THE FLUFFIEST PANCAKE of ALL TIME Looking to expand your culinary cuisine and try something new? This stacked pancake cake is a simple twist on the classic French dessert, Mille-Crepe Cake.

“A traditional mille-crepe cake consists of 20 layers of paper thin crepes, each separated with a dollop of French pastry cream,” says Tom Filippou, executive chef for President's Choice. “In this lightened up version, we've used an easy pancake mix, filled it with low-fat skyr and topped it with sweetened whipped cream for a touch of indulgence.

It's a PERFECT DISH for Brunch or Dessert.” 8

PANCAKE CAKE

DIRECTIONS Stir together pancake mix and water until combined but still slightly lumpy. Line baking sheet with parchment paper. Set both aside. Preheat 10 inch (25 cm) nonstick frying pan over medium heat. Spray with cooking spray. Pour 1/2 cup (125 mL) batter into pan; quickly spread into 7 to 7½ inch (18 to 19 cm) pancake. Cook for 2 to 3 minutes or until bubbles appear on top and bottom is golden. Turn only once and continue cooking until second side is done. Transfer to prepared baking sheet. Repeat with remaining batter to make total of 7 pancakes. Let cool, about 15 minutes. Whip cream in chilled bowl with icing sugar and vanilla.

INGREDIENTS • 3 CUPS (750 mL) PC Buttermilk Extra-Fluffy Pancake and Waffle Mix • 2 CUPS (500 mL) water • 1/2 CUP (125 mL) 35% whipping cream • 2 TSP (10 mL) icing sugar • 1/2 TSP (2 mL) pure vanilla extract • 1 PKG (500 g) PC Skyr - Power Fruit • 3/4 CUP (175 mL) each fresh raspberries and sliced strawberries • 1/2 CUP (125 mL) PC Black Label Dark Maple Syrup

Place one pancake on serving platter; spread with 1/4 cup (50 mL) of the skyr. Repeat layers until all pancakes and skyr are used. Spoon whipped cream on top; spread, leaving 1 inch (2.5 cm) border bare. Top with berries. If desired, garnish with mint. Cut into 8 slices; serve drizzled with maple syrup. C HE F TO M' S TI P : If the cake is going to sit for bit, the skyr on top of the cake can dry out where it peeks out from under the whipped cream; you can prevent it by leaving a 1-inch border bare when you spread the skyr on the top pancake, so the whipped cream will completely cover it. www.newscanada.com

SPRING is in the air Hopefully this winter weather is on its way out and Spring is just around the corner. This means warmer temperatures and more time spent outdoors for you and your pet. Spring also means the time when external parasites emerge and can plague our pets. If you haven’t done so already, we would encourage you to book your dog in for their “Spring Check Up” with your veterinarian to ensure that they are protected for the months ahead.

Ticks are of a particular concern this year. Ticks are an external parasite that can transmit various diseases to your pet, including Lyme disease, Ehrlichia and Anaplasmosis. According to Idexx Laboratories, they had over eleven hundred dogs test positive for Lyme exposure in Ontario last year! Lyme disease is transmitted by the black-legged tick and is caused by the bacteria, Borrelia burgdorferi. Early diagnosis is essential as it is associated with a more favourable outcome. A simple blood test is available which can screen for these tick borne diseases. Your veterinarian may recommend that this test be run if you have detected a tick on your dog and/or be run routinely each Spring.

NATURAL BEAUTY SURROUNDS US,

WHETHER IT’S A BIRD ON A POND, THE SMILE OF A CHILD, OR A MAGNIFICENT SUNRISE. High Park/Roncy photographer Patrick Parent has been passionately capturing images that attempt to illustrate this for almost 40 years. Starting out as a teenager with a library supplied 35mm SLR, rolls of black and white film, and access to the school darkroom he shot everything from classmates, to neighbourhood street scenes, landscapes, animals, automobiles, and just about anything that caught his eye as being striking, unusual or interesting. Black and white film was a great learning medium as it allowed him and fellow students to control the entire process, from lighting to shooting to printing the final images. He has embraced digital technology for over a decade now. Although it has enhanced our ability to alter reality, for him it is more about how it allows us to confirm we got the image we wanted immediately after taking it and perhaps most significantly, to share our images with the world. Although the equipment may have changed over the years, he still approaches photography with the same goals: realistically portraying his subjects in their natural element. Drawing on an education which includes a CEGEP diploma in Wildlife Management as well as a year at the Dawson Institute of Photography, his current focus has been on photographing birds and other nature subjects, including flowers and small animals in parks throughout the GTA. He still enjoys portraiture and working at corporate events, concerts, and industrial sites, seeking to showcase people and the beauty within them. Although Patrick comes from the Montreal area and then lived seven years in the US in California and Washington, D.C., he and his family have made Toronto and the High Park area their home since 2006.
