Experience the Hot Air Balloon Rally By Sarah Wright If you’ve never witnessed the magic of hot air balloons taking flight, you won’t want to miss the chance to experience the wonder of the 38th Annual Suncook Valley Rotary Hot Air Balloon Rally in Pittsfield! The rally will take place at Drake Field on Friday, August 2 to Sunday, August 4 with a packed schedule. There will be all sorts of beautiful designs and colors on the balloons, with checkers, stripes, and rainbows among the vivid patterns. This year’s special featured balloon is called, “Pig Headed.” It’s a balloon shaped like—you guessed it—a pig’s head! This hot pink, cartoon-like creation is from New Jersey, and will be piloted by Keith Sproul. It’s sure to be a favorite with the kids! The balloons typically lift off in the early evening or early morning, weather permitting. On Friday, the balloons are scheduled to take off at 5:30 pm, and then there will be a special nighttime presentation at 8:30 pm where the balloons remain on the ground, but will light up and create a beautiful glowing atmosphere. On Saturday, there will be a liftoff at 5:30 am for early risers, as well as at 5:30 pm. Then there will be another nighttime presentation of the glowing balloons at 8 pm on Saturday night, followed by a fireworks show. The final liftoff will occur on Sunday morning at 5:30 am. But that’s not all: There will be so much else to do between flights. To add to the fun atmosphere, there

will be a Carnival Midway with rides. The rides will begin on Friday at 3 pm, and on Saturday at 11 am. If you’re looking for more excitement, take a helicopter ride! Yes, there will be helicopter rides available at 5 pm on Friday, and at 2 pm on Saturday, weather permitting. (Tethered hot air balloon rides will also be offered on Friday and Saturday afternoons at times “to be determined.”) We all know where there are rides, there’s food. There will be many food vendors on hand with all kinds of carnival fare, for when you work up an appetite. And, if you need extra encouragement to get out of bed for the early liftoffs, the Suncook Valley

Rotary will be cooking up a delicious pancake breakfast at 6 am on Saturday. At 5:30 am on Sunday morning, the menu will include scrambled eggs and bacon. Saturday will be jam-packed with fun. The Pittsfield Youth Workshop organization will be holding a Craft Fair from 10 am to 8 pm on Saturday at the rally. Shop for local, handmade treasures, and find something unique for family or friends…or just for you! From 9 am to noon, kids will love the vehicles at the Rotary’s Touch-a-Truck event and the chance to “meet the mascot.” From 10 am to noon, visitors can learn about balloons close up and get the chance to walk inside of one.

Don’t miss the exciting “Anything That Floats” River Raft Regatta at noon on Saturday. Pre-registration is required for all participants who must be age 13 or older. Creativity is a must in this entertaining race where the vessels are all crafted from materials that can be found around the house. No motors of any kind are allowed. This is a fun community event where everyone can cheer for their favorite imaginative water craft. The race will run from the Barnstead Road Bridge to the first bend in the Suncook River, approximately 600 feet of distance. At 1 pm, after the Regatta, there will be an Inspire K-9 police dog demonstration, and from 1 pm to 4 pm, the PTO will hold their popular Cornhole Tournament. The competition will be fierce! This fabulous day of fun will end with an amazing fireworks display at 9:30 pm, after the balloon night glow event. Following the final balloon launch on Sunday morning, there will be an awards presentation at 8 am for balloonists and sponsors. The Cow Chip Bingo Raffle run by the Victory Workers 4H will happen at 9 am, when the Frank H. Donovan 5K Race begins. This is a special race that meant a lot to Frank, and in fact, a scholarship has been named in his honor. Frank was a long-term Rotary Club member and a regular volunteer at the balloon rally. He helped plan the Rally’s 5K for many years, and he believed in encouraging

Hot air balloons have a long history that began in 1783 in Paris, France, and was brought to the United States by a Frenchman in 1793, when a hot air balloon launched from the top of the Walnut Street Jail in Philadelphia. People are still delighted by balloons today, and their popularity is here to stay. Rhiannon Giddens and Our Native Daughters will perform at Great Waters Music Festival on July 27.

Reclaiming Black Female History Great Waters Music Festival (GWMF) is hosting the Grammy nominated Rhiannon Giddens and Americana Music Association’s nominated Our Native Daughters. The four singer-songwriters (Rhiannon Giddens, Amythyst Kiah, Leyla McCalla, and Allison Russell) take the stage on Saturday, July 27 at Anderson Hall in Wolfeboro, NH at 7:30 pm. Rhiannon Giddens, a Grammynominated solo artist as well as the cofounder of the Grammy Award-winning string band Carolina Chocolate Drops, is additionally a recipient of the 2017 MacArthur Genius Award and the Steve Martin Prize for Excellence in Bluegrass and Banjo. For this project, Giddens brought together three predominant female roots artists. “Gathering a group of fellow black female artists who had and have a lot to say, made it both highly collaborative and deeply personal to me,” she explains. “It felt like there were things we had been waiting to say our whole lives in our art; and to be able to say them in the presence of our sisters-in-song was sweet, indeed. I see this album as a part of a larger movement to reclaim the black female history of this country.” Experience the powerful and beautiful journey their music and stories tell through their sisterhood and reclaiming of their past.

Director of the Great Waters Music Festival, Cheryll Andrews, commented, “This group is a force to be reckoned with. Their sheer talent and voice sends a message further from just the music. Upcoming Specialty Tours at Castle in the Clouds There are many aspects of the Lucknow mansion that set it apart from other early 20th-century homes, aside from its history, size and mountaintop location. This summer, visitors can explore these unique details on onehour guided “Castle Close-Up” tours at Castle in the Clouds (Lucknow) in Moultonborough, New Hampshire. The intimate, three-tour series began in June with an architecture tour, focused on the home’s cutting edge construction, global influences, and Arts and Crafts design. The third and final tour is scheduled for Wednesday, August 14 at 6 pm, and will focus on the mansion’s furnishings, both original and replicated. The Plants (Lucknow’s

original owners) filled their home with a collection of handcrafted, Americanmade furniture and art; during the tour, participants will learn how these pieces were key components of the Arts and Crafts movement, and what they tell us about the Plants’ lifestyle, tastes and personalities. Arts Week Returns to Canterbury Shaker Village Artists in Residence, Theater, Dance, Music, Sculpture Five lucky artists are residing at Canterbury Shaker Village in July, not to become Shakers but to find new inspiration and share their creative process with visitors. Amid the lush and peaceful hilltop setting of historic buildings and gardens, there will be painters and sculptors, plus yoga, dance, theater, live music, and aerialists throughout the two-week celebration of the arts from Tuesday, July 23 through Saturday, August 3. Arts Week culminates on August 3 with the world premiere of The Changemakers, a collaboration between Ballet Misha and N Squared, two dance companies from Manchester. “This is a multifaceted investigation into the Shaker values of gender

equality, inclusion and love,” notes Village Trustee Joan Brodsky, whose NH Dance Collaborative is a sponsor of the event. On Sunday, July 28, Theater Kapow of Manchester will stage a reading of As It Is in Heaven by Arlene Hutton, accompanied by the Canterbury Singers of Concord Community Music School performing original Shaker music. The play depicts a fictional group of Shaker sisters grappling with change in their community, and faces the universal tensions that arise when an established order is threatened by outside forces. On Wednesday, July 24 and Thursday, July 25, children can take part in interactive workshops in dance and yoga. On August 3, families can enjoy Shaker Saturday activities in the

morning and a dynamic performance by the graceful aerialists, Go Ninja, of Manchester, at 1 pm. Children are admitted for free on Shaker Saturdays, always the first Saturday of the month at Shaker Village. Dance artists will join the guided tours at the Village on Thursday, July 25 and Thursday, August 1, subtly bringing the tour narrative to life through their complementary movements choreographed to reflect the Shaker lives once lived there. Painters Ann Saunderson, Jason Correia, and Patrick Cunha, video/ performance artist Rachelle Beaudoin and ceramic artist Brandy Williams will live and work at the Village throughout the two weeks, setting up their own studios and sharing artistry with visitors. “It’s exciting to walk into these Shaker buildings and meet someone who is tapping into the Shaker story and giving it new expression,” said Maggie Stier, interim director of the museum. Artists may have work for sale as well. Five pieces of outdoor sculpture also grace the Village grounds during Arts Week. Created by metal sculptor Will Jandl from Brookline, New Hampshire, the ribbon-like abstract forms interject modern lines into the traditional ordered layout of the Shaker buildings, juxtaposing free-form shapes with the structured historic Village character. Arts Week Sponsors are NH Dance Collaborative, the Joan Brodsky Fund, CCA Global Partners, and BradySullivan. This year marks the 50th anniversary of Canterbury Shaker Village’s

incorporation as a museum. In honor of that milestone, this summer’s celebration of the arts is inspired by the concept of change. Throughout their 200-year history, Canterbury Shakers anticipated and embraced change, and the last Sisters created a non-profit to assure that their community would be preserved and their legacy shared with future generations. Canterbury Shaker Village is open Tuesday through Sunday, from 10 am to 4 pm. Can’t make it to see Canterbury Shaker Village during the day? Wednesday evening tours will be offered on July 24, August 7 and August 21 at 7 pm. Enjoy a serene summer evening at the Village and experience the most successful utopian society in America firsthand on a 75-minute guided tour. Antique Gilmanton Homes topic of Gilmanton Historical Society program Doug Towle, long-time Gilmanton resident (and per New Hampshire Magazine’s Katie Curtis “the constant restorationist”) will show photos and talk about the many restoration projects he has completed in Gilmanton, from his first renovation in the early 1970s to his current undertaking. The program takes place at Old Town Hall in Gilmanton Iron Works on Tuesday, July 23 at 7 pm. The Society’s 2019 program series continues on the fourth Tuesday of each month, through September, with programs featuring Gilmanton history: The 12th New Hampshire Regiment

During the Civil War on August 27, and A Brief History of Gilmanton’s Churches on September 24. Social hour and refreshments begin at 7 pm and the program will begin promptly at 7:30 pm. The Society’s museum, in the basement of Old Town Hall, will be open at 7 pm. The Society’s museum in Old Town Hall in Gilmanton Iron Works also is open every Saturday morning from 10 am to noon during July and August. The programs are free and open to the public. Spend a few creative hours at The League of NH Craftsmen – Meredith Fine Craft Gallery and learn how to make your own painted landscape with instructor, Ann Xavier, during a twoday class held in both July and August. Create an original, 12’ x 16’ inch oil painting from your own photograph or another picture that inspires you. Paints, canvas, brushes, and palette will be provided. The instructor is a graduate of Rhode Island School of Design and has 30 years of teaching experience.

Students should bring their own landscape picture or ideas from which to paint. Tuition is $65.00 per student with a $30.00 materials fee paid to the instructor on the day of the class. Still time to buy tickets to A Symposium on D-Day at Wright Museum Time is running out to buy tickets to Wright Museum’s A Symposium on D-Day, which honors the 75th Anniversary of Operation Overlord on Tuesday, July 23. “We expect a full house,” said museum Executive Director Mike Culver, who referred to D-Day as one of the most significant days in 20thcentury world history. “D-Day, June 6, 1944, marked the beginning of the end for Hitler’s Third Reich,” he said. “However, we know that many days of death and destruction followed before the Nazi’s were truly defeated.” Sponsored by Two International Group, the event features national best-selling authors Patrick K. O’Donnell and Alex Kershaw, whose novels provide insight into Operation Overlord, the largest seaborne invasion in history. “The stories of those Americans who

died as a result of D-Day must not be forgotten,” Culver said. “They should not be defined by their death, but by the lives their sacrifices made possible.” A Symposium on D-Day reflects an

important aspect of Wright Museum’s mission, which Culver said is to “remember the sacrifices of all WWIIera Americans and keep history alive. “The men who died on D-Day never

watched their children graduate from high school, danced at their daughter’s wedding, or held their grandchildren in their arms,” he added. “The actions of these men on this awful day ensured that each American generation since D-Day lived in a free world where those events were possible.” A Symposium on D-Day will take place on July 23 from to 5 pm in The Great Hall at Wolfeboro’s Town Hall. Admission is $15 for non-members and $10 for members. The Hall can accommodate 200 people, but more seats may be added if needed. The region’s leading resource for educators and learners of all ages on World War II, the Wright Museum features more than 14,000 items in its collection that are representative of both the homefront and battlefield. Through architecture unique to northern New England, Hubka’s illustrated talk focuses on several

case studies that show how farmers converted their typical separate house and barns into connected farmsteads. Hubka’s research in his award-winning book, Big House, Little House, Back House, Barn: The Connected Farm Buildings of New England, demonstrates that average farmers were, in fact, motivated by competition with farmers in other regions of America, who had better soils and growing seasons and fewer rocks to clear. BBC Autumnwatch New England Viewing Party A crew from the BBC and PBS converged on Squam Lake for live broadcasts of Autumnwatch New England in October of 2018. The BBC broadcast four live shows with hosts Chris Packham, Michaela Strachan, and Gillian Burke. PBS broadcast three live shows hosted by travel journalists Samantha Brown, Chris Packham, and wildlife cinematographer Bob Poole. Autumnwatch highlighted the stunning scenery and unique culture of New England.

All live episodes on PBS were available to view in the United States but the four live BBC episodes only aired in the UK. The BBC episodes truly show the magic of the “watch series” which it has produced since 2005. In this series of viewing parties, you can see all four BBC episodes featuring spectacular nature footage, award-winning hosts and pre-recorded segments with local wildlife expert Rick Van de Poll and Loon Preservation Red fox in the autumn at Science Center. The Beauty of a Summer Garden Story & Photo By Rosalie Triolo Our beautiful area is home to many enchanting summer gardens filled with flowers, a variety of plants and lush woodlands. From Canterbury Shaker Village to the Kirkwood Gardens in Holderness and many of the gardens along the way, each has its own unique story. These summer gardens boast a stunning array of colorful summer flowers, the fresh, rich fragrance of pine trees combined with an earthy scent of rich soil heightening the senses of sight and smell. In 1993, Canterbury Shaker Village, a historic site and museum, was proclaimed a National Historic Monument. More than a century ago, the Shakers in the Canterbury location grew medicinal herbs, which eventually were in high demand. In an herb catalog kept by the Canterbury Shakers, there were some 200 varieties of herbs, and by 1831 the Shaker’s herbal business had grown to earn them over $1,400. “The Earth Shall Blossom,” a book written by herbalist, Galen Beale, and Mary Rose Boswell,

Greenery at Kirkwood Gardens curator of the Shaker Collection, was published in 1999. In their book, Beale and Boswell refer to the Shaker philosophy of simple resourceful living, the growing and preserving of herbs, and share a collection of Shaker herbal recipes. Visitors are welcome to meander amidst the medicinal herbal gardens grown today at Canterbury Shaker

Village, located at 288 Shaker Road, Canterbury, NH. The story of Tarbin Gardens in Franklin began when Richard Tarbin was a small boy and his family emigrated from the gentle climate of England to New Hampshire. In 1973 Richard’s parents purchased a 32-acre plot in Franklin, and with an abundance of determination and exhausting physical labor, the Tarbin family worked to transform the rugged New Hampshire terrain into the charming, well-thought-out variety of English gardens it is today.

Visitors are welcome to enjoy each of the many gardens, some old and some new, but each with distinctive plants, trees and shrubs. Tables and chairs shaded by tall trees are there for you to sit, relax and admire the surrounding fragrant rose bushes in the secluded Rose Garden Patio. (English Cream Tea is served in the patio area ’til September. Hours are 1 to 4:15 pm.) A dry stream bed curves through huge boulders which ends in a small pond in the Mayapple Dell woodland area. Said to be the most colorful garden is the dry shade garden of Three Pines. You may also want to enjoy a leisurely walk along shaded paths through the Catalpa garden, as well as strolling through other equally lovely and unique gardens at Tarbin Gardens, located at 321 Salisbury Road in Franklin, NH. Many Workshops Offered at Sandwich Home Industries Summer is a great time to take a creative workshop at the Sandwich Home Industries in the peaceful and pretty village of Sandwich. Mosaics to Go! is a fun and creative workshop for young crafters, ages 9-12. Join Lizz Van Saun, a juried teaching artist with the NH State Council on the Arts, and learn how to create a one-of-akind mixed media mosaic. A large variety of colorful materials will be available including recycled stained glass, mirror, “gems”, vitreous glass, square and round tiles, beach glass, and colored gravel. Working with easy-to-use cement, students will come away with a masterpiece to cherish for generations. The class will be held on Tuesday, July 23 from 10 am to 3 pm. Beatles tribute band next up in summer concert series The Friends of the Wolfeboro Community Bandstand summer concert series wraps up the month of July with a popular band returning to the bandstand. The concert series continues in August. The final band of the month in the summer concert series has been a recent favorite in the bandstand Studio Two makes its return to Cate Park on Saturday, July 27. Studio Two is hailed by The British Beer Company as New England’s Best Beatles tribute band and unlike many Beatles tribute bands, does not try to deliver the entire Beatles catalog in its two-hour show. Instead, Studio Two concentrates on

what are some of the most exciting and fun times in the Beatles career, the club and touring years. Those years were when many people saw the Beatles play, the years where they crafted their sound and stage performance and the years where they took the world by storm and changed everything. In other words, the songs that Studio Two performs come from the pre-Sgt. Pepper era. The band’s members are graduates from Berklee College of Music, who met in a “town slightly west of Liverpool,” better known as Milford. They are experienced musicians of today’s generation and dedicated to preserving the memory

and the fan culture of the Beatles generation. Studio Two not only recreates the Beatle’s music, but also brings back the band’s appearance, instruments and onstage banter. Studio Two is guaranteed to also bring people to the dance floor with the sounds of the Fab Four. The band consists of Stephen Murray (John Lennon), Al Francis (Paul McCartney), Robert Murray (George Harrison) and Justin Fyfe (Ringo Starr). Belknap Mill Media Exhibit and Kids in the Park Hunter Allain is a mixed media artist whose work is on display at the Belknap Mill in Laconia through the month of July. The exhibit also features the art work of his mother, Les Allain. Although a multitude of lifethreatening medical issues at birth and during his younger years caused deafness and the inability to speak, Hunter challenges himself daily. He took art lessons for seven years and has a natural talent and perception to view the world around him. His favorite topics are gorillas, wild cats, creature’s eyes, and superheroes. ‘Cue The Grill Creative Chicken and Pork Recipes By Chef Kelly Ross Today’s theme is all about some fun and awesome recipes regarding chicken and pork. Most peeps are used to throwing such items on the grill and lathering them up with barbecue sauce, maybe Teriyaki or whatever. Today is all about being original and branching out into recipes that will make you a backyard champion of the grill, as all of us who grill regularly should be able to be. Not going to say that a great barbecue grilled chicken or pork dish is bad, but let me tell ya, options are a wonderful thing, regardless what you are cooking or grilling. When it comes to either chicken or pork, most recipes are great for anything boneless or bone in, although I do have preferences for certain recipes married with certain cuts, but feel free to use on whichever cuts you want. Let’s start with those crazy birds who strut so comically around the

osquitoes. No Ticks. barnyard. I’ve got to say, to me, they are one of the funniest animals around, as well as the tastiest. In an effort not to sound too repetitive, when cooking chicken breasts in particular, pound them gently to an even thickness, use

plastic wrap below and on top of the chicken. The plastic is to keep chicken juice from spraying all over the kitchen counters, and pounding it is so that it cooks evenly throughout. Let’s start the festivities with a

great combination of chicken and strawberries. One of the best aspects of summer is the fact that we have an array of fresh berries banging around, and I LOVE a great berry salsa. Most people think tomato when they think salsa, but fresh fruit, berries, and reds, yellows and orange bell peppers make outstanding salsas, and of course, no salsa is truly complete without some fresh cilantro. Hey, tomatoes are technically a fruit as well. I always loved the line “Intelligence is realizing that a tomato is a fruit, common sense is knowing enough not to put tomatoes in the fruit salad.” There is some sweet fruit flavor in the marinade, as well as a great Southwestern flavor. That combined with the salsa takes this dish to the next level. When it comes to the salsa, make it in bulk and use it as a salsa on chips or just the way it is. This

Strawberry Salsa Juice and zest from 2 limes 3 tsp honey 2 tsp real maple syrup 2 pinches of sea salt 2 pints strawberries, ideally firm, hulled and diced 2 jalapenos, chopped. If you like extra heat, use the seeds as well 2 yellow bell peppers, diced 1 medium red onion, diced 1 cup fresh chopped cilantro Black pepper for flavor The Chicken ¾ cup pineapple juice 3 tbsp strawberry preserves 2 tbsp apple cider vinegar 2 tbsp olive oil 1 tbsp ground cumin 1 tsp chili powder 1 tsp salt ½ tsp black pepper 2 lbs boneless chicken breasts or thighs; I most always prefer the thighs For the salsa, in a large bowl, whisk the lime juice and zest, honey, maple syrup and salt until blended. Pop in the rest of the ingredients and gently fold the chunks into the marinade until the chunks are well coated. Taste it, alter

the flavor as needed, whether on the citrus end, maybe the sweetness end, maybe some more salt and pepper. Put into an airtight container, refrigerate, and as long as the strawberries were firm and not soft/juicy, this should hold up well for a few days. As for the chicken, combine all the ingredients except the chicken so the marinade is well mixed. Put the chicken in a Ziploc, pour the marinade over the chicken, squeeze out the air, seal it, and massage the chicken in the bag so all pieces are well coated on each side. Pop the bag in the fridge for no more than 2 hours, probably better within 1 hour. Between the juice and cider, it shouldn’t marinate too long. Grease your grill, bring it to a medium high heat, and cook for 4-5 minutes on each side, or until done. Plop them on the individual plates and top with the salsa. (On a side note, try this recipe as tacos. Dice the cooked chicken, pop some flour tortillas on the grill for 10-15 seconds on each side, add the chicken and then the salsa.) Let’s move on to something with an Italian theme and topped with a fresh basil chimichurri that is out of this world. To me when talking Italian, it’s all about the fresh basil. Again, this time of year rocks when it comes to fresh herbs as well as berries and fruit. I have never been accused of having a green thumb, but I do love growing

basil since I utilize it so much. I nickname it my Italian Cooking Candy. Pesto is one of my favorite things in the world, and this chimichurri sauce is very similar. This recipe is quick and easy, and yup, pretty darn good. It feeds up to 6 as well. If you have extra chimi sauce, it will hold in the fridge for maybe a week, but it freezes very well as does pesto. Just top the sauce with a tsp or 2 of extra oil which will help it keep its color. Grilled Chicken with Basil Chimichurri ½ cup olive oil, + a little more to coat the chicken 1 cup fresh basil leaves, packed, roughly chopped ¼ cup diced red onion 4 cloves garlic, chopped 4 tsp red wine vinegar 4 tsp lemon juice S&P 2+ lbs of boneless chicken breasts or thighs Put the first 6 ingredients in a food processor and pulse until the chimichurri is somewhat smooth, but still a little rough. Season with salt and pepper and set aside. Grease the grill and set it to medium high heat. On a sheet pan, lay the chicken, brush both sides of all chicken pieces with olive oil, sprinkle all sides of the chicken lightly with salt and pepper, and grill for 4-5 minutes per side. Plate the chicken, top with the sauce and dig in. OK, so recipe #1 was sort of Tex Mex with a very American salsa, #2 had an Italian theme, and #3 has got a great Greek feel to it. This is prepped and cooked as a kabob, but I prefer pushing the kabob goodies into a grilled pita and eating as a great sandwich. Pick your poison boys and girls as there are no losers either way, but I still push for the pita version. This recipe will feed 8 if using pitas, like 4-6 if not. Greek Chicken Kabobs in a Pita

2 cups olive oil 1/3 cup red wine vinegar 2 tbsp dried oregano Sea salt and fresh ground black pepper 2 lbs boneless chicken breasts or thighs, cut into cubes 4 large zucchini, cut into ½ moons 1 ½ red onion, cut into 1-inch kabob cut pieces 8 pitas 1 cup crumbled feta Sliced black olives, optional ½ cup torn fresh dill, optional 2 large tomatoes, diced, optional Mix the olive oil with the vinegar, oregano and salt and pepper until well blended. Set 1 cup aside. Add the chicken to the rest of the marinade so all pieces are well coated. Get a sheet pan out and start skewering the chicken, zucchini and onions in an alternate fashion, not too tightly though, and put them on the pan. Drizzle the leftover marinade in the bowl over the kabobs. On a well-oiled grill on medium high heat, set the kabobs down. Cook about 5 minutes on each side until done, transfer to a clean serving platter to avoid any food contamination. Put the pitas on the grill for 15-20 seconds per side, push the kabob goodies into the pita, and top with feta, the reserved marinade and any additional items you may want. Time to move to the other side of the barnyard and visit our pig buddies. Being an animal lover, one of my favorite movies is Babe, the classic pig that thought it was a dog but was named Pig. Absolutely love that movie. “That’ll do pig, that’ll do.” So when it comes to pork, like chicken, there are so many options. Sweet works well, tangy works well, salty works well, as do any of those combinations. Outstanding, but we are talking grilling, so if you want that recipe, e-mail me anytime. In a classic pork combo, we’re going to go with apples and maple syrup for starters, which are ideal together, as well as other perfect additions. Although this recipe works well as a holiday dish, as far as I’m concerned, a great summer barbecue is what I consider the better holiday meal. It doesn’t have to say it’s a holiday on the calendar to treat any day as a true reason to be festive and eat well. This recipe can be used with a 3-4 lb pork loin, or, in what I prefer, 4 pork tenderloins weighing in at about a lb. each. They cook quicker, they are much more tender, but yes, it does cost more money, so pick your poison boys and girls. Regardless, it’s a “No Lose” situation. With the tenderloins, you will be cooking for 4-6 people, and if using a pork loin, you will be feeding 6-8. Let’s get at it. You can make the sauce on the stove in the kitchen or in a pan on the grill. Grilled Maple Pork Tenderloins with an Apple and Onion Sauce 4 cloves garlic ½ cup apple juice, separated ¼ cup orange juice 3 tbsp apple sauce 3 tbsp orange marmalade 2 tbsp of bourbon of choice

½ tsp ground cinnamon 2 tbsp olive oil salt & pepper 3 large red delicious apples, or any apples of choice, cored and quartered 1 large onion, sliced 1 tbsp cornstarch 1 tbsp water 4 pork tenderloins, 1 lb each, trimmed of what little fat there is as well as any silver skin Turn the well-oiled grill onto a medium heat. Cover the tenderloins with the olive oil as well as some salt and pepper. Cook the tenderloin for 2-3 minutes on all 4 sides as best as you can. Ideally, you should be shooting for a medium heat in the middle of the tenderloin. While it is cooking, whether on a burner on the grill or in the kitchen, add a tbsp of oil and the onions and apples and cook over a medium heat for 4-5 minutes until the apples start to soften. Add the 7 top ingredient and blend well, add the mixture to the apples and continue to cook over a medium heat, stirring occasionally. Once it is nice and hot and all is cooked, mix the water/cornstarch in a small bowl until smooth, and pour slowly into the hot sauce concoction and stir well until things thicken somewhat. Turn off the heat. Once the pork is done, put it on a cutting board. Let them sit for 4-5 minutes, then slice them about ¾ of the way down every ½ inch or so. I’m going to continue with the pork tenderloin theme because, well, they are so darn tasty, and so tender. This one has a spicy soy base to it and is cooked in medallions instead of whole. Grilled Pork Tenderloin Marinated in a Spicy Soy Sauce and Snow Peas Just shy of 1 cup soy sauce ¼ cup sugar ¼ cup brown sugar 4 cloves garlic, minced ¼ cup fresh ginger, peeled and chopped or grated finely 4 tsp Sriracha sauce ¼ cup sesame oil 4 pork tenderloins, 1 lb each or so, cut into 1-inch-thick medallions ¾ lb of fresh snow peas ½ tbsp cornstarch ½ tbsp water 2 bunches scallions, chopped Combine the soy and sugars and whisk extremely well so the sugars are dissolved. Add the rest of the ingredients up to the pork, and again, mix very well. Pop the pork medallions in a large Ziploc, pour ½ of the marinade over them, squeeze out the air, and seal tightly. Shake the bag well and massage somewhat so all the pork is well coated. Refrigerate for 2 hours at the most as the small medallions don’t take long to marinate. Put the snow peas in a bowl with the other ½ of the marinade over them. Once ready to grill, turn it onto a medium-high heat, well-greased. Drain the snow peas, saving the marinade. Now, drain the pork, getting rid of that marinade. Put the saved marinade in a small sauce pan, turn onto a low heat. Combine the cornstarch and water in a small bowl until smooth and slowly drizzle into the marinade once it is hot, stir well until thick, and yank off the heat. Grill the pork slices on a medium heat for 2-3 minutes per side. Meanwhile, put the snow peas either on the grill as is, doing your best to not let them go through the grates, or put in a grill basket, or on a sheet of foil on the grill with some holes poked through. Once everything

is cooked, serve the pork over beds of snow peas and drizzle sauce over the pork, and top with chopped scallions. This is a whole bunch of yumminess in a whole big way. Alrighty then, one last recipe today, and yup, another great pork tenderloin recipe. As I said early on, remember you can also utilize these on other cuts of pork, so knock yourself out if that is what you care to do. This fun recipe is accompanied by a delicious peach salsa that steps up the flavor factor 10-fold. The salsa peaches and plums are grilled to help caramelize the sugars, which enhances the flavors in a big way. Like most grilled salsas containing fruit, this will work tremendously on chicken and most fish dishes. Again, this is for 4-6 eaters. Grilled Pork Tenderloin with Peach Salsa For the Salsa 3 medium-large peaches, halved and pitted 3 medium-large plums, halved and pitted 1 medium red onion, cut into ½ inch slices 2 tbsp olive oil ½ tsp salt ½ tsp black pepper ¼ cup fresh chopped cilantro 2 tbsp fresh squeezed lime juice For the Pork 2 tbsp olive oil 4 cloves garlic, minced ½ tsp chili powder 1 tsp ground cumin 1 tsp salt ¾ tsp black pepper 4 lbs pork tenderloin, trimmed of fat and silver skin Let’s start with the salsa. Get the grill to a greased medium heat. Brush the fruit halves as well as the onion slices with the olive oil and sprinkle all with salt and pepper. Grill them until they are somewhat charred, grill marked and tender. Remove from the

grill, roughly chop them and add to a bowl. Stir in the cilantro and lime juice and set aside. As for the pork, combine the top 6 ingredients in a bowl and rub the tenderloins evenly with it. Grill them for a few minutes on each side, continuing to rub marinade over them if still available. Usual cooking time is about 14 minutes until a medium heat has been reached, about 145-150 degrees works well. Let stand 5-10 minutes on a clean board, then slice in a diagonal fashion, fan across the plates, and top with the salsa. Enjoy these and any great grilled

recipes to the fullest. I definitely believe you will be all over these, as will your family and guests. The Webbs [sic] We Weave in Our Town Thornton Wilder’s Prize-Winning Play at Village Players This Summer This summer, Wolfeboro’s Village Players are mounting a fresh new production of the long-loved Our Town by Thornton Wilder. A simple tale of a small, early 20th-century town seen primarily through the milestones of Emily Gibbs Webb across a dozen years, it is, in this production, a tale of all our lives right now. Set in the fictional town of Grover’s Corner, NH, and largely written at the MacDowell Colony in Peterborough, Our Town could just as easily be named Gilford, Wolfeboro, Bristol, Pittsfield, Wakefield, or any small New England town. The play is peopled with familiar local names: Warren, Gibbs, Crowell, Craig, Hersey, Stoddard, Peckham; and so are many of the cast familiar from other Village Players’ shows. Joshua Spaulding portrays Editor Webb and his daughter Emily is Vivienne Dauphinais, but Mrs. Webb is played by Emily Judkins, making her Village Players’ debut with this production. Dr. and Mrs. Gibbs are played by Russ Ellis and Laura Peckham Cooper, and their son George is Luke Cassidy. Summer Fun with Squam Lakes Association Get out on Squam Lake on Saturday, July 27 for Squam Lakes Association’s 5th Annual Squam Canoe Classic bass fishing tournament. This fishing series is all about a love of the lake, having a great time on the water and landing the big one. Load up the canoe, kayak, float tube or any style of human powered watercraft and head out for a day of timeless moments on the water. Participants must fish with lead-free tackle and this is a catch and immediate release tournament. This tournament series is open to any vessel completely powered by human effort as no water vessels with motor boats are to be used in this tournament. New this year the Squam Lakes As-

sociation (SLA) will host a cookout starting at noon for all participants in the tournament so be sure to get to the SLA, submit your photos before 12:30 pm and stay for the awards ceremony at 1 pm to see if you won. Anglers document their catch by measuring and taking a photo and then release the fish back into the deep where the legend can swim on. These tournaments are an opportunity to test your skills against the fish and each other, and a laid back way to introduce beginners to the art and pleasure of recreational fishing. Volunteers should wear appropriate clothing for physical outdoor work and bring plenty of water, sunscreen, and a snack. This volunteer opportunity is held on SLA's campus located at 534 US Route 3 in Holderness. As always, this workday is weather dependent. Should any changes to plans arise, updates will be sent to the registered participants. The SLA encourages volunteers who love the outdoors, enjoy hands-on conservation work, and are excited to work with conservation professionals to attend. Join the Squam Lakes Association (SLA) on Friday, July 26 from 10 am to noon to create reusable bags with recycled t-shirts and decorate them using a leaf pounding technique. Participants will join conservation professional, Heather Genuise, to learn about the importance of plants and their pigments. Participants must be at least 10 years old. About 2.5 billion years ago a large influx of oxygen entered Earth’s atmosphere, all thanks to photosynthesis. This amazingly complex process of converting sunlight, water, and carbon dioxide into oxygen and sugar supports life on Earth. As participants decorate their tote bags, they will learn more about photosynthesis and how plants support the Squam Lakes Watershed and beyond. Participants will leave with a new appreciation for plants and their pigments along with a reusable tote bag that will reduce waste. Space is limited to 12 people. T-shirts will be provided to make the tote bags, but participants are welcome to bring

light-colored 100% cotton fabric to decorate. Participants will explore the SLA headquarters to find plants to use for their bags. The SLA will hold its annual “Around the Lake Sailing Race” on Sunday, July 28. The start and finish line is in Piper Cove and the course travels past Bean Ledge and Deephaven Reef. Starting at 1 pm and ending at 4:30 pm with an awards ceremony at 5 pm, this sailing race is open to all types of sailboats. Prizes will be awarded on the Portsmouth Number handicap system. Any size boat can win and will have separate divisions for racing and recreational sailors. Division A will include racing sailboats and Division B will be for recreational sailboats, with no spinnakers permitted. Online registration is open now. Entry forms are available at the SLA Resource Center on Route 3 in Holderness or can be downloaded online. Racers must be capable of sailing safely on Squam Lake and are asked to exercise proper racing decorum. The race course is subject to wind and weather condition changes. Maps of the course and racing instructions will be available at the SLA office or on race day from the official’s boat. The tax-deductible entry fee is $40 and will benefit the SLA’s Community Youth Sailing Program. Registration is open until Saturday, July 27 and entry forms should be submitted by noon on July 28 at the SLA Resource Center. New Hampshire Boat Museum to Host 13th Annual Boathouse Tour Have you ever wanted an up-close view of the beautiful boathouses on Lake Winnipesaukee? Many boathouses are just as attractive, in their own way, as the homes around the waterfront. On Thursday, August 8, from 9 am to 4 pm, you will have a chance to get an up-close look at some of the best boathouses when the New Hampshire Boat Museum (NHBM) hosts its 13th Annual Boathouse Tour. The tour, sponsored by Lake Life Realty Keller Williams and Church Landing, will provide people with the opportunity to visit historic and new boathouses on Lake Winnipesaukee. “This is the only tour of its kind,” said NHBM Executive Director Martha Cummings. “Participants will have the chance to view beautiful, historic boathouses from the inside out.” The best part, she added, is that each tour may be customized to suit individual tour goer’s preferences. “You can choose between three different ways to take the tour: On the water in a vintage wooden boat, by land in your own car, or by land in an antique automobile,” she said. Those who choose to take the tour via boat will “glide on the lake” in one of the museum’s vintage wooden boats, some of which are original Lake

Tours by either boat or antique car depart from Meredith Bay in Meredith

the tour in your own car allows for personalization,” she said. “Drivers will meet at The Chase House at Mill Falls in Meredith and be supplied with a map and directions. Each boathouse also has clear markings and easy parking.” Vintage boat ride tickets are $135 for members and $150 for non-members; antique car ride tickets are $67.50 for members and $75 for non-members; self-drive tickets are $36 for members and $40 for non-members. Tickets also include free admission to the NHBM on the day of the tour or at a later time. Boating on the Lakes 5 Simple Towing Tips for Novices Drivers haul trailers for a variety of reasons. Some may haul trailers with boats or other water recreational vehicles while on vacation, and others may do so when moving to a new home. Regardless of why drivers tow, it’s important to keep certain things in mind before hitching up, especially for those drivers will little or no experience towing. 1. Use the right hitch. Novices may

not immediately recognize if they have purchased an incorrectly sized hitch, but that might become apparent when the trailer is detached during a ride. Your vehicle owner’s manual may suggest which size hitch to use. If not, consult with a representative at your retailer to determine the correct size. 2. Make sure the trailer is level. When attached to a vehicle, trailers should be level. Trailers that do not

Beginning a turn later can help drivers avoid having their trailers clip curbs, a potentially sticky situation that can cause trailers to flip over.

3. Drive more carefully. Discomfort or inexperience may propel many drivers to be extra careful when towing a trailer, but even drivers with significant experience towing trailers should keep greater distance between their vehicles and other cars and trucks sharing the road. That’s because braking takes longer for heavier vehicles, such as those towing trailers.

5. Avoid reversing when possible. Many people towing trailers for the first time and even some drivers with significant experience towing have difficulty going in reverse. Avoiding situations that require putting vehicles in reverse is ideal for novices. Those who think they cannot avoid going in reverse should practice their technique in empty parking lots before hitting the road, even hiring an instructor to help them, if necessary.
