Make Ahead Tip I LOVE Chicken Schnitzel, it’s one of my favourite guilty indulgences. No guilt with this one. It is baked, full of good nutrients, loaded with flavour and is a sure winner each time! Quinoa flakes replace the traditional breadcrumbs and can be found in any whole foods store. Make it with the Chopped Tomato Garlic Bruschetta Mixture or not! Either way, you will love it! Serves 4-6
Ingredients 1 1/2 lb Chicken Scaloppini 1/2 cup Flour of any sort 2 Eggs, beaten Oil spray QUINOA COATING 1 1/2 cup Quinoa Flakes or Breadcrumbs 1 1/2 tsp Garlic Powder 1/2 tsp Sea Salt 1/4 - 1/2 tsp Pepper 1 tsp Paprika 2 tsp Lemon Zest 2 tbsp Fresh Parsley 2 tbsp Sesame Seeds, white or black or a mix CHOPPED TOMATO GARLIC BRUSCHETTA MIXTURE (OPTIONAL) 3-4 Ripe Tomatoes, remove seeds and chop 1/4 inch dice Kosher salt 1 clove Garlic, chopped finely 1/2 tsp Dried Oregano 1 Green Onion, white and light green part, chopped fine 5-6 leaves Basil, chopped finely
The chicken can be floured, egged and coated, placed on a sheet of wax paper and either stored for the day in the refrigerator or frozen uncovered as is. Once frozen, the chicken pieces can be stored in a zip-lock bag. Allow the chicken to defrost uncovered in the refrigerator for a few hours or overnight before brushing with oil and broiling.
Directions STEP 1. Preheat oven to Broil. Arrange the rack to second from the top position. Line cookie sheet with foil and spray with the coconut oil spray. STEP 2. Mix together in a medium size bowl Quinoa Coating ingredients, place in shallow dish. Place egg in another shallow dish, place flour in a third shallow dish. Arrange dishes so that flour is first, then egg, then coating. STEP 3. Dip each pice of chicken in flour, shake off excess. Dip in egg, then coat in Quinoa Coating mixture. Lay coated chicken piece on oiled cookie sheet. Repeat with all the chicken. STEP 4. Lightly spray each piece of chicken with oil). STEP 5. Broil for 3-5 minutes, flip pieces over, broil for 3-5 more minutes. STEP 6. Serve with Tomato Garlic Bruschetta mixture. STEP 7. To make the Tomato Garlic Bruschetta mixture: Season the tomatoes with salt and put them in a colander to drain for 5-10 minutes (or longer). Transfer tomatoes to a bowl and fold in remaining ingredients, season with salt and freshly ground pepper.

Housing Support Program Stacy Elia
ADDRESSING THE NEED FOR AFFORDABLE HOUSING SUPPORTS IN NIAGARA - ONE CLIENT AT A TIME.
An affordable home is a foundation of opportunity, but it is out of reach for far too many. Affordable housing should be a basic right for everybody in our community. The reason is simple, without stable shelter, everything else falls apart. I am excited for the opportunity to lead the GBF Housing campaign, and I look forward to working with our community partners to ensure that low-income households have access to affordable housing in Grimsby. Where everyone has equitable opportunities to thrive. For each of us, our home is a foundation for our wellbeing. It is a place where we
spend many hours, where our loved ones are, an anchor in our local community, the place where we recharge. Housing that is too costly leads people to spend less on food and nutrition and recreation, worries about rent or eviction can lead to high stress within the household. The GBF Community Services Rent Supplement program and Emergency Housing program offers eligible applicants support for their housing needs. A rent supplement is a subsidy provided to clients to bridge the gap between the market rent for the unit and the amount the tenant can pay based on their income. Emergency Housing support is a one- time payment towards the client’s rental costs per calendar year. GBF Community Services has been providing rent supplements for qualified households to help retain their home in Grimsby. 70+ households have benefitted from this type of support. This is an average monthly total investment of $20,000+. A total of $812,568 has been invested in Housing support through the Rent Supplement program and Emergency services since 2016. The GBF is committed to investing an additional $315,000 in Housing support for the 2020 calendar year.
For GBF Community Services, affordable, stable housing is a key component in creating a town where all residents are part of a thriving, livable community for themselves and future needs. Positive outcomes can be achieved for households regarding their mental health through relieving the excessive rent burdens that are largely responsible for stress. Rent supplements can also mitigate the realization of fears tied to not being able to meet housing costs by bringing needed security preventing negatively induced moves out of our community. In our last fiscal year, we worked hard to meet the needs of our community. These impacts would not happen without the support of generous and compassionate community partners. GBF Community Services is committed to best practices and operational effectiveness. We have a strong reputation, built over 55 years of service. We have strong leadership and a reputation for getting things done locally. When we work together, GREAT THINGS HAPPEN!
