DECONSTRUCTED FRUIT TART Prep Time: 1 hour ı Serves: 8
For this recipe you will need a 12” cast iron skillet.
INGREDIENTS • 1 bag (600 g) of mixed frozen fruit (I used the mango, strawberry, peach) • Butter puff pastry (1 sheet) from a 450 g package • 1 tbsp fresh lemon juice • 2/3 cup brown sugar • 1 tsp cinnamon • 2 tbsp milk • 1 tbsp demerara sugar
DIRECTIONS STEP 1: Preheat oven to 425°. Take one roll of pastry from the package. Let it rest at room temperature for about 20 minutes. STEP 2: Meanwhile, combine the frozen fruit in a bowl with the lemon juice, flour, brown sugar and cinnamon. Stir to combine and then pour into a 10” cast iron skillet. STEP 3: The puff pastry can now be taken out of the package and carefully unrolled. It should still be somewhat frozen and not completely thawed. Once it is unrolled, cut it in half. Place the two halves on top of one another, then cut in half again. Repeat this step two more times. STEP 4: You will need to separate the pastry stacks for easier cutting, but eventually you want to end up with 16 little stacks about 1 ½” square. Place them on top of the fruit in the skillet, randomly in the pan, and careful not to push them too deep into the fruit. STEP 5: Brush a bit of milk on the tops of the pastry and sprinkle with the demerara sugar. STEP 6: Bake on middle rack in preheated 425’ oven for 25 mins, and then reduce heat to 375’ and continue baking for another 20-25 mins, or until pastry has puffed and the edges are looking crisp, and fruit is bubbling. Let cool on a rack for about 10 mins before serving. Option to add a dollop of ice cream! Enjoy!

Conservation Halton is bringing its family-friendly, nature-based event, Pride in Nature, to Area 8 in Milton on Saturday, June 11, from 11 am to 8 pm to celebrate the 2SLGBTQ+ community in Halton and the surrounding area.
“Conservation Halton has always been committed to providing safe, sustainable and equitable access to nature for everyone,” said Hassaan Basit, President and CEO. “This year, we are proud to be supporting and celebrating our 2SLGBTQ+ community with our Pride in Nature event.”
Pride in Nature was introduced to the community with a tree planting event at Palermo Park in Oakville in 2021. This year, Conservation Halton has moved the event to Area 8, formerly known as Kelso Quarry, so that we can welcome more members of the community, as well as more food, drinks, activities and entertainment. Pride in Nature is set to feature 2SLGBTQ+ community information booths, drag queen performances, storytime for children, youth mindfulness sessions, outdoor yoga classes and guided hikes with educators from Conservation Halton, each with a focus on the 2SLGBTQ+ community. “The 2SLGBTQ+ staff members at Conservation Halton are proud to offer this opportunity for a welcoming and inclusive space for the 2SLGBTQ+ community to celebrate together in nature. Pride reminds us that there is more work to do for the progress of the 2SLGBTQ+ community and this event will work to foster connections to each other and to nature.” said Nigel Finney, Project Manager, Restoration & Conservation. Event participants will also have an opportunity to plant shrubs and wildflowers as part of continued efforts to restore the area.
Conservation Halton spent more than 20 years turning the former gravel quarry into a beautiful natural area with a crystal-clear lake at its centre, native plant species and other wildlife habitats. “The Positive Space Network is thrilled to be a part of Pride in Nature again this year! We love that this is a family event for of all ages. It truly feels like a reflection of all that PSN strives to achieve within our community. We are very honored to be a beneficiary of this awesome event," said Kelly Giuliani, Manager of Community and Youth Development, Positive Space Network / ROCK Foundation. MOTHER TONGUE BY MURALIST AND ILLUSTRATOR YEN LINH THAI EXPLORES THE WIDENING GAP OF LOST CULTURAL KNOWLEDGE BETWEEN GENERATIONS. Thai’s family were among the first farmers on an island in the Mekong Delta, in Vietnam. They worked to develop the land from rice paddies to grow regional fruits such as guava, jackfruit, and dragon fruit. As food is an integral part of her family’s history, she uses provisions such as pineapple eyes, coconuts, and fermented crab to relay important cultural teachings and knowledge. Thai’s experience of connecting to her culture through language, values and traditions has been one of exploration and play, yet there is an underlying fear that bubbles to the surface. This feeling of anxiety is reinforced with each passing family member and the realisation of an ever-widening cultural gap. She illustrates the sinking feeling of knowing that we simply cannot absorb enough before our time here passes. Thai’s interest in the formation of identity is reinforced by highlighting the moral life lessons embedded in Vietnamese folktales. These stories hold power – from how they’re told to who tells them. Thai retells the tales that she has heard over and over again since childhood before they are lost to the void forever.

THE PALETTA MANSION

The 11,000 square foot mansion ranks amongst the finest representations of great estate homes and was the last of its kind and quality designed and built in BURLINGTON in the first decades of the twentieth century. Idyllically situated amidst fourteen acres of natural acres and formal gardens, the estate’s mansion and unique outbuildings – the gatehouse, a children’s dollhouse and one of the last remaining stables in urban Burlington – command a breathtaking view of Lake Ontario. A heritage property of significance, it has been rightly called the “Jewel in the Crown” of Burlington’s waterfront. The estates heyday was during the twentieth century; however, the site’s remarkable history begins one hundred years earlier. In 1809, the British Crown, under King George III, granted Lot 8 – Concession 4 14

South of Dundas Street to Laura Secord, who was later to distinguish herself as a heroine in the events of the Battle of Lundy’s Lane during the War of 1812. Laura Secord and her family did not settle in Nelson Township but conveyed the lot to settler John Beaupre in 1810. Over the next one hundred years the property underwent a series of land transactions, passing through approximately fifteen different families. In 1912, it was purchased by William Delos Flatt and Cyrus Albert Birge and the site was commonly used as a park by local residents for leisure pursuits such as swimming,
boating and fishing, while the rest of the property continued in use as a fruit farm. Finally in 1930, Edythe Merriam MacKay, daughter of the renowned industrialist Cyrus Albert Birge, founding director of the Canadian Steel Company, built the mansion itself. History tells us the mansion was a consuming passion for Edythe Mackay. She was known to travel to Europe and the southern United States for furnishings, wall coverings, tiles and carpeting. A glimpse into the spacious interior paints a vivid picture of high society living. Amenities and features such as the dumbwaiter, servant’s quarters, and ballroom reveal how prosperous local families once lived and played.
