THE MAGIC OF GRIMSBY’S

Celebration of LIGHTS Provided by the Town of Grimsby

This holiday season marks the 26th year that Cindy and Uby Paul of 85 Debora Dr. in Grimsby, have had a beautiful light display in memory of their daughter Christina, who tragically passed away in 1993. Many residents have made it a tradition to pass by the house each year to see Christina’s lights. However, Cindy and Uby are planning to downsize so this year will be the last.

In recognition of their dedication to bringing joy to Grimsby residents through their display, Mayor Jeff Jordan presented a Civic Recognition Award to the Paul’s in front of members of Council and Town staff. Thank you, Cindy, and Uby for all that you’ve done. Congratulations to the 2019 Celebration of Lights contest winners. NeighbourhoodMagazine.ca

Guilt-Free Pizza with a

FIERY KICK Don’t settle for everyday marinara when saucing your next pizza. Here, we’ve topped a gluten-free cauliflower crust with a fiery curry sauce and tandoori-spiced chicken for an Indian-inspired pie.

Ingredients • 1 pkg (300 g) PC cauliflower pizza crust

Chef's Tip Baking the crust on a rack allows for maximum air circulation while also supporting the weight of the toppings – and avoiding any messy spills in the oven.

• 2 boneless skinless chicken thighs • 1 tsp (5 mL) tandoori spice blend • 2 tsp (10 mL) olive oil • 1 cup (250 mL) lightly packed baby spinach • 1/3 cup (83 mL) tikka masala cooking sauce • 1/4 cup (60 mL) thinly sliced red onion • 1 cup (250 mL) shredded mozzarella cheese

Chicken

Tikka Masala PIZZA Prep Time: 10 minutes Cook Time: 30 minutes Serves: 6

Directions STEP 1. Preheat oven to 450°F (230°C). Place crust, bottom (flat) side up, on wire rack set over baking sheet. Bake, flipping crust halfway through, until edges are golden, 20 to 24 minutes. STEP 2. Meanwhile, sprinkle chicken with tandoori spice. Heat oil in non-stick skillet over medium heat. Cook chicken, turning once, until golden and no longer pink inside; about 8 minutes. Transfer to cutting board; let cool enough to handle. Thinly slice into bitesize pieces. STEP 3. Wipe skillet clean; heat over medium heat. Cook spinach, stirring, until wilted and liquid has evaporated; about 2 minutes. Remove from heat. STEP 4. Spread sauce onto crust, leaving 1/2 inch (1 cm) edge uncovered. Arrange chicken, spinach, onion and cheese over top in even layers. Bake until bubbling and browned; 7 to 8 minutes. Let stand 2 minutes.

Grimsby AUTHOR SERIES Photography By Teanne Teeft

The Grimsby Author Series has hosted a great amount of talented writers over the years and this night was no exception. The first author of the night was Marissa Stapley, who gave the audience a peek into her process. She unapologetically claimed, “I am really good at titles,” because in order for her to get her novels moving, the title needs to fully encompass the story. Her statement tests true in The Last Resort, a story about a rigorous couples’ therapy retreat that takes place in the luxurious Harmony Resort in the Mayan Riviera. The second author of the night was Linden MacIntyre. Ninety years ago, Newfoundland’s Burin Peninsula faced a massive tsunami. This story, scarcely heard of throughout Canadian History, is Linden MacIntyre’s tale to tell. At the age of 101, his mother helped him to fill in the details on his newest work The Wake. How? She was there. For more information, please visit the Grimsby Library - www.grimsby.ca/library.

62nd Annual Grimsby

Santa Claus By Susan Gibbins

NeighbourhoodMagazine.ca

One of the longest running events in Grimsby, the 62nd Annual Santa Claus Parade was held on Saturday, December 7th with this year’s theme being ‘Hometown Christmas’.

The streets were lined with kids young and old with their chairs, blankets and hot beverages doing their best to keep warm while watching all of the amazing floats, marching bands and the man they all came to see, Santa! It was the perfect way to kickoff the holiday celebrations.

Did you know ?

The parade was once a morning event, but in the year 2000 the parade was moved to an evening event to celebrate the millennium. It was such a success that it has remained an evening event ever since. Each year the parade consists of approximately 90 entries which includes community floats, walking groups, marching bands and various entertainment.
