Tis the season to be jolly. The North Coal Christmas Market was five fun-filled days and nights in Burlington’s Village Square beginning with the Tree Lighting Ceremony on December 4th and an appearance by Ward Two Council Member, Lisa Kearns. Each day was filled with things to see and do. Santa paid a visit from the North Pole to take photos and the talented Jenn Lyons, was one of many musicians who belted out the classics mixed with a few holiday favourites. The outdoor heaters and Rayhoon’s fire pit were popular gathering places to eat, drink and get toasted. Drinks like mulled cider, mulled wine, spiked coffee and a whole host of craft beers were the drinks of choice throughout the market. Speaking of food, there were many vendors dishing out delicious treats including ‘Two Free Birds Catering’ who warmed up the crowds with hot soup and ‘The North Coal Kitchen’ who served up some traditional festive foods from around the world. What an amazing way to celebrate the holidays by being with friends and loved ones in what is undoubtedly the most wonderful time of year.

What a way to ring in the New Year! On January 1st, hundreds of brave souls took the plunge into the icy cold waters of Lake Ontario to raise funds for clean water in developing countries through World Vision Canada. A 35 year tradition, the annual Courage Polar Bear Dip was held at a new location, Bronte Beach Park in Oakville, due to unsafe conditions at Coronation Park. Organized by brothers Trent and Todd Courage, there was live music from singer/guitarist Mike Waling, and the ever popular Crazy Costume contest which saw a Raptor, Vikings, Irishmen and even Elvis made an appearance.

The Botanical Train, located inside the RBG Centre, is a model train built using seven tons of cedar strips, 3,000 pounds of rock and 250 feet of track. Miniature Canadian landmarks from coast to coast are featured throughout. RBG’s newest “G scale” model train, the Escarpment Train, takes you on a journey through four seasons of whimsical Canadian landscapes while telling the story of how railroads shaped our history. The Escarpment Train Exhibit illustrates three eras of locomotion history including the steam engines of the late 1800s, the streamliners of the 1930s and the powerful modern diesels of the 1960s up to present day.

This year, I attended many events in support of the amazing organizations in Burlington and Halton that help the women in our community who are facing challenges in their lives. Their experiences range from homelessness and poverty, to physical and emotional abuse, to difficulties finding gainful employment and even just having a hard time putting food on the table. We lost a beloved local resident and public servant this year due to alleged domestic violence.
across Canada. For women who have been displaced from their homes and estranged from their families, special occasions can be particularly challenging. Often, women report feeling disconnected from society, invisible and alone. A shoebox gift is a powerful reminder for a woman that she has not been forgotten and that she remains a valued and respected member of her community. I invited our generous Burlington community and staff at City Hall to join me in supporting this wonderful organization. In three weeks, we saw a total of 90 shoeboxes appear under the Christmas tree in my office. Those were then delivered to The Shoebox Project Halton Chapter on Dec. 4 — to be given to local women in our community.

That was why this holiday season, I wanted to support The Shoebox Project for Women, a registered charity that collects and distributes giftfilled shoeboxes to women impacted by homelessness in communities

Victorian Christmas AT B R O N T E C R E E K By Leslie Styles
From late December until January 5th, Friends of Bronte Creek Provincial Park invited the public to take a step back in time to the year 1900 and experience a Victorian Christmas. Henry Breckon’s Spruce Lane farmhouse, built in 1899, was elegantly decked out with wonderful decorations including boughs of pine and sliced oranges. Staff were clad in 1890s garments while creating gingerbread ornaments and cranberry-popcorn garlands. In a nearby barn, traditional games and activities were available including a giant checkers game. Hot chocolate, apple cider and other treats were offered for sale, as well as maple syrup and jams. A few farm animals huddled together outdoors while a huge turkey gobbled, beckoning visitors to check out the chicken coop. The whole experience made for an enjoyable learning experience for young and old.

Guilt-Free Pizza with a
FIERY KICK Don’t settle for everyday marinara when saucing your next pizza. Here, we’ve topped a gluten-free cauliflower crust with a fiery curry sauce and tandoori-spiced chicken for an Indian-inspired pie.
Ingredients • 1 pkg (300 g) PC cauliflower pizza crust
Chef's Tip Baking the crust on a rack allows for maximum air circulation while also supporting the weight of the toppings – and avoiding any messy spills in the oven.
• 2 boneless skinless chicken thighs • 1 tsp (5 mL) tandoori spice blend • 2 tsp (10 mL) olive oil • 1 cup (250 mL) lightly packed baby spinach • 1/3 cup (83 mL) tikka masala cooking sauce • 1/4 cup (60 mL) thinly sliced red onion • 1 cup (250 mL) shredded mozzarella cheese

Tikka Masala PIZZA Prep Time: 10 minutes Cook Time: 30 minutes Serves: 6
Directions STEP 1. Preheat oven to 450°F (230°C). Place crust, bottom (flat) side up, on wire rack set over baking sheet. Bake, flipping crust halfway through, until edges are golden, 20 to 24 minutes. STEP 2. Meanwhile, sprinkle chicken with tandoori spice. Heat oil in non-stick skillet over medium heat. Cook chicken, turning once, until golden and no longer pink inside; about 8 minutes. Transfer to cutting board; let cool enough to handle. Thinly slice into bitesize pieces. STEP 3. Wipe skillet clean; heat over medium heat. Cook spinach, stirring, until wilted and liquid has evaporated; about 2 minutes. Remove from heat. STEP 4. Spread sauce onto crust, leaving 1/2 inch (1 cm) edge uncovered. Arrange chicken, spinach, onion and cheese over top in even layers. Bake until bubbling and browned; 7 to 8 minutes. Let stand 2 minutes.

Skating the Loop By Leslie Styles
It was a beautiful day for skating at the Ice Loop in Waterdown Rotary Memorial Park. With top 40 hits booming, skaters rounded the loop and took advantage of the outdoor winter venue. One skater, Alf, had driven up from Aldershot to skate with his granddaughter, Roslyn. “I really wish more communities would do something like this,” he commented. “An outdoor loop like this one would be perfect in Aldershot’s Lasalle Park.”

Ho Ho Ho! Thousands of Santas ran down the streets of Burlington on December 7th for the iRun Santa Burlington 5K, Canada’s largest all-Santa race! This annual fundraiser is in support of the CHCH Christmas Toy Drive and the Hamilton Food Share.
A holiday tradition, this fun family event was a great way to celebrate the season as participants donned full Santa suits (including a beard!) and ran through the city for this great cause. At the finish line, they were greeted with cheers as well as the live music of Obi, a great local band. Those in attendance graciously donated new unwrapped gift for kids 12 and under, non-perishable food items as well as monetary donations. It was a proud day for Burlington and a great way to bring the community together in the spirit of the season.
