Romance was in the air at the annual Breakfast With Santa Fundraising Gala - C’est La Vie En Rose, which was held the evening of February 10th at the Mississauga Grand Banquet Hall. The Parisian inspired evening was filled with romance and a surprise proposal. Guests enjoyed shopping along a Paris inspired street then had a delicious dinner, entertainment and dancing.

It was a very busy afternoon at the Mississauga Senior’s Centre on February 9th as they held their annual Valentine’s Lunch. A delicious lunch was made and served by many volunteers. Everyone received a home-made heart pin when they arrived. After lunch, there was live entertainment and dancing.

WHAT DOES THE LOGO REPRESENT? The logo is composed of a series of diamonds, or “celebratory gems”, arranged in the shape of the iconic maple leaf. The four diamonds at the base represent the four original provinces that formed Confederation in 1867: Ontario, Quebec, New Brunswick and Nova Scotia. Additional diamonds extend out from the base to create nine more points—in total representing the 13 provinces and territories. The Canada 150 logo will become an evocative symbol and an enduring reminder of one of Canada’s proudest moments. The maple leaf motif is recognized at home and abroad as distinctively Canadian, and it fosters feelings of pride, unity and celebration. This unique and colourful design is simple enough to be drawn by children, and versatile enough to appear in color variations. The possible uses of the symbol are as unlimited as the spirit and imagination of the Canadian public.

Canadian students were invited to create the official Government of Canada’s logo for the 150th anniversary of Confederation in 2017 through a design contest that was held from December 5, 2014 until January 23, 2015. Ariana was chosen from a field of over 300 eligible entries. DELICIOUS DISH RECIPE
CHOCOLATE
BABKA BUNS
SERVING SIZE: Makes 12 NOTE: If I don’t have buttermilk, I mix the milk and lemon juice and let stand for 5 minutes, and voila... buttermilk!
This recipe is a hybrid of cinnamon rolls and a traditional chocolate babka. I love it because I use a “quick bread” method instead of using a traditional yeast dough making this a perfect weekday recipe!
INGREDIENTS • For the Dough • 3/4 cup cottage cheese (4% milk fat) • 1/3 cup buttermilk (or 1/3 cup milk and 1 tsp lemon juice) • 1/4 cup granulated sugar • 2 oz (4 tbsp) unsalted butter, melted • 1 tsp pure vanilla extract • 9 oz (2 cups) unbleached all-purpose flour; more for rolling • 1 tbsp baking powder • 1/2 tsp table salt • 1/4 tsp baking soda F O R T H E F I L L I NG
• 3 tbsp (45 grams) unsalted butter, at room temperature • 1/4 cup (50 grams) granulated sugar • 8 ounces (225 grams) semisweet chocolate • Pinch of salt
DIRECTIONS S TEP 01
Heat oven to 350˚F and generously grease a 12-muffin tin. S TEP 02
Mix the Egg Wash ingredients in a small bowl, set aside S TEP 03
Prepare Filling First: If your chocolate is in large bars, roughly chop it. Then, you can let a food processor do the rest of the work, pulsing the chopped chocolate with the salt, sugar until the chocolate is very finely chopped with some parts almost powdery. Add butter and pulse machine until it’s distributed throughout the chocolate. Set mixture aside. Wash and dry the processor well. S TEP 04
Make the Dough: In the food processor, combine the cottage cheese, buttermilk, sugar, melted butter, and vanilla. Process until smooth, about 10 seconds. Add the flour, baking powder, salt, and baking soda and pulse in short bursts just until the dough clumps together (don’t over process). The dough will be soft and moist. S TEP 05
Scrape the dough out onto a lightly floured surface and knead it with floured hands 4 or 5 times until smooth. With a rolling pin, roll the dough into a 12" x 15" rectangle. S TEP 06
Sprinkle the filling mixture over the the dough and pat gently into the surface.

Starting at a long edge, roll up the dough jelly-roll style. Pinch the seam to seal, and leave the ends open.

With a sharp serrated knife, gently saw the roll into 12 equal pieces (I like to cut in half first and cut each half in half again and cut 3 slices for every quarter). Place each piece, cut side up, in the prepared muffin tin. Brush with egg wash.

Bake until golden brown and firm to the touch, 20-25 minutes. Set the pan on a wire rack to cool for 5 minutes. Run a spatula around the inside of each muffin cup to loosen any sticky bits and then remove buns to a rack to finish cooling.

Not only did we thoroughly enjoy this new cuisine, my dish a “parrillada mixed” was absolutely delicious but we also discovered a new drink called Pisco. magine getting up at dawn to get ready for your 8:00 am class. You have a full schedule of Grade 12 courses in a variety of subject areas. Then, after school, imagine spending two hours in football practice, or weight-training, or study hall. Imagine that this schedule leads to achieving your athletic and academic dreams. This kind of determination and grit is paying off for Clarkson students Deionte Knight and Tyrell Richards. Each looks to make the most of an opportunity to pursue their studies, and play college football in the United States next year.

Thanks to a phenomenal new football program at Clarkson Secondary School, participants can strive for academic excellence while still pursuing athletic opportunities. Knight, having signed with Arizona Western, and Richards with Syracuse University, are part of the Football North success story. Their future is certainly promising. “It means the world,” said Richards. “It gives me opportunities to pursue my dreams.” When asked about coming to Clarkson, Richards added that “teachers were supportive, and the students were accepting of all these new faces.” Perhaps none of this would have been possible had Football North not chosen Clarkson as the place to run this program. Its partnership with Peel District School Board aims to present students with a unique opportunity to develop their passion for the sport, while still maintaining a traditional high school experience with high academic standards.
As the players need to maintain high marks to qualify for acceptance to Canadian and American colleges and universities, the Football North students are always challenged to be a complete athlete. Part of that player development happens off the field. Deionte Knight, when asked about this point, believes Clarkson Secondary School is instrumental to his personal growth.
Staff at Clarkson are well prepared to help the new crop of students adjust to their school. Teacher Chris Pedersen-Brown meets with the players after school for study hall so she can offer support with their course work. “Many of them already had a strong work ethic,” Pedersen-Brown said. “They had to because they started their training in August, and have been working hard ever since.” Teachers at Clarkson respect what the players are able to achieve, considering the intensity of the practice and game schedule. Pedersen-Brown is well aware of the determination these students have. “During their season they would have to go hours on the bus, with fifty other players and the coaching staff. They traveled to American schools in Ohio, Pennsylvania or Maryland to play and had to balance keeping us with course work while keeping an intense training and game schedule. And they still found time to work on all the assignments that every other student had to do.”
“The teachers are like your second mom and dad,” Deionte joked. “They really do look out for your best interests, making sure that you do well in school and giving you that extra push to succeed.” When asked about the mentorship he’s been receiving off the field and how it affects him throughout his life, Knight added, “it helped me develop as an athlete, but more importantly as a person. It allowed me to understand that football is more than just what's happening on the field. You have a team not only playing with you, but in your classroom and around the school as well, looking out for one another.” The opportunity to play against American high schools helps the players to develop the skills and mentality they will require to confront new challenges. Coaches believe Football North will soon be ranked among the top 100 high school football programs in North America. With values grounded in excellence both on and off the field, this is a realistic goal for Football North’s coaching staff.
Larry Jusdanis, the prep team's Head Coach, is impressed by the team's performance this past year. “The students did tremendously well, winning four games in their first year. That was unbelievable, especially since they were the first team to do so,” Jusdanis said. “Many schools are extremely impressed with the character and talent in our players.” Jusdanis added that, “they were able to integrate well with the academic aspect as well.” Coach Jusdanis believes planning early is essential to success in this competitive program. In particular, getting the students familiar with the academic challenges of high school, as well as the intensity of training, will allow the student-athletes to feel sufficiently prepared. Coach Jusdanis is anticipating another great season in the future. The successes of team and Tyrell Richards and Deionte Knight, have made the Clarkson Community and the Peel Board proud. Clarkson Secondary School looks forward to seeing more great stories come out of the Clarkson Football North partnership.

DECA Our DECA team did incredible at their meet in Toronto. 4 of our students came in the top ten of their categories and Arnav Garcha came in 3rd and will be advancing to the next level of competition in California. Congratulations to all members of DECA for their hard work and determination! DECA was not the only group out and about making PCSS’s present noticed. Mr. Gill took a number of students to the Digital Leadership Event. Ms. Vassel and Ms Kearns took a group of girls to a Nontraditional Careers’ for Women, the Young Womens Patheays and Leadership Conference was a amazing experience for the young women who attended.
SPORTS
From February 7th-8th, members of Canvas Arts came to PCSS to give a 2-day workshop on Healthy Sexuality. Students were given the opportunity to learn about gender, sexuality, and how to make Port Credit Secondary a safe environment for everyone.
Athletics has kept a number of our students busy. The swim team competed in the regional championship in February. Two students made the provincial finals and completed, in Windsor, the first of March. Congratulations to all members of the team for another amazing season! The volleyball and basketball seasons have concluded as well. The students represented the school well on and off the court. Try-outs are now underway for the spring sports season.

We are wishing our robotics teams good luck as teams 4659A, B, and E head to the VEX Robotics Provincial Championships in St. Catharines Ontario.
The school’s Robotics team has been busy preparing for local and provincial competitions. The ultimate goal is to move on to the international competition, in Kansas City, during the spring. DECA, once again, did amazingly well at the provincial championship. Several students will be going to California to participate in the worlds. The mentors, of both teams, are an major part of the teams’ successes. They are to be recognized for the time, effort and guidance provided to our students.
HEALTHY SEXUALITY WORKSHOP
GUEST SPEAKER We are very excited on February 22nd, to have Andrea Ziegler the president of Workopolis came to PCSS to speak to students about where the work world is headed and different pathways to consider when looking at post-secondary options.
SPORTS Playoff season has arrived for PCSS sport teams. Our junior girls volleyball team won their first playoff game, playing with great skill and teamwork. PCSS swim team went to ROPSAA and took home 15 medals! Great job to the entire swim team and good luck to all swimmers heading to OFSAA in Windsor. The varsity girls hockey team finished their regular season with a bang and is preparing for their first playoff game. Spring sports are coming! Soccer, badminton, and lacrosse teams have already begun and we are looking forward to the new sport season.

March is seeing a lot happening at Gradyon… in and out of the classroom. Students have adapted to their second semester timetables. Teachers are busy supporting students, any way possible, to ensure they are successful. That’s one of the amazing characteristics of Gradyon… it’s caring environment.

A number of other clubs and organizations continue to support our community, the province, Canada and the world through their charitable work and projects. At any given time, students are fundraising to build schools in Africa, provide funds to help Syrian refugees or assist in the development green industry initiatives. Graydon is certainly a place where the sharing is seen daily. This month students will be receiving their Progress Reports. Parents/guardians will have a chance to talk with their child’s teacher during our Parent/Teacher Night at the end of the month. In December of 2015, Paris hosted the United Nation’s Climate Change Conference or COP 21 in which, 196 representing countries or territorial parties, agreed upon an international commitment to reduce the effects of climate change. As a result, world wide education regarding strategies has increased in schools, communities and within governing parties.
The ritual of dimming lights is a nod towards validating climate change. The gathering of people together is a meaningful, peaceful demonstration of willingness to collectively safeguard the planet now, for future generations to enjoy. Besides all that, Earth Hour is actually fun! This year Earth Hour is on Saturday March 25th, 8:30 - 9:30 pm.
Earth Hour, created a decade ago, pays homage to this cause because it is a global, symbolic gesture to encourage people to power down for an hour, in order to show world wide support for environmental stewardship.
