All day on Tuesday, January 24th, EGO Salon was open for all to wander in and see their new salon and meet the owners and stylists. Mayor Bonnie Crombie was treated to a hair and makeup session just before the official ribbon cutting on the front step. It was a party atmosphere celebrating the grand opening as DJ Adverb kept everyone dancing. EGO Salon is a full service salon for both men and women.

It was a hot Saturday evening on January 23rd, as the ORC hosted their first ever Bollywood Night presented by Sundeep. It started with a delicious Indian Buffet Dinner, followed by a lively performance by Bollywood Dance Troupe TAPASYA. Many of the guests came in traditional Indian attire. The dance floor was full as guests learned some dance steps. A fabulous evening was had by all.

Bouillabaisse is a traditional Provençal fish stew originating from the port city of Marseille. Use several different fresh fish and seafood varieties. My favourites are a combination of fish and shellfish. Don’t forget to serve a good hunk of crusty bread along side!

Heat the olive oil in a large pot over med heat. Add the onion, sauté until just beginning to caramelize, about 10 minutes. Add the garlic, cook for 1 minute. Add the anchovies, cook for 30 seconds or so. Add the carrots, peppers and jalapeno pepper, cook for a few minutes. Add the zucchini and mushrooms, cook until beginning to brown, about 5 minutes. Add the bay leaf, red pepper flakes, orange peel, fennel and thyme, stir.
2 tbsp olive oil 2 yellow onions, chopped into small dice 2 cloves garlic, minced 4 anchovies, finely chopped or 1 tsp (5 ml) anchovy paste 3 medium carrots, peeled and diced small 1 yellow pepper, diced small 1 red pepper, diced small 1 jalapeno pepper, finely chopped 1 small zucchini, diced small 4 medium white mushrooms, diced small 1 bay leaf 1/2 tsp red pepper flakes 3 strips of orange peel (use a veg peeler) 1/2 tsp fennel seeds 1/2 tsp dried thyme 1 (14 oz/398 mL) can tomatoes, chopped finely 1 675-750 mL bottle of strained tomatoes 3 medium potatoes, peeled and cut into half-inch cubes or 12 baby potatoes, halved or quartered • 1 1/3 cups (325 mL) dry white wine • 1/2 cup chopped parsley • Salt and pepper to taste

Add both types of tomatoes, bring to a boil, turn the heat to low. Add the potatoes, cover and cook for 15 minutes. STE P 03
Add 4 cups (1000 mL) water and the wine, bring to a boil, reduce heat and simmer UNCOVERED for another 20-30 minutes or until the potatoes are tender. Remove the bay leaf and orange peel. At this point the soup base can be frozen. Defrost and bring back to a boil before continuing with step 4. STE P 04
Let the fish and seafood sit at room temperature for 30-45 minutes before adding to the hot soup. Season the fish and seafood well with onion-salt, pepper and olive oil, add to the pot along with the parsley and cook for 8-10 minutes or until the fish pieces flake. Do not overcook or stir too roughly. STE P 05
Season with salt and pepper and serve with a good hunk of crusty bread.

PCHA held its annual Michael Newnham Memorial Coaches Hockey Game at Port Credit Arena on Saturday, January 21st. TSN’s Duane Ford was the Master of Ceremonies. Mark Newnham presented Joey Houghton and Sebastian Witkowski with the Michael Newnham Leadership Award as well as the Memorial Scholarships to Matthew Franks. The arena was filled to the rafters with spectators who enjoyed the coaches game, a puck toss and silent auction.

FORGET-ME-NOT GALA On Friday, January 20th, the Alzheimer Society of Peel held their Annual Forget Me Not Gala fundraiser. This year’s theme - Bond. James Bond. The evening began with a cocktail reception where martinis were SHAKEN. NOT STIRRED. The men were all in tuxes or their favourite Bond characters. The women in beautiful evening gowns. After mingling in the foyer sampling delicious hors d’oeuvres, guests moved into the beautifully decorated grand ballroom where a delicious four course meal was served as well as live music, an auction and various entertainment. A magical night to remember.

The 10th Annual Paint The Town Red Pool Tournament was once again hosted by The Crooked Cue on Sunday, January 15th. It was a lively, fun-filled afternoon with many friends and supporters raising money for this year’s two day event. Newcomers Car Pride Auto Spa took home the coveted first place trophy. Spice Lounge and Tapas finished second, while The Brogue grabbed third place. Next upcoming fundraising event ‘Ladies in Red, Men in Black’ and ‘Spring Fling’ will be announced soon.

On Wednesday, January 25th, Walden Circle celebrated Robbie Burn’s Day with some traditional rituals of whisky, haggis and poetry readings. During the presentation of the Haggis, Musician Joesph recited a poem then sang some traditional Scottish songs. Some residents came in their Kilts. The brave ones tasted the Haggis. After dinner, Jack Ross gave a presentation about Robert Burns who was a widely regarded Scottish poet and lyricist.

Dear The Wine Ladies, My husband and I regularly enjoy a glass or two of wine with our meals with our favourites usually coming from either Australia or California. We never really got into French wines but just recently attended a tasting featuring a couple of wines from Bordeaux and absolutely loved them!

There was one in particular that we both really enjoyed and was within our budget. The name of the wine was Château Larose Trintaudon, Cru Bourgeois. We purchased a couple of bottles to bring to an up coming dinner party and would like to know a little more about this wine including what Cru Bourgeois means? Perhaps a few words on the region of Bordeaux as well. - Elizabeth
THE WINE LADIES Q&A Dear Elizabeth,
Welcome to the world of French wines and to one of the most famous wine regions in the world, considered by many to be the greatest region for producing fine wines. Still till today the wines of Bordeaux are also seen as “benchmark” wines for Cabernet Sauvignon and Merlot wines being made around the globe. Here is a little basic information on the region to start. Bordeaux is located in the southwest of France and is actually a very large wine growing region, which produces over 900 million bottles annually. The Gironde River basically divides the region, with the chateaux on the left side referred to as the “Left Bank” producing wines predominantly with the grape Cabernet Sauvignon, and those on the right, or Right Bank with a focus on Merlot. The Château Larose Trintaudon you enjoyed comes from the Left Bank. Bordeaux produces both white and red wines with the majority being red (90%). Unlike the new world wine regions that state the grape, whether a Pinot Noir, Shiraz, Cabernet etc… on the label, the wines of Bordeaux do not. Bordeaux wines are typically blends which for the red can include any or all of the following; Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec, used much less today than in the past. One of the pivotal times in the history of Bordeaux and her wines was the famous 1855 Classification of the wines, a ranking system initiated by Emperor Napoleon the 3rd which still influences today’s market. Of course there are so many incredible Bordeaux wines to explore and enjoy, wines of suburb quality and at great value including the one you mentioned that we too were very impressed with, Château Larose Trintaudon. The origins of this domain go as far back as 1719

but it was in 1817 that the vineyard was first planted on a gravelly hillside with a terroir that proved to be exceptional for the Bordeaux varietals. Today Château Larose Trintaudon is one of the largest vineyards in the Medoc both in size and production and is recognized in the world over as a top quality Cru Bourgeois. The Château was also one of the very first to earn this recognition to be classed as a Cru Bourgeois in 1932 of which the company is very proud. Château Larose Trintaudon also owners of Château Larose Perganson and Arnaud are one of the pioneers in Bordeaux in terms of practicing sustainability and have been credited with the highest evaluation in sustainability and earned the label “Responsible Vineyard” as one of the leaders in France.

DID YOU KNOW Clarkson was named after Warren Clarkson, a United Empire Loyalist who, arrived here in 1808 from Albany New York. The Clarkson family operated the general store and post office for many years and their old homestead, built in 1819, still stands on Clarkson Road. Today, people can experience a glimpse of different periods in Clarkson‘s history by visiting the Bradley House, c.1830, The Anchorage, c.1839, or Benares, c.1857, all historic properties operated by Museums of Mississauga.
VILLAGE MERCHANTS Clarkson Village is a mix of businesses in operation for many years as well as newly opened ventures, but one thing they have in common is excellent old fashioned customer service. The oldest structure in the village built around 1827 now houses The Barn Antiques. Originally a vegetable and fruit market, The Barn changed to an antique store in 1918. In 1959, Michael’s Hair Body & Mind opened its doors to provide the community of Clarkson with exemplary hair and beauty services. Over the years, Michael’s has expanded to include a full service day and med spa and traditional Chinese medical centre. GORDON GRAYDON MEMORIAL
SECONDARY SCHOOL February is, once again, active at Graydon. The start of second semester has students assimilating to their new courses and teachers. Sports are back in full swing, with practices and games occurring. The winter season, in athletics, is winding down with the spring season just around the corner. The school’s DECA Team participated in provincials the second week this month. Many students obtained personal bests and are moving on to the international competition. This year, students will travel to Anaheim California the last week in April. Each year, Graydon students demonstrate maturity, intellect, respect and dedication during the event. Robotics will be competing in local, provincial and international competitions starting this month - and extending until the end of the school year. The team has over 80 student participants. There are also a number of parent/community volunteers who mentor Graydon students. We are very thankful to all those, who give of their time, to support our students and program. Our Regional Program offers, in IBT and GDM, were sent out to students at the start of the month. We are excited and eager to welcome our new grade 9’s this coming September. They are in for a great experience both in and out of the classroom. Those accepted to the program are welcome to drop by the school, with their parents/guardians, anytime to take a tour and see what Graydon will be offering them in the fall. On January 24th, at the Board of Trustees meeting, the recommendations of the Final Report of the Pupil Accommodation Review was approved. As such, Gordon Graydon Memorial Secondary School will be closing its doors in June, 2018. The school’s International Business and Technology and Graphic/Design Management programs will be moving to T.L. Kennedy Secondary School for September, 2018. The Vocational One, Two and Autistic Spectrum Disorder programs will be moving to Glenforest Secondary School at the same time. The school will be supporting all members, of the school community, in the transitioning (of these two programs) to their new secondary sites. If at any time, there are questions about the transitioning, please contact a member of the administrative team. They are happy to be as supportive as possible and ease the anxiety and stress that may be associated with the change of program locations.

PORT CREDIT
SECONDARY SCHOOL PCSS students came back to school after Christmas Break with lots to look forward to. Our robotics team had their first competition after the break and team 4659-C was able to make it all the way to the quarter finals, on top of that teams 4659-A and B both hold spots in provincials taking place in March. Awesome job! Our athletes have continued to strive in their sports. Our boys’ hockey team has maintained their lead in the South division with 7 games won, our junior girls volleyball team also in the lead with a 5-game winning streak. PCSS junior boys’ basketball, varsity hockey, and senior volleyball team are all demonstrating PCSS spirit and playing hard. Keep it up! This month, the members of our boys’ club had the opportunity to talk to CBC about showing support and bringing awareness to boys’ issues, the interview will be aired on February 6th. With exams coming up PCSS staff members have been working extra hard to help students prepare. The incredible library staff has been putting daily study tips up on the PCSS library twitter account and catch up club remains open for students who want to study with the help of a teacher.
AN N MAR IE WAR MEN H OVEN On Tuesday, January 17th, Port Credit Secondary School was honoured by a visit from Ann Marie Warmenhoven, a U.S. Foreign Service Officer and is currently a Consular Officer at the U.S. Consulate in Toronto, Canada. Ms. Warmenhoven spoke to Grade 11 and 12 Social Science classes about her diplomatic experiences in a variety of postings, including to N’Djamena, Chad on a four-year posting. She took questions from the students at the end of her presentation which she described as detailed and challenging in their scope..

SECONDARY SCHOOL TA K I NG I T E A SY O N O U RS E LV E S By: Vyjayanthi Janakiraman From the packed library, to the hallways buzzing with conversations about exams set to start, it is undoubtedly the busiest time of year for Clarkson students. As students prepare culminating products and then write exams, the stress of it all can get pretty overwhelming, especially when university acceptance hinges on some key final marks. But thanks to a group of motivated Clarkson students, they’re make a difference by providing staff and students in the school with activities that promote wellness to help manage their stressful weeks ahead. Project Unity, a group created by Grade 9 Clarkson students, aims to promote healthy practices by allowing students to get involved with fun and stress relieving activities.
“All workshops were free for students to encourage them to make healthy choices,” said Ms. Wong, the lead advisor for this initiative. She added, “it is important to support physical, and emotional well-being. We are proud of these students’ efforts in their attempt and desire to make a difference.” Thanks to the hard work of Project Unity, the weight of the last few weeks of the semester seemed a little lighter, making fellow Chargers proud of their school.

As the first semester came to an end, Project Unity planned an exciting week that promoted eating healthy foods and spending time with furry friends. The dog therapy workshops, provided by St. John’s Ambulance, allowed many in the school to relax, yet others found comfort in art therapy or even Zumba classes. Project Unity’s efforts to promote healthy living during the busiest and perhaps most stressful time of the year for students and staff were greatly appreciated.
