Life Is Like a Box of Pizza

A fun fact about my household is that when my husband and I can’t fall asleep, we often put on an episode of “Unwrapped.” You know the show—hosted by Mark Summers, who seemingly hasn’t aged a day, offering viewers a behind-the-scenes glimpse at how some of our favorite foods are made. Serendipitously, during the production of this issue, we happened to catch an episode that centered around this month’s theme: pizza.

Throughout the episode—season 2, episode 8, if you’re curious—Summers speaks to the individuality of pizza and its power to bring people together. This might sound like a stretch, so bear with me … but the more I think about the iconic dish, the more I see just how much it can teach us about life.

A blank canvas of sorts, pizza starts with a solid base of good dough, just like a well-rounded life starts with a strong foundation. From there, we have endless opportunities to build, layer by layer, reflecting our own inspirations, choices and experiences. And just like life, pizza is best enjoyed when shared with others.

Inside this month’s feature, which begins on page 30, we explore the variety of ways this beloved classic is cooked and topped off here in the Coastal Bend. The duo behind Sacred Sisters Wellness shares

Dr. Kingsley Okonkwo

The founder and president of Corpus Christi FC discusses the team’s recent advancement into the United Soccer League One and its soon-to-be new home

In 2018, the city’s first and only preprofessional football club, Corpus Christi FC Sharks, took the field. Before the team began play, Dr. Kingsley Okonkwo had spent two years working on making that a reality. “In 2016, I began exploring the possibility of bringing a United Soccer League Two franchise to our city,” he said. “My research confirmed the Coastal Bend is home to many talented players and a passionate soccer community, which led me to acquire the franchise.”

A medical doctor by profession and a former soccer player himself, Okonkwo’s deep love for “the beautiful game” fueled his drive to create new opportunities in the sport for Corpus Christi. Now, six years after the team’s first season, it is stronger than ever—and its new era has only just begun.

Kylie Cooper: How has CCFC evolved since its inception in 2016?

Dr. Kingsley Okonkwo: It’s been an incredible journey, with tremendous growth both on and off the field. In 2019, we launched our youth academy to nurture young talent within the community. Last December, we broke ground on our sports complex and stadium project. This past summer, the CCFC Sharks made history by becoming USL2 division champions for the first time and earning the title of the highest-scoring team in the nation.

KC: The club hasn’t had an “official home” since its inception, which will soon change with the completion of the new, state-of-the-art multi-sports complex. What does it mean for CCFC to have a home field and training facility?

KO: We’re thrilled about the move—it’s been a lot of hard work, and we can’t wait to finally settle into our new facility. The Corpus Christi FC Multi Sports Complex will feature eight multi-use fields and a 5,000-seat stadium. In addition to serving as our training facility and home venue, it will also host youth tournaments for various sports, including baseball, softball and soccer, nearly every weekend throughout the year.

KC: What do you hope the addition of the complex will bring to the Coastal Bend?

KO: The complex will offer another space for the community to relax and stay active, and our youth players and their families will no longer need to travel as extensively for tournaments. The complex will also generate local jobs, and visitors will contribute to our economy by supporting local businesses during their stay. This influx of visitors will boost our local economy by filling our hotels and restaurants, and creating new jobs.

KC: What is the tentative timeline for the complex’s completion and opening?

KO: Phase one of the Sports Complex, including the multi-use fields, is set to be completed by the end of this fall, with phase two, which includes the stadium, expected to be ready by summer 2025.

KC: How will the new facility aid in CCFC’s overall standings in the United States soccer system?

KO: The United Soccer League has been incredibly supportive of our efforts. We’ve been promoted to a higher level of play and have been offered a United Soccer League One franchise. This means that Corpus Christi will soon be home to a fully professional soccer club, competing from March to November each year. We’ve been working toward becoming a fully professional club for the past three years, and we’re thrilled to see it finally coming to fruition.

KC: How will this change the local soccer landscape?

KO: It’s a significant milestone when you consider other cities with professional soccer teams, like San Antonio, Houston and Dallas. It brings me great joy to know that Corpus Christi will soon be counted among these major cities. To make this a success, we’ll need the support of our entire community.

Celebrating Literature, One Author at a Time

Corpus Christi Literary Reading Series hosts nationally renowned poets, writers, novelists and journalists

Books can transport readers to another time, lifestyle, social circle or location—and for the last 37 years, the Corpus Christi Literary Reading Series has transported authors to the city to connect with book lovers in a way that no other community is. The 501(c)3 arts organization truly understands the value of the written word.

In a piece written for the Corpus Christi Caller-Times in 2017, series founder Janis Williams stated, “We believed that people would contribute to our series if we showcased first-rate writers. To that end, I wrote Larry McMurtry that we were starting a series and that we hoped he would be our first reader. Much to our surprise, he agreed.”

Since 1987, when the Pulitzer Prize-winning author of The Last Picture Show, Lonesome Dove and Terms of Endearment opened the series, more than 60 journalists, poets, short story writers, novelists and essayists have taken part in the weekend-long celebrations of reading and writing. Award winners John Updike, George Plimpton, Horton Foote, Meg Wolitzer, Stephen Harrigan and Junot Diaz have come to Corpus Christi to read from their works, as have 2019 Texas Poet Laureate Carrie Fountain and bestselling authors Justin Cronin, Andre Dubus III, Elizabeth Strout and many others.

Donald Ray Pollock, whose book The Devil All the Time was made into a Netflix film in 2020, was the first reader post-COVID. Corpus Christi native and novelist Bret Anthony Johnston appeared this past September, marking his third time as a guest.

According to Alejandro De Leon, president of the volunteer board, what makes the series so special is that one writer is the focus of a weekend of activities, rather than one evening of readings by multiple authors. In Corpus Christi, the biannual events feature social gatherings as well as an evening reading and Q&A in an intimate setting at the Art Museum of South Texas.

“We try to identify authors who are on the rise before they hit the peak of their careers, but we have welcomed many writers who are already known internationally, nationally and regionally,” said De Leon. “The board is challenged with our selection process to identify guests who reflect a diversity of styles and appeal to a large number of readers.”

Since the series’ inception, a core group of six women has overseen the organization, with new members joining along the way including De Leon in 2019. Funded by patrons, the readings are open to the public with the next scheduled for the spring.

“We want to celebrate prose, phrases, mastery of language and the beauty of the word, and we want to share it with everyone. Reading may be something we do alone, but the series is social and open to all,” said De Leon.

The grassroots reading series has stayed true to its founding principles set over three decades ago: providing local readers and writers the chance to engage with literature on a deeper level; fostering a community where storytelling is celebrated and connections between authors and readers are forged.

As the holiday season approaches, the pressures of busy schedules and heightened expectations often lead to stress. For Kaeli Hernandez and Natasha Perez, owners of Sacred Sisters Wellness, dealing with stress lies in returning to holistic practices rooted in mindfulness and balance. Both born in Hawaii and holding advanced degrees in health-related fields, they have devoted their lives to promoting wellness through ancient healing arts. We asked Hernandez and Perez to share insights on meditation and mindfulness, and they offered practical tips to help us all cultivate a sense of calm and presence, even amid the chaos of the holiday season.

What is your definition of meditation?

We look at meditation as the art of doing nothing. It is the practice of being present and learning to listen with compassionate awareness. Meditation cultivates mindfulness and we teach a more traditional approach of seated meditation, initially with guidance, then leading into complete silence.

What does it mean to be mindful?

Being mindful means being fully present in the here and now. It’s the space of being free from self-judgment and overactive thoughts that may come from past experiences or focusing on the future. Mindfulness is not a goal to be achieved, but a practice that can be utilized daily. A few daily activities to practice mindfulness are brushing your teeth, washing dishes and going for a walk. During these activities, notice when your attention goes somewhere other than the activity at that moment, and continue to bring your focus back to it as many times as needed. At Sacred Sisters Wellness, we view mindfulness as meditation off the mat.

How does practicing in a group setting differ from practicing alone at home?

Practicing in a group setting can offer a supportive environment for students to learn and grow, especially if a person is an extrovert, looking to get out of their comfort zone or newer to the practice, and wanting a more interactive experience with their peers and teacher.

Practicing alone is less interactive with peers and teachers, but very powerful, and may speak to those who might feel intimidated in a group setting, or who are more introverted and/or looking to start a practice at home.

With the holiday season quickly approaching, what advice do you give readers on how to stay present in the moment?

We suggest taking moments to intentionally check in with yourself, whether it be taking deep intentional breaths or using breathing techniques like three-part breath or alternate nostril breathing (nadi shodhana); EFT (Emotional Freedom Technique, aka tapping) before walking into your family gatherings; or allowing yourself to keep it

simple and not finish everything on your to-do list. Give yourself time to prepare, keep it simple and connect to your breath often. Keep in mind that we are all doing our best with the tools that we have at any given moment.

What about dealing with stress during a sometimes high-stress season?

When you notice you are overwhelmed with stress, acknowledge it and then do one thing for yourself to bring you back to the present with what you have in that moment. Keep in mind your “why” or intention. For example, if you are hosting a gathering, be honest with yourself of what you can and can’t do right now. Coming back to your intention will help you feel energized and uplifted rather than overwhelmed and stressed.

Remember, stress is temporary and it isn’t necessarily a bad thing; it’s how we handle it that begins to affect our health. Asking yourself what you need will go a long way, as well as becoming familiar with how you manage stress. Depending on what will be most beneficial for you in that moment, a few suggested practices are a mindful jog, a bath, asking for help, drinking your favorite tea, attending a yoga class, moving your body in some shape or form and most importantly, knowing you are not alone.

Deep in the Lamar Park neighborhood sits a modernized 1960s home that proves classic design and impeccable taste will stand the test of time. The owners purchased this two-story residence in 2008 after becoming empty nesters, and have laid their hearts into making it a space filled with both classical charm and hints of modern traditional décor.

“I’d always thought this house was pretty with the rock siding,” the owner said as she recalled their decision to purchase the home. “We added a few things and reconfigured the kitchen, but we really didn’t change too much [of the interior architecture].”

Large format concrete tile flooring, a neutral color palette and upgraded appliances created a newfound glory to the home and fostered a welcome gathering place for the family’s grown children and grandchildren.

The main living area makes up the majority of the first floor. In the middle, a large double-sided stone fireplace divides the space’s seating areas. The owner enthused about the great detail put into its construction when the home was built years ago, “When the fireplace was created, each stone was chosen for a specific spot to ensure perfection.”

Board and batten detail lines the walls surrounding a mix of carefully selected antique furniture from various periods. The blend of Fortuny Italian damasks and Aubusson tapestry pillows with an unexpected touch of leopard enriches the space with layers of history and a longstanding standard of quality. Alongside lush and verdant indoor greenery, paintings of water reeds by reputed local artist Kitty Welsh Dudics reinforce the interior’s reverence for natural elements.

Through a widened doorway, board and batten continues into the kitchen with a wash of robin’s egg blue paint and navy accents maintaining the subtly Provençal design embellishing the home. The kitchen was once small and impractical, so the owners added gourmet appliances and a center island for additional counter space and dine-in seating.

“The kitchen is my favorite; it’s just so restful and open. It’s the heart of our home,” the owner said. X-paneled millwork and mullioned glass front cabinetry line the back wall, showcasing

heirloom glassware and an extensive collection of classic Blue Italian Spode china.

Adjacent to the kitchen, the dining room juxtaposes contemporary lines and French provincial elements. Swirls of vibrant hues battle for prominence in a large abstract painting, pulling energy from the sunlight streaming through the French doors and creating a focal point for the round glass-top dining table and modern Klismos-style chairs. An array of colorful opaque globes atop the table complements two oversized mosaic tile jars. Rarely seen in contemporary houses,

a stained red oak floating staircase coolly leads to bedrooms and a second-level living space.

Steps inside the primary hallway reveal a pint-sized powder bath, carefully appointed with a textural, tone-on-tone damask wallcovering and modern floating lavatory cabinet further merging design styles. The frameless crest mirror is flanked with silver-leafed sconces that echo the wall covering’s repeating leaf motif.

Barely there blue sets the tone of serenity through the primary suite. A large oak armoire, antique prayer kneeler and iron bedframe maintain French appointments, in contrast to the contemporary starburst convex mirror and leather-wrapped and

studded bedside cabinet. “I feel like I can take a deep breath when I walk in,” the owner said, “It’s restful.”

Across the room, earth-toned upholstery of varying patterns adorns the furniture of an intimate seating area offering a moment of quiet repose. An antique Japanese screen from the owner’s mother hangs on the wall above, connecting the past to the present and distinguishing the intention of the space.

In this home, every detail has a purpose and every selection has an intention. From the strategic accessories in one area to the exercise in restraint in another, one can’t help but appreciate the passion and dedication spent appointing their most personal spaces with a design scheme that transcends time.

Tips and tricks for growing this essential herb in the Coastal Bend

arsley is a cool-weather herb that thrives in the fall, making it an ideal addition to any Coastal Bend garden this time of year. Easy to grow, this is a must-have for both novice and experienced gardeners.

As a biennial, parsley takes two years to flower, produce seeds and develop its flavorful root—though that’s only possible if you can keep it alive through two whole summers. In the Coastal Bend, parsley suffers in the summer heat, even if it is lovingly cared for. On our farm in Rockport, we have successfully nurtured parsley for two years to harvest both its seeds and roots, but it requires significant effort.

To help parsley go to seed and develop its edible root, ensure it gets plenty of water during summer, along with plenty of afternoon shade. Applying four to six inches of native leaf mulch beneath the plant helps to keep the soil cool.

The good news? You don’t need to wait two years to enjoy your parsley: Start harvesting the green leaves as soon as they appear. Here are a few basic varieties to consider when getting started.

VARIETIES

Crispum: Curled or curly leaf parsley; perfect for garnishes or medicinal use.

Neapolitanum: Also known as Italian or French parsley, this variety is the most flavorful, and ideal for salads, soups, fish, meat dishes and bouquets. Avoid cooking the leaves, as it destroys their flavor and nutritional value. Instead, add them just before serving.

Tuberosum: Usually referred to as the Hamburg, Germany parsley, this variety is prized for its nutty root. The leaves are edible too, but Tuberosum requires extra care to survive the summer heat.

GARDENER'S NOTES

GROWING UP

Spacing, 12”. Height, 12” to 16”. As a cool-weather biennial, parsley produces edible leaves in the first year and an edible root in the second. Plant in full sun with afternoon shade, using rich, well-drained soil. At planting, mix in four inches of organic compost with two cups of pastured poultry manure and two cups of homemade wood ash per plant. Start with transplants and water regularly, adding leaf mulch to keep the soil cool.

PROFILING

When harvesting, only take up to 1/3 of the leaf growth at a time. Regular cuttings stimulate further growth and help the plant stay compact and lush. Italian parsley is the most flavorful and ideal for culinary use, but if you’re growing for edible roots, the Hamburg variety is best. In its second year, parsley grows significantly larger, nearly doubling in size. While parsley does well in a vase, it tends to wilt and blacken quickly in the refrigerator.

FUN FACTS

Parsley is packed with vitamins, minerals and chlorophyll, which gives it its distinct “green” taste. Chlorophyll is the essence of the flavor found in leafy greens, making parsley a great addition to salads for an extra burst of freshness. When added to soups just before serving, parsley enhances the dish with fresh flavor. It also brings the concentrated scent of the garden into a bouquet, adding vibrancy to your home.

Beer cans from all corners of the globe line the shelves, each with its own memory, collected from customers who — like this pizza joint — have stuck around for decades.

A small pizzeria founded by Betty and Jerry Garver, the original B&J’s has become a beloved institution that locals and visitors cherish. For over 45 years, the heart of B&J’s has remained the same: quality and a deep love for great pizza, with a defining sense of community.

B&J’s is known for its delicious Jack’s Special — pepperoni, Italian sausage and a whole forest of garlic piled high. It’s named after Jack Baker for his love of the pungent plant, and you’ll find the same flavor applied to the famous Jack’s Wings. After chopping enough garlic to fill 30 gallon jars a week, B&J’s provides enough firepower for any vampire-slaying situation.

The Bakers, Jack and Kathy, took over in 1987 and turned it into something more than just a restaurant. For Jack, a retired military man, it was about creating a space for people — locals, sailors, anyone who walked through the door — to feel at home.

Chris Baker, son of Jack and Kathy Baker, said, “Our philosophy is simple: At B&J’s, you’re only a customer once. After that, you’re family.”

Each slice is a glorious homage to flavor and freshness, crafted from dough made daily from scratch, with meats and veggies hand-cut to perfection. The menu hasn’t changed much over the years, and rightfully so: You don’t mess with a good thing. This is a place where guests can taste the history in every bite, and it’s a history worth savoring.

The Beer Drinkers Club is just another reason this local pizza joint hits all the right spots. Over 10,000 members are keeping track of their beer adventures, with some hitting the wild milestone of 6,000 brews tasted. As a member of the club, if you hit 1,000, they’ll brew a beer just for you. It’s quirky, sure, but like everything else here, it’s got soul.

Staples Street in 2007, complete with a microbrewery where they produce some of the best beer in town. Though the two locations share the same recipes and menus, Baker said, “If you ask some of the regulars at either location, they will swear there is a difference. Everyone has their own favorite store and is very loyal to that store; most won’t go to the other, swearing they can taste the difference, so we will leave that up to them.” However, the newer location does have more house brews available to patrons.

This isn’t just a pizzeria — it’s a love letter to Corpus Christi, to the community that’s kept it thriving for nearly half a century. It’s a place where you come as a customer, but you leave as family. And as the years go by, B&J’s remains a constant, a place you can always count on for great pizza and a warm welcome.

As the owners and staff look to the future, B&J’s continues to support local non-profits and give back to the community that has sustained them for decades. “Our customers are the reason for our success,” Baker said. “We can’t thank them enough.”

Baked to perfection in an old-school deck oven, it’s not trying to reinvent the wheel; instead, House of Rock is just doing it right.

But deep dish isn’t fast food. It takes 45 minutes to cook, and it’s meant to be savored. Grab a drink, settle in and enjoy the experience with friends. You’ll need the company — and maybe some help — because this pizza is a heavy hitter, and it’s here to make a statement.

Community. One could say he is an “all or nothing” kind of person. Of the dueling “get it right” and “get it done” mentalities, Garza personifies “get it right.”

“To become a pizzaiolo — a chef who has been trained and specializes in making true, Italianstyle pizzas — you need to understand how the pizza is constructed from beginning to end,” said Garza. After a trip to Los Angeles to learn from the Associazione Verace Pizza Napoletana (VPN), which is Italy’s governing body that sets guidelines

on what is considered authentic Napoletana-style pizza, Garza has learned a thing or two about the craft. Now, he feels Odi’s “offers an opportunity for anyone who cannot make it to Italy to try some pizza and pasta they would only experience in

In terms of its cooking method, ingredients and size, Napoletana-style pizza plays in a league of its own. The secret to the crisp, airy but chewy crust and perfectly melted cheese is the forno di mattoni, the brick oven built directly into the restaurant in which the pizzas are fired directly on the brick at a temperature of 800-850 degrees Fahrenheit for approximately 90 seconds.

Ingredients are a huge factor and can make or break the end result. Whole milk fior di latte, 00 flour imported from Napoli, Denominazione di Origine Protetta (DOP) pomodoro san Marzano and a 24-hour naturally fermented dough, with no added sugars or oil, are staples. Anything else is simply incorrect and threatens the integrity of what is considered to be the original pizza. Odi’s goes the extra mile and imports most of

its ingredients from Italy or small Italian-owned companies in the U.S., including two of its last known family-owned cured meat producers.

The care and attention to detail has paid off: The VPN, an international organization representing some of the oldest families of pizza makers and the most famous Neapolitan pizzerias, visited Odi’s in September to teach staff members proper techniques and allowed them the ability to become VPN Certified. They will also hold the DOP certification, “which means that with regards to the pizza at Odi’s, it will be considered authentic in the eyes of the Italian government,” Garza proudly said. The President of VPN Americas, Pepe Miele, was Garza’s instructor, and will be flying to the Coastal Bend this November to present the certification.

That might seem like a lot of hoops to jump through to create something that has trickled down to be in the same category as fast food. However, upon tasting the wood-fired masterpiece, a $5 hot-n-ready could not be further from what Pizza Napoletana represents. Ingredients matter;

technique matters; cook-method matters; and the attention to detail is evident in every pie fired at Odi’s Pizzeria (soon to be “Authentic”) Napoletana.

The immortality of Panjo’s, the oldest pizza parlor in the Coastal Bend

At the intersection of Airline and McArdle stands Panjo’s Pizza Parlor, the oldest pizzeria in town and a local landmark frozen in time. Amid a shopping center full of revolving businesses, none have been there as long as the “ye olde pizzeria.”

Hop on Google and you’ll find over 1,000 reviews singing Panjo’s praises. Customers rave about the nostalgic atmosphere, old-time piano sing-alongs and the pizza— in that order. Thousands of locals and visitors echo stories of their dads dining at Panjo’s after little league games or childhood birthday parties celebrated at the long, red-lacquered tables with Bubba the Pianist playing in the background. Patrons have shared Panjo’s with multiple generations, and unlike the surrounding changing facade, it remains faithful.

topping overload while maintaining the integrity of the crust. The secret to the crisp is in the oven— heavy ceramic slate and gas-driven—and the cornmeal dusting on the bottom to achieve the classic crunch.

The menu boasts 19 signature combinations ranging from “The Works,” the house version of a meat lover’s, to a pickle pizza that is (perhaps surprisingly) well-received by locals. Among the expanded menu of salads, sandwiches and wings to choose from, the pizza is still the main event.

On Sept. 24, 1964, original owner Paul Fair, Mayor James Barnard, County Judge Noah Kennedy and Chamber of Commerce President Dr. McIver Furman cut the ribbon in front of the pizza parlor, where they shared the first of many slices. After a successful run, Jimmie and Christie Garrett bought the business in 1991 and have run it family-style with their eight daughters, all of whom grew up working the counter—a true family affair.

Between the vintage glass light fixtures and the original Bakers Pride oven still operating after over 50 years, Panjo’s is an institution, whether patrons prefer thin and crispy pizza or the Chicago-style Deep Dish; both have cheese and

The paper plates, pitchers of beer and cafeteria-style seating serve as great equalizers and encourage a communal dining experience. Minor changes have been made over the years, such as refinishing the tabletops and donating the piano to a local church after Loyse Emmitt Jacob, more affectionately known as “Bubba,” died in 2014. The wall where the piano sat now features photos from Panjo’s past and a mural reading “I love Panjo’s.”

But what does a historic restaurant mean for our community? More than the family that its profits sustain and despite generational and economic divides, dining at Panjo’s represents what so many restaurants hope to achieve: to become a common thread in the lives of their patrons and to be a familiar and friendly place to return, again and again.

In your own words, how would you describe authentic New York-style pizza?

New York–style pizza is a pizza made with a characteristically large hand-tossed thin crust, often sold in wide slices to go. The crust is thick and crisp only along its edge, yet soft, thin and pliable enough beneath its toppings to be folded to eat.

What is Sal’s Bronx Pizza’s take on New Yorkstyle pizza? Any specific prep or cook methods? A pizza stone is a must—it cooks the dough evenly, producing a golden-brown, puffy crust.

Is NY style your favorite style of pizza? If so, why and what sets it apart from other styles?

My favorite style is NY crust. New York-style pizzas have thin, crispy crusts—similar to Neapolitan pizzas, except a bit sturdier. However, Chicagostyle pizzas have thicker crusts that extend from the bottom up the entire height of the pizza, with toppings and cheese placed first and then topped with sauce. It’s more of a pie, and can’t be folded and eaten as easily as a NY crust.

Our pizza is a Long Island-style pizza with heavy toppings and a sweet-ish base. All our ingredients have remained the same from day one, from the same distributor, to maintain constant flavor.

What sets your New York Authentic pies apart from other pizza spots in the area?

There is no other pizza in the Coastal Bend that matches our style, especially 15 years ago when we first opened. We are delighted to be part of the growing selection of local pizza styles!

The place is beautiful and retro and cool. Loved the mural on the wall and the whole retro diner decor. I was greeted immediately and received my order exactly when told on the phone. First time here. I’m from NYC, so I was skeptical. What a pleasant surprise! The server was kind, friendly, and showed concern for our experience. We ordered the 18” 4 cheese with pepperoni and jalapeño. OMG! So delicious and let me tell you, they do not skimp on cheese or toppings. The crust was not too thin and was perfectly baked to result in a bit of a crunch when biting into the slice (btw, just like NY pizza slices) Another must have is the cannoli. Two fall-inspired pizza recipes to make at home

Pizza becomes a go-to comfort food for cozy nights as the air turns crisp and leaves transform come autumn. Whether it’s a classic Margherita or a hearty slice topped with seasonal ingredients like roasted squash, caramelized onions and sage, pizza offers ample possibilities to complement fall’s warm and earthy flavors. The season invites gatherings with friends and family, where sharing a hot pizza fresh from the oven feels like the ultimate indulgence.

An autumn classic — butternut squash bisque — inspired our first fall riff on pizza. Using a butternut-based sauce infused with herby sage and woody nutmeg, we rounded out the flavor profile with smoky pancetta and caramelized red onion. After trying a few cheese options, I settled on Swedish fontina, an earthy, more pungent cousin to mozzarella.

Fig and prosciutto pizza balances sweet and savory notes with big flavor punches. We amped the flavor up with a layer of alfredo sauce to contrast dollops of fig preserves. The thin, crisp crust is then topped with sliced fresh figs and mouthfuls of salty prosciutto. The pairing of these ingredients creates a perfect balance, especially when finished with a drizzle of balsamic glaze and a generous sprinkle of fresh arugula.

Pizza, with its endless variety and comforting warmth, symbolizes how diverse and rich our experiences can be. As we savor it, let’s take a moment to appreciate not only the food but the people, moments and flavors that make life fulfilling. Here’s to gratitude and the delicious memories we continue to create, one slice at a time.

RECIPE

Fig and Prosciutto Pizza

Serves 4

PREP TIME: 15 minutes

COOK TIME: 25 minutes

INGREDIENTS:

2 tbsp butter

2 cloves garlic

3/4 cup heavy whipping cream

1/4 cup parmigiana Reggiano

1/4 tsp nutmeg, ground

1/2 tsp salt

1/4 tsp cayenne

1 lb prepared pizza dough

2 tbsp fig preserves

4 fresh figs, cut in 1/2-inch slices

3 slices prosciutto, torn into bitesized pieces

3 ounces goat cheese, crumbled

1 cup arugula

DIRECTIONS:

Preheat oven to 475°F with baking sheet or pizza stone inside.

Melt butter over medium low heat in a small saucepan. Add garlic cloves and cook for 30 seconds before adding whipping cream, cheese, nutmeg, salt and cayenne. Continue to cook, stirring frequently, until cheese has melted and a thin sauce has formed.

Roll out pizza dough to 1/2inch thickness, or thinner, as desired. Spread out a thin layer of prepared alfredo sauce. Spoon fig preserves, fresh figs, prosciutto and goat cheese sporadically over the crust.

Bake pizza for 15-17 minutes until cheese is melted. Top the cooked pizza with arugula and enjoy!

Butternut Squash Pizza with Pancetta and Caramelized Onion Serves 4

PREP TIME: 15 minutes

COOK TIME: 20 minutes

INGREDIENTS:

10 oz butternut squash, cubed and peeled

Cooking spray

1/2 tsp nutmeg

1/2 tsp ground cinnamon

1/2 tsp poultry seasoning

3/4 tsp salt

1/2 tsp cayenne pepper

1 tbsp butter, plus 2 tbsp butter

1/2 red onion, sliced

2 tsp maple syrup

1 bunch of sage leaves

1/2 cup heavy whipping cream

2 cloves garlic

1 lb prepared pizza dough

1 cup fontina cheese, shredded

2 oz pancetta

DIRECTIONS:

Preheat oven to 375°F. On a baking sheet, toss the squash with cooking spray, nutmeg, cinnamon, poultry seasoning, salt and pepper. Roast for 15-20 minutes, or until fork tender. Increase oven temperature to 475°F with baking sheet or pizza stone preheating in the oven. Place a skillet over medium low heat. Melt 1 tbsp butter and add onions. Cover the skillet and stir occasionally until onions are fragrant and translucent, or about 5 minutes. Add maple syrup, remove from heat, and keep covered while you move to the next step. Place a small pan over medium-low heat. Melt butter and add whole sage leaves. Heat until leaves crisp and darken. Combine roasted squash, whipping cream and garlic in a food processor or blender. Puree until a thick, smooth sauce forms.

Remove the preheated pan/pizza stone from the oven and roll out the pizza dough over the surface. Spread butternut sauce evenly over the dough in a thin layer. Top with shredded fontina, caramelized onions, sage leaves and pancetta.

Bake for 15-17 minutes until the cheese is melted and bubbly and the crust is golden brown. Serve hot and enjoy!

It’s been debated whether flatbread is pizza or not, but some of the latter’s staple components, like a chewy crisp crust and melty cheese, are abundant in the former. Restaurants tend to take a few more liberties with their flatbread entrees, making for a unique blend of toppings and flavor pairings. Here are five to try around town.

Craft cocktails and a slice of sophistication in a downtown Corpus Christi speakeasy

When you spot the Al Capone mural, you’ll know you’ve arrived at Prohibition. You can find an entrance hidden inside RETRO; just be prepared for the culture shock. “It’s a different vibe, but it’ll feel like you’re being transported into a different era,” said Freddy Rodriguez, who owns both RETRO and Prohibition. “It’s a cool vibe when you wanna slow down a little bit and have a conversation, talk some business.”

A Corpus native from Molina who started splitting his time in Houston at age 7, Rodriguez has taken an entrepreneurial interest in the revitalization of downtown. “I sold all my properties in Houston, and I reinvested in Corpus Christi,” he said.

During the pandemic, Corpus made Rodriguez an offer he couldn’t refuse: “I’m in the real estate business; that’s how I got into this deal. It was a real estate investment.” He purchased the building at a pandemic price, but social-distancing restaurant/bar tenants were scarce. So he opened his own nightspot.

RETRO came first, alongside a partnership with New York & Chicago Pizza Co., a Rodriguez family favorite in Houston. Owner Dominic Catalano relocated the brand, providing Corpus with pizzas like the Selena (“lots of pepperoni”) and the Godfather.

Under Rodriguez, Catalano and General Manager JJ Stegar, the veteran-run establishments also share access to the rooftop lounge overlooking Water Street, which welcomes musical acts and smoking— even stogies.

Behind the bar at Prohibition is Michael Dart, a Marine Corps veteran and certified mixologist with 22 years of bartending experience. He moved to Corpus from Cincinnati two years ago, managing the bar at Holiday Inn Marina before taking a job at RETRO. With Prohibition in the works, Dart began crafting the cocktail menu for the speakeasy side of the building.

Enjoy daily specials such as bourbon flights on Fridays or $10 martinis on Saturdays for Ladies Night.

His popular rum Old Fashioned offers a distinctive take on the “regular, run-of-the-mill old fashioned that every bar in America makes,” Dart said. He also concocted the Untouchable, an only-at-Prohibition nod to Capone with smoked Chivas scotch, lemon juice and spiced brown sugar syrup, topped with ginger beer and garnished with lemon and candied ginger. “This is the kind of cocktail I enjoy making,” Dart said. “The more love I put into a cocktail, the better the cocktail is going to be.”

Specialty cocktails are Prohibition’s bread and butter, but don’t shy away from Whiskey Wednesday, Thirsty Thursday or Friday Night Flights, all with accompanying spirits specials. Add Prohibition to your rotation of afterwork happy hour or weekend nights out. It has invested in the Downtown Corpus Christi landscape and is here to stay.

Korean-Japanese fusion dishes at Gogi Yaki

Jessica Wang, daughter of Qingchen Wang—a man dedicated to preserving Korean culture in China—grew up in her father’s Korean BBQ restaurant, which he opened when she was 3. The sounds of families enjoying meals together and aromas of marinated seafood and beef tartare ignited Jessica’s passion for Korean cuisine, eventually inspiring her to bring Korean-inspired dishes to the Coastal Bend.

Now the owner of the Korean-Japanese fusion restaurant Gogi Yaki, Wang combines spicy Korean flavors with sweet Japanese elements to create made-to-order meals. “Gogi means meat in Korean, and Yaki means grill in Japanese,” she explained. “Nearly everything is cooked on the grill, and we take pride in offering homemade, flavorful dishes.”

When designing the menu, Wang focused on creating affordable and healthy family-style meals with clean ingredients from Korea and Japan. “Some dishes I cook at home, while others I’ve discovered while traveling,” she said. “In my culture, we eat a lot of vegetables. I wanted customers to experience that too, so I included them in various side dishes, such as cucumber kimchi, spicy bean sprouts and corn salad. We also offer black rice mixed with white rice for added whole grains. Black rice is high in nutrients and antioxidants that help protect cells from damage.”

The vast majority—probably 98%—of Gogi Yaki’s meals are distinctively homemade. “We encourage customers to try the house special or dishes they wouldn’t normally choose,” said Manager Erick Sanchez. “Sticking to our offered flavors helps them experience the authenticity of the cuisine and culture.”

To maintain authenticity, ingredients such as noodles, kimchi, black rice and seasonings are shipped directly from Korea. In the restaurant, customers can immerse themselves in the culture through K-pop music and Korean and Japanese cooking shows playing on the TVs.

Whether dining in or taking out, Gogi Yaki has cultivated an attractive and distinctive cultural experience for locals.

In December 2019, Shyqeri “Shoocha” Kuqi launched Shoocha Photography shortly before the pandemic disrupted the world. Dr. Davin Cordell joined the Coastal Bend community six years ago with his wife, Oriana, and daughter, Bella, one week before Hurricane Harvey arrived. He came to join the Orthopaedic Center of Corpus Christi as an orthopaedic spine surgeon. Cordell completed an advanced fellowship in adult and pediatric spine surgery at Washington University in St. Louis. Prior to becoming an orthopaedic surgeon, he was a physical therapist. This background gives him a broad approach to the diagnosis and management of spine-related problems. He uses endoscopic and minimally invasive techniques with focus on motion preservation as well as traditional open surgeries to achieve the most predictable and reliable results. Cordell believes in performing the least amount of surgery necessary to fix the problem.

He jokes with a mentor that he thinks about spines 90 percent of the time, but what he really enjoys is spending time with his family around the house and at favorite local spots.

“We have loved becoming a part of the Coastal Bend community and look forward to many more years to come,” he said. “We have found our home. Thank you for having us."

370 Miles Along the Texas Coast

Documentarians Jay and Chrissy Kleberg explore the rapidly changing region

Atotal of 370 miles, 15 passes, seven islands and 21 days. That was the adventure husband-and-wife duo Jay and Chrissy Kleberg set out on in October 2023. Joined by an Emmy-winning production team, the pair walked every inch of the Texas coastline, from the Louisiana border to the Rio Grande. Local pitstops on the couple’s journey included San José Island, Mustang Island and the Padre Island National Seashore. The result? An inspiring six-part documentary series, “Chasing the Tide.”

With a relationship rooted in adventure and a shared passion for conservation, Jay and Chrissy explored nearly all of Texas’ 10 ecoregions. However, they had hardly experienced the Texas Gulf Coast.

“We decided walking would be the best way to immerse ourselves and to cover 370 miles of beaches, islands and peninsulas and cross 15 passes, river mouths and ship channels,” said Jay, who’s a co-host, co-director and co-producer of the series, and a Kingsville native.

longest barrier island—Padre Island, which stretches 113 miles down the southern Texas coast. It is also a critical habitat for billions of migratory birds and serves as a nursery for the Gulf of Mexico, as well as the ancestral home of the Karankawa peoples. However, it also experiences some of the nation’s highest rates of coastal erosion and sea level rise. These variables led the Klebergs to quickly realize a simple fact: Texans are resilient.

“Texas’ coastal region embodies what the state is and aspires to be—breathtaking and gritty, storied and inspiring, expansive and eclectic—and it’s rapidly changing,” said Chrissy, co-host, co-director and co-producer. “While the Texas coast may have one of the longest coastlines in the country, it’s the people and the smallest of things that make it so special.”

“Chasing the Tide” follows the Klebergs up the coast as they explore how rising sea levels and temperatures affect coastal communities; how the nation’s largest energy capital and leading carbon emitter is on the frontier of climate change impacts and how scientists and community leaders are spearheading efforts to fortify the coast. Some of these efforts are taking place here in the Coastal Bend, including restoring the world’s most endangered sea turtles—Kemp’s ridley sea turtles—and protecting the nation’s last remaining wild oyster reefs.

Revealing natural beauty and confidence at Christine Bruno’s House of Colour

Inspired by her own transformative color analysis in October 2023, she found a new calling: After living in Corpus Christi for three years and searching for a way to connect with the community, she trusted her instincts to bring House of Colour to town this past summer, and began sharing the power of color with her clients.

“When I had my colors done, it was a life-changing experience because it made me feel really beautiful,” Bruno said. “I noticed we didn’t have anything like that here, and I jumped at the opportunity to bring it to Corpus Christi.”

The concept of color analysis involves enhancing a person's natural beauty by finding the colors that suit them best. Backed by science and rooted in the color theory introduced by Swiss painter Johannes Itten in the 1930s, the process is highly personalized.

During the appointment—2-2.5 hours—clients come in barefaced, and Bruno analyzes their undertones in natural light using precision dyed drapes, offering each client an in-depth analysis to determine whether they are warm or cool. She then assigns them a season — autumn, winter, spring or summer — and curates a specific palette designed to highlight their best features.

To help clients use their color analysis to its full potential, Bruno also introduces the concept of “wow” colors — the standout hues that tell what your sub-seasons are.

“We also teach the three points of red,” she said. “Each season has its own three shades of red, and I show clients how to properly use them without clashing.”

For Bruno, the experience is deeply personal and fulfilling. When clients step into her studio, they often feel vulnerable, but by the end of the session, they leave feeling confident, rejuvenated and radiant in their new colors. This feeling of transformation is why she fell in love with color analysis and believes Corpus Christi needed this service.

The history of manned spaceflight includes Corpus Christi

It didn’t take long for Corpus Christi’s tie to the space program to grow beyond the fact that future astronauts including John Glenn, Alan Shepard and Neil Armstrong had taken to the skies over the area during U.S. Navy pilot training.

On the land that served as Rodd Field, an auxiliary landing field for NAS-CC during WWII, NASA built Manned Space Flight Tracking Station No. 16 in 1961. The station began as a site to monitor Project Mercury, which provided many of the “firsts” of space travel including the first manned suborbital flight and first American in space (Shepard), and the first man in orbit (Glenn).

The station grew during Projects Gemini and Apollo, employing about 130 people at its peak. From

“TEX,” staff monitored telemetry data, checked the health of the astronauts and tracked data collection from experiments onboard, and after a 1965 equipment upgrade, held two-way telephone-quality conversations with astronauts aboard the spacecraft. The equipment here made possible the first live television transmission from space, aboard Apollo 7 in 1968.

In 1969, NASA’s equipment was so sensitive that the data read in Corpus Christi showed the vibration of the Apollo 11 astronaut’s footsteps as they walked on the moon. But as manned flights to space became more regular, monitoring needs grew and TEX was closed in 1974 after the return of Skylab 3. Presented to the City of Corpus Christi by the federal government, the land went on to become Bill Witt Park.
