Make Each Hike a “Goldilocks” Story and photos by Barbara Neville Wilson On Saturday I wake to a subtly rose colored, gilt-edged sky. The sun just rising above the mountains is framed, either side, by silhouettes of fir trees. I flick a snowflake from my eyeglasses, duck into Guyot Shelter, and shake the shoulder of my friend. “You have to see this,” I whisper, trying not to wake sleeping hikers around us. “The sunrise is stunning…and it’s snowing!”

She rubs her sleepy eyes and stares into my face. “You have GOT to be kidding,” she breathes venomously and burrows deeper into her sleeping bag.

This year - 2017 - has been a splendid one for hiking. Not too wet, not too cold. Many days have been just right, and despite the turn of the calendar, there are still many hikes ahead. How can you make each of them a “Goldilocks”?

First off, recognize that while every hike can be “Just Right” after it’s over, and most will have amazing highs along the way, there is rarely a trail that will be pure joy at every step, nor does every hiker awake fired up for the miles ahead. Like most every activity worth doing, it takes some concerted effort (read: “hard work” and “discomfort”) along the way to reach the stunning view, the coveted destination, or the next stepping-off point for the journey ahead. And sometimes the best memories come while just putting one foot in front of the other: the

funny expression on a friend’s face as she negotiates a brook crossing; the quick glimpse of a critter near its home; the answers to life’s questions you find in conversation; the short quips of comradery when you meet new friends on a pass.

Second, be prepared. Know where you’re going and how to recognize the path along the way. Bring a trail map with you and if available, a description, too. Being ever conscious of weight, I cut my trail maps out of the guidebook and carry them in zip-lock bags. You may be tempted to just snap a photo of the map on the kiosk at the trailhead and have it available on your phone, but it’s always wise to carry a hard copy back-up, too. Phones fail, and an Internet connection is not always reliable.

Make sure you are physically ready for the hike you choose and

the time you allow to complete it is realistic. When hiking Mount Major last month, we met up with some city dwellers. They were excited to have found the trail and had left plenty of time to hike it, they thought. After all, they walk all the time in New York City at a pace of a few miles per hour. When we met them around 4:30 pm at the top of the mountain, their 7 pm appointment on the other side of the lake seemed impossibly far away, especially since they still had to hike down the mountain—and in our rocky region, the going down often takes longer than the climbing up.

Dress appropriately for the weather when you leave, and carry gear for the weather you may

encounter. “If you don’t like the weather, just wait a minute,” is a New England adage with special resonance around here. In the days before our overnight at Guyot, weather predictions had vacillated frequently, with precipitation probability of 30 percent one day and 60 percent the next, and temperatures ranging from the high-40s to the mid-30s. We carried layers of thermals and fleece, mittens and hats, and waterproof raingear. Although we planned to stay in the shelter, we still carried a tent in case plans had to change. We were shocked the second morning when we met a trio of 20-somethings on the 4,265foot high Bondcliff who asked if we had a pair of mittens to sell. No hat, no mittens, an oversized cotton sweatshirt, and a plan to hike at least eight more miles into a night with the prediction of freezing temperatures made us jokingly check, “Hope you have lots more layers in your packs.” “Nope. This is it,” they answered, motioning to what they were wearing, and off they clomped into the Pemigewasset wilderness. I think my jaw dragged the ground for a few hundred yards after that encounter. I still wonder: did they reconsider their plans later • Hiking Continued on page 4

panion and I decided to turn around before we reached the coveted vista at the top of the mountain. While it would seem a shame to be “beaten” by a short day hike, you have to be ready to abort if your margin—daylight, warmth, energy—decreases substantially. The Bard was right.

Sometimes discretion is the better part of valor. There’s nothing brave about walking headlong into a dicey situation you could have avoided.

No one can avoid every emergency that arises, but being prepared can certainly help prevent a crisis from escalating to disaster.

For decades, hikers have been advised to pack the “Ten Essentials” in their pack regardless of the distance they intend to go. In addition to extra clothing, maps, and emergency shelter, make sure you carry sun protection, a headlamp or flashlight, first aid kit, matches or lighter, knife or multi-purpose tool, and more food and water than you expect to need. You should also in-

clude a cell phone and extra battery cells, recognizing, however, that there is no guarantee of cell service everywhere, and that you alone are responsible for your safety. New Hampshire Fish and Game and White Mountain National Forest personnel do not have resources to get involved with any but the most extreme emergency situations.

When Women Played Baseball Program Coming to the Wright Museum “When Women Played Baseball: The Story of Margaret, Nellie, and Rose”, a lecture and book signing by author Barbara Gregorich, will take place on Tuesday, October 17 from 7 to 8 pm at the Wright Museum of World War II on Center Street in Wolfeboro.

In 1934 three young women, still in their teens, played hardball on the last traveling Bloomer Girl baseball team. Their stories include abandonment, loss at sea, triumphs, world war and, always, baseball.

Margaret, Nellie, and Rose came from different backgrounds and had different reasons for playing baseball. When the season was over they followed different paths — two went on to serve in the WAVES and the WACS during WW II, and one went on to play for the Rockford Peaches of the All-American Girls Baseball League. It is not wrong to say that playing baseball profoundly

affected their lives and helped determine their futures.

Barbara Gregorich writes fiction, nonfiction, and poetry. Her novel She’s on First was called “the best book that’s written on the idea of the first woman to play professional baseball,” and her nonfiction title, Women at Play: The Story of Women in Baseball, won the SABR-Macmillan Award for Best Baseball Research of the Year.

Barbara has a B.A. in literature and history from Kent State University and an M.A. in literature from the University of Wisconsin. She taught English at Kent State University and Cuyahoga Community College.

Audubon Announces Program on Raptors On Thursday, October 19 at 7 pm at the Loon Center in Moultonborough, the Lakes Region Chapter of the New Hampshire Audubon Society will present a program by Phil Brown titled Raptor Migration in New Hampshire – What the Numbers Tell Us. The spectacle of large numbers of migrating hawks, eagles, falcons and other ‘raptors’ has always captivated people, and historical accounts of this phenomenon in New Hampshire date back to the 1700s. Conservation of raptors is now a major theme across the globe, and species’ population changes can provide evidence for conservation needs – or successes. The program will be filled with raptor photography.

NH Audubon has teamed with www. hawkcount.org, an online database that allows access to daily or seasonal counts of all migratory raptors. Learn how you can participate in this “hawk watch” from September to November here in New Hampshire.

Bean Hole Bean Supper, a New England Tradition, Returns to Gilford A local tradition – the Harvest Supper – returns to Gilford on Saturday, October 21. The annual Harvest Supper, put on by the folks at the Methodist Church on Rt. 11A in Gilford, is not to be missed! Whether you love a good, old-fashioned boiled dinner of corned beef and cabbage, are particularly fond of homemade apple and pumpkin pie or just have to have the finest in baked beans, this dinner offers something for almost everyone.

For over 40 years now the members of the congregation have been putting this dinner on every year in the early fall. They work hard to make the

Fellowship Hall come alive with autumn colors as the smells of slowcooked corned beef fill the air. Over 100 pounds of potatoes and carrots are peeled and chopped and 60 pounds of dry beans are sorted, washed, soaked, and cooked overnight in the bean pits behind the church.

This meal is a huge production for the church and has become a favorite of the church supper crowd in the Lakes Region.

Tickets are available by calling the church office at 603-524-3289. They sell out quickly, so call early! There are two servings to choose from, one

at 5 pm, and another at 6:30 pm. If you are interested in knowing more about how they make the bean hole beans, you are more than welcome to come and watch as they are put into the kettles and lowered into the ground on

Friday night before the dinner. They go into the holes promptly at 4:30 pm, so don’t be late and be sure to bring your camera to get pictures of this age old New England tradition!

The continued community support for local servicemen and women who are still being deployed and for the ones who are stateside is appreciated.

tion organizations, and communities in southern New Hampshire and Maine, including the forests of Branch Hill Farm and the BHF Jones Brook East forest site of this workshop. The Jones Brook forest was severely ‘high–graded’ before BHF purchased it, meaning that nearly all the high value trees had been removed, a common problem in NH. Moreno will show how various forestry practices implemented over the last nine years have begun to improve the forest’s health and its value for timber. He’ll also discuss the economics of doing nothing versus active restoration practices and talk about how to deal with the problem of beech taking over after high-grading. The workshop will entail less than a mile of walking with several stops for discussion, and is appropriate for woodlot owners, forestry students and professionals, and anyone interested in the health of our forests.

Historical Fun at the NH Farm Museum!

By Sarah Wright Step back in time at the New Hampshire Farm Museum, and learn about the state’s rural and agricultural heritage. The museum consists of two adjoining farmsteads—the historic Jones Farm and the Plummer Homestead. Situated on 50 acres of Plummer’s Ridge in Milton, the properties date back to the late 18th century and have been passed down in the same families for generations.

Listed on the National Register of Historic Places, the museum offers guided tours where visitors can view exhibits on rural life and agriculture.

The farm is still a working farm today, with heritage breed farm animals and heirloom varieties of vegetables. The NH Farm Museum hosts many special events throughout the year, and this fall promises to be lots of fun for families.

Gerhard’s relationship with the guitar began at age 10, when he happened upon classical guitar master Andrés Segovia on television. “I’d heard all the pop music on the radio and maybe a little of that 60’s folk stuff, but this was the first time I’d ever heard the guitar all by itself and the sound just instantly got me,” Ed remembers. He finally got his first guitar at age 14. His initial interest in classical guitar changed dramatically when he heard the music of bluesman Mississippi John Hurt.

He quit lessons after the third class.

He took some informal lessons with friends and learned by ear, slowing down LPs to half-speed to pick out the tricky parts. At 15, Ed was already beginning to perform in local church

basement coffeehouses, playing solo and jamming with friends.

In 1977 Gerhard moved to New Hampshire, where he has resided ever since. Joining a thriving folk and acoustic music scene proved invaluable for the young guitarist. “There seemed to be no limitation on places to play back then, or more importantly, what you could play,” says Ed. “You could play anything you wanted as long as people stayed around and drank.”

When Gerhard was not performing solo, he could often be seen sitting in with other musicians. “I loved to play, it didn’t matter if I was solo or sideman.” During this period Ed began composing and arranging music for solo guitar, using a staggering array of alternative guitar tunings.

Based truly on the quality of his work, Ed built his considerable reputation, beginning with his debut album “Night Birds” in 1987. It garnered a spot in the Boston Globe Critics Poll Top 10 Albums of the Year. Shortly after the album’s release, Windham Hill Records included Ed on its Guitar Sampler (Vol.1). One of the highlights of the 300,000-unit selling Sampler, “The Handing Down” introduced the world to the beauty of Ed Gerhard’s music. “That one piece made me a lot of friends around the world,” Ed says.

Chillin’ While Grillin’ ~ The Secret (Recipe) is Out! Caramel Apple Bread Pudding

By Chef Kelly Ross Absolutely NO GRILLIN’ in this article, but I am going to share my all-time favorite dessert recipe. I have been making this for years and I do have a few variations of it, but it’s time to share the secret on the recipe that I am most asked for - my Caramel Apple Bread Pudding, which is truly outstanding. As awesome as it is, it is the sauce that not only really makes it perfection, but is the main topic of those who want my recipe. I have shared this recipe with few, but it is time to do so, especially where we are truly getting into the perfect time of year to cook and enjoy bread pudding.

I’m not sure if I have ever had a bread

pudding I didn’t like, but this one is

truly over the top.

I will admit that it is a little bit of a process putting this together from start to finish and the time frame is many hours. The reason for this is that parts of the recipe, one for the bread pudding and one for the sauce, require a cooking process and then a cooling process before finishing. Actual prep time isn’t much more than an hour or so, but it is spread out over the course of a day. (I often make it a two-day process.) The sauce is best to make the day before the actual cooking of the pudding anyway.

Since it has to be cooked in advance, let’s start with the yummy sauce. Here is what is needed: Irish Whiskey Vanilla Cream Sauce 1 cup heavy cream 1/3 cup milk pinch of salt 3 egg yolks 1/3 cup sugar

½ tsp vanilla ¼ cup of Jameson’s Irish Whisky In a small bowl, whisk egg yolks and sugar until well blended. In a small sauce pan, combine the cream, milk and salt and bring it to a boil, then reduce to a low heat. The next few steps can be a little tricky, so keep that in mind. Whisk about ½ cup of the cream mixture into the eggs, but do it slowly, stirring well. If you add too quickly and don’t stir well, the mixture could cook the eggs. Once you have done this step, just as slowly start adding the egg mixture back into the warm cream. Continue whisking over a low/medium heat until the sauce starts to thicken. I can’t emphasize enough that you cannot let this sauce boil or it will break. Whisking constantly is also very important. This process can take 5-10 minutes, but you must be diligent and never leave it unattended. I like it nice and thick, as you will be adding the whiskey and vanilla once it is done.

So yes, once it comes off the stove, add the whiskey and vanilla. Refrigerate and let it cool. Give it an occasional stir. Once it is cool, wrap it up and it’ll be ready for you once the pudding is coming out of the oven.

As for the actual bread pudding, there is one easy step that you need to do early. I usually do this at the same time I am preparing the sauce, as it needs to be cooked and cooled before the next step can be made. Anyway, here is what you will need for the bread • Chillin’ Continued on page 21

A Night of Music to Benefit The Earthkeepers Mindful Practices Project The Peacheaters and Bruce Marshall and the Nor’Easters will perform at Kingswood Arts Center in Wolfeboro on Saturday, November 4 at 7 pm for a spectacular all-ages show celebrating the music of The Allman Brothers Band and Marshall Tucker to benefit the Earthkeepers Mindful Practices Project.

The Earthkeepers after-school program for elementary school children in Governor Wentworth Regional School District confronts adverse childhood experiences and creates safe, supportive environments where students make the positive connections with adults and peers, learn to regulate their emotions so they can focus and behave appropriately, and feel confident enough to advance their learning.

Studies now show that nearly every school has children who have been exposed to overwhelming experiences, such as witnessing violence between their caretakers, being the direct targets of physical, emotional or sexual abuse; have a parent with substance abuse or mental health issues; or, live in a household with an adult who had spent time in prison. If we add those who are chronically bullied, experience periods of homelessness and food insecurity, undergo multiple invasive medical procedures, or live with a parent traumatized by recent combat, the number of children affected by significant adversity grows even larger.

Traumatic experiences can impact learning, behavior and relationships at school.

Mindful practices include connecting with the natural world, earth stewardship, community building, meditation, yoga, movement, and creative arts. Earthkeepers was first offered at the Libby Museum of Natural History in Wolfeboro in the summer of 1994, and has been implemented in high school and middle school settings, special workshops, and through after-school enrichment clubs in several of the local elementary schools. Currently, the 5/6 grade team at New Durham School is piloting Mindful Practices as an integrated Social-Emotional Learning curriculum in their classrooms. The goal of Mindful Practices is to empower all students to understand their emotions, manage stress, strengthen the school community and develop leadership skills.

4 cups milk 1 cup sugar 7 eggs 1 tsp vanilla A one-pound loaf of a medium weight homemade quality bread, as in an Irish bread or a boule bread with the crust taken off, cubed into one-inch cubes. You don’t want a light and airy bread.

4-5 large apples, peeled and sliced in ½ inch slices 1 cup caramel sauce 1/2 cup sugar mixed with 1 tbsp of ground cinnamon For the easy step that needs to be done early, combine the milk and the one cup of sugar to a boil while stirring well to make sure the sugar has been dissolved. Once it comes to a boil, refrigerate until completely cooled.

While the liquid is chilling, this to me is the best time to trim up the bread.

With a serrated knife, trim all the crust off the whole piece of bread, and then cut into one-inch cubes. I then put the bread in a large Ziplock bag until ready to use. This is also the time to peel and slice the apples. I also put these into a Ziplock and squeeze out all of the air and let them wait. Prep your sugar/ cinnamon mixture.

Once the milk mixture is completely chilled, whisk the 7 eggs until light in color. Slowly, whisk the milk mix into the eggs. Whisk in the vanilla; at this point, brush your baking dish with melted butter. Ideally, your pan, or baking dish, should have high walls.

Once you see the bread content and such, find the pan or dish that you own.

At this point, take half of the cubed bread and put into the buttered dish/ pan. Make sure it is leveled throughout.

Pour half of the milk/egg concoction over the top. You want the bread to absorb the mixture. Don’t be afraid to pat the bread and put some pressure on it to absorb as much as possible. Then

take half of your sugar/cinnamon mix and sprinkle throughout. Next, take your sliced apples and lay them over the top. Drizzle half of the caramel sauce over the apples. Now it is time to repeat the process short of the apples.

Put the rest of the bread cubes in, add the milk/egg mix, push down on the bread again, add the rest of the sugar/ cinnamon mix, and then drizzle the caramel throughout.

Next, you need a pan big enough to put the pan of bread pudding into. The cooking process goes so much better if the bread pudding cooks in a hot water bath. It won’t dry up and it helps the pudding stay so moist. Once you find another pan, put the bread pudding pan into that pan, and pour boiling hot water into the bottom pan so that the water comes up to about halfway on the bread pudding pan. Put this into a preheated 350-degree oven and cook for about an hour.

After 45 minutes, keep an eye on it.

You definitely don’t want the top to burn. If your oven runs hot, you may want to go for a 325-degree oven.

Ideally, when done, you should be able to insert a knife into the middle where it comes out moist but not wet. When you push down on it, it should spring right back. If the top is at the right color but the middle isn’t done, no worries. Gently put a piece of foil over the top of it so it is somewhat bubbled over the top. You do not want the foil to lay directly on the pudding. Once you take the pudding out of the oven, let it sit for a good 10-15 minutes. It will likely drop in size as it generally puffs up nice in the oven. Do not fret – it drops somewhat. It’s pretty much expected to. Scoop into a bowl and drizzle some of the sauce over the top of it. I guarantee this will be one of the best bread puddings you have ever had, and I guarantee your guests will be WOWED! Yester year Watch Out for Witches and Spirits!

By Kathi Caldwell-Hopper New England, and the Lakes Region of NH, is the perfect location for ghosts and witches. After all, this area of the country was where settlers built homes and towns so long ago. Tales of witch hunts and ghosts are particularly popular in the New England states, and NH has its shares of such stories.

The Lakes Region is steeped in history, with tales of olden-day witches and other creatures that go bump in the night. While these tales are heard less often than more widely known stories of early Colonial settlers, it is said, however, that ghosts roam the hills and valleys of the Lakes Region.

Perhaps the most interesting spiritual tales come from tranquil Canterbury Shaker Village in Canterbury, NH. The Village was the home of the believers in Mother Ann Lee’s religion, with members commonly called Shakers.

Many men, women and children lived and worked at Canterbury Shaker Village in the 1800s and into the 1900s.

The peaceful religious group never

caused complaint from their neighbors and the Shakers were known to show compassion to all.

What is less well known is the fact that the Shakers believed in ghosts, or spirits as they called them. This is surprising, given that many Christian beliefs find the idea of ghosts or a spirit world to be off limits or downright absurd.

Not so the Shakers. There are written accounts of Shakers being visited by spirits of departed fellow members and others. One account was written, “At this day most (but not all) of the Shaker people are sincere believers in what is commonly called Spiritualism.

In one of the societies it is believed a magnificent spiritual city, densely inhabited, and filled with palaces and fine residences, lies upon their domain, and at but a little distance from the terrestrial buildings of the Church family; and frequent communications come from this spirit city to their neighbors.”

frequently been visited by a tribe of Indians (spirits of Indians), who used to live in this country, and whose spirits still come back here occasionally.”

Ghostly sightings, were common among the Shakers. In the 1800s and early 1900s, if the neighbors of the Canterbury Shakers had known about the practice of calling forth the spirits of the dead, they would have likely been baffled or distressed. Such things as séances were looked upon as akin to witchcraft for many years. For many Shakers, however, spiritual sightings and calling upon spirits were simply ways to communicate with those who had passed to heaven. If one believed in an afterlife, it stood to reason those in the after world might wish to communicate with loved ones left behind.

Of all the Halloween creatures, none can frighten as much as a witch. Tales of these powerful creatures, said to be in relationship with the devil, abound, especially at Halloween.

During the 1700s and 1800s, women who were odd or eccentric often had the label of witch attached to their names.

At the height of the witch hunting hysteria, a woman had only to anger a neighbor for the cry of “witch!” to ring out in a community.

According to Eva A. Speare, author of NH Folk Tales, a witch once lived in Plymouth, New Hampshire in the form of a hermit.

In the early 20th century, a hermit named “Old Dr. Dearborn” lived in a small cottage. His home was very remote, and was located outside Plymouth. He was suffering from an illness and asked for food and medicine

from his nearest neighbors. Speare and another girl had the task of carrying food and supplies to Dr. Dearborn.

One day, as the children were visiting the hermit, he related to them his encounter with a witch. He said that when he was a teenager living in nearby Campton, his father owned a fine horse, which the hermit often rode.

On an evening horse ride, the hermit passed the home of a woman named Dolly, said to be a witch. Suddenly, a black cat ran from Dolly’s porch and leaped to the horse’s neck.

The horse stopped in its tracks, and refused to move, even when the rider beat it with a whip. Also taking a beating with a whip was the black cat, who clung to the horse’s neck.

Eventually the cat ran off and the horse took the boy home.

The next day when the hermit went to check on the horse, it hadn’t a mark on it and seemed its usual healthy self. But as for Dolly, a neighbor soon arrived and related that she was nearly dead, “covered with welts and bruises and scarcely breathing from fatigue.”

If witches strike fear into our hearts, a walk through a cemetery on a dark night can set the stage for a ghostly or bewitching visitation. A New England cemetery, where lichen-covered stones lean this way and that in the ground causes even the bravest to become fearful.

Ghostly encounters seem to be common in the area, and this writer had a cousin who fled in fear after perhaps coming upon a ghost on a mountaintop.

He struck out from his parents’ home on the outskirts of his town. He had in mind to hike a small mountain, using a familiar trail which led to an outdoor cathedral with wooden benches and a large wooden cross. He had visited the spot often and loved the view of the village spread out far below.

The day was unusually warm, the foliage pretty and the sun shining in a brilliantly blue sky. He easily climbed the path to the mountain cathedral, eager to sit on a bench, relax and take in the view. Oddly enough, he realized part way up the mountain that he seemed to have the area to himself, although on a nice fall day such as this was, it was normally a busy recreation area. The quiet was broken only by the wind sawing through the tall trees.

As the trail flattened out, he was relieved to know he was at the top and could soon rest. He bounded into the open area from the end of the trail and glanced around. “It seemed I wasn’t alone after all,” he recalled. On a

Needless to say, he ran down the path, and reached the village in record time! What had started as a nice fall hike ended in heart-pounding fear, when he realized he was the only living person around for miles…and he was alone with a possible ghost!

Fear of cemeteries was not always as prevalent, because in the early days of central New Hampshire settlement, people buried loved ones on their own land.

Towns were few and far between, and people made their own family graveyards near their homesteads.

There was probably less fear of a graveyard where well-known loved ones were buried. Here were the

bench near the edge of the clearing and clifftop, a woman sat before the cross.

Her head was bowed and her general appearance was one of sadness. Her back was turned to him, but even so, my cousin sensed a grief about the woman.

He was also surprised to see she was wearing what appeared to be garments from another era, her dress long and a dark veil covering her bowed head. She emanated sadness as she sat alone and my cousin felt he should back away and not intrude. He turned to leave, using the only path down from the mountain.

For a second he considered leaving, and then thought that if he was quiet, he could enjoy the spot too, because he had hiked far and wanted to spend time at the spot.

He turned back around a second later, and was shocked to find the woman had vanished. “There was no one else around, and no way she could have exited the mountain without walking behind me on the path, which was the only way to get to the bottom.

The only other way to leave the spot was to throw oneself off the edge of the mountain area, and no living person would do such a thing. I had no idea where she has gone…except to say she had vanished into thin air.”

final resting places of a much-missed mother, grandparents, or siblings.

Drive the secondary roads around the Lakes Region and it will not take you long to come across old family or community graveyards. Stones mark the graves of those who died many years ago, some even from the Revolutionary War era.

From ghostly visitations among the Shakers to witches to menacing or roaming spirits, the Lakes Region indeed is alive with reminders of the departed. As Halloween, the most haunted time of year, approaches, it is up to each of us to decide if we believe such chilling tales.
