The Libby Museum is a Natural History Treat! By Sarah Wright If you’ve never visited The Libby Museum of Natural History in Wolfeboro, you’re missing out on a treasure trove of local history. The first time I went there, I was amazed at how many interesting artifacts and animal specimens were packed into a fairly small space. I’ve been back multiple times since, and I notice something new each time. The taxidermy specimens on display are beautiful, and give the viewer a rare, up-close look at some of our local species. Then there are the Native American artifacts, like arrowheads, and even a dug-out canoe. There are plenty of other artifacts from museum founder Dr. Henry Forrest Libby’s life as well, including his dentistry tools and other popular household items from the late 1800s and early 1900s, like combs, hairpins, and pottery. I found the old money to be especially interesting, since we once had different currency for the Confederacy, back before the Civil War. From time to time, more artifacts are added to the unique collection, like an old photo album that was found in the attic of Dr. Libby’s former home across the street from the museum. For art lovers, there is a changing art display that currently features nature photographs by Jane Kelley, entitled “Wings & Things: Nature of New Hampshire.” My kids have always liked the

activity table where they could look at rocks and gems with a magnifying glass, or dig for shells in the sand and match them to the pictures. They also have a scavenger hunt for kids, and if they locate everything on the list, they can earn a small prize. In the woods next to the museum, enjoy some real natural history and take a stroll on the Libby Woods Walk. This was the dream of former Executive Director Lauren Hammond, and after cutting some branches and receiving wood chips from the town, it opened a few years ago. It’s a short loop through the woods, and even toddlers can manage it. It’s also an

interpretive trail, so everyone can learn about and identify the native plants and trees that Dr. Libby originally planted there years ago. There’s an area of the woods with a ramp that leads to an old barn’s foundation, and the museum sometimes uses the spot for painters or children’s story time. Dr. Libby’s old hunting lodge is also visible from the trail, although the building is now used for apartments. The story of Dr. Libby is fascinating. I’m sure many people know that he attended Brewster Academy, but did you know that he married his Latin teacher? To make money, they moved to Boston, where Dr. Libby became a
dentist, first learning as an apprentice and then later getting his degree from Harvard. He was also an inventor of sorts, devising a method of filling teeth with gold and then discovering that he could burn gypsum in a kiln to make plaster of Paris (which can still be seen at the museum.) Dr. Libby and his wife, Hattie, continued to summer in Wolfeboro, eventually moving his house over the ice to where it stands now, across the street from the museum. At the time, he owned much of the coast line as well as Rattlesnake Island. Dr. Libby had always been interested in science and nature. He started making little nature boxes of his collections in order to study them more closely, and then moved on to skeletons and taxidermy. (Most of the animals on display at The Libby Museum are from his original collection.) News of his hobby spread, and soon the townspeople were bringing Dr. Libby new artifacts, animals, plants, or bugs to add to his collection. After a while, he decided he no longer had enough room to house the items, so in 1912, he set about building a public museum to display them. He supposedly used wood from trees on Rattlesnake Island to construct the museum. The museum was an instant hit as everyone wanted to take a look inside. Annie and the Orphans to open summer concert series The 2019 Friends of the Wolfeboro Community Bandstand concert series will open with a familiar name to many local music fans. Annie and the Orphans have performed in the bandstand in Cate Park in downtown Wolfeboro on numerous occasions and will return with everyone’s favorites from the classic days of rock and roll. The first concert in the weekly series is set for Saturday, July 6. The band has played for more than 50 years and performed at countless venues over the past 50-plus years, starting at school dances and moving on to street dances, college fraternity parties and battle of the bands competition and eventually on to big stages such as Gillette Stadium, Meadowbrook Musical Arts Center, Trump’s Taj Mahal in Atlantic City, N.J., the Flying Monkey in Plymouth and the M/S Mount Washington. Anatole “Annie” Paquette is the band’s front man, billed as one of the most talented and entertaining front men around. He started as the band’s singer and drummer back in 1964 when he formed the band with childhood friends and now brings his showmanship as the front man. Steve Giotas began playing drums in high school, teaching himself by listening to records. He formed his first band, the Javas Miles Band and went on to play in Last Call, Brown Sugar, Animated String Section and Joe McDonald and Full Circle, playing all kinds of music. Giotas is the newest member of The Orphans. Peter “Wild Man” Previte has been playing keyboards for more than 40

years. He has performed with numerous bands while living in New Hampshire, Georgia, Texas, Massachusetts, Las Vegas, Nev. and even Dublin, Ireland. His unique keyboard style and vocals keep fans entertained wherever he plays. Roy D’Innocenzo is the band’s guitar player and readily incorporates the styles of classical, folk, jazz, country, rock and blues into his playing and has played on CDs for a number of professional bands. He also teaches guitar. Scottie “The Horn” Groleau began playing sax in high school and has played with a number of bands in the Lakes Region, including the Dynamics and the Rusty Rockstar Roadshow with leader Vito Calamari. Any fan of old time rock and roll will certainly want to make their way to Cate Park on Saturday, July 6, as the Friends of the Wolfeboro Community Bandstand’s summer concert series begins a new year of fantastic shows in downtown Wolfeboro. The show starts at 7 pm and runs until 9 pm. The concerts, which are held each Saturday in July and August, are free to the public, though a pass-thehat offering is accepted at intermission to help the Friends of the Wolfeboro Community Bandstand continue the tradition of bringing entertainment to the bandstand each and every summer. If rain is threatening, the concert will be cancelled and there will be a sign saying as such at the entrance to Cate Park near the town docks and a notice will be posted at wolfeborobandstand. org.

One particular story that I learned from Alana Albee, current Executive Director of the museum, was the sensation caused by the “Wolfeboro Cootie.” During World War I, a woman in Wolfeboro received a letter from her son who was on the battlefield. A little lice-like bug was in the envelope with the letter. The woman brought the bug to Dr. Libby to display at the museum, and it’s still there today! At the time, it served as a connection to the war, no matter how small. People wanted to see it. Over the years, The Libby Museum has expanded its offerings to include numerous events and programs. Summer day camps for kids are very popular, with the Young Explorers science program for ages 5 to 7, open now for registration. Every Wednesday at 2 pm throughout the summer, all ages can enjoy the free Wildlife Adventures show, where visitors get up close to live animals and learn fascinating facts about them. “Mrs. Libby” might even be there to walk you around the museum and answer questions about the exhibits. New this year are Art Classes. Learn from artist Stephanie Blackstock Ayers and choose from Wildlife Sketching on Saturday, July 27 from 10 am to 12:30 pm or Landscape Painting with oil and palette on Saturday, August 10 from

Architects began planning the project on June 1, and details will be ready by this September. The Libby Museum is located at 755 North Main Street, and is currently open from 10 am to 4 pm on Tuesday through Saturday, and from noon to 4 pm on Sundays. Castle Car Show coming on July 6 Each year, on the Saturday after the 4th of July, Castle in the Clouds in Moultonboro hosts the popular Castle Car Show, an event for all ages. Featuring automobiles from across generations, the show has become one of the Castle’s biggest events of the season. Each year, there are cars as touched by time as the Castle itself, with past shows including models made as early as 1915. “This year,” says Programs and Volunteer Coordinator, Stephanie Poole, “the oldest vehicles currently expected to be on display are a 1933 Ford Model 40 Deluxe Coupe and a 1933 MG J2. Last year’s Castle Car
Show included over 250 vehicles and more than 1,200 spectators. Attendees may vote for their favorite exhibitions, and first-, second- and third-place prizes will be awarded for 1940s vehicles (this year’s featured category) and non-1940s vehicles. Lunch will be available for purchase in the field from Cones in the Clouds, which serves wraps, flatbreads, Kellerhaus ice cream, and more, and at local food trucks. The event will take place in the field by Shannon Pond, with free spectator parking and a $5 cash admission fee. Vehicle registration for the show costs $25 per vehicle, and includes one driver and one passenger admission to the car show, and one free admission and one discounted admission to tour the Castle on the day of the event. Spectators may enter the grounds via the 586 Ossipee Park Road entrance if they wish to attend only the car show with the option of paying for a Castle tour after arrival, or the front gate entrance if they would like to tour the Castle and attend the event. Castle tours will be offered as normal throughout the day and the Carriage House Restaurant will be open for lunch from 11:30 am to 3:30 pm. Diane Blue Rocks the House on July 3 Diane Blue (from Ronnie Earl and the Broadcasters) returns to Wolfeboro on We d n e s d a y, July 3 at the Barn at the Inn on Main. Diane has toured extensively throughout the U.S. and Europe, gaining many awards and accolades in the blues world. She has shared the stage with blues greats such as Muddy Waters, Luther “Guitar Jr.” Johnson, Irma Thomas, and Big Jack Johnson. For the past several years Diane has been a member of the Broadcasters, blues great Ronnie Earl’s band. She has appeared on two of Ronnie’s records, as well as two of her own, often making guest appearances on other artist’s records. From her soulful rendition of Etta James’s “Rather Go Blind” to rocking versions of Magic Sam’s “What Have I Done”, Diane’s repertoire has something for everyone. The last time she was in Wolfeboro was 2015 when members of the Joe Cocker Band, Tina Turner Band, Blood Sweat and Tears and local guitarist Chuck Farrell of the Peacheaters/ Shadow Riders and the Carolyn Ramsay Band backed her. This time
she brings her Boston based all-stars. Opening the show is Concord, NH native Brooks Young of the Brooks Young Band. The Brooks Young Band is currently enjoying some national recognition after a tour with Three Dog Night. The show is produced by Chuck Farrell, who brought James Montgomery, Blues Project, Jon Butcher (Jon Butcher Axis), Peacheaters, Mallet Brothers, Shadow Riders, Diane Blue, Charlie Farren (Joe Perry Project), and Barry Goudreau (formerly of Boston), among others, to Wolfeboro over the years. Woodsy and Wonderful: Field Fine Art Studio By Kathi Caldwell-Hopper The days of summer are fleeting, and when the forecast calls for sun and warm temperatures, one must take advantage and explore unknown areas. Thus it was that I decided to drive to the Sandwich, New Hampshire area for a hike on a trail that looked like fun. I never explored the trail - I got wonderfully distracted when I instead discovered Kathryn Field Fine Art Studio on a quiet country road in Sandwich. (A sign on the rural road announcing a yard sale or farm stand or shop are like magnets to me. If someone who lives way out in the country has taken the time to create a shop, I am always appreciative enough to stop out of curiosity. But as a lover of art, I certainly could not resist a sign pointing to a side road for an art studio.) As I traveled through the pretty little village of Sandwich, I drove by the Tappan Chair shop (another great place), and continued on to Taylor Road. This is a beautiful area with rolling fields, old farmhouses and that rural tranquility I so appreciate.

an artist’s palette with the words “Field Fine Art”. On impulse I made a turn and headed down a side road even deeper into the woods, which led to a wonderful art studio and the multi-talented Kathryn Field, who is the epitome of a busy, working artist. Kathryn maintains a studio in a building adjacent to the home she shares with her husband in the private setting. If one wanted to get away from it all way out in the woods, this would be how to do it. And yet, Kathryn is anything but a hermit. Her studio is often filled with students taking the variety of workshops she offers to the public. On the day I visited, Kathryn was busy in her studio preparing for an upcoming exhibit. She met me in the yard with a welcoming smile and an invitation to come to the studio. Admittedly, my visit
was a bit unusual in that I just happened upon the place, but it is advisable to call ahead (contact information at the end of this story). Luckily Kathryn had the time on this particular day to show me her artwork and explain about the summer workshops she is gearing up to present. Kathryn’s studio is a huge, bright space with a tall ceiling where she works on a variety of projects. It is also where students can spread out with supplies to do watercolors, prints and drawings when taking a class. When I visited, Kathryn was working on a large oil painting of sun filtering through trees. It was a beautiful painting and she said it is for her upcoming exhibit at the Museum of the White Mountains in Plymouth, New Hampshire. The walls are filled with Kathryn’s paintings and here and there a sculpture is placed, showing the range of her art skills. “I was educated at Temple University’s Tyler School of Art, and earned a Master of Fine Arts degree from the University of Wisconsin in Madison,” she explained. “I started as a jeweler but switched to sculpture.” Sculpture was clearly her first love and she taught sculpture and design at Ohio State University, Washington University in St. Louis, the School of the Chicago Art Institute, Western Michigan University and Lake Forest College. After moving to New Hampshire, Kathryn was a lecturer in art at Plymouth State College and taught for many years at the Holderness School. “I have been painting for 20 years,” she explained. “First I did watercolors and then oils.” For two years, Kathryn • Day Tripping Continued on page 12

During that time, she also taught and she speaks of her time in Australia with great fondness. After returning to the United States, Kathryn lived and worked in Sandwich. Teaching has always been part of her life, with a desire to share and pass on the skills she has to others who want to create. “We moved to Sandwich full time in 1999,” she said. “The land is a family property and we built our house and the studio here. I was working on commissions and thought that my studio seemed really big for just me, so I decided to open it up for workshops.” The studio is indeed perfect for classes,

but Kathryn includes use of the beautiful property surrounding her home and studio as well. She invited me to take a walk and I soon saw why this would be a more-than-perfect place for plein air painting. The large flower garden, and the soft green lawns surround the home, offer a variety of scenic spots any artist would love. An old stone wall runs along the back of the property, and in the distance more fields seem to roll on to meet the mountains. “When it’s nice weather my students can set up outside or if it’s rainy, they can paint on the screened porch of my house,” Kathryn told me. I spotted a large sculpture at the edge of the field and asked her about it. “Let’s go take a look,” she invited. Near the stone wall is placed a large sculpture that Kathryn created, titled “Balance”. It is modern

and graceful and yet fits well in the unexpected wooded setting. Kathryn works full time as an artist and has crafted a life anyone would envy, but she has achieved it by dedication to her art practice and a willingness to focus solely on art and teaching. “A typical day for me is exercising in early morning and then getting right into the studio for six or seven hours.” It might sound like fun and games, but in reality it is hard work to maintain that focus and skill to complete not just any painting, but rather to create successful, topnotch works of art. Along with painting, Kathryn puts time into marketing her work and creating and publicizing the workshops she offers throughout the year. The workshops are well-thought-out and geared for areas of art her students wish to explore. “Usually the classes are made up of six to eight people This gives everyone room to spread out and get lots of individual attention. I have a number of returning students and some are summer people from as far away as New York and North Carolina,” said Kathryn. This summer, she is offering a variety of classes, including a Watercolor Portraits Workshop on July 2 and 3 and also on July 26 and 27; Landscapes in Watercolor on July 18 or July 6 and 7; an August class will be offered on August 13 and 14. Handmade and Altered Books will take place on July 23; Introduction to Printmaking is scheduled for July 11 or July 21. The nice thing about these classes is that all materials are provided. Students only need to bring their lunch, which is a relaxed meal on Kathryn’s porch or outside if the weather is fine. With the skills of a true, dedicated teacher, Kathryn has taught students as young as age three and as elderly as age 94. “I like to say I can teach anyone to draw,” she added with a smile. Off site, she spends a lot of time teaching as well. This summer, she will be at the Sandwich Children’s Center
to teach clay and collage classes. At the Center Sandwich Fine Craft Gallery at Sandwich Home Industries she will be offering a Drawing Animals and Nature class on July 28. Along with her busy teaching life, Kathryn works daily on her own art and is represented by Patricia Ladd Carega Gallery in Center Sandwich, and Brothers Gallery in Wolfeboro, New Hampshire. She is currently busy with work to be shown in a November 5 to December 13 exhibit at the Museum of the White Mountains, titled “Walking in the Whites: A Poet/Painter Dialogue”. Kathryn’s visual art will be shown with the poetry of Tim Muskat. Visitors will experience a sense of place, through poetry and paintings focused on the experience of the White Mountains. An opening reception will take place on November 5 from 4 to 6 pm. Upcoming this summer, Kathryn will also be a featured stop on a unique Summer Garden Tour. The July 20 event is presented by Cackleberries Garden & Gift Shop and will run from 9 am to 3 pm. Nine beautiful gardens in Sandwich and Holderness will be on the tour, with proceeds from the admission price going to two local charities. The youngest naturalists (ages 2 and 3) are invited to explore the natural world. Using their five senses, participants will investigate their surroundings in fields, forests, ponds, and streams. Please dress for the weather with clothes that can get wet and muddy. An adult must participate with children at no cost. A Pollinator Party will happen on Thursday, July 11 from 9:30 am to 5 pm. (The last trail admission is 3:30 pm.) Squam Lakes Natural Science Center holds the Pollinator Party to celebrate the life and work of bees and butterflies, and caterpillars too. Bees and other pollinators play a major role in American agriculture by pollinating fruits, vegetables, nuts, and seeds. Visit with local beekeepers and learn how to raise your own bees. See the bee houses in Kirkwood Gardens, learn about plants that attract pollinators, and find out about native bees. Make a wildflower seed bomb to start a pollinator garden at home. The Squam Lakes Natural Science Center and Walter’s Basin Restaurant will offer a dinner and sunset cruise on Squam Lake. The 4th of July in Ashland Ashland’s Fourth of July Committee is putting together a great celebration, with fireworks and a parade. This year’s theme is “Peace, Love and the Fourth of July” to tie in with the 50th anniversary of the Woodstock Festival. Get out your bell bottoms, headbands and other funky stuff to join the fun! The entertainment and fireworks event at the Ashland ball field on Wednesday, July 3 will feature a food truck rally beginning at 5 pm. Other entertainment on the field will include five bounce houses, bungee jumping, rock wall climbing, and other games from Vertical Entertainment. Free children’s games will be sponsored by the Committee. Cub Scouts Pack 56 will tie-dye shirts and other items with you at their booth. Getting your face painted will be an option at Laure Fugere’s booth. Chris White will provide quality DJ music while you wait for the fireworks. An Apple Pie Baking Contest will be judged at 7 pm. Enter two pies (one for judging and one for auction) using
homemade ingredients in foil pie pans. Winners will receive gift certificates. Show us how you can roll - winners will receive gift certificates. The Common Man’s 50/50 Raffle will raise money for next year’s fireworks. Fourth of July memorabilia will be sold at the event, including T-shirts for $15, buttons for $2, and glow-in-thedark wristbands for $1. The National Anthem, sung by Gretchen Dodge of Plymouth Regional High School, will begin the spectacular fireworks display by Atlas PyroVision Entertainment, which this year will be set to music. (Parking spaces for the event can be rented at $5 per space in the Post Office and FreudenbergNOK lots, with the proceeds benefiting the celebration. Dog Powered Sports at Gunstock - All Dogs & Humans are Welcome! Dogs and humans can enjoy the days, and nights, of summer at Gunstock Mountain Resort in Gilford. Gunstock is proud to offer a full set of lessons for dog-powered sports throughout all seasons. Gunstock’s experienced instructors will lead a private lesson where participants and their dog(s) will learn the techniques, calls, skills and safety components of the sport. All dogs and humans welcome! Joring is the Norwegian word for “driving” or “pulling”. And dog joring is just that – having your dog assist you, whether you’re skiing (skijoring) or biking (bikejoring). Canicross is the sport of cross-country running with your dog. The runner wears a waist belt, the dog wears a specifically designed harness and the two are joined by a line. Gunstock will host the next Muddy Puppy: Obstacle Course & Night Howl on Saturday, July 6. Brave the obstacle course with your four-legged friend; prizes will be awarded for time and style. There also will be an opportunity to socialize, set up your tent, and have a bite to eat while keeping your pups cool in the shade (or lake). At 5 pm, Gunstock instructors will host a free Canicross Equipment Clinic in the Stadium to help runners prepare for the Night Howl Canicross Race. The Night Howl Canicross will follow a similar trail to the May Muddy Puppy – just adding a little more distance, and keeping all the hills. After the race, hunker down with your tired pup around the fire before
its doors in 1937. Summer Youth Craft Classes at Sandwich Home Industries Sandwich Home Industries announces its summer craft classes for young children and adolescents, ages 3-12+, at the Center Sandwich Fine Craft Gallery and the Sandwich Children’s Center. Classes in clay, felting, mosaics, and collage are offered and are sure to spark some creative fun for kids. Summer classes are varied and will include: Animals in Clay with Kathryn Field, on Tuesday, July 9. Create your favorite animal in clay using the pinch and coil method of building. Students will start with pictures of animals but imagination and fantasy creatures are encouraged. Needle and Wet-Felted Picture
Pillow, Wall Hanging, or Tote Bag with Diane Johnson on Wednesday, July 10. Needle and wet-felting is much like painting and sculpting with wool. Students will design, create and needle-felt a picture or geometric design on a 12- by 12-inch wool square, which can then be sewn into a bag or pillow by the instructor after class or taken home that day as a wall hanging. Hats Off to Ladies Golf at PLG Repaired and Revamped, New Hampshire Boat Museum is now open After a winter in which numerous repairs and improvements were made to its structure, including a new roof, the New Hampshire Boat Museum (NHBM) is open for the 2019 season. The museum is located on Center Street/Rt. 28 in Wolfeboro, New Hampshire. “We have insulated and repaired many areas inside the museum, freshened up several exhibits, and made great additions to our children’s area,” said NHBM Executive Director Martha Cummings. “I think people will be amazed when they visit.” The featured exhibit for the 2019 season is Racing on the Waterways of New Hampshire, which will highlight boat racing in different regions of the state and different types of races and boats. In addition to a featurette on steamboats, boat workshop, motor display, and boating art, NHBM will feature Penn Yan Boats, which include a race boat, car-topper, and recently
restored fishing boat. “There will be lots to see this summer, and we hope our visitors will enjoy strolling through the exhibits, shopping in the museum’s store, and enjoying a picnic on our tables outside,” Cummings said. “We also have rides available on the Millie B and all kinds of hands-on activities for people of all ages.” She said NHBM’s location is also perfect for the nature enthusiast. “We’re just off the Cotton Valley Rail Trail for visitors who want a good walk or bike ride from downtown Wolfeboro and a five-minute walk from Albee Beach at Lake Wentworth,” she said. “We are so grateful that renovations are nearly complete at the museum and we anxious to get started for the year.” Founded in 1992 by antique and classic boating enthusiasts, NHBM is committed to inspire people of all ages with an understanding of, and appreciation for, the boating heritage of New Hampshire’s fresh waterways.

Celebrate the 4th in the Lakes Region!
By Kathi Caldwell-Hopper Come by boat, by car, or by foot, but make sure and be in the Lakes Region for the most celebratory time of the year: the 4th of July. There will be fireworks galore, parades and live music as well. If you’re in Moultonborough for July 4, the parade starts at 11 am at Blake Road, and ends at the Moultonboro Function Hall on Old Route 109. Following the parade, there will be a complimentary cookout at the Lion’s Club. Book lovers should head to the Moultonborough Public Library’s Summer Book Sale on July 6 and 7. The sale starts at 9 am both days and is held under tents in the parking lot of the library on Holland Street. Call 603476-8895. Many people say the town of Ashland has the best fireworks display around. The town celebrates starting on July 3 at the town’s Ball Field from 3 to 6 pm with a live radio broadcast by Mix 94.1. There will be face painting by Laura Fugere from 4:30 to 7:30 pm
and make your own tie dye shirt from 5 to 8 pm. DJ Chris White will be in the gazebo from 5 to 9:30 pm. Ball field activities also include a bounce house, bungee jumping, rock wall and games from Vertical Entertainment. After the parade, the festivities continue in Constitution Park starting at 5 pm on Long Sands Rd. in Center Ossipee. There will be food, music and more…and of course, fireworks at dusk! ‘Cue The Grill 4th of July Grilling By Chef Kelly Ross Welcome to another chapter in grilling some awesome eats. The 4th of July is now upon us and there is no doubt that the grilling season comes into its own in the summer. It is now officially “cook out” season! To any of you who read my articles regularly, you know I am a diehard year-round griller. I presently grill at least five nights a week at least. Grilled foods have the best flavor on their own, not to mention when you throw great marinades and sauces into the equation. It’s truly a no brainer as far as I’m concerned. In summer’s defense as opposed to winter grilling, we have more options. Not much changes as far as meats are concerned, but wow, the fresh fish from the lake, as well as veggies and fruits that are more than fresh and abundant this time of year. I’m going to give a couple grilled appetizer ideas, a salad, two main course items, and a dessert or two. One dessert will not come off the grill, but it is the perfect dessert when celebrating the 4th of July, but everything else will require the barbie. That being said, let’s
jump right into things, starting with the first course. We will start with a fun wing recipe off the grill, which may be somewhat of the norm as we all love wings, although this one is unique. The second appetizer is one I almost certainly guarantee you have never tried, or have likely heard of. These are both fun, and more importantly, very delicious. When it comes to wings there are a couple of “do’s” that are required. For starters, I always suggest fresh wings. They are almost always the whole wing, with the drumette and flat part of the wing connected. It’s very easy to split the wing with a sharp knife on a cutting board. Also, cut the tip off the flat part of the wing as that will just burn up anyway, so you might as well chop it off while you are cutting the wings. Secondly, I own a plastic tub and cover that I use just for grilling wings. During the grilling process, I put the wings in the tub with the sauce, cover it, shake it up 3-5 times during the grilling process, popping them back on the grill each time. The flavor is great, and the grilling process crisps them up at

the same time. Most wings I put on the grill plain to start with, but not these. I let these wings marinate overnight, and then still toss them in the sauce a few times while grilling. I’m a huge fan of very hot Buffalo wings, but not

This is more marinade/sauce than you will likely need, but trust me, you won’t mind having the extra on hand in the refrigerator. It works great on any chicken, pork, or shellfish. Asian Sweet Wings 3 cups ketchup 1 cup soy sauce 1 cup honey 1 cup orange marmalade 3 tbsp Sriracha or hot sauce ¼ cup sesame oil 2 tbsp sesame seeds 3 tsp ground ginger 1 ½ tsp granulated garlic 2-3 lbs wings Bleu cheese or ranch dressing 1 bunch of scallions for garnish Carrots/celery sticks if wanted In a medium bowl, combine the top nine ingredients. Put the wings in a large bowl or maybe better, a large Ziploc. Pour about ¼ of the sauce into the bag, seal while squeezing out as much air as possible, and massage the bag/wings so the chicken is well coated. Marinate for at least an hour, but better if done overnight. On a medium high greased grill, pop the wings on and cover the grill for 3-5 minutes, throwing away the marinade from the bag. Pour about ¼ of remaining sauce into the tub. Lift the lid, flip the wings over and let them go for another 3 minutes more.
Take them off the grill and put into the tub, shake it up, and put back on the grill. Repeat the first process, and do it a total of 3-5 times, depending on your taste. Add more sauce to the tub if needed. Once done, put on a platter, cover with the chopped scallions, and serve up with dressing and veggies. Now let’s do something original. I mentioned earlier how fruit is one of my favorite things to grill. How do we step it up, you ask? Let’s wrap it in bacon, and then hit it with a Balsamic glaze when finished. You’ll be the first on the block to grill these for your crowd, but I guarantee your guests will play the copycat game and next thing you know, everyone will be doing it. I do these for special occasions, and whenever I do, not one person has seen them before, except repeat friends and family. It’s pretty simple to do, but very decadent and the pop of the peach flavor once you bite into them is powerful. This recipe will get you 32 pieces. Bacon Wrapped Peaches 4 large peaches 12 ounces bacon 32-64 fresh basil leaves, depending on your taste. Olive oil Balsamic glaze (you can easily find this in almost any supermarket, or make your own) Toothpicks Set the grill to low heat and preheat for 10 minutes or so and grease the

grill. Wash and dry peaches. Cut each peach in half and then each half into 4 quarters so each peach is in 8 pieces. Place a basil leaf on each side of the peaches. Cut the bacon slices in half. Wrap each peach slice and basil leaves with a ½ slice of bacon. Pin the loose end of the bacon slice with a toothpick. Do the same with all. Brush the pieces with olive oil to help them from sticking to the grill. Cook for 20 minutes or so, rolling them as needed, keeping the grill closed as much as possible. Once they are evenly cooked, pull from the grill, pull the picks if you prefer, put on a platter, drizzle with the Balsamic glaze and dig in. They are also good at room temp, but better right off the grill. Your crowd will be wowed by these beauties! Let’s move on to Salad Land, although this one can definitely eat like a meal if that is your preference. This is a warm salad and it contains all grilled veggies and topped with sliced hanger steak, or any steak of choice. The dressing is homemade - it is a vinegar and honey vinaigrette - which is exceptional on this salad and the veggies are infused with a rosemary and garlic oil you also make right on the grill in a pan. If you would like grilled bruschetta with this salad, brush thick slices of any fresh crusty type of bread with the rosemary garlic oil. This recipe feeds four people. Grilled Steak and Veggie Salad 2/3 cup olive oil 3 sprigs of fresh rosemary 8 cloves garlic, thinly sliced - I like to do so with a razor blade
Hanger steak, approximately 1 1/2 lbs, more if preferred Coarse salt and fresh grind pepper 1 eggplant, cut into 1/4 inch slices 1 zucchini, also cut into 1/4 inch slices 1 summer squash, yup, cut the same way 1/2 lb cherry tomatoes 1 bunch scallions 2 red, yellow, or orange bell peppers, each cut into 6 equal pieces 3 tbsp balsamic vinegar 2 1/2 tsp honey Turn the grill to medium high and grease well. In a small pot that can handle the heat of a grill, or in the house on the stove if preferred, combine the oil, rosemary and the garlic and cook until it starts to bubble, generally 2-3 minutes. Remove from heat and save ¼ cup in a separate bowl. Brush some of the oil from the pot onto the steak, hit it generously with salt and pepper, and cook to medium rare, usually about 7 minutes per side or so. Don’t overcook. Put it on a cutting board and tent with foil. Brush all the veggies with the herb oil and grill them on both sides. You may have to do it in batches. Once the tomatoes start to blister and split, and the rest of the veggies become tender, take them off the grill. Add the vinegar and honey to the reserved herb oil and whisk well. Slice the steak thin against the grain, split the veggies up accordingly on 4 plates, add the beef to the tops, and drizzle with scrumptious dressing. this recipe among 6 people and use as an earlier course to dinner, or as an entrée, you will enjoy this recipe. Also, the veggies alone will make a great side dish to any main course. It’s officially time to get down and dirty with a couple of tremendous center of the plate items, and this first one is usually a big fan favorite, especially at a 4th of July get- together. Messy maybe, but scrumptious, absolutely. When it comes to food, I have many weaknesses, but a well prepared batch of pork spare ribs is right near the top. So many people I know are scared of the process and just buy a precooked rack of ribs and grill them. No problem with that mentality, but if bought raw,
it is a bit of a process, but fairly simple. Yes, they are always at their best off the grill, but they need to be cooked prior in the oven. They can be done a day
or two in advance before the grilling process; the prep is an easy one, but they will need to cook for 1 ½ - 2 hours. You give them a great dry rub, then bake in aluminum foil. This recipe comes with one of my homemade bbq sauces as well. This will feed 4-6 depending on your crowd. The grilling process is quick. Dry Rubbed Grilled BBQ Ribs 5 lbs of rack of ribs, usually 2-3 racks 2 tbsp chili powder 2 tbsp granulated garlic 1 tsp ground cumin Coarse salt and fresh grind pepper 1 tbsp butter ½ sweet onion, grated 2 cloves garlic, minced 2 cups ketchup ½ cup maple syrup 2 tbsp brown sugar 2 tsp Dijon mustard ½ cup cider vinegar 2 tbsp Worcestershire sauce

Preheat oven to 400 degrees. Combine the spices in a bowl until well blended. Rub all the ribs on each side with the spice rub. On 2 long strips of aluminum foil, stack the ribs on top of one another, then tightly wrap in the foil. Make sure they are double wrapped. Place them on a pan with walls (in order to keep any of the cooked grease from falling to the floor of the stove). Cook until fork tender, 1 ½ - 2 hours. While those are cooking, make the BBQ sauce. Melt the butter, add the onion and garlic and cook for 2-3 minutes, seasoning with salt and pepper. Add the last 7 ingredients, combine well, and bring to a high simmer. Once it starts to bubble, turn down to low and let it go until it thickens somewhat. Set aside. Once the ribs are out of the oven, carefully peel off the foil. I like to cut between each rib about ½ way down, and every 4 ribs, cut all the way through. This will make for easier grilling and eating. You can grill them right out of the foil, or let them get to room temp and wrap in plastic and refrigerate and use them in the next couple of days. On a mediumhigh heated, greased grill, grill the ribs, being generous with the sauce. Grill until charred nicely and these bad boys will fall off the bone and your crowd will be as quiet as you have ever heard them, and also with a face full of sauce.

On a medium heated, grill that has been well-oiled, grill the plums cut side up until charred, 3 -4 minutes. Flip them and cook for another 3-5 minutes. Time will depend on how ripe the plums are. They should be soft to the touch when pulled off the grill. Put 2 halves on each plate, top with cookie crumbs and hit them all with ice cream. No kid will ever say “I don’t like this”, and yes, that goes for the adults as well. Feel free to add any other toppings that sound good, but I hate to disguise the plum flavor too much. This last recipe is the Crème de la Crème when it comes to a patriotic dessert. Let’s talk trifle with whipped cream and cheese, blueberries and raspberries, although strawberries work as well, with a few other goodies thrown in. The appearance is so much the 4th, and the flavor is so summer. It goes together in about 20 minutes but needs to be refrigerated a day in advance before diving in. It will serve 8 happy customers. I strongly recommend using a spring form cheesecake pan.
1 ½ cups heavy cream ¾ tsp vanilla extract 24 lady fingers, 7 oz package, broken into 1 inch pieces 2 ½ cups fresh blueberries In a medium bowl, combine raspberries, ¼ cup confectioners’ sugar and the orange juice. With a fork, gently mash the berries to release the juices. Let sit for 10-15 minutes. In a large bowl, combine the cheese and the other ½ cup of sugar until smooth. Whisk in the cream, vanilla, and a pinch of salt by hand until peaks form, about 5 minutes. Cut 1 or 2 pieces of parchment paper, 1 inch taller than the side of an 8-inch spring form pan and line inside of pan. Place half the ladyfingers on the bottom of the pan and top with half the raspberry mixture. With a small rubber spatula, spread half the whipped cream over berries. Tap pan gently on counter to remove air bubbles. Repeat with remaining ladyfingers, raspberry mixture, and whipped cream. Top with blueberries and refrigerate until whipped cream is stiff and cookies have softened, tightly covered with plastic for up to 2-3 days. Let sit in the refrigerator for at least 4-5 hours before eating. When ready to serve, gently release the spring form, carefully peel off the parchment paper, and the appearance will WOW everyone, and the flavor is so exquisite. Cut into 8 wedges and dig right in. I make this year round, but obviously it is a huge hit on the 4th. It is truly the perfect summer dessert. Happy 4th - celebrate, but do so responsibly whether on the roads or on the lakes. Boating on the Lakes Beginner’s guide to kayaking Kayaking is a water sport that can be beneficial to the mind and body. Just about anyone willing to spend a day on the water can benefit from learning about kayaking and how to get started with this rewarding activity. The history of kayaking is interesting. The word “kayak” means “hunter’s boat,” and the Inuit relied on these small vessels to catch food by sneaking up on their prey from the water’s edge. Some people still hunt and fish from their kayaks, but many are happy to use them for sightseeing and exercising. “Paddlesports are increasing in popularity among Americans who desire to connect with the outdoors,” said Christine Fanning, executive director of The Outdoor Foundation. The Outdoor Foundation and The Coleman Company, Inc., found in
a Special Report on Paddlesports that 21.7 million Americans enjoyed paddling on rivers, lakes, streams, and other waterways in recent years. Paddlesports include canoeing, rafting, kayaking, and stand-up paddling. Learning how to kayak does not involve a significant initial financial investment. Outdoor experts say there’s a good chance a novice kayaker will not go out and buy a boat immediately. It’s important to first get a feel for the sport and then go from there. How do I get a permanent boating education card replacement? Visit the www.ILostMyCard.com website to order additional or replacement cards. At what age are children required to wear life jackets? All children 12 years old and younger must wear a life jacket when being transported in a boat. It is recommended that everyone wear a life jacket. Is it legal to have alcohol aboard a vessel? Although it is legal to have alcohol aboard a vessel, operators found to be impaired to any degree will be arrested for boating while intoxicated. In addition, check with the local town where you will be boating for any ordinances
prohibiting alcohol in public places. How do you know the capacity limit of your boat? On most boats, the capacity for the boat (weight limit and number of persons) is listed on a plate located near the helm (the operator’s area). Where can I get a temporary boating education certificate? Certificates are available at locations throughout New Hampshire. To participate in the 14-Day Temporary Certification, contact the New Hampshire Department of Safety at 1-888254-2125 (or NH Marine Patrol at 603-293-2037) to find a location. (You can ascertain locations based on a sign at their location identifying them as a 14-Day Temporary Certificate Agent.) Individuals must be a minimum of 16 years of age to take the test and must get at least 80% to pass the test. NH Jewish Food Festival welcomes Winnipesaukee Bay Gulls Many people think of bagels when they think of traditional Jewish foods. Now, along with the deli meat sandwiches, pickles, knishes, latkes, strudel, rugelach and other bakery goods, the NH Jewish Food Festival at Temple B’nai Israel (TBI) will offer packages of six bagels, made from scratch by the locally owned and family run Winnipesaukee Bay Gulls, located in Gilford and Moultonboro. “It was a natural fit,” said TBI fundraising chair Stu Needleman. “When our logo was redesigned, we realized the need to include bagels in

Lake Winnipesaukee Museum to Host Warren D. Huse presentation On Wednesday, July 10 at 7 pm, the Lake Winnipesaukee Museum will host local historian and columnist Warren D. Huse with his presentation on the history of the Laconia Car Company, which manufactured railroad and trolley cars between 1848 and 1928 in Laconia. This program is free for Lake Winnipesaukee Historical Society members; for nonmembers there is a $5 fee. Since seating is limited, please make reservations for this program, and all of the museum’s summer lectures. Over the 80 years of its existence, the Laconia Car Company produced thousands of railroad cars, both freight and passenger, and hundreds of trolley and subway cars, the vast majority of which went to rail and trolley lines on the East Coast. The company built at least two coaches for the Mount Washington Cog Railway, and Laconia cars are still in service on certain tourist railways, such as the one in Conway, New Hampshire. There are a number of Laconia-built trolleys in operation at the Seashore Trolley Museum in Kennebunkport, Maine, and at other railway museums. Initially, the bodies of the cars were made of wood, but eventually the Car Shops converted to manufacturing steel bodies. The company performed all the various processes necessary to building a coach, from the casting of iron and brass, carpentry and cabinetwork, machining, electrical wiring, lights, plumbing, manufacture of seats, upholstery, decoration, glass, painting, and varnishing. He has published three books in the Arcadia “Images of America” series — “Laconia,” “Lakeport” and “The Weirs” — and “Celebrate Laconia: 125 Years of the Lake City,” in connection with the recent observances of that anniversary. Books will be available for signing and purchase at the event. The Lake Winnipesaukee Historical Society is a nonprofit educational
organization founded in 1985 with the mission to promote and preserve the history and heritage of Lake Winnipesaukee
and its vicinity. The Society collects, preserves, and interprets objects and ephemera relating to the history and heritage of Lake Winnipesaukee and its environs, with an emphasis on late 19th and early 20th century seasonal tourism, recreation, and lake transportation. The Lakeview Chamber Players concerts began in Rangeley, Maine in the summer of 2015. Tim and Sarah Maček, professional orchestral musicians from Washington, DC and summer residents of Rangeley, invited friends and colleagues from Washington and New York to Maine for a chamber music concert sponsored by the Rangeley Friends of the Arts. These concerts have since become an annual event in Rangeley.

Northeastern Ballet Theatre (NBT), New Hampshire’s premier ballet company and training school, invites dancers to spend the summer improving ballet techniques and learning from experienced professional ballet instructors, as well as guest master teachers. The level of ballet education Northeastern Ballet Theatre offers is equal to that of a major urban ballet company intensive. Full days are offered for advanced and intermediate dancers on Mondays, Wednesdays and Fridays. Choose one week, or all eight weeks, or anything in between, one day a week, or all three. A special guest master teacher, Amy Marshall, Artistic Director and Choreographer for Amy Marshall Dance Company in New York, will teach in the Wolfeboro studio only on July 1, 3, 7, 8 and 10.
Susan Endrizzi and Assaf Benchetrit, ballet instructors from the University of New Hampshire, will be teaching throughout the summer as well. Weekly classes for adults and younger dancers are also available. “Art at the Gafney” Judge’s Choice Awards Announced The annual fundraiser “Art at the Gafney” was launched several years ago to raise income for the Gafney Library in Sanbornville, a non-profit organization serving the towns of Wakefield and Brookfield, New Hampshire. The event features the work of area artists, each entering two pieces of work – one for show or sale, and the other a donation to the Gafney as a raffle item. “Art at the Gafney 2019” features the work of 60 artists, some of whom donate more than one piece. This year’s exhibit consists of more than 60 raffle items. The idea is to choose from donated pieces, and place raffle tickets on those items. Each year a guest judge is chosen to select items from the exhibit to be included in the “Judge’s Choice” category. This year’s judge is Kevin Kintner of Manchester, who received
his MFA from University of MA and opened the ARGH Gallery in Manchester in 2018 (https:// arghgallery.com). Kevin has over 45 years of experience, and explains, “I began by copying illustrations of my favorite comic book artists. My earliest remuneration for my work came from some sign painting and lettering for shops and vehicles as a teen. I then studied design and fine art and received my Bachelor and Master of Fine Art degrees in studio painting as well as an Associate degree in commercial art. Since then my life has been full, and full of art. I’ve had solo exhibits, participated in group shows, taught painting and drawing at the University level, fulfilled commissions for portraits and murals, written appraisals, painted banners as large as 50 ft. long and I’ve continued to paint and draw and create.”

Winnipesaukee Winery Wins Rhubarb Wine Competition Bennington, NH was the site of the first annual New England Rhubarb Wine Competition on May 31. It was part of the Bennington Rhubarb Festival. Entries came from New Hampshire and Maine. Winnipesauke Winery from Wolfeboro, NH won the Gold Medal with their Rhubarb Blush wine. Winemaker Heidi von Gotz Cogean, one of only four ‘NH lady winemakers,’ describes it as “a sweet wine with a distinct tart rhubarb finish”. The judges enjoyed the aroma of honeysuckle and melon and the taste of tropical fruit. Judges included Paul Hertneky, food and travel journalist, writer of food articles for Gourmet and Eating Well magazines, and author of Rust Belt Boy in 2016; Peter Eppig, wine blogger and leader of many wine tastings around southern New Hampshire, and Robbie Palmer Hertneky, local wine enthusiast
and retired Antioch University professor. The judges followed established guidelines for evaluating wines based on wine color, clarity, aroma, taste, and aftertaste. The making of rhubarb wine goes back for centuries. Rhubarb was widely available in many climates and would reliably produce a good crop. With the addition of sugar and water to the rhubarb, natural yeasts would have fermented it into an alcoholic beverage – sometimes of dubious quality. Modern tastes dictate that wines be drier [less sweet] and more similar to wine made from grapes. A rhubarb wine today might not taste like the actual fruit and can be pleasantly compared to wine made from grapes. The craft brew industry is opening up the public’s palates to new tastes and the makers of rhubarb wine are joining in.
Plans underway for 40th Annual Lakes Region Fine Arts and Crafts Festival Arts and crafts enthusiasts will want to be in Meredith, New Hampshire on Saturday and Sunday, August 24 and 25 as the Meredith Area Chamber of Commerce, in conjunction with Meredith Village Savings Bank, presents the 40th Annual Lakes Region Fine Arts and Crafts Festival. The Festival, which will be held from 9 am to 5 pm both days, will transform the Main Street of the quaint lakeside village of Meredith, as well as the upper parking lot of the Mill Falls Marketplace, into an outdoor art gallery featuring the works of more than 80 painters, sculptors, jewelers, potters, photographers, and quilters. Spectators will be impressed with the variety and quality of exhibits. Booths will include wildlife photography, metal and wood sculptures, stained glass, handmade jewelry, baskets, leather projects, and abstract and
traditional oil painting and watercolors. All items are original creations and the artists and craftsmen will be available throughout the weekend to meet and converse with customers. Over the years, the Festival has gained a solid reputation among New England artists and craftsmen and is the largest quality arts and crafts event in the area. Live music will fill the air for those walking through the Festival and culinary delights will be available. Free shuttle bus service, courtesy of the Lakes Region Airport Shuttle, will be available from both the north and south sides of Route 3 and will run continuously both days. Moultonborough Falls Conservation Area Partners with Lakes Region Conservation Trust Lakes Region Conservation Trust and the town of Moultonborough are partners in the Moultonborough Falls Conservation Area. On June 4, both parties signed easement documents that allow Moultonborough Falls Conservation Area (MFCA) to be preserved in perpetuity for the use and enjoyment of the community and visitors. Work on the documents has taken over a year to complete and the Conservation Commission will now be able to develop plans for a parking area and trails. The easement creates a partnership with Lakes Region Conservation Trust, which will monitor the area over the years. Once a parking area and trails are created, MFCA will be open to recreational and educational activities including hiking, snowmobiling, fishing, hunting, picnicking, and crosscountry skiing. At the end of August 2018, the
purchase of MFCA was finalized. Thanks to generous donors and the passage of a funding article at the Moultonborough Town Meeting on March 17, 2018, the Moultonborough Conservation Commission raised the funds to meet its goal for the land and for building a parking area and trails. Moultonborough Falls Conservation Area is a 37-acre parcel with 3,800 feet of shoreline on Lees Pond and the Red Hill River. The property is an integral part of the Red Hill River Watershed and connects to preserved land along the Red Hill River in Sandwich and Garland Pond in Moultonborough. MFCA supports the protection of water quality in the Moultonborough Bay Inlet. The undeveloped, heavily wooded land facilitates the mitigation of storm water runoff and supports infiltration helping to sustain a quality aquifer. The Moultonborough 2016 Natural

Resource Inventory identified MFCA as a high priority wildlife habitat area. MFCA extends a w i l d l i f e corridor from Red Hill down to Lees Pond. The extensive marsh area along the shoreline provides habitats for birds, waterfowl and other aquatic animals. The parcel also shares in the early history of Moultonborough. Moultonborough Falls, a thriving village of the 1800’s, was located in this area, at the intersection of Route 25 and Sheridan Road, and several foundations can still be found there. Significant progress has been made in recent years to save environmentally sensitive land in the Red Hill River Watershed area. The Red Hill River flows through Sandwich and Moultonborough into Lake Winnipesaukee at Moultonborough Bay. The Red Hill River Watershed in
Moultonborough includes Berry Pond, Garland Pond and Lees Pond. This watershed is one of a number that surround Lake Winnipesaukee and there is a concern that over development of lands adjacent to these waters may decrease water quality. In order to keep the waters of Lake Winnipesaukee clear and clean for the health and recreation of all our Lakes Region communities, Moultonborough Falls Conservation Area joins other conserved lands in protecting our surface and subsurface waters. The Moultonborough Conservation Commission thanks all who have supported the Moultonborough Falls Conservation Area project. The community’s and friends’ financial support and goodwill were essential as the Commission worked to purchase and provide an easement for the property.
