y husband and I lead Encounter, the Young Adult service at Lakemount Worship Centre in Grimsby. For the past three summers, we’ve had the opportunity to travel to the beautiful country of Guatemala with a team of college-aged students.
Guatemala was once the heartbeat of the Mayan civilization and through its years has witnessed invasions from other countries, civil war, and the attempted genocide of the Mayan people. Guatemala is one of the poorest countries in Latin America but prides itself on the richness of its history and art. Through the rise and fall of political powers and economical statuses the people have remained the same - determined, steadfast and hopeful for a better future. The Guatemalan people are as warm as the weather and their smiles brighter than the sun. When you first meeting a Guatemalan they don’t just shake your hand, like we do in Western culture, instead they kiss and hug you. From the first introduction you are no longer strangers but trusted friends.
“LOVE THE UNLOVED AND REACH THE UNREACHED.” We partner with Canadian husband and wife team, Steve and Karla Stoffelsen, and The House of Refuge in Chiquimulilla. The House of Refuge is a non-profit organization whose mission is to “love the unloved and reach the unreached”. They work with alcoholics, drug addicts, homeless families and those living in poverty, as well as ladies, men, and children transported to Guatemala to be used in the rampant sex trade industry.

We have had the honour of serving hot meals to the disenfranchised, sitting with and listening to young ladies from the brothels, and loving children whose living conditions aren’t like anything we’ve experienced. We participate in street outreach, distribute meals to sponsored families and street-involved men. To say our eyes are now open to the sad realities of this world would be an understatement but the resilience of the people is inspiring. Every year we go our perspectives shift and our hearts grow bigger. The House of Refuge succeeds in rehabilitating men and seeing them return to their families as thriving members of society. Numbers of struggling and hungry families are no longer fatherless. The men find sobriety and learn life skills, allowing them to take pride in community participation and family provision. We hear many uplifting stories of sobriety - parents who are returning to their children and families that are being restored.

During our time in Guatemala, we fell in love with the people. We felt their pain and struggle and rejoiced in the story of their victories. We admire their hope and the high priority of family and community. Because love isn’t just an emotion - it’s a call to action, Encounter has raised over $9,000 to help purchase a passenger van for The House of Refuge that will be used to help accomplish the goal of reaching their local community. One of our team members who’s life was impacted by this trip came home and launched “Love on Hamilton”. She and other young adults serve alongside The Salvation Army and local churches who are reaching out to the marginalized in Hamilton. This past Christmas we put together and distributed over 50 ‘Hope Totes’ (bags filled with toiletries, warm clothes, Tim Horton’s gift cards, food and bus passes) to the homeless of Hamilton.
We went to Guatemala to be a part of positive change in the country but instead we were changed by the country. Thank you for your generous support in helping us get to Guatemala. The experience was life changing and I believe the Niagara region will be a better place because of it.

THE FLUFFIEST PANCAKE of ALL TIME Looking to expand your culinary cuisine and try something new? This stacked pancake cake is a simple twist on the classic French dessert, Mille-Crepe Cake.
“A traditional mille-crepe cake consists of 20 layers of paper thin crepes, each separated with a dollop of French pastry cream,” says Tom Filippou, executive chef for President's Choice. “In this lightened up version, we've used an easy pancake mix, filled it with low-fat skyr and topped it with sweetened whipped cream for a touch of indulgence.
It's a PERFECT DISH for Brunch or Dessert.” 14

DIRECTIONS Stir together pancake mix and water until combined but still slightly lumpy. Line baking sheet with parchment paper. Set both aside. Preheat 10 inch (25 cm) nonstick frying pan over medium heat. Spray with cooking spray. Pour 1/2 cup (125 mL) batter into pan; quickly spread into 7 to 7½ inch (18 to 19 cm) pancake. Cook for 2 to 3 minutes or until bubbles appear on top and bottom is golden. Turn only once and continue cooking until second side is done. Transfer to prepared baking sheet. Repeat with remaining batter to make total of 7 pancakes. Let cool, about 15 minutes. Whip cream in chilled bowl with icing sugar and vanilla.
INGREDIENTS • 3 CUPS (750 mL) PC Buttermilk Extra-Fluffy Pancake and Waffle Mix • 2 CUPS (500 mL) water • 1/2 CUP (125 mL) 35% whipping cream • 2 TSP (10 mL) icing sugar • 1/2 TSP (2 mL) pure vanilla extract • 1 PKG (500 g) PC Skyr - Power Fruit • 3/4 CUP (175 mL) each fresh raspberries and sliced strawberries • 1/2 CUP (125 mL) PC Black Label Dark Maple Syrup
Place one pancake on serving platter; spread with 1/4 cup (50 mL) of the skyr. Repeat layers until all pancakes and skyr are used. Spoon whipped cream on top; spread, leaving 1 inch (2.5 cm) border bare. Top with berries. If desired, garnish with mint. Cut into 8 slices; serve drizzled with maple syrup. C HE F TO M' S TI P : If the cake is going to sit for bit, the skyr on top of the cake can dry out where it peeks out from under the whipped cream; you can prevent it by leaving a 1-inch border bare when you spread the skyr on the top pancake, so the whipped cream will completely cover it. www.newscanada.com

With 26 teams, 128 walkers, and $19,550 raised, this event was put on to make a difference in the lives of people in our community in a positive way for a brighter future.

School Life BEAMSVILLE DISTRICT
SOUTH LINCOLN
The first semester of 2015/16 has been a very successful one for the students and staff of Beamsville District Secondary School (BDSS).
Shortly after semester 1 ended, South Lincoln administration and teachers reviewed the data from the report cards to determine which students might be under-performing. You might know with your own child that he or she “could do better” or “has the ability, but...”
SECONDARY SCHOOL
Academically, our students have been successful in their courses at rates in excess of 90% in all grades. More than 40% of our students made the Principal’s Honour Roll in the first semester, achieving overall averages over 80%. 60 of our students were able to achieve overall averages above 90% over the same time. We share a deep belief that all students can learn - shown not only in the above successes, but also in the growth of students in all of our classrooms. Students accessing our Specialized School to Community programs show this ability every day in developing their literacy, numeracy and communications skills; and applying those skills in a variety of settings. These great successes are testament to the talent and hard work of our students, and the incredible support provided by our staff. BDSS is a truly inspiring place to learn every day. Our students have access to an incredibly diverse group of courses – this includes our Specialist High Skills major program in Horticulture, and our Hospitality program which focuses on quantity cooking and event planning. Recently, our Horticulture and Culinary programs joined to celebrate our community partnerships and showcase the horticulture program at BDSS. Food was provided by our culinary program who made sandwiches and salads using the fresh vegetables and herbs grown in our greenhouses. Our Science classes are also collaborating with the Horticulture program by conducting soil analysis of biological and non-biological components to optimize grass growth on our football field. Many of our students are gaining valuable, work-related experiences that will serve them well when they each take their next steps after graduation. This past semester was an exciting one for the students of the BDSS Cooperative Education Department. Two students in particular, Tommy Danakas and Emmy North, experienced great success as they applied skills previously learned in classes at reallife industry settings.
HIGH SCHOOL
Our goal is to have students improve their achievement and we plan to do this by getting to know our students better. What are their interests? How do they learn best? Teachers will choose strategies to help all students perform at their full potential. Watch for reports of our successes (and failures - because failing at something is also a learning opportunity) in both your child’s early bird report (before March Break) and at Parent Teacher Conferences March 23rd, 5:00 7:00 pm. We have a student team of Pink Shirt ambassadors who attended a one-day workshop aimed at developing school-based activities around mental health. Our ambassadors have created a window display to bring awareness to anti-bullying and will follow up with a school assembly March 8. We are lucky to have Trevor the Bycrobat Bodogh present more along the line of anti-bullying through a student-initiated grant. Our School Council received a Parents Reaching Out Grant and were thrilled to have Terry Carson, The Parenting Coach, speak to more than 35 parents in our cafeteria on February 24th. Her tips on communicating with your teen to gain mutual respect were well received by all.
The second semester brings new opportunities for our students to demonstrate their talents and abilities. New courses, as well as new sports and activities will quickly lead us into graduation and the summer break. We will look to focus our work through a school-wide focus on four key traits over the course of the semester: Responsibility, Organization, Resiliency, and Time Management - in that order. Our staff and students will continue to learn - every day - and support each other through it all. We feel safer around here after five staff and all the Specialist High School Major students completed a First Aid/CPR course. This course is only one of the many certificates SHSM students complete in order to receive a red seal on their diploma upon graduation. We offer SHSM in four areas: Agriculture, Construction, Health and Wellness and Manufacturing.
GRIMSBY
SECONDARY SCHOOL Students at Grimsby Secondary School have been thinking about next year and making their course selections from the wide range of available choices. During their four years of secondary school students earn 30 credits, pass the literacy requirement and complete 40 hours of community service to graduate. Twelve of the credits are optional and students can choose based on their passions, skills and interests. These choices include visual arts, drama, music, law, history, travel and tourism, co-operative education, fitness, hockey, construction, design, TV arts, website design, manufacturing, biology, physics, chemistry, health care, social sciences, business, exercise science and more. For students interested in construction or the arts, there is the opportunity to specialize their study and graduate with additional credentials in either of these areas as part of the SHSM programme.
Each year, a group of students from grades 9-12 work together to form our IMPROV team in order to compete in the Games. The skills of teamwork, trust, communication, and mutual respect ultimately carry these young people far beyond the walls of the tournament and their high school lives. Improv teaches students to trust and believe in themselves and their team mates. It provides a forum for them to express their creative and intellectual talents with like-minded young people. Both the rehearsal process and the tournament itself have a lasting impact on the lives of these young people. At GSS, we are fortunate to have many community partners who support us in a variety of ways. One reciprocal partnership is with the Grimsby Benevolent Fund (GBF). Throughout the year, and especially at holiday time, students and staff bring in donations of food, clothing, gift cards, gift items and money to support the work of the GBF. At GSS, we offer a free breakfast programme for our students every day. Students and staff prepare and serve breakfast items each morning and make them available to anyone who would like something to eat. As our needs grow, so do the costs and this year, a generous donation from the GBF along with our funding from the Niagara Nutrition Partners is making sure that everyone is able to start their day in a healthy way.
Our students have also been thinking about the myriad of extra-curricular opportunities. Our IMPROV team has a proud history of participation in the Canadian Improv Games, both at the Regional and National level. We have been competing in the tournament since 2002, representing our region at Nationals in 2006, 2007, 2011, 2013, 2014, and 2015. Many GSS alumni now work for the Canadian Improv Games, both here in our own region and across the country. The expectations and tenets of our programme are extended through competitive improv, as improv is the base of all theatre work. In addition, our program’s specialized physical theatre skills are a highlight in our improv style along with storytelling, character work, sincere scene work, and more stylized genres such as clowning or gestural cartooning.
For the past two years, parents have been able to book interview appointments online and this spring they will also be able to access School Cash Online to approve permission slips, make payments for activities and trips and to receive important school updates via email.
