1/8 teaspoon cayenne pepper 1/8 teaspoon black pepper 1/2 cup heavy whipping cream In medium mixing bowl, whisk together mayonnaise, horseradish, vinegar, salt, cayenne and black pepper. Whip cream to soft peaks using stand mixer. Gently fold into mayonnaise mixture. Chill until ready to serve.
Reverse-Seared Prime Rib Roast
Active time: 30 minutes Total time: 4 days 4 pound Omaha Steaks Bone-In Frenched Prime Rib Roast any variety Omaha Steaks Rub Thaw roast completely in refrigerator before cooking; allow 48-72 hours. Season roast with rub 12-18 hours before cooking and leave uncovered in refrigerator overnight. When ready to cook, heat oven to 225 F. Place roast on elevated rack in roasting pan. Roast 3 hours and 15 minutes, or to internal temperature of 120-125 F. Let roast rest 30-45 minutes. Broil on high 2 inches from broiler, 4 minutes on one side, 2 minutes on other side, or until brown crust uniformly covers roast. Tip: For easier carving, trim roast from bones prior to cooking. Stand rib roast on end so ribs are pointed up. Using sharp knife, cut along bone, being careful not to cut into roast. Tie roast up with butcher’s twine to hold it together while cooking.
Reverse-Seared Roasting The reverse searing method can lead to a well-browned holiday roast with an evenly cooked interior that’s tender and flavorful. 1. A day before cooking, dry brine or season roast and leave it uncovered in the refrigerator to develop crust and flavor. This dries the outside of the roast and forms a layer that allows even browning while locking in moisture. 2. Place roast in the oven at a low temperature to cook evenly from edge to edge. Take it out at an interior temperature of 5-10 degrees below desired finished temperature; it will cook a little more while resting and during searing. 3. Remove from oven and sear roast in a broiler, grill or hot pan to create the crust.

Active time: 30 minutes Total time: 1 hour 2 tablespoons unsalted butter 1 medium red onion, peeled and diced into 1/4-inch pieces 1 cup dried black Mission figs, stems removed 1 cup water, divided 1/2 cup balsamic vinegar, divided 1/2 cup sugar 3/4 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon vanilla extract
In 4-cup sauce pot, melt butter over low heat. Add onions. Cover and cook on low 15 minutes until onions have softened. Add figs, 1/4 cup water, 1/4 cup vinegar, sugar and salt. Cover and cook on low another 15 minutes until figs have softened. Remove pot from heat and add black pepper and vanilla extract. Pour into blender or use immersion blender to process until smooth. Add remaining water and vinegar to blender for smoother jam or leave as-is for a more chunky texture.

After she had her first child in 2009, Abbey took her running skills she’d acquired at the age of 21 and added a swimming and bicycling regimen to fulfill her dream of competing in the ultimate triathlon. She wasn’t slowing down despite the symptoms she was experiencing at the time, and she achieved her dream of completing her first Ironman in 2010. It was a milestone year, not just because she finished the most difficult race of her life – 2.4 mile swim, 112 mile bike and 26.2 mile run - but because she received an
unofficial diagnosis of multiple sclerosis (MS). “I was told by the neurologist that to confirm MS I needed to have an MRI six months later, but I waited because I felt relatively physically well,” Abbey said.
She continued her training to race in a 31-mile ultra-marathon when two weeks before the event she discovered she was pregnant. It was during this pregnancy that her symptoms intensified. Again, she believed the weakness, exhaustion, tingling and buzzing sensations were from her previous training and second pregnancy. Following her son’s birth in 2011, Abbey couldn’t hold her son for more than 30 seconds because the entire left side of her body was numb. Even walking upstairs in her home was challenging, but she would not be deterred from competing in her second Ironman Florida in 2012 after receiving an exclusive invitation. 22
“After my second Ironman, I had massive headaches every day, weakness and was utterly exhausted,” she said. “I remembered the testing in 2010, and that I had postponed following through with the MRI for three years. The entire left side of my body was pretty much numb, tingly and weak and it was time to get it done.” In 2013, imaging and a spinal tap were given to see if Abbey did have MS, a disabling disease of the central nervous system that disrupts the flow of information within the brain, and between the brain and body. The Multiple Sclerosis Foundation estimates that more than 400,000 people in the United States and approximately 2.5 million people around the world have MS. An estimated 200 cases are diagnosed each week nationwide. “Setting goals is good, but if you can’t reach them it’s pretty hard on the selfesteem,” Abbey realized after abandoning her triathlon training following the MS diagnosis. “It was very hard on my ego to let go of the Ironman stuff. I didn’t know how much it inflated my ego to do it, but it did. And I didn’t realize that until I couldn’t do it.”

It’s been four years since Abbey was diagnosed with MS, and she describes her physical wellness as follows: “I once felt like a dog being dragged by a bus, but since my healthy eating, I feel pretty dang good - compared to how I used to feel. ” The numbness and tingling she experiences throughout her body, from her face to her lower legs, forces her to use a cane to walk when outside her home and even use a scooter at times. She can hardly feel her fingernails scratch her face with the numbness she likens to being shot with Novocaine from a dental appointment.

“My lips, they get tingly when I get really stressed out. They feel pretty much like how a foot would feel after you’ve been sitting on it for too long and it goes dead,” Abbey said. “My upper legs sometimes feel like either a glass of ice water or a cup of hot water has been spilled on my thighs and (my) lower legs feel like there’s something about 6-feet away that’s vibrating heavily on the floor.”

She admits her Instagram posts were embarrassing at first because she was fully transparent and it wasn’t unusual to see a plate of chocolate chip cookies or chocolate donuts she had consumed. But those honest posts inspired her to eat healthier. Abbey joined Weight Watchers where she learned she didn’t have to eliminate any of her favorite candy and pastry from her diet; she just had to eat smaller portions.

“If I don’t weigh a certain amount, I can be happy. I’ve embraced myself and allowed myself to be OK with how I am,” she said. And how Abbey is doing is displayed for all to see on her Instagram account that has clearly transitioned into depictions of meals that are Weight Watcher friendly and include recipes so followers can replicate the ingredients and make the meals themselves. Sugary treats are still prevalent in Abbey’s life. In fact, she has her own business, Abbey Road Confections, where customers can order from a menu that includes toasted almond buttercrunch and peanut almond brittle. 24

SPIRITUAL GROUNDING Being a business owner, wife and mother of two children keep Abbey motivated and in good spirits, but doesn’t ease the ache, tiredness and burning in her muscles. She has been referred to a rare disease specialist that has determined her iron storage is low, so Abbey is taking recommended iron supplements for the next three months for doctors to further test for a more accurate diagnosis since her symptoms have now gone beyond MS. The journey of the last eight years continues with Abbey choosing to appreciate each moment of each day. As anyone can imagine, it isn’t easy for her or her family. At one point, Abbey wanted a divorce stating, "I felt my negative relationship with my husband was bad on my health. But we both have worked really hard on our relationship, and now, though we do have disagreements, we show respect, appreciation and love for each other."
“I believe in God and I’ve attended 13 churches throughout my life,” she said. “I’m a Christian and I found for myself a spiritual grounding that is the anchor in my life.” Abbey holds dear her faith that she exercises with weekly attendance to the temple of The Church of Jesus Christ of Latter-day Saints. She has a high regard for people of all faiths and a sincere spiritual conviction of acceptance and love for herself and her fellowmen. “As soon as I walk up to the (temple) doors, I feel that it is actually home and that I need to go there to remember who I am,” she said. “The peace that’s there, I can’t get any other way. Literally, my faith is an anchor to my soul.”

“I sat with my mother-in-law one day and shared with her that while I acknowledge that MS impacts everyone’s lives, it only affects everyone negatively if I’m mad about it,” she explained. “If I’m happy, then it can’t affect them negatively. I deal with the pain and use the cane when I’m hurting and I don’t try to be tough. That’s how I can maintain my happiness by taking care of myself.” Abbey pushes herself to get 7,000 steps in each day and she stretches to get relief from her stiff, achy muscles. She “loves” getting pedicures and watching sappy romance shows she can download from Netflix. She and her husband maintain their relationship with a date night each week by going to the movies or eating sushi, and bonding over deep, meaningful conversation about their lives and their future. What really sustains Abbey through the hardships of her deteriorating health is being spiritually connected to her Creator.

Recipes by Chef Abbey Phillips Baguette with Brie, Pears and Sweet Cranberry Relish 1 Baguette (whole wheat) 1 Wedge of Brie Cheese 2 Pears 1 Jar Cranberry Relish (Recipe for Cranberry Relish: Empty one bag of fr sh cranberries into a small sauce pan. Add 1/4 Cup water. Cook on medium for about 10 minutes, or until berries are tender. Smash cranberries in pot with a potato masher. Next, add 1 2/3cup white sugar and the zest of a very small orange. Allow to continue cooking, on medium-low, for 15 minutes. Stir occasionally.) Procedure: Slice baguette with a serrated knife, into 1 inch slices. Cut Brie into 1 tablespoon-sized chunks. Thinly slice the pears. Assemble: Spread Brie onto a slice of the baguette. Spread on Brie, top with 3 pear slices, and a teaspoon of Cranberry Relish. Serve as an appetizer or eat for a snack. 28

Pumpkin-Spiced Granola 2 Tablespoons Pumpkin Pie Spice 1/2 Cup Honey 1/4 Teaspoon Kosher Salt 3/4 Cup Canola Oil 1 cup Papitas (shelled pumpkin seeds) 2 Tablespoons Molasses 4 cups Quick Oats 2 cup Unsweetened-Shredded Coconut 1 cup Almonds Procedure: Preheat oven to 375F. Next, add oil and Honey to a large bowl. Whisk until very well incorporated. Next, add all remaining ingredients into a large bowl and stir until well combined. Pour onto a parchment lined, raised-sided baking sheet. Cook for 20 minutes, (keep stirring every 5 minutes, until nice and golden brown). Let cool in pan on counter for 15. minutes. Then break apart with a wooden spoon. Makes 32, 1 ounce portions. 6 Weight Watchers Smart Points Per Serving.
Procedure: Preheat oven to350F. Line regular sized cupcake pans with cupcake liners and SPRAY the inside of the liners with non-stick cooking spray. Then prepare a large mixer, with the paddle attachment. Next add the first 7 ingredients (including pumpkin purĂŠe) to the mixer bowl. Mix until very well incorporated. Over a separated bowl, sift the remaining ingredients through a fine mesh strainer, to help catch any lumps (but do not add the chocolate chips). Then add sifted ingredients to mixer bowl and mix until just incorporated. Scoop into lined-Muffin tins, filling cups and about 3/4 of the way to the top. Top with mini chocolate chips. Bake at 350F and rotate pan after 10 minutes. Then cook 7-10 more minutes, until wooden toothpick come out clean Let cool in pans for 30 minutes. Then move individual muffins to cooling rack. Makes 24 Servings. 8 Weight Watchers Smart Points Per Serving.

I was born and raised in California, but I married my husband while at BYU, and we built and raised our family here in Utah. We live in South Jordan.

It’s November — what better time to remind ourselves to be Thankful — for the comforts around us, our family, friends (both in the real world and online) and, of course, for the dogs we share our lives with. Thanksgiving is the time to reflect, count our blessings, and feel lucky for what we have. Hopefully you can give thanks for your health, your loved ones, your many achievements, and for our furry friends - for the unique love they provide, and the countless ways in which they enrich our lives. If you were to do a top 10 of why you are Thankful for your Dog/Pet - what would be on your list? Well, below is mine, and hope you agree.
1. They make us better. Our pets improve us in so many ways. Studies show that petting an animal can reduce a person’s heart rate as well as their blood pressure, and animals keep us physically healthier overall because they keep us moving. Also, the endless joy they bring increases our mental health. I can say without a doubt - my fur kid Josie has done this for me. 2. They make us laugh. Dogs are always finding new ways to make us smile & chuckle! All breeds have their own personalities, their own expressions, and their own way of being funny. I can watch my dogs forever it seems when she gets a new toy to play with. Thank you to our four-legged friends for keeping us cracking up! 34

3. They keep us active. Because they need regular walks, play time, and socialization in order to keep both mentally and physically stimulated, our pets keep us active! Dogs make terrific running, walking, or hiking companions. Personally, Josie loves to hike and go to the park where we meet up with a ton of my new friends, and her fur buddies. So, high fives, or high paws to our pets for keeping us full of energy and for keeping us moving. 4. They challenge us. Some pets are easier than others. Some are a more natural fit for your lifestyle. All animals deserve a chance at a happy life. We know that there are pets who may need a little more work, effort, or learning on our part in order to thrive.
Yet, time and time again even pets who challenge us offer tremendous value, and always reward us with as much as we put in. Whether it’s a more difficult pet with behavioral or health issues, a dog who takes extra time to smell the grass on a walk, all animals require consistency, patience, and love from us in order to succeed. We get to become a team with our pets as we work with them. So, to all the animals out there who test us and show us what we’re made of - thank you.

Servings: 4 4 tomatoes 2 ounces balsamic vinegar 1/3 cup extra-virgin olive oil, plus 4 ounces, divided 4 garlic cloves, sliced thin 4 sprigs fresh thyme (or equivalent dried) salt, to taste pepper, to taste 2 ounces pine (pignoli) nuts

8 ounces shredded Jarlsberg Cheese Heat oven to 350 F. Cut tomatoes in half. In bowl, whisk together vinegar, 1/3 cup olive oil, garlic, thyme, salt and pepper; gently mix in tomatoes. Transfer to ovenproof dish. Place tomatoes cut-side up and bake 15 minutes. In pan, toast pine nuts with remaining olive oil until golden then set aside. When tomatoes are cool enough to handle, remove skins and return to baking dish. Sprinkle tomatoes with shredded cheese. Servings: 4 Filling: 1 cup chopped fresh or frozen cranberries 1/3 cup sugar 1/3 cup raisins 2 tablespoons honey or maple syrup 1 tablespoon finely grated orange peel 3 tablespoons freshly squeezed orange juice Triangles: 10 sheets fresh or frozen phyllo dough 1/3 cup melted butter 2 1/2 cups Jarlsberg Chunk Cheese, cut into 25 cubes 2 cups chopped walnuts Heat oven to 375 F. In saucepan, combine cranberries, sugar, raisins, honey, orange peel and
French-Style Marinated Cheese
Servings: 1 jar 6 ounces Jarlsberg Original, Lite or Hickory Smoked Cheese 2 ounces black or green olives 1 small leek, bulb only (or small shallot) 1 tablespoon fresh oregano or tarragon (or equivalent dried) 1 teaspoon green or black peppercorns 2 sprigs fresh thyme (or equivalent dried) 1 clove garlic
orange juice; bring to boil. Reduce heat and simmer uncovered 5 minutes, stirring occasionally. Cool to room temperature. Carefully lay one phyllo sheet on cutting board and brush with melted butter. Place another sheet of phyllo on top and brush with melted butter. Cover remaining sheets with damp towel to prevent drying out. Position brushed pastry horizontally and cut into five strips. Place 1/2 teaspoon cranberry filling, one cube of cheese and 1/2 teaspoon chopped nuts in lower corner of each strip. Fold dough over filling to form triangle. Fold triangle up then over, forming another triangle. Continue folding to end of strip. Brush top with melted butter and sprinkle with 1/2 teaspoon chopped nuts. Repeat with remaining strips of dough and remaining sheets of phyllo. Bake 12-15 minutes, or until golden brown. Cool on wire rack before serving. Note: If using frozen phyllo dough, thaw in refrigerator overnight.
2 tablespoons white wine vinegar 4 tablespoons extra-virgin olive oil 1 glass canning jar Cube cheese and thinly slice olives and leek. Finely chop oregano and peppercorns, and finely mince thyme and garlic. To make marinade: Whisk vinegar with oil, oregano, peppercorns, thyme and garlic. Layer cheese, olives and leeks inside jar. Cover with marinade and seal tightly. Place jar in refrigerator to marinate 1 day. For best results, use within 3 days.
Holiday Deviled Eggs
Servings: 12 6 eggs 1/8 teaspoon salt 1/8 teaspoon pepper 1 teaspoon white vinegar 1 teaspoon mustard 1/4 cup mayonnaise 1 cup shredded Jarlsberg Cheese Topping options: Paprika Parsley Bacon Shredded Jarlsberg Cheese Cooked crab meat Scallions Boil large pot of water. Carefully add eggs and boil on high 2 minutes then simmer 13 minutes.
While eggs cook, chop parsley and scallions, if desired. Once eggs are cooked, transfer to bowl of ice water; cool 8-10 minutes. Peel eggs and cut in half lengthwise. Separate egg yolks into another bowl. Reserve egg white halves. Combine egg yolks with salt, pepper, vinegar and mustard. Add shredded cheese and mayonnaise; mix until smooth. Spoon about 1 tablespoon of yolk mixture into each egg white half. Add toppings, as desired. For classic deviled eggs, sprinkle paprika and chopped parsley over eggs. For a savory alternative, cook four strips of bacon and chop. Top eggs with chopped bacon and shredded cheese. False eyelashes are a great option for anyone looking to create a more dramatic and glamorous look. The invention and use of false eyelashes began in 1916 when a local wig maker designed false lashes for actress, Seena Owen. They were made of human hair woven through fine gauze. Women couldn’t help but want these ‘Lash Wigs’ once they saw them on television. However, they were so expensive and did not become mainstream until around 1950. They really became popular after the invention of plastic materials for lashes. Makeup artists would use false lashes on models and actresses for a more feminine, fashionable appearance.
A few decades later, Korea developed a “Lash by Lash” technique by attaching single strand lashes to natural lashes. This trend quickly spread throughout the world and Eyelash Extensions are now a normal service in most salons and spas. I started providing this service ten years ago and I still love applying lashes. I also teach and certify lash technicians every month! This service is great for anyone who wants to wake up every day with flawless lashes. The initial cost for a full set can be anywhere from $150-$350 and the services takes about 1.5 hours. They require a re-fill every couple weeks as your lashes naturally shed. Toss your mascara, save some time in the morning, and go swimming without looking like the “Joker”! Believe it or not, most eyelash extension clients are low maintenance and really enjoy their “lash naps” every couple weeks.

Temporary false strip lashes can be a great choice for special occasions and also every day use. After many years in the beauty industry and applying thousands of lashes, a brilliant idea came to me. Tight-line the roots of your lashes. Draw a line with a waterproof gel liner under your lash line. This will create an even flow from your natural lashes to the “Lovie Lashes” and your lashes will immediately appear thicker. 2. Add a light coat of mascara to your natural lashes. This provides a cushion for “Lovie Lashes” and camouflages your natural lashes into the strip. 3.Size and Shape your “Lovie Lashes”. Trim the ends to fit your natural lash line. PUT YOUR CAPE ON AND SOAR As Thanksgiving and the holidays approach many of us start thinking about what we are thankful for. For me…that is an easy answer. I am thankful that I can be ME and that gives me the confidence to be ANYTHING I dream of and set my mind to. I am grateful that I live in a time where there are no limits or restrictions on who or what we can be. In the last two years I have had opportunities that have allowed me to travel all over the U.S. and internationally. I have meet people of all ages, cultures, ethnicities and religions and I have learned so much. One of the things that I have come to realize is that everyone I meet is fighting a battle that I know nothing about yet, they are strong and continue to be the individual wonder that they are! Embrace your individuality with your head held high and be you, bravely. I use these tips from Positive Provocation to help me be my best version, hopefully they will be helpful to you: 1. Relax and Laugh: Stop worrying about the worst, especially in social situations. Relax, breathe and enjoy each experience as they come. 5. Be your authentic self: Develop and express your authenticity. Whether it is your sense of style, the way you speak, or a certain way of doing something, be proud of it. 6. Acceptance is key: Accept what your heart tell you. Sometimes you may be really fun to be with and others you may just want to be alone. Accept it and say that is ME being ME. 7. Believe in YOU! Be yourself and show the world you’re proud of the way you are! You deserve to be your own best friend, so start trying to figure out how you can do that. If you had to spend the day with yourself, which version of YOU would you spend it with? Believe in this YOU and use that as your starting point. Lovingly accept yourself as you are now. I have been looking at Halloween costumes and noticed how many kids want to be superheroes. Why wouldn't they…superheroes are strong, powerful, don't care what other people think, help those in need and save the world! We recognize these superheroes just by their outfits and their capes blowing in the wind, sometimes just by their capes. I would love to be known for MY individual cape and I would wear it proudly.
