When these diesel engines became too complicated for general mechanics, we saw the opportunity to expand by providing repairs and maintenance. Geographically speaking, Monaco is the second smallest country in the world, second only to Vatican City in Italy. But it stands tall with world-class events and luxury, as it hosts the Grand Prix de Monaco (a Formula One motor race since 1929), the Bal de la Rose, and of course, the Monaco Yacht Show, among other prestigious events.

Nestled along the French Riviera, the Principality of approximately 37,000 residents is but three miles long and one-half mile wide, but enjoys a privileged location at the heart of Mediterranean Europe. And it grabs the spotlight when it comes to wealth and opulence.

Float On, Float Off

YACHT DYT Yacht Transport ships are uniquely semisubmersible, thanks to a process of ballasting/ deballasting that closely controls the depth of the ship. For loading, each yacht will have a predetermined location in the dock bay due to length, draft and other factors. The DYT Yacht Transport ship is submerged where the bay is actually flooded deep enough for yachts to enter from aft and clear the deck and keel blocks. With fenders in place, yachts power into the deck area and are tied off with dock straps to prevent movement. Once all yachts are loaded, a controlled deballasting slowly raises the ship. During this process, divers are positioning heavy

stanchions along the yacht’s hulls to keep them positioned as well as ensuring proper placement on the keel blocks as the process continues. Once fully raised and the deck is clear, the ship’s crew adds additional hull stanchions for ocean transit which are welded in place and secures all straps. When offloading, the process is essentially reversed. Workers remove the ocean stanchions, the deck is flooded until all yachts are floating and divers go below to remove the final stanchions. Upon notification, each yacht can then power out of the deck bay, free to cruise towards their destinations.

GOLFITO, Costa Rica – A recent study by Global Tourism Monitor Survey confirmed that tourists love Costa Rica, naming the country the most recommended tourism destination in the world. Against this backdrop of global popularity, investment and construction are once again robust in Costa Rica, and notably in the town of Golfito, situated on the southern Pacific coast on Golfito Bay.

Hacienda El Dorado spotted unparalleled potential in Golfito but also took cues from other infrastructure indicators in the surrounding areas that the Pacific Southern Zone could become the next sought after tourist destination. For one, Palmar Sur Airport, between the towns of Sierpe and Palmar Sur, is making headway toward a new, massive multi-million airport expansion and is expected to welcome international flights within the next two to three years. In 2003, the country’s first real estate boom, mainly in the northern region, was due in part to the modernization of the Liberia International Airport, which began servicing international passengers. Road construction has ramped up on the new Caldera Highway and Costarena Sur Highway, allowing more tourists to drive from the Central Valley to the southern zone quicker and more efficiently. Life of a superyacht chef

Chefs do more than just prepare meals and provision their galleys. Many compete in culinary competitions, like the one during the 2014 Newport Charter Yacht Show. Taking highest honors as the Best Charter Yacht Chef was Esther Rupenovic, of M/Y Katya, with a heart-healthy dish of smoked mussels and clams, pickled beets, horseradish and soba noodles.

One doesn’t become an award winning chef overnight or even start out that way. Rupenovic has been a chef a relatively short four years, studying in Auckland, NZ at the New Zealand School of Food and Wine. With a deep passion for cooking, Rupenovic pursued her dream of becoming a chef after a successful run on an Australian reality cooking show. Interestingly, Rupenovic had a very different career prior. “I was previously a detective in the police force of Tasmania for 8 years.” she said. The call of the sea is powerful, which is why Rupenovic is currently on a yacht and not running a restaurant. “I’ve chosen yachting as I love to travel. This industry gives me the opportunity to travel and cook at the same time, which I love. I also have the opportunity to harness my own skills, and decide what food style I wish to set for myself. Whereas in a restaurant you are there to cook another chefs creations.” Rupenovic explained.

She has a few favorite destinations of her own, too. “I’ve been fortunate enough in this industry to travel all of Europe, USA, Caribbean, Galapagos, French Polynesia and New Zealand. I think my heart lies with Europe. Being a chef, you don’t find people more passionate about food than in Europe. Take me back to Italy, Turkey or Malta any day and I’d be happy!” she said. New to the 151’ Delta M/Y Katya as she only joined the crew on June 1, 2014, Rupenovic shares her view of the yacht: “She is a great yacht with a great captain and crew so I feel very fortunate. We charter from Newport in the summer, and in the winter we go to the Caribbean.” There are inherent challenges with being a chef, now an award winning chef. Keeping an inventory of fresh perishables is one. “I don’t find the locations as troublesome as the space in which to store it! I love finding new and exciting local produce in each country, so that has never been an issue for me” Rupenovic stated. “But I do certainly find it difficult to store produce on yachts due to restricted space. A walk-in fridge and freezer is ideal! But I’ve only ever had that once.”

Having been on two yachts prior to Katya (M/Y Black Pearl, sailing 8 European counties in 8 months, and on the 92-meter steam yacht Nahlin as second chef), Rupenovic has seen her share of finicky charterers and picky crew, but reasons that there are difficult eaters everywhere. “There is no option other than providing for charter clients. I am well versed in many cuisines and different dietary requirements so I don’t find it too daunting. As for crew I do try and accommodate them as best as possible and I think they’re fed pretty well. All my crew are very appreciative which is great.” Rupenovic’s biggest influence comes from her Italian background and family, surrounded by great food at a young age. “My mum is a great cook, and my dad always made me try new foods, he wouldn’t let me say no to anything until I tried it”, she said. Additionally “My nan was an amazing baker and my nonna is an amazing Italian cook.” About her favorite meal to prepare, Rupenovic prefers dinner, because she can be more creative. “It is usually a more formal meal so I can use impressive ingredients and experiment with presentation which I love” she said.

PRODUCE in each country.’ Asked what she does for fun when not dicing or sautéing, Rupenovic replied “I just love to be outdoors. I love walking and exploring whatever town we are in, also finding a park and lying in the sun. When I’m home I enjoy being with my friends am my 2 dogs that I miss immensely!” Hailing from Tasmania, with an Australian mother and Croatian father, Rupenovic has had an eclectic mix of cultures during her influential years. “I’m an only child, single with 2 gorgeous dogs back in Tasmania waiting for my return! I plan to move back there one day in the future and dream to open my own restaurant/wine bar.” Thinking back, Rupenovic reminisces about the beginning. “I started working as a waitress in great restaurants and started to appreciate the amazing plating of food that the chefs would produce. The rest they say is history...” Indeed!
