Could organic farming be a solution to make Sahara green again and fuel sustainable development? Desertification, we identified as one of the great problems for the Sahara region. Another challenge is diversifying the food people eat. In February, we invited organic farming expert Helena Rundqvist to join us in Tagounite, Morocco. Together, we kickstarted three organic garden areas: one far out in the desert, one with a traditional farmer trying to inspire him to grow organic instead of using chemical fertilizers, and several where Nomad school children cultivated in mini green-houses (5L plastic bottles). The goal for this pilot is to turn sand into soil and grow food.

I share the Vilostrada Foundation vision and happiness to support these last Nomads living in the Sahara so that they can stay where they want to be. They have lived their life in the same traditions for thousands of years. We need to respect their rights and choices to continue the life they have chosen.”

Helena Rundqvist shares: “I humbly accepted the challenge to get the people here to choose a change, to motivate them, awake curiosity to try something new… I realize again how little you really need to survive. The community among people, all that we have in common, even if you do not have a lot, it´s wonderful to be a part of. I always felt welcome, well received and seen by everyone I met with honesty, respect and courtesy. To only be who I am, face to face, touches my heart deep within.

We already know that our first growing organic gardens succeeded and hold the seeds for future greener Sahara. We invite you to join us in the Sahara, do research, share knowledge and to hold workshops to continue our project #OrganicTanmirt. With the Vilostrada Foundation, we now sum up two months of adventures, stories, lessons and fruit our mutual labour in a book we call “Ki Krak: To Give, to Receive” planned to be published in December 2018.

…why so many villages in the Axarquía celebrate San Isidro on or around 15th May? San Isidro el Labrador, (Isidore the Farm Labourer, or Isidore the Farmer in English) was a a Spanish farmworker known for his piety toward the poor and animals. He was born in 1070 and died on May 15th 1130 and is the Catholic patron saint of farmers. The saint’s day is particularly big in many villages in the Axarquía because of the area’s close links with agriculture and farming. In Nerja events traditionally start with a party at the caves at around 8pm on 14th May and continue on the following day, with Mass at the church followed by a Romería (pilgrimage), during which a statue of the saint will is carried by ox-drawn cart up to the caves. In Periana a 12-hour procession takes place, during which 40 tonnes of wheat are thrown, which is the village’s way of paying respect to San Isidro. The procession is normally followed by music, dancing and a chance to try the local gastronomy, including olive oil. The village of Trapiche also celebrates San Isidro and the feria is held in honour of its patron saint. Fireworks, paella, music and a floral offering typically form part of the event. In other parts of Malaga province, San Isidro is also celebrated in the towns and villages of Alhaurín el Grande, Trapiche, Ardales, Villanueva del Trabuco and Estepona. This year San Isidro falls on a Tuesday. For information on when celebrations will take place in different towns visit town hall websites (www.nerja.es / www. periana.es / www.velezmalaga.es for Trapiche) Note: the Spanish word ‘labrador’ means someone who works the land, not a worker in general, which is either ‘obrero’ or ‘trabajador’. 14

HOW TO CHOOSE YOUR NEW KITCHEN? Getting a stylish new kitchen can be so exciting. But with all those sleek lines, gently sliding drawers, smart splash-backs and appliances, how do you go about choosing the kitchen that’s ideal for you? Here are a few things to consider…

Think stylish, simple and sleek: think glass splash-backs, frameless cabinets plus a distinct absence of handles and mouldings. The look is cool and often slightly industrial, with a focus on hard-wearing kitchen worktops in concrete, granite, silestone or stainless steel. Sports Centre. Recently new businesses have opened and you can enjoy great places to eat and drink. There have been some refurbishments to the centre and more businesses are in the pipeline to open. There is plenty of parking so take a visit and try some of these new restaurants and cafes who are receiving great reviews.

out and about in SAYALONGA On the road up to Cómpeta from Algarrobo, you could almost be forgiven for driving straight past Sayalonga without realising it was there. The road takes you through the very outskirts of the village, but what lies beneath, tucked away to the left of the A7206, is another Axarquían (have I just coined that word??!) gem. The journey isn’t quite as dizzying as the one right up to Cómpeta and the road definitely gets windier north of Sayalonga, so if you’re not a good traveller but want to take in some of the area, then this is the village for you! It also makes a great pit stop on the way to or from Cómpeta. One of the first places to visit, which is in fact visible from the A7206, is the round cemetery. Built in the 19th Century, the Sayalonga cemetery is one of Malaga province’s most compact and iconic. It is still unknown why the cemetery was built in this shape, but it is typical of much of the whitewashed architecture in the area. On close inspection you will see that some of the tombstones say ‘R.I.P’ instead of D.E.P (Descansa En Paz which means Rest in Peace in Spanish). RIP also means Requiescat In Pace (RIP in Latin) which some people choose instead of D.E.P. As you make your way further down into the village you will spot a series of tiles on the walls which explain (in Spanish) the history and geography of the area, from Moorish times through to the Reconquista and more recently. 32

Sayalonga claims to have the Axarquía’s narrowest street - Callejon de la Alcuza -which measures just 56 centimetres wide at its narrowest point and is off the central Calle Cristo. A little further on, heading towards the town hall building, look out for the water fountain with the frog perched on the tap! Another fountain worth mentioning is ‘Fuente del Cid’ where legend has it El Cid actually drank from when he passed through the village…. presumably on his way to or from Granada…another interesting fact about the fountain is that the oil which comes from the olive trees near the fountain is used in the candles that are burned on Día de Nuestra Señora del Rosario on 7th October every year. Sayalonga is home to the Museo Morisco, which boasts a fascinating series of rooms containing books, work by the artists Adolfo Córdoba, examples of Moorish culture, Archaelogical remains found in the village and even has a room dedicated to the níspero, including winning paintings of the annual competition associated with Día del Níspero (see below). The museum is open every day from 10am until 2pm and entrance is free. Of course, Sayalonga has the usual share of fiestas and ferias, but the most important is undoubtedly Día del Níspero . The event always takes place on the first Sunday in May and this year it falls on the 6th. Agriculture, gastronomy and folklore combine to pay homage to the small, orange fruit which is grown locally. There is local and flamenco dancing and music, as well as the opportunity to sample the níspero. The festival has been celebrated in Sayalonga for over 80 years and is recognised by the Junta de Andalucía as a fiesta of national tourist interest. Sayalonga’s Feria takes place in mid-July and this year will be around 13th, 14th and 15th . Corumbela, which belongs to Sayalonga administratively, celebrates its feria at the end of June. As we discovered when we were there, market day is Friday and a number of stalls OUT AND ABOUT in SAYALONGA

SAYALONGA can be found on Plaza Constitución, in front of the town hall. There is also a variety of restaurants and bars dotted around the spacious plaza. Casa Mari, on the main road, is busy at weekends and serves up good, homemade Spanish food and tapas, as I discovered on my way back from the art walk in Cómpeta over the Easter weekend. There is a large foreign population, especially Brits, Dutch, Germans, French and Scandinavians, who live mainly in the ‘campo’ surrounding Sayalonga and Corumbela. They have formed the group ‘Amigos de Sayalonga’ and are planning to hold a residents’ day in August. For further information about the association visit: www.amigos-de-sayalonga.ch. From Snap Shot to Great Shot

5 Tips to Take Your Landscape Photography from Good to Great Part 1 Landscape photography is one of the most favoured genres of photography. In this three-part article I will give some tips to improve your landscapes. To become really good at landscape photography, you need to spend hours trying to master it. Most photographers are not able to dedicate that amount of time, so it becomes frustrating. Many photographers end up being disappointed with their images, but there are few things that you can do to make sure you get better results, in a short space of time. 1. Foreground interest This is a common tip, but one that makes a lot of sense. Having a subject in the foreground, anchors the image. It tells the viewer where to look first and once they have looked at that, their eye will explore the rest of the image. You can place your foreground subject anywhere in the lower third of your image, but it might be a good idea to put it more to the left side of the frame. 2. Colour in your scene Your image will have inherent colour based 46

on the time of day and subject you are shooting. If you are shooting a forest, your scene might be predominantly green, if you are doing a seascape, there may be lots of blue because of the colour of the water. Be aware of the colour in your scene and work with the opposite colours on the visual colour wheel. As an example, there are three primary colours that your camera sees, they are: Red, Green and Blue. The additive colours (opposite colours) are Cyan, Magenta and Yellow. To be clear, Cyan is the opposite colour to Red, Magenta is the opposite to Green and Yellow is the opposite to blue. These opposing colours can work well in a scene, particularly yellow and blue. Look at the colours in your scene and decide what you want to emphasize. Introducing Richard Fox Richard Fox is an award winning writer, cook book author and chef presenter, having won a prestigious British Guild award for food and beer writing. He is also an official ambassador for the Love Food Hate Waste campaign. He was resident chef presenter on BBC1 Regional Look North. He was a regular chef on BBC 2´s Food Poker and has appeared on UKTV Food, Saturday Cooks on ITV, The Good Food Show on BBC Radio 4, to name but a few. Richard’s expertise in the world of food and drink, as well as his talents as an exuberant and entertaining demonstration chef and public speaker has made him a favourite personality for hosting and demonstrating at gourmet events around the world. He is also a consummate presenter and compere with interview credits including Jamie Oliver, Heston Blumenthal and Hugh Fernley-Whittingstall, to name but a few. As well as being a beer and barbecue expert, renowned for cooking with beer as well as creating gourmet beer and food matches. Richard’s other great passion is that of reducing food waste and creating delicious meals in minutes for next-to-nothing. He tours the UK extensively performing as an ambassador for the Love Food 60

Foxy´s Best Ever Burgers Makes 2 x 200g burgers

Ingredients:

For the patties: 400g minced chuck steak 2 tbsp very finely chopped shallot (about 1 large shallot) 1 tsp tomato ketchup ½ tsp Worcester sauce Large pinch smoked paprika 1 tsp quality sea salt (Maldon) ½ tsp coarse ground pepper Oil for brushing Thin slices of cheese of your choice. For the mayo: 2 tbsp good quality mayonnaise 1 tsp roast garlic puree, (whole bulb, loosely wrapped in foil and roasted in the oven for be 45 minutes.) 2 Brioche bread buns, cut in half 1 beef tomato, cut in slices 4 leaves little gem lettuce Combine all the pattie ingredients in a bowl and mix until thoroughly combined. Form the mix into two patties. To cook the patties, lightly oil and place over a direct heat on a pre-heated barbecue. When dark brown and well bar marked (about 3 minutes), turn and repeat. Place the sliced cheese on top. Move the burgers to an indirect heat if necessary to cook according to your preference and close the lid of the barbecue. To make the garlic mayonnaise, cut the garlic in half through the equator and squeeze a tsp of the garlic puree out into the mayonnaise. Mix well. To serve, lightly toast the cut sides of the bread buns on the barbecue and then spread on a layer of the garlic mayonnaise. Add a couple of slices of the tomato, the little gem and finally the cheese-topped burger. Enjoy! 61
