August Workshops at Sandwich Home Industries The Sandwich Home Industries will host two workshops by glass artist Lynn Haust - “Kiln Fired Sun Catchers” and “Kiln Fired Glass Pendants” during the month of August. On August 14 from 10 am to noon, learn the fun art of glass melting. Cut brilliant colored pieces of sparkling glass and combine them with stringers, noodles, and confetti. Your creations will be fired in a kiln, melting the glass into beautiful sun catchers. Simple wire working will be covered to hang your pieces. Due to firing and annealing times, your finished pieces can be picked up or sent to you. You will be able to make one large 6x6in. piece or several smaller pieces. Finished examples and creative ideas will be available. Glass technology, safety, glass cutting, and equipment will be covered. On August 23 and 24, join in a fastpaced two-day workshop that will give you a chance to explore kiln-fired glass and many of the techniques that make melting glass so exciting. Using clear and black Bullseye glass as a base, design and create a collection of glass pendants using dichroic, transparent and opaque glass. In the first class, you will be cutting the dichroic glass to create color and design. The clear and black dichroic glass pieces will be fully fused into two large squares. In the second class, you will cold work the glass by cutting and shaping the glass into pendants. The pieces will be fired a second time to fire polish the glass into the finished pendants. Get ready to

39 Years and Going Strong: Meredith Fine Arts and Crafts Festival Arts and crafts enthusiasts will want to be in Meredith, NH on Saturday and Sunday, August 25 and 26 as the Meredith Area Chamber of Commerce, in conjunction with Meredith Village Savings Bank, presents the 39th Annual Lakes Region Fine Arts and Crafts Festival. The event, which will be held from 9 am to 5 pm both days, will transform the Main Street of the quaint lakeside village of Meredith, as well as the upper parking lot of the Mill Falls Marketplace, into an outdoor art gallery featuring the works of more than 80 painters, sculptors, jewelers, potters, photographers, and quilters. Spectators will be impressed with the variety and quality of exhibits the Festival has to offer. Booths will include wildlife photography, metal and wood sculptures, stained glass, handmade jewelry, baskets, leather projects, and abstract and traditional oil painting and watercolors. All items

are original creations and the artists and craftsmen will be available throughout the weekend to meet and converse with customers.

Over the years, the Festival has gained a solid reputation among New England artists and craftsmen and is the largest quality arts and crafts event

in the area. Live music will fill the air for those walking through the Festival. Performing at this year’s event on both Saturday and Sunday will be Marc Elbaum and Christine Chaisson, who will play jazz, classic rock and great American songs from the 1950’s, 60’s and 70’s. Phil Sanguedolce and Jarrod Taylor will return to entertain fairgoers with a variety of folk music and classic rock. The Masons will be on hand in their usual spot offering delicious homemade pie and ice cream and the Altrusa Club of Meredith will be serving hot dogs, chips, and sodas. Free shuttle bus service courtesy of the Lakes Region Airport Shuttle will be available from both the north and south sides of Route 3 and will run continuously both days. My Favorite Things Brings Adrienne Danrich to Wolfeboro Strains of “Raindrops on roses and whiskers on kittens” will fill the air the evening of August 17 at Anderson Hall when Adrienne Danrich makes a return to Wolfeboro with her eclectic recital called My Favorite Things. All the songs contained in Danrich’s program mean a great deal to her. She will tie her personal stories and anecdotes about how the songs have come to be a part of her repertoire as she performs some familiar and perhaps some not so familiar songs with her beautiful soprano voice. Included will be songs from the American Songbook, Broadway, Opera and traditional spirituals. Ms. Danrich is an alumna of the Eastman School of Music and the University of Cincinnati College Conservatory of Music and while still a student there she was commissioned by the Cincinnati Opera to write This Little Light of Mine: The Stories of Marian Anderson ad Leontyne Price which won a 2011 National Academy

Adrienne Danrich of Television Art and Sciences Chicago/Midwest Emmy. She has also written and performed An Evening in the Harlem Renaissance inspired by the life of Langston Hughes and Echoes

of the Harlem Renaissance. Her latest endeavor is her newly written onewoman show, Love & Trouble: Five Personas – One Voice. She will be accompanied by pianist Djordje Nesic.

Wanakee Wilderness 5K Happening on August 18 The Sixth Annual Wanakee Wilderness 5K is a fun event that will take place on Saturday, August 18 at 9 am at the Wanakee United Methodist Center, located at 75 Upper New Hampton Road in Meredith. The race is a cross-country format and will begin at the Farmhouse, with dirt paths and hiking trails that transition to hills and fields around Wanakee. The race ends back at the main camp; the course is challenging with hills and beautiful views. The first 100 people to register will

receive a race t-shirt. Families are encouraged to attend the fun day. Race day registration will begin at 7:30 am and the race will start at 9 am, rain or shine. There will be an awards ceremony after the race with the Wanakee Annual Homecoming Chicken BBQ beginning at 11:30 am. Erickson to present “The Female Computers” of WWII On Tuesday, August 14 from 7 to 8 pm, producer/director and Temple University Professor, LeAnn Erickson, will discuss a secret U.S. military program launched in 1942 that remains largely unknown to the public. Part of the Wright Museum’s Lecture Series, sponsored by Ron Goodgame and Donna Canney, this lecture will feature Erickson’s documentary film, Top Secret Rosies, The Female “Computers” of WWII. According to Erickson, this program recruited female mathematicians who would become human “computers” for the Army. These women worked round-the-clock shifts and created ballistics tables for every weapon in the U.S. arsenal. “‘Rosie’ made the weapons, but the female computers made them

World War II Top Secret Rosies. (Courtesy photo) accurate,” said Mike Culver, Wright Museum executive director. When the first computer was developed to aid the calculation efforts, six women became its first programmers. Their work was not only

crucial to allied victory, it carried a moral weight. “These women had to reconcile the issue of ending a world war with the recognition that their computations made every Allied bomb and gun more

deadly,” he said. “They experienced a real moral burden.” Top Secret Rosies, The Female “Computers” of WWII will be held in Wolfeboro Town Hall’s Great Hall. Doors open at 6:30 pm. Admission is $3 for members and $8 for non-members. Seating is limited, and reservations can be made by calling 603-569-1212. The Wright Museum’s Lecture Series takes place every Tuesday through the end of the museum’s season, which concludes October 31. Fred and Paula Markus at their camp, circa 1932. and Fred’s demanding career as an architect. Luckily for all those who want to protect the beloved loons and to also enjoy the natural world, Fred and Paula had a plan to share their Lakes Region getaway with all those who came after them. According to Harry Vogel, executive director and senior biologist for the Loon Preservation Committee in Moultonborough, the history of the Loon Center and Markus Wildlife Sanctuary also is the story of Fred and Paula Markus. The sanctuary and supporting foundation are named for the couple, and it is the fulfillment of Fred’s dream that Hemlock Point (where he built his cabin) be maintained in its natural state forever. Today, many visitors stop by the Loon Center to browse the charming gift shop with loon-focused goods. Visitors also come to the Loon Center

for special educational programs and to see the interactive exhibits on the loon. Additionally, people come for the walking trails on the property that wind through the woods and hug the shoreline of Winnipesaukee. There are 1.7 miles of trails; the outdoor area is open year-round to the public free of charge. All this is the gift of the Markus family, and their story is an amazing one of forging a life in a new country long ago and a dedication to protect wildlife and the environment. Frederick Markus was born in 1893 in Dresden, Germany. With his parents and two sisters, Fred immigrated to Lawrence, Massachusetts before the turn of the 20th century. north, Fred would stop at a grocer and purchase a half-dozen bananas. He kept track of the days by eating a banana a day. When he finished the bananas, he knew it was time to leave camp and return to work! The Markus’ adopted two sons from Europe and the boys had the pleasure of making frequent trips to the camp in summer…and winter. Son Eric reminisced, “The Camp - two words with a very special meaning for me for as long as I can remember. It meant our place up at the lake - Hemlock Point.” He recalls spending summers at the camp with his mother. Fred worked at his job in the city but drove up on weekends. Although Fred would rise to become one of the most sought-after architects in the Boston area, the pastor told his mother upon Fred’s elementary school graduation, “Fred isn’t very clever. It’s best that you send him to the mill to work.” Luckily, Fred’s mother ignored that piece of advice and Fred went on to get a scholarship to MIT after high school. The family lived and worked in the city, but they took vacations to the Canobie Lake area, where Fred fell in love with the lakes and woods of New Hampshire. After serving in WWI, Fred went to work for a prestigious architectural firm, Sheply Rutan and Coolidge. His talents and intelligence must have been obvious, because before long, Fred was assigned to be the clerk of the works for the construction of a Unitarian Church in Washington, DC. It was there that Fred met Paula Kutscher, a Swiss secretary who spoke seven languages and had been sent to Washington by a Swiss bank to help settle international financial issues following the war. It is obvious why Fred was attracted to Paula: she was widely traveled and worked as a translator, as well as being a teacher and artist. She was keenly interested in painting, music, photography and ceramics, among other things. On top of this, Paula heard Jane Addams speak for world peace and volunteered to serve as a translator; to this end, Paula joined the Women’s International League, founded by Addams. Fred and Paula married in New York City in 1928 and took a honeymoon

Upon their return to the United States, they settled in the Boston area, where Fred became a prominent hospital architect and a partner in the new firm of Markus & Nacka. Hospital design was Fred’s specialty, and he revised existing hospital floor plans to make a more efficient use of space. In the winter of 1932, Fred and Paula bought a 150-acre tract of land on Lake Winnipesaukee in the Moultonborough area. The land had rugged terrain and about a half-mile of shoreline. Because snow covered the ground, Fred and Paula could not see the slash and unwanted tree trunks that dotted the land due to logging from the 1920s to early 1930s. (Fred is said to have later remarked that if he had seen the land in the summer, he never would have purchased it.) However, the couple rolled up their sleeves to build a cabin. Over time the rough piece of land became a haven for the hardworking Fred and Paula. Fred loved roughing it and that meant not paying attention to the time or what day it was when they retreated to their Winnipesaukee cabin. Fred would take off his watch before leaving Boston for New Hampshire. On the way

Eric says it was so quiet on the lake in those days there was no missing the sound of the car horn carried across the still water. Over the years, Fred and Paula cut and established trails through the property and to Hemlock Point. They left an old logger’s shack intact; it had been used as a warming hut and cookhouse during the days when logging was done on the land. Wanting to get away from the demands of the city, Fred and Paula led simple lives at their Winnipesaukee camp. There was no running water and no phone. They often lived out of doors or in simple structures left behind by the loggers. In the summer, they rowed by canoe to the middle of the bay and filled two big buckets with water. In the winter, they cut through the ice with a hatchet to gain access to lake water. The couple built a Japanese rock garden, and Fred at one time began to

Fred observed a loon nest on the property and that began his desire that the loon be a protected species. (Fred was one of the original Loon Rangers, who worked to protect the loon.) Fred’s ideas were straightforward: he wanted the loons protected and he wanted the land he enjoyed to also be protected, but not

fenced in. He had a vision that his land could be a place where people could hike and wander through the woods and learn about nature and living in harmony with the great outdoors. As the years went on, the Markus family noticed the number of birds and other wildlife on and around the lake was decreasing. They knew it was likely because of shoreline development. With great foresight, in the 1970s Fred purchased an additional 50 acres of marsh area and water inlets. It seems clear Fred was on a bit of a mission to protect the natural world by this time, and he selectively cut trees to create more open areas to plant berrybearing shrubs and trees. He placed wood duck and other nesting boxes around the property, as well as creating two loon nesting sites in the marshes. While there is no doubt Fred and Paula became more and more aware of the need to preserve the land, the shoreline and the beloved wildlife of the area, they certainly enjoyed their time at the

lake indulging in simple pleasures. The extended family is shown in old photos competing in canoe races, taking out the little Dill Pickle boat, cooking over an open fire, swimming in the lake, and generally having a wonderful time. Fred created the Paula Anna Markus Foundation in 1966. That foundation granted a 99-year lease to the Audubon Society of New Hampshire, and the site now serves as the headquarters of the Loon Preservation Committee. These days, the property Fred and Paula first saw during a snowy winter, is a busy place. The paths the couple cut so long ago have created a network of walking trails for the public to enjoy. With many acres of property and undeveloped shoreline, the sanctuary is just that: a haven for wildlife, with a gift shop, offices, meeting space and a research lab. It also is a promise fulfilled that no development will mar the natural beauty. One must assume Fred and Paula would be proud of all that has been accomplished at their former camp, a place where they could hike, swim, canoe and generally enjoy nature. The couple was indeed fun-loving and energetic, as well as dedicated to preserving the natural world. After one look at the old photos of the Markus family at their camp, most of us surely wish we could have known this wonderful couple. Dance Band Swings into Wolfeboro’s Cate Park The Friends of the Wolfeboro Community Bandstand invite the community to come out and dance to one of the area’s premier dance orchestras as the New Legacy Swing Band makes its return to the bandstand on August 18. New Legacy Swing Band entertains enthusiastic dancers and listeners throughout New England, performing at weddings, birthdays, concerts, private parties and corporate events. The band’s 2018 schedule includes stops in Portsmouth, North Hampton, Manchester, Hampton Beach, Greenland and Dover in New Hampshire, Kittery, South Berwick, Wells Harbor and Kennebunk in Maine and Ipswich, Stoneham, Cambridge and Leominster in Massachusetts. The band has earned rave reviews from around the area, including from someone at the Wentworth Hotel who wrote, “It was such a pleasure to have the New Legacy Swing Band perform at our 90th birthday celebration. Text and Textiles at the Moultonborough Library The exhibit entitled “Text and Textiles” at the Moultonboro Public Library represents 11 collaborations between poets invited by Alice B. Fogel, poet laureate of NH and artists from the Women’s Caucus for Art, NH Chapter. T h e Women’s Caucus for Art is a national organization formed in 1972 with the mission to create community through art, education, and social activism. The NH Chapter is one of the most active in the nation with an annual membership of over 100-member artists from around the state. The collaborative partnerships were chosen by the poets from among member artists who volunteered for this series of events in September 2017. The term “textiles” is being very loosely applied and the artists involved were free to do work in any medium.

The exhibit began at Hancock Library in Hancock, NH, traveled to Portsmouth Library and arrived in Moultonborough on August 1. An evening

Go Solar Gazing at Castle in the Clouds By Sarah Wright Recently added to the National Register of Historic Places, Castle in the Clouds is a popular destination for visitors and locals alike. Just look online and you’ll see tons of rave reviews. Tour the historic Lucknow mansion, lawn, and gardens…or even the basement; check out some exhibits and learn the mysteries of the estate; spend an afternoon horseback riding with trail rides, pony rides, and carriage rides; and dine at the Carriage House Restaurant or enjoy ice cream at Cones in the Clouds. My kids like feeding the giant brook trout at Shannon Pond and exploring of the many hiking trails

on the property. There are also lots of summer programs like Yoga on the Castle Lawn and Live Music nights. One of these wonderful programs is Solar Gazing with Marc Stowbridge. On Mondays through August 27, from 1 to 3 pm, Marc will be in the field by Shannon Pond with his hydrogen alpha telescope. This amazing telescope will let you see the sun in a whole new way, making it possible to stare at the sun safely. The program is free, and Marc will be there to answer your questions and teach you things you never knew about the bright light in the sky. Most people have taken a look at the sky through a telescope of some sort,

or have seen pictures of the moon, planets, and galaxies, but Marc offers something more with Solar Gazing. “The recent eclipse had millions of people looking through solar glasses. The glasses are ‘white-light’ filters and make the sun look very much like a featureless full moon,” he says, “Hydrogen Alpha (Ha) telescopes are relatively new to amateur astronomy and not many people in the astrocommunity have them. Ha telescopes can only see the sun and only the wave length of light given off by hydrogen as it turns into helium and heavier

elements.” Astronomy has been a part of Marc’s life for many years. He lives in central New Hampshire and he’s been interested in astronomy since he was a child, when he watched the first satellites crossing the sky. “I am a retired clinical social worker and my undergraduate work was in special-ed and psychology,” says Marc. “My freshman year, however, was in science education. August 13, 2018 • Castle Continued from page 22 which sometimes provided a welcome diversion, particularly for children dealing with stressful topics.” Referred to by his youngest daughter as “Mr. Wizard,” his family has taken a liking to astronomy as well. “My children and grandchildren have accompanied me on many sky watches, both at night and solar observing,” Marc says. “They often ask me to come to the schools where they teach or where their children attend, and to bring my collections or astronomical toys.” Marc joined the New Hampshire Astronomical Society in 1999. He says, “They were and are a very welcoming group and happy to share their skills with newcomers as I was then. I eventually became Chairman of the Public Observing Committee and set up sky watches for schools, libraries, scout groups, and other folks wanting to see ‘what’s up’.” If you’ve been to a local library lately, you may have noticed a telescope on display, available to borrow and take home. My family borrowed one from the Tuftonboro Library and it was an eye-opening experience. This program

was arranged by the NH Astronomical Society. As Marc explains it, “The club received a large donation for one of our library programs, and being an educational non-profit, we were at a bit of a loss as to what to do with it. I thought that since the library was interested in space, why not buy them a telescope to loan to people? This evolved into the Library Telescope Program, which has been adopted by astronomy clubs across the USA, Canada, and internationally. The NHAS has placed around 130 telescopes in NH, and other clubs have placed hundreds more.” Marc enjoys bringing the magic of the universe to the public. “When I show someone the sun, moon, or some deep sky object, I don’t really care if they remember the specifics. I want them to come away with a sense of wonder,” he says. “Glancing up at the sun doesn’t show you the amazing eruptions or the fine texture of the sun’s surface. I can point a telescope at what appears to be an empty spot in the night’s sky and expose the beautiful wonders that hide there.” He jokes, “If people don’t go ‘WOW!’, I check their pulse.” Marc has a great time running the Solar Gazing program at Castle in

the Clouds. “People often come over because they are curious about what’s going on with the tent and fancy looking equipment, and then they’re surprised to find us looking at the sun,” he says. “Kids are almost always enthusiastic, and we cater to young folks by having a step ladder up to the eyepiece. Many of the kids are between 3 and 8 years old. I see a lot of families, too. Even somewhat jaded teenagers often find themselves glued to the telescope.” Sounds like a great way to get them away from their cell phones for a few minutes! Marc tells me that people who have already taken a look will sometimes encourage skeptics to come over. I asked him why he thinks we should pay more attention to the sun and he says, “As a volunteer educator for the

The Steamboats of Winnipesaukee The Lake Winnipesaukee Museum, located in the Weirs Beach area, will host David Warren and his program “Steamboats of Winnipesaukee” on Wednesday, August 22 at 7 pm. David Warren is a local historian and master model builder who has created a number of detailed scale models of steamboats that are on display at museums around the Lakes Region, including the Wright Museum of World War II, the Libby Museum, and the New Hampshire Boat Museum in Wolfeboro. Recently, Warren finished his latest creation: a scale model of the first tourist steamboat The James Bell, which is now on display at the Lake Winnipesaukee Museum, along with his models of the Governor Endicott, the Chateaugay, the SS Mt. Chillin’ While Grillin’ Grilling Corn on the Cob By Chef Kelly Ross We all have our favorite grilled foods, for sure. Some people prefer beef, some chicken, some seafood, and some prefer vegetables, but one thing everyone seems to agree on is the love of fresh corn on the cob, especially when done on the grill. Local corn is so sweet and delicious that at times I will eat it without any butter as I just husk corn off the grill and dig in. Most of us have been taught to soak corn while in the husk in water for a while and then grill the corn in the husk. Soaking the husk keeps it from burning up and the corn steams within the husk. That has been a staple in my life ever

since I was a kid. My parents would bring me and my siblings camping most of every summer growing up and cooking corn on the grill in the husk is one of my fondest memories. Although I still love to cook corn the same way now as I did then, there are dozens of other great recipes out there on how to cook corn on the cob on the grill nowadays. Some are a little weird and some make complete sense, but I love to experiment with all of them. One great thing about experimenting with corn recipes is that corn is very inexpensive. Even if you try a couple of new corn recipes that don’t impress you, you have only lost a dollar or two

in the process. That’s much different than experimenting on a high-end protein that fails you, not to mention corn is generally a side dish as opposed to a dinner entrée. Let’s face it, the norm is to dress the average ear of corn with butter, salt, and pepper. This is still the basis for many new corn recipes, with a twist. A few weeks ago, I did an article on compound butters, and this mentality works great with corn as well. So, for starters, I’ll give you some ideas on how to go about using some fun butter options, which will grill with the corn, so the flavors cook within the corn to add some incredible flavor. After these ideas, I will add a few “off the wall” recipes, and yes, one of them includes a bacon wrapped ear of corn, a true combination of two of my favorite foods and flavors. Many of these recipes can be done

a few different ways. Most of these I would suggest cooking in a sealed tin foil wrap around the ear of corn with the butter and seasonings. A few of them can be done by soaking the corn in the husk, pulling the husk down most of the way, adding some butter and herbs/seasonings, rewrapping the husk and then tying it up in kitchen string. The last way is to just grill the bare ear and baste it the whole time while you are cooking and rolling them. The foil works better for most, but, the flavor of cooking it in the husk is a nice addition. Regardless of your choice, always have more butter sauce to slather over the corn once unwrapped or while grilling naked. August 13, 2018 •Chillin’ While Grillin’ Continued from page 26 Most people I know love horseradish, but it is one of those things you either love or you hate. I’m a true lover. My friends and family joke with me that when I make a cocktail sauce for shrimp or anything else, they say the sauce is closer to a pinkish white than red because of how heavy handed I am with the horseradish. Anyway, here is the shopping list and recipe. This is the usual recipe, not super heavy on the horseradish I would do for myself. Also, I am suggesting cooking the next few recipes using the foil. If you want to cook within the husk, or grill as is while basting, that’s cool. ¾ cup softened butter ¼ cup horseradish 2 Tbsp Dijon mustard 2 tsp balsamic vinegar ¼ tsp salt ¼ tsp cracked black pepper 1 Tbsp fresh chopped parsley 12 ears of corn, husked Sheets of tin foil, preferably a heavyduty foil as opposed to the basic flimsy foil Combine the first seven ingredients in a bowl. Get the individual tin foil sheets set up and place the ears of corn on each. Lather the corn with the horseradish butter sauce using a pastry brush and wrap the corn tightly so none of the sauce can leak out. Grill 15-20 minutes or so over a medium-high heat, rolling and rotating every 4-5 minutes. Once you take the corn off the grill, unwrap with caution, as it will be hot. (Cooking for over 40 years in the restaurant world has confirmed to me that there is no more irritating burn in the kitchen than a steam burn.) Yes, the foil will be hot, but generally not as bad as the steam that will likely be released. If you care to, lather on more of the horseradish butter before chomping into these great ears. Sometimes I even pop them on the grill for just a couple of minutes once out of the foil and baste some more. I think you get the basics of this routine. Here are some of my suggestions for using the same mentality: My second favorite way to do this is with freshly made pesto with Parmesan cheese. Just a light brush before putting it in the foil, and then brush on more before eating. Pesto is truly one of my best food friends! Try a fresh basil and lemon butter. I suggest using 2-3 whole leaves of fresh basil per ear of corn with a lemon butter sauce and wrap in foil. The fresh basil flavor goes a long way. Garlic anyone? I always have a batch

of garlic butter in my fridge, which also includes oregano and basil, as well as lemon juice and wine. Toss in some Parmesan cheese as well if you care to. The Parmesan gives it a nice touch. Again, utilizing fresh herbs, I’m a huge fan of fresh cilantro in a lime butter sauce. Using lemon pepper seasoning, add that to butter and wine to make lemon pepper butter. I love the Southwestern theme. Make a butter sauce with ground cumin and chili powder and maybe some cayenne pepper if you like a good bite to it, like I do. Speaking of a bite, I’m also a huge fan of Buffalo Corn. If you love Buffalo wings, try the sauce on corn before wrapping in foil. I usually also lather on a little bit of Bleu Cheese Dressing right before eating. For you BBQ sauce lovers, I have tried this as well. It’s all relative to your menu and tastes, but it all works very well. There are some great compound butter sauce ideas that all work out very well. I have catered summer BBQ parties that use the different butter themes for the grilled corn. Although when doing this for 100 plus people as I have, the prep can be tedious but rewarding as it makes cooking time very easy. I have prepped as many as 150 ears of a flavored butter corn in foil for events, but the time put into the prep is well worth it. Even if you are hosting a cookout for a few or for a couple of dozen people, prep the corn in foil the day before with your favorite butter and refrigerate them, and just toss them on the grill at game time. Your guests will be wowed. All in all, the past recipes aren’t overly outrageous. Now it’s time to share some fun and crazy corn recipes. As in almost any kind of food, whether a protein or vegetable, many off-thewall recipes don’t always make much sense, until you try them. As I like to say, don’t knock it until you try it. Here are some fun and twisted corn recipes. The first one is nicknamed Jalapeno Popper Corn and this recipe calls for grilling the corn directly on the grill without foil. It has a fun list of ingredients. 4 ears of husked corn 2 jalapeno peppers 3 Tbsp vegetable or olive oil ¾ tsp salt ¼ cup of Panko, a Japanese breadcrumb ½ tsp smoked paprika ½ tsp ground cumin ½ tsp chili powder 4 oz softened cream cheese ¼ cup sour cream 1 tsp milk Fresh chopped cilantro

8 strips cooked bacon, crumbled For starters, I lightly oil the jalapeno peppers and grill them until lightly charred throughout. Once it has cooled to the touch, peel off the skin and remove the seeds. Chop the pepper finely and set aside. In a skillet or pan, heat 2 Tbsp of oil to a medium heat. Add the Panko and stir until it starts to brown. Add the paprika, cumin and chili powder. Continue to stir until the panko mixture is well toasted and fragrant. Set aside. In a small bowl, combine the cream cheese, sour cream, milk, limejuice, and ¼ tsp of the salt, leaving ½ tsp of the salt for later. Lightly oil the corn and grill for about 10-15 minutes, covered, until nicely charred. Sprinkle the ears with the remaining salt, then spread on the cream cheese mixture, then sprinkle the cooked Panko mixture, then the jalapenos, bacon and cilantro and dig in. This has a great blend of flavors. I agree this is an odd duck of sorts, but again, give it a try. I truly think you

will enjoy it. Speaking of odd ducks, here’s another perfect example. This one is a Southwestern Chip Crusted Corn. This is another fun recipe. (Some of these recipes aren’t necessarily a regular “go-to” corn recipe every time you cook corn for your family, but for the right crowd, this one is a huge winner.) It can and likely will get messy, but seriously, I get messy just eating the most basic ear of corn with plain old butter! If you are worried about messing up a shirt or your pants, throw on an apron. Who eats corn on the cob while being all dressed up anyway? For starters, combine the first eight ingredients very well, cover and refrigerate until you are ready to use it. Ideally, pull it from the fridge about a ½ hour prior to grilling the corn to get it close to room temp. Lightly oil the ears of corn and grill them for 15 minutes or so on a medium heat until tender, giving them a spin now and then. Once pulled and when they can be handled, spread the mixture over the corn, and then roll in the crushed tortilla chips. Pop them back on the grill for 2-4 more minutes until lightly browned and then squeeze a lime wedge over each ear. Gnaw on

these babies to your heart’s content. It’s awesome to eat and quite often comical to witness others eating. This next one is a Sweet & Spicy version of corn on the cob. It is grilled naked per say while basting the whole time with a great simple sauce. Simple is the key word here, but a great combo of sweet with a bite. Depending on your tastes, obviously eliminate or double up on certain ingredients. The List 3 Tbsp butter ½ cup honey 2 Tbsp brown sugar 2 Tbsp of your favorite hot pepper or buffalo sauce 2 cloves garlic, minced ½ tsp salt ¼ tsp black pepper ¼ tsp ground cumin ¼ tsp paprika

6 ears of husked corn In a small pan, melt the butter and then stir in the rest of the ingredients, heating on a low-medium heat, stirring often until just barely warmed throughout. Brush the corn with the marinade and pop on a medium heated and oiled grill. Cover the grill and open periodically to turn and continue to baste with the sauce for 12-15 minutes. Babysitting is key in that with the honey and sugar involved, it’s easy to burn them up somewhat, although even that for me isn’t a bad thing. Once tender, dig in! Lastly, I will end these on corn recipes with arguably the simplest of them all, and quite possibly, the most popular to the majority of the crowd. Yes, I’m getting back to what I was talking about earlier: corn wrapped in bacon. There are options on the cooking process. You can put the bacon wrapped corn directly on the grill and make sure you babysit the ears because the bacon may create some fire issues depending on how fatty it is, or you can wrap in foil and grill that way. There is only one other ingredient. The Short List 8 ears husked corn ½ cup ranch dressing 16-24 strips of bacon. Depending on how large the ears of corn are “may” dictate how much bacon you use. I have witnessed friends of mine wrapping 6-8 strips of bacon on each ear. I suggest 2-3 strips per ear, but you decide. Have your grill cooking on a medium

heat. Brush the ears with ranch dressing and wrap in at least 2-3 strips of bacon and pop them on the grill Grill the ears 10 minutes, maybe more. Because of the fact that the bacon grease will result in some flaming, these generally cook a little quicker than the others. I cover the grill at times, cook while open at times, generally because of the flaming. Once the bacon is charred, you should be close. If the bacon cooks too quickly, turn the heat down and keep covered as long as possible, and/or move some of the ears that are getting dark too quickly to the top shelf of the grill if you have a top shelf. Once you bite into these, I guarantee you will be grilling these up again…and again. Corn on the cob is the bomb, and although I still like eating corn in the traditional fashion, certain situations call for a bit of flare. A fun loving, crazy crowd deserves the abnormal. Also, if you have more of a sophisticated crowd, some of the compound butter recipes may be just what the doctor ordered. Regardless of the situation, please give some of these a try. Classical pianist Eleanor Perrone will open the fifth cycle of summer piano concerts presented by the Wolfeboro Friends of Music on Tuesday, August 21 at 7:30 pm. She will perform baroque, romantic and modern selections on the magnificent Steinway concert grand from the stage of the Kingswood Arts Center on South Main Street in Wolfeboro. Ms. Perrone has chosen Busoni’s piano transcription of Bach’s Chaconne, selections from Isaac Albeniz’s Iberia Suite, and a Chopin group to include five Preludes plus the great Scherzo in C# minor. The Power to Endure By Mark Foynes Imagine doing three Ironman triathlons on three consecutive days. This is part of Kale Poland’s training regimen and a key component of who he is. Each triathlon consists of three 2.4mile swims, three 112-mile bicycle rides and three marathons - raced in that order and without a break. To put things into perspective, mileage wise, that’s over 420 miles, which is the equivalent of running, biking, and swimming from here to Washington D.C. In recent years, Poland has started doing Ironman decathlons; over the course of 10 days, participants log enough miles to measure halfway to the Equator. The contest is considered to be the ultimate test of human strength and endurance. Poland doesn’t do this every week, but probably more often than most folks can conceive. Nonetheless, he always seems to be on the move, under his own power. It is only recently that he bought a vehicle. Rather, over the past decade, he’s preferred to be non-motorized, commuting on bike from his Lakes Region home to employers in Laconia, Gilford, and Moultonborough. “It’s a lifestyle; not for everyone, but it works for me,” Poland explained. Nonetheless, he is a firm believer that everyone can benefit from physical activity at some level. While he pushes himself to his physical limits, this co-owner of a Moultonborough yoga studio is equally committed to strengthening the mind-body connection.“The systems are connected,” he summarized. “You need the motivation to get started, as well as the drive to keep going.” Poland has been pushing himself for years. In 2012, he completed Mexico’s Deca Triathlon, finishing 10 triathlons

Finish line at a competition. in 10 days. This involved swimming 24 miles, running 262 miles and cycling 1,120 miles, in total. Added up this is over 1400 miles - the distance, round trip from Lake Winni to Charlotte, N.C. Poland was also the fourth man ever to finish the Peak 500 Ultra Marathon in 2014. The event involves hiking 50 circuits of a rugged 10-mile course up and down Joe’s Mountain in Pittsfield, Vt. in 10 days or fewer. But he is modest about these physical feats. “The adrenaline helps get me to be ramped up, but after a while the momentum kicks in and keeps you going until the finish,” Poland said. During many of these events, he’s running, biking, or swimming between 18 and 20 hours a day. “There is definitely a mental component to it,” he noted, adding that physical endurance alone is not enough. “You need to get into a certain mindset.” This attitude served him well while he was at MC Cycle & Sport in Laconia.

Some years back, while in Virginia, Poland was running a 30-mile event and he got hurt, which sidelined him for a spell. More recently, in April, he was in a bike crash. Poland is still involved - personally and professionally - in physical activities that promote strength and wellness. These days, he is busy at his current gig at Yoga Jaya, which

Old Home Days Coming Up in Tuftonboro By Rosalie Triolo Residents of Teterboro come for the food, the community, the fun, the competitions and the music at the annual Old Home Days, taking place this year on the weekend of August 24 through 26. The notion of an event to celebrate hometowns is an old one. In 1897, Frank Rollins of Concord, New Hampshire wrote, “I wish that in the ear of every son and daughter of New Hampshire, in the summer days, might be heard whispered the persuasive words: ‘Come back. Come back.’ Do you not hear the call? What has become of the old home where you were born?” In 1899 Frank Rollins was elected governor of New Hampshire. Concerned about the decline of the state’s rural communities, he encouraged people to buy old farms and renovate them so they might be used as summer cottages. He also recommended that town centers receive new monuments and refurbish municipal buildings. And, in 1899 Governor Rollins invented and founded “Old Home Days.” In that year 44 New Hampshire towns held “Old Home Week” celebrations. The first of the celebrations took place in Concord on August 31, 1899 ending with 53 segments of a fireworks show. In an interesting book on “Old Home Days” celebrations: Images of America, New Hampshire “Old Home Celebrations” by Gary Cracker, he gathered information from historical

Participants preparing for the cardboard boat race. societies from the many towns’ celebrating “Old Home Days.” Some of the early celebrations included parades, church services, friend and family reunions, band concerts, bonfires and poetry. “So, why doesn’t Tuftonboro have an Old Home Days celebration?” In 2016, that question was proposed by Tuftonboro’s Police Chief Andy Shagoury to Jackie Rollins, Tuftonboro’s Tax Collector. Jackie consulted Gina Lessard, Chairwoman of Tuftonboro’s Parks and Rec, who called for an informational meeting to determine if there was an interest. Because an interest was shown,

Tuftonboro’s “Old Home Days” was introduced to its citizens and vacationers. Jackie Rollins provided a copy of the first “Old Home Days” program of events held in August 2016. Except for a few events, this year’s “Old Home Days” schedule looks quite similar. In 2016, the Friday night events were an Ice Cream Social followed by the Movie Under the Stars – The Goonies

held at Davis Memorial Field in Tuftonboro. The 2018 program of events on Friday, August 24 will feature the BBQ Chicken Dinner at the Tuftonboro United Methodist Church at 129 Mountain Road at 5 pm. Beginning at 7 pm on August 24, a fun event titled Rally ‘Round the Flag’ The American Civil War Through Folksong will take place at the Tuftonboro Central School Gym, sponsored by the Tuftonboro Historical Society. Community Contra Dance Featuring The Moving Violations and Caller Dereck Kalish The Community Contra Dance series, hosted by Global Awareness Local Action (G.A.L.A.) announces a very special dance featuring The Moving Violations, accompanied by renowned caller Dereck Kalish. The event is free and open to the public, made possible by the Cate Memorial Fund. The dance takes place on Saturday, August 23 at the Wolfeboro Town Hall’s “Great Hall” from 7 to 10 pm, with the first half hour dedicated to a brief overview of the basic steps of New England contra dance. Dances are a fun and energizing night out for all ages and abilities, even if you simply prefer to cheer the dancers on from the sidelines and enjoy the live musical performances. The Moving Violations have a playful energy that transcends borders of countries and encourages spontaneity and improvisation. G.A.L.A Global Awareness Local Action (G.A.L.A.) is a nonprofit organization based in Ossipee, NH working to translate sustainability education into local action that is practical, effective, and fun. Through strong cross-sector collaborations, G.A.L.A. offers educational, skill building, and community service opportunities that help participants grow food, conserve energy, save money, and strengthen both personal and ecological health. The organization’s most popular program is called Sustain-A-Raisers, a volunteer driven “eco” home and yard makeover initiative modeled after the barn-raiser. Each “raiser” consists of G.A.L.A. volunteers installing raised garden beds, compost bins, rain barrels, cold frames, and clotheslines at private homes, schools, food pantries, assisted living residence, and other community sites. G.A.L.A. also offers a monthly Reskill-ience Workshop where attendees can learn skills, including how to make nontoxic household cleaners, basic bee keeping, food preservation and canning, bike maintenance, campfire cooking, compass and map navigation, and more. During the winter months, G.A.L.A. hosts a Community Contra Dance Series and offers support for starting small sustainability Study Circles. Around 2011, Dereck became both a caller and sound engineer, traveling throughout New England with a focus on providing the best service possible to make for a fun and successful dance. Dereck is the NEFFA Thursday Night Dance Committee Chair for the weekly dance in Concord, MA. He is also on the board of Directors of NEFFA and also serves on the Sound Committee. G.A.L.A. is looking to fill a few volunteer shifts for the dances this year if you are interested.
