Something’s Brewin’ in Wolfeboro
Local Couple Offers Specialty Coffee Roasted on the Shore of Back Bay
By Mark Foynes “It all begins with the beans,” explained Troy Lucas, co-owner of Lucas Roasting Company, a purveyor of high-quality coffees based in Wolfeboro. Troy loves talking coffee. He’s the master roaster for Lucas. If you walk into his establishment, which he runs with his wife and business partner, Jennica, you will likely walk out knowing a lot more about coffee when you leave. Troy has been roasting coffee beans for about 17 years. He explained that it started out as a hobby, somewhat akin to home brewing. “There was a lot of good coffee out there, but nothing that quite suited my taste,” he said. “It’s something I’m passionate about and learning the art of roasting the best quality beans was something I immersed myself in once I got started,” Troy added. While he did solicit tips from master roasters as he was getting started, Troy said he is “largely self-taught.” He said he would take copious notes after each batch was roasted to document the qualities of each variety of coffee beans. “It was a learning process in the beginning, but as time went on, some things became almost second nature,” he added. After perfecting his craft, Troy began to consider launching a commercial

enterprise that would allow him to make a living doing what he loves. At the time, he and his wife, Jennica, were living in Broadway, Virginia. In 2007, the Lucas Roasting Company was launched. In 2016, the Lucas’s packed up and headed north to New Hampshire’s Lakes Region. “It was like coming home,” said Jennica, who spent her early years in Epsom, moving to Virginia at the age of 12. When the Lucas family first relocated their business to the Granite State, they set up shop in Alton Village at the previous site of the Fiddlehead Farm

grocery store. “It was a good location to begin with,” Troy said of the 1,000 squarefoot facilities. “It was spacious, so we had plenty of room for the roaster and for the inventory.” However, the space - located near the rear of the building - was not conducive to operating a retail component of the operation, which was one of their goals. The space was also adjacent to an auto mechanic. “They tried to be good neighbors, but there was always the smell of exhaust, which was inevitable,” Jennica said. Although walk-in customers were
few at their former Alton location, both agreed that the combination of the aroma of high-end coffee and auto fumes was not the kind of olfactory ambiance they were looking for. The space was also not conducive to having a small cafe adjacent to the roastery. As their lease was about to expire, the Lucas’s began searching for another home base not too far away. “We really wanted to have a small retail space where someone could come in and enjoy a cup in addition to our main business of roasting and selling the coffee [in bean and ground form],” Troy said. While in-house coffee service generates some income that supplements their wholesale business, corporate sales, and mail order operations, the major driver was that they wanted a space where they could connect with customers face-to-face and establish one-on-one relationships with fellow coffee lovers. “A lot of times people will know exactly what they want, but other times, they don’t quite know, so this space gives us a chance to talk with customers about what they’re looking for,” Troy said. Like in wine tasting, where there’s a certain lexicon that denotes the flavor quality of each vintage, the Troy’s use a parallel vocabulary to describe each of their coffees. Phrases like “smooth, not aggressive,” “herby aroma,” “full bodied,” “chocolaty,” and “not overtly strong” are among the frequent descriptors. To this end, Lucas roasts single bean offerings, as well as blends. Troy said their regular espresso is a multi-bean blend that incorporates caramel and chocolate overtones that enhance the undergirding coffee flavor. While I sat at the Lucas’ three-stool coffee bar, Troy offered to make me a sample. Not wanting to get too wired up, I initially declined having had a cup earlier. But he offered me a decaf, so, in the interest of advancing my style of immersive journalism, I accepted his generous offer. Right there on the spot, he brewed me an iced decaf espresso Americano. The grounds are from single-origin beans from Brazil. I’m used to coffee weak and docile;
what I usually brew at home would be hard pressed to defend itself. In spite of being a decaf, flavor-wise the

brew Troy cranked out for me was the equivalent of bringing a pistol to a knife fight. “This is unlike any coffee I’ve ever tasted,” I said. “Well now you know what real coffee tastes like,” Troy replied. From some people this could be taken as a little highbrow. But Troy’s kind eyes, down-to-earth demeanor, and sincere passion for his craft blunt any element of snobbery. Plus he was right. Both Troy and Jennica are coffee evangelists. It’s almost like they’re on a mission to help folks liberate their taste buds and help them unlock the true flavor potential of some of the world’s finest coffee beans. Troy’s commitment to his suppliers
is expressed by something of a mission statement published on the company website: “Our burning desire is simple – educate coffee consumers on conditions in the world’s coffee growing regions while producing incredible coffee, with only the best beans from around the world, for everyone to enjoy and share with others.” Troy elaborated, “That’s where we get our motto: ‘Supporting the world’s coffee farmers one cup at a time.’” The business is centered around a natural gas-powered coffee roaster that stands maybe four or five feet tall. Troy said the unit is remarkably energy efficient in its BTU output and can roast a load in as little as 14 minutes. He said some of the slower roasts require a couple more minutes. This level of efficiency is important. Troy estimates that he roasts an average of about 800 pounds of coffee each week. That might sound like a lot - and it is for a two-person operation but Troy explains it this way: “We’re more small scale and custom than the big guys.” As for the selection of coffees itself, Troy and Jennica agreed that their customers’ preferences “definitely lean to the darker.” Troy said nationally, Lucas’ Italian Roast is “hands down our biggest seller.” When the Lucas’s first transitioned to New Hampshire two years ago, Jennica anticipated creating new roasts customized to local tastes to cater to local palettes. “We want to serve the local market,” she explained. Since their arrival, they’ve devised specialty roasts with names like “Winnipesaukee Sunrise Brew” and “Wicked Dark Sumatran.” • Lucus Roasting Continued on page 5

In addition to being able to buy a cup, there are also a number of coffee-related items for sale including bags of ground coffee for home brewing, coffee-making accessories like bean grinders, and even empty burlap coffee bean bags. “They’re actually a pretty brisk seller,” Jennica said. Troy agreed. “People come up with all sorts of creative applications for them, from drapes to folk art, all sorts of things you might see on Pinterest.” While the small selection of gadgets does bring in some revenue, both Troy and Jennica agree that really they are helping provide people passionate about coffee with the necessary tools to make their own brews at home with quality beans. The people of Wolfeboro have come to embrace Lucas Coffee Roasters,
considering these newcomers to be an asset to the community. A handful of folks streamed in to buy a coffee while we spoke. One of them was Alan Vittum, who described himself as a regular. He said that he comes by a few times a week to order a regular coffee and a snack. But on the day we met him, he was ordering a regular iced coffee for his daughter. What keeps Vittum coming back? “It’s great coffee made by good people,” he summarized. This seems to be the consensus opinion. One Google reviewer, giving Lucas five stars, wrote, “Great coffee and amazing people! Wolfeboro and the entire Lakes Region are blessed to have such wonderful small business owners. Keep on brewing!!” Another reviewer wrote, “[S]ome of the best handcrafted coffee and coffee roasting...created in house and served up with love by a dedicated and conscientious small family business.”

Another five-star commenter wrote, “I love this place. Their coffee is the best I’ve had and the people that run it are great. They really care about their customers, their community, and their product.” Lucas is poised for growth, in spite of the fact they do minimal advertising. “They’re finding us,” he explained, noting that the company’s reputation as a premiere small-scale roaster has spread over the past decade. In some cases, they’re shipping off a single one-pound bag to an individual anywhere in the U.S. The company has also cultivated a number of business clients, some of whom commission them to create a custom blend for their own companies. “Many of our business customers like having a custom blend that they can associate with their business,” Troy said, adding, “There’s a prestige associated with having your own roast.” The Lucas website says, “From

LRAA to Hold Art Materials Auction On Monday, September 24, the Lakes Region Art Association (LRAA) will host its second Art Supply & Materials Auction. The auction will be held in the evening at 7 pm at the LRAA Art Gallery located in the Tanger Outlets (Suite 132), Tilton, following a brief meeting of the Association. The Auction is free and open to the public; anyone can bid on the materials. The materials to be auctioned off have been donated by Association members and friends. Members were asked to look through their art studios to identify those art supplies and resource materials that they no longer utilized as a result of changing mediums, trying out new brands of supplies or just cutting back on inventory. While many of the materials are partially used, they are perfect for those artists wishing to try out new materials or mediums as well as for anyone thinking of getting started in the arts and looking for inexpensive materials for their “test drive” into the arts. The art materials being collected include paints (oils, acrylics and watercolors), drawing

This is the second auction of this type held by the non-profit Association. The first was three years ago and was
very successful in raising funding for the Association’s activities such as meeting presenter stipends and the association’s scholarship fund. Vynnie Hale, a well-known artist and owner of the VynnArt Gallery in Meredith, who did a great job handling the previous auction, has graciously agreed to be the auctioneer again this year. It should be a fun time and a great opportunity for artists and budding artists to pick up materials and supplies in an expensive manner. Those coming early to the auction or just visiting the gallery can also check out the many different mediums and styles of art currently on display at the Gallery. Visitors can also sign up for the free art drawing for an original watercolor, “Boss Rabbit”, donated by LRAA artist Linda Cargiuolo. Many of Linda’s other works are also being featured in the gallery windows during the month of September. The drawing will be held at the end of September; those entering must be 18 or older. With a change in temperature, migratory birds fly south. Living here in the Lakes Region, the unmistakable honk of the geese flying in V formation overhead signals their departure to spend the winter in warmer climates. However, there are those birds, the House Sparrow, for one, who choose to stay and brave the cold of winter by storing fat during the days to keep them warm throughout

Loons, it is thought, mate for life and usually return to the same body of water as the year before. Living near or on one of the lakes in the Lakes Region, you may spot a returning loon, listen to its haunting yet comforting call which signals that spring is breathing new life into our surroundings. Loons prefer to build their nests close to shore, in quiet coves or in areas surrounded completely by water. Soon after mating, eggs are laid and it takes 26 days before an egg will hatch. Both male and female loons take turns protecting the incubating eggs. Baby loons are born with tufted grayish brown feathers. Both parents participate in raising their young. Unfortunately, 30 percent of all chicks do not make it through the first year. At two months, the chicks are diving and swimming like their parents and a grayish-brown plumage is visible. When they are capable of caring for themselves, the parents leave their young and will fly off to other lakes for a gathering of loons. A bit of Native American legend tell us that “Earth-Diver” was a name given to the loon by the Native American Chippewa Nation. The Chippewas make their home in the northern part of the United States and southern Canada. An important part of Native American myths, legends and folklore, loons are symbols of harmony, generosity and
peace. “Loons are a powerful force of nature.” The Chippewas tell the story of the bird they called the “Earth-Diver.” It is said, “The Creator spoke to all the animals and instructed them to find a way to create land, so they would all be able to move from water to this land. Taking up the task the animals went about trying to find ways to create land. None of the animals succeeded. All they could do was swim around in the water. The loon with his powerful legs and dense bones dove to the bottom of the ocean floor. Upon surfacing, he was saddened by the fact he thought he had not succeeded. But when he shook the water from his foot, a batch of mud fell from it and the Creator had dirt to form the land.” To learn more about the life of a loon, visit the Loon Preservation Center. Chillin’ While Grillin’
Delicious Grilled Duck By Chef Kelly Ross Hello to all of my grillin’ friends. With Columbus Day right around the corner, I hope you are still firing up the grill. The leaves are starting to change, the weather is outstanding; it is truly the best of the year, in my humble opinion. With the cooler weather, you should be pumped to cook on the grill. The theme for this week is something that is in the love/hate category. Duck has that notorious label on it, but so be it. The haters will likely stop reading right now, but please read on, because some of the sauce recipes here are great for other things. When it comes to duck, the lovers will usually be all over any cut, whether the whole duck,
half duck, or boneless breasts. As I say often, it’s all about the sauce when it comes to great foods, and duck is a classic example. My alltime favorite sauces combine spicy and sweet, and most of these recipes include that flavor. Before we get to the recipes, let’s address some important tips to grilling duck. If you are not familiar with preparing or eating duck, it is a relatively dark meat. Even when the duck is completely cooked, the meat will be reddish in color. That is normal. Unlike chicken or turkey, when you cut into it and see a blood red color, don’t toss it back on the grill. If ever worried, temp it to reassure yourself that it is
cooked. Tossing it back on the grill will only burn and dry it out. Another key thing to know when grilling duck is that it has an incredible high fat content, which can result in some insane flames. I strongly recommend that you slice the outer skin, but not so deep that you hit the skin. I usually give it 2-4 slits, depending on the size of what you are cooking. If doing duck breasts, 2 slices is generally sufficient. If you are prepping a ½ duck, or a whole duck, no need to do so because there is a longer cooking process and it is generally cooked with indirect heat, as opposed to being directly on the grill. Again, remember not to cut too deep.
The next step is to sear the duck breast, skin side down in a pan on the stove. This will help release much of the fat through the slits, so come grilling time, the flame ups won’t be nearly as scary or severe. The perfectly cooked whole or ½ duck will have a crispy skin and will be cooked in a slow roasting fashion. The breast will be cooked directly over the flame as opposed to the larger versions. Not only is rubbery duck skin completely inadequate, it’s just not that good. Crispy on the other hand, yummy!! If the heat is too high, you will increase the chance of a grill fire and an overcooked bird. However, • Chillin’ Continued on page 13

Make sure you have a clean catch pan before grilling duck and I often put water in it. The water helps in preventing any fire flare ups. Sometimes if the hot fat hits a dirty, greasy catch pan, that is also another potential fire risk. Also, have a spray bottle ready in case of fire flare ups. I always have one ready regardless what I am grilling as a precaution, but I strongly recommend it when grilling duck. As for cooking different cuts of duck, here are a few standard thoughts/ideas on cooking times and what the final product should look like. If cooking a whole duck, which usually falls into the 3 pound +/- range, it can take 2-3 hours as you want to cook it at medium to medium high heat. As a rule, a whole 3-pound duck doesn’t have the same amount of meat as a 3-pound chicken. The bones of a duck are much bigger than the bones of a chicken. You also want to cook it on an indirect
heat, meaning have one side of the grill turned on high and the other on low. When grilling a whole duck, I put the bird into a pan and let the pan sit on the cooler side, close the lid and let the grill work its magic. At times, I will move the pan over to the hot side for a few minutes at a time here and there. As the fat starts to accumulate in the pan, empty the grease into a jar and save it. Some people love using the duck fat for other recipes. One of the biggest differences between cooking duck as opposed to chicken is that you cook it at a lower temp to let all the fat seep out of the duck in a gradual fashion. A crispy skin over time is a sign that the fat is slowly being rendered out from beneath the skin so the skin attaches itself to the precious meat. The internal temp when cooking a whole duck should be 165 degrees and the duck should have an even, brown color with great crispy skin. Most people who grill duck prefer to use duck breasts. It’s easier and quicker to cook and is maintenance free. All you have to do is grill it and eat it as opposed to slicing and/or ripping apart the bird once cooked. To each their
own. Grilling a duck breast is similar to cooking a chicken breast in that it takes about the same amount of time. As opposed to cooking many meats where it is a good idea to pull the meat from the refrigerator 30-60 minutes before grilling, 10-15 minutes prior will be plenty of time when grilling duck breasts. Regardless of the cut of duck or the prepping process, duck goes amazingly well with any fruit/berry sauce or glaze. Garlic cloves, fresh ginger and Asian spices also make for great additions to duck. Remember what I said earlier about sweet and spicy sauces? That is my theme, but the great thing about this is that if you don’t like spicy, or just a hint of heat, you have the power to make it as mild or hot as you like. Also, another thing I love to do when cooking a nice duck dinner is serving it over a
bed of an array of sautéed mushrooms. I love a mix of shitake and portabella. It makes a great accoutrement to the dish. Let’s start with a Grilled Duck Breast with a Blackberry Chipotle Sauce. I have been using this and a few variations of it for over 20 years and it has always been popular with my duck crowd. When cooking duck breasts, I suggest skin on, but feel free to remove it if that is your preference. If skin on, make sure it is nice and crispy. I’m not even sure if this awesome sauce can save a breast cooked with a soft skin. It has to be really crispy. If skin on, there is no other alternative. Let’s start with the sauce. Heat the oil over a medium high heat and cook the onion, stirring often for a couple of minutes until they are translucent, add garlic and cook for a minute or 2 more. Add the vinegar, the wine, the jam, and the chipotle. Bring to a boil, reduce heat to medium and get it to a simmer. Reduce the liquid to about 2/3 of a cup. Combine the cornstarch/water until smooth and stir into the mixture until it has thickened. Season accordingly with salt/pepper. As for the duck breasts, liberally rub with the olive oil and salt/pepper. Grill on a medium high heated grill, skin side down until crispy, usually 4-6 minutes. Flip them and cook for an additional 2-3 minutes “if” you prefer your duck breast medium rare-medium. As opposed to cooking a whole bird to 165 degrees, the breast is best at a lesser temperature. Medium rare is perfect. Always let the duck sit for at least 5 minutes, and then slice in a diagonal fashion, then fan the slices across the dinner plates, and drizzle the sauce over them. Garnish
4 large duck breasts olive oil for rub salt/pepper For the Sauce: 2 tbsp olive oil ½ cup minced sweet onion 4 cloves garlic, minced ½ cup balsamic vinegar 2 cups red wine 2 tbsp blackberry preserves, or substitute raspberry, if preferred *2 tbsp chopped canned chipotle peppers. If you love hot, use some of the adobo sauce 2 tsp cornstarch/2 tsp cold water salt/pepper *You can buy chipotle peppers in a can. They’re hot, but not quite as hot as the adobo sauce they’re packed in. You can also purchase dried chipotle peppers and reconstitute them in hot water for about 30 minutes. Drain and chop. In a pinch, a splash or two of Chipotle flavored Tabasco will work.
with fresh blackberries and serve with your favorite side dishes. I’m now going to give recipes for some great sauces for duck. Grill the breasts the same way as the previous recipe. That is a good standard way to do it, although marinating duck breasts in a citrus mix for an hour or 2 works well, and just grill them the same way. Here are some fun and tasty sauces that go well with duck. All of these sauces will easily dress 4 sliced and fanned out duck breasts, or there is no reason why you can’t use these sauces over chicken or pork, or as a dessert topping for that matter. The List for a Jalapeno Blueberry Sauce 2 pints of fresh blueberries, or frozen can be used ½ cup apple juice ½ cup water ½ cup sugar 1 fresh jalapeno pepper, chopped fine Very simply, combine all ingredients in a sauce pan and bring to a boil over a medium high heat, stirring occasionally. Once it boils, simmer until the sauce reduces to the consistency of a syrup. Generally about a 10-minute process. The List for Spicy Orange Sauce 2 tbsp orange zest 1 cup fresh squeezed orange juice. It makes a much better sauce than bottled 1 tbsp crushed red pepper flakes 1 tbsp of your favorite hot or buffalo sauce 2 tbsp orange marmalade dash of sugar dash of salt Mix the orange juice, the zest, pepper flakes, and hot sauce in a small pan and bring to a boil over a medium-high heat. Drop the heat to a simmer for 5 minutes or so. Add the marmalade and stir well and taste. Add a dash of salt and sugar if needed. If you want more heat, add a bit hotter sauce. I hope you are intrigued enough to give some of these duck ideas a shot. Whether a duck fan or not, the sauces are simple and can be used on numerous things. Three Drag Racing Legends From New England Will Be Honored On Saturday, September 29 at noon, in a ceremony that is open to the public, the North East Motor Sports Museum in Loudon, NH will honor three of drag racing’s most prominent New England participants. Jack Doyle, Jimmy King and Al Segrini will each see a banner honoring them unveiled from the museum’s ceiling. The banners will be a permanent part of the museum. Jack Doyle was a founder of New England Dragway and served as its first General Manager. A lifelong
supporter of the sport, Doyle has been a driver, engine builder, car owner and a member of the Dragway’s Board of Directors. Jimmy King was one of the area’s most successful top fuel drivers. He also raced Funny Cars and survived a horrific fire in one of them. Best known as the King & Marshall dragster driver, King was a winner on the local and national stage. Al Segrini’s record includes five wins in National Hot Rod Association

Wright Museum to Provide Insight into the Great Migration On Tuesday September 25 from 7 to 8 pm, The Wright Museum of World War II in Wolfeboro will host a lecture by UNH Professor Susan Batterson entitled “The Great Migration.” Part of the Wright Museum’s 2018 Lecture Series, sponsored by Ron Goodgame and Donna Canney, this lecture will provide insight into the Great Migration during World War I when African Americans began to move north. At the lecture, Batterson will discuss a variety of topics related to the Great Migration, including the ways in which migrants’ cultural influence impacted cities, music, art, entertainment, civil rights, culture, and more. Prior to 1910, nearly 90 percent of African-Americans lived in the south. By the end of World War I, however, approximately 40 percent of African-Americans resided in northern American cities. “This massive demographic shift impacted every aspect of life in the United States,” said Mike Culver,
executive director of the Wright Museum. “From the very definition of what it means to be an American to the cultural life of northern cities, the Great Migration redefined the cultural landscape of the United States.” Culver described the Great Migration as “one of the largest internal movements in history.” He added, “We cannot fully understand the culture and demographics of our current age without taking the Great Migration into account.” The Wright Museum’s Lecture Series takes place every Tuesday through the end of the museum’s season, which concludes on October 31. Admission is $3 for members and $8 for non-members. Seating is limited, and reservations can be made by calling 603-569-1212. The Legend of Sleepy Hollow at Northeastern Ballet
Watoto Children’s Choir Returns to Lakes Region The First United Methodist Church of Gilford-Laconia is welcoming back the Watoto Children’s Choir on October 7 at 7 pm. This year the choir, from Uganda, East Africa, will perform their brand-new album, “We Will Go”. This six-month tour, launching in the USA on the East Coast, presents the story of abandoned African children and vulnerable women, who’ve been empowered to rise above their circumstances, and answer the call to be part of the new Africa, ready to make a difference in the world. Watoto Children’s Choirs have traveled extensively since 1994, coming to the Lakes Region twice before. They are sharing a message of hope for Africa’s most vulnerable children and women. On almost every day of the year, the choir is performing somewhere in the world. Hundreds of thousands of people have the opportunity to meet some of Africa’s future leaders. Audiences see their smiles and are embraced by their hugs. The children have the distinct privilege of telling people,

This classic show also will feature The Captain Wolf Orchestra with members from Berklee College of Music performing an original song by Captain F. John Nicoll, “Be With Me,” produced by Boston Pops keyboardist, Brad Hatfield.
