s we go to print on the February magazine, I’m on a much-
needed vacation in Paris. I sit at the top of my five-level flat,
looking over the “City of Light,” communicating back home about cover mock-ups and final print details from the other side of the
world through fast technology. I’ve just spent a day with a Paris
magazine comparing operations, meeting their team and exchanging
ideas. The conclusion at the end of the day is that we operate on a similar scale, and my summation is that the talent that El Paso
celebrates could be compared to the European level. I smile as I leave the meeting, internally congratulating our team on our magazine products. So many people have it wrong if they think that this city isn’t making significant strides—especially when it comes to the medical world. This month, we wanted to look at the amazing doctors and medical advances that are shaping our city. With the Paul L. Foster School of Medicine, the specialized pediatric care offered by The Hospitals of Providence Children’s Hospital as well as El Paso’s Children’s Hospital, and the many accolades our El Paso doctors receive on a national level, we continue to achieve the highest level of health care in the area. Inside these pages, you’ll meet Dr. Oscar Aguilar, who is one of the many outstanding doctors advancing the way integrative medicine is being implemented; Dr. Assman, who has traveled the world, finding his home in El Paso; and a group of doctors that have just been recognized by the MSP Communications publication, “Super Doctors.” It’s a great time for these El Paso medical professionals. Hopefully, we’re all still sticking to our New Year resolutions as well. We have articles to keep the momentum going and motivate you into a healthier life. We’re not leaving the kids out either. A local gym, Get Lifted, has a special program just for kids, teaching them to lead a healthy life at a young age. Read about it on page 58. There’s also an extremely cool advancement in knee surgery that you need to read (page 40). For the lighter articles, the fun reads that take our minds off our busy lives, we’ve got fashion tips for your first date, a trip to Bryce Canyon and an interesting editorial on a local bootmaker that is designing for a major fashion house (does Louis Vuitton make you interested?). It is important to ask your trainer about it before you begin though, as personal training methods and styles can vary widely. If you prefer a group

What can I, or can’t I eat
In order to do this, you must first have an understanding of what exactly you can and can’t eat. This also involves you asking yourself a very integral question, “What type of vegan am I going to be?” This may sound a bit odd, but there are many different types of vegans. Some people only extend the practice into their dietary habits, while others carry it forth into their philosophy by completely abstaining from all animal products. Some cite ethical reasons, others the health benefits of a plant-based diet. Everything starts with having some form of understanding—a game-plan per se. Knowing where you stand will allow you to start making a list of your can and cannot items.
Start small
As with quitting or starting anything, going full-speed can lead to burnout. Take it easy. You need to set small goals for yourself. A few of the most interesting lessons I learned while doing my research was that when people went into it full-fledged white knuckled, they experienced a much higher chance of not sticking to it. Start with having two vegan meals a day, then go two full days, a work week and then a month. By setting small benchmarks, you are more likely to be able to move forward. It’s kind of like learning to walk. When we were born, we weren’t expected to be able to jump straight into that whole upright movement thing, right? Baby steps are key.

Don’t go at it alone
One of the most common themes that surfaced was that many people abandon veganism because they don’t have a support system or anyone in their corner to go to, and they slowly fall out of the lifestyle. Ask for help and advice from people who have gone vegan and who are still keeping up with it. Trust me, finding a vegan isn’t hard—they don’t stop talking about it (insert elbow nudge and wink). All kidding aside, find someone and ask them questions, ask them for ideas on cooking substitutions and find an online resource or blog. The resources are truly endless and people are willing to help.
Explore your palate and plate
Whenever I hear people talking about vegan options, the word “gross” is often thrown around. Sure, a vegan hotdog may not be the most appetizing item, but look past that. Expand your tastes and look at other cuisines. Indian and Asian food host an endless amount of vegan options and are out-of-this-world delicious. You do not need to sacrifice taste and pleasure to go vegan. You just need to adapt and re-wire your thinking when it comes to food; it shouldn’t be treated as a punishment—food is meant to be enjoyed, and being vegan doesn’t mean you have to be miserable.
Don’t sweat it
People tend to get so caught up in the “rules” that they forget the reason why they started. Don’t be so hard on yourself—this is a process and an evolution. YOU WILL NOT DIE IF YOU CHEAT. Cheat is not the word I want to use, but it gets the point across. That one bit of cheese or small spread of butter does not make you a “bad vegan.” I hear often that people equate this lapse as they would a recovering alcoholic just having one sip, but that is misplaced. This also relates back to taking things slow. Some people might be able to make the switch overnight, but that doesn’t mean you have to. Do it your way, because you are doing this for yourself and no one else.

comes to mind is the child who is training for a sport; to jump higher, run faster, get stronger. Here though, it is actually a different case, “Yes we do have a few of the kids who are using this to train for a sport, but about 70 percent of our kids are just here to get active. This is their sport. Their parents (many who are gym members at Get Lifted) want them to start these healthy habits as kids so it can carry them into their adulthood. One of the greatest things I have seen is that, the kids really come together and it’s a completely organic experience. They cheer each other on and really develop a community on their own.” There is a strong sense of leading by example, but the kids have their own space. “What is really nice is that, yes, we are a part of the Get Lifted gym, but we are our own space. We have our own entrance, speakers, music and facility. The kids aren’t staying active throughout the class because mom and dad are watching, instead they are doing it because they are having fun.” Holly laughs a little bit and her voice goes to a much more relaxed and soothing tone, “You have to make it fun, without fun the kids don’t respond. Fun is everything. You can disguise a workout that is focusing on them doing air-squats by turning it into a game. That’s really the goal, to have fun while still being healthy and active.”

or El Paso bootmaker Tomasso “Thomas” Arditti, making a pair of boots is more than just a labor of love. Tomasso says his boots are made with a piece of his artistic heart and soul—no pun intended.
To Tomasso, it’s also about maintaining the purity and integrity of the
boot-making process. At just 46-years-old, Tomasso has been in the boot
business for almost 20 years.
“The beauty of it is, you have hand-picked flat leathers, and within 30 to 45 days’
time, you have a one-of-a-kind, wearable work of art,” Tomasso said. “The defining
aspect of our product is, you buy it today and in 10 years, it’s classic; it’s still in
style. That’s the driving force of my design.” Tomasso’s own designs are top-sellers at several fine-leather boutiques across the country. Some of his designs include handcrafted gold and palladium gilt boots, inspired by his love for art deco design. The gold and palladium sheets were hand applied, not sprayed or painted on. It’s that attention to detail that has also put his workshop on the radar of some of the world’s top designers. Tomasso’s craftsmen are currently working on lines created by Louis Vuitton, Moët, Hennessy Special Prize winner Kozaburo Akasaka and former Ralph Lauren Vice President, Chris Leba’s R13 brand. Kozaburo Akasaka’s boot features a “snake mosh pit”—a tangle of snakes, hand-tooled into the leather by Tomasso’s craftsmen. www.thecitymagazineelp.com

Two counters serve different purposes: one, for people to sit and order a beer or wine, the larger main one to take food orders before you sit down. Eyecatching teal blue tiles line the main counter where you order, and a chalkboard up above gives you the menu and plenty of seating is spread around for you, your friends or family to sit and enjoy your time. The owners are young and consist of Michelle Savage, her husband Tyler and her sister-in-law, Mariah Savage. While Mariah makes all the baked goods in house—her days start at a daunting three in the morning—Michelle takes on the business side of things and her husband does everything in between, making sure the café is running and that motivation is high.

“We wanted to bring something good … that resonated with people,” says Michelle. The community aspect of the place is important to note. When Michelle talks about the café, she also talks about a “third place.” Most people go to work and go straight home, but people need a “third place” in order to have conversations, meet with their neighbors and serve as a gathering place, she explains. It was originally a hobby, something extra for the three owners who already had two to three part-time jobs each. People soon spread the word of these baked goods, leading to special orders and quickly selling out each weekend. The vegan and gluten-free goods were something that the El Paso market was missing. The original goal to fund the building of the café was $20,000. The three owners had already picked the location, the old Jimmy’s Grocery store on the corner of Nevada and Oregon Street. What they actually received was $31,000, something that Michelle expressed was reassuring to them as they started in an established neighborhood. The location was crucial and, as Michelle put it, “[It] really fits our values.” True to supporting local, they also sourced locally with Wooden Design Company for the sleek inside booths, and Kodiak Construction and Development for the build out of the space. “The contractors were really great in listening to and delivering what we wanted,” shared Michelle. www.thecitymagazineelp.com

Savage Goods has expanded a lot since its famers market days, and not only in regard to space. You can walk in for breakfast, lunch, really good coffee, beer or wine. If you’re looking for a quick bite, grabbing one of their baked goods (especially a donut) is a great choice. Again, these items are vegan and gluten-free, without compromising the taste. Breakfast burritos are also available if you want something heavier to fuel your day, and lunch sandwiches are healthy and filling. After work or after class, take a seat and enjoy a beer on tap or a glass of wine to relax a little bit. “We came [to El Paso] for one day and fell in love with it,” says Michelle of deciding to move here with her husband. And now, people are spending time eating at Savage Goods and returning that community love.

Shoes are an accessory that should pull your entire outfit together. If it’s a day-date, I highly encourage you to keep it casual. Male or female, your Chucks are ok. For anything in the evening, choose something a little more stylish. A low heel for the ladies is always sexy—just keep it comfortable and something you’ve already broken in. Not a heels fan? Some cute black flats are always an easy bet, or some black booties. Gents, bring out your wingtips. These will dress up your jeans in an easy and comfortable way. Are things like dark under eye circles or redness from stress, hormones or rosacea holding you back? ometimes we need a little extra support … let’s talk about color correcting 101. Color correcting isn’t a new concept — makeup artists have been using these tactics for years. The theory is based on complimentary colors laid out on the color wheel. Those of you who paint are already familiar with the concept; it starts with the three primary colors but the makeup color wheel also uses flesh tone shades. Look at the picture … the primary colors are in the inner ring. Red at 11:00, yellow at 3:00 and blue at 7:00. Now imagine intermediate shades, what is the mix of blue and red? Purple! Blue and yellow? Green! Red and yellow? Orange! You get the idea. Now look at the wheel again. The colors at the opposite sides of the wheel are known as complimentary. When I started painting, I couldn’t understand why you would use orange to tone down blue! Similarly, you use the complimentary shades to cancel out unwanted hues in your skin. hat happens to the mind and body when our wishes—our most significant goals—come true? More specifically, what effect is the Make-AWish® wish experience having on children? Those are
the questions a team of medical researchers set out to
answer in a recent study published in Quality of Life Research,
an international, multidisciplinary medical journal.
Sixty-six children, ages five through twelve, participated, all of them referred to Make-A-Wish Israel. Roughly half were assigned to a wait-list control group—children who weren’t certain when their wishes would be fulfilled—while the other half were assigned to an intervention group that knew their wishes would occur within six months. Researchers asked both groups of children to complete questionnaires rating measures of psychiatric and health-related symptoms, positive and negative effect, hope and optimism both pre-intervention and postintervention. The result? The children whose wishes were granted had higher levels of hope regarding their futures, increased positive emotions and lower levels of depression and anxiety. Control group participants displayed lower levels of positive emotion over time with no major shifts in their levels of hope or health-related quality of life. The research also uncovered a decrease in the perception of physical limitations among the group of kids whose wishes were granted. These findings emphasize the role of hope and positive emotions created by the wish experience in fostering the well-being of children who suffer from life-threatening illnesses.

POTATO ROAST With Chicken
and artichoke cream
I
hope your holidays were a success. Mine was especially good to me as my brother blessed me with a Dutch oven. For having a pretty stocked kitchen, it was definitely a missing piece. If you don’t have one, I start this column
with this advice, go buy one or borrow one from your grandma. Visually, this dish makes sense to me. But on paper…I didn’t have a clue what to name this recipe. My idea though - to make a fancier scalloped potatoes with some crispy skin chicken. Kind of a classic combo but missing its finesse. So I deconstructed

Preheat oven to 350. While oven heats, melt two tablespoons butter in a microwave. Once melted, mix with ground thyme and 2 tablespoons oil and set aside. Prep your standard size baking sheet by covering with foil.

Once sauce is thickened and warmed through, gently lay chicken thighs into sauce just before serving. On your plate, layer potatoes first, heavy spoonful of sauce and chicken thighs on top.
