Pumpkins offer more than crooked smiles this season By Greta Stewart, Avera McKennan Hospital & University Health Center Fall is here! The trees have turned color, the weather is cooler and there is still so much to explore before the first snow flies. October is a fun month, filled with goodies and goblins, and, of course, pumpkins! The pumpkin got its name from the Greek word “pepon” or large melon. Seeds from related plants have been found in Mexico, dating over 7,000 years to 5500 B.C. Closer to home, Native Americans have used pumpkins for a variety of functions. Not only did they flatten and dry thin strips of pumpkin, making them into mats but research shows many tribes were well aware of the pumpkin’s healing properties. Amanda Viau, executive chef at Avera McKennan Hospital & University Health Center says pumpkin flesh is a great source of Vitamin A, C and E.
“The seeds give us a great source of magnesium, Vitamin K and offers no cholesterol,” she says. “Pumpkin is rich in carotenoids, which act as an immune booster as well as cucurbitacin and beta carotine which helps in treating many ailments.” Native Americans used the seeds to help heal wounds and the seed oil was used to treat burns. “Pumpkin is also a great source of antioxidants and is an antiinflammatory,” confirms Viau. In addition to healing powers, the nutrients present in just one serving of pumpkin are a testament to the health benefits of this timeless fruit. Consider what is found in a pumpkin: Quick Pumpkin Nutrition Facts (1 cup cooked, boiled, drained, without salt) Calories: 49 Protein: 2 grams Carbohydrate: 12 grams Dietary Fiber: 3 grams Calcium: 37 mg Iron: 1.4 mg Magnesium: 22 mg Potassium: 564 mg Zinc 1 mg Selenium: .50 mg Vitamin C: 12 mg Niacin: 1 mg Folate: 21 mcg Vitamin A: 2650 IU Vitamin E: 3 mg
Now those facts may be interesting but now the question is how can we get more people to eat it? Viau says almost all parts of the pumpkin including flesh, seeds, shell, leaves and flowers are edible and can be used in a variety of recipes. In fact, 90 percent of pumpkin is actually water. Here are some uses of pumpkin Viau suggests: • Substitute seeds for croutons on a salad • Eat seeds as a snack like mixed nuts or substitute them for sunflower seeds • Roast the flesh for stews • Bake it for pumpkin fries • For great pumpkin recipes see Hood’s menu section • Use the leaves as a substitute for grape leaves • Used the shell to wrap fish on the grill • Use the blossoms--they can be stuffed with strawberries and cream cheese for a sweet treat “There is a variety of great recipes that can be found and remember that this is a very sweet and nutritious vine fruit so make sure to use it whenever you can,” Viau says. n

Story Time Workshops
Join us for this FREE Saturday morning story and activity time especially for preschoolers. The Pavilion’s teaching staff, Science Center Interactors and Pavilion friends will lead an interactive story time followed by a fun activity based on the book theme of the day. All ages are welcome to attend. Held in the Children’s Studio found in the Visual Art Center from 10:15am to 11:00am each Saturday morning. Fun weekly workshops for you to venture into the worlds of art, science and theatre. Delve into hands on activities during two hours of unique fun. Sign up for one workshop or sign up for them all! Good Things Come To Kids Who Wait By Richard E. Bavaria, Ph.D., Sylvan Learning
It’s tough. We tell kids to do it all the time. And it’s no easier for us adults, either. We hate to do it. We hate to wait. No one likes to wait. We live in an instant world. We want what we want when we want it. But learning patience, learning to wait, learning to control our impulses, can be an important life skill, making our days less stressful and our futures more secure.
• T hink before acting. One of life’s major lessons is learning how to control our impulses. Think of those marshmallow kids. Give kids an advantage by teaching them to take a private “time out” before acting precipitately. Close your eyes and think of someplace peaceful. Say the Lord’s Prayer. Recite the pledge of allegiance. Count to ten.
There’s a famous Stanford University child psychology experiment from 1972 where Dr. Walter Mischel gave kids a fluffy, puffy, tantalizing, aromatic, mouthwatering, irresistible marshmallow – yum! – but told them if they waited a short while, they’d get two marshmallows! One now or two later. One third of the kids waited patiently. Okay, maybe not really so patiently, but they waited. Mischel and his researchers followed the kids over the years. The kids who deferred gratification and walked away with their cheeks filled with two marshmallows tended to do better in school, have better grades, score higher on ACTs, focus better on goals, and even have more fulfilling relationships. Why is it important to teach kids self-control? And how can we adults help our kids achieve it?
• Be a role model. When kids see us acting the way we want them to act, they know we’re serious. Let them see you exercising self-control as you save money, put off a big purchase until you can pay for it, finish something you’re responsible for before taking time off, donate to your favorite charity, or fulfill a promise even if it’s inconvenient. They’re watching.
Here are a few thoughts. • Self control gives you power. Knowing how to control their emotions and behavior gives kids power over their own actions. Let them see how they can be in control over situations where they could easily be tempted to get into trouble. • Time outs still work. Especially for younger kids, removing them from difficult situations is always a good idea. Eventually they’ll learn to walk away from frustrations whenever they can. • H ave rewards and consequences. Rewarding kids with praise when you’re proud of the choices they’ve made is never wrong. Kids love it when we notice their hard work. Also, it’s a good idea to come up with some consequences together, for when they’re not so successful. “I know you try hard, but what would discourage you from losing your temper like that again?” 20 | October 2011 | thehoodmagazine.com
• T each how to deal with “no.” We all get a “no” from time to time when we really want a “yes.” Show how to ask politely later, find something else to do for a while, ask how to “earn” what we want, or – a really, really good one – wait your turn. • Show how to recognize moods. Teach kids to recognize their own and others’ moods. Anger. Sadness. Impatience. Frustration. Expansiveness. Generosity. In other words, know when you and others are in the right mood to get what you want. • Be firm. Firmness and matter-of-factness are the best ways to let kids learn how to control themselves and delay gratification, even if for only a few minutes. If they know how to get under your skin, you’re in trouble. Stay firm and calm. A little humor can’t hurt, either. “No, you silly goose, of course you can’t play video games now. It’s homework time. Nice try, though.” • Give attention and feedback. Listen to what they’re saying. Everyone wants to be heard. Then, give honest and clear feedback about their behavior. “You know, I can tell you’re really trying to be patient with your younger brother. Well done.” • Be patient. It’s true. Patience is the first necessity of adults who deal with kids. Parents, teachers, coaches – we all need loads of it. Chances are, if we’re patient most of the time, our kids will learn to be, too. Why Consign?
By Tammi Pearson , A+ Kids Stuff & Phaze II The benefits to consignment is endless not only is it a great way to recycle unwanted items such as clothing, baby equipment, and furniture to name a few but it is also a way to recoup some of the expense of the rising cost of consumer goods. When you consign an item you are getting a portion of the sale once the store has sold your item. There are many consignments stores in Sioux Falls and the surrounding area for you to find just the items you are looking for or to help you consign the items that you have simply outgrown. Tips for consigning: 1) Set an appointment with the store to drop off consignment goods to ensure your items get on the sales floor in a timely manner. 2) Consign items for the appropriate season this will ensure that they sell quickly. It is best to get them in the first 2 months of the season. 3) Consign items as soon as possible don’t hang on to items for several seasons, this reduces the resale ability. Instead as soon as your child out grows something or you no longer need that baby equipment bring it in, or as soon as the season allows. 4) Freshly laundered and folded items make a difference and saves time. If it takes batteries, make sure it has working batteries. Items sell faster when people see that it works. 5) Make sure you read and understand your contract. If you have questions don’t be afraid to ask. n

Place apples, apple juice, cinnamon stick, nutmeg, and 1/4 tsp. cinnamon in medium saucepan. Bring to a boil over high heat; cover. Reduce heat to medium; cook for 10 minutes. Remove from heat; cool for about 10 minutes. Remove cinnamon stick. Mash apple mixture with potato masher or fork to desired consistency. Spoon into individual serving bowls; sprinkle with ground cinnamon. Serve with whipped topping if desired.
Carrot Soup Ingredients 3 tbsp. butter 1 1/2 c. chopped onion 8 large fresh thyme sprigs 2 bay leaves 1 large clove garlic chopped 2 lbs. peeled baby carrots 4 c. water 2 to 3 tsp. instant chicken flavor bouillon
Directions
Melt butter in large saucepan over medium-high heat. Add onion, thyme, bay leaves and garlic; cook, stirring occasionally, for 5 minutes or until onion is tender. Add carrots, water and bouillon; Bring to a boil; reduce heat to mediumlow. Cover; cook for 35 minutes or until carrots are very tender. Remove and discard bay leaves

1/2 c. vanilla or berry-flavored lowfat yogurt 1/2 c. fresh or frozen strawberries

Directions
Combine flour, thyme, marjoram and bouillon in shallow dish. Coat chicken with flour mixture; shake off excess. Heat 2 tsp. oil in large, nonstick skillet over medium-high heat. Add chicken; cook on each side for 7 minutes or until no longer pink in center. Transfer to platter and keep warm. Heat remaining 1 tsp. oil in same skillet. Add shallot and garlic; cook, stirring frequently, for 1 minute. Add apple juice and mustard. Bring to a boil; cook, scraping up any bits, for 3 to 4 minutes or until liquid is reduced by half. Add chicken back to skillet along with any juices accumulated on platter; stir to coat chicken with sauce.

Line tray with wax paper. Place candy sprinkles or chopped nuts on plate or in shallow bowl. Melt 1/3 c. chocolate chips according to package directions in small bowl. Dip one graham stick halfway into melted chocolate, then into candy sprinkles or chopped nuts.
Ghoulish Grape Hands Ingredients 3 clear plastic disposable gloves 4 c. grape juice, divided 4 envelopes (7 grams) unflavored gelatin nonstick cooking spray 3 rubber bands or twist ties
Directions
Rinse inside of gloves with water and set aside. Heat 3 c. grape juice to boiling; remove from heat. Pour remaining 1 c. grape juice in large bowl; sprinkle gelatin over and let stand for 1 minute. Slowly poor hot grape juice into bowl and stir until gelatin is dissolved. Spray inside of each glove with nonstick cooking spray. Carefully pour enough juice mixture into glove to just fill; secure ends with rubber band or twist tie. Place on tray. Repeat with remaining gloves and juice mixture. Refrigerate for 4 hours or until firm. Remove rubber band or twist tie. Using scissors, but through glove all the way to the end of each finger; turn over hand and peel off glove.
Frozen S’More Pops Ingredients wax paper 10 wooden picks 10 large marshmallows 1/4 c. graham cracker crumbs 1/2 c. chocolate chips

Line tray with wax paper. Press one wooden pick into each marshmallow. Place graham cracker crumbs in small, shallow bowl. Microwave

chocolate chips in medium, uncovered, microwave-safe bowl on high power for 45 seconds. Stir. The chocolate chips may retain some of their original shape. If necessary, microwave at additional 10-second intervals, stirring just until morsels are melted. Dip marshmallows into melted chocolate using wooden picks. Roll marshmallows to cover completely with chocolate. Dip into graham cracker crumbs, rolling to cover. Transfer to prepared tray. Freeze for 20 minutes or until chocolate is set. Enjoy immediately or transfer to airtight container and store in freezer for up to 1 week. Be sure to allow marshmallows to sit at room temperature for a couple of minutes prior to eating.
Mango-Ginger Granola Ingredients 4 c. old-fashioned oats 1 c. packed brown sugar 2/3 c. slivered almonds 1/2 c. wheat germ 1/2 tsp. ground cinnamon 1/4 tsp. ground ginger 1/2 c. apple juice 3 tbsp. butter or margarine 2 tsp. vanilla extract 1 (6 oz.) package dried mango finely chopped
Directions
Preheat oven to 350°F. Lightly grease 15 x 10 inch jelly-roll pan. Combine oats, sugar, nuts, wheat germ, cinnamon and ginger in large bowl. Stir in apple juice, butter and vanilla extract; toss well to coat. Spread mixture evenly into prepared pan. Bake stirring frequently, for 30 to 40 minutes or until golden brown and crisp. Cool completely in pan on wire rack. Stir in mango.

Cut cantaloupes in half; remove seeds. Scoop round balls of cantaloupe out of each half with melon baller or small round spoon, leaving about 1/2 inch of cantaloupe in the melon. Combine cantaloupe balls, strawberries and blueberries in large bowl. Mix apple juice, lemon juice and sweetener in small bowl; pour mixture over fruit mixture and toss lightly. Line cantaloupe halves with lettuce leaves. Spoon fruit mixture into each cantaloupe half. Cover; refrigerate until ready to serve.
Transfer to prepared tray. Repeat with remaining graham sticks. Refrigerate for 10 minutes or until set.

Cook macaroni in large saucepan according to package directions, adding broccoli to boiling pasta water for last 3 minutes of cooking time; drain. Combine cooked pasta, broccoli and cheddar cheese, pepper jack cheese, evaporated milk, 1/4 c. Parmesan cheese and black pepper in large bowl. Pour into prepared casserole dish. Combine remaining 1/4 c. Parmesan cheese and bread crumbs; sprinkle over macaroni mixture. Cover tightly with foil. Bake for 20 minutes. Uncover; bake for an additional 10 minutes until lightly browned.
Easy Tropical Chicken Ingredients 4 boneless, skinless chicken breast halves 2 tbsp. all-purpose flour 1 tbsp. butter 1/2 c. apricot preserves 1/2 c. apple juice 1 tbsp. Dijon mustard (optional) fresh thyme leaves (optional)

Season chicken with salt and pepper; dust with flour. Melt butter in large nonstick skillet over medium-heat. Add chicken; cook on one side until golden brown.

Directions
Preheat oven to 350° F. Grease two 9 x 5 inch loaf pans. Sift flour, pumpkin pie spice, baking powder, baking soda and salt into medium bowl. Combine pumpkin, sugar, apple juice, eggs, oil and vanilla extract in a large bowl; stir well. Stir in flour mixture and 3/4 c. nuts just until moistened. Spoon into prepared loaf pans. Sprinkle remaining 1/4 c. nuts over top of loaves. Bake for 60 to 70 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire rack for 10 minutes; remove to wire racks to cool completely.
Turn over; reduce heat to mediumlow and cook for 3 to 5 minutes or until no longer pink in center. Remove from skillet; keep warm. Add preserves, apple juice and mustard to skillet; stir well to combine. Cook; stirring constantly, for 2 to 3 minutes or until mixture is melted and slightly reduced. Return chicken to skillet; turn to coat both sides. Sprinkle with thyme before serving.
Baked Zucchini Frittata Ingredients Nonstick cooking spray 1 tbsp. olive oil 2 1/2 c. grated zucchini 3/4 c. diced onion 2 cloves garlic, finely chopped 3/4 to 1 c. shredded Parmesan cheese 8 large eggs 3/4 c. evaporated milk
Directions
Preheat oven to 350° F. Spray 10 inch round or 9 x 13 inch baking dish with nonstick cooking spray. Heat oil in large skillet over medium-high heat. Add zucchini, onion and garlic. Cook, stirring occasionally, for 5 minutes or until softened. Stir in cheese. Beat eggs and evaporated milk in large bowl. Gradually stir in zucchini mixture one spoonful at a time so that the vegetables will not cook the eggs. Pour mixture into prepared baking dish. Bake for 30 to 35 minutes or until frittata is cooked through. Season with salt and ground black pepper, if desired. Slice and serve.

Pumpkin Sausage Lasagna Ingredients 1 (15oz.) container light ricotta cheese 2 tbsp. shredded Parmesan cheese 1 tsp. Directions
Preheat oven to 350° F. Combine ricotta cheese, Parmesan cheese and seasoning in medium bowl; mix well. Heat large, nonstick skillet over medium-high heat.
Add sausage; cook stirring to break into pieces, until browned. Transfer sausage to paper towellined plate to drain. Add pumpkin, wine and broth to skillet; cook over medium heat, stirring frequently, until bubbly. Stir in sauce and sausage; heat through. Spread 1 cup sauce mixture over bottom, of 11 x 17 inch or 9 x 13 inch baking dish. Top with 4 lasagna noodles. Spread 1 c. ricotta mixture over noodles. Sprinkle with 1 c. mozzarella cheese. Spread 1 c. sauce mixture over mozzarella cheese; top with remaining 4 lasagna noodles, remaining ricotta mixture and remaining sauce mixture. Sprinkle with remaining 1/2 c. mozzarella cheese. Pour water around edges of lasagna. Cover with foil. Bake for 40 to 45 minutes or until bubbly. Let stand for 10 minutes before serving.

Fall Frame
Well, summer is over and Fall has begun! Time to take down the Red, White and Blue Porch Wall Decoration and make something new for fall! In previous Autumn’s, I would hang a wreath with a scarecrow on it, but I never really liked it, and he was so faided this year I knew I had to try something different. I am am a DIY (Do-It-Yourself) girl, not much into buying things, I would rather make my own. I wanted something fun, yet with a bit more grown-up appeal.
Let’s Get Started! Step 1: Go in search for a frame.
Either one you’re not using or a great clearance find. No need to spend a lot.
Step 2: Deconstruct
I had to do a bit of deconstruction with mine since it was attached to the frame on the back with staples. Nothing 2 and 4 year old boys and some needle nose pliers couldn’t fix. My boys LOVE deconstruction. I even let them punch the picture out of the frame with their hands once the staples were out.
Step 3: Paint
I had a small can of crimson red paint in the basement...go through what you have, pick a fall favorite
Step 4: Ribbon & Leaves
I used some orange ribbon I had on hand. Again, stick with a fall theme or color. I then deconstructed an old fall wreath by taking the plastic leaves off and sewed them to the ribbon.
Step 5: The Hooks
Screw in hooks on the front of the frame where you will attach the leaffilled ribbon. Have the kids help tie the ribbon onto the hooks and hang it outside!
