Seasons Turn on the M/S Mount Washington Story & Photos by Barbara Neville Wilson It’s a bright, cheerful day that speaks contrast. The sun beats summer warmth, and the crisp blue sky and shadows whisper, “Fall is on its way.” I get a happy text from my friend Tatiana. She has found parking for “Gino’s ginormous truck” in downtown Wolfeboro—something rare in busy summer—and she is waiting for me at the Wolfeboro Town Docks. We are meeting the Motorship (M/S) Mount Washington. Passengers on hand to board the cruise ship hale from Port Orange, Florida; Siberia; Cape Cod; Wells, Maine; New Durham; Williamsburg, Virginia; Sri Lanka; and East Wakefield, New Hampshire. For most, this 2 ½ hour cruise is a rare treat, but for Ann Dingwell of Sugar Hill Retirement Community in Wolfeboro, it is an annual rite. How frequently has she been on the Mount Washington? “How long have I lived here?” she responds rhetorically and recounts weekend evenings dancing on the ship and annual tours with family and friends. “The Mount,” as she is affectionately called by locals, was smaller when Ann danced on it, and the Mount that once greeted trains at the Wolfeboro Docks was a different ship altogether. Like fall, the Mount is constantly changing, yet remains fixed in our memory as if an anchor. Tatiana and I turn aside to catch up.
Kids are back in school, but the M/S Mount Washington still sails seven days a week through October 28.
Having only been in the area three years, she is excited by the prospect of a cruise on Lake Winnipesaukee’s largest ship. She enjoyed a twilight tour on another vessel a year or two ago, but the larger ship and longer itinerary sounds heavenly on a beautiful afternoon, and besides, she’s doing research. Research? Yes. Tatiana and husband Gino began renovating their historic 19th century Top of the Ridge Farm in New Durham this past year, preparing to open it as a bed and breakfast, and, of course, Tatiana must be able to guide guests to wonderful things to do, doesn’t she? We board the ship and find seats under the awning on the second deck. Soon we feel the rumble of engines, and watch Wolfeboro recede as we leave

the docks and head out into the lake surrounded by “80 miles of shoreline” says the narration over the intercom. We are on a return trip to Weirs Beach, it tells us. The narration continues, and we find out that, like Tatiana and Gino’s farm, the Mount Washington cruise ship has changed in form over the years, but its purpose and image in people’s minds remain the same. Built in 1888, it was bought from its owner on Lake Placid and brought to Lake Winnipesaukee in 1940 to replace the original Mount Washington steamship that burned in the tragic Christmas fire of 1939 at Weirs Beach. In 1946, it became the motorship Mount Washington when diesel engines replaced its steam engines. In 1982-83 it was actually cut in two, and a 24-ft. center section
was added, but in each iteration, it remained The Mount, the largest ship to ply Winnipesaukee’s waters. Lake Winnipesaukee was named by native peoples thousands of years ago to mean either “Smile of the Great Spirit” or “Beautiful waters in a high place,” says the narrator practically in the same breath that it tells of the Europeans who claimed to have “discovered” the headwaters of the Merrimack River and claimed them for the Massachusetts Bay Colony at Weirs Beach, a place natives had been fishing for generations. Exactly who claimed what is unimportant, though, as we ride the waves, view the Ossipee, Sandwich and Belknap Mountains, learn about the “40 Islands” that are actually 13 and see a flotilla of Canada Geese poised to rise in the sky and head south for the season. We peer curiously at the huge homes tucked cheek by jowl and clinging to the shore of Governor’s Island. The land was once the site of a mansion built by Colonial Governor Wentworth and later hosted a farming cooperative and, later still, an unsuccessful land development by Stilson Hutchins, founder of The Washington Post. Today, it has returned to its first use as the location of the “highest concentration of multi-million-dollar homes in the region,” says the narrator. The ship docks at Weirs Beach. While we enjoy looking at the gingerbread • Mount Continued on page 4

Program focuses on George Washington’s Runaway Slave
The friendly staff of the M/S Mount Washington make passengers feel special and cared for. Many crew members have worked for the Cruise NH fleet for years. It is not uncommon to hear of generations of the same family rising through the ranks.
• Mount Continued from page 3 features and Victorian architecture of the NH Veterans Association cottages across Weirs Boulevard, dozens of sightseers wearing nametags and matching shirts board the ship. Soon we are underway again with an invitation to enjoy the buffet luncheon served below. “Look!” I point Tatiana to the illustration of the Mount Washington at the top of my plastic plate. The image almost makes me feel like a fancy passenger on an early 20th century ocean liner, and the colorful buffet strewn across the stern of the boat makes me feel no less pampered. A courteous staff offers tossed and fruit salads, green beans, fresh rolls, baked haddock, vegetarian lasagna, barbequed chicken, white rice and a selection of sweet parfaits and trifles, including a seasonal pumpkin. We lose ourselves in food and conversation, pausing only to hear disbelievingly about the five- to six-ft. waves that can appear in the currently glass-calm Broads, and the stories of grand hotels transferred to new homes
across winter ice. Then suddenly it’s over! The narrator tells us we have re-entered Wolfeboro Bay. Surprised, we look ahead and there we see a Main Street every bit as picturesque from the water as from land. Honestly, we are a little sad our respite from daily life is ending. To prolong my jump back into reality, I pause to chat with Captain Paul Smith and Pilot Kevin Pettengill before disembarking. I smile when the day’s theme unfolds again. Captain Smith tells me he has been on The Mount for 33 years and is slowly decreasing the number of his cruises. He is “honored” however, he tells me, to be training Pilot Pettengill to take his place. You see, it was Captain John Pettengill, Kevin’s father, who trained him to captain The Mount decades ago! Old becomes new as seasons turn. Watch the seasons turn from the decks of the M/S Mount Washington any day from now through October 28. Information about sailing times and ports of call can be found at www. cruisenh.com or by calling 603-3665531.
Living history performer Gwendolyn Quezaire-Presutti will present “If I Am Not For Myself, Who Will Be For Me, George Washington’s Runaway Slave” on Wednesday, September 19 at 7 pm at the Booster Clubhouse in Ashland. Gwendolyn will appear as Oney (or Ona) Judge, who was born a slave on the Washington family’s Mount Vernon plantation, and served in the household of President George Washington, until she ran away from the Executive Mansion in Philadelphia in 1796 and escaped to freedom in New Hampshire. She lived as a free woman in Portsmouth and Greenland, New Hampshire, until her death in 1848,
despite the efforts of the Washington’s to reclaim her. Quezaire-Presutti has combined her interests and talents in historical research and in dramatic performances to tell the stories of women of color, such as Oney Judge. This free public program, largely funded by the New Hampshire Humanities, is jointly sponsored by the Friends of the Ashland Town Library and the Ashland Historical Society. Light refreshments will be served. The Booster Clubhouse is located at 99 Main Street, on Routes 3 and 25 next to the town ballpark in Ashland village.
Middle East Examined at Next Wright Museum Lecture On Tuesday, September 18 from 7 to 8 pm, the Wright Museum of World War II will present “Conflicts in the Middle East and International Security,” a lecture by Mohamad Defaa. Part of the Wright Museum’s 2018 Lecture Series, sponsored by Ron Goodgame and Donna Canney, this lecture will provide insight into the historical, sociocultural, and religious background of the conflicts in the Middle East. Defaa will also discuss the threat these conflicts pose worldwide. Certified by the International Center for Educational and Cultural Consulting in Lyon, France, Defaa earned a BA in French Language and Literature from the University Ibn Tofail in Kénitra, Morocco. He also possesses an MA in Communication and Expression from the University Mohamed V in Rabat, Morocco. “So much of what we think we
know about the Middle East becomes clouded in the different media which bring us the news of the region,” said Mike Culver, executive director of the Wright Museum. “Mohamad has spoken at the museum before and he is a wonderful source about the Middle East. This lecture will provide real context and understanding for these complicated issues.” The Wright Museum’s Lecture Series takes place every Tuesday through the end of the museum’s season, which concludes October 31. Admission is $3 for members and $8 for non-members. Seating is limited, and reservations can be made by calling 603-569-1212. The Wright Museum is open daily through Oct. 31 from 10 am to 4 pm, Monday through Saturday, and noon to 4 pm on Sundays. For more information, visit www.wrightmuseum.org.

Fall Programs at the Taylor Community Looking for something new and different to do in September and October? The Taylor Community in Laconia has a variety of programs in the upcoming weeks with something sure to please. Wild Edibles Learn about food from the forest and join a wild edible discussion from avid outdoorsman and 20-year chef Jason Seavey. The discussion will take place on Wednesday, September 19 at 6:30 pm in Taylor Community’s Woodside Building off Union Avenue in Laconia. This free event is open to the public. Seavey’s presentation will focus on medicinal and forgeable plants available in New England throughout the four seasons. Learn about the night sky The New Hampshire Astronomical Society is a wholly volunteer NHchartered non-profit organization dedicated to furthering public awareness of astronomy. On Tuesday, September 25 at 7:30 pm, in the Woodside Building, there will be a free public indoor lecture by Paul Winalski about the night sky, followed by an observation session outside (weather permitting). lēf Farms Greens Where are the greens? In our neighborhood! In fact, they’re served right in the Taylor Community Bistro. When the people at lēf Farms thought about the journey most greens have to take to reach the Northeast – along with the lack of freshness, excess fuel
consumption, and added shipping costs – they knew it was time to give the area something fresh. An alternative to West Coast-grown greens, lēf Farms offers a smarter choice that not only allows people to buy local, it gives a cleaner, more delicious and environmentally sound option, right in our neighborhood. The lecture is Wednesday, September 26 at 6:30 pm in Taylor Community’s Woodside Building. The free event is open to the public. Planning ahead Advance planning is advisable for everyone; explore sustainable and meaningful funeral options with a twist as Lee Webster shares information about emerging eco-friendly funeral movements that are changing the way we do death in America. With funeral prices rising along with temperatures, it is time to look at ways to reduce expenses and carbon footprints while still having rich, meaningful send-offs. This provocative and surprising hour-long presentation is Wednesday, October 3 at 6:30 pm at Taylor Community’s Woodside Building. The event is free and open to the public. Webster returns to Taylor to introduce ways we can plan for a more planetfriendly exit through eco-conscious home care practices and sustainable conservation burial options. Participants will learn the latest in what is happening in the U.S. and around the world to design authentic ways of honoring our loved ones without
breaking the bank. We will also do a little funeral myth busting while we are at it! Webster is president of New Hampshire Funeral Resource, Education & Advocacy, a local nonprofit organization providing practical funeral information. She is also a frequent speaker on funeral reform throughout the country, and author of several published books and articles. Bob Rutherford Concert Come along on a musical journey with the talented and entertaining Bob Rutherford. Back by popular demand, everyone enjoys Bob’s musical repertoire. This event is Wednesday, October 10 at 6:30 pm in Taylor Community’s Woodside Building and is free and open to the public. Get Informed with League of Women Voters The League of Women Voters, a nonpartisan political organization, encourages informed and active participation in government, works to increase understanding of major public policy issues and influences public policy through education and advocacy. Join the League for an always-popular discussion on Monday, October 15
at 6:30 pm in Taylor Community’s Woodside Building. The event is free and open to the public. Nature on the Hawkins Brook Trail Rod Wilson will introduce the audience to the Hawkins Brook Nature Trail project, which, when complete will be universally accessible and connect residents and visitors from Meredith Village to Prescott Park, located along Daniel Webster Highway. The trail will offer a scenic, off-road pedestrian trail featuring views of Hawkins Brook and self-interpretive educational signage. Planned in a large and diverse wetland complex that drains into Lake Winnipesaukee, the trail will be conveniently located right in the heart of Meredith Village. On Monday, October 22 at 6:30 pm in Taylor Community’s Woodside Building, you will hear more about the project designed to promote physical and mental well being. The event is free and open to the public. Taylor Community is the premiere not-for-profit Continuing Care Retirement Community in the Lakes Region. For more information about programs, visit www.taylorcommunity. org or call 603-366-1400.

It’s Time to Order Holiday Wreaths from the Wolfeboro Garden Club Although we’re still enjoying summer weather, it’s time to start thinking about ordering your holiday wreaths from the Wolfeboro Garden Club. Proceeds from the wreath sales - the club’s only fundraiser for the year - sustain the group’s scholarship fund, the planting and maintenance of 11 town gardens, and other special community projects. For example, money from the wreath sales supports the club’s partnership with the Agricultural Science program of the Region 9 Voc Tech at Kingswood Regional High School. The wreaths are premium quality, double-sided fresh and fragrant Balsam fir. They are decorated with a generously sized, hand tied bow in one of six ribbon choices
that include three new selections this year. Sizes available include 22-in., 30-in. and 36-in. outside diameter. The 22-in. wreath is the perfect size for a standard door; the 30-in. size is suitable for an extra-large door. Wreaths will be delivered on Wednesday and Thursday the week before Thanksgiving. Wolfeboro Garden Club members already have started visiting local businesses to take orders. The club also welcomes orders from individuals. For additional information or to order wreaths, contact Terri White at 603544-3236. All orders must be received by October 5.

SLA to Host 6th Annual Ridge Race to Support Squam Trail Network On Sunday, September 30, the Squam LakesAssociation (SLA) will host the 6th Annual Squam Ridge Race, a 12.2-mile ridge race which traverses a majority of the Squam Range crossing three summits with amazing views of Squam Lake and the surrounding watershed. All proceeds from the race will go directly to maintaining over 50 miles of SLA maintained trails around the Squam Watershed. “As visitation increases in the Squam Range every year, so does the wear and tear on the trails,” said SLA Director of Operations, Brett
Durham. “In just over 12 years, roughly $100,000 has gone into maintaining the Old Bridle Path alone.” The Old Bridle Path, which is famous for taking hikers up to West and East Rattlesnake, sees thousands of visitors every year and has two scenic peaks that overlook Squam Lake. Maintenance along all SLA trails from the race includes maintaining water bars to prevent erosion problems, trail reconstruction, clearing brush and downed trees, signage and upkeep in the parking areas. Registration is $75 before
September 27 and $85 the day of the race. This race has over 3,000 feet of elevation gain and is mostly singletrack trails. Anyone is welcome to run or just hike the 12.2-mile route as a participant of the event. You may also decide to get out and enjoy the day with the four-mile race which climbs to the top of Mount Livermore and loops back to the start/finish area. All participants will be entered into the prize drawings to be held during the event and have access to food and beverages donated by local restaurants and businesses at the start/finish area. Hand-made medals will go to the top finishers in their division and prizes to the top finishers overall. Register for the Ridge Race online at squamlakes. org. The Squam Lakes Association is also looking for volunteers to help fire up the grills, work aid stations along the ridge, be time keepers, photograph the action at the finish line, and more. There are a number of different ways volunteers can support this event, both on the trail and at the finish line. The food is great, the beverages are cold, and the energy is infectious. Join the celebration and support the trails. Visit squamlakes.org or call the SLA›s Community Engagement
Coordinator, Melissa Leszek, at 603968-7336 ext. 11 for more information about volunteering for this event. Special thanks go to the Webster Family, Webster Land Corp, and Burleigh Land Limited Partnership for providing access to the trails and venue for this race. SLA is still seeking sponsors and in-kind donations for the Ridge Race Raffle. If you would like to participate, please contact Pam Smith at the SLA office. Parking (start and finish line) will take place at Burleigh Farm Road off Route 113 in Holderness. Registration/number pick up opens at 7:30 am, and the race will start at 9 am. The event is limited to the first 200 registrants. The Squam Lakes Association is a non-profit organization established in 1904 and for over 100 years has been working to protect and conserve the natural beauty, peaceful character, and resources of the Squam Watershed. In collaboration with local and state partners, the SLA promotes the protection, careful use and shared enjoyment of the lakes, mountains, forests, open spaces and wildlife of the Squam Lakes region. For more information, call the SLA office at 603968-7336 or email info@squamlakes. org.

Live Birds of Prey to Visit Gilmanton Year-Round Library The creator and operator of an Epping rehabilitation facility dedicated to the rescue and care of injured raptors – birds of prey such as hawks, owls, falcons, and the like – will describe her work, accompanied by several of her avian friends, in a presentation to be offered at 6 pm on Thursday, September 20 at the Gilmanton YearRound Library. Jane Kelly from On the Wing is a federal and state licensed rehabilitator, educator and falconer, specializing in raptors. A little over seven years ago she found 10 dead barred owls along the shoulder of Route 101 between Auburn and Hampton. It was a calling she couldn’t ignore and she decided to get involved, bridging the gap for wildlife
through education and rehabilitation. She will offer attendees a glimpse into the complex relationship between raptors and humans and the reasons why protection and rehabilitation are important in our lives. “I am honored to be in the presence of these amazing creatures and to educate all age groups in making a difference for wildlife,” she explains. On The Wing is part of a dedicated team: Veterinary Emergency and Surgery Hospital, New Hampshire Fish and Game, animal control officers, local and state law enforcement and the general public. The program is free and open to the public. The library is located on Route 140 opposite the Gilmanton School.

Relax. Enjoy. Live. Audubon to Present Program on Fur Seals On Thursday, September 20 at 7 pm at the Loon Center in Moultonborough, the Lakes Region Chapter of the New Hampshire Audubon Society will present a program called “Club Sandwiches, Not Seals” presented by Dr. Kurk Dorsey. Birders know the Pribilof Islands of Alaska for the chance to see Asian rarities, but there are more than birds on these remote islands. In the 19th century, millions of North Pacific Fur Seals drew hunters who wanted to sell their rich fur coats. In this illustrated talk, Kurk Dorsey of the UNH History Department will explain how the United States led a four-nation movement to save the fur seals from extinction. With colorful characters and deep
splits about how to manage the seals, this is one of the most interesting success stories of international conservation. Dr. Dorsey is the author of “The Dawn of Conservation Diplomacy,” which examines the first three comprehensive wildlife conservation treaties in history, including the North Pacific Fur Seal Convention of 1911. His book also covers the Migratory Bird Treaty Act of 1916, which was the subject of a previous presentation. The Loon Center is located on Lee’s Mill Road; follow the signs on Blake Road from Route 25 near the Moultonborough Central School, or from Rte. 109 turn on to Lee Road and turn left on Lee’s Mill Road. Refreshments will be served. Call 603476-5666.

For Today’s Students, Library Cards Continue to Be Part of An Incredible Team September is Library Card Sign-up Month, and this year’s students will be able to call on the Incredibles team to help them access the information they’ll need heading into another adventurous school year. Bob, Helen, Violet, Dash and JackJack Parr will join real-life heroes – librarians – to encourage students to sign up for their very own library cards, gaining them access to powerful educational tools such as homework help, technology, apps, programs, activities, music and movies, along with reading materials of all kinds, covering a world of topics. In New Hampshire, public libraries
provide library cards free of charge to residents in their towns. The money each patron saves by using a library card instead of purchasing materials can be calculated using the online library value calculator available at ilovelibraries.org. The American Library Association began “September is Library Card Sign-up Month” as a way to ensure that every student has access to the information needed to make the upcoming school year successful. “Together, New Hampshire’s public libraries and school libraries provide the breadth of information that students need, no matter what they are

studying,” said N.H. State Librarian Michael York. “Remember that library cards aren’t just for kids. We hope that when students come in to sign up for a card that they’ll bring their parents and caregivers with them.” Signing up for a library card can happen during any month, not just in September. The New Hampshire State Library promotes excellence in libraries and library services to all New Hampshire
residents, by assisting libraries and the people of New Hampshire with rapid access to library and informational resources through the development and coordination of a statewide library/information system; by meeting the informational needs of New Hampshire’s state, county and municipal governments and its libraries; and by serving as a resource for New Hampshire. Chillin’ While Grillin’ Fall Grill Care … and Grillin’ the Best Chicken Wings Ever By Chef Kelly Ross Like many people (and chefs), autumn is my favorite season, with spring a very close second. The only thing that bugs me about fall is that it means winter; although I do enjoy the winter months up to a point, it will be here all too soon. I have always enjoyed winter, although it usually extends its visit a little longer than the rest of the seasons. And sometimes in winter, bad
weather can freeze my grill shut. That is unacceptable as I grill 24/7/365. Not everyone grills in the winter, but today’s article is dedicated to those who grill year-round and need to be reminded of some important and key grill maintenance thoughts for safe and efficient grilling. Even if you don’t grill in the winter, you should utilize these tips when packing the grill away until next spring so that it will be ready

to rock and roll once you are ready to spark that baby up again. Proper maintenance, care, and upkeep will not only extend the life of a gas grill, it will prevent grilled food from developing an “off” taste from dirty grill surfaces. Accumulated grease and food debris may even catch fire. A gas grill fire will ruin your food, and also create a fire danger to your home or garage, depending on your grill placement. Keep your gas grill working properly by cleaning it after every use and performing a periodic deep cleaning. A thorough grill bath will improve the flavor of the grilled food, and it will help the grill work more efficiently and last longer. The easiest and most basic “mustdo” may sound like common sense, but it’s amazing how many people don’t do maintenance, such as brushing the grates before and after every grilling. I know most of you are reading this and saying, ”Well, duh!!”, but I can’t tell you how many times I have been to a friend or family cookout and the grilled
food has little black specs all over it. When this happens, I always joke to the host by saying, “Hey, thanks for all those flavor crystals.” (I’m generally not one to hold back, but I do try to do so by throwing my somewhat sarcastic sense of humor into the equation at the same time!) As a general rule, I like to buy a new grill brush at least once a year, but I grill so often that I often buy two at a time so I always have my back-up ready. As important as brushing the grill regularly is, it is also important to stay aware of the condition of the brush as there isn’t anything more depressing when grilling than biting into a steak and finding a loose grill brush wire seared right into it. Once the wires start falling off the brush, get rid of it as it means many more will follow. Another big “no no” I see at times is when people don’t brush the grill, but instead use their metal spatula to try to • Chillin’ Continued on page 15

September 17, 2018 • Chillin’ Continued from page 14 bust the old food off the grill. This is never a good thing; what this generally does is destroy the grates over time to the point they need to be replaced, not to mention the brush knocks off most of the crap within and under the grates where a spatula won’t. If you don’t knock off the attached residue and such, the cooking process isn’t nearly as clean and the last thing I want is pieces of last night’s dinner attached to tonight’s dinner. I always preheat my grill to high for 15 minutes before brushing it as the hotter the grill is, the easier it is to brush the grates clean, and then I do it again when I am done grilling. I’m sure I don’t have to remind everyone how bad the grill can look after grilling anything with sugar in the sauce, as in barbecued chicken, or when I grill Maple Teriyaki Steak Tips. It always cleans up better right then and there with a quality brush after grilling vs. waiting until next time. For the regular cleaning of your grill grates after grilling, there is an alternative that may appeal to a variety of grillers. While the grill is still hot, you can take a large halved onion and rub it flat side down on the grill with an oven mitt on your hand and use it as a brush. I know a few people that prefer this method. This will effectively remove much of the cakedon grime. This method is low cost, it is environmentally friendly, and it also works for the intended purpose. Next on the agenda is the catch pan at the bottom of most grills. If you grill as
much as I do, which means brushing the grill constantly, the catch pan is going to accumulate debris very quickly, and this can be a big fire hazard. If there is a pile of burnt-up kibbles and bits in the pan and you are grilling something with a high fat content, it can easily result in fire. When I purchase a grill, I generally line the catch pan with 2-3 layers of heavy duty aluminum foil, which makes cleaning the pan so much easier. I usually clean my pan out about 6 times through spring, summer, and fall, and maybe twice during the winter. At least twice a year, I always dismantle the entire grill and clean individual parts. If you brush your grates regularly, the grates won’t be too difficult to clean, but they definitely should still be soaked. There are a few options in what to soak in, and again, it will likely depend on what kind of shape they are in. Being a full-time caterer, I have a wide array of coolers in many shapes and sizes. I usually use a cooler in which to soak my grates, generally in hot, soapy water. I usually boil a few large pots of water, take off the stove, squirt in some dish soap, and pour into a cooler where the grates are already waiting. Close the lid and let them soak for 2-3 hours, rub them down with a stainless scrubby, and rinse well. If the grates are a real mess, in a remote area where no animals will be, you can put down a tarp or dirty rag towels, place the grates accordingly and spray with oven cleaner thoroughly on both sides. Let them sit for at least ½ an hour and scrub them down wearing rubber • Chillin’ Continued on page 20

Again, please make sure it’s in an area where no animals - or children for that matter - will visit. Once finished, break out the garden hose and give them a good rinsing, especially if using any chemicals. While the grates are soaking, it’s time to attack the inside and outside of the grill; however, first and foremost make sure the propane tank is turned off and disconnected. Again, it may sound like common sense, but…remove the covers of the flame units, or burners, usually multiple v-shaped units that remove easily. It’s generally a good idea to soak these as well and scrub them afterward. Examine the burners carefully to see if any of the holes in the burners are clogged. If they are, you will need to unclog them. If the burners are removable, soaking these in boiling hot water will definitely help loosen up anything inside the holes. Sometimes the boiling water will remove the clogs, but if nothing else, it will loosen things up enough that a small skewer of sorts will usually do the trick. If using anything wooden, such as a toothpick or wooden kabob skewer, be very careful not break it off inside. Some burners are built in such a way that you are able to blow the holes clean once out of the water and the unit has cooled. Don’t burn your fingers or lips. Now that the grill is completely gutted out, I usually spray it down with oven cleaner. Don’t forget to spray
under the inside of the grill lid. Close the lid and let the chemicals work their magic. Use the same precautions as you did earlier when cleaning the grates. With gloves on, wipe down the inside carefully. Spray it down with a hose completely and again, do so in an area where no animals may be tempted. The last thing you need to do once you put the grill puzzle back together is to turn it on and let it cook for about ½ hour just to help burn off any chemical or soap residue that may be left. Your grill will now look like new. Not only will it look better, but it will cook much better and produce a better and cleaner flavor to your goodies. Now that I am done boring you with some very important ideas to keep the oh-so-vital grill in tip-top shape, I want to share one of my favorite simple grill tips that is guaranteed to trash your grill all over again! We have all had buffalo wings, but when grilled in this manner, they will become your all-time favorite. Whether you do this with wings or chicken quarters, once grilled, you will definitely be brushing the grill right after this one, but you will also be sold on how great the chicken comes out. Buffalo wings are one of my all-time favorites, and although the usual fried or baked wings always work, grilled buffalo wings completely conquer the others. I always grill my wings sauceless for 3 minutes or so on a welloiled grill, and then pop them into a plastic tub with a favorite sauce, snap on the cover, shake it all up, and pop them • Chillin’ Continued on page 21

September 17, 2018 • Chillin’ Continued from page 20 back on the grill with the grill side up. I repeat this process 3-4 times, shaking them with the sauce after every turn, and the buffalo flavor is so much better than any buffalo chicken you will get anywhere else. I love doing this with quartered chicken as well. Personally, I make a honey garlic buffalo sauce when grilling most of my chicken, and like the wings, recoating with sauce and shaking the quarters 3-4 times during the process. You can do this with any sauce you want. I sometimes make a 50/50 combo with buffalo and barbecue just to shake things up, but the process with any sauce will make your chicken so much better than just basting while grilling. After the last turn, I like to pop them on a tray, wings or quarters, and crowd them altogether, and sprinkle generously with crumbled bleu cheese. I then turn off the heat, close the lid and let the cheese work its way into the
wings. Whether you do this with wings or chicken quarters, this is a fun dish. Although I am usually all over bleu cheese dressing when eating wings in most situations, no dressing is needed with these babies. One last thing to add is that if you decide to do this, you will need to designate a plastic tub with a cover just for this occasional mission as almost any good sauce will permanently discolor the tub. A small price to pay for what I consider the best grilled chicken ever! I hope today’s grill cleaning education was helpful to most of you, and if it’s old news to experienced grillers, I hope you try the chicken idea and make your crowd smile from ear to ear with sauce all over their face. Until next week, when I will be sharing some delicious grilled duck recipes, continue to Get Your Grill On, and always Keep on Chillin’ While Grillin’. Pleasures…at The NH Boat Museum Story & Photos by Kathi Caldwell-Hopper I love to wander around the Lakes Region on a September day. With the sun shining, and some of summer’s humidity and heat behind us, it is a glorious time of year to get in the car and explore all the area offers. It is also a time to stop by some places I just did not manage to visit in the hectic summer months. So it was no surprise to me that my wanderings led me to the doors of the NH Boat Museum in Wolfeboro. I wanted to see this summer’s exhibit, and I was glad there was still plenty of time before the museum
closes after Columbus Day weekend in October. I visit the Boat Museum every year, knowing the exhibit will be changed from the previous year and because, while I am not a boat owner, I am a sucker for wooden, antique boats. I find this method of boating fascinating: the care taken to make a wooden boat, the beauty of the designs and the history of the era of Lakes Region boating when things were a bit slower. It brings to mind the Gatsby era, toasting with champagne and living the good life when things were well made and enjoyed to the max.

The NH Boat Museum is located in a former Quonset hut style building (once used by the Allen A Resort for dances, concerts and plays). Today, the dome shaped style building is home to the display of all-thing-boating. Each spring through autumn, the museum has a new exhibit, as well as the permanent displays. This year’s exhibit is titled “Rare Boats that Mark Transitions in Our Economy and Culture 19001940” and it is a great view of what the title says, showing some beautiful old wooden boats. I started my tour with that exhibit; I usually try to read all the signs and information to familiarize myself with what I will be seeing, but shiny wooden boats were so attractive, I just could not help but walk right up to them. When you see a well-kept wooden boat from another time, I dare you to not be mesmerized, to not want to get as close to it as possible. The first boat, on the left in the big main exhibit area is a Dee Wite all-mahogany pleasure craft. The sleek design and shining wood was the product of Joseph Berry Lodge, who created the Dee Wite company after his job as president of the Dwight Lumber Company and Berry Brothers Varnishes. The boat on display is a Split Cockpit Runabout and is 19 feet long. Not far away in the room is information on the Gesswein “Sportabout” a 14-foot Runabout built in 1928. I am used to seeing beautiful old boats in the museum, but it was a delight to see a shiny, deep maroon 1950 Ford car on display as well. “They sure knew how to make a beautiful car back then,” I said to myself. The car is on display through the generosity of Jack Armstrong, and well worth stopping at the museum to see how cars once looked. A convertible, the car gleams from its front hood to its back, shiny silver bumper. In the past, I have interviewed Lakes Region resident Fred Clausen, who collects vintage toy boats. He has generously loaned some of his amazing collection of little boats to the NH Boat Museum for a display. Fred began collecting toy boats as a way to decorate the office of his family’s lodging property. The property, Proctor’s Lakehouse Cottages in Weirs Beach, displayed the toy boats, which became
quite a conversation starter with guests. The collecting bug bit Fred and his toy boat fleet grew and grew. His extensive collection focuses on boats you might see on New Hampshire’s lakes, such as runabouts, outboards and race boats. Titled “Big Dreams, Little Boats,” some of the boats from Fred’s collection are on display and a lot of fun to see. Some of the boats are displayed with their original packaging, such as “Fiesta Queen” which sits atop its red and green original box. Not far from the toy boat area, I was drawn to a huge photo mural of The Swallow (from the collection of Carol Humphrey-Clouter), with men and women aboard. It is a photo taken long ago, and you can tell because the women have long skirts and the men are dressed a lot more formally (suit jackets and white shirts) than we would see boaters dressed today. Nevertheless, it looks like the people in the photo, aboard The Swallow, are having a grand old time, all smiles and casually posed. Historical information by the display tells us Goodhue & Hawkins Navy Yard, on Wolfeboro Bay, was home to the Swallow from 1898 until the 1960s. It was used as a charter boat and Captain Nat Goodhue once took the Swallow out on a rescue mission in a storm. The mission was successful, but the Swallow was damaged, hauled from the water, but never repaired. Eventually, the boat was burned, but old tales of her heyday and period photos show the fun passengers had on the Swallow once upon a time. I enjoyed a display in this area of the museum showing the commercial Winnipesaukee steamboat timeline, and old posters advertising rides on the Lady of the Lake steamboat. A wooden replica of the Lady of the Lake shows us, in great detail on a wooden model, what the steamboat looked like and it must have been a thing of beauty when out on the lake. On the former Quonset hut stage, which is reached by walking up a few steps, a replica of an old boat shop shows us a collection the museum acquired in 2001 from a modest, privately owned boat museum in Maine. September 17, 2018 • NHBM Continued from page 22 over 15 small marine engines, several outboard, many framed advertisements and pictures, there also were over 500 items relating to the repair, building and maintenance of boats. A small portion of the collection is on display, with mechanics’ and woodworkers’ tools from long ago. I found a display on the stage relating to the Laconia Car Company to be fascinating. When the old car company liquidated its Boat Department, a bargain was offered: buyers could obtain a 16-ft. Standard SportSter boat, fully equipped, for $200; the regular price having been $369. They could be used with a variety of outboard motors, and the cockpits were comfortable with upholstered cross seats. The steering wheels of the boats was of the motor car type. A real example of a SportSter boat is on display and although showing some of the wear of the years, it is still a thing of great beauty to behold. Also on the stage, there is information about motors for many boats, including the Johnson Sea Horse motor, among others. It should be noted that the NH Boat Museum is in the midst of a campaign
The NH Boat Museum seen from the stage to build a new museum. Landlocked for 20 years, the museum is now poised to construct a new, waterfront home on Wolfeboro’s Back Bay. With a new, larger space, the museum will have room to continue and even expand its many programs, from boat building classes to lectures on allthings boating, and of course, more room to display all those wonderful wooden and other boats! It is certainly time, with the growth of the NH Boat Museum, for expanded, climate-controlled space. The current space limitations, plus lack of an HVAC system, hinders the efforts to bring even more programs and displays
to the area. A new museum building, located on the water, makes sense in many ways and will have a Children’s Lake Discovery Center, an exhibit hall, event space and much-needed collections storage space. Like many who visit or reside in the Lakes Region, eventually I find myself at the NH Boat Museum on a sunny September day, or anytime the museum
is open. While I love the exhibits and the unique building, I can only imagine how the display of wooden boats and other objects that take us back to the early days of boating on the lake would expand in a new, roomier museum. I may not own a boat, but I love this museum that transports me back to the days of Gatsby, of genteel boating and ladies in long skirts and men in straw hats, all enjoying a warm day on the lake. Really, I think to myself at the end of my tour of the exhibits, one needn’t own a boat to relish a step back in time at the NH Boat Museum. (For information on the NH Boat Museum, visit www.nhbm.org, or call 603-569-4554. The museum is located at 399 Center Street in Wolfeboro and is open Memorial Day to Columbus Day from 10 am to 4 pm Monday to Saturday and from noon to 4 pm on Sunday.)
