MBOT HAZEL MCCALLION DAY Over 150 people came out to celebrate Hazel’s 97th birthday at Sheridan College, at the Hazel McCallion Campus, on February 14th. Mississauga Board of Trade hosts their Good Morning Mississauga Business Networking breakfasts monthly and February happens to fall on former Mayor Hazel McCallion’s birthday. Everyone enjoyed a delicious hot buffet breakfast, cake and signed a very large greeting card for Hazel to take home. There were twominute Business Profile Presentations and lots of networking opportunities. February 14th is now officially called Hazel McCallion Day.

I would love to surprise my husband with a fabulous homemade dinner made with one of his favourite meats bison. I am not too familiar with bison, leaning toward a ribeye and wondered if you have any suggestions on which wines might pair well and/or any ideas on how best to prepare and perhaps even source these meats? I live in a rural area so there’s not too much availability in my neck of the woods. - Jacqueline
THE WINE LADIES Q&A Dear Jacqueline, We too are fans of the various meat alternatives such as bison, becoming increasingly more popular in restaurants and more available in butcher shops. Bison (often used interchangeably with buffalo meat) is known to be leaner and less dense than beef and is widely accepted as one of the tastiest and healthiest all-natural alternatives to the traditional meats.
The reason the level of tannins are relevant when it comes to pairing red wines and meat is that tannins cut through the fat of the meat. If one is enjoying a fattier cut, such as a juicy fatty rib eye steak, opt for a big Napa Cabernet for example. As bison is a high protein, lower fat alternative, a better choice would be a red wine with softer tannins such as a Pinot Noir, Malbec, a softer Syrah or perhaps a Tuscan Sangiovese. As far as availability goes, upon a little investigative work, we learned of a company based in Montreal that markets highquality bison raised without the use of any chemicals, hormones or steroids. Norfolk Bison ships across Canada and offer a wide range of wild game products. There is also one recipe we would like to share with you called the “Double Bison Sirloin; Michael Jordan’s style” that includes a touch of truffle oil and would pair beautifully with a silky Pinot Noir.
When it comes to wine pairing, because bison has considerably less fat than beef, wines with less tannin will make for a better match. WHAT IS TANNIN? Tannins come from the skins, stems, and seeds of the grapes, as well as from the oak barrels the wine may have been aged in. That dry sensation you feel in your mouth when drinking a red wine is due to the tannin in the wine. The more tannic the wine, the more you will pucker up and feel the sensation.

A large crowd of well-wishers gathered upstairs at the Pump Erin Mills, to help Mayor Crombie celebrate her birthday, on February 7th. In lieu of presents, Bonnie asked for guests to donate to Heart House Hospice. Johnny Bozzo, from La Villa Bakery, brought out the delicious birthday cake and the incredible Patti Janetta-Baker lead the singing of Happy Birthday, then took to the stage and performed an unforgettable set. It was an amazing evening to honour our amazing Mayor.

Carl: the town’s hockey-hopeful from a wealthy family is predicted that he’ll be drafted to one of the major NHL teams but in order to do so he must graduate high school. Sonja agrees to tutor him because she needs the money, and so begins the story of Sonja & Carl: a novel. Carl is drafted to the Boston Bruins while Sonja attends University of Toronto. Within his first year on the team, Carl suffers a concussion that brings the two together again. Their journey is an unconventional, slow burn romance but a beautiful one nonetheless.

Geared towards young adult readers, I found that this novel appeals to a wider audience. Although the story follows the characters from age 17-20, they are faced with several mature situations. The book touches on issues of poverty, wealth, death, love, and heartbreak, to name a few. It delves into the world of professional hockey, sports related injuries, and the pressure to get back in the game.

’ve always appreciated a good storytelling, and in her first work, Canadian author Suzanne Hillier delivers just that with her debut novel Sonja & Carl: a novel.
The story revolves around Sonja Danychuk and Carl Helbig, two contrary high school students who are thrown together under unusual circumstances. In their small town of Davenport, Ontario, Sonja: an intelligent high school student from a very poor immigrant family, hopes to be

In the making of this novel, Hillier, a retired lawyer, researched concussions related to hockey injuries, and interviewed several families of injured players who suffered irreversible damage at the hands of the sport. Sonja & Carl: a novel takes you on a ride that is as heart-warming as it is wrenching, with unexpected emotion at several turns. Featuring dynamic characters with rich history, I would recommend this to lovers of well-written fiction.

QUICK EDITS ost photographs will benefit from some quick basic editing after the photo has been taken. If using a smartphone, editing can often be done on the phone itself. Computer-based editing software can also be used. First, make sure that the photo is straight/level, especially for horizons, poles and other vertical edges. On some smartphones, leveling occurs automatically when you begin to crop the image. In photo 1, the photographer was so excited to capture the sunrise that he overlooked the slanted horizon. This was corrected on the smartphone for photo 2. Second, check to see whether the photo needs more or less light/ exposure. Most smartphones will have a way of adjusting exposure on the image. Third, crop the photo to discard elements that are distracting or not needed. It’s completely understandable that in the heat of capturing the moment (3) extraneous things can be left in the photo. Editing helps (4).

ERINOAKKIDS
SKATE 100 On February 23rd, families and supporters gathered at Port Credit Arena to raise funds for ErinoakKids. Participants were treated to a delicious lunch and then began their 100 laps on the ice. Olympic athlete, Barbara Underhill, joined everyone on the rink to support this great event. ErinoakKids is Ontario’s largest treatment centre for children and youth with special needs and raised $65,000 from Skate 100.

School Life LORNE PARK
went to charity in hopes to raise money and awareness for Cancer research. There was an amazing turnout this year, with over five hundred dollars raised.
Lorne Park Secondary School has much to celebrate from the past year. We have continued to build on our great tradition of excellence in academics, athletics, arts and student leadership.
February was also Black History Month and the School is raising awareness by both acknowledging the wrongdoings of Canadians and showcasing the black heroes of this country. The school has taken great care in revealing all aspects of black history in Canada. To celebrate the breathtaking music of African culture, the school invited Steel Drummers to perform in the cafeteria at lunch. It was quite a success, sparking joy in the students.
SECONDARY SCHOOL
Our students continued to achieve incredible academic results in the first semester of this year with 544 students achieving honours, 178 students achieving an average above 90% and 45 students achieving an average above 95%. Our athletes continue to achieve great results with more than 150 students competing in OFSSAA championship events over the past year in a variety of sports including football, rugby, skiing, golf, cross-country and swimming. Our Arts programs continue to achieve excellence. Our instrumental music program is currently competing in the Golden Horseshoe Music festival where they achieved a silver medal in 2017. Our vocal music program is preparing for a four-evening production of the musical Grease, which opens April 25th. Our drama program has entered six plays into the Ontario Drama Festival, two of which have advanced to the district festival. Finally, our student leadership programs have grown to more than a dozen student leadership clubs. Recently, our Model United Nations Club won three delegate recognition awards at a competition in Toronto last month and are now preparing for the international competition in Vancouver this spring. We are all looking forward to everything that a new semester and the coming spring weather holds for our school and community and we are looking forward to sharing more stories of success in the coming months.
The Students of Streetsville Secondary School have counted down the days until the annual semi-formal. The excitement running through the hallways was palpable as the Snow Ball crept closer. Much to the joy of the students, the school’s gymnasium was transformed into a winter wonderland adorned with gorgeous decorations. It was equipped with a DJ, a photobooth and an abundance of delicious food.
STREETSVILLE
Over the course of many months, the Streetsville drama club has been working hard to perfect this year’s assortment of fantastic plays. Finally, the day of the Showcase arrived, and everyone was eager to see these stories come to life. It was amazing to watch with fascination as the students acted their hearts out, showcasing their unfathomable skill.
Though the bitter cold has been waging war against the spirits of the community, the students at Streetsville Secondary School have not let the gloomy weather stop them. Between the suspense of sports events and the thrill of another semi-formal, the students have been buzzing with enthusiasm.
February has carried with it an immense amount of excitement, which bodes well for the coming months. One can only guess at the amazing things to come at Streetsville Secondary School.
HIGH SCHOOL
The SSS community began this fun-filled month with a thrilling sports event. As they do every year, Streetsville Secondary School hosted a Cops for Cancer basketball game, where students battled it out against the police in an epic match of skill and athleticism. Tensions were high as the Streetsville students tried to beat the police. Unfortunately, the police kept up their reputation, winning out against Streetsville Secondary’s team of athletes. All proceeds

While raising awareness for Black History is very important to the school, wellness is another topic that the school community has focused on. Each day for Wellness Week, the school has brought in therapy dogs. This has been very popular with the students; many enjoyed petting the adorable fluffballs. Many fun activities have also been hosted for Wellness Week, including colouring and a fun balloon game.

COMEDY FESTIVAL The Annual Port Credit Comedy Festival celebrated it 6th year of amazing stand-up comedy, from February 15th until the 18th. Clarke Hall was the perfect setting to sit back and laugh all night long.
