s oe r e h l ia c pe s r o f e im t A I recently gave a talk to a group in the public relations field and was asked about my favorite editorials throughout the years. Four of the five stories I spoke about were stories of heroism. Was it because I was currently reading hero stories while

preparing for the March magazine, or because those are the stories imprinted deep

within me? When you look at the current movies high on the box office, “Avatar” (alltime highest box-office grossing movie worldwide), “Titanic” (second highest grossing worldwide), “Star Wars” (third highest grossing worldwide) and “Beauty and the Beast” (eleventh highest growing worldwide), they all have some form of heroism. These highlywatched films show us that I am not alone here, and that we all need to celebrate and touch on heroes. When 9/11 hit, our world glued itself to all types of media to learn more about the specifics, but our hearts also yearned to know about the heroes of the day. We recently mourned with Florida after their tragic school shooting, heartbroken about the lives taken, fearing for our own children’s lives and praying that if this tragedy ever

hits close to home, we would have a hero like the football coach who used his body to shield his students. My point is that as small children and grown adults, we need heroes. We search for them — especially, ones that don’t crumble under the weight of real-world interaction. We gravitate towards heroes that either share traits we already possess, vicariously living through them, or we select ones that have a quality we lack in order to inspire personal development. As you read through the pages of the March magazine, you’ll be inspired by Tiffany Herrera, age 19, who was a soft-hearted young woman, unknowing that her life would be cut short and that her heart would someday beat in another’s body. That tough decision came during a tragic time and by her family who donated her organs, so that another life would go on. Today, a small part of her lives on as her healthy organs continue to give life to four individuals. Two of our staff members were there when the Herrera family met two of the recipients and caught the emotional reaction of hearing their daughter/sister’s heart beating in another. The gift of life is the most precious, greatest gift a person could ever give. You can also read about the heroes in the canine units, whose detailed stories we’re not allowed to fully tell (something about government secrets being kept on a need-toknow basis), of lives saved, lives protected, and the constant war on drugs and human smuggling. If you’re an animal lover — and who isn’t — you’ll connect and fall in love with these dogs that protect our borders, our city. We need these heroes. As I get older, I’m realizing that womanhood/manhood is about finding the balance between following in the footsteps of the people you look up to, while also carving your own path, so that we can mentor others. Here’s to the current heroes, the future heroes and the unsung heroes.

in a request to be considered for the canine unit. Acceptance to this portion of the program comes with, among other things, more training. Before the training comes an interview process. Expectations are extremely high during the selection process. The trainers, or handlers who assign the dogs, use the interview process to best match an agent to his/her new four legged partner. The trainers take many things into consideration, evaluating both the agent, as well as the canine. The idea is to study both personalities and make matches that give the partners a better chance for success, as they work their way together through a program, many will fall short of completing. The four-month long training is designed to prepare the BORSTAR candidates to deal with a number of elements and scenarios that the average agent is not very likely to encounter out in the field. Agent Ross has been working for the Border Patrol for the last nine years. Before being accepted to the canine unit of BORSTAR, Ross worked as a line agent in Deming, NM for over four years. Only having one dog as a pet growing up, Agent Ross’s limited experience left him wondering what to expect once it came time for him to be partnered up with Rody, a four-year-old sable shepherd. “It was a first for me and a first for him going through the training. I had never been a handler before,” explains Ross. Aside from being partnered up according to personality, they seemed to be partnered up by size as well. Both Ross and Rody were physically the biggest in each of their classes. Rody came from the Netherlands, where working dogs are bred off of drive as opposed to their looks. He was brought to the Canine Center El Paso (CCEP), one of only two facilities in the United States that house and train the Border Patrol’s four legged agents. The only other facility is coincidentally enough located in Agent Ross’s home state of Virginia. The first few weeks of training candidates are in the classroom, much of the time is spent going over PowerPoints. The class then transitions to what is known as modular training. This is when the partners begin to work on obedience training and working short trails. After some time they move on to working longer trails with more variables, twists and turns. They begin with one individual for the partners to search for, then move on to searching for multiple people along the trail. When it comes to the training of the canine, they run off a rewards-based training model. The canines are not disciplined for getting things wrong, rather they are rewarded for getting things right. www.thecitymagazineelp.com

One of Agent Ross’s most memorable moments on the job happened while they were detailed to the mountainous area of Van Horn, TX. It was cold and had been snowing heavily. Earlier the same evening there were multiple reported deaths in the area due to hypothermia. Agent Ross and his partner were doing some routine patrolling. Rody was off leash doing an area search. Rody and Agent Ross came across four lost individuals attempting to make their way out of the mountains. In ten to fifteen degree weather, the appreciative individuals (none of which were wearing a jacket) knew that the outcome would have very likely turned out to be grave for them, had this particular canine team not found them that freezing night. At work, Agent Ross and Rody need to know one another exceptionally well. They need to be able to trust in what the other is doing, or going to do. When they are out in the elements and there are no visible tracks to follow, Agent Ross needs to be confident that his partner is on the trail, seeking out their target. “You just have to trust the canine.” Agent Ross says, “That is where the bond is so important.” There is simply no time to chase rabbits through a seemingly desolate desert. For now, Agent Ross is unsure of what he will end up doing when it comes time for his partner to retire. Some agents move on to other roles, others choose to be re-teamed. One thing Agent Ross is certain of is, so long as Rody is a working dog, he wants to be the agent working alongside him.

Extinction nimals hold a special place in most of our hearts. Though we can’t speak for everyone, it’s usually that animal clip or the pet in a movie that pulls our heart strings. The El Paso Museum of Art now has an exhibition exploring the multiple ways that humans have affected the animal world, “through themes ranging from poaching to pollution to consumerism.” The exhibit was organized by Art Works for Change by Randy Jayne Rosenberg and displays various mediums of art completed by an array of artists including Kiki Smith, Chris Jordan and Esther Traugot. You can walk through this exhibition and find poetry, sculptures and various media. Though each artist took a different approach, each work portrays the sensitive topic of animal extinction and how humans have played a large part in their destruction. This is not for the faint of heart—viewers will see just how we have affected multiple animals, including elephants and giraffes, and see the numbers behind it all. “Notably, while ‘Ethics’ approaches a sensitive issue, together the artworks in the exhibition weave a visually compelling tapestry encouraging us to rethink and engage with the problem in new ways,” said El Paso Museum of Art Senior Curator Dr. Patrick Shaw Cable. Sometimes it takes artists compiling the scientific facts and turning those into emotions and a visual representation for the rest of us to finally understand and see the reality of things. One case in point are the elephants discussed. The number of elephants on this planet has nose-dived from 10,000,000 to a heart-crushing 350,000 because of poaching alone. Though many people may know that elephants get poached for ivory, the numbers may not have been displayed so candidly. See for yourself when you tour the new exhibit and witness the way these artists have expressed this global upheaval. Hopefully it will evoke change, sympathy and educate audiences on the seriousness of the problems these beautiful creatures face today. The exhibit will be on display through May and is free to the public—so you have no excuse not to go. If you felt moved by the exhibit, make sure to stop by the museum gift shop for some great souvenirs. In late January of 2018, SYSOL’s “dreamteam” of an advisory board made its debut at a local dinner hosted by Nestor, at which current Mayor Dee Margo and members of the El Paso Chamber of Commerce, were in attendance. The meeting of the minds was followed by several appearances in the borderland, one of which included a press conference in Juárez as part of an introductory tour that was very well-received. In fact, SYSOL’s advisory board spoke candidly with us at The City Magazine offices during this time and each person left here with a much different impression of our city than before. Every relationship is bound to have arguments and misunderstandings. A heated argument can trigger us to say things we may later regret. If the wrong words have escaped your lips and regret is terrorizing you, here are some tips that may help turn the situation from wrong to right.

Take responsibility for your actions. Sounds simple right? Everyone handles situations and emotions differently. What may not be that big of a deal to you, can really have an effect on your partner. Taking accountability for your actions is a huge step in making the process of forgiveness work.

Give your partner some time and space. Hurtful words trigger emotional reactions. In my opinion, it’s better to let things simmer down for a bit before you continue to add fuel to the fire. Be careful though because waiting too long can also be detrimental to fixing the situation. Address the issue as soon as you sense the time is right.

here was a hint of doubt within me, as I had just reserved a bicycle for pickup at a shop near my hostel, that I might encounter some issues while attempting to traverse through the city from the bike-dominated roads. On the winding road from Schipol to Oosterpark, I saw hundreds of people completely unbothered that the sky seemed to want to fall at a

moment’s whim. As I sat there, still wrapped up in a heavy coat, scarf and comically cumbersome gloves, my confidence in my ability to bike through rain, sleet, hail and the winds normally associated with the time of year I was visiting (January) completely plummeted. I had made that decision to take the city on foot. I decided to tour the Dutch capital through what the taxi driver said was, "the worst time to visit Amsterdam.” During my stay, the Amsterdam Light Festival was on its last week on display. The winter festival illuminates the city center from sunset throughout the night and includes concepts from original light art to projection mapping on the city’s most iconic buildings. I walked the edge of the canals and watched as couples boarded their guided tours that tunneled under the canal bridges which, normally dark, became illuminated through the city’s dedication to showcasing and

I dedicated a day to visiting Amsterdam’s multitude

museums.

Beginning

in

Museumplein, I made my way through to The Van Gogh Museum to learn about the artist’s life and work in the area that the post-impressionist called home. A symbol of pride and worldwide recognition for the Dutch, The Van Gogh Museum not only highlights the trajectory of one man, but how his art was affected by his surroundings and the development of the Netherlands from the time of his birth to his passing. The Rijksmuseum, only a skating rink and a musthave IAMSTERDAM photo capture away from The Van Gogh Museum, is the oldest in the Netherlands and includes the largest art collection in the country. After attempting to absorb the 8,000 on-display objects, I dined at the Rijks, the museum’s own

March, 2018 Michelin-starred restaurant. What was objectively the best dish I had during my stay, the Langoustine met oestercrème, heightened all expectations for the rest of my days in Amsterdam. Immediately outside the Rijksmuseum was its garden. The majority of people clung to the road and the tourist photo traps and it was to my advantage that I was able to find the discreet entrance to the garden. Even now, I remain unsure that I was allowed to be in there and it simply didn’t make sense to me how such a beautiful garden could be so vacant in the middle of the day. Nevertheless, it allowed for a moment of relaxation inside one of the city’s most foot-traffic heavy areas. I spent a morning in Harlemmerbuurt, a quiet area of town that normally doesn’t attract tourists. My guide, photography teacher Jan Arsenovic, provided a history of the old production and storage part of the city. Beginning in Haarlemmerplein Square, we made our way to one of the islands in the city with community gardens and backgrounds perfectly representative of the city without the crowds. With a recommendation from Jan in hand, I walked one canal bridge over to Winkel 43, a narrow and unassuming café famous for its apple pie. I ordered a hearty slice and paired it with a glass of Chardonnay while I rested my feet and watched the goings on of the city through the windows—hoping that the hail would pick up again to learn how to appropriately behave like a true mokummer during such a situation. On my way back to Oost, the neighborhood where my hostel was located, I coordinated with a few hostel mates and stopped by one of Amsterdam’s local breweries, Brouwerij ‘t IJ, where I was able to sample many of the beers. The brewery’s pub, which is located in the same repurposed bathhouse under Amsterdam’s largest wooden windmill (Degooyer), offered perfect pairings for each beer. I chose to go

with the IPA; the fruity and bitter taste will definitely be one worth the revisit. As I packed my suitcase I realized that convenience is far beyond second to experience, and that even though I could have visited during the warmer months, nothing would have guaranteed a more enjoyable time. I turned in my key and vowed that when I return, it would be with bicycle wheels to the ground.

the vet to be cared for and to see if she had a chip. Of course, she didn’t, so we “hired” her to be our greeter (at our business). Every one of our clients and neighbors, know and love Lola. She is the sweetest character!

Pup Cakes Ingredients 1 egg 3 tablespoons butter 4 ounces applesauce 1/2 teaspoon baking powder 1 cup greek yogurt 2 tablespoons honey Directions 1. Preheat oven to 350 degrees Fahrenheit 2. Combine egg, butter, applesauce and baking powder. Mix until smooth. 3. Depending on dog size, grease cake tin (mini cupcake tins, standard size cupcake tins or muffin tins) and divide batter evenly. 4. Bake for 20 minutes or until a toothpick can be inserted into the middle of the cake and come out clean. 5. While cakes bake, combine Greek yogurt and honey to use as frosting. Mix until combined and drizzle on top of cake once cooled. 80

ccreditation by definition is “the action or process of officially recognizing someone as having a particular status or being qualified to perform a particular activity,� according to Oxford Dictionary. Did you know that the El Paso Zoo is accredited by an organization known as AZA (The Association of Zoos and Aquariums). AZA is a nonprofit organization dedicated to the advancement of zoos and

aquariums in the areas of conservation, education, science and recreation. The 1970s created a spark of growing concern for animal care and welfare in zoos and aquariums. Since then, the U.S. has only become more conscious of the way animals are provided for when under human care. In response to this, the Association of Zoos and Aquariums was established in 1971 and immediately appointed a committee to create guidelines, best practices and requirements they believed were necessary for providing optimal animal care. Lead experts with significant experience and training compiled an ever-evolving list of necessities for animal welfare, operations, husbandry and veterinary medicine. This list not only met, but exceeded the requirements deemed necessary by the USDA (United States Department of Agriculture). Of the 2,800 animal exhibitors that are licensed by the USDA across the country, you will find less than 10 percent of them are AZA accredited. AZA accreditation is no simple task. When applying for accreditation, it often takes six months to prepare the documents for the application and another six months to complete the process. This process includes a lengthy, well-documented written application, a multipleday inspection of the facilities and lastly a hearing in front of the Accreditation Commission. To insure that a zoo or aquarium is meeting the standards of AZA, the facility will be evaluated on things such as animal exhibits, appropriate social groupings, use of enrichment, veterinary programs, nutrition, financial stability, educational messages, involvement in conservation and a number of other areas.

olenta is, by definition, a thick mush of cornmeal. Please, allow me to fix this poor definition by giving it the explanation it deserves. Boiling cornmeal turned out to be a great idea—thanks ,Italy!

It can be cooled and molded into shapes, then cut and grilled, baked, fried … etc. The point is, I wasn’t familiar with it before last year, and when I saw it on menus and in recipes, strayed

I want to clean the palate from these heavy flavors by adding smoked gouda to my polenta, it’ll hit you with the first breath after your bite and won’t leave you with an oily aftertaste that a fatty cut of meat can often do. This makes the perfect opportunity to visit your local butcher to get beef short ribs cut to expose the bones, aka French Cut (Thanks, Coronado Prime Meats). Exposed bone is a great plating
