heard me say that before. My mam said to hang tough, and she was dead right. Within two weeks, something amazing had happened.” Of course, I ask what that was but apologetically she says she can’t tell me. You, and I and everyone else, will have to wait a little longer before all is revealed, though if I’m reading the signs right 2015 will be a seminal year for her, and not before time. All that aside, she’s still con-

stantly striving for more and rarely stops moving. She’s just back from a tour of Switzerland (“It was long and really full on. I had about three hours off one day, and that was it. I learned how to yodel! I’m the first female in history to sing with a men’s club just outside Zurich. I had to learn how to yodel in Swiss German. The cut of me!”), and preparing to head back to the US, which is almost a second home at this stage, a few days after Christmas. I don’t mean to give the impression that Nicole’s some sort of business–minded musical industry juggernaut. Far from it, in fact. She’s bright eyed and down to earth, with an enormous and near-constant smile. She’s also very humble and grateful, rattling off a long list of the names of people to whom she says she owes more than just gratitude, and reminds me more than once to mention Pro Musica’s Eileen Madden, who was her boss for seven years and, she says, never once demurred when Nicole was snapped up to go touring with only a day or two’s notice. “She’s another amazing musician!” she says. More tributes come thick and fast, and she spends a lot of our conversation praising her family and her friends and, with a giggle, her fiancee James. Not only a delight to listen to, she’s also a joy to chat with. I prod her about the possiblity of a new album in the new year and she remains tight lipped, though she can’t stop that grin from doing its best to spread across her face, which I take as a good sign. 2015 will be — and absolutely should be — a big year for Nicole.
