Owner Patricia Rubio, who was born and raised in El Paso, has been making cakes for two years now. After ordering a cake for her husband, Ricardo Serna, in the shape of a wrench, she thought to herself, “This is something I think I would like to do.” She took a couple of basic cake-making classes and just took off from there. Today, her customers are her primary focus as she “would not be here if it wasn’t for them.” Creating their cakes and being part of their special celebrations is very rewarding and Patricia feels blessed and grateful that she has been granted the opportunity to serve her community in this way. Viejo Coffee Caffeine Pop-Up On Wheels

ith roughly half of Americans over the age of eighteen drinking an average of three and a half cups of coffee each day, it shouldn’t shock

a soul to see how quickly the options are growing for the masses to

find a great cup of Joe. It is a caffeine lover’s dream. Before the co-

owners of Viejo Coffee decided to jump into the caffeine game, they understood the importance of gaining as much knowledge as they possibly could about the magical little coffee bean that would drive their business. They cleverly sprinkled a bit of their own childhood memories into their concept as well. Miguel De la Rocha and Jose Arévalo are long-time friends from all the way back in grade school. Years later in high school, Jose’s interest turned to boxing. Jose and Ricardo Silva met at a local gym where they were both preparing to participate

in their first Golden Gloves boxing tournament. They built a friendship while training and kept in touch with each other over the years. In 2005, shortly after graduating from high school, Miguel and Jose began their first business as partners. A small trucking company that they operated for two years before making the decision to sell the company and pursue an education. It was maybe four years ago, when the two business partners were getting their Roasted Corn Bus food truck up and running, that they began planning the opening of a coffee shop. While the Roasted Corn Bus worked large catered events around the city slinging roasted corn in a cup out the back of a Volkswagen van (sometimes referred to as a VW Micro Bus), the guys had a second VW Micro Bus being equipped to hit the streets as their mobile coffee shop. In keeping with the theme of their first food truck, the original idea was to call the new business the Roasted Coffee Bean. The business partners eventually shifted gears by selling the second Micro Bus and investing their time in gaining additional knowledge in the art and science of coffee through different training courses. After some time passed, Ricardo returned from a trip to Europe and, following a conversation with Jose, they realized they had similar ideas and a common interest in opening a coffee shop. In addition to their mobile caffeine machine, the Viejo Coffee co-owners also have an indoor catering set up they utilize to get the word out to the public about their future plans of opening up shop inside International, a bar on Mills Avenue across from San Jacinto Plaza. Plans to expand to the east side are also being developed. The guys can often be found sticking out the top of their slick rolling coffee shop at The Downtown Art and Farmers Market on Saturday, handing coffee cups and iced drinks in bags to their customers. The bolsa—or bag—brings a little bit of the coffee shop co-owners’ childhood memories to the business. Ricardo, Miguel, and Jose spent many of their summers in different parts of Mexico, where it was common to see the kids drinking their sodas out of a bag with ice, and a straw with a rubber band wrapped tightly around the top end. “Pretty much everything we use is organic,” Miguel says proudly. Viejo Coffee sets out

From the organic fair trade coffee from Chiapas, Mexico, to their selection of organic milks and syrups, they strongly believe it makes a difference in taste and presentation. “ Our bags are plant based, they are biodegradable. Our straws are made from avocado seed, also biodegradable,” Miguel also mentions. All the ingredients are carefully measured out to ensure consistency. This includes the sixteen hour cold brew and all hot beverage options. In the near future, the guys at Viejo Coffee plan to add a matcha latte and hot chocolate for the non-coffee drinker. Track them down on social media and try their iced horchata latte, it comes highly recommended.

artist at only four years old. After graduating from Ysleta High

School and moving to Arizona to earn a degree in graphic design, his passion was paused to fulfill a different, yet financially stable,

career in another field. After this short hiatus from art, Sirac knew

that his dream of publishing a comic book was one he had to fulfill.

Basics

What is involved in basic skin care maintenance? You want to use products that will keep your skin from getting overly dry or dehydrated—keeping it clean and hydrated will slow down the daily aging process. Follow these basic steps and make sure to cleanse and moisturize/replenish twice daily.

Cleanse

Properly cleansing the face includes using three products:

an eye makeup remover, a facial cleanser and a toner.

Eye Makeup Remover

A gentle product that will remove

all eye makeup quickly, without all the usual rubbing and tugging, for the eye area is recommended. My favorite is Almay Longwear & Waterproof Gentle Eye Makeup Remover, it can be found in most drug stores.

Cleanser

A milky, creamy or oily cleanser is best for all skin types.

These cleansers gently dissolve makeup, excess dirt, oils and sunscreen as well as deeply penetrate the pores to dissolve the “bad” oils and bacteria from the skin. I recommend Shu Uemura Anti/Oxi Clarifying Cleansing Oil.

Toner

The purpose of a toner, also called a softening lotion, is to

remove cleanser residue from the skin. Choose an alcohol free toner, as alcohol is an ingredient that dehydrates the skin. Claims that toners shrink or close your pores are false. If they were true, why would anyone have large pores? I recommend Shu Uemera Ultime8 Sublime Lotion.

Moisturize and Replenish

Holding in the skin’s natural

moisture is crucial for all skin types and ages. There are three products you need to use daily: moisturizer, night cream and eye cream.

Moisturizer

Often called a daytime moisturizer, it is meant

to sit on the surface and protect the skin from the environment, hold in water and keep a barrier between skin and makeup—which allows makeup to go on better, look fresher and stay on longer. My favorite is Janssen Cosmetics Calming Sensitive Cream.

Night Cream

A night cream or treatment product can penetrate

the skin to replace water, vitamins, minerals and other beneficial ingredients to the skin. I recommend Janssen Cosmetics Night Replenisher.

Eye Cream

The skin around the eye is seven times thinner than

mark on Rhodes. It is layered so deeply in rich historical treasures that the entire

island could be referred to as a living, breathing museum. But if you’re not a fan of archaeological splendor, don’t let that dissuade you, because mixed in with the Doric columns, stone ruins, clay pots and marble statues, is one of the

The walled Old Town of Rodos, which is the Greek name for the capital city of Rhodes, is a capital divided by conquest. The Byzantine, Jewish, Roman and Turkish Quarters each speak of different cultures and eras of occupation. The Byzantines arrived in the Third Century and stayed until the 1300s. They were there for a thousand years, so their influence permeates the landscape. Next, the Order of the Knights of St. John the Baptist came, conquered and later protected Rhodes and its people. Many buildings and artifacts from both of these periods were destroyed or lost with the arrival of the Ottomans in the 16th century. This did not bode well for relations between Turkey, visible from the Rhodesian shoreline, and present day islanders. Early in the 20th Century, Rhodes transferred its political allegiance to Italy. This lasted until the second 158

All of this history is significant because of the impact it had on the face of the Old Town of Rodos. Every view is filled with a plethora of architectural styles. Mosques were built on the remains of Mycenaean temples. Christianity crowned many of the Islamic domes. Open foundations, dug down into the remnants of time, reveal centuries of interesting stories. Walking through the winding streets of each quarter was a truly incredible experience. Eating lunch in a garden shaded entirely by the limbs of one tree felt like living in a fairytale. Absorbing the beauty, the legends and glory of the past was breathtaking. The more popular islands of Mykonos and Santorini are at the top of every travel agentâ&#x20AC;&#x2122;s list, but if you are lucky enough to get to Greece, leave Rhodes till the end of your trip. It simply doesnâ&#x20AC;&#x2122;t get any better.

wanted to incorporate the strength of that word into a dish that would ease this seemingly endless year. Growing up, my dad would always gravitate to seafood for most of our special occasions. I think living in the desert made it seem exotic, but who’s complaining? This dish is packed with seafood and it’s best served when it’s cold outside, so plan accordingly. Easy and quick to make, a seafood chowder is all about your prep. Be meticulous about the directions and ingredients and you’ll be set. Bringing this home for the holidays with a respectful
