I'd choose the Boreal Owl because they are observant and notice the small details in things. They are also very patient birds, and I am always aiming to display patience in all aspects of my life.

On the Wings of a New Year The fact that Corpus Christi is, and has been for well over a decade, recognized as the “Birdiest City in America” sounds like a clue for a crossword puzzle. I can see it now, 12 across in The New York Times Sunday puzzle. The Coastal Bend is geographically blessed in that we’re positioned quite perfectly along the longest stretch of underdeveloped barrier island on earth and one of the largest hypersaline lagoons. This is a unique area where tropical meets sub-tropical, sea meets semi-arid land, and two major flyways converge. Which means our humble abode has a front row seat to view hundreds of bird species on a year-round basis. Birdwatching might not currently be on your list of hobbies or pastimes—I’m right there with you on that one—but when you happen to live in a place perfectly set up for some of the world’s most fascinating creatures to nest, feed, breed, wade, and fly right in your own backyard, I think it’s safe to say we should all pay a little bit more attention to our feathered friends in the sky.

When talking to a few avid birders and scouring local Facebook groups dedicated to the topic, one thing I found quite beautiful was the pure wonder and joy connected to the activity. Whether someone spotted a Brown Pelican for the umpteenth time or caught a glimpse of the marvelous colors seen on a Painted Bunting in the wild for the first time, there is always this sense of awe attached. Beginning on page 28, we attempt to grab hold of that feeling and sprinkle it throughout the feature, “The Birdiest City in America.” Whether you’ve been a part of the birding community for decades or know nothing of the hobby, we hope this issue inspires you to get out and experience one of the most interesting facts about our home. Also, you might notice a few differences throughout this month’s issue. With a constant goal of providing our readers with quality content, we took a look at the magazine as a whole, and redefined the way some of our departments look. From a revamped Be Well section, where members of our team will experience some type of health and wellbeing activity and report back to you, to a new Travel section which will hopefully aid in your adventures outside of the Coastal Bend, we hope you enjoy the changes and additions. When a bird is seen in a dream, it’s generally said to symbolize goals, aspirations, and hopes. It’s amazing how fitting that feels as a topic for the first issue of the new year, a time when people tend to reevaluate their goals, set new aspirations, and find fresh hope for positive outcomes. In this new year, we simply hope you continue coming to The Bend to meet new people, discover new places, and learn of the ideas shaping our community. We can’t wait for you to see what we have in store.

elson Mandela said, “Education is the most powerful weapon which you can use to change the world.” After sitting down with Minta Moore, founder and executive director of New Life Refuge Ministries (NLRM), I was educated on how close to home sex trafficking is and what we, as Coastal Bend citizens, can to do in order to help fight the human sex trafficking crisis. With January being National Human Trafficking Prevention & Awareness month, Moore caught us up on what New Life Refuge Ministries has been up to over the last couple of years, and what it has in the works. Through refuge, awareness, and partnerships, New Life Refuge Ministries is committed to eradicating all commercial sexual exploitation of children and young adults. The organization was selected as the Charity League grant recipient for the 20212022 fundraising season. Moore says the Charity League grant will fund its transitional living program—which will serve as a foundational stage for young adults, aged 18-21, to be able to obtain a driver's license, get a job, and start college, with the hope to help launch them into a successful adulthood. 20 The Bend

Stepping into this new year, NLRM is also looking forward to continuing its collaboration with the Harbor Playhouse to incorporate a drama therapy program and implement art and music therapy. This was unfortunately put on hold after the pandemic swept the nation in 2020. Meanwhile, the organization has been working on campus development and has a second home being built on the property, which will help double the number of children and young adults it will be able to serve on its campus. Their organization is also working to continue providing education and training on the issue. With everyone tying to get back to “normal” after the pandemic, Moore is determined to seize the opportunity to resume in-person training and educating the people in the community. “We truly believe if we can educate people on this issue, how it happens, and what it looks like; it’s the first line of defense for those that traffickers are looking to lure in,” she said. This issue is important because it can happen to anyone. Moore says if she could accomplish one goal right now, it would be to have a child sex trafficking education program in every school in every district. We can all help this organization not only by donations, and volunteering, but by speaking up about the issue and having these uncomfortable, yet extremely important conversations with our children, friends, and family.

KC: What was the experience of writing the book like? AC: For me, writing a book was a long and tedious process, full of uncertainties and lots of self-doubt. I really had to work on my mindset and constantly remind myself why I was writing it. I kept telling myself that if just one person felt less alone, or more hopeful about their own journey with weight, food, and body image, then the process would all be worth it. KC: So, you had to revisit what I can only imagine were some fairly harsh wounds in order to put this piece of work out. Why do you think it is important to share your story with others in this way? AC: I felt it was important to share a very raw account of my story because I know what it’s like to feel ugly and uncomfortable in my own skin. I also know the sheer frustration of obsessing about what, when, and how much to eat to try to lose weight. I know what it’s like to feel undeserving of something—be it love, a career, nice clothes, whatever—because you’re overweight. I know how lonely and maddening this journey can be, and I wanted to do my small part to help others who are struggling know that they’re not alone and that it is possible to lose the physical and mental weight for good.

LOCAL AUTHOR SHARES HER WEIGHT LOSS JOURNEY AND ENCOURAGES OTHERS TO ASK THEMSELVES “WHAT IF?” BY: KYLIE COOPER PHOTOS BY: LILLIAN REITZ KC: Your book, The What IF? Diet Plan, came out just over a year ago now. What initially inspired you to write the book? AC: In all honesty, my book was initially inspired by the anger and frustration I felt toward the health and diet industry. I naturally skipped meals as a young adult, but stopped because I knew it was “bad.” So, instead of listening to my body I became obsessed with learning all I could about health, nutrition, and exercise so that I could lose weight in a healthy way—but nothing ever worked for me. What inspired me to continue writing my book, though, was the freedom I felt from not obsessing about food or my body anymore, and realizing that changing our beliefs is really the key to permanent weight loss. 24 The Bend

KC: The philosophy laid out in your book is centered around mindset and shifting the way we think about food. With your background in psychology, I'd love to hear your thoughts on the relationship between our mindset and our food. AC: I feel that society has taught us to give WAY too much power to food! Yes, what we eat is certainly important and influences many aspects of our lives, but I don’t believe food should control how we feel or determine how our day goes. I’m a big believer in ditching labels like “good” and “bad” when it comes to food. Instead, I like to focus on appreciating and truly enjoying our food, whether it’s salad, ice cream, steak, whatever.


KC: What advice can you give to people on their own journey through weight loss and issues concerning body image? AC: My first piece of advice is to start where you’re at, not where you think you should be. Think of small action steps you can take now to get you closer to your weight loss goals. For me, it was practicing 12-hour daily fasts, eating fruit for dessert, and getting 10,000 steps in per day. I’ve since tweaked these action steps, but that’s how I started. As for body image: Take time to appreciate something about yourself every day. I know this sounds cheesy, but self-appreciation can help you stay in a good mental state through the highs and lows of weight loss. KC: What do you hope readers take away from the book? AC: I hope my readers can take away insights that help them shift their mindset around food, culture, and body image. I often share personal stories and discoveries I’ve made in my own journey, and love receiving feedback and insights from readers who can relate. KC: If you could go back in time and give your younger self one piece of advice, what would it be? AC: Oh man, I’m going to tear up! If I could give my younger self one piece of advice, it would be: “Don’t be afraid to be yourself, Alexis, even if you don’t know who that is yet. For well over a decade, Corpus Christi has been recognized as the “Birdiest City in America.” In 2003, Corpus Christi was first awarded the title, and every year since, the number of bird species seen in the Coastal Bend has only continued to grow. As of this writing, 357 different species have been spotted in the area in 2021, according to eBird’s Nueces County Checklist. Positioned next to the largest hypersaline lagoon and the longest stretch of underdeveloped barrier island on earth, according to the Coastal Bend Audubon Society, the Coastal Bend is a unique area where tropical meets sub-tropical, sea meets semi-arid land, and two major flyways converge, making our home an ideal destination for migration patterns and habitats. Thanks to secure habitats around saltwater lagoons, marshes, and coastal grasslands, hundreds of species can be spotted in the region throughout the entire year. Bird watchers can catch a glimpse of the country’s most interesting birds nesting, feeding, wading, and flying right here in the Coastal Bend.

Inside this feature, we want to help you explore the “Birdiest City in America.” While birding might not sound too exciting, when you live in a region as geographically blessed as ours, it’s practically a must to partake in the activity once or twice and wonder with awe at nature’s song. From information on a handful of the Coastal Bend’s most iconic birds and a list of the best places to birdwatch in the area to inspiration on turning your own backyard into a birding sanctuary and a checklist you can cut out and hang on your fridge to track your bird sightings throughout the year, this guide has it all! Some of you reading this might already be avid bird watchers and will view this guide as a mere reminder of what you’ve already come to know and love. Others might have had your interest piqued while walking the dog and spotting a tiny bird you’ve never seen before, or while doing dishes and catching a glimpse of vibrant colors fluttering outside the window. Regardless, we hope this feature inspires you to take a moment to stop and marvel at our feathered friends.

A Bird's Eye View


Bird Is The Word Throughout the year, hundreds of bird species can be spotted in the Coastal Bend. Whether they’re passing through on their migration pattern or stop and stay a while, here are eight birds we tend to think of when thinking about our coastal area.

DID YOU KNOW? The Coastal Bend is the only place you can see the world’s last naturally occurring population of Whooping Cranes! The 25th Annual Whooping Crane Festival takes place Feb. 24 – 27 in Port Aransas, Texas. The festival celebrates the annual return of the cranes to their wintering habitat at the Aransas National Wildlife Refuge.

White Ibis White Ibises are present along the coastline because it is the most protected area for breeding colonies. However, their saltexcreting glands are not fully developed, so procuring food for themselves and their nestlings means the adults fly inland to freshwater habitats to obtain crayfish. They breed from April to early July, which means they are particularly abundant along the upper coast during summertime.

Hummingbird These tiny birds are the second largest species with around 340 recorded, with the Buff-bellied Hummingbird being one of the most common in South Texas. Another common species, the Rubythroated Hummingbird, is identifiable by its ruby throat and iridescent green back. They usually migrate to South Texas between mid-March and mid-May.

Whooping Crane

Roseate Spoonbill

The Whooping Crane is one of the most endangered animals in North America. Being that its favorite habitat is the Texas coastline, a great place to catch a glimpse of one is right here along the Coastal Bend. In fact, Aransas National Wildlife Refuge and Goose Island State Park near Big Tree are two of the best areas to see Whooping Cranes— and in large numbers— between October and April.

Present year-round in coastal marshes, Roseate Spoonbill sightings are locally common in Texas. Shallow waters with muddy bottoms, in both salt and fresh water (i.e., tidal ponds, coastal lagoons, inland marshes.) make our location ideal. The Roseate Spoonbill tends to nest in colonies, so be aware that where there is one, there are likely more.

Eastern Brown Pelicans are large, stocky seabirds with long necks and a giant bill. Brown Pelicans are often identifiable during feeding time when they plunge into the water, stunning small fish with the impact of their large bodies and scooping them up in their expandable bills. Migrant, non-breeding American White Pelicans are found statewide, both coastal and inland. They breed only in the central and lower Texas coast near marine estuaries, lagoons, and reservoirs.

There are several Heron species that commonly appear along the Texas coast year-round. Some of the rarer species include the small to mediumsized Herons, primarily because their size makes identifying them that much more difficult. Some species congregate in multiples, so if you’re lucky enough to spot one, you’ll more than likely come across dozens of these birds at once.

Reddish Egrets are best known for their active hunting behavior. Watching them eagerly hunt for prey can be comical and entertaining. These Egrets have two identifiable colorways— the red morph and the

In Texas, the Green Jay breeds almost exclusively in the extreme south, with confirmed records extending north to Kleberg County near Alice and Jim Wells County near Kingsville. The Green Jay is considered the most common bird in the Valley, and isn’t typically hard to find. It enjoys wooded to semi-wooded environments and likes to be up in large trees. It can be very vocal, so while birding, it won’t take long to find one.

Oso Bay Wetlands Preserve

Blucher Park is a few acres large with a small stream and select vegetation for wildlife. It’s located in the heart of downtown and is extremely attractive to migratory land birds. Blucher Park is also the site for large migrant fallouts during spring migration, and a major stopover for migrating passerines and hummingbirds.

The Packery Channel Oak Motte is actually a sanctuary for birds overseen by the Audubon Outdoor Club of Corpus Christi. Situated on an island along the Gulf of Mexico, this is a natural spot for neotropical migrants. The area has a history as one of the best places on the central Texas coast to see passerines during migration.

From endangered Northern Aplomado Falcons and Black-capped Vireos to colorful Painted Buntings and White-tailed Hawks, at least 380 species of birds have been documented here. At more than 130,000 acres of wetlands, grasslands, and sandy beaches, PINS is the longest stretch of a barrier island in the world. 32 The Bend

Oso Bay Wetlands Preserve has the perfect mix of mesquite upland, limited prairies, and wetland habitat. On a year-round basis, periodic sightings include the Groove-billed Ani and Olive Sparrows. On the trails near the building, you’ll find Spring Warblers and the water features contain Painted Buntings in the summer months.

South Texas Botanical Gardens & Nature Center 8545 S. STAPLES

This spot boasts impressive South Texas habitats. The nature trails offer a glimpse of South Texas scrub birding, with spotted species such as the Groove-billed Ani, Longbilled Thrasher, and Olive Sparrow. Near the water features you’ll find the Least Grebe and Couch’s Kingbird. The Hummingbird Garden is also a must when visiting.

AS THE BIRDIEST CITY IN AMERICA, it would only be fitting to host The Birdiest Festival in America! In April of each year, the Coastal Bend is host to the five-day birdfest complete with field trips throughout South Texas for some of the best bird sightings in the nation. Getting the chance to experience the birding scene in Corpus Christi, the heart of the Coastal Bend of Texas, is often a bucket list item for avid birders.

The Laguna Madre region is considered one of the best places on earth for recreational birding. Aransas National Wildlife Refuge spans several hundred acres and is divided into five sections between Aransas, Refugio, and Calhoun counties. Bird life includes Ducks, Herons, Egrets, Ibises, Roseate Spoonbills, and the endangered Whooping Crane.

The Ivy Lane site has benches, a hard packed trail, a primitive trail, and water drips on the site. This 28-acre woodland was preserved by the city of Rockport and often has sightings of the Northern Cardinal, Ladder-backed Woodpecker, Warblers, and Orchard Orioles.

Birding is a powerful mental release and a low-cost hobby that can be enjoyed right from your own home. Interested in enhancing your outdoor space in hopes of courting nature’s feathered fliers? Here are a few tips on how to get started.

Plants

Planting native flowers such as American beauty berry (attracts the Brown Thrasher and American Robin), Turkscap, and Texas lantana (attracts hummingbirds) are perfect examples of this. Other native flora to consider adding to your backyard include: penta, cape honeysuckle, Porterweed, and firebush. Do a bit of research and remove any invasive species from your yard if you can and try ditching dangerous pesticides and other chemicals used for weed control.

Housing Structures A birdhouse or any other type of nesting box provides native birds a safe space to reside and breed. Placing your bird shelter on a tree among lots of branches is the best place to start, as they enjoy a bit of privacy. 34 The Bend

My Landscape Brings All the Birds to the Yard

Feeders

A bird feeder is typically the first, and often easiest, step in attracting birds to your backyard. Choose a feeder fit for the species of birds most common in your area. The Hopper feeder, is a common choice. The platform continuously replenishes itself with seed as birds pick away at it. Tube feeders are tall and cylindrical, and feature several perches and openings for birds to feed. This type is great for attracting smaller birds such as Sparrows and Goldfinches. Suet is another feed type, attracting the likes of Woodpeckers.

Food

Mixing store-bought birdseed with an assortment of other seeds such as sunflower, corn kernels, nuts, and fruit pretty much covers all the bases for a large majority of species. Some birds will even nibble on whole peanuts or dried pieces of fruit. When first starting out, opt for a high-quality basic birdseed. As you learn more, you can begin to tailor the food to the birds you are wanting to attract. Also, keep in mind the type of feeder you go with might dictate the food you choose.

Water Features Birds are actually attracted to the sounds and movement of running water. Adding a birdbath or a fountain connected to a source of running water is a great option for creating a bird oasis. Just remember to place the water feature in a shaded area away from places a predator could be hiding, make sure it’s shallow and filled with gravel so the birds can maintain their footing, and consistently clean the structure.

THE ESSENTIALS

If you're new to birding, we recommend finding a guide that is arranged by color. While these guides typically only list common species, they are inexpensive and a great starting point for learning about and identifying various bird species. There are also a number of birding apps and websites that can offer assistance in making an identification on what you observe. Your best bet is to start with the basics and as your birding skills progress, work your way up to guides that are arranged by shapes or families of birds.

BUYING BINOCULARS Pay attention to the overall size, size of the objective lens, and magnification of your binoculars. Binoculars each have a specification that includes two numbers such as “10x50.” These numbers explain details about binocular lenses. The first number—10—means the binocular will magnify an object 10 times its actual size. The second number—50—is the size of the objective lens, or the lens furthest from the eye. The larger the objective lens, the more light it will draw in, which means the image of the object will appear much clearer.

There is an enormous amount of information out there for patients to process and analyze, and Dr. Inman has a unique style of putting that mountain of information in perspective to the patients’ individual situations. Over the years, Dr. Inman has answered countless questions regarding women’s health, with menopause, libido, and infertility topping the list of most common subject matters. We asked her a few questions regarding these three women’s health topics, and she’s here to provide expert answers. * Down there is a common euphemism refering to the anatomy of human reproductive organs.

If I've already had a baby once, is it possible to be infertile now? Many people ask me this very same question. However, it’s a difficult answer to generalize. Infertility is a multifaceted problem and more than one thing can be the cause. Unfortunately, there is no lab test that can give us a definitive answer on the status of your individual fertility. Age is important, because in the late 30s to early 40s, the genetic quality of our eggs decline in an exponential way. I ask several questions when a patient inquiries about their fertility status revolving around various factors, menstrual cycle regularity being one of them. Regular menstrual cycles are a good indicator that a woman is still fertile. Unpredictable cycles decrease the chance of spontaneous pregnancy. Certain histories of surgery or infection in the abdomen and/or pelvis can play a role in infertility too. Properly timed intercourse is also important. The ovulation period is a narrow five- to seven-day window. It’s important to take a look at your partner, as well. Is this a new partner? Do they have any of their own kids already? Have you tested his semen? These are all important questions to ask regarding this topic. With these questions and answers in your mind, you and your OB/GYN can come up with an individualized plan to help you and your partner conceive.

Menopause sounds terrible … What should I expect? Menopause IS terrible for some! However, it doesn’t have to be. Similar to adolescence, menopause is a transition into the next phase of your life. For some, menopause can be empowering. Beginning as early as your 40s, you may notice changes in your menstrual periods, as well as other changes in your body. This includes things such as the interval between periods getting shorter, skipping periods, and longer or heavier periods; hot flashes and night sweats; sleep disturbances; a low sex drive; mood disturbances; and trouble losing weight. Once your periods have stopped for at least one year, then you are considered menopausal. The hormonal 40 The Bend

symptoms may linger but will usually subside. About 2-5 years after the end of your periods, other changes in your body will begin to occur. This ranges from vaginal dryness to pain with intercourse, decrease in bone density, and change in sleep patterns. But, do not fear! There are many strategies and treatments that can make the transition into menopause and beyond very manageable. I have found that the women whose transitions into menopause are more graceful typically have similar qualities and mindsets. There are a few things you can do before menopause to prepare yourself for the changes, the first being to learn and recognize the symptoms

in yourself. Also, both understanding and learning how good nutrition, supplements, and exercise can reduce and even eliminate some of the symptoms helps. Developing healthy sleep habits and identifying and minimizing the people and situations in your life that cause you stress are two things you can and should do now. I’d also recommend talking to other women who have gone through the changes, to ask them what they have done that works for them. Lastly, make an appointment with an OB/GYN to discuss your unique situation. And remember, ALL women go through this and you are not alone!


How will menopause affect my libido? The short answer is that most women will experience a decrease in libido as they move through and beyond menopause. The long answer is that it depends on a few factors: the frequency, comfort, enjoyment, past experience, and creativity of intimacy prior to menopause; the general health of you and your partner; the medications you take (e.g., hormone replacement therapy); alcohol and drug use; and self-image. I will say that with a few exceptions, most women can experience a satisfying sex life well into their golden years with an open mind and willingness to seek help. That being said, for some women, as they age, intercourse becomes something they genuinely have no interest in—and that’s OK, too!

I've been thinking about freezing my eggs. What are the things I should consider prior to making the decision? What a great question! It will be difficult to answer in a generalized way. For any individual considering egg freezing, I would want to know their age, health status, and motivation for doing so. The process itself is expensive and rarely covered by insurance. Egg freezing involves a detailed consult with an OB/GYN sub specialist called a reproductive endocrinologist (REI). If you are a good candidate, then you’ll give yourself injectable hormones (for about one week) to stimulate your ovaries in order to “super ovulate.” Meaning instead of ovulating one egg, depending on your age, you could get as many as 20-25 eggs! These eggs are “harvested” during a procedure called an egg retrieval. Under light sedation and ultrasound guidance, your REI will place a needle through the upper vagina and into the ovarian follicles where the eggs

are aspirated. Then you pay a fee to keep the eggs frozen until you use or donate them. Donation of eggs is usually compensated handsomely, however, and all expenses are covered by the recipients of your eggs. As you can tell, it’s an ordeal to go through, but it depends on why you want to do it. Some examples for why egg freezing might be right for you include preparing for treatment that will make you sterile afterwards; a medical condition that would be lethal if you became pregnant (your eggs could then be used for a surrogate pregnancy); you are young with a demanding career and you want to increase your chances of having children later; you want to donate; or your family risk of genetic disorders. There are many other reasons! Whatever your reason is, do not be afraid to ask your OB/GYN about your specific situation and health status.

Speaking of sex drives, is there such thing as too low or too high libido? Absolutely not! Mae West said it best: “A good man is hard to find, but a hard man is good to find.” Everything in life is about finding your groove, your bliss, your balance. Libido is complicated and it can change in certain situations, it can change over time, and it can change depending on the time of day. What I think may be too much you might find is not enough. So, do what feels good for you, as long as you’re not breaking laws, hurting yourself, or hurting others. Also, be safe and cherish and protect your fertility. If you are still worried if your libido is “normal” or not, ask your OB/GYN … most times, they’ve heard it all.

What are some Year End Tax Planning Tips for next year? The 2020 Cares Act allows an additional $300 deduction in charitable contributions made in cash for those who don’t itemize, $600 for couples. Those who Itemize can contribute up to 100% of their Adjusted Gross Income. Teachers can deduct up to $250 in qualified education expenses and personal protection equipment is now included. Contributions, up to $6,000 for those under 50 and $7,000 for those 50 and over, can be made to a Traditional IRA or a Roth IRA. There are restrictions based on income and whether you have a retirement plan at work. The deadline for making a 2021 contribution is April 18, 2022. Required Minimum Distributions were suspended in 2020 but are required again for 2021. If you haven’t already taken this year’s RMD, make sure you do so by December 31. The penalty is 50% of the shortage. Review your investment portfolio to take advantage of Capital Gains Rates by selling appreciated positions and even harvesting losses to limit the overall gain.

Now Experiencing: Downtown Run Club ILLUSTRATION BY: JARRED SCHUETZE In January 2021, the simple idea of encouraging people to go downtown and be active at the same time resulted in the creation of the Downtown Corpus Christi Run Club. The club meets every Wednesday outside Lucy’s Snackbar at 5:30 PM and offers two routes for all levels of running experience. Each week, a local establishment in the area is chosen for a post-run happy hour. With varying skill levels and interest in running, our team went out and tried the run club to report back on the experience. Be it the people, the running, the views, or the drinks, Downtown Corpus Christi Run Club has a little something for everyone.

"Running has been a part of my life for as long as I can remember, but I was still fairly nervous walking up to Lucy’s for my first run club experience. The nerves, as it would turn out, dissipated the moment I arrived. The weather was perfect and the camaraderie was contagious. I chose the 5k route, and the addition of running up and down the T-Heads is well worth the extra mile for the sunset views alone. Yet it’s the community this club creates that really sold it for me. From the Facebook group and the post-run happy hour to the lovely woman who stopped and waited at the last traffic light on the route so we could run the final stretch together and the high fives waiting for me at the end, the people are truly what makes this experience worth it. "

"As a self-proclaimed walker, the idea of participating in a club dedicated to running sounded a little unsavory at first. Leave it to the Downtown Management District's carefully curated Wednesday evening Run Club to make me a believer. My first observation was that Run Club is meant to be accessible and inclusive. I opted for a brisk walk along the two-mile course. Along the way I saw a number of walkers and runners comfortably going at their own pace, which I found to be comforting. I'm even thinking about bringing my little one next time for a stroller-stride moment The post-run happy hour at The Goldfish was a nice treat to end the event, giving Run Club the social aspect I found to be the draw to coming back for future runs; or in my case, walks!"

"By no means would I call myself a runner. Sure, I work out; however, running has always been a challenge for me. But you know what they say, dangle a carrot in front of someone (or in my case a cocktail), and you’ll be surprised what they’ll achieve. She provided me with pace, something I don’t have when trying to run alone, as well as the drive to keep up with her until the finish line and stay in the front of the pack. rom the age of 13 until I was 26, I would not have been caught in public without a full face of makeup. It would take me over an hour to do, even if my outing was just going to the grocery store for 15 minutes. I was insanely self-conscious about my skin and people seeing my acne or dark scars. I was convinced they were staring at my face and its imperfections. I struggled with cystic acne all the way through college. It wasn’t until I finally convinced a dermatologist to put me through two rounds of Accutane that the worst of it disappeared. Now, as a full-time restaurant owner and chef, I wear makeup once or twice a month if I have a night off! Knowing that I couldn’t hide under makeup as a chef at 8TE, I had to figure out a regimen that would keep my skin clear. The kitchen is the least desirable place to work if you have oily, acne-prone skin like mine because of constant sweating from heat and humidity. I wanted my skin to look clean and clear—I haven’t truly mastered having “flawless” skin, but I do know what works at keeping it 90 percent breakout-free. My current routine, plus having lash extensions from Venus Beauty Studios, gives me just the right amount of “natural glam” to provide me with enough confidence to not want to wear makeup. As someone in her early 30s, my beauty goals are to just age gracefully and naturally.

ust this past December, Rockport was named the third best “Coastal Small Town” by USA Today, and the homeowners of this gorgeous Mediterranean oasis can certainly attest to the honor. The husband and wife power couple who currently reside in this abode were driving around the area and instantly fell in love with its undeniable beauty and charm. They quickly decided upon the perfect lot to build their new home. No strangers to building a home from scratch, the homeowners knew how to divide the tasks; he took on the responsibility of the construction while she focused on the design of the interior. Together, they began to tailor the design of an existing house plan—one that featured two stories, which they didn’t want, so they removed the second floor, and rearranged rooms as needed. The original plan also featured a tile roof, which everyone was on board with, but after seeing the aftermath of Harvey, they decided to err on the side of caution and opted for a metal

roof. After all, “living on the coast is kind of a gamble,” one of the homeowners said. The end result is gorgeous; the light stone exterior coupled with the dark metal roof created a clean, sleek look, offering the right amount of curb appeal. When it came to the interior design, the couple wanted a clean look with earth tones and occasional sparkles of color. The white walls in the living room offer a crisp and bright backdrop for the natural light to radiate, while the limestone wall housing the mounted television and the fireplace creates a cozy ambience. The plush, tufted sofas add stylishly modern seating options with breathtaking views of the backyard. The floor-to-ceiling glass patio doors, framed with espresso-colored trim, resulted in a striking look, highlighting the natural elegance of the living area. The spectacular views of the plush greenery and crystal blue waters of the backyard pool add visual interest and make the patio doors the focal point in the room. thebendmag.com 57


The views are also spectacular from the outside looking in. The outdoor lounge area is a prime viewing spot of the house, with the radiant South Texas sun illuminating the home’s interior like an architectural work of art. The kitchen also exudes the same airy, clean ambience. The homeowners wanted to avoid a multitude of shelves and any other places that were prone to collecting dust, so they designed a kitchen area featuring a shelving unit with inset cabinet doors so when closed, all doors, drawers, and frame sit flush. This minimalist look allows for the pantry, cookware, tableware, utensils, appliances, and other items to be neatly tucked away. Having these items 58 The Bend

out of sight gives the freedom to play with colorful accents: The tile backsplash features both gold and silver, while the pendant lighting hanging above the island and the sink fixtures are copper. These neutral, mixed metals tie everything in the kitchen together, with the premium stainless steel appliances adding the perfect finishing touch. Don’t be fooled by the earth tones and clean design, though. The homeowners have peppered many tasteful and unique pieces of art from their travels to China, Qatar, France, Brazil, Portugal, and El Salvador throughout their home. Each piece is a one-of-a-kind addition, giving personality to the space and energizing the room.

Mixing metal hardware finishes is a great way to add intrigue to the space. A general rule to follow is to choose a main finish and one accent.

Their love of traveling actually inspired much of the design in the home. They gathered many ideas from each country around the world they’ve visited, but their mutual love of the Mediterranean look made it their starting point. Although the house was coming along nicely, one last change needed to be made: The original plan incorporated a boat house, which is the perfect addition to any house on the coast. However, realistically speaking, with their busy work schedules, the homeowners wouldn’t have time to utilize a boat. This gave them an idea—the space would be perfect for a gym. “We don’t need a boat in town every day, but we do need a gym,” one of 60 The Bend

the homeowners said. The addition came right on time; with the pandemic unknowingly on the horizon, the gym became a suitable amenity to enjoy during quarantine. The couple agrees that building a home is not for everyone. It is definitely a lot of work—not to mention the potential for difference in opinions—but nonetheless, they had an amazing time during this journey. The level of comfort in this house and the fantastic turnout of the decor definitely makes it their favorite out of all the projects they’ve worked on together over the years.

Turn the Beet Around

HOW TO GROW BEETS IN YOUR COASTAL BEND GARDEN BY: JUSTIN BUTTS

B

eets are easy and fun to grow, and the cold days of January in the Coastal Bend are the perfect time to plant them in your garden. Plant beet seeds now and enjoy them by the sunny days of March. Beets prefer cool weather, and cannot survive in the Coastal Bend heat past April. They also prefer sandy soil. In clay-rich soil, till the bed intensively and add plenty of organic compost to loosen the soil and allow the tiny hair-like roots to grow – they can go up to five feet deep. Detroit Dark Red: 55 days. Best all-around beet for Coastal Bend. Beautiful, crimson color throughout beet; excellent greens. Grows easily and well, few pests. Excellent flavor, sweet and earthy. Solid performer. Early Wonder: 45 days. Very popular. Fastest growing. Be sure to plant in early January, as it shuts down in the heat of late March. Deep red color throughout. Nice flavor. Small greens. Golden Beets: 55 days. Amazing flavor, mild and sweet. A gorgeous, golden hue. Golden beets do not “bleed” like red beets. They can be cooked in recipes without worrying about coloring the other ingredients, as red beets tend to do. Chioggia: 60 to 75 days. Gorgeous beets. Named after a fishing village in Italy where they were considered the best beets in the world. The root skin is a rich, crimson red, while the inside is white with purple rings. Chioggia beets mature at only 2” diameter. They're so delicious they can be eaten raw.

Spacing, 3”. Height, 6” to 12”. Cool weather vegetable. Full sun to maximize sunlight of short winter days. Well-tilled, well-drained soil (preferably sandy soil) with plenty of organic compost. Hand broadcast seeds over bed and rake to 1/2” depth. Can also plant seeds in rows 3” apart. Keep soil moist until sprouting. Thin sprouts frequently (enjoy these delicious thinnings!) to final spacing of 3”. Compost with native leaf mulch in March to keep soil cool.

Harvest beets when roots are 3” in diameter. Don’t let beets grow too large or stay in soil too long; they lose flavor and become tough. Mature beets do not produce prolific leaves; plant energy is devoted to the root. Harvest beets when soil is moist for ease of removal; loosen soil carefully with a garden fork if needed. Twist off the greens instead of cutting to prevent bleeding. Store roots in cool, dry place for weeks or months.

Sugar beet production increased in Europe and received a major boost from Napoleon Bonaparte when England blockaded Caribbean sugarcane from France. By the 1900s, sugar beets became a major American sugar crop. Today, sugar derived from beets makes up 54% of U.S. sugar production.

Throw away anything you don’t use, check expiration dates on those salad dressing bottles you’ve had for years, and wipe down each shelf. A Fresh Look at OKC

childhood rule—one of the great rules of life—is that you can’t pick your own nickname. Some cities seem to think themselves immune from it, but Windy City, Big Apple, Big Easy, Sin City, Emerald City, and so many others are examples of why the rule is solid. Oklahoma City is currently workshopping two options: The Big Friendly and The Modern Frontier. The former evokes Disney-esque dog stories, and the latter cowboys in North Face. The truth is, OKC deserves better, as it’s currently one of the hottest destinations in the country. In November 2021, Alton Brown—chef, author, Food Network star, that Alton Brown—posted on social media that Bar Arbolada, a new-ish California-esque hot spot near downtown, has “the best double cheeseburger in America.” Seemingly every time someone famous goes to Oklahoma City, they find some new thing locals take for 70 The Bend

granted and treat it like a new installment in the Indiana Jones franchise. For Jay-Z it was also a burger; for Bon Appetit, it was the Best New Restaurant in America. Clearly, Oklahoma City has great food. More than a food city, though, it’s a place of genuine hospitality, grace that comes from old wounds barely healed, and a refreshing plainspokenness based on respect for doing and not just talking. The Oklahoma City National Memorial is where its story starts now; it used to be a Land Run, but that idea is now in flux, as Native Americans are reasserting— with the help of federal courts—old land rights, and contributing billions of dollars to the state’s entertainment options, primarily via casinos, many of which draw Texans by the millions each year. It’s a time for rewriting some older narratives, though. Oklahoma City is home to a thriving Asian District with an abundance of Vietnamese, Chinese, Laotian, and Korean food. A few miles south of that district, two bustling LatinX districts are home to the city’s best taquerias, mercados, and food trucks. At last count, the city contained restaurants and bars representing more than 30 nationalities. The old conception of Oklahoma City as a place of pump jacks, cowboys, steak, and Sooner football— though all those things still exist—is being displaced by a very modern, easily accessible, surprisingly diverse, fun, and fascinating city.

WHERE TO STAY The Bradford House is OKC’s newest boutique hotel, both an old residence and new motel-style addition just two miles north of downtown and a few blocks north of the Asian District. It’s beautiful, comfortable, and homey, while also managing to be elegant and modern. The kitchen features a brilliant young chef in Shannon Goforth, and one of the state’s best bakers in Trisha O’Donoghue.

WHERE TO EAT & DRINK If you had one day in the city, you would be hard-pressed to improve on brunch at Frida Southwest, cocktails and snacks at Bar Arbolada, and dinner at Grey Sweater. The former is the city’s current hottest restaurant, guided by the incredibly gifted Executive Chef Quinn Carroll, with desserts by pastry genius Chef Rachel Porter. It’s hard to overstate how good this food is, including seafood tamales, short rib empanadas, hearts of palm “calamari,” and Mexican hot chocolate cheesecake. That it also has an amazing bar with an eclectic, modern wine list and creative cocktails is an almost unbelievable abundance of riches. Palo Santo is another of the California-cool-vibe bars like Arbolada. Its owners, Brian and Bailey Butler, are hospitality professionals from L.A. Brian worked for rockstar chef Roy Choi, so the food is spectacular—especially as bar food goes—and Bailey is a brilliant, gifted bartender, whose cocktails range from very approachable (habanero Pisco punch) to very challenging (too many Mezcal cocktails to list).

Grey Sweater is OKC’s elegant, tasting menu restaurant with foods imported from all over the world. Chef Andrew Black and his team plate food that has magazinephoto quality visual appeal while also being delicious—a pleasant surprise in the Instagram-driven food scene. It’s pricey, so if you’re not looking to spend a couple hundred per person, head for Patrono, with some of the city’s best Italian, or The Hamilton, with Okie-centric, upscale casual dining and a cocktail program to rival any in the state.

WHERE TO PLAY The Boathouse District has familyfriendly fun—ziplines, kayaking, a surfing simulator, white water rapids—and an Olympic training facility along the Oklahoma River. Plus, the burger at the Big Water Grill is among the city’s best. Scissortail Park is the newest addition to downtown, and it has and is surrounded by tons of options: the Myriad Botanical Gardens, Spark Burgers and Custard, splash pads, Social Capital’s massive beer selection, running and biking trails, and the Paycom Arena if you’re trying to catch a Thunder game.

OKC Memorial and Museum. No, it’s not technically fun, but it’s important— both to the locals, and to America’s modern history. It’s designed to be viewed day and night, and it’s stunning at every hour. The First Americans Museum opened in October 2021, completing a decades-long vision to gather the stories and artifacts of 39 Native nations in one stunning space. With entire sections for children, interactive exhibits, a restaurant with Native American specialties, the voices of Native narrators, and a massive collection of artifacts, a family can spend an entire day exploring the site. The OKC Museum of Art and Oklahoma Contemporary Art Center are two very different art experiences, but both are bound together by a commitment to modern art. The OKCMOA’s permanent collection includes a massive Dale Chihuly installation that is whimsical, colorful, and beautiful.

ou might recognize her from special performances at Bellino's Italiano Restaurant or Sunday services at First United Methodist. But for those who don't, Belarusian-born opera singer and pianist Olga Miliuta is a rare talent who has made the Coastal Bend her new home, and is harnessing her talent and the power of music to build confidence and inspiration in others. Born into a family of musicians and doctors, Miliuta began her musical journey at a very young age. A graduate from Minsk State College of Arts, Miliuta went to school for 16 years to become a choral director, music teacher, opera singer, and piano player. With an impressive repertoire of more than 200 musical pieces in 15 languages, Miliuta’s work has encompassed performances as a guest soloist in Germany, Russia, Italy, and France for various symphony orchestras, as well as victory in numerous opera competitions worldwide, including France, Italy, Belarus, and the United States. 74 The Bend

"I give piano and voice lessons— not just opera voice lessons, all styles. I know from my experience that if you [understand] classical basics, you can sing everything. I am an example of that for my students," Miliuta said kindly. Miliuta also works with disabled individuals for therapy and applies her expertise in music therapy toward helping those with autism and risk of stroke. She expresses strong beliefs in music's healing power for mental health and attributes her native culture as its proof. "I believe people need culture. When you have music in your life, you have a different priority. I like to help people because people need culture. People need music," she said. "In America, this can be very expensive. In Europe, it's more available for people. It is a natural part of our culture to bring your child to the studio to sing. It's normal. I want to make [music] more available for people here." Collaborating with the Chopin Society of Corpus Christi helps her expand her opportunities for herself and her students—future plans include preparing her students for an intimate recital building up to singing competitions. For now, her primary goals remain bringing confidence to her students and helping them learn the tools to live happily and healthfully through music. "You never know what's going to happen in your life. Today, maybe you [feel like] you’re number one, and tomorrow you might have something different happen in your life and be on the opposite side of the world starting from the bottom," Miliuta said. "I want to show people and lead them by my example how to be confident and happy, because music and art help us to open our possibilities and our minds." T

he climate in Corpus Christi can beat down on some plants, make them bend their backs away from the sun, turn toward the soil, and lay down forever. But some plants thrive; some find solace within the Coastal Bend. Among these is the portulacaria afra, or little jade bonsai. Local graphic designer and painter Gilbert Cantu knows a thing or two about this, as he’s added “bonsai expert” to his list of talents—hence the creation of his Little Jade Bonsai blog and its accompanying YouTube channel. “I got started 19 years ago, when my wife was pregnant with our daughter,” Cantu said. “We went to Target, back when Target actually had a garden center, and I saw a bonsai tree, a juniper, and I thought, ‘I wanna try that.’ I think we’d just watched The Karate Kid. “I don’t know, I caught the bonsai bug, man,” Cantu continued. “I just became so interested in it, started reading about them, started ordering all these trees, different species off of eBay. I became addicted.” Within a month or two, Cantu had accumulated around 50 trees, and within the next month, he’d killed every single one of them—except, that is, for the jade. “I thought, ‘If I can keep this one alive, maybe I’m doing something right. Maybe I should focus on that species.’” That focus shifted into not only becoming adept at growing and trimming the little trees, but also in sharing his journey across multiple platforms, both virtually and in person.

This particular tree is one of Cantu’s oldest. At 35 years old, he lovingly refers to it as “The Godfather.”

Cantu’s Instagram page has amassed over 26,000 followers, and his YouTube channel has more than 9,000 subscribers. He also works with the Corpus Christi Bonsai Club and leads workshops and demos, sometimes in his own home. It isn’t enough for Cantu to gain more knowledge and respect for the art of bonsai; he wants to share what he’s learned with people from all over the world. “I didn’t create Little Jade Bonsai to be a nursery or store,” Cantu said. “I just wanted to post and share my trees with everybody.” His followers began asking more questions and seeking tips for their own trees, and from there, Little Jade Bonsai began to snowball into what it is today. “It’s awesome, because I literally connect with people all over the world, and the [coolest] thing about that is it doesn’t matter what religion you are, what country you’re from, what background you are. I talk to people in India, in Iran, in Australia, South America—so many countries, but we are all brought together by our love for nature and for bonsai.” While Cantu finds fulfillment in the trimming and care of his trees, and in sharing that with people, it’s the simple act of doing it that drives him, the simple pleasure of bringing nature into an urban existence. “I’m a very spiritual person,” Cantu said. “I love nature. I strongly believe in taking care of our environment and loving nature and loving mother earth, so it’s an art form. I always wanted to be an artist when I grew up, and I always had teachers telling me I couldn’t; that I could do it on the side, but not actually be an artist. But now, I’m a graphic artist, a traditional artist, and a bonsai artist, so it’s all art. It all ties together.”

A

s the Western world recovers from our New Year’s festivities, the Chinese are just beginning an epic celebration to ring in their own new year. The Chinese calendar is based on a fascinating story: According to legend, the Jade Emperor held a competition to determine which animals would hold the honor of guarding his heavenly gates. Only the first 12 animals to enter his gates would be selected. On the day of the race, the smallest of the competitors, the rat, woke up early to get a head start. Meanwhile, the mighty tiger, who assumed he had no real rival in the race, slept late. The rat came to a rushing river he could not cross and then waited until the steadfast ox finally arrived. The clever rat hopped on his ear and hitched a ride across. Once through the river, the rat scurried down from the ox’s back and was the first animal to reach the feet of the emperor. The diligent ox came in second. The haughty tiger came in third, and so on the rest of the 12. These animals represent the Chinese zodiac. It is believed that people born in a given year tend to share traits with their zodiac animal. Babies born this year, the Year of the Tiger, will be strong, powerful, and courageous. The New Year is the most significant holiday for Chinese cultures. To ring in the Year of the Tiger, Chinese families participate in a sixteen-day celebration beginning Jan. 31 and culminating in the popular lantern festival Feb. 15. Preparations start as early as Jan. 10, with a deep cleaning of the house to “sweep out” the old year and make room for the year to come. Families reunite over a traditional meal in homes decorated with red lanterns, paper cuttings, and New Year paintings symbolizing good luck. The celebration meal includes traditional foods that bring good fortune the following year, such as fish for prosperity, spring rolls, dumplings, and niangao to increase wealth, tangyuan to strengthen family ties, long-life noodles signifying a long, happy life, and citrus fruits to bring good luck. The reunion meal concludes with the family gathering together to watch the Spring Festival Gala. Chang Shou Mian (Longevity Noodles) Serves 4 entrée portions

PREP TIME: 3 minutes COOK TIME: 30 minutes INGREDIENTS:

3 tbsp vegetable oil 1 tbsp sesame oil 4 cloves garlic 1 lb chicken breast, cubed 1 1/2 tsp fresh ginger, grated 5 ounces shiitake mushrooms, sliced 12 oz Lo Mein noodles 2 tbsp oyster sauce 2 tbsp soy sauce 1 tbsp chili paste For garnish: sesame seeds and 1 bunch scallions, julienned DIRECTIONS:

Heat oils in a wok or large saucepan over mediumhigh heat. Once oils start to shimmer, add garlic, chicken breast, and ginger. Cook for 10 minutes, turning chicken halfway or once golden brown. To prepare dry lo mein, place a large pot filled with 6 quarts of salted water over high heat. Cover pot and let come to a boil. Cook noodles for 3 minutes, then drain into a strainer. Run cold water over the noodles to stop the cooking process. (If using fresh or pre-cooked lo mein, make sure the noodles are at room temperature, then run them under cool water prior to combining with cooked chicken mixture.) Add prepared noodles and mushrooms to chicken mixture, along with oyster sauce, soy sauce, and chili paste. Stir frequently for another 3 minutes, until fragrant and well combined. Garnish with fresh scallions and sesame seeds.

3 cups rice flour 1 cup brown sugar 1/2 tsp salt 1 (13.5 oz) can coconut milk 1 cup boiling water 2 tsp vanilla extract 1 tbsp orange zest For garnish: peeled mandarin orange slices

DIRECTIONS:

Place a double boiler filled with three cups of water over high heat. Combine cake ingredients in a large bowl. Beat for 4-5 minutes, until completely smooth with no remaining lumps. Transfer batter to an oiled 8-inch cake pan. Place cake pan in double boiler insert or flat-bottomed steam basket. Steam for 60 minutes, until cake center is set. Once cool, decorate the top of the cake with sliced oranges.

n Bluff ’s Landing, the sun stays shining and the Laguna Madre is welcoming. The Lookout offers waterside dining and a fresh culinary perspective to the Coastal Bend, served up by the culinary talent behind those revolving kitchen doors; and this time, Executive Chef Joe Brock let us back there to see what’s cooking. The pan-fried flounder with annatto rice pilaf on a Cajun crab tomato sauce and charred broccolini was born of Brock’s innate skill, which stems from Japanese and French cooking styles, and a vision on a plate. “It might remind you of nature in a sense,” said Brock. “I envision looking down on this red sun in the center (to kind of commemorate that I was born in Japan), with trees that are standing up; the flounder, it’s kind of a cliff there in the center, and the rice being a part of that red sun’s aura.” The flounder is delicately pan-fried in cornstarch and laid upon the colorful annatto pilaf, an ideal pairing for a waterfront sunset and a glass of house pinot grigio. In the making of a dish, Brock and the culinary talent at The Lookout spoke about working backward: seeing a perfect picture on a plate first before fine-tuning and filling in the blanks with different cooking methods and ingredients with the final feel in mind. “Reverse engineering, I guess?” Brock laughed. “We created The Lookout to be not just a restaurant, but a true dining experience here in Corpus Christi,” said owner Clara Dobson. “As much as possible, we try to work with local suppliers, small farms, and vendors to find our ingredients.”

The full craft bar at The Lookout has a happy hour every Wednesday through Saturday, 2-6 PM. With seasonal cocktails and a gorgeous view for mimosas, you’ll never have an empty glass.

In a tradition observed around the world, Corpus Christi residents have long taken part in the ritual of rushing into the cold water from the beach on New Year’s Day. The decades of annual events started with a dare by Chamber of Commerce Manager Dan Chamberlin at a Christmas party in 1954, and resulted in his staff taking the first dip in the Gulf Jan. 1, 1955. Some years, the swimmers enjoyed comfortable 80+ degree weather, while most years it was down to the 40s or 50s. An advertisement for the New Year’s Day Swim in 1964 hoped to bring crowds with its beauty pageant, sailboat races, clowns, diving, water skiers, coffee, and doughnuts.

The swim returned often to the Gulf, but also was held some years on North Beach. Certificates handed out to those who took the plunge stated the event was “an indication of the year ’round mildness of Corpus Christi weather.” Well, it was until it wasn’t. Several years of cold weather put an end to the tradition after Jan. 1, 1978’s event. Sponsorships by the Chamber of Commerce and the Jaycees ended, as the event wasn’t seen as encouraging to tourism with freezing swimmers shivering on the beach. That didn’t stop locals from enjoying the occasion for decades, through warm and cold.
