Wonderful Lakes Region Wineries

It was a popular drink in Europe as early as 4,000 BC. In the early days of winemaking, grapes were placed into big vats and crushed with the feet of workers. The juices were collected and fermented, and wines was the product.

Italy was one of the first, but not the only place, to make wine. Egypt made wine around 3,000 BC. Many countries made wine and the popularity of the beverage spread through trade around Europe and as far away as China.

Over the years, wine making was done everywhere and became a drink in America as well. Interestingly, it was not until the 1970s that wine gained the popularity it enjoys today in this country. Grapes were always referred for winemaking, but now other fruits are used as well.

Wine tastings have become quite popular, and the Lakes Region of New Hampshire has some wonderful wineries with tastings, offering a variety of wines made on-site.

In the Newfound Lake area, Crazy Cat Winery, owned by Claudette Smith, is located at 365 Lake Street in Bristol. “We offer over 36 wines,” Smith says. “Those include rose, reds, white wines and dessert wines.”

Crazy Cat Winery started when the Smith family moved from Virginia to Bristol in 2017. After finding an appropriate property with room for the business, Smith’s husband began to make

Wine tasting at Hermit Woods Winery. wine. “He has been a wine maker since his college days. He started out by brewing beer and hard cider and then expanded to winemaking. We took it to a commercial level in 2016,” Smith explains.

When asked what her favorite Crazy Cat Wines would be, she says the dry red wines, such as Stormy Skies and Bull on the Hill.

Crazy Cat has a tasting room, so visitors can learn about and sample the variety of wines made at the business.

“We also serve entrees, salads, soups, stews, paninis, and desserts, all freshly made,” Smith says. “Our charcuterie boards are popular, and we also do wine slushies. We are starting to offer fondues as well, but those must be re-

Crazy Cat Winery also has art classes, crafting events and hopefully, according to Smith, line dancing and pop-up yoga classes this summer.

“We adopted a cat when we lived in Virginia,” Smith explains. “He was the craziest cat. Sadly, he passed away and we now have two resident cats.”

Hermit Woods Winery, located at 72 Main Street in Meredith, is among the most popular wineries in New Hampshire. Owners Bob Manley, Ken Hardcastle and Chuck Lawrence got started making wine at Manley’s home in

Sanbornton. They became friends over a shared interest in winemaking, and their knowledge of wines grew. “It started as a summer through fall and a weekend activity,” says Manley. “We quickly grew out of that space, and we needed to expand. We bought the Meredith property in 2014.”

Manley says Hardcastle has taken the craft of winemaking to the level of artistry, garnering the business respected reviews. Oprah Winfrey named Hermit Woods Winery as one of the top things not to miss if visiting New Hampshire, and USA Today voted the winery the fourth best tasting room in America.

Says Manley, “We make our wines from whole ingredients, produced at 72 Main Street.” One of Hermit Woods most popular wines is Petite Blue Reserve, made with 100% low-bush blueberries from a farm in Maine.

These are just a few of the many varieties of fruit the winery produces. They seek to identify the depth and breadth of fruit that can be found in abundance in the local community and make the best wine they can from it.

Manley says his favorite Hermit Woods wine is the one that is in his glass. His choice of wine is attributed to the season, the music he might be listening to, the people he is socializing with, etc. “We try to have favorite wines for each occasion,” he adds.

Offering about 35 wines, Hermit Woods makes the wines on-site at their 72 Main Street, Meredith location.

Hermit Woods offers wine making tours for six or more people.

Soon, there also will be a new patio on the front lawn for outdoor dining.

The business name will be changing to reflect exactly what the winery is: Hermit Woods Winery and Eatery. Says Manley, “We are more than just a deli, and our restaurant offers farm-to-table foods. We have also launched The Loft at Hermit Woods, a listening room experience. It will offer a live music series on Thursday nights, 52 weeks a year. We will have artists from all over the country performing here.” The first show will be on May 19, with Wangari Fahari, a Kenyan singer, writer, and founder of The Fahari Brand. Gilmanton is steeped in history and beauty. It is the site of the Gilmanton Winery, which makes fruit, white, rose and red wines, according to co-owner Marshall Bishop. (His wife, Sunny, is the other owner.)

“We learned to make wine by reading a lot and listening to others; we have been making wine for about 13 years,” says Bishop. He continues, “We make all the wine here, and we have a vineyard with about 854 grape vines.”

Gilmanton Winery is beloved in the area for not only their wines, but also for their weekly Sunday Brunch. Once a month, they serve dinner, and will offer a Murder Mystery event on June 4.

“We also cater to parties on the property,” Bishop adds.

With a wine tasting room and events, the winery is a busy place. Asked what his favorite wine might be, Bishop says, “I like our Green Apple Wine and white wine and fruity wines. Sunny likes a red wine we have called Jack the Ripper.”

In Tamworth, Whippletree Winery is located at 372 Turkey Street. Owner Lauren Barrett has an interesting history with winemaking. “I did not like wine; I found it undrinkable. As a retirement venture, I decided to create some wine that was friendly to the palette. I discovered there is a niche around wineries if the wine is smooth and balanced.”

Using new world wine making methods with old world chemistry, Barrett made delicious wine that changed her opinion of the drink. With at least 30 wines in a variety ranging from rose,

white, red, and fruit wines, Whippletree is a popular spot for wine tastings.

Barrett says Whippletree has a wine for everyone, from sweet to off-dry to dry wines.

Barrett explains that different wines age at different times. Depending upon what one wants for a result, production and aging times vary.

The tasting room at Whipple Tree has been in operation for seven years, seating about 50 people for indoors and 50 people outdoors with a great view of the Ossipee Mt. range. Along with the wines that are popular with customers, Whippletree serves cheese and crackers, and guests can bring their own food if they wish.

Barrett’s employees are trained and very knowledgeable. They understand the wines and how they are made.

When a person comes for a wine tasting, it is almost like a wine consultation, and it is a friendly, relaxed experience.

Barrett says her favorite wines are dependent upon the season and the job the wine needs to do. “For example, if I am sitting on my deck at home and I have just mowed by lawn, I might want a lime coconut wine. It would be a different wine for an Italian dinner, for example My favorite wine is the one that does the job best for the situation.”

Barrett does wedding wine consultations and is a wedding wine planner.

Beautiful Whiteface Hollow Farm has a rich history. Says John Ferreira, who owns the property with his wife, Jennifer, “In the early 1800s both on this farm and in nearby fields in the area, farmers cultivated native grapes to produce wine. If you look closely, you can still see some remnants today from that era on our venue.”

The first vineyard beds at Whiteface Hollow were prepared in the fall of 2017 with the planting of 1/4 acre the following spring: an expansion in the spring of 2020 brought the vineyard to

nearly 1/2 acre. Seven cold hardy grape varieties, four red and three whites, were selected from the University of Minnesota’s and Elmer Swenson’s special viniculture grape breeding programs for their ability to produce superior tasting, medium and full bodied aromatic wine that can grow and mature in the New England climate.

Ferrera continues, “We have a fantastic micro-climate for cultivating hardy wine grapes; our hilltop location is perfectly situated and receives allday sunlight throughout the growing season. The hilltop was carved by glaciers, a unique area between the White Mountains and Lake Winnipesaukee and provides fertile soil and an environment for hardy grape varieties to thrive. It typically takes three to five years for vines to mature and produce a ‘good’ harvest suitable for high-quality wine production.

“Whiteface Hollow took our first harvest from a portion of the vineyard in the fall of 2021, and we currently have four varieties that are aging well. We plan to begin bottling the very first vintage sometime in the summer of 2022.

Most of our wine will be sold directly to guests at the venue.” (Whiteface Hollow Farm has become extremely popular since the Ferreira’s transformed the farmhouse and barn into a beautiful wedding/event venue.)

“One-hundred percent of the wine is grown, made and bottled on the property,” says Ferreira. “The wines are handcrafted in small batches. We do not import grapes from elsewhere.”

John Ferreira is the winemaker at the boutique winery. He was self-taught and took some courses. He speaks highly of the New Hampshire Wine Association, where there are good learning opportunities.

He says, “The Winery building has a Tasting Room and large patio for intimate, year-round gatherings and events. It is our intention to open to the public mid-weeks in the future.”

morning right now. Another classic passage of spring is graduations for many high schoolers and collegians.

Plymouth State just held theirs a little over a week ago and UNH’s is this coming weekend, and it won’t be long before the high schools are following suit. The graduates are so psyched for their freedom, at least for the time being, and many of their parents have tears in their eyes wondering where the time has gone. Nothing like a good old-fashioned slap of reality, huh parents?

Well, today’s game plan is to help set the parents up with some great ideas in hosting the perfect backyard

BBQ party for your graduate and his/ her friends and your family. Whether cooking for a dozen or for 50, I think most of these ideas should be helpful in feeding the masses. I’ll share a couple of thoughts on keeping things easier if you are doing the cooking, and if you have it catered, some of these ideas might be worth sharing with the caterer when planning. It’s always easy to just cook burgers or boneless chicken breast sandwiches, but I have a few great ideas on how you can step things up in a big way.

One practice that I have used at many parties when I’m going to have many young adults eating over is to set up an advanced “Build Your Own” situation.

It’s easier on the chef, and the eaters love it when given many choices on how to top the protein. As an example, this is what I would have on hand at most of my “BYO” grilling buffets for everyone to “do what they gotta do” to build their ultimate sandwich.

I throw a pork roast in a slow cooker for 5-6 hours a day or two before with some sauce and spice, and once pulled apart, you can heat up quickly and easily the day of in a sauté pan and put in a crock pot. Most everyone digs pulled pork and if there is a line at the grill getting their burger or chicken breast, you can build a pulled pork sandwich in 30 seconds. It’s an easy and delicious option.

My favorite and the most popular sandwich in the many years of my catering career is this chicken sandwich I like to call The Hawaiian Chicken Sammie. Grill the chicken breast and a

nice ½ inch thick slice of fresh pineapple, lathering both with teriyaki sauce while grilling. Once the chicken is done, I sauce it again, put the pineapple slice on top, put some cheddar on top of that, and add a sliced sandwich sized Thomas English Muffin, buttered, to the grill and close the lid. Once ready, put the chicken on one half, add tomato and onion, top it and Dig In!!!! One of the best sandwiches ever.

So, yes, all in all a “BYO” buffet is a huge hit. Add some salads, chips and such, and of course a dessert, and you will have a successful day. However, as always, I have plenty of other thoughts as well, so let’s give you some specific sandwich ideas and recipes off the grill, shall we?

For this mouthwatering recipe, I got my inspiration from a popular British pub specialty. This very traditional English Pub Steak Sandwich is great regardless of the occasion, whether a graduation or just being hungry on a boring day. They’re sure to earn you some rave reviews. This recipe will

take you about a half hour and feed 4 and is an easy one to multiply as needed.

English Pub Steak Sandwich ¾ cup crumbled blue cheese 6 tbsp butter, softened, divided 1 garlic clove, minced 1 ½ large, sweet onion, thinly sliced ½ teaspoon salt 1 tbsp cracked black peppercorns 2 strip steaks, about 12 oz each 2 crusty hoagie rolls In a small bowl, combine blue cheese, 2 tbsp butter, and garlic and mix well and set aside. In a large skillet over medium-high heat, melt 2 tablespoons butter; add onions and salt and cook 10 to 15 minutes, or until browned, stirring occasionally. Remove to a dish and set aside. Press peppercorns into both sides of steaks. On a preheated grill at a medium-high heat, add steaks and cook 3-4 minutes per side for medium doneness, but all grills are different, so pay attention. Butter the middle of the sliced hoagie rolls and grill them as well. Once all is done, put the

steaks on the hoagie roll bottoms, place the steak on top, then top with onions and blue cheese mixture, cut in half, and serve immediately.

While on the beef theme, let’s do something we have all done in the kitchen, but maybe not on the grill.

This is a grilled meatloaf sandwich that comes with a tasty chipotle ketchup.

The meatloaf is obviously made the traditional way in the kitchen oven and should be cooked the day before. Once it is chilled, it slices much better and then can be grilled. I’m not going to share a meatloaf recipe today as I think most everybody has a “Go To” recipe they use often, but if you need or want one, email me at the address at the bottom of the article and I will be happy to share one with you. Once we grill the meatloaf, we also grill buttered slices of bread of choice with Swiss cheese, pop the grilled meatloaf in between and add the sauce. This recipe is for 4 sandwiches, and other than the meatloaf the day before, these won’t take more than 20 minutes to prep and cook.

Grilled Meatloaf Sandwich w/ Chipotle Ketchup 1 cup ketchup 3-4 tsp chopped chipotle chile peppers from canned Chipotles 2 tbsp adobo sauce from can 2 tsp balsamic vinegar 4 slices meatloaf, about ½ inch thick 8 slices your favorite bread, I prefer oatmeal, or 4 onion rolls 4 slices Gruyere cheese

4 slices Swiss cheese 3 tablespoons butter Sauteed onion, optional but recommended Sliced pickle chips of choice Pull the refrigerated meatloaf from the fridge 45 minutes prior to grilling.

In small bowl mix ketchup, chopped chipotle, adobo sauce and balsamic vinegar. Preheat your grill to medium and oil it well. Lay the slices of meatloaf onto the grill and grill for usually about 3-4 minutes on each side. Be careful flipping as sometimes a slice of meatloaf can be fragile, which is why I like to cut them thick and while cold.

As the meatloaf is getting close, butter one side of the 8 slices of bread, and again make sure the grill is greased up, lay the bread down, butter side down.

Immediately put Swiss on 4 slices and

the Gruyere on the other 4. Once the bread is nicely grilled and making sure each sandwich gets a Swiss and Gruyere slice each, lay the meatloaf on one slice, top with the Chipotle ketchup and sauteed onions and pickles if desired, and close it up. Great sandwich!

Between the “BYO” ideas, the Hawaiian Chicken Sammie and the last two sandwiches, I have realized that I unintentionally neglected the vegetarian crowd, but I have a couple of awesome suggestions to offer you now.

The first is a yummy portobello mushroom sandwich, and then we’ll have some fun with eggplant. Portabella mushrooms are the perfect vegetarian style burger, and they aren’t popular with just the vegetarian crowd as the carnivore crowd are usually big fans as well. As great as the mushrooms are on their own, balsamic vinegar steps things up in a huge way during the marinating process. Between prep,

marinating and grilling, you’ll have these ready to eat in 45 minutes and this recipe is for 4 sandwiches.

Portobello Mushroom Burger 4 tbsp low sodium soy sauce 4 tbsp balsamic vinegar 2 tbsp extra-virgin olive oil 2 cloves garlic, minced 2 tsp Italian seasoning 1 tsp black pepper 8 portobello mushroom caps, cleaned with underside stems and gills removed 8 slices Havarti cheese, or swap provolone or whatever sounds good 4 brioche burger rolls Pesto Sliced red onions and tomato Arugula In a large zip top bag, combine the soy sauce, balsamic vinegar, oil, garlic, Italian seasoning, and black pepper.

Gently swish the marinade around the mushrooms, then place the bag in a shallow dish. Allow the mushrooms to sit at room temperature for at least 30 minutes while you prepare any desired toppings. Turn the bag once or twice while the mushrooms sit so that they are coated evenly. Heat your grill to medium heat. Once hot, brush the grate lightly with oil to prevent sticking. Remove the mushrooms from the marinade, shaking off any excess. Pour the marinade into a small bowl for basting. Grill the mushrooms on both sides until tender, about 10 minutes total, brushing them with the marinade

several times throughout. When the mushrooms are in their final minute of cooking, turn four of them so that their undersides are facing up. Top each with 1 slice of cheese, then stack a second mushroom on top, cap side up, so that the cheese is in the middle.

Place a second slice of cheese on top.

Reduce the heat to low and cook just until the cheese is melted. During the last few minutes of cooking, if desired, grill sliced onions and toast the buns.

To assemble, spread a thin layer of pesto on the cut sides of each bun. Place the arugula on the bottom bun, then top with a grilled portobello mushroom stack, onion, and tomato. Add the top bun. Enjoy immediately.

While on our healthy options, let’s add a scrumptious eggplant option for everyone. This will be ready in 45

minutes and also feeds 4.

Grilled Eggplant Parmesan Sandwich 1 large eggplant, 1½+ lbs., cut into 12 rounds, about ¼ inches thick Canola or olive oil cooking spray ¼ tsp salt 3 tbsp finely shredded Parmesan, or Asiago cheese ½ cup shredded part-skim mozzarella cheese 4-8 pieces focaccia bread, or rustic Italian bread. If you want open faced, use 4 pieces, 8 for closed.

2 tsp extra-virgin olive oil 5 oz baby spinach 1 ¼ cup crushed tomatoes, preferably fire roasted 3 tbsp of fresh chopped basil, divided Preheat grill to medium-high. Place eggplant rounds on a baking sheet and sprinkle with salt. Coat both sides lightly with cooking spray. Combine Parmesan, or Asiago, and mozzarella in a small bowl. Brush both sides of focaccia, or bread, with oil. Place spinach in a large microwave-safe bowl. Cover with plastic wrap and punch several holes in the wrap. Microwave on high until wilted, 2 to 3 minutes. Combine tomatoes and 2 tablespoons basil in a small microwave-safe bowl. Cover and microwave until bubbling, about 2 minutes. Place all your ingredients on the baking sheet with the eggplant and take it to the grill. Grill the eggplant slices

until brown and soft on both sides, 2 to 3 minutes per side. Grill the bread until toasted, about 1 minute per side.

Return the eggplant and bread to the baking sheet. Reduce grill heat to medium. Place 1 eggplant round on top of each slice of bread. Layer 1 tablespoon tomatoes, 1 tablespoon wilted spinach and 1 tablespoon cheese on each slice of eggplant. Repeat with the remaining eggplant, sauce, spinach and cheese.

Sprinkle each stack with some of the remaining basil. Place the baking sheet on the grill, close the lid and grill until the eggplant stack is hot and the cheese is melted, 5 to 7 minutes. If you want these as a close faced sandwich, use 8 pieces of focaccia and throw a top on them once all is melted. Eat Up!!

Let’s share a few fun side dishes and then we’ll finish up with a incredibly scrumptious lush recipe. We can’t have a successful backyard BBQ without having a great potato salad out there, and this is a great one. There is only a half dozen ingredients, but the two that make this more original than most spud salads are that instead of using mayo to mix it with, we use ranch dressing, plus we throw in some bacon for good measure. As a side dish, this should feed 10 or so.

If larger, cut into more pieces.

Place potatoes in a 6-qt. pot, add water to just cover the potatoes. Add salt.

Bring to a boil. Reduce heat, cook, uncovered, for 12-15 minutes or until the potatoes are tender. Drain potatoes and run cold water over them until potatoes are cooled. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Cool, then chop. In a large bowl, add potatoes, ranch dressing, ¾ of the bacon as well as the cheese. Mix well and place in refrigerator for at least 1 hour, more is better. Top with the rest of the bacon and cheese and then the scallions before serving.

Next is an eclectic coleslaw recipe that goes together very quick and feeds a dozen of you as a side dish.

Apple Walnut Slaw ¾ cup mayonnaise

¾ cup buttermilk 4 to 5 tbsp sugar 4 ½ tsp fresh squeezed lemon juice lemon juice ¾ tsp salt ½ - ¾ tsp pepper 6 cups shredded cabbage, about 1 small head 1 ½ cups shredded carrots, 2-3 medium carrots 1/3 cup finely chopped red onion 1 cup coarsely chopped walnuts, toasted ¾ cup raisins Apples of choice, 2-3 of them, chopped Whisk together first 6 ingredients. In a large bowl, combine vegetables, walnuts, and raisins and toss with dressing.

Fold in apples. Refrigerate, covered for at least 2 ½ hours before serving to give it the proper chill it deserves.

Make it a day before serving so it’ll set up nicely and bring out just as everybody has finished up on their sandwiches or anything else you may have fed them. It will take you close to an hour to make, and it needs to sit under refrigeration for at least 5 hours, hence why I like to make it a day before. Depending on serving size, this will feed 15-20.

Butterfinger Lush 1 pouch peanut butter cookie mix, 17.5 oz in size Vegetable oil, water and egg called for on cookie mix pouch 1/3 cup butter, melted 1 package cream cheese, 8 oz, softened 1 cup creamy peanut butter 1 cup powdered sugar 1 container frozen whipped topping, 12 oz., thawed 2 boxes chocolate instant pudding and pie filling mix, 1 oz boxes 3 cups of cold milk Butterfinger candy bars, 4-5 of them, 1.9 oz each, chopped, about 2+ cups Heat oven to 375 degrees. Make and bake cookies as directed on pouch.

Cool completely, at least 30 minutes.

In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process second half of remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch 3-quart glass baking dish, press cookie crumb mixture firmly in bottom. Set aside. In medium bowl, beat cream cheese, peanut butter and powdered sugar with electric mixer on medium speed until well blended, scraping down sides of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust. In another medium bowl, beat dry pudding mix and milk with whisk about 2 minutes or until thick. Spread over cream cheese mixture. Spread remaining whipped topping over top of pudding layer. Cover and refrigerate.

When ready to serve, sprinkle chopped candy bars on top. Cut into as many rows each way as you want to, cover and refrigerate any remaining dessert.

That’s another chapter in the books everybody. Have fun experimenting with some of these recipes and ideas, whether at a graduation party or just any day for the fun of it. Be good, keep your taste buds happy, and I’ll see you next week with some great ideas to celebrate Memorial Day Weekend.

The Hobo & Winnipesaukee Scenic Railroads Open for 2022 Season The Hobo and Winnipesaukee Scenic Railroad is advising the public that the 50+ miles of rail between Lochmere, NH and Lincoln, NH should now be considered active for the 2022 season.

Various train operations will be taking place from now through December, including maintenance, excursion trains, special tourist trains and equipment moves.

The Railroad would like to take this opportunity to remind everyone that caution should be exercised at all times while around moving trains and to always expect a train. Other safety considerations to keep in mind include grade crossing signals which should always be obeyed. Drivers should always stop when they hear whistle signals at grade crossings and should never try to
