A break from work, from stress and from politics. Over the past 20 years, when Ontario politicians have had something to say about beer it has usually been to deliver a token change or a bigger tax bill. For better or worse, our current premier has decided to make beer his bread and circus. With announcements of everything from legal tailgating (likely to only affect a slim minority of beer drinkers) and beer in corner stores (potentially huge, pending details) we’re going to see a new playing field for craft beer in Ontario. Cideries are also keen to see how the new rules will affect them and we have a guide to the best ones (pg. 10). If you’re looking for beer a bit further afield, join us in Philly (pg. 17). Between road trips, summer is the time for lighting the grill for a family cookout. We have a chef-designed sausage recipe (pg. 26) and recommendations for pairing junk food with craft beer (pg. 4). And if you’re planning a home reno maybe consider adding a beer-related touch? (pg. 22). As the eggs of better beer rules hatch into chickens, let’s remember that they’re part of a broader basket of policies and not let ourselves be distracted from what matters. recently had one of those family trips that makes parents remember why a family trip is actually a very different thing than a “vacation.”
For March break, my wife and I took our fiveyear-old son to Florida for a week that was plagued by myriad maladies, the highlights of which included temperatures cooler than many parts of Canada, bed bugs, half of our party departing early due to an actual death in the family, and, perhaps worst of all, a full day elbowing mouth-breathers and hemorrhaging money at the monument to consumerism and unchecked labour conditions that is Disney World. It was, in the parlance of our times, an absolute shit show.

Predictably, throughout the week I occasionally sought respite in a pint of beer and some food and so, if there were a silver lining to the chaos of that family trip, it was something of a revelation about the simple joys of pairing good beer and good food—particularly that of the less-fancy variety. One overcast afternoon, for example, when my wife and son had opted to head up to our room, I grabbed a solo bite at a nearby bar/restaurant, the charmingly named “Beach Bucket.” It promised a decent selection of Florida craft beer and menu items that included peeled shrimp priced by the pound. I figured my lunch would either be transcendent or the story I would later tell when people asked, “Jesus, how did you get a parasite?”
Given the week we’d had thus far, I rolled the dice. Thankfully, my bet was on the money. My crispy, warm, golden, fried shrimp served in a plastic basket alongside thinly sliced, made-in-house, potato chips—paired with a pint of Cigar City Brewing’s Jai Alai IPA—proved a near biblical experience that day, verging close to erasing my troubling thoughts of the infestation of insects waiting to literally feast on my blood as I slept that night.

I don’t actually want to hear about the delicate interplay of an acidic gueuze with oily seafood anymore. When did beer get so precious? I’d just like a nice beer and some satisfying snacks now, please. Vallins, despite having more patience for the task and a decidedly more sophisticated palate than I do, seems to understand the draw of beer’s apparent simplicity. “I love salty snacks, and beer is usually what I’ve got on hand ready to drink,” he says. “Committing to cracking open a bottle of wine so you can do damage to a sack of Lays doesn’t happen nearly as often. Maybe a sparkling wine would work just as well, or even better in some cases, but I think that just speaks to the nature of both of those beasts. It doesn’t necessarily mean that beer was specifically made to pair with trash, but beer is definitely suited for snacking: it has an affordable price, is easily accessible, and comes in an ideal portion size.” And whether I’m at home on the couch, watching a game with a bowl of pretzels, or scratching bug bites and recovering from a Mickey Mouse wallet-biopsy over a basket of something deep fried, that sounds just about right to me. j

Vallins recommends grilled cheese sandwiches made with Wonder Bread and Kraft Singles paired with a märzen or Vienna lager. “These beers are full of caramelized flavour and taste like toasted bread, or bread crusts. Pairing them with a grilled cheese, for me, makes the grilled cheese taste more like itself.” Try Dream City by Hamilton’s Fairweather or the märzen from Beau’s.
HOT DOGS
My favourite summertime meal is two hot dogs and a lager (a.k.a. The Two Dogger Lager Combo). Top your dogs generously with classic yellow mustard and this dish rivals any sauterne and foie gras offering on the planet. The fatty, salty, juiciness of a hot dog with a touch of tang from mustard pairs perfectly with the palate cleansing and effervescent freshness of a good helles. Go for the helles from Toronto’s Muddy York or the one from Wellington. Resist the urge to include a fancy bun. The whiter and softer the better.
SPICE
Lauren Richard is an Advanced Cicerone and bar manager at Hotmess Tex Mex in Toronto. She favours some malt-forward beers to balance heat. “Junky food is often highly salted, which, for me, accentuates malt character, and can help in certain instances where people can’t take the heat. If someone is having an adverse reaction to spice, I’ll give them the brown ale from Anderson Craft Ales. It’s a touch lower in carbonation, so no aggravation for the already prickled tongue, and the malt sweetness can be soothing.”
DILL PICKLE CHIPS
For perhaps the most common pairing on Earth— chips and beer—there is something magical about pairing dill pickle chips with a hop-forward pale ale. There are subtle dill notes to a handful of hop varieties, like Sorachi Ace, and a symbiosis of like flavours when you get the right beer. In contrast, the piney bitterness of hoppy beer acts like a palate reset, working with carbonation to cleanse between salty bites so you never overload on either flavour, and can more easily over-indulge on both the chips and beer. I like Lays Dill Pickle and Canuck pale ale from Etobicoke’s Great Lakes Brewery.

Spend your summer seeking out the subtle and traditional cask ale

e are lucky to have Cask Days on the Ontario beer calendar. It pretty famously is the largest cask ale festival outside of the United Kingdom. But here, on the other side of year from when it happens, I think it's important to make sure it’s not the only time you drink real ale this year. We certainly don’t have to be exclusive with the festival the Morana family runs. During our discussion for this month’s Brewer vs. Brewer, Mary Beth Keefe from Granite Brewery (where they have four cask engines) mentioned how much she enjoyed the Tynedale Beer and Cider Festival. By happy coincidence, it’s held every June in the village where her husband’s family lives. “They just do it so well,” she says, “they all have hand pumps. And they have ice water running through all of the casks so that they’re served at a perfect temperature. They were all amazing. What I love so much is that they are consistently making beers that are four-and-a-half per cent and under but with so much flavour.” Out west, Milo’s Craft Beer Emporium in London has made a commitment to cask with two cask engines. And Ottawa fans of real ale can count on Clock Tower for their fix. In Toronto, there are more than a dozen options for a well-pulled pint of ale. Enough, in fact, that there is an annual crawl organized to visit as many of them as feasible in one day. “From the second year onward,” says co-founder of the Toronto Cask Crawl, Dominik Halas “we've been starting at the Feathers for brunch and a

pint at eleven, and then continuing on to Castro’s. Initially, the crawl went as far west as Indie Ale House and The Hole in the Wall, in the Junction; and at least once it's ended at the Monk’s Kettle, on Bloor at Royal York.” This year, they planned to visit House on Parliament, Harbord House and others before finishing at Another Bar on Bloor. And, remarkably, in years when the weather is fine Halas will walk between the stops—in 2017, that meant 21 kilometres. When you sample the wares from 11 pubs in one day you start to notice the finer points of cask ale service. Things like the mugs used at the Oxley make a difference. “Another pleasant but hard-toexplain part of the experience,” says Halas, “is the physicality of working the pump handle. That last bit of manual labour required to bring the beer up from the cask is a visible symbol of all the work that went into making the beer. A publican who knows how to smoothly and elegantly work the mechanism may not be pouring a better pint in any measurable sense but they’re certainly contributing to the entirety of the aesthetic experience.” Since it closed (after 28 years) in 2016, the Moranas’ Bar Volo has been greatly missed by Ontario’s cask community—many of us fell in love with craft beer there. Happily, it’s re-opening this June in a new home at 17 St. Nicholas St. in Toronto and Giulian Morana has confirmed that they will have six hand pumps for cask ale. So, this summer, between the afternoons whiled away on sunny patios seek out the pubs with cask options, look for those all-important hand pumps and help keep an important tradition alive. j

Beer’s country cousins have become much more sophisticated.
O
ntario’s climate and soil are made for apple growing. And our rich cider tradition, once lost to Prohibition, is having a renaissance. There are over 40 cideries and mead makers in the province—here’s our guide to tasting the most interesting stuff out there.
Cider 101 Cider is made from apples. Cider fanatics look for heirloom or cider apples because they’re rich in tannins, acids, bitterness and sugar. Makers usually blend them together for the perfect balance. Ciders range widely from quite sweet to bone dry, and still to sparkling. Perry is made from just pears. Pears have more unfermentable sugars than apples, so perries tend to be sweeter. Most cideries make a perry or two. Mead is made from honey. Wildflower honey gives mead a complex range of aromas and flavours—and while some are “dessert” ready, most of them are not overly sweet.

MEAD Rosewood Estates Winery The story: The Roman family inherited their love of beekeeping from their Ukranian grandfather, E.W. His son, Eugene and his wife Renata, turned that honey into money when they opened Rosewood Estates in 2008 on a vineyard on the Niagara Escarpment near Beamsville. Visit: The newly-renovated tasting room hosts fun experiences like a cocktail class, or rock up casually with friends to sip through their meads and wines over a cheeseboard. Taste: Start with the Mead Royale—a barrel-aged beauty with notes of jasmine and orange peel. Then explore Rosewood’s thoughtful blends (like a “cyser” made by fermenting honey and apple juice), single-batch experimental meads and low-intervention wines. •••
Royal Canadian Mead The story: Royal Canadian Mead began in Tulum, Mexico, where partners behind NewSkew, a food brand company, tasted a sparkling mead at the famed Noma pop-up restaurant. When they got back to Burlington, they saw an opportunity to make bubbly, canned mead—refreshing, dry and low in sugar, and RCM was born. Visit: Not yet! RCM is buying honey from a family honey farm near Kingston and having their first four sparkling, canned, low-ABV meads brewed at a production facility. One day they plan to have a tasting room, in Burlington or Hamilton, with a bee colony, of course. Taste: Feels Like Friday is the flagship brand, made with earthy buckwheat honey and dryhopped with tropical-fruit-like citra hops, sparkling and just 5.5% ABV, it will shift your perception of what mead can be.
Orchard-Based Cideries West Avenue The story: Founded by a British chef, Chris Haworth, and his Canadian partner, Amy Robson,
in 2008 West Avenue is one of the most venerated cideries in the country. Visit: The cidery sits on picturesque Somerset Orchards, just outside of Hamilton—it’s a stunning, family-friendly spot with sheep, 16 acres of apple and pear trees, and a modern taproom serving snacks from local farmers. Taste: Haworth never adds yeasts to his ciders: everything is spontaneously fermented and barrel-aged. Try Heritage Funk, a bone dry, earthy beauty that is a yearly take on their Heritage Dry. •••
Twin Pines Orchard and Cider House The Story: Set on 50 acres this estate cidery is run by Mark and Mike Vansteenkiste, sons of Alma and Joe, who moved their four kids to this 50-acre farm in 1968. The Estate Cidery grows 1 million pounds of apples—many of them heritage and cider varieties. Visit: The A-frame farmhouse is located between Grand Bend and Sarnia. Take a wagon ride to pick apples or pumpkins, taste their award-winning ciders with a hot cider donut most weekends, and stroll through the plentiful fruit and vegetable gardens that make for perfect ambiance. Taste: Hammer Bent Red won Best in Show at the world’s biggest cider awards in 2014, and continues to medal in cider awards annually. Don’t miss their perry and scrumpy. •••
Spirit Tree The Story: Thomas and Nicole Wilson are cider pioneers: over 10 years ago they sold Thomas’s family’s pick-your-own fruit farm in Caledon, bought a nearby orchard, and Thomas trained to be a cider master in England.

Visit: A handsome, straw-bale building houses the cidery, French brick-oven bakery, tasting room, farm store and bistro. Stop in for lunch Wednesday to Sunday, or a pizza oven dinner on Friday and Saturday. Taste: Spirit Tree’s ciders have a lightly funky, house character and are complex but really accessible. Try their perry that balances sweet, overripe pear with crackling, lemony acidity and whispers of earthy funk and white pepper. •••
Windswept Cider The story: Mark and Courtney Skinner are on a mission to save and restore the “lost orchards” of Grey County, around Meaford. The couple started their own cidery on a 100-acre property in 2017, and have been winning awards for their heritage and single-variety ciders ever since. Visit: Not yet! But a tasting room is scheduled to be open by the end of this year. Until then, you can order online, and find them at Toronto and Collingwood farmers’ markets or on tap—check their website for locations. Taste: Try the single-variety Golden Russet and their gold-medal perry made with wild pears harvested from an old grove on the couple’s property. And don’t miss the Lost Orchard lineup—ciders crafted from heritage apples that the family picks from heritage orchards in the County.
Experimental & New Cideries Revel The story: Founded four years ago by Tariq Ahmed, a self-proclaimed fermentation geek, this tiny cidery has made a big name for itself thanks to its dedication to working only with indigenous yeasts and its knack for creating swoon-worthy and surprising flavours. Using Ontario apple juice as a base, Ahmed combines everything from riesling skins and red plums, to lactobacillus, sea salt and limes for tart, lightly funky, fruit-forward tipples that Revel’s fans love. Visit: Sorry! Cideries are licensed as wineries, so in order to have a bottle shop or tasting room, they need to have five acres of trees planted in the ground. That’s not cheap—and means production facilities like Revel can only sell online or through

the LCBO’s network of stores. Taste: Revel’s ciders aren’t in the LCBO. But you can order online anytime. Select your own mixed pack of six bottles and cans—you won’t regret it. •••
Garage D’or The story: This super small operation started in 2016 by beer sales rep, Brian Yeo, and head winemaker at Niagara Teaching Winery, Gavin Robertson. Visit: Nope! The cidery uses a mix of purchased juice, and hand presses “abandoned” pome fruit from urban homes. Taste: Culinary inspo plays a big role in flavour profiles—like a cider made with carrots, citrus and ginger. Hunt for Garage D’Or on tap at better beer and cider bars in Southern Ontario. Check their Facebook page for details. •••
Steel Town Cider Co. The story: Inspired by the natural wine movement and Old World ciders, wine sommelier and avid home cidermaker Alex Hamilton went profesh in 2017, opening Steel Town Cidery with two friends. Visit: Not yet, Alex is the sole employee, making cider from hand-picked crab apples and a blend of Ontario juice, out of a warehouse in Hamilton. Follow their Insta for a glimpse into his process. Taste: Steel Town bottles Old World styles, like acidic, funky Basque sidras but also cans playful ciders inspired by what’s happening in craft beer or cocktails. Look for their cider on tap or in bottles at 60 restaurants in Southern Ontario. j

it the road this summer in Ontario’s Southwest and one thing becomes obvious immediately—you’re never very far from a farmer’s field. Our surroundings have a strong and positive impact on the beer we brew. And the brewers of Ontario’s Southwest take care to honour the local produce in their own creations.
FIELD-TO-KETTLE OPERATIONS In fact, some breweries have taken it upon themselves to get their hands dirty and grow their own ingredients. La Salette’s Ramblin’ Road was the first brewery farm in Ontario with both hops and spring water coming from their own fertile land. Over at Stonepicker in Forest, this farm-based brewery goes the extra acre and also produces their own barley. And Charlotteville Brewing adds foraged ingredients to their brews as well as produce from their fruit-and-vegetable patch. Even relatively urban operations, like BREW Windsor, are getting in on the fun by establishing remote hop yards—theirs was set up in Amherstburg in 2017.
A QUESTION OF TASTE Other Southwest breweries benefit from picking and choosing fresh produce or local hops from neighbouring growers. That ethos means that London Brewing Co-op has a local-focussed lineup featuring beers like Local 117, which is made with ingredients from within 117 k.m. of the brewery. Railway City buys local as much as possible, including the honey they use for Honey Elixir and maple syrup in their Maple Bock. Chocolate can be tough to manage locally, but Upper Thames gets the cacao nibs for their chocolate stout from Habitual Chocolate in Woodstock. They also send their beer to Gunn’s Hill Cheese to make the Dark Side of the Moo! They've also launched the Brewed Exploration Experience. It takes you through grain flavour profiles, bottling your own beer—with a custom label—and plenty of sampling along the way. Tasting is believing when it comes to appreciating the importance of local, so plan a brewery tour this summer and check out the wonderful beer coming from Ontario’s Southwest! j Find out more at OntariosSouthwest.com.

o paraphrase everyone’s favourite prison movie, Ontario’s craft beer scene “went and got itself in a big damn hurry.” And, so with so many breweries opening production facilities, barrel warehouses, satellite locations and spin-off brands, it was good to sit with two brewers bucking the trend. Mary Beth Keefe of Granite and John Jenkinson of Folly are two brewers who head operations that are content to sell most of their beer at their home brewpub instead of being in hundreds of retail outlets. True to type for their style of brewery, the beer they make goes well with food and the styles rotate fairly often. That doesn’t stop either of them from challenging themselves to push the boundaries of their brewing knowledge. The two well-respected brewers were kind enough to meet me at The Jim on Bloor for a discussion of everything from Scandinavian farmhouse yeast strains to adding a closed fermenter to a previously all-ringwood brewery.

Folly. I applied for it, got the job, found out it was to take over their position.
KEEFE: It is my family’s business. My dad opened Granite when I was 10. And it was very much a part of my life from the very beginning. I started helping him in the brewery from when I was 11. Filling casks and doing whatever he needed me to do. I thought it was amazing and cool what he did, “oh my dad makes beer, that’s what I want to do when I’m older.”
I went from home brewer to brewing at Folly. Realistically, it’s a fairly small system, so it was a natural transition. Obviously, there’s more to do than with homebrewing—draught accounts, ordering and brewing a lot more regularly than I was.
But then I went to university and I studied something completely different. I went travelling for a while and met my husband who’s from England and I lived there for a year. I worked in a pub and was just immersed in English ale which is what we do primarily. It was the reminder I needed that what I had back home was pretty amazing. When I got back from travelling I said, “okay, I’m ready to do this now.” And about five months later, I was in charge because our assistant brewer left and my dad was slowing down in the brewery because he was doing everything else.
GROWLER: And how has your brewery changed during your tenure? JENKINSON: I tried to keep it in the style they created. I use yeast that can ferment at warm temperatures because we don’t actually have temperature control at Folly—some tanks have glycol but not all. Using yeasts that can accommodate warmer temperatures is our MO to a certain extent. I have been exploring different yeasts a little bit more. We’ve done 16 batches with different kveik blends.
JENKINSON: This was not my intended career path. I was involved with the homebrewing community in London—I did my PhD at Western— helped start the brewers’ guild. At some point, I started looking into brewing jobs, too because there weren’t a lot of academic positions available. The original brewers, Chris [Conway] and Christina [Coady] had a job posting up to be a brewer at

JENKINSON: The main problem is the scale. It’s hard to grow when you’re that small. A typical batch we get seven kegs: bottle two of them; minimum of two for draught on site; and that only leaves three to sell [to licensees]. If we do a hoppier New England-style IPA that moves very quickly and nobody outside of the brewpub context hears about those beers.
GROWLER: Can you give us a primer on what kveik beers are? JENKINSON: Kveik is a familiy of Norwegian yeasts. They’ve been domesticated but not commercialized. They’re from these farmhouse breweries where farmers brew their own beer. People have been going around figuring out the orthography of the different brewing traditions of these villages and families and they’ve noticed the yeast is different than what we use in commercial brewing contexts. Richard [Preiss] at Escarpment Labs has been instrumental in getting kveik strains and blends going in Ontario. They’re just a really, really weird yeast. They ferment at extremely high temperatures. Some strains cast out at 30 or 40 C. They can ferment lower. There’s one we have going now that can apparently ferment as low as 4 C. It can also ferment at 30 C and produce a clean beer at both temperatures. They don’t produce a lot of phenols or fusel alcohols, so the beer is pretty much ready to drink right away. KEEFE: With the new fermenter I’m excited to try styles that we weren’t able to do before. GROWLER: After the NEIPA, what else do you think you’ll do in the closed fermenter? KEEFE: I’d like to try a saison. I want to do a clean West Coast IPA. I’m a hop head so I love IPAs. JENKINSON: Have you tried making a New England style with ringwood? KEEFE: Not really. I didn’t put in as many hops as I should have because I didn’t want to waste them. The aromas would have been lost out the top. I would try it, for sure, in the closed fermenter. GROWLER: How does being a brewpub affect the way you brew?

KEEFE: I love the brewpub aspect because you have immediate feedback and it’s always been mainly positive. Our customers are regulars who have been coming for years and they come because they like things the way they are but they also appreciate the rotating taps that are happening now. GROWLER: What style do you wish was less constrained by seasons? JENKINSON: There are definitely seasonal trends I wish didn’t exist. I love to make and drink grisettes. For anyone that doesn’t know the style: it’s essentially (but not entirely) a low-ABV saison. If we brew them under four per cent in the winter months they don’t sell at all. KEEFE: It seems the lower alcohol beers only come out in the summer. Like the session IPAs. JENKINSON: We found if it’s under four per cent that’s when we notice a big change in movement. Grisette, pretty much the same recipe, above four per cent it moves fine, below it doesn’t. GROWLER: What on the horizon concerns you? KEEFE: Being established for so long and pretty traditional, there’s not too much concern for us. One thing for drinkers just getting into craft beer, with so many contract breweries, that could affect things slightly is someone picking up a can of beer and it being not great. Going to the LCBO, I do want to try new things but there is too much disappointment I find when doing that. That being said, there are so many great ones that it’s nice to just get what you know sometimes and not be disappointed. GROWLER: What’s coming up at your brewery that has you excited? KEEFE: Closed fermenter! The New England IPA will be ready [in May]. JENKINSON: Be excited for grisettes! We’ve really been expanding our selection of naturally carbonated saisons. I think we have more beer in warm storage than cold storage so there’s going to be a lot of highly carbonated saisons over the summer. j

brotherly brews Why you should make Philly your next craft beer destination— and skip the cheesesteak

by David Ort hiladelphia seems like a known quantity: Rocky, cheesesteaks, Liberty Bell, aggressive sports fans—that sort of thing.
I’m here to tell you that it is way more than that. In fact, I managed a three-day trip free from poured cheese, guidebook sites and I avoided all temptation for air-boxing. Philly is amazing. That’s partly because it’s a great craft beer city. The scene combines a solid history with good beer and an innovative flexibility. Actually, this might be the best beer city in the northeastern U.S.
Philly—as all locals call it, trust me—is an easy place to visit. Some of that is logistics—it’s close to much of Ontario and has regular connections— but it also feels like home. The city is a remarkably diverse patchwork of neighbourhoods and they’re close enough together that “walking the world” is easily accomplished in an afternoon. As well, Pennsylvania is probably the American state closest to Ontario in terms of a kill-joy set of rules for selling beer. Like us, they are starting to get rid of the old ways and that

means a new crop of breweries (and also distilleries) are blooming all over Philly. Yards This cornerstone of craft beer in Philly (for 25 years now) has recently opened a 70,000-squarefoot facility, just north of downtown on Spring Garden Street. That space is 70 times larger than the garage they started off in but their classic offerings are still some of the most popular in town. Cape of Good Hope (9.7% ABV) is a raucous double IPA with a strong malt backbone to support all those piney-citrusy hops. Even in warmer weather, their dark beers like Washington’s Porter (7% ABV) are good options for both their complex richness and historical interest.
Crime & Punishment An all-out brewpub that has become a mainstay in Brewerytown—a neighbourhood surprising bereft of craft breweries. Their menu stretches from brunch classic to Eastern European staples like dumplings, mushroom strogranoff and pierogi. They definitely know their way around hops here, but styles tend to vary from the commonplace American-style IPAs. Ghost Station (4.2% ABV) is a superb contrast between a nose of fruity raspberry and a flavour of tart lemon. Behemoth (6.5% ABV) adds dark fruit notes to the chocolate-coffee usuals to up its oatmeal stout game.
Evil Genius This one proves that breweries with a gimmick (name one brewery with better names!) can also be very good. Chickity China the Chinese Chicken (7.2% ABV) is packed with the dank juiciness you’d expect from the one-two of citra and mosaic hops. Ma! The Meatloaf (5.5% ABV) adds a mango note to the usual witbier routine.
Monk’s Cafe They do the occasional collab, such as the world-class grand cru made with Brouwerij Van Steenberge, but Monk’s is less brewery and more pub—and a legendary one at that. This is the place to go if you want to find some of the best Belgian-style beers (out of both American and Belgian breweries) on this side of the Atlantic. The best part is that they’re not all hidden away on an expensive bottle list—gems from Russian River are almost always available on tap.

where almost no one mentions Untappd scores while shooting the breeze with new friends. Where Else to Visit Beer gardens are a phenomenal part of Philly’s drinking culture. Some are just what we’d call a patio (a few tables in an outdoor space attached to a restaurant) while others are fantastic, ephemeral creations by everyone from the Pennsylvania Horticultural Society to one in Franklin Square that’s part of the city’s Chinese lantern festival. The Drury Beer Garden behind Opa (worth a visit in its own right) is a favourite but tends to get a bit crowded with younger suits when they get let out from their summer internships for the day. Uptown is a bit more sedate and has a focus on just-for-this-year collabs. Frankford Hall fits more into the original, sprawling German style with dozens of picnic tables set under a leafy canopy. If you can find time between the breweries, it’s worth paying a visit to one of Philly’s very highly regarded cideries. Hale & True Cider Co. brings guests to their residential neighbourhood in East Philly for the lineup of on-the-dry-side ciders made from Pennsylvania apples. Manatawny Still Works is one of the local distilleries taking full advantage of the newly liberalized liquor laws that have seen the state add dozens of operations recently. Their cocktail bar on East Passyunk Avenue is a great place to sample their hard work as part of a well-prepared concoction. A walk of the nearby blocks will cover off many of the best places to appreciate Philly’s edible diversity. That means vibrant Malaysian at Saté Kampar, surprisingly light British-style pies at Stargazy, and Italian from Paradiso without any of nostalgic, but overly ubiquitous red gravy.
Then head back to Rittenhouse Square for the best from chef Solomonov’s restaurant empire. His Federal Donuts is one of the East Coast motherships for the idea that 300 calories can be pretty as well as tasty. Likewise, Abe Fisher brings cuisine from the Jewish diaspora into a modern focus. And what about the cheesesteaks? I won’t pick a preference, but instead say that it’s really the roast pork sandwich that should be the official sandwich of Philly. And here I’m a fan of John’s. j Getting to Philly Air Canada has plenty of flights to PHL from both Toronto and Ottawa. Given the ease of the island airport, Porter’s 90-minute hop is a relaxing way to start a beer weekend. Where to Stay Most of the hotels in downtown Center City get their business from the nearby government offices and hyper-popular tourist sites. Instead, stay where you plan to eat and drink. Options include the intimate Wm. Mulherins Sons Hotel in Fishtown or the much larger AKA University City across the Schuylkill River. The latter has both apartment-style suites (great for putting together a meal of craft beer and the eats you find at Reading Terminal Market) and Walnut Street Cafe for locally inspired dining.

Ontario craft beer fans are bringing their favourite brands into their homes and even onto their bodies. by Jordan Duff

eople celebrate their fandom in many ways. Whether it's our favourite team’s t-shirt, a patch on our jacket from some super obscure band, or a hat from our local brewery, we’re supporting what we love and signaling our presence to other likeminded people in the wild. If nothing else, it’s a conversation starter. However, some hardcore beer nerds are going even further: dressing up as beer mascots, painting murals inspired by beer labels on their home and even getting tattooed with their favourite brewery’s logo. For these superfans, craft beer isn’t just a delicious beverage—it’s a way of life, and part of their identity.

Ottawa’s Beyond the Pale Brewing Company has been a staple in the Hintonburg neighbourhood for years, establishing itself as a brewery that, as its name implies, pushes the envelope. A couple of years ago, the brewery teamed up with its neighbour, Railbender Tattoo Studio and Art Gallery, and offered to cover the cost for anyone willing to get the BTP logo inked on their person,

forever marking themselves with the brewery’s branding. And to help ease the pain, BTP even threw in a free growler of beer. Co-owner and brewer Shane Clark said he initially expected maybe a few people would get the tattoo. Instead, more than 60 people have since permanently etched their skin with his brewery’s logo.

“We never expected the response we ended up getting,” says Clark. “It still blows our minds that people got branded with our logo. It is quite amazing and humbling what people are willing to do and we love them for it!" That level of consumer loyalty is unheard of in other industries. It’s like getting a Toyota tattoo because you drive a Tercel. “What’s great about the craft beer space right now is that breweries have fans rather than consumers,” according Paul Braunovan, former owner of Brown Van Brewing. Breweries like Beau’s and Blood Brothers have helped set the standard for devotion, with an almost cult-like following, thanks to amazing beers and creative branding. “Branding and beer have been together for a long time,” says Dominion City Brewing founder Josh McJannett. “Check out the history of Bass [Brew-

ery] in the U.K. The red triangle was the first official trademark registered with the U.K. patent office when it opened.” But a brand is a lot more than a logo or can design. “I think people have always been interested in understanding what makes a company tick beyond just the products they make,” McJannett continues. “There's a kind of customer who's interested in understanding your motivation, where you come from and what it means for them to support you.”

Sometimes, the connection to a brewery’s branding is all about aesthetics. Jen Blattman was looking to create a conversation piece in her yard when inspiration came from a can of 12 Mile India Pale Lager from Oakville’s Cameron’s Brewing Company. “Sitting poolside and staring at the back of the garage one day, we decided that we wanted a mural painted on it,” she explains. “Last summer, we toured Vancouver Island. We were overwhelmed by the beauty in our own country. We quickly decided that we wanted something Canadian back there instead. The challenge was to find the perfect [design].” Blattman’s neighbour came by sipping on a tall can of 12 Mile and the rest was history.

Beer run
Dan Grant loves running and he loves beer, so the RunTOBeer running group co-founder decided to combine his passions five years ago and dress up as Great Lakes Brewing mascot Gordie Levesque and try to set a Guinness world record. Apparently, Fastest Marathon Dressed as a Lumberjack is a legit world record category. Per Guinness’s stipulations, Grant would be required to wear a toque, a flannel shirt, suspenders, denim pants and lace-up boots, all while carrying a plastic axe. That meant a summer of training in shorts and ankle weights to get used to the extra footwear. “[Race day] was really, really challenging,” says Grant. “As well as being a warm day and having to wear boots, people were swarming me and wanting to get photos.” That meant Grant had to throw in the towel— plus the plastic axe—at the halfway point.

While Grant failed to set a new world record, he did help raise money for charity in the process, with proceeds going to Good Foot Delivery, a local non-profit courier service that hires people with disabilities to deliver packages around the GTA using public transit and their own two feet. It’s not a given and not all breweries enjoy this relationship with their customers. But those who have created that authentic connection to their fans through their product (you can’t succeed here without great beer) and their company’s ethos set themselves up for success. j

Momofuku Kōjin’s Pork and Shrimp Dumpling Sausage Paired with Sons of Kent's 8 Track XPA

here is a natural affinity between summer, sausages and craft beer. This recipe, from David Chang’s Momofuku Kōjin in Toronto, adds Asian flavours to the mix. Working under executive chef Paula Navarette, commissary chef Cam Hardy has made these pork and shrimp sausages one of his passions. There is something about extending the traditional dumpling duo (plus the usual spices) into a Western-style sausage that flips the experience (pleasantly) upside-down.
But, if you don’t want to worry about stuffing casings, it also works well as meatballs or sausage patties. The meat grinder attachment for a KitchenAid stand mixer is an easy way to add “sausage maker” to your kitchen resume. And look for fatty pork belly if you can’t find back fat. Sons of Kent’s 8 Track works very well as a pairing because the bright hops will complement the subtle spices in the sausage and the salt will help round out the flavours in the beer. —David Ort

• 1 Tbsp (15g) kosher salt
• 100g wild gulf shrimp, peeled and deveined, cut into small chunks • 4 tsp (20g) shrimp paste

mix pork and back fat pieces with the rest of ingredients. Put in the refrigerator overnight to cure.
• 4 cloves (20g) minced garlic
2. The next day, grind the seasoned mix through a large (ideally 10-mm or 6-mm) grinder die. Return the mix to the fridge and allow it to chill. Grind again on the 4.5-mm or 6-mm die and put it back in the fridge.

Whitby (Spring 2019) It’s been over three years from conception to opening, but Brock Street’s new location is now in business. Brooklyn, New York (summer 2019) There seems to be an endless stream of American breweries who want to open in Ontario, so it’s great to see one of ours go the other way. The Hamilton brewery has leased a space in the Gowanus neighbourhood of Brooklyn and plans to put in a brewery, taproom and craft distillery by this summer. @collectivebrew

Kitchener (winter 2019) The truly thriving Tri-Cities brewing scene got another entry when Counterpoint opened at #4-935 Frederick St. this winter. Their already deep lineup ranges from a coffee stout to various pales ales to a fruited gose. @counterpointbrewingco

Port Hope (spring 2020) Ajax’s favourite local brewery has plans for a second location a little bit further east. Canadian Beer News reports that the new, 5,400-square-foot building at 33 Mill St. will end up as the main location for Falcon when it opens in 2020. @falconbrewing

Bracebridge (2020) The former home of Muskoka Brewery is being redeveloped as a multiuse facility, including a new brewery. Mark Verok plans to move his contract brewing brand, into the historic building. @katalystbrewing

Toronto (Spring 2019) This once-downtown brewery has not one but two new locations. Mascot has joined the south Etobicoke crowd with a production facility (plus taproom) at 37 Advance Rd. While that one is nearly open, their new beer garden at 220 King St. W. is still months away. @mascotbrewery

Sarnia (summer 2019) Mark Woolsey and John Tidball are renovating the historic building at 146 & 148 Christina St. to hold a 4,000-squarefoot restaurant on the main floor and brewery in the basement.
