Don’t settle for everyday marinara when saucing your next pizza. Here, we’ve topped a gluten-free cauliflower crust with a fiery curry sauce and tandoorispiced chicken for an Indian-inspired pie.

Chicken

Tikka Masala Pizza

Prep Time: 10 mins ı Cook Time: 30 mins ı Serves: 6

Ingredients • 1 pkg (300 g) PC cauliflower pizza crust • 2 boneless skinless chicken thighs • 1 tsp (5 mL) tandoori spice blend • 2 tsp (10 mL) olive oil • 1 cup (250 mL) lightly packed baby spinach • 1/3 cup (83 mL) tikka masala cooking sauce • 1/4 cup (60 mL) thinly sliced red onion • 1 cup (250 mL) shredded mozzarella cheese

Directions STEP 1. Preheat oven to 450°F (230°C). Place crust, bottom (flat) side up, on wire rack set over baking sheet. Bake, flipping crust halfway through, until edges are golden, 20 to 24 minutes.

Chef's Tip Baking the crust on a rack allows for maximum air circulation while also supporting the weight of the toppings – and avoiding any messy spills in the oven.

STEP 2. Meanwhile, sprinkle chicken with tandoori spice. Heat oil in non-stick skillet over medium heat. Cook chicken, turning once, until golden and no longer pink inside; about 8 minutes. Transfer to cutting board; let cool enough to handle. Thinly slice into bite-size pieces. STEP 3. Wipe skillet clean; heat over medium heat. Cook spinach, stirring, until wilted and liquid has evaporated; about 2 minutes. Remove from heat. STEP 4. Spread sauce onto crust, leaving 1/2 inch (1 cm) edge uncovered. Arrange chicken, spinach, onion and cheese over top in even layers. Bake until bubbling and browned; 7 to 8 minutes. Let stand 2 minutes.

Bringing

Nature Home Article and Photography by Bruce Mackenzie

Enjoy a kaleidoscope of colour or cut the grass? It’s a choice for every homeowner and in Grimsby, many are choosing to bring nature home by bringing the sounds and sights of the country back to their yards.

NEIGHBOURHOODMAGA ZINE .CA

In this day and age, it is so important to consider opportunities to integrate nature into our urban environment. Our tree canopy, native species and our desire to be with nature have become an afterthought in most development patterns for the past 50 years. Thankfully, we here in Grimsby can do something about it. In speaking with the town’s homeowners, there is a desire to be part of the solution. They love the idea of being surrounded by a green living oasis and they want to expand the escarpment environment to their neighbourhoods, even if it means one yard at a time.

It is only natural for residents of Grimsby to want to surround themselves with plants. The Town’s motto in Latin, "Floreat Grimsby in Medio Horti" means

"May Grimsby FLOURISH in the middle of a garden" and "Friendly by Nature" is the town’s popular marketing slogan.

There are many sound environmental reasons for growing native trees, shrubs and plants on your property. Converting your lawn to a natural area helps the soil absorb rainwater. Birds and other wildlife will benefit tremendously from the creation of new habitats including a selection of nesting, feeding and sheltering sites. Finding ourselves in the Carolinian Forest Zone of Canada provides us with so many tree species to choose from - more than anywhere else in Canada. With over 10,000 homes in Grimsby, just think of the impact to the look of the town if every homeowner planted just one native tree. The benefits would be many, not to mention the addition of more shade which is so important in a world that is getting hotter every year. Shade helps to cool your home and driveway, offers friendly sitting areas, and safer play areas.

There are no rules or norms when it comes to bringing nature back to your property. Plant a Milkweed and Monarch Butterflies will come to say hello. Plant an Oak tree and the entire neighbourhood will thank you. With so many varieties of plants and trees, there are endless ways you can use the different textures, shapes and colours to become an environmental artist with your yard as your canvas.

Each of us has a real chance of bringing nature home and the rewards are endless. Do your part today by adding a shrub, a bush and a native tree and bring back the birdsong, butterflies and bees. Not only will your community benefit, but you will too.

C O V I D -1 9 FUNDR A ISING C A M PA IGN BY STACY ELIA, EXECUTIVE DIRECTOR, GBF COMMUNITY SERVICES & THOMAS E. BEACH, CHAIR- GBF MENTAL HEALTH PROGRAM

The GBF Community Services continues to meet the needs of local residents in difficult times residing in Grimsby. Every day we hear and receive an alarming amount of conversations and inquiries about how clients and community members are coping with Covid-19. Responding to the Pandemic creates a range of challenges for families and individuals locally. We encourage and realize the importance of respect for the many efforts needed to address Covid19 including things like physical distancing and working from home, howerver, all of these changes does strain peoples well-being. There are many new elements that are being introduced that individuals are finding it difficult to manage. It is not just those with a history of mental health challenges who are having a tough time. Many of us are asked to do a lot of things that are not common for day to day functioning.

GBF Has always worked extremely hard and passionately to advocate and support those who reach out for help. In 2019 GBF invested $42,000 into local Mental Health initiatives and an additional $86,900 to local community partners providing additional Social Services. Today, we are asking our community to consider a financial donation to our Covid-19 Mental Health Campaign to help assist local children, adults and seniors to stay healthy while trying to protect themselves during this pandemic. It is our goal to raise $100,000 for this initiative. We are hopeful to reach our goal so we can continue multiple initiatives currently in play to meet the mental health needs of our community. Right now, it is important for those with mental health conditions and those at risk, to have access to the local support they need. Tom and I have both personally made our financial contributions to kick off our campaign; please join us with your support. This is a fabulous opportunity to raise funds, have fun in a difficult time and honour those we love most. GBF is proud to continue to support Mental Health wellness in our community. Together, we can make a difference.
