At the event, you can get a close-up look at the railcars and experience riding the rails. Members of the Cotton Valley Rail Trail Club will provide rides to the public, with antique motorcars serving as transportation. You will see several different kinds of rail motorcars, including some cars from the 1930s & 1940s; the rail cars, once used by the railroad for work, are now used for recreation on the Cotton Valley Rail Trail. Just what are antique motor cars? According to information at the Facebook page of the Cotton Valley Rail Trail Club, railway motorcars are small, fourwheeled motorized vehicles designed to ride on railroad tracks. Back in the day, the cars were used by railroad employees to perform various maintenance tasks on railroad property, such as track work, bridge inspection, and signal repair.Rail cars evolved from human powered pump cars in the early 1900s. They eventually were replaced in the 1960s by hy-rail vehicles (pickup trucks with small railroad wheels). Railcars were manufactured by several corporations during their heyday. Cars manufactured by the Fairmont Railway Motor company are the most common today. Hobbyists search for old railcars to refurbish. Once a motorcar is located, enthusiasts can repair the car to running shape or restore it to its original production floor condition. The Cotton Valley Rail Trail members enjoy all facets of the hobby, from helping others find railcars, and lending a hand in restoring the cars and then running them.

Although the Cotton Valley Rail Trail Club in the Wolfeboro area may have small and charming rail cars versus high-speed trains, the little vehicles provide quite a memorable and fun experience. Summer is when railcar enthusiasts enjoy taking their little cars on the tracks. Says Noreen McDonald, Cotton Valley Rail Trail Club member and co-chairperson of the Cotton Valley Trial Committee, “This is the 30th anniversary of the club and we are celebrating on Saturday, August 20 from 10 am to 2 pm, and the public is invited.”

The mission of the club - finding railcars and helping to restore and run them - has led to great interest by the public. The group regularly operates motorcars at Fernald Station at the crossing with Governor John Wentworth Highway in Wolfeboro. The station is located approximately three miles east of downtown Wolfeboro on Route 109. (The Club currently maintains 17 miles of rail owned by the State of New Hampshire. The two rail lines are the Wolfeboro-Sanbornville, NH branch line, no longer used by the railroad and known as the Cotton Valley Trail, and a portion of the Ossipee Branch between Rt. 28 and Rt. 16.) The rail mounted equipment is used to mow the lines. Last year the club gave free rides at their annual event to about 160 people and will be there to do so again this year. There also will be a chance to tour the Fernald station house and hear some live music. If you have questions about the club and the railcars, there will be plenty of knowledgeable enthusiasts there to fill you in. There will be 10 cars offering rides, according to McDonald. “Some of the cars have room for two to four passengers and one car fits eight to 10 people.” The cars follow the train tracks and do not go on non-track land. There will be antique gas and diesel powered motorcars ready to take you out on the rails. You will see several different kinds of rail motorcars and one with a vintage gang trailer. These rail motorcars, once used by the railroad for work, are now used for recreation by the Cotton Valley Rail Trail group. The club started 30 years ago when the tracks were given to the NH Department of Safety. The Cotton Valley Rail Trail Club asked the department for permission to use and maintain the trails. With permission to do so, the club was off and running and had found a place with rails for their little cars. The club meets the third Saturday of each month, and there are many enthusiastic members.The Fernald station serves as a home base. The club has been restoring the building and will have old photographs and memorabilia on display so the public can see some of the history of the railcars during the anniversary event. The Fernald station is located at 64 Governor Wentworth Highway in Wolfeboro. (The Fernald Station and Enginehouse were built by the Wolfeboro Railroad and are now preserved by the members of the Cotton Valley Rail Trail Club.) Mini Golf in the Lakes Region is Fun for All Ages his grandmother, wife of D.A. Long, for whom the tavern is named. All the obstacles (ornaments) on the mini course are handmade. Len and I went to see the 5,500 square foot indoor golf course, with rounds at $5.00 each. The handmade, refurbished ornaments were impressive. The course, originally an outdoor course, “Famous Landmarks of New Hampshire,” open from 1964 to 2014, was brought inside to preserve the original handmade ornaments from the effects of the weather. Ornaments representing New Hampshire include: The Mount Washington Cog Railway, M/S Mount Washington boat, the covered bridge in Jackson, a sap house, a one room school house, the West Alton train station and more. The Fun House is the only original ornament still in use today from the original course in 1952, according to a display about it. Even the paint is original. It had just minor repairs and was built by John Lawton’s father-in-law, Perley Knight. John worked with his brother, Bob, at the family entertainment center, until his death in 2003. Bob Lawton passed away last November, at age 90, and worked at the property up to the last six months of his life. “He loved the property,” said Ashton. As a state legislator for many years, he was responsible for getting the state motto, “Live Free or Die” on the NH license plates. He founded The Weirs Times newspaper in 1982, which his son, David, is now the managing editor. Bob was also an avid water skier. There are stories about that and more history on the walls around the tavern and all throughout the buildings. “It sounds weird,” said Ashton, but there’s a lot of history in the bathrooms too, including pictures of the old mini golfWecourse.”thoroughly enjoyed our visit to Funspot and look forward to going back again. Noreen Otto manages the Meredith location, a quarter mile from Funspot, and the Winnisquam course. There is another location in North Conway. For over 30 years, Pirate’s Cove Adventure Golf has provided pirate-themed golf courses, fun for the whole family. They are open 9 am – 9 pm daily, weather permitting. The season is generally from Mother’s Day to Columbus Day. In a phone interview with Noreen, she said that her husband, Bill, and son do the maintenance and landscaping. They also have a new music system. Her husband was a golfer, and their son and daughter also golf. Noreen’s daughter plays on a women’s club. “She was the only girl on a boys’ team,” said Otto. Len and I played the Meredith course, which was well-designed and not too easy. I liked reading the history of the infamous pirates, men and women, posted on each hole of the course.

My husband, Len, and I enjoyed trying out a few of the local courses and we were hooked again on this sport, which is great for kids of all ages. I learned that the line in the putter is there to help you aim your ball to the hole, which lessens the humiliation of having to ask for a mulligan, or a do over.Inthe early years, there weren’t any fancy themes or automated barriers on the mini golf course. “Instead, early courses featured pipes, barrels, rain gutters and old tires as fun obstacles to challenge a golfer’s skill.” (golfland. com) So, you could get creative and make your own course. The game focuses on the putting aspect of golf, with the goal to get the lowest points. Funspot, officially named in the Guinness Book of Records as “The World’s Largest Arcade,” in the village of Weirs Beach in Laconia, is in its 70th season this year. They offer a historic indoor mini golf course, over 600 games, including 300 classic arcade games, candlepin and ten pin bowling in 20 lanes, cash bingo, a restaurant, tavern and room for parties. We ate lunch in the D.A. Tavern by the bowling alley and spoke with Eva Ashton, manager, who has worked there 27 years. Fundraising for charities is a big part of Pirate’s Cove Adventure Golf. Putting for Patriots is a Memorial Day fundraiser for local, veteran-related charities that serve wounded veterans, their families and veterans suffering from PTSD. To date, 33 participating courses have raised over $600,000 for charities that support veterans.
Putting for Progress, a Doug Flut ie organization, is a Labor Day event. It sponsors three charities that support education and autism. In August, they host a Big Brothers Big Sisters meet andMinigreet.golf outings with families and friends are very special. Otto summed it up well with her observation that “You never know what life brings you. In addition to mini golf, there are also go karts, laser tag, bowl ing, gaming and e-sports. The “Championship Grade” 18hole mini golf course is “not a kiddie course,” according to Tupper. Some people come to play and bring their own golf clubs. “It’s challenging,” said Tupper. The course wraps around the go-kart tracks and opens during April school vacation, seven days a week, through Labor Day. Then it’s open weekends through Columbus Day. “Golf is fun for kids and adults,” saidIndoorTupper.attractions are automated and open all year. A unique feature at White Lake Speedway is Rockbot, a free app that you can download and pick the music that you would like to hear, which is streamed to the venue while you are there. Len and I played on the well-manicured course and enjoyed the challenge of the 18-hole course. Para dise Falls was built in 2006. Owners Michael and Dawn Bianco, married for 22 years, always wanted to own a business. They decided to move to New Hampshire, from upstate New York, after looking at three miniature golf courses in the area. They played the Paradise Falls course, liked it and thought it was well kept, clean and didn’t need major improvements. They moved to New Hampshire in Septem ber 2019 and bought the golf course in January 2020. Dawn still works remotely as a paralegal and Michael is retired. He does most of the mainte nance and landscaping. They may add an ice cream shop at the property in the future. “We definitely are enjoying the business,” said Dawn. “We love liv ing here. It’s a beautiful community.” They have been amazed at the number of people from out of state that come here. Dawn and Michael enjoy getting to know regular or repeat customers and their families. Dawn told me that there are about four to five regulars, which are children that come in every week.Alittle boy, who lives nearby, has been coming since they opened. The one birthday party that they had in 2020 was for this boy, who was three years old. “Michael gave him a plastic putter and told his dad to just let him try it. He loved it and has been com ing once or twice a week ever since. Now he’s five and has graduated from the plastic club to the metal club this year,” said Dawn. The young boy likes to help out by bringing the used balls to the back to be cleaned. They host birthday parties, camp outings and other events. Once a year, on Mother’s Day, the town of Moul tonborough holds a Mother and Son Golf Day. They open for the season after that, which ends on Columbus Day. The Wooden Nickels Band will take to the bandstand on Saturday, Aug. 20, for a 7 p.m. concert in Cate Park. The Friends of the Wolfeboro Community Bandstand concert series is presented free of charge each Saturday night in the bandstand in Cate Park, with each concert lasting two hours with a short intermission. At intermission, there
Cameron is the other original mem ber of the band, moving to New Hamp shire from Massachusetts in 1987. He has played in numerous bands over the years, playing both guitar and bass. For the Wolfeboro Community Band stand concert, the band will be joined by special vocalist Kendra Leigh for a number of songs. Wooden Nickels Band was founded in 2005 and the band is honored to be able to play in Cate Park, a place many band members grew up listening to music. The band is known for its solid classic rock covers.

Chamberlin began playing with his father’s band, “The New England Country Boys,” when he was just 10 years old, playing guitar and bass and is a fourth-generation musician who picked up a harmonica at age five.

The Ground Beneath Our Feet Soil Tent is coming to Squam Lakes NatuCenter on Thursday, August 18. This traveling educational exhibit the visual experience the earth with its Each ten-by-ten foot interior face of the Tent represents one of three different ecosystems: forest, meadow, and wetlands. Along with the Tent, a series of hands-on science activities offer students the opportunity to deepen their curiosity about and unof the soil, and to emerge with for observing their soil environment, wherever they may find themselves.TheGround Beneath Our Feet is a partnership between the U.S. Forest Service, the Global Learning and Observations to Benefit the Environment (GLOBE) Program, the Arts Alliance of Northern New Hampshire, and the White Mountain National Forest. The project was initially prototyped in 2016 through a series of interdisciplinary STEAM residencies in NH public school fourth grade. The residencies combined Elementary GLOBE soil curriculum materials; hands-on

The Soil Tent is configured to elicit the striking sensory experience of entering the earth, with its layers and creatures on display. In the early 1900’s, Henrietta Leavitt joins a group of women “computers,” charting the stars for a renowned astronomer who calculates projects in “girl hours” and has no time for the women’s probing theories. In her free time, as Henrietta attempts to measure the light and distance of stars, she must also take measure of her life on Earth, trying to balance her dedication to science with family obligations and the possibility of love. One century ago, in 1912, an astronomer named Henrietta Swan Leavitt made a discovery that was to become one of the cornerstones of modern astronomical science. And yet, during her lifetime she received neither plaudits, nor acclaim, nor even serious recognition from her peers. Even today, she is little known, with not even a plaque hanging to commemorate her name at the Harvard College Observatory where she worked, and where her far-reaching breakthrough took place.
Silent Sky celebrates Henrietta’s story, as well as a group of unbelievably inspiring women, all of whom made countless discoveries despite heavy obstacles.Anexcerpt from the script: “I would like to say that I wish I could send you an image of this sky tonight. But I hope we never invent pictures that perfect— that would miss the point. ‘Which is what?’ I think staring out to sea. I used to think that to be truly alive I needed answers. I needed to know. But all this does not in fact need to be known, does it? We do. Because the real point... is seeing something bigger. And knowing we’re a small part of it, if we’re lucky.

The Caterpillar Lab is returning to Squam Lakes Natural Science Center for a three-day exhibit featuring a huge variety of New England caterpillar species with plenty to see and touch. Caterpillars in Residence will be at the Science Center from August 25 through 27 from 9:30 a.m. to 12:30 p.m. and 1:30 to 4:30 p.m. daily. The exhibit is included with trail admission to the Science Center. The Caterpillar Lab fosters greater appreciation and care for the complexity and beauty of local natural history through live caterpillar educational programs, research initiatives, and photography and film projects. The Caterpillar Lab believes that increased awareness of one’s local environment is the foundation on which healthy and responsible attitudes towards the broader natural systems of this world are built.Educators from The Caterpillar Lab will teach visitors all about metamorphosis and tell incredible but true stories about the creatures’ strange and surprising adaptations. Some caterpillars are camouflaged to look like twigs or snakes. Some have stinging spines or brightly colored baubles. We would LOVE to see families participate in the show!” Written by Tim Rice and Andrew Lloyd Weber, Joseph and the Amazing Technicolor Dreamcoat is a tale of a dreamer. Joseph is the favorite of the twelve sons of Jacob. He is given a coat of many colors by his father, which is symbolic of his favor and an object of his brothers’ jealousy. The brothers decide to sell Joseph into slavery after initially plotting to have him killed. Convincing their father that his favorite son has died, they reveal his tattered coat and rejoice that they are rid of him once and for all. From his homeland of Canaan, Joseph is taken to Egypt where he becomes the slave of Egyptian millionaire Potiphar and earns his trust. Managing his household, he soon needs to ward off the affections of Potiphar’s wife. Enraged and unwilling to assess the situation, Potiphar has Joseph thrown into jail where the once-favorite son interprets the dreams of his cellmates. The prisoners are awed by his hidden talents of interpretation and encourage Joseph to pursue dreams of his own. Joseph’s fortunes take a turn for the better when the Pharaoh hears rumors of his talent. Having had strange recurring dreams about cows and ears of corn, Pharaoh asks Joseph what the mysterious dreams could mean. Joseph determines they are omens of an approaching famine. This foresight allows preventative actions, and Joseph becomes the second most powerful man in Egypt. Back in Canaan, Joseph’s brothers are starving and regret their treatment of Joseph. Hearing of the prosperity of Egypt, they go to the kingdom for help, not knowing that their contact is Joseph himself. He devises a test to see if his brothers have changed their ways, and finally reveals himself to them, donning his Technicolor Dreamcoat onceActorsagain.auditioning are asked to prepare a song and to learn a dance. Welcome Foodie Friends! Whether you are a frequent flyer or a rookie to “Cue The Grill”, thanks for popping by. Today we are going with one of the most fun foods to eat, whether as a Tacos, Tacos, Tacos... kid or adult, and that is a taco, and no, there will be no “Tex Mex” tacos here that Mom made for us growing up, and the same ones many of us still enjoy whole heartedly today. I’m not here to ridicule or rip on the classics, but at the same time, it’s time to step up our taco game and go a little more upscale so to Beforespeak. we get into recipes of tacos that look like tacos, I’m going to start off with a very untraditional taco. One of the newer and latest food trends over the past years has been “food bowls”. In essence, this is a taco in a bowl, and although delicious, this is geared more toward the health conscious and those who prefer the Paleo diet. To those not familiar, the Paleo diet is more of a new diet “fad “ that focuses on foods to mirror those eaten by those of the Paleolithic era, in essence, clean food not containing any of the chemicals and such found in most foods. There is some mayonnaise needed in this recipe, so if you care to keep it strictly Paleo, find an avocado-oil based mayo that is usually chemical free. Whether following a Paleo diet or not, this is just plain ‘ole yummy, and like most any great fish taco, it’s often all about the extras involved, in this case a very original cole slaw. This will serve 4 of you and take maybe a half hour. The slaw can be made well in advance if preferred, and if you are a traditionalist and prefer your tacos in a corn or flour tortilla, you can easily make that work and you will get many more servings if you do so.

Baja Fish Taco Bowl For the Fish 1 ½ lbs. cod, thawed if frozen 1 ½ tsp chili powder ½ tsp cumin ½ tsp garlic powder ½ tsp smoked paprika ½ tsp salt 2 tbsp avocado or olive oil For the Veggies 2 tbsp avocado or olive oil 8 cups cauliflower rice ½ tsp chili powder 2 tsp lime zest, divided 3 tbsp fresh squeezed lime juice, dividedSalt and Pepper ¼ cup mayonnaise, ideally avocado oil2basedtbsp chopped cilantro, divided, plus more for garnish ½ tsp smoked paprika 3 cups coleslaw mix or 1 ½ cups each of green and red cabbage Place the cod on a plate. In a small bowl, combine the six spices well. Pour the spice mix over the cod and press it into both sides. Put a large skillet over medium heat and pour the oil in the pan. Place the cod in the pan and cook for 2 minutes, then flip and cook for 3 minutes or until cooked through. Set it aside. In the same large skillet, add the 2nd batch of oil and the cauliflower rice. Cook for 4-6 minutes, stirring occasionally. Add the chili powder, 1 tsp of lime zest and 2 tbsp of lime juice and stir to combine. Cook for 3 to 5 minutes, or until the cauliflower rice is cooked through. Season with salt and pepper to taste. In medium bowl, combine the mayo, 1 tbsp of lime juice, 1 tsp of lime zest, cilantro and smoked paprika. Whisk until combined, then add the coleslaw mix and toss to coat. Season with salt and pepper to taste. To assemble the bowls, divide the cauliflower rice among four bowls and top each with a slice of fish and cilantro-lime slaw. Dig right in! Since we are talking fish, let’s move on to salmon as salmon makes for out standing tacos with its flavor and flak iness. Where the slaw mix of the last recipe helps push that recipe over the top, this one has a fresh pineapple salsa to do the same thing. The salmon in this taco can be done on the grill or in a pan, although I will describe this one on the grill. If you decide to do so via stovetop, use about 2 tbsp of oil in a non-stick skillet and cook 4-5 minutes on the first side and another 2-3 once flipped over. This should give you 8 tacos, feeding 4. Again, plan on a half hour to put this together Salmon Tacos with a Chili Pineapple Salsa 1 hunk of fresh ginger root, 2 inches long, peeled and finely grated 2 garlic cloves, finely grated 2 tsp chili powder 1 tsp ground coriander 1 tsp ground cumin 4 tbsp fresh squeezed lime juice, di vided3tbsp grapeseed or vegetable oil, di vided1tsp kosher salt, plus more 1½ lbs. skinless, boneless salmon fil let ½ small red onion, finely chopped 2 serrano chiles, finely chopped 2 cups chopped pineapple, about ½ medium pineapple ½ cup chopped cilantro, plus leaves forLimeservingwedges and toasted or warmed cornStirtortillastogether ginger, garlic, chili powder, coriander, cumin, 2 tbsp lime juice, 1 tbsp oil, and 1 tsp salt in a me dium bowl to create a paste. Add salm on to bowl and toss until evenly coated. Let salmon sit at room temperature 15 minutes to marinate. Meanwhile, mix red onion, chiles, pineapple, ½ cup ci lantro, and remaining 2 tbsp lime juice in a medium bowl to combine, season with salt. Set the pineapple salsa aside. Heat your well-oiled grill to medium high and cook the salmon 4-5 minutes per side depending in its thickness until opaque throughout. Once pulled, put on a cutting board, let sit for a few min utes and then flake with a fork into large bite sized pieces, squeezing a couple of fresh lime wedges over them. Lightly grill your choice of tortillas for 15-30 seconds per side. Serve the salm on pieces/chunks in the tortillas with pineapple salsa, and cilantro. Never be afraid to add some of your other favor ite taco extras as well. Although we will get back to some more seafood, I want to share a great vegetarian taco recipe where mush rooms are the centerpiece for this one. Like the last one, the centerpiece can be done on the grill or in the oven, al though I suggest the oven as I think it will give you the best results. This is another 30 minute or so recipe and will feed 4. Lamb Keema Tacos 3 tbsp extra-virgin olive oil 4 garlic cloves, finely chopped 1 piece of fresh ginger, 2 inches long, peeled, finely chopped 2 bay leaves 2 tsp cumin seeds 1 medium white onion, finely chopped, plus more for serving 2 tbsp ground coriander 1 tbsp plus 1½ tsp garam masala 1 tbsp paprika ½ tsp ground cloves ½ tsp turmeric powder 1 cup tomato purée 2 lbs. ground lamb Kosher salt Juice of ½ lime 1 tbsp. finely chopped mint ½ cup finely chopped cilantro, plus sprigs for serving Warm corn or flour tortillas, 6 inches
Lime wedges Heat oil in a medium heavy pot over medium heat. Cook garlic, ginger, bay leaves, cumin seeds, and chopped on ion, stirring occasionally, until onion is translucent, and edges are golden brown, and spices are fragrant, about 5 minutes. Add coriander, garam masala, paprika, cloves, and turmeric and cook, stirring often, until spices are fragrant, about 2 minutes. Mix in tomato purée and cook, stirring occasionally to keep from burning, until thickened and start ing to stick to bottom of pot. Add lamb and break into small pieces, then add 1 cup water. Season with salt and stir to combine. Cover pot and cook until lamb is cooked through and tender, about 20 minutes. Some of the liquid will have evaporated. Stir lime juice, mint, and ½ cup cilantro into lamb mixture. Build tacos with keema, tor tillas, sour cream, cilantro sprigs, and more onion and serve with lime wedg es to squeeze over them. It’s time to bust out some steak. If you aren’t familiar with the term Carne Asada, it basically means “grilled meat”, so yes, this taco recipe is grilled. I always suggest either a skirt or flank steak when cooking for steak tacos as they marinade well, they are less ex pensive than busting out a quality cut when you truly don’t need to. At its best, marinade for hours after beating it up with a needling tenderizer, al lowing the marinade to work its way inside the beef to break down any fi bers to make the beef more tender, and also to enhance flavor. I know certain people will ignore this tip, but the beef is always better and more tender when cooked to medium rare and always cut/

Carne Asada Tacos For the Marinade Handful of cilantro 1 clove garlic 1 lime, juiced 1/3 cup olive oil 2 tsp honey ½ tsp cumin ½ tsp ancho-chili pepper, or sub with chili powder ½ tsp red pepper flakes Salt and black pepper, to taste
For the Pico De Gallo 4 large Roma tomatoes, about 1 pound, seeded, sliced, and diced small ¼-½ cup diced red or white onion, diced small 1 medium jalapeño pepper, diced finely, about 1 tbsp minced 1 clove garlic smashed, peeled, and minced2green onions, sliced and coarsely chopped2tbsp chopped fresh cilantro ½ lime, juiced ½ tsp salt, or to taste For the Tacos 1 flank steak or skirt steak, 2 lbs., the thicker the better 12 corn, flour, or whole wheat tortillas
I have one more dinner taco to shoot your way before sharing a dessert taco. Shrimp is the main ingredient in this one and what makes this recipe so awesome is an avocado cream sauce that goes with it. As for the shrimp size, much of it depends on whether you want to grill the shrimp or cook in a pan on your stovetop. If grilling, I suggest using 16/20’s, 21/25’s or maybe 26/30’s as if the shrimp get any smaller, they will overcook, and you will have to put them on skewers as they could fall thru the grates. If done in a pan, all these sizes work as well, plus you can also get away with using 31/35’s or 36/40’s. The bigger they are, you may want to cut them in half

Iceberg lettuce or slaw, shredded or slicedAvocado or guacamole Sour cream or Greek yogurt Shredded cheese Roasted corn Red Let’sSqueezeChoppedonioncilantrooflimestartwiththe marinade. In a small food processor, pulse the cilantro, garlic, and lime juice until chopped. Add the remaining marinade ingredients in with the cilantro mixture and pulse until combined. With a needling tenderizer, or with a fork, stab the steak on both sides all over. Place the steak and marinade in a gallon size re-sealable bag. Marinate steak in the refrigerator ideally for 2-4 hours. While the beef is marinating, combine all the ingredients for the Pico de Gallo in a large bowl and toss to combine. Cover with plastic wrap and refrigerate until the tacos are ready. As you get close to grill time, remove the beef from the refrigerator, take the steak out of the marinade and transfer it to a clean plate. Season each side with a few generous pinches of salt and pepper, then let the steak rest for 30 minutes or until it reaches room temperature. Preheat your oiled grill to high. Place the steak onto the hot grates and close the lid and grill for 5 minutes. Flip and repeat for 4 to 5 more minutes. Once the beef is at your desired temp, transfer the steak to a cutting board, tent with foil and let rest for 8-10 minutes before slicing, which will help to seal in the juices. Be sure to slice the steak against the grain. Pop the tortillas on the grill for 20-30 seconds or just until they get a few char lines on each side. Divide thinly sliced strips of the steak among the heated tortillas and top with thinly shredded iceberg lettuce, Pico de Gallo, and cheese if you’d like, or whatever else you may want to throw into them. This marinated steak is outstanding in these tacos, but also great in quesadillas or just about in anything else where beef is used, not to mention just as it is.

Shrimp Tacos with an Avocado Cream Sauce For the Avocado Cream Sauce 1 ¼avocadocupsour cream ¼ cup chopped cilantro 1 clove garlic, minced ¾ tsp salt 3 tbsp olive or avocado oil Juice of one lime For the Shrimp 1 lb. raw small shrimp, peeled and deveined, tails removed 1 tsp chili powder ¼ tsp paprika ¼ tsp salt 1 tbsp olive oil 3 cloves minced garlic Juice of one lime For the Rest 8-12 medium tortillas 1 cup finely shredded green cabbage ½ cup finely shredded red cabbage ½ cup chopped tomato 1 avocado, cubed or sliced 2 limes cut into wedges ½ cup Cotija cheese or another preferred cheese To make the avocado sauce, combine ingredients in a food processor and pulse until smooth and creamy. Store sauce, covered, in the fridge until you’re ready to assemble tacos. Prep all of the taco extras, except the avocado, as that should be done at the last minute to avoid it browning up on you. In a medium bowl, add about 3 tbsp of the avocado sauce to the slaw and mix until well combined. In a medium to large bowl, toss shrimp with chili powder, paprika and salt. In a large skillet, over medium heat, add olive oil and garlic. Stir around for one minute, then add shrimp, stirring constantly until pink and no longer soft, about 5 minutes depending on the size of the shrimp. Squeeze with the juice of one lime and remove to a plate lined with paper towels. Warm the tortillas and assemble the tacos, starting with the cabbage slaw, shrimp, tomatoes, and avocado to the tortillas. Drizzle with more avocado sauce, squeeze a bit of fresh lime juice over the top and sprinkle on the cheese. Who’s ready for dessert? This is a good news/bad news situation. This is a taco themed article, so with that in mind, the bad news is that Klondike has discontinued making the extremely popular Choco-Tacos. I know many friends who are up in arms over this news. The good news is that I’m here to tell you how to make your own, and they come out great. This recipe is great for a crowd, or to take care of the kids for a while as this recipe will get you 18-20 Choco-Tacos. All in all, production will take you about 1 ¼ hours, although they do need time in the freezer at times to solidify, but it is so worth every minute of waiting. This recipe consists of everything being homemade, from the no-churn ice cream to the waffle taco shells. You can obviously buy any of these items if you care to, but I suggest you give this the old college try. Homemade Choco Tacos For the Ripple Fudge No-Churn Ice Cream 1/3 cup heavy cream 2 tbsp brown rice syrup, although corn syrup works as well 1/3 cup light brown sugar 2 tbsp unsweetened cocoa powder ¼ tsp kosher salt 3 ½ oz bittersweet chocolate, chopped or chips 1 tbsp unsalted butter ½ tsp pure vanilla extract 2 cups heavy cream 1 can sweetened condensed milk, 14 oz For the Taco Shells 2 whole eggs 2 large egg whites 1 tsp salt 1 tsp vanilla extract ¼ cup + 1 tbsp light brown sugar 1 cup all-purpose flour 4 tbsp unsalted butter melted and warm2tbsp milk For the Extras 6 oz bittersweet chocolate or semisweet chocolate Sprinkles for topping Chopped pistachios for topping Coconut flakes for topping Starting with the fudge for the ice cream, in a medium saucepan, combine the first 6 ingredients and bring to a simmer. Cook for 3 minutes, stirring occasionally, until melted and smooth. Remove from the heat and stir in the butter and vanilla. Cool for about 10 minutes. Meanwhile, let’s make the ice cream base. Add the heavy cream and sweetened condensed milk to the bowl of a stand-up mixer. Using the whisk attachment, beat until soft peaks form, about 5 minutes. Line a loaf pan or another freezer-safe container with parchment. Add about 1/3 of the ice cream base to the container. Smooth out the top and add a few tablespoons of fudge sauce. Using a knife, swirl the fudge sauce into the ice cream. Repeat the layers until you’ve worked your way through all the ice cream. You should end up with about ½ cup

Transfer the ice cream to the freezer until firm, about 4 hours, ideally overnight. To make the taco shells, in a medium bowl, whisk together the eggs, egg whites, salt, vanilla extract and sugar. Mix in the flour until no specks of white appear. Pour in the butter and salt and mix once more until very smooth. After preheating your waffle maker, drop a tbsp of batter onto the center of the maker. Close and cook for 1 to 2 minutes. Remove immediately and transfer to the center of two layered paper towels. Immediately place the edge of a smallish book in the center and wrap the paper towels/waffle cone around the book, shaping it into a taco. Press on it for 1 minute, then remove and allow to cool completely. Repeat until you’ve worked your way through all the batter. You should end up with about 20 choco taco shells. To assemble, line a baking sheet with parchment. Remove the ice cream from the fridge and allow to come to room temperature for about 10 minutes. Using a teaspoon, spoon it into the choco taco shells and transfer to the baking sheet. Transfer the tacos to the freezer for about 1 hour. The ice cream is sort of soft so it needs this long to set. If you’re using store-bought ice cream, then it will take less time to refreeze. Meanwhile, melt the 6 oz of bittersweet chocolate chunks over a double-boiler or in the microwave for about 1 minute, stirring at the 30 second mark. Dip the tops of the choco tacos in the chocolate, immediately top the chocolate with sprinkles, pistachios or coconut flakes. Transfer back to the freezer to refreeze for about 15 minutes or until you’re ready to serve. Enjoy your tacos boys & girls. A rare book specialist and appraiser frequently seen on national TV, Gloss will discuss growing up in the book business and share insights into the his tory of his bookshop (c. 1825) among other anecdotes. When the pandemic took hold, people stayed indoors and eventually turned to making things at home. If their creations were success ful, why not sell them through such avenues as online stores and websites? Today, crafters and creators, did they but know it, have returned to the oldtime practice of cottage industry work. In years past, women worked from home as wives and mothers. Whether married or single, women could also use their skills in sewing and baking to make some money while staying at home. They worked in the Plymouth, New Hampshire area using a skill at sewing gloves that helped bring a fa mous sportsman to town in the early 1900s. Women in Sandwich, another area community, made hooked rugs and helped start a business to sell their homemade goods. At one time, Plymouth was one of many sleepy, remote country towns. Many people were farmers, while oth ers were shopkeepers. To say times could be challenging was nothing new because everyone worked to grow crops, run their business and make a living. That was the way of life and if money could be tight at times, peo ple were used to it. But women could help bring in money using their skills – without leaving home – and this was quiteTheirappealing.sewingskills helped a baseball factory business to become successful in ThatPlymouth.factory, run by locals Draper and Maynard, did not begin with mak ing baseballs as a goal. Instead, the production was for buckskin gloves to be used by farm workers and others who needed hand protection when toil ingAlvahoutdoors.McQuesten, of Plymouth, came up with a way to do so in the 1830s. He had a solution made from oil and hemlock that softened leather and made it easy to handle. The treat ment also made the leather very du rable. There were other McQuesten family businessmen as well, and Al vah’s brother, Oliver, and Arthur Ward, formed Ward & McQuesten in the area and were successful. They employed local women to sew gloves in a cottage industry-style, which provided extra money to local families. McQuesten was a country tanner, ac cording to information at “History of Plymouth, New Hampshire” by Ezra S. Sterns. It is likely he employed local men to work with him, in the quest to make a successful tanning formula. In the late 1800s to the early part of the 1900s, Plymouth was known for

the manufacture of all kinds of gloves and leather tanning. Eventually, the community also was known for base ball glove manufacturing. For many, baseball was their liveli hood as they made thousands of base balls and other sporting items at the D & M Baseball Factory. Over the years, the high-quality gloves manufactured by the D & M gained such popularity that baseball favorite, Babe Ruth, trav eled to Plymouth and posed for pub licity photos stitching a baseball glove and hobnobbing with local officials. The Draper and Maynard business started in the Ashland, New Hampshire area, producing buckskin gloves. Their gloves were a utilitarian and popular protective gear for laborers. Jason Draper, the son of one of the founders of the family business and his brother-in-law, John Maynard, had a business plan to expand the operation in the 1880s. At the time, baseball players used their bare hands or primitive gloves when fielding balls. This must have been awkward and led to many hand injuries. Perhaps Draper or Maynard had seen a local baseball game and thought to themselves there had to be a better way to protect players. Whatever the reason, they invited Arthur “Doc” Irwin, a professional shortstop, to visit their business. Irwin had suffered some broken fingers during playing season
Working from Home…the Old-Fashioned Way
A cottage industry continued and grew out of the baseball factory and women sewed baseballs for D & M from their homes. Increased production met the demand from the national baseball leagues that needed hundreds of baseballs each year. During the 1920s, over 90 percent of all major league players used D & M gloves and mitts, as well as the company’s balls and bats. Also produced were footballs and basketballs, popular items as the sports grew and many schools and colleges offered football and basketball. When you’re a famous baseball player, you need a good glove. Something well made, sturdy and dependable. That is what brought Babe Ruth and other players to the D & M Baseball Factory in 1916; and it was a good chance for publicity photos. Plymouth was in the news when Red Sox players visited the factory and picked out their own gloves and balls. Many of these gloves had been stitched by area women, from their homes. Whenever a player visited town, crowds gathered and excitement was in the air. But the most thrilling time was the day Babe Ruth visited town, with journalists and photographers in tow. An iconic black-and-white photograph shows Ruth in a full-length raccoon coat talking with those who sewed the gloves and baseballs. Cottage industry women may have made it into some photos as well. In the Sandwich area, hooked rugs, among other handmade goods, was a craft not done by every woman in town, but when Mrs. Coolidge, a wellknown resident stepped into the fray, homemade crafts were elevated and sold.Mrs. Coolidge might have been a cultured woman, but she was no snob. She saw the worth in Sandwich-area women and she respected their skills. She also had an idea: why not encourage area women to make hooked rugs and other goods and sell them to bring in extra income? The idea, while not new, would have been a bit questionable in the 1915 era. Weren’t women supposed to be kept busy tending to their homes and children? When would they find time to make things to sell and would this reflect poorly upon their husbands who were expected to provide for their families?Mrs. Coolidge thought otherwise and began to talk about her idea of getting local women to make and sell items they created at home. By 1926, she formed the Sandwich Home Industries to encourage women to make hooked and braided rugs, and to revive spinning, knitting and weaving in a center where the work could be sold. The newly-formed Sandwich Historical Society helped with an exhibition of rugs made in the village. Held in the local library in 1926, the exhibit was a success. About 100 rugs were displayed, many recently crafted in homes by local women. Mrs. Coolidge and others asked the crafters if they wanted to continue with the idea to sell their rugs, and the answer was yes. They set out to find a local empty building to serve as a shop, with a tearoom. Thus was born the Sandwich Home Industries shop. Local women took turns working in the shop, and the women must have enjoyed seeing their creations sold to the public. Among the handmade items for sale were rugs, jams and jellies and hand-sewnSandwichgoods.Homes Industries was popular and eventually, as word spread, the little group of women making goods from their homes, in one way or another, helped form the larger League of New Hampshire Craftsmen organization that had shops around the state.

When Irwin’s teammates saw the glove, they were impressed and wanted gloves as well. Orders began to come in and the D & M business was off and running. They built a new factory in Ashland in Glove Hollow Brook, near Plymouth. It seemed a natural progression from buckskin gloves to baseball gloves. The D & M may have been the first-ever company to produce baseball gloves; in its heyday, the company made many baseball gloves. By the late 1800s, D & M brought much-needed employment to the area. The company made and sold baseballs, leather goods, such as baseball gloves, and uniforms. After a fire, Draper and Maynard decided to build a new factory on Plymouth’s North Main Street. Soon a 100foot building rose in the downtown Plymouth area. Business was booming and the company employed up to 600 workers; quite an infusion in the local economy.Thenew space allowed Draper and Maynard to expand their sporting goods line even further, and by 1905 the company was considered a leading manufacturer in northern New England.The idea for the baseball glove had revolutionized the sport, and spilled over into other sports as well, and D & M made boxing gloves and other padded leather sporting goods.
