What has been your favourite trend in cake decorating lately?
I am obsessed with colourful Lambeth cakes! I’ve been seeing so many beautiful cakes on Instagram lately.
How did you get into the world of cake decorating and treat making?
I used to watch a lot of cake decorating videos on YouTube, and during the pandemic, I thought I’d give it a go. My first cake turned out way better than expected and I received lots of positive feedback, and from there my journey began and I became obsessed with baking!

What are your top decorating tips?
Always let your cake chill long enough before decorating.
When covering a cake in buttercream, use a hot metal scraper for the final scraping.
When whipping your buttercream, always use your paddle attachment because using the whisk will incorporate too much air. At the end, use your rubber or silicone spatula and mix by hand, knocking out the air bubbles.
WHAT ARE BENTO CAKES?
Bento Cakes, or Lunchbox Cakes as they’re also known, have taken the cake world by storm! These petite cakes are perfect single-portion on-the-go cakes, or ideal for gifting.
Originally popularised in Korea, they are best known for their cute and modern designs. With endless design possibilities, they are a trendy alternative to cupcakes or cakesicles for any occasion!
DECORATING YOUR CAKE...
Bento cakes are famous for their minimalist designs, with most people opting for the popular choice of buttercream frosting with piped edges. Simple messages are also a popular choice, which you could either pipe onto your cake or use a stencil or stamp.

2023 TOP TREND
When it comes to an occasion cake, nothing says celebrate like a pop of colour! This year we’re seeing neon hues, kaleidoscopic prints and vibrant decorations everywhere, and we are obsessed.
There are so many ways to utilise colour in your cake decorating. If you prefer a more understated fondant or buttercream, try finishing off with some colourful sprinkles or toppers. Alternatively, add detail with vivid piping. Or, for an ultra-modern look, go for a monochromatic theme, focusing entirely on one bold colour!
And finally, to really catch the eye, why not try an unexpected colour combo? Hot pink, orange and baby blue might just be our current fave...
