Q: If you could only eat one local dessert for the rest of your life, what would it be?

KC: I absolutely love the sticky toffee pudding cake from Elizabeth’s. The warm, moist cake paired with delicious vanilla ice cream is the perfect end to any meal at the restaurant.

LM: Being a sweets lover makes this hard for me! But if I had to pick just one it would be the homemade cakes from Citrus Bistro. They are always so rich and delicious! Just taking one bite, you can taste the passion Christina has for her desserts.

JG: It would have to be macarons from Wildflour because the flavors are so unique and they have just the right amount of sugar. I would eat any of the flavors offerd, but I’m partial to Lucky Charms and Fruity Pebbles because they remind me of my childhood.

How Sweet It Is

Some of the sweetest memories I have from childhood are those centered around my Great Grandma Rohde’s kitchen. Every year, when the holiday season rolled around, my family piled into the tiny kitchen to form an assembly line and make homemade Pfeffernüsse.

The warm aroma of grandma’s signature spice mix would fill the entire house as the sweet, spicy German cookies baked to perfection in the oven. To this day, though my family is scattered across the country and Great Grandma Rhode passed long ago, each of us makes it a point to continue this special tradition in our own kitchens.

When putting together this month’s features, both of which focus on the dessert scene in the Coastal Bend, we found that just about every baker and pastry chef had a similar anecdote to share.

Beginning on page 34, you’ll discover seven divine dessert items and learn about the creative individuals behind them. On

page 44, you’ll meet five cottage bakers using their home kitchens to transform ingredients into magic. Across both features, you’ll find a common thread of nostalgia acting as the cornerstone to pastry-making origin stories. Baking with family as a child; paying homage to heritage; watching mothers and grandmothers pour the secret ingredient of love into the mixing bowl; a family member buying a now executive pastry chef their first cookbook — personal connections define these confections.

Desserts carry this innate nostalgia along with them. From a scientific perspective, one of the most powerful triggers of nostalgia is smell. Just as the scent of spices used in making Pfeffernüsse takes me back to my great grandmother’s kitchen, I am certain most readers have a similar memory evoked by the sweet aromas of their own familial recollections.

MINIMALISM, VERSATILITY AND COMFORT COMBINE TO CREATE A STRIKING CAPSULE WARDROBE

s temperatures drop and cozy social gatherings start to fill our days, we begin to crave comfort and efficiency in our wardrobe to streamline a single aspect of our lives. With shorter days and busier schedules, it's an appropriate time to look toward a woman who intentionally embraced a pared-down clothing palette so that she could dedicate her valuable hours to her art.

Georgia O’Keeffe may be known for her paintings of flowers and the pastel tones of desert landscapes, but in her personal life, she was a bold pioneer of monochromatic, androgynous style. While most women were wearing corsets and heels, she preferred the freedom of loose tunics and the practicality of flats.

Minimalism, versatility and comfort were the core of her utilitarian aesthetic, but if you study the ensembles carefully, you will find that her artist's eye and appreciation for the natural world can be found reflected in the subtle details and flourishes within her outfits. An embroidered southwestern pattern here, a touch of global inspiration there, sculptural silver jewelry and a cinched waist never going amiss — her creative voice resounds.

With these minimal touches of personality, we learn that functionality need not be boring; a neutral clothing palette can be a sharp and powerful statement or convey a gentle and quiet mood if the wearer wishes for subtle mystery.

You can create unique transitional moments by combining varied fabric textures and playing with silhouettes. For example, a fluid wide leg pant is grounded and balanced by a rustic linen texture in a tailored shape, or by reining in oversized proportions with cropped layering pieces in a tone-on-tone palette.

In a sense, O’Keeffe’s personal style reflects that of a “capsule wardrobe,” which includes a limited selection of interchangeable clothing pieces that complement one another. Practicality and mindfulness can create a signature style that requires very little effort and creates a very big impact.

Timothy A. Kuhlman, D.D.S. Orthodontist

Dr. Kuhlman graduated from Ohio State University College of Dentistry and completed the Tri-Service Orthodontic Residency Program in San Antonio. He spent 11 years in the Army with 2 tours of Germany. Dr. Kuhlman has also completed the Aligner Intensive Fellowship, a four-month comprehensive course designed to enhance orthodontists’ ability to treat a variety of complex orthodontic cases utilizing clear aligners.

He met his wife while volunteering for Habitat for Humanity during his orthodontic training in San Antonio. While stationed in Germany, he and his wife visited 14 countries. Roaming Gardens is a specialty flower farm and design studio in South Texas cultivating beauty via mindful gardening practices. Offering seasonal flowers, Roaming Gardens sprouted when Jennifer Vyvlecka started selling produce at the Downtown Farmers' Market — attributing her success to making connections with the community and having something distinctive to offer.

Growing flowers and vegetables is nothing new to Vyvlecka, who shares that this passion started at a young age.

"My whole childhood revolved around growing things. I was probably nine when I remember using seeds from my mother's garden and purposely planting my own, and it never stopped,” she said. “Going to college, I always rented apartments with balconies, and I grew stuff from my balconies. Flowers have always been a part of my garden; whether we were growing vegetables or not, I always grew flowers because I love them."

After one local business held a fundraiser for a cancer patient, Vyvlecka delivered a bag of vegetables and a flower bouquet to support the family during a difficult time. This small act of kindness evolved into what Roaming Gardens is today. This one-woman show offers seasonal growings and customized bouquets and floral arrangements with tasteful color palettes and style based on what's growing in her garden.

This Land Is (Y)Our Land

There’s an old Arapaho saying: “Take only what you need and leave the land as you found it.” Taking a cursory glance at the landscape of the Coastal Bend, one might see concrete structures paying homage to figures of the past, buildings that capture the sunlight through fading windows; however, one might not know the history of the land these structures were built on. They wouldn’t necessarily know the sacred markings embedded within the soil, the faded footprints of those who first inhabited these parts. But they’re still here.

Founded in 2016, the Indigenous Peoples of the Coastal Bend came together amid a series of water boils tied to the fossil fuel industry. In 2018, it received its first proclamation honoring the Indigenous Tribes of the Coastal Bend, and in 2019, it received a second proclamation, which designated the second Monday of October as Indigenous Peoples Day.

“I thought it was pretty cool [when we received the proclamations], coming from a city council that is not very open-minded with some of the things we approach them with,” said Sandra Love Sanchez, a cofounding member of Indigenous Peoples of the Coastal Bend. “ I’d say we were surprised both proclamations were signed. But I was excited; it was awesome!”

The reputation of the organization has been marred with controversy, in that it’s actively engaged in environmental activism, food sovereignty and land rights, among other things. What really brings these people together is a love of the land and a dedication to preserving the culture and history of those who came before us, those who first walked these lands.

“Everyone’s doing something different,” Sanchez said. “With over 100 members, we all have our skill sets. We have a youth council, which teaches cultural [history and practices] to youth, and then of course, there’s food sovereignty, a bunch of community gardens going on, and I’m so proud of them! I don’t even have a green thumb, but I still take part in that.”

Made up of members of the Karankawa Kadla, Lipan Apache, Mexica, Comanche and Coahuiltecan tribes, Indigenous Peoples of the Coastal Bend also shows that the Native American experience isn’t a monolith. Even within the name “peoples,” it signifies that one organization can be made up of individuals of different backgrounds who have a shared history and want to preserve a future that respects and treats our land and resources with the same honor it gives to us, by providing for us.

And though work for the organization is never finished — as it’s currently working on many projects, including trying to preserve a Karankawa settlement in Ingleside — there is a sentiment that pervades the work and the struggle to keep old ways from dying while integrating the evolving world around us.

KC: Last season, the team won the Southland Conference Championship Tournament and made its first NCAA Tournament appearance since the 2006-07 season. What was that experience like?

SL: It was an awesome experience. The way that the TAMU-CC community, our alumni and the people in the Coastal Bend region rallied around us was a once-ina-lifetime experience.

KC: Coming off a championship season and NCAA Tournament appearance, how are you feeling about the 2022-23 season?

SL: I feel as though we have enough of the right pieces to have another great season. The biggest hurdle will be how our team is able to transition from being the team with low expectations to now being the team that everyone wants to beat. That is the huge difference, and is often one that 18- to 23-year-olds struggle with.

KC: Are there any lessons learned from your first season with the team you'll bring with you into the new season?

SL: That could be a long, long paragraph. But, I think that the biggest takeaway from last season is to remain focused on the process. If you work hard and stay the course each and every day, you will position yourself to be successful.

KC: What are the challenges and/or benefits of being a Division I school in a smaller market?

SL: I think the biggest challenge is [not having] a huge alumni base and population from which to draw people to our games. With that being said, I think a major advantage is that you are a major cog in the sports industry in the Coastal Bend. Our job is to continue to put a great product on the floor and represent our university and community with pride — when you do that, the support will continue to grow.

KC: How would you describe your coaching style/philosophy?

SL: I believe in working really hard, doing the right things (on and off the floor) each and every day and giving your absolute best. If you will commit yourself to doing these things, then good things will come your way. Just make sure to enjoy the ride and have a lot of fun along the way.

KC: If you could pick the brain of any basketball coach (pro or college) who would it be, and what would you ask?

SL: I would like to sit and talk with Bill Walsh. I have always been intrigued with him as a coach and leader.

Off the top of my head some include Rock & Rolls Sushi, Doc’s, The Blue Clove, Saltwater Grill, Black Diamond Oyster Bar, Nano’s, Chapala Grill and El Potro — just to name a few.

Three words to describe how you want your team to play?

Tough, hardworking and aggressive

KC: Given the exciting roster filled with returning players, what can fans look forward to in the upcoming season?

SL: I would like to think the fans can look forward to another fun-filled season with lots of wins both on and off the court. I also believe we can continue to play a fast and aggressive style of basketball that is fun to watch.

KC: Are there any local spots you and the team go to celebrate big accomplishments or wins?

SL: I bounce around to a lot of local spots; there is not one particular spot that we frequent. There has been a lot of talk with making Brewster Street a gameday tradition but that has yet to come to fruition. I really like live music, so I typically try and find a place with that.

It’s also a science, a vehicle for innovation and perhaps more than anything, an act of love.

We talked to local pastry chefs and bakers about their standout dessert menu items to learn the ins and outs of how the perfectly plated final product gets started in the first place. What we learned in the process was that with every inspired idea, flavor combination and seasonal ingredient, a nostalgic memory was at the cornerstone of what these individuals do. Baking (or pretending to bake) with family as a child; paying homage to heritage; watching as mothers or grandmothers baked their hearts away in the kitchen — personal connections define these confections.

While each bite into any of the featured dessert items is sure to bring a burst of flavor, know that so much more is baked into what you’re eating.

Love, familial ties, culture and joy are mixed into the divine desserts found in the Coastal Bend.

Beneath a layer of divine dark chocolate ganache lies a layer of Valrhona raspberry inspiration. The sweet yet tangy flavored ganache is rounded out by the full-bodied roasted cocoa flavor featured in the dark chocolate. The perfectly golden tart is topped with a simple French meringue and delicate, edible gold flakes. The meringue brings contrast in texture paralleled to the pâte sucrée crust, which is tender, sweet and crip when baked.

For Hernandez, this particular confection was truly inspired by simplicity. “I believe less is more,” she shared. “A dessert should excite your palate, but overcomplicating it can be distracting for all the senses.” The idea of seemingly simple ingredients coming together to create something so delectable makes this a standout dessert.

TIPS FOR HOME BAKING

Hernandez grew up surrounded by baked goods. Actually buying dessert, as opposed to scratch baking, was unheard of in her family. Inspired by her affinity for pastries, like her mother’s fresh breads and her aunt’s homemade kolaczkis, she attended Le Cordon Bleu College of Culinary Arts in Austin to hone her craft. Life eventually brought Hernandez back to her hometown of Corpus Christi, and after working at various restaurants and operating her own cottage baking business, Richard Lomax approached her to join his Water Street Company team in October 2021.

Now Executive Pastry Chef of Water Street Company, Hernandez is responsible for the recipe development and quality control of all desserts and baked goods at Water Street Oyster Bar, Elizabeth’s, event catering and the new Central Kitchen Bakery, opening in the Water Street Market this season. Overseeing the baked goods served at all three establishments means ensuring cohesion and consistency across the board.

For Hernandez, the recipe development stage always starts with the basics. From there, she adds in layers of creativity to give each menu item unique flair, pulling inspiration from seasons and emotions. “When I’m making anything, I always think about how it is going to make someone feel,” she said. “I look at what is in season, and then I think about how I can kind of match that in a psychological way.”

The most common mistake I have seen people make when baking is over-mixing. An over-mixed dough encourages gluten development, which creates a tough crust and makes the dough difficult to roll out. When it comes to the pastry making at Bien Mérité, the saying “it takes a village” certainly rings true. Salazar has been with the bakery since it opened in 2019. She dreamed of becoming a baker from a young age, but it wasn’t until she attended culinary school in Japan 15 years ago that the dream even seemed possible.

Harris’ baking destiny was made evident as a little girl when she began combining many sauces in her kitchen into a bowl, mixing flour into it and serving it to her family. After graduating from the culinary program at Del Mar College, she began her career at Bien Mérité. Three years later, she’s certainly making that little girl with the sauce packets proud.

Rounding out the dynamic trio is Ramirez, the newest addition to the tart baking team. She is actively continuing her pastry education and just over a year after joining the team, her love for making others smile with good flavors is seen in each tart she produces.

MERINGUE Corn Husk

Corn might not be the first ingredient that comes to mind when thinking about decadent desserts, but the produce takes center stage in this innovative treat on YOLA’s menu. An ode to not just a staple in Mexico, but one of the primary bases of daily meals in the country, this dessert is all parts corn — from grain to husk.

The textures found within every bite make for a blissful experience. The meringue, which includes tiny particles of corn husk, provides a perfect outer crisp encapsulating the smooth whipped cream infused with a Mexican corn liquor featuring notes of toasted sweet corn and hints of vanilla.

The last piece of the delicious puzzle is a mousse made with fresh sweet young corn — which has more of a creamy, milky pulp not found in mature corn — and mascarpone, making this dessert a genius marriage of flavors and texture.

Ramirez and YOLA owner Ryan Rios connected while Rios was enrolled in Del Mar College’s Culinary Arts Program. In addition to her contributions at YOLA, Ramirez is an adjunct chef instructor at the college. Rios was inspired by Ramirez’s

fierce passion for the artistry behind pastry making and knew she was the perfect person to help develop YOLA’s dessert menu. “What Chef Liz does takes so much time, attention and detail, and is truly hard work,” Rios said. “[She is dedicated] to sharing her talents with students that want to learn and continue to keep the profession alive.”

When it comes to recipe development for a new dessert item on YOLA’s menu, Ramirez of course pulls inspiration from the season, but is also inspired by her roots. Originally from Mexico City, Ramirez’s culture and childhood greatly influence her innovative ideas and flavor combinations. Fond memories of baking with her grandmother; regional fruits such as guava, mamey and aguacate; and the nostalgia associated with flavors from her childhood seep into each new delicacy added to the menu.

TIPS FOR HOME BAKING

"A few things I always tell my students are to make sure to gather all your equipment and ingredients before you start; always buy extra ingredients to adjust quantities as you taste test; and if you’re trying a new recipe for the first time, don’t get discouraged — it can take several tries to perfect a recipe, but persistence is key. Lastly, and most importantly, have fun! A lot of people find baking to be intimidating, but your creations don’t have to be perfect. Whoever you’re preparing a dessert for will be grateful regardless!”

CHEESECAKE

Pretty much everyone loves cheesecake, but not all cheesecakes are created equal. At Hester’s Cafe, otherwise ordinary cheesecakes have become stars due to genius creativity and quality ingredients.

The genius derives, in part, from the resourceful repurposing of house-made cookies for the cheesecake crusts. For the lemon blueberry flavor, the sand dune cookie forms the crust. The vanilla cheesecake is

“It’s strange to think I was baptized into the pastry world as a young girl, growing up with grandmothers who loved to bake, and a mom too,” recalled Hester Rodriguez. However, it wasn’t until Hester’s Cafe opened that she realized how passionate she was about baking. When Hester’s began to grow, she experimented and began to learn more about the pastry world. “I owe a lot of credit to our Hester’s fans for requesting things, sharing recipes, cheering me on and the other bakers who came alongside me as we grew into this space,” she said.

As for her process for making desserts, she said, “I read cookbooks like books, and then I sit and imagine how it would fit into what we currently do at the cafe. Then I get to work.” Over the years, she has revisited recipes to make them better, and has created unique takes on classic desserts along the way.

After all these years of learning, growing and tasting every dessert, Rodriguez has solidified her place in Corpus Christi as a master of her craft — baking delicious, innovative and unique treats that bring comfort upon eating.

TIRAMISU Traditional

Born in Sicily, Chef Francesco Inguaggiato grew up learning the art of cooking, specifically Sicilian cooking, while working with his mother in his grandfather’s trattoria in Palermo. “My first and still my main inspiration is my mother,” he said. “The time we spent together in the kitchen is where my love of cooking came from. That’s why I named my restaurant Bellino, as it was her maiden name.”

As for the tiramisu, he’s taken his “Mamma Lina’s” southern Italian tiramisu recipe, taught to him by his sister, Maria Rita, and perfected it for the Bellino menu. His family recipe is traditionally southern Italian and yields a creamier consistency than its northern counterpart, which tends to be more cakey. Though a local favorite, the tiramisu isn’t the only dessert he’s mastered. Chef Francesco’s home of Palermo, Sicily, just so happens to be the birthplace of the cannolo. “It’s one of my favorites, and takes me back to being a kid in Palermo,'' Inguaggiato said. Rest assured, all the desserts from Chef Francesco are traditional, tried and truly Italian.

The specifics of this popular Italian dessert vary based on region and/or family recipes. Depending on the number of layers and the richness of the custard, the end result can be either creamy or cakey. Regardless, this is the dessert to end all desserts. It’s what you want after an indulgent plate of pasta or pizza … or really anything on the menu at Bellino Ristorante.

COOKIES Honey

Cookies come in hundreds of different shapes, sizes and flavors, and from the beloved chocolate chip to playful iced cookies, they all usually have one thing in common: sugar. Specifically, granulated sugar. However, the Honey Cookies at Cookie & Crumb Bake Shop manage to achieve the sweetness you expect, without the conventional use of sugar. As the name suggests, they’re sweetened using only honey — not that you would ever know upon tasting. The cookies manage to maintain their structural integrity with the slightest crisp on the edge and a softer interior, plus a surprisingly mellow sweetness that doesn’t overwhelm. The balance between sweet and savory is what makes these cookies so special, and a perfect pairing for tea or coffee, or as a little afternoon sweet treat.

Becoming a baker wasn’t necessarily something Katherine Nicholson planned, but rather something that happened to her. “I got started in the pastry world almost by accident,” she said. “In 2007, I began studying at Del Mar Culinary and the French

Culinary Institute in order to become a bread baker. I wanted to make baked goods for the family business, Hamlin Pharmacy.” Since then, she’s become a master at bread, but has made desserts her specialty.

Her process for recipe development, she said, is “a collaborative effort. Someone comes up with an idea and we all tweak it to make it perfect for the bakery. Inspiration comes from seasonal flavors, product availability and customers. Customers will definitely tell you what they want.”

Between her culinary education and collaboration with her colleagues, Nicholson continues to bring innovative sweet treats to the Coastal Bend community, and has made Cookie & Crumb Bake Shop a premier destination for all things desserts.

THE LOOKOUT AT BLUFF'S LANDING

Baking is a science, and for Chef Cody Fitzpatrick, the science behind baking is where he got his start. Having grown up in kitchens helping his father, Fitzpatrick recalled “always baking something or trying to understand the science behind it.” Since becoming the pastry chef at The Lookout, desserts with multiple components and techniques have become his specialty. Specifically, gluten-free desserts that taste delicious.

In recipe development, Fitzpatrick begins with research and then “I draw exactly how I want it to look and what I need to achieve the consistency.” When it comes to gluten-free desserts, he emphasizes that “proper technique for gluten-free desserts is a must. It’s a crazy balance of numbers and science. You need to be just right every single time.”

holidays and sharing a meal with family and friends,” she said. “That’s truly what this wasgetting together with our friends at Aunt Ag gie De’s and creating a fun dessert to share.”

Pastry Chef Tina McPherson is responsible for the warm bread that guests enjoy before their meal at Republic of Texas, as well as the sweet tastes afterward. She was excited to collaborate with a local favorite to create this dessert. With the continued support of her Executive Chef, Danny Rosa and General Manager, Etta Butts, Tina has no limits.

“This is the first of what I hope is many more to come,” Morris said. “We are excit ed to feature this in November and Decem ber, and if the community and our guests like it, we may just have to make it a regular on our dessert menu.”

They’ve baked pastries for fundraisers and treats for friends and family, but in the past two years, home-based bakers are gaining traction in business with the growth of the cottage baker industry. In response to its growth, most states have adopted “cottage food laws” that allow the sale of homemade goods in a safe and regulated manner. With these laws in place, more cottage bakers are transforming their craft into a business venture.

Cottage laws vary by state, and in Texas, individuals can prepare goods in their home kitchen without having to secure a food manufacturer’s license; use a commercial kitchen; or be subject to inspections by the state or local health departments. However, bakers must adhere to other directives to ensure quality products, such as avoiding food that is time and temperature controlled for safety — and they must also properly package and label their goods to prevent contamination.

Some cottage laws, including specific restrictions involving salable goods and the annual earnings cap, have the potential to hinder individual success. Regardless, cottage bakers provide great benefits for the community. Increasing the number of locally made products available for sale at farmer’s markets and popups increases the amount of money that stays in the local economy. It

also increases the amount of support to and from other local businesses by providing access to high-quality, locally produced ingredients.

In fact, during the the pandemic, the success of many local small businesses was in jeopardy due to mandated closures and limited hours of availability, but cottage bakers continued to provide their products in a socially distant manner by offering curbside services and deliveries.

These cottage bakers’ creations are bursting with flavor and innovation, making their wares admired and frequently sought out. Although they lack brick-and-mortar locations, their creativity and passion for their craft has allowed them to push through any barriers set in place by cottage laws, and their tasty treats and connection with their community have made a delicious impact on the Coastal Bend.

Wildflour

Alexandra Peterson recalls the first macaron she ever ate and how reasonably priced it was — but most importantly, she remembered its incredible deliciousness. It was in Seattle, and it was love at first bite. When Peterson returned home, she searched for that same burst of flavor, but the macarons she found were not only devoid of taste, they were also expensive.

She found a recipe she could perfect at home, but her creation needed to go beyond the classic, single-flavored pillow of sugar. After baking with her grandmother for years and acquiring a sophisticated yet fun palate, she was ready to experiment with the idea of revisiting her childhood favorite: cereal.

With flavors like Cinnamon Toast Crunch, Lucky Charms and Fruity Pebbles on the menu, Peterson made sure every bite of her macarons emulated its namesake. She also added popular flavors like Birthday Cake and S’mores, but her assortment of flavors wouldn’t be complete without her all-time favorite — cookies and cream. Peterson decided to elevate the already delicious treat by adding strawberries, and the harmony created by this combination took her by surprise. Strawberry Cookies and Cream quickly jumped to the top of her most sought-after menu items.

Although Peterson began making macarons for family, friends and parties with Oh Goodie Designs, Wildflour has since experienced tremendous growth. She received overwhelming encouragement to sell her macarons, and the positive

response and support from the community proves she made the right choice. Working from home was part of the experiment, but when she gave birth to her son, Jackson, she quickly realized life as a cottage baker was ideal for a new mom: It gave her the freedom to make her own schedule for baking, spend time with her son and still sell at markets.

Although she would eventually like to open a little macaron shop, for now Peterson is enjoying being a mom and working from home to bake the world happy, one macaron at a time.

Paloma Street Market

Seven years ago, Paula BeatonForbus was selling arts and crafts at the holiday Downtown Farmer’s Market, and she decided to bring along some Pan de Polvo cookies that she baked from her mother-inlaw’s recipe. The cookies became a bestseller, and soon, they were selling faster than her art pieces.

After becoming a full-time farmer’s market vendor in 2018, Beaton-Forbus began adding more menu items, but wanted to try using only organic ingredients. The reaction from the community, especially the vegan community, was incredible — so she continued this path. Although she hasn’t been able to transform every recipe using 100% certified organic ingredients, due to lack of availability, she is focusing on using non-GMO or local ingredients.

Beaton-Forbus has since created an assortment of unique menu items such as her “De Cafecito” cookies, which are a coffee-flavored spin on

the classic Pan de Polvo. Rather than the traditional cinnamon and sugar mixture, they are rolled in sugar and locally roasted coffee from Driftwood.

The spice mixture Cinnamon Faerie Dust is another best-seller. The combination of cane sugar, cinnamon, ginger, nutmeg, clove and cardamom offers a sweet seasoning for a variety of baked goods, or even as a flavor kick for coffee. Driftwood Coffee is now using the Faerie Dust in its Autumn Spice drink, a signature alternative to the Pumpkin Spice Latte.

Working from home doesn’t have the same security as a regular job, but it allows Beaton-Forbus to have flexibility to spend time with family and take time off at her convenience and need. She does miss working with team members, but gathering with other cottage bakers satisfies that craving.

Twining Tree Farm

Dawn Dowell associates bread with comfort and home, so when she discovered the lack of homemade bread options in the area, she began advertising her beloved artisan sourdough bread to the community.

At the time, Dowell had been working as a full-time English teacher, and only baked over the weekend out of necessity. Once she saw the community’s response to her delicious bread, she became ecstatic at the idea of sharing this unique delicacy with others.

demi batards, along with specialty sourdough bread including Dill and Cheddar, Toasted Sesame, Cinnamon Raisin and many more. She also transforms bread into croutons, which are a big hit.

Her bread options have grown in popularity with locals and visitors alike, which inspired further menu expansion to include Cinnamon Crumb Cake, Lemon Cake and Carrot Cake. The sourdough addition keeps the cakes moist and prevents crumbling.

In the beginning, it made sense to bake from home. Now, with the growth of this venture, she’s expanded from simply delivering bread orders to appearing at Boarri Craft and the Southside Farmer’s Market. Dowell and her husband are also philanthropic in their efforts — each month, they donate the proceeds of one menu item to a non-profit of their choice.

Since learning about the cottage baker laws in Texas, she’s discovered that there is so much more she can do from home, and we’re sure that some delicious creativity is brewing for the near future.

Dowell explains that sourdough is naturally vegan and easy to digest since it has been broken down and fermented. Although it can be more difficult to acquire, this bread is popular due to the distinct flavor of the sourdough, which can also be used in an assortment of baked goods to amplify their quality.

Cake n’ Bake

Jennifer Asch wasn’t expecting her love of baking to become an opportunity for a small business, but the Coastal Bend community came through with support, helping her dreams come true.

For Asch, working a standard, full-time job just wasn’t cutting it. She realized that working her corporate job was only a tool for paying the bills. There was no enjoyment, nor was there time to do what she really loved: baking. In December 2020, she began appearing at local pop-ups, and received positive responses from the community, inspiring her to pursue baking full-time.

Asch began baking vegan items — she is lactose intolerant, and having food allergies makes finding good food a struggle — and noticed the lack of vegan cake options in the area, especially cheesecake. “I’ve

noticed that people are on the fence about cheesecakes,” she said, “and that skepticism increases when you mention they’re vegan. They think the cakes look, taste and feel different.”

Although Asch says her specialty is vegan cheesecake, she can’t sell cold items at pop-ups due to cottage baker laws, so she can only bake them for people who place an order. At popups, you can always find her with cookie sandwiches, rice krispie treats, handheld pop-tarts and many other vegan sweet treats.

Asch’s passion for baking is evident in her answer about her specialty: “It’s not one thing only; it’s giving the customer what they want. A cake is the centerpiece of a celebration and I want it to be perfect for the customer.”

Working from home has many benefits for Asch. She has the flexibility and creative freedom to hone her craft while trying out new flavors and decorating styles. She also has the freedom to balance out her baking and enjoying time with her 6-month-old son. Although her end

Mana's

After moving to the United States from Japan in 2019, Manami Kumagai often missed the traditional Japanese style bread and pastries, so when she discovered the opportunity to share a taste of home with her community, she opened her home-based Japanese bakery in May 2021.

Kumagai strives to maintain the authenticity of traditional Japanese treats, but occasionally, she enjoys taking creative liberties to add her own spin, including vegan options. Some of her more popular menu items include the Shirokuma with Chocolate, a soft Japanese-style bread that resembles a polar bear, filled with dark chocolate; the Taiyaki, a fishshaped pancake with coconut milkbased filling; and the Bubu Steamed Buns, an animated pig-shaped steam bun with a choice of strawberry filling or red bean paste.

Although these are her more popular items, Kumagai’s favorites include the Mushi-pan, an authentic egg-rich, airy steamed cake, and Sadou, matcha buttercream mixed with a high-quality matcha from Kyoto, Japan, covered by a soft Japanese roll.

Since its inception, Mana’s has grown in popularity. Kumagai recalls when she only had 10 Instagram followers in 2021, but with the support of the locals, within a year and a half, she had expanded to 1,200 followers. She also noticed that she is preparing double the amount of bread and pastries for pop-ups than she was in 2021.

Working as a home-based baker is more suitable for Kumagai. It gives her the freedom and time to focus on baking fresh, made-to-order items. Kumagai is extremely grateful for the support of the community, and working from home gives her more freedom for omotenashi, which is the Japanese expression for hospitality and mindfulness. Kumagai feels that if she had opened her bakery at a physical location, she might not have had the opportunity to build this rapport with her customers and show gratitude, which for her is an important aspect of being a business owner.

She hopes Mana’s popularity will grow within the community by attending more pop-up markets and local events. Her menu items bring a unique cultural taste to the cuisine in the Coastal Bend, but with her cheerful spirit and eagerness to share her culture, we’re sure that Kumagai has many more delicious treats in the works.

Now Experiencing: Skincare Treatments

The world of skincare is vast. Our skin is the largest organ in our body and finding a treatment that is right for you can certainly be a challenge. We sent a couple of our team members out to consult with two very different local businesses offering a range of specialized skincare treatments. The consultations with the professionals in these respective fields led them to find a treatment that was suited to their individual needs based on their own unique skin types and textures.

Diamond Glow and Dermaplaning at Aspire Aesthetics & Wellness Clinic: As someone with very sensitive and rosaceaprone skin, I am always extremely hesitant to undergo any sort of invasive skin treatment. Even exfoliating treatments feel like a risk at times. However, the Diamond Glow treatment with Dermaplaning seemed like a minimally invasive way to achieve the reset my skin was needing. After a consultation with founder and Nurse Practitioner Margo Gonzalez-Hussey at Aspire, we decided it would be a good first step into the world of medical-grade skincare treatments.

Arielle Flores, one of the RNs at Aspire, began with an assessment of my skin. She started with a quick dermaplaning treatment by using a scalpel-like instrument to remove dead skin and vellus hair from my face. Then, the Diamond Glow treatment used a patented wand with a recessed diamond tip that exfoliates to uncover renewed skin, extract and remove debris from pores and infuse the skin with a series of serums. As she administered the treatment, I could literally feel my skin being rejuvenated. Once the treatment was complete, the results were instant. Since receiving the treatment, my skin is the softest it’s ever been. With a layer of dead skin gone, I’ve noticed how much more my moisturizers and SPF products have fully absorbed into my skin. I’ve also noticed a significant increase in the brightness of my skin.

As a surgeon, mom and business owner, taking time for myself is hard to do because there just aren't enough hours in the day. But, I hold on to the little things during the day that may not seem like much but really allow me to refresh and unwind.

A hot shower at the end of the day, taking off my makeup and doing my skin care is a routine I do every night — no matter how tired I am or how late it is. There’s nothing like a hot shower or bubble bath to just wash away the worries of the day and make you feel better.

As a plastic surgeon, the most important body part I deal with on a daily basis is the skin. I frequently tell my patients that a more youthful appearance can simply come from taking better care of our skin and really investing in what we use on our skin.

Situated in the heart of Port Aransas and within walking distance from the beach, this vacation home is ideal for relaxation and family time. The homeowner was born in Corpus Christi but moved away when she was young. Ever since, she has dreamt of owning a home in Port Aransas. When the homeowners purchased the property in 2007, they had hopes of making memories with family and friends.

For 10 years, they had many weekends and summers at their Port A home, but when Hurricane Harvey hit in 2017, those moments came to a halt. “Our home was destroyed. After much consideration, we ended up buying out our partners and decided to rebuild,” recalled the homeowner.

A devastating hurricane wasn’t going to stop this family from making new memories in Port Aransas. Working with architect Mark Luddeke and designer Susan Castor, the homeowners created a vacation home with a balance of personality and tranquility.

“We have known Susan Castor for a long time and have always loved her work. She made it fun and interesting. We have similar tastes. She also guided us on our choice of builder, Garrett Kypke. All three made this an incredibly pleasant experience,” said the homeowner.

The result is fresh, fun and warm. The living and dining area, with its soaring ceiling and wooden beams, is an open and comfortable space for family

to gather. Quirky accents like a woven cockatoo table lamp and a palm tree floor lamp add whimsy to the space. “Our design team was able to help us achieve our goals of a family home, but also one for entertaining,” said the homeowner.

One notable detail designed for entertaining is the beautiful custom bar just off the kitchen and living area. It has a nautical and vintage feel with its rattan cabinetry and glass and antique brass shelving. The continuation of the cane accent behind the shelving makes it feel more like a piece of furniture rather than ordinary cabinetry.

Unique wallpaper is featured in each bathroom: The powder bath features an aqua wallpaper with

a floating jellyfish pattern, while the guest bath has a traditional blue and white trellis patterned wallpaper. Another bathroom upstairs features a lime green and aqua palm tree patterned wallpaper.

One guest bedroom includes a chinoiserie rattan headboard, coordinating woven nightstands and blue and green shell bedding. Another bedroom upstairs skews more feminine with its white bamboo bed frame, navy lacquered nightstand, fuchsia patterned bench and crab table lamp. Winter’s Favorite Flower

NASTURTIUMS STAR IN YOUR GARDEN AND KITCHEN

asturtiums are one of the prettiest plants in the winter garden. They are also one of the tastiest treats in the kitchen. Spanish explorers discovered nasturtiums in the Andes Mountains of Peru around 1560 and sent seeds home to Spain. Soon, nasturtium cultivation spread throughout Europe and Asia, then finally to North America.

The flowers are red, gold and orange, and the roundish leaves are a deep, dark green. As the plants mature, seed pods form. The flowers, leaves and seed pods are all edible and delicious in many types of dishes— 10 or 15 nasturtium plants can supply the table all through the winter.

Nasturtiums are best started by transplant to maximize the growing season. But, if started early in the season (the first week in November), they can be sowed from seed directly into the garden. You can order seeds online from Eden Brothers or Baker Creek Heirloom Seeds.

A freeze or heavy frost will kill nasturtiums. However, if they are kept in a pot and brought into the house during a freeze, they can grow quite large. They are especially beautiful in hanging baskets, allowing the vine-like presence to cascade down in red, gold and green bunches. During the heat of summer, place the potted plant in afternoon shade and water often.

Whether in the garden, on the patio, in a vase or on the plate, nasturtiums may become your favorite flower of the season.

PROFILING

Spacing, 8” to 12”. Height, 18” to 36”. Cool weather flower. Plant from transplant in November through January. Grows well in sandy, welldrained soil. Add at least one inch compost to soil when planting, plus one-half cup native wood ash and one cup pastured poultry manure per plant. Do not over-fertilize for risk of limiting the blooms. Keep soil moist until established. For vining varieties: space 4’ to 6’ apart or provide trellis.

Tropaeolum, commonly known as nasturtium, grow red, gold or orange flowers, and has green roundish leaves. They are cheerful plants that are fairly easy to grow. Harvest no more than 2/3 of the leaves at a time; they quickly regrow. Harvest flowers as soon as fully opened.

RECS

The leaves of nasturtiums have a spicy, unique flavor. Use them in salads, on burgers instead of lettuce or on pizza instead of basil. You can even sauté the leaves like spinach. The them taste of fruit with a little kick. Use flowers in salads or as edible garnish with any dish. For a milder flavor, use the petals by themselves.

As the weather warms, nasturtiums develop seed pods, each of which contains three large seeds. To make “poor man’s capers,” harvest the seeds while they are still green and tender, then soak them in salted water for a couple of days to tame the bold flavor. Brine the seeds in your favorite pickling recipe and store these “nasturtium capers” in the fridge for several weeks. Thomas Jefferson loved pickled nasturtiums and preferred them to capers, a delicacy of the time.

TAKE A MOMENT

Select a space. It could be a corner of your bedroom or an entire room. Most importantly, it should be somewhere quiet where you will not be disturbed.

Assemble your essentials. You’ll need a thick cushion or meditation chair and a timer, and you’ll want to remain comfortable, so have a shawl handy for those cooler times. You can use the timer on your phone, but don’t bring it into your sacred space.

Place a mirror in the space. Mirror gazing is a practice to help improve self-worth and compassion. As you look at your reflection and quiet your thoughts, begin focusing less on your flaws and more on your life and experiences.

Gather your sacred items. Your favorite incense or candle, a loved photograph or painting, something from nature like a plant or stone, a statue or another symbol of calmness. Add items that hold meaning and inspiration to you. This is the “reward” of going to your space every day — having that spark of joy every time you sit.

Set a ritual. Sit daily. As with any exercise, results are based on the continuity of our efforts. The more you do it, the better you get.

tanding on one of Mount Baldy’s peaks on the south shore of Lake Michigan in the Indiana Dunes National Park, it was easy to see the beautiful Chicago skyline gleaming in the distance. The ranger pointed out various points of interest while going over the science of “living dunes” — Mount Baldy is one, as it moves every year — and then he said something that changed the tone of the presentation. Living dunes that are large enough can “swallow” oldgrowth trees, and then through a weird interaction between sand and bark that scientists are still studying, the hollowed-out tree turns into a cylinder that people can fall into.

That was the perfect moment to introduce the importance of rangers as guides and to dissuade people from wandering into restricted areas of the dunes. The national park is more than the dunes, though. More than 300 species of birds either live in or migrate through the area, making it a destination for birders from all over the world. The plant diversity is greater than that of Yellowstone, so much so that the Cowles Bog Trail has been designated a National Natural Landmark since 1965. The shore is dotted with beaches as well, and bike and hiking trails abound. It’s a fairly comprehensive vacation destination for the whole family.

The Indiana Dunes are known as the birthplace of the science of ecology—that's the study of organisms and how they relate to one another and their physical surroundings.

HOW TO DO INDIANA DUNES NATIONAL PARK

WHERE TO STAY

Just outside Michigan City — the best place to stay if you’re going to the park — is The Brewery Lodge and Supper Club, a cozy, warm refuge tucked into the woods but easily accessible. The lodge has an excellent restaurant on site, and quiet time, which is enforced, starts at 11 p.m. The rooms are spacious and well-appointed, and you’ll find plenty of outdoor seating to enjoy morning coffee in the Indiana woods.

WHERE TO PLAY

Indiana Dunes National Park and Indiana Dunes State Park (the state park is contained within the national park) offer activities and attractions for the whole family, ranging from science-themed hikes to beach fun, bicycling, bird-watching and picnic areas. The dunes themselves are the greatest attraction, and learning about living dunes while standing in a parking lot that will be swallowed by the dune within a year is the best kind of showand-tell education available.

Indiana has a cluster of Native American casinos in Southshore, and Blue Chip Casino and Spa's presence in Michigan City makes it easy to grab a spa treatment or spend time at the tables and slots.

Lake Michigan seven days a week. The boat departs from Michigan City and includes live entertainment and a full bar for cocktails while you watch the stunning sunset.

WHERE TO EAT & DRINK

Sophia’s House of Pancakes is great for breakfast; head over to this diner-style destination that’s a favorite among locals. Yes, it has pancakes of all kinds, as the name suggests, but you’ll also find crepes and blintzes, the latter of which are a must.

El Cajete, opened by the Bernal family in 2012, is a casual Mexican restaurant and the ideal local spot for lunch. It has a large selection of Mexican favorites, but the huaraches are the star.

The Brewery Lodge and Supper Club has excellent food in a casual, comfortable setting. The owners also have Zorn Brewery — thus the name — a local operation offering traditional styles made with lovely balance. The food consists of supper club classics with some unique twists, such as the elk burger, which is a must for someone at the table. It also serves fresh oysters, chops, steaks from a local rancher and house-made desserts.

TRAVEL SPECIFICS

The easiest route is to fly into Chicago-Midway and arrange ground transportation or fly into South Bend and do the same. Both are close enough to be convenient in a rental car.

AN ODE TO THE LANDMARK THAT SPARKED A THRIVING FINE ARTS MOVEMENT IN SOUTH TEXAS

Our beloved Corpus Christi has its quirks. Idiosyncrasies abound; there is an undeniable connection and appreciation for this city living deep inside all those who are lucky enough to know her. Over the years, Corpus Christi has had to fight hard to keep local culture at the forefront and not to be taken over by big box stores or big-city dollars. While there will always have to be some give and take in order to maintain a thriving community, now is a great time to honor the strides Corpus Christi has taken to become the arts and cultural gemstone that she is.

In 1972, the Art Museum of South Texas (AMST) turned heads — as arguably America’s premier architect at the time, Philip Johnson, was flown in to construct the stunning white building that sits on the Corpus Christi bayfront. Fifty years later, the museum celebrates the building by looking at its past, present and future. The museum’s director, Sara Sells Morgan, launched the 50th anniversary year by examining AMST’s legacy using the themes: Who are we? Who do we want to be? Who have we been?

“What propels us forward is the success of our past,” said Morgan, “and we have seen the effects our exhibition and educational programming have had on our community.” Examples of this sentiment include a few second-graders who came to the museum on

a CCISD field trip, and were later hired as employees. Similarly, creatives who are now successful artists frequently reach back to AMST, explaining how an exhibition they saw years ago was inspiration for a certain series of work or even a career path.

“We know that our outreach is enhancing creative awareness in our community,” Morgan continued. “AMST stands as a cultural tourism destination, bringing in visitors and dollars to our community. We want to continue to make Corpus Christi better by providing exceptional programming for locals and visitors to enjoy.”

The advancements in presenting art and delivering enriching arts education programs has come a long way in 50 years, and Morgan said she can only imagine how the continuing integration

of technology will change the way museums serve as cultural institutions for their communities.

“[AMST] is excited about the future of museums as we all begin to shake the cobwebs off our identities, transitioning from stodgy bastions of antiquities to vital centers for creativity,” said Morgan. And at the intersection of art and technology, she said that tech will “not only attract a younger demographic (thus ensuring the longevity of museums) but will also make our collections, exhibitions and curriculum accessible to a much wider audience.”

As the museum looks into the future, everything goes back to fulfilling its mission, which comes down to two things: education and exhibitions.

“As for education, there is a mountain of research that shows integrating the arts into education improves verbal, reading and math skills. It increases the ability to analyze and problem-solve; it builds self-confidence; it develops observation skills that develop the ability to make decisions,” Morgan explained. “These are the skills that might keep a kid from dropping out of school. These are the skills that employers look for when hiring.”

The second part is the exhibitions AMST presents. “For many, AMST is the only opportunity to see fine art exhibitions within a 150-mile radius,” said Morgan, “When you look back at the artists whose work we have showcased, it's a testament to the history of art.”

In fact, AMST currently has on view works of art by Andy Warhol, Jasper Johns and Frank Stella — talk about making history. As AMST continues to provide quality arts education and diverse exhibitions, we are on the edge of our seats to see what they do with the next 50 years.

Orthopaedic Center of CC

Dr. Davin Cordell joined the Coastal Bend community five years ago with his wife, Oriana, and daughter, Bella, one week before Hurricane Harvey arrived. He came to join the Orthopaedic Center of Corpus Christi as an orthopaedic spine surgeon. Cordell completed an advanced fellow ship in adult and pediatric spine surgery at Washington University in St. Louis. Prior to becoming an orthopaedic surgeon, he was a physical therapist. This background gives him a broad approach to the diagnosis and management of spine-related problems. He uses endoscopic and minimally invasive techniques with focus on motion preservation as well as traditional open surgeries to achieve the most predictable and reliable results. Cordell believes in performing the least amount of surgery necessary to fix the problem.

He jokes with a mentor that he thinks about spines 90 percent of the time, but what he really enjoys is spending time with his family around the house and at favorite local spots.

“We have loved becoming a part of the Coastal Bend community and look forward to many more years to come,” he said. “We have found our home. Thank you for having us."

Dr. Gabriel Lopez attended and graduated from Texas A&M University, College Station as a pre-med student and then graduated from University of Texas Health Science Center at Houston Medical School in 2000. He then completed his anesthesia residency at Loma Linda Hospital in California in 2014, where he was chief resident. He then pursued a pain management fellowship at The University of Texas Health Science Center in San Antonio.

He started his own practice, Corpus Christi Pain Medicine, in 2006 with just two staff members, but expanded the clinic quickly to now having 15 full-time employees and a nurse practitioner. The clinic is his home away from home, and he treats all his staff like family. With the motto “Making Lives Better,” Lopez

Lopez’ vision for improving and expanding patient care includes the addition of his new surgical center, Southside Specialty Surgical Center, which opened in December 2019 on Holly Road. As a boy, I worked weekends, summers, and holidays learning the business. I knew this was going to be my life. In 2012, I bought the restaurant and property. making sure to save room for dessert — the pie. Fruit pies, cream pies, chocolate pies, nut pies … we all have our favorite. (And let’s be honest; cheesecake’s a total misnomer. It’s just cheese pie.)

Grecians encased meat in pastry crust. Romans developed double crust pie in 2000 BC. Sweet pies were first documented in 16th-century England, when Elizabeth I proclaimed she was particularly fond of cherry pie. The elite were known to impress guests by ordering elaborate pies with live animals inside. Turns out the nursery rhyme “four and twenty blackbirds baked in a pie” wasn’t a farce after all. Henceforth, pies have been a favorite dessert for kings and common folk alike.

It’s likely that a form of pumpkin pie was served at the first Thanksgiving. Cultivating pumpkins was something Wampanoag natives and English colonists had in common, and the latter were adept pie bakers by the time they arrived on American shores.

Pie became further entrenched in American history in 1863 when Abraham Lincoln made Thanksgiving a national holiday. Abolitionists like Sarah Josepha Hale

and Lydia Marie Child each made special mention of pumpkin pie in their famous published works. Southerners saw it as a way to have northern customs imposed on them and initially rebelled at the idea of

My grandfather would mutter an audible “calf slobber” within earshot of my grandmother as he scraped the meringue off his lemon pie. She would roll her eyes, shake her head and say, “More for me!” The rest of us stood in neutral corners, ready to retreat to the football game blaring in the den if things got heated. Maybe this sounds familiar.

One thing isn’t open for debate: Americans love pie. It has secured its reign as the Thanksgiving dessert of choice. Whether your pie is fruit or nut, single or double crust, cream or meringue, we hope it’s just the way you like it this holiday season.

Key Lime Pie

Makes one 9-inch pie

PREP TIME: 20 minutes

COOK TIME: 25 minutes

INGREDIENTS:

CRUST:

10 oz store-bought shortbread cookies

1/4 cup brown sugar

3 Tbsp melted butter

FILLING:

1 lb key limes, or 6 large limes

two 14-oz cans of sweetened, condensed milk

1 cup Greek yogurt or sour cream

TOPPING:

1 cup whipping cream, chilled

1 Tbsp granulated sugar

1 tsp vanilla Lime zest

DIRECTIONS:

Preheat oven to 375°F. Pulse shortbread cookies in a food processor or blender until finely ground. Mix in brown sugar. Add melted butter in a stream and blend until the mixture comes together. Pour into a 9-inch pie pan and press against the bottom and sides to form a crust. Bake for 10 minutes, until fragrant and golden brown.

Meanwhile, zest the limes until you have 1 tablespoon of zest, plus a little more for garnish. Juice the limes until you have 3/4 cup fresh lime juice. Combine zest, juice, sweetened condensed milk and Greek yogurt in a large bowl. Whisk until a homogenous, smooth mixture is formed.

Decrease the oven temperature to 350°F. Pour filling into the prepared pie crust. Bake the pie for 15 minutes. Remove from the oven and let cool to room temperature.

While the pie cools, whisk cold whipping cream, sugar and vanilla in a standing mixer for 1-2 minutes, until stiff peaks form. Refrigerate the pie until ready to serve, or at least 3 hours. You can also chill the pie in the freezer if you’re pressed for time. Serve the pie cold, topped with whipped cream and lime zest.

Chocolate Meringue Pie

Makes one 9-inch pie

PREP TIME:

CRUST:

1 cup, plus 2 Tbsp all-purpose flour

2 tsp granulated sugar

1/2 tsp salt

8 Tbsp unsalted butter, cold and cubed

1/4 cup water, ice cold

FILLING:

2 cups half and half

1 cup granulated sugar

1/2 tsp salt

4 eggs yolks

1/4 cup corn starch

4 oz bittersweet chocolate, chopped

2 tbsp unsalted butter

2 tsp vanilla extract

MERINGUE:

4 egg whites, at room temperature

1/4 tsp cream of tartar

1/4 cup granulated sugar

DIRECTIONS:

Preheat oven to 375°F. Combine dry ingredients for the crust in a large bowl and whisk to combine. Cut in butter using a pastry cutter, fork or your fingers until mixture resembles dry oatmeal. Pour in water and knead to combine. If dough seems dry, add more water a teaspoon at a time until a soft dough is formed.

Flour a clean work surface and roll the dough out to a circle about 10” in diameter. Carefully roll dough onto the rolling pin and transfer to the pie pan. Prick the surface of the dough with a fork or use pie weights to keep the

dough in place while it bakes. Cook in a preheated oven for 30 minutes.

Meanwhile, combine half and half, sugar and salt in a medium-sized saucepan, stirring frequently. In a separate bowl, whisk together egg yolks and cornstarch until creamy and well combined. Once the milk mixture is steaming hot, temper the egg yolks by slowly pouring in 1 cup of hot milk mixture. Add the egg yolk mixture to the pan and continue to cook until just starting to bubble, stirring frequently. Remove mixture from heat and stir in chocolate, butter and vanilla.

Pour filling into the prepared pie crust. For meringue, whisk egg whites in a standing mixer on high speed. Once egg whites have started to froth and form a foam, add cream of tartar and continue to beat. While the mixer is still on, slowly spoon in sugar and whisk until stiff peaks are formed.

Preheat the oven to low broil. Top pie with meringue and heat under the broil until the top of the meringue is golden brown. Refrigerate until ready to serve. Store in the refrigerator and enjoy within 7 days.

Many Roads and Many Roasts

A COFFEE COMPANY BUILT ON FAITH AND FAMILY

or the Meinhausen family, moving coffee from roaster to cup has been a well-caffeinated legacy for four generations. In the early 1900s, the Meinhausens worked in the Jewel Tea Coffee Company in Chicago, a wildly successful endeavor that gave many households access to coffee for the first time. This led Lewis Meinhausen’s grandson, Steve Lewis Meinhausen, to pursue the coffee bean business with his family.

“My husband owned coffee houses in Tucson, Arizona, for over 20 years,” Carrie Meinhausen said. “He didn’t want to stay in the desert much longer, so I was like, ‘Why don’t we go to Texas?’” The couple packed up their family and their antique 10-pound coffee roaster, and came to Rockport in 2004.

The family immediately hit the ground running and began roasting coffee for the community. As they began reaching out to local businesses to form partnerships, they grew a relationship with Hester’s in the early days of their business. Once the amount of orders exceeded their roasting capacity, the owner of Hester’s got them a bigger roaster in exchange for their coffee. Since then, they have only grown to form more partnerships in the area. Over the years as their family has also grown, the Meinhausens have expanded their coffee shop to roast premium coffee for Rockport Daily Grind and Duck Blind Coffee as well.

The Meinhausens have since had to upgrade their roaster for a second time as their coffee orders have multiplied over the years.

“We have all kinds of different coffees that we roast — South American, Central American, African and Indonesian — we roast them by region, then we take the regional coffees and blend them and make a series of coffees,” Meinhausen said. From the Texas Thunder blend to a Guatemala Antigua, or even a Buttered Rum blend, the company offers a variety of specialty beans using the family’s own perfected method of timing, temperature and taste.

“All of our children work here, and they’re entrepreneurs. I have an incredible family,” Meinhausen said. “When my husband passed away, it was challenging, to say the least. He was our visionary and kept us moving forward. My kids and I decided to carry the torch forward, and we are keeping on.” The roast master title continues to be handed down to even the youngest generation.

Carrie continued the roast legacy. Now, Carrie handles the roasts with their youngest daughter, Ellie Meinhausen, who is getting ready to be roast master herself.

It is evident that The Rockport Coffee Company is a family business through and through. What began as a family venture has only expanded throughout the generations. No doubt the Meinhausens will continue to expand their businesses grounded in their faith and in loving memory of their father and husband, Steve Lewis Meinhausen.

a touch of dill pickle and celery. Its crisp cole slaw with poppy seed dressing is a reliable counter to the juicy, rich jalapeno sausage. Pickled onions and Mexican street corn are a welcome change from the standard barbecue accoutrement.

This now-renowned barbecue joint had its fair share of challenges. Soto contemplated closing his doors when the small business had trouble making a profit. But word spread about Butter’s exceptional barbecue, and by the end of 2018, it started selling out on the weekends. More attention came from its 2019 review in Texas Monthly. In 2021, Butter’s was named as one of the magazine’s Top 50 BBQ Joints.

Andrew’s love for cooking came from helping his dad, Marcelo Soto, with the family catering business when he was only a boy. His dad remembers, “I started in 1992 and just kept going. Andrew was just a small kid and I used to get him up to help me cook.” His dad was the first person Andrew told when he decided to leave a stable career to pursue his dream.

Five years later, Butter’s BBQ remains a family-run business. Marcelo still lends his expertise with large catering jobs and strategic business decisions. Soto’s cousin manages Butter’s, while his brother and nephew spoon pinto beans and Mexican rice onto plates at breakneck speeds. His brother in-law and sister keep the back of the house running. Soto says his late mother Frances was also a driver behind the restaurant’s success.

and deftly carves thick slices of his signature brisket. Each beefy batch takes 18-20 hours to prepare. “We keep it simple with a simple seasoning of salt and pepper and a good slow smoke,” he explains. The shipment of certified angus beef brisket comes in on Wednesday, when it is trimmed and prepped by Butter’s pitmaster Robert. Post oak from North Texas is used to get the flavor and consistency of the smoke just right. “I tried so long looking for a magic recipe, and it doesn’t exist.” Soto’s perfectly seasoned result, a thick crust of peppery salt encasing tender meat, is about as magical as brisket can get.

Butter’s, coined after Soto’s childhood nickname Butterball, is also known for its barbacoa and homemade sides. The potato salad has a familiar taste — a balanced mixture of mayo and mustard, with

THE 2ND TEXAS STANDS OUT IN TEXAS FOOTBALL HISTORY

As federalized National Guard troops moved toward the Mexican border during the Mexican Revolution prior to WWI, Mayor Roy Miller lobbied to attract a training camp to Corpus Christi. He knew it would benefit the local economy, which had suffered during a drought.

In the summer of 1916, about 3,500 men of the Second and Third Infantry Regiments were ordered to Corpus Christi. In just a few days, the city readied the camp, located near today’s Cole Park and Spohn Shoreline. Within a week, it was equipped with running water, electricity and the service of the city’s streetcar line, as well as tents to house thousands and mess halls to feed them.

Soldiers’ time was dedicated to training to keep their skills sharp, but they also found time for fun. One of their

pastimes was competing against other soldiers at football. Many former college stars were stationed together at Corpus Christi, and their scores against other units established them as the best: The 2nd Texas outscored its opponents 432 to 6 in seven games.

As the threat of conflict with Mexico faded, the camp slowed down for several months before being reactivated with the entrance of the U.S. into WWI. Then, Camp Scurry became a training ground for trench warfare and other exercises to prepare for war in Europe. While sports continued as a source of entertainment, no team ever outshone the 1916-17 2nd Texas Infantry football team.
