Sweet Music…Outdoors

By Kathi Caldwell-Hopper What could be better than an outdoor summer concert on a balmy evening?

When the concert is on or near the water, you can arrive by boat, making the experience unique and fun. If the concert is in a park or community area, it is magical when the hot summer’s day turns to twilight and the music of a local band tunes up to play.

In the town of Tuftonboro, the popular Summer Concert Series at the Pavilion takes place at 6:30 pm and goes until about 8:30 pm, weather permitting during July and August. The concerts are presented in the pavilion at 19 Mile Beach, and concertgoers with a boat enjoy docking their watercraft offshore.

The free concerts also offer concessions on site. Spread out a blanket on the beach or bring a lawn chair and sit back and enjoy the music.

This year’s lineup includes: July 8; The Wooden Nickels Band; July 15: Brian Hastings & Sky Road; July 22: The Big Picture Band; July 29: RagingRockaholics; August 5: The Echotones, and the series concludes with the popular Carolyn Ramsay Band on August 12. For details, visit www.tuftonboro.org.

The town of Bristol, near Newfound Lake, will present Summer Concerts in Kelley Park from 6:30-8 pm on select dates. The free concerts kick off on July 1 with Jordan Tirrell-Wysocki Trio.

Digital Painting: Power in Pixels

By Leigh Sharps Marian Federspiel of Meredith became enthralled with the art of drawing as a grade school student, but she never thought then her young fervor concerning the art world would one day lead her into a singular and futuristic career as a ‘digital painter’.

She says, “I was given a ‘Learn To Draw’ kit with charcoal pencils in elementary school and that began my interest in the arts. I took classes in high school and one at the University of Hartford as a senior.”

She then earned a Bachelor of Fine Arts degree (with an emphasis in painting) from the University of Connecticut and afterward pursued a career in design and advertising. “That lasted for 20 years working in Providence, Boston and Manchester before returning to school to pursue a Master’s in Education degree at Lesley University in Cambridge, Massachusetts. I then began a new career teaching digital arts in the Laconia school system.”

Digital painting has become a revered art form requiring the deft use of a computer mouse to transform pixels into colorful landscapes, portraits, abstract designs, and just about any depiction one’s imagination is able to create. Marian explains, “I progressed from charcoal to paint, then digital.

Because of the movement into digital creation in the advertising world, when I was an art director, it just followed that digitized art would become a natural medium for me. I gradually turned

Taking her teaching certification (that she was proud to attain at the age of 39) she brought her computer talent to the Laconia Middle School, introducing computer skills to eager students.

“Since I had a background in the arts, I began learning and then teaching digital drawing using Adobe Illustrator. I then transferred to the high school and I helped develop the digital arts program there. I was hooked. The art was challenging, fresh and clean looking and had a wonderful silk-screened, graphic look to it. I could mix any color I desired without getting covered in paint!” She does admit, however, she sometimes misses that process.

“Digital painting is a relatively new medium.” Marian says. “I use the software program, Adobe Illustrator, to create my images by substituting pixels

for paint and a mouse for a brush; the computer monitor becomes my canvas.

The painting process is similar to traditional painting. A scene inspires a mental image, while photographs provide a reference. The image is hand drawn with the mouse (not a stylus or touch screen). The mouse is what I am still used to. The images are not manipulated photographs. They are drawn by my hand with the use of a mouse and my own photographs.

I’ll use multiple photos as reference; combining and moving objects: simplifying scenes by deleting objects and cropping; changing colors, lighting and mood as I interpret the photos while drawing.” When a drawing is finished, it is printed using seven colors of ink on matte paper (she uses an Epsom printer). “The result is a brilliantly colored serigraph-like print,” Marian explains.

She says she draws on a laptop at a stand-up writing desk, which overlooks Lake Winnipesaukee. “I mostly create landscapes - or lakescapes as I call them since the preponderance of my drawings are of lake scenes. I am continually struck by the breathtaking

beauty and variety of the lake. I attempt to convey the feeling of looking out across the water (or mountains, or forest). Depth and space are created through the layering of color of varying opacity.”

Marian is often asked what her favorite work is. “Honestly, it’s usually the one I’m working on. I get excited by some effect or technique that I’ve discovered, or by color combinations, or texture, or subject matter...and then I’ll get totally absorbed in it for a while. My view is generally tempered after some time has passed, but during that time period that latest piece is my favorite. One that has stood the test of time for me, however, is Winter Dock (which is in a series of seasonal dock prints). It’s a pretty old piece but I love the peacefulness that has been created through its simplicity, the limited color palette, and the mist.”

Marian’s retirement after 20 years of teaching has provided her with more time to dedicate to her art and to pursue avenues in which to market it. “While I was still teaching I began exhibiting my work at two local galleries: Artistic Roots in Plymouth and Squam Lakes Artisans in Center Harbor. Gallery experiences taught me the business end of the art world: how to price, display and sell my artistry.

Gallery space also provided me with a huge incentive to produce more work.

Celebrate the Arts at ArtWorks Things are hopping at ArtWorks Gallery/Chocorua Creative Arts Center at 132 White Mountain Highway in Chocorua Village on Rt. 16 in the old yellow farmhouse.

Marian’s advice to aspiring artists: “Create with abandon! Keep doing it, learn your craft well but then create lots of work. Once you have a consistent body of work get it out there! Enter shows, explore some galleries (traditional or cooperative), join some art groups (Lakes Region Art Association and NH Art Association are two in this area), create a website and

promote your work on social media.

You’ll start networking with other artists and become part of a wonderful, supportive community.”

Marian’s works are available at Riverview Artisans on the square in Bristol (run by Barbara Platts-Comeau), Artistic Roots in Plymouth, and Squam Lakes Artisans in Center Harbor. She is also in several shows during the year (notably Artisans on the Green in Center Sandwich in August), Lakes Region Art Association shows and usually at one or two public libraries.

Castle in the Clouds is Open for the Season After a shortened 2020 season with limited offerings, Castle in the Clouds welcomes the public back to the historic estate (the 2021 season began on Saturday, May 29). The Castle, located in Moultonboro, offers traditional mansion tours as well as a variety of programs for all interests.

Café in the Clouds will be open again this year, offering a lunch menu, adult beverages, and ice cream with outdoor seating in the scenic meadows near Shannon Pond. Visitors can also enjoy access to more than 28 miles of hiking trails throughout the Ossipee Mountains, some of which include waterfalls and vistas owned and managed by the Lakes Region

“We’re very excited to welcome the public back for another season here at the Castle,” says Executive Director Charles Clark. “Additionally, as the labor market improves and we are able to hire the necessary staff, we will begin to offer lunch service on the terrace of the Carriage House restaurant.”

An exact date for the opening of the restaurant for lunch has not yet been set, but reservations are now available for the popular Music Night dinners. There are also many ways to explore the Castle this year, with a diverse calendar of programs scheduled that include new opportunities like Coffee at the Castle, Morning Yoga and Landscape Tours, along with returning favorites like Family Fun Day, Castle After Hours, and Solar Gazing. After a successful fall Car Show last year, the Castle has planned the 2021 show, once again taking place amidst the changing foliage.

The annual Beer & Chili Festival has also changed seasons, taking place on Sunday, September 26 from 5:30-8:30 pm and featuring local Lakes Region restaurants and breweries.

Brand new this year is Concerts in the Clouds, presented by Great Waters. This series of live, outdoor entertainment is the result of a special, long-term, non-profit partnership between Great Waters and the Castle Preservation Society. The 2021 season

of Great Waters entertainment will be held in a tent in the meadow at Castle in the Clouds, and includes five musical performances, a comedy night and a free folk festival. Tickets to Concerts in the Clouds are limited and are on sale now at www.greatwaters.org.

The Castle will continue to follow similar safety protocols at the start of this season as was done in 2020, with timed entry into the mansion, limited capacity inside buildings and on the trolleys, face coverings required while indoors, and enhanced cleaning procedures. Procedures are subject to change and certain restrictions and safety recommendations will lift as the pandemic continues to resolve. The Castle team encourages all those who plan to visit to view the most current COVID-19 policies and procedures at www.castleintheclouds.org prior to visiting. One change that will remain for the entire 2021 season is entry to the property. The regular entry along the historic estate road will be closed to vehicles once again this season, but accessible to the public as a hiking trail – all guests should enter the property through the Ossipee Park Road entrance.

“While we are anxious to provide an unrestricted experience to our guests, it is important to us to continue taking precautions to keep our guests and staff safe and healthy. We are optimistic that a more traditional Castle experience is just around the corner,” says Clark. “In the meantime, we are really looking forward to the programs and events we have planned to share with the public this year, and to welcome guests into the mansion to see our latest restoration progress.”

While Covid has put the Kirkwood Gardens Day event on hold this year, a wide variety of perennial plants will be available for self-serve purchasing on the bluestone terrace at Kirkwood Gardens. Stroll through the gardens for inspiration and find beautiful new plants for a home garden.

Kirkwood Gardens were dedicated in 1996 in honor of Grace “Sunny” Kirkwood, a landscape designer who served on the Board of Trustees from 1985 to 1991. Sunny designed the garden on the grounds of the historic Holderness Inn on Route 3 in Holderness. The garden includes both shade and sun beds planted with a wide variety of trees, shrubs, ferns,

and flowers adapted to the northern New England climate. Plants that are attractive to birds, bees, and butterflies are central to the garden’s design.

Some highlights of Kirkwood Gardens include a 25- by 60-foot bluestone patio on the west side of the historic Holderness Inn, which provides a scenic place for visitors to view the garden or to sit in the summer shade.

A series of granite steps lead visitors from the shaded upper garden to the sunny, informal lower garden. Visitors may sit in the shade under ancient sugar maples and view the large variety of ferns, hostas, azaleas, rhododendrons, and other shade-loving plants in the upper garden.

Sun-loving shrubs, trees, and perennials thrive in the lower garden, where visitors may enjoy a lovely sculpture, set their clocks by the sundial, watch the hummingbirds from

a circular bench under the old apple tree, or view birds and butterflies as they visit a central millstone fountain.

A beautiful wooden pergola covered with a variety of vines is located at the west end of the lower garden. A combination of cobbles, pavers, and river stones provide the surface under the pergola and highlight a large Lunaform pot in the planting bed beyond it.

Perennial plants at the Kirkwood Gardens plant sale are available on the bluestone terrace at the garden.

Payment is at the self-serve kiosk.

June Programs at Squam Lakes Natural Science Center The Squam Lakes Natural Science Center in Holderness has a fun season coming up for families, beginning with Virtual Ecology Series: Kettle of One on Tuesday, June 1 at 7 pm. Join Eric Masterson, Land Program Manager at the Harris Center, and birding expert, for his virtual presentation of “Kettle of One.” Ride with him on his ambitious 2016 bicycle trip from New Hampshire to Mexico as he followed the migration of Broad-winged Hawks. A flock of migrating hawks gaining altitude in a thermal of rising air is known as a “kettle,” so, wouldn’t a solo bicyclist following the migration on land be called a “Kettle of One”?

The Science Center’s Annual Breeding Bird Census will present two sessions on Saturday, June 8.

Session 1 runs from 5:30 to 8 am, and Session 2 will take place from 8 to 9:30 am. The birding census is for teens and adults. For over three decades, the Science Center has conducted a census in early June of bird species that nest on the Science Center campus.

The census is done primarily by ear listening for territorial songs of male birds, indicating probable nesting. This is a great opportunity to hone bird song identification skills. The early session (5:30 am) involves canvassing two

The later session (8:30 am) covers fields, exhibit areas, and Kirkwood Gardens. Binoculars are available or participants may bring their own. The program is free, but reservations are required. There is a maximum of 10 participants per session, and facemasks are required for programs. Ongoing events include a StoryWalkTM which happens daily at 1 pm. StoryWalk begins for the 2021 season at the Holderness Town Gazebo. StoryWalk features “On Meadowview Street.” Written by Henry Cole, the story is about Caroline and her family, who have just moved to Meadowview Street. But where is the meadow and where is the view? When a small wildflower begins to grow in her backyard, Caroline and her family soon transform the yard into a wildlife habitat. StoryWalk surrounds the Holderness Town Gazebo behind the Holderness Post Office at Curry Place.

It is presented in partnership with the Holderness Library and Holderness Recreation Department and generously sponsored by Meredith Village Savings Bank. StoryWalk is open daily June 25 through September 6. There is no

charge and no reservation required.

The Science Center’s popular Squam Lake Cruises are a fun and educational experience for families. The Discover Squam Cruise takes place daily at 1 pm. The unforgettable guided tour has something new to delight everyone.

Learn about the natural history of Squam Lake, look for majestic Bald Eagles, and listen for the haunting call of Common Loons. Hear about the people who have lived on its rocky shores surrounded by scenic mountains for over 5,000 years. Cruise the beautiful lake where “On Golden Pond” was filmed almost 40 years ago. Squam Lake Cruises are not recommended for children under age 3. All Squam Lake Cruises are 90 minutes in length on canopied pontoon boats. Cruises depart on Route 113 across from the Science Center. Advance reservations are required by purchasing tickets at nhnature.org.

The Loon Cruise is scheduled to run on Fridays, June 11, 18, 25, from 3 to 4:30 pm, and on Monday, June 28 from 3 to 4:30 pm. Squam Lakes Natural Science Center and the Loon Preservation Committee (LPC) are offering cruises that focus on Common Loon conservation, biology, and monitoring. A Science Center naturalist joins an LPC biologist who guides the tour and discusses the work LPC does across the state and on Squam to protect these extraordinary birds. ‘Cue The Grill

Simple, Delicious Food Off The Grill

By Chef Kelly Ross There are a couple of things I always focus on when grilling. Great and delicious food and doing so as simply and easily as possible are equally important. Since many of you may be novices, especially on the grill, it is important to keep things as simple as can be. That is our Theme du Jour: Simple and Delicious!

As usual, I like to start the festivities with some fun appetizers. I have a good wing recipe, as well as a couple of outstanding shrimp specialties.

The wings are a specialty from our 50th state, Hawaii, and these Hawaiian wings are awesome. I prefer to grill the whole wing as opposed to cutting them in half into the wing portion and mini drumstick portion. Keeping them whole keeps them moist, and personally, I think more fun to eat. Once cooked, they pull apart pretty easily. As a general rule, 5 lbs of whole wings will give you about 25 pieces, which can easily feed 4 to 5 of you, especially as an appetizer. Fold the tip of the wing underneath the wing so it forms a triangle shape. That tip will stay right there, especially once it shrinks some during the cooking process.

1/4 cup toasted sesame seeds 7-8 scallions, thinly sliced I do thousands of wings on my grill every summer, as I am a wing addict, so I reserve a large Tupperware container specifically for this job. I put the marinade/sauce in the container and as I grill the wings, I pop them in the container, put on the lid and shake it up to coat the wings, then pop them back on the grill. You try this format once and I guarantee you will be hooked for life. In a pan, either on the stove or on a hot grill, combine the garlic salt, vinegar, juice, ketchup, honey and soy sauce over a medium high heat and bring to a simmer, stirring well, and pour into your wing Tupperware container. Bring the container and wings to the grill. Spry the grill grates well and turn it to a medium to medium high heat. Once preheated, put the wings on the grill, dry of sauce for the time being. Grill for about 5 minutes on each side with the lid down. Keep an eye on them to make sure they aren’t

burning. (They shouldn’t be, but better safe than sorry!) Once grilled on both sides, in 2-3 batches, put the wings in the container, put the lid on and shake to coat them, but don’t shake so hard the wings come apart. Put them back on the grill, turn heat down to medium, and again cook for 5 minutes per side.

Continue to babysit them – now the

sugar based sauce is on them, they can burn more easily. Once done, repeat the process one last time. Toast the sesame seeds in a sauté pan to lightly brown them and once the wings are done, put them on a platter, top with the seeds and scallions and drizzle what is left of the sauce over them. I generally find you won’t need a dipping sauce, but if you do, the usual bleu cheese is generally best.

It’s time to focus on a couple of yummy shrimp recipes. This shrimp recipe can easily be made with chicken if preferred. Both options are great, but I prefer shrimp. You will need to skewer the shrimp, so you need a larger shrimp, such as 20-24. If you want bigger, 16-20’s is great. This will easily feed a handful of you as an appetizer.

Shrimp Satay with Peanut Chutney Sauce ½ cup smooth peanut butter Just shy of ½ cup of mango chutney (store bought works great) ¼ cup fresh squeezed lime juice ¼ cup soy sauce 2 cloves garlic, chopped fine ½ tsp crushed red pepper flakes Sea salt & fresh grind black pepper 1 ½ lbs shrimp, no smaller than 20-24 in size, peeled and deveined 3 tbsp olive oil Fresh cilantro, chopped, for garnish Metal or wooden skewers. If wooden, soak for ½ hour in water Let’s start by making the sauce.

Using a blender, combine the peanut butter, chutney, lime juice, ½ of the soy sauce, the garlic, pepper flakes, about ½ tsp salt and ½ cup water. Blend until smooth and set aside. Skewer the shrimp, 4-5 to a skewer, making sure the shrimp get skewered twice each, once through the small tail area and once through the thick head area. Place the kabobs on a pan and season with salt and pepper and drizzle with the oil and remaining soy sauce. Turn the kabobs to coat both sides. On a greased grill on a medium heat, put the kabobs over the front of the grill so the excess skewer sticks off the front of the grill.

While grilling, brush on the peanut chutney sauce. Once you turn them over, repeat the brushing. These should be truly done in 5-6 minutes. Once off

the grill, I like to push all the shrimp off the skewers onto a platter and then drizzle more sauce over them. Sprinkle with the fresh cilantro and dig in boys and girls. I can almost guarantee you will make these again! If you have extra sauce, refrigerate and it will be good for 7-10 days. This sauce is great on chicken, pork and yup, shrimp.

When it comes to bacon-wrapped seafood, most people automatically go right to scallops, and I am certainly not one to argue, as they are the best appetizer known to mankind. I have catered literally well over 100 weddings in my day, not to mention other special occasions and scallops wrapped in bacon are easily the most

I’m going to start with the pork chops and go from there. This recipe is for 4 large pork loin chops and it is by far the easiest recipe of the day.

Marmalade Dijon Pork Chops 1 jar of orange marmalade, 12 oz ¼ cup fresh squeezed orange juice 3 tbsp Dijon mustard ¼ tsp each of salt and pepper 4 pork loin chops, at least 8 oz each chop In a medium bowl, combine marmalade, orange juice, and mustard and salt and pepper and mix well and set aside. Spark your grill to medium high and spray it down. Once hot, lay the chops on the grill and cook approximately 6-7 minutes. Gently flip them, lather generously with the orange sauce. After the 6-7 minutes, flip again and sauce the second side, let cook for a minute more, pull off the grill and put on a platter and top with more of the sauce, or serve on the side with the pork, or both. The sauce is phenomenal!

Every article I write contains my favorite of the day, although I don’t always announce it, but the next one is my easy winner for sure. You will need a 4-5 lb pork shoulder roast, so obviously this will feed quite a few of you and ideally leave you with some killer leftovers as it will make tremendous sandwiches down the road.

The first time I saw this recipe many years ago, I was sold just by the name

of it as sticky and sweet are both in the title, so how can you lose, right? The sweetness leaves an outstanding crispy crust on the outside when cooked on the grill. This works great as a dinner entrée or serve with a good quality onion roll or maybe ciabatta roll and you will have yourself one killer sandwich by adding some onions and cheese and extra sauce. You will find 4-5 of the ingredients in the Asian isle of your local supermarket.

Sticky Sweet Grilled Pork Shoulder 2 heads of garlic, cloves separated and peeled Fresh ginger root, about 6 inches long, peeled and chopped 1 cup Hoisin sauce ¾ cup fish sauce 2/3 cup honey 2/3 cup Shaoxing, a Chinese wine ½ cup chili oil 1/3 cup oyster sauce 1/3 cup sesame oil 4-5 lb skinless boneless pork shoulder Kosher salt ¾ cup packed light brown sugar 2 tbsp light molasses In a food processor, purée the garlic, ginger, hoisin sauce, fish sauce, honey, wine, chili oil, oyster sauce, and sesame oil until very smooth. Place 1 1/2 cups in a small bowl for glaze; cover and chill until ready to use. Pour the remaining marinade into a 2-gal Ziploc bag. Place pork shoulder, fat side down, on a cutting board with a short end facing you. Holding a long, sharp knife about 1 to 1 1/2 inches above your cutting board, make a shallow cut along the entire length of a long side of shoulder. Continue cutting deeper into

meat, lifting and unfurling with your free hand, until it lies flat as it’s better to end up with 2–3 even pieces than 1 uneven big piece. Add to bag with marinade and seal, pressing out air.

Work pork around inside bag to coat with marinade. Chill at least 8 hours and up to 1 day. Preheat your grill to a medium heat on one side and low on the other. Remove pork from marinade, letting excess drip off. Lightly season all over with salt. Drop the pork on the lower heated side, close the lid and roast pork for 12-17 minutes, checking on it from time to time. Flip it over, still on the low heat side, and cook until an instant-read thermometer inserted into the thickest part registers 140–145 degrees.

Transfer to a cutting board and let rest at least 20 minutes. Bring brown sugar, molasses, and reserved marinade to a simmer in a large saucepan; cook until reduced by one-third, 6-8 minutes. It should leave you with about 1 1/3 cups.

Keep warm.

Put the pork back on the grill, this time on the high heat, basting with the sauce and turning every 2-3 minutes or so, until thickly coated with glaze, lightly charred in spots, and warmed throughout but be careful not to overcook, 6–10 minutes should be about right. Transfer back to a cutting board; slice against the grain ¼-inch thick and you will have yourself some of the most delicious pork you have ever sunk your teeth into.

I have one more fun recipe to share before we part and this is a fun chicken sandwich dish. I love pita pockets and this recipe is for grilled chicken kabobs

with zucchini and red onion with a fun marinade. This is for 4 people.

Grilled Chicken Kabobs in a Pita 1 cup olive oil, separated 3 tbsp red wine vinegar 1 tbsp dried oregano Kosher salt and fresh grind black pepper 1+ lbs of boneless skinless chicken breasts cut into 1 inch cubes 2 large zucchinis, cut into half moons 1 cup red onion, cut into 1 inch chunks 4 pita pockets ¾ cup crumbled feta ¼ cup torn fresh dill Metal or wooden skewers (If wooden, soak in water for at least 30 minutes.)

Heat the grill to medium. Make the marinade in a large bowl, whisking together 3/4 of the cup of olive oil, vinegar and oregano and season with salt and pepper. Whisk together and reserve half to use later. Add the diced chicken to half of the marinade and toss until combined and refrigerate for 4 hours.

Skewer the chicken with zucchini and red onion. Drizzle skewers with remaining 1/4 cup olive oil and season with salt and pepper. Grill on medium heat until charred and cooked through, 5 minutes per side. Transfer to a serving platter. Grill the pitas for 20-30 seconds on each side. Push the skewer ingredients into the pita and top with feta, dill and reserved marinade.

Honoring Ice Cream

By Thomas P. Caldwell Wherever you are in Central New Hampshire, ice cream and cheeses from the Sandwich Creamery are not far away. The dairy products are easily available at EM Heath in Center Harbor, Squam Lake Marketplace in Holderness, Farm To Table in Ossipee, and Picnic Rock Farm in Meredith, with other places also soon to be offering the homemade delicacies.

For a real treat, though, make the journey to the source: The Sandwich Creamery at 130 Hannah Road in North Sandwich.

To say it is off the beaten path is not an exaggeration: From downtown Center Harbor, it is a 14-mile trip along country roads that pass through both Center Sandwich and North Sandwich before becoming really remote, along Upper Road, Maple Ridge Road, Wing Road, and Hannah Road.

The best part is still to come: the twisting dirt road leading to the farm, marked with a series of Burma Shavetype signs: Slow Down - Going Too Fast - Got To Make The - Journey Last.

Going too fast on that road is not an option, making the sign warning of a speed bump somewhat humorous.

For Emily Dickson of Meredith, it is the perfect place to go on a sunny afternoon. After hearing about the Sandwich Creamery from friends who live in the town, she began riding her motorcycle to the farm and sitting out in the garden to enjoy an ice cream.

“It’s a nice drive to get here,” she

said, referring to the beautiful scenery along the route.

It is a great destination for a get-away, with an expansive garden area with lawn swing, picnic tables, and plants.

At times, there are farm animals to see, and those who are really lucky have a chance to watch the ice cream-making process through a window.

Of course, the best part is being able to choose from a broad selection of ice cream flavors, as well as several cheeses. There are the usual flavors of vanilla, chocolate, strawberry, black raspberry, and coffee, but also Almond Joy, blackberry sorbet, blueberry, Chocorua O’Range, cow tracks, ginger, grape nut, and cookie dough.

“Definitely peppermint stick,” said Nathaniel, a shopper from Waterville Valley who has been coming to Sandwich Creamery since he was a toddler and says that is his favorite flavor.

“They opened in 1995, and my dad started coming that same year,” he said. “There were always animals outside and we’d take out our ice cream and eat it with the cows, which is all a two-year-old could ask for.”

A quarter of a century later, Nathaniel still makes trips to fill a cooler in the back of his car with all the ice cream it can hold. “It’s the best ice cream in the state,” he said definitively.

In addition to the peaceful country setting, people appreciate the trust

shown by owners Tom and Lisa Merriman. The store operates on the honor system, with a sign saying, “We accept only cash or check. Please place in slot and collect change if needed.” The slot lies behind a hinged door, with a bucket for change beneath it.

“People like the honor system,” Tom said. “People like being trusted.”

Beginnings Tom said he went to England and took a course in cheese making, after which he worked in the Scottish Highlands.

When he came back to Sandwich, he started making his own cheese, which he planned to produce and sell. He opened the Sandwich Creamery in 1995. Once he got the operation to the level where he felt the cheese was good enough to sell in stores, he began seeking out places beyond the farm where it would be convenient for people to purchase it.

He and Lisa built the business on word-of-mouth advertising, putting their cheeses out at farm stands and farmers’ markets.

Brie, Boursin, Caerphilly, and Coulommier are among the types of cheeses one finds at the Sandwich Creamery, as well as aged cheddar and cheeses flavored with horseradish or garlic.

Asked about his personal favorite, Tom recommended his Brie cheese.

NH State Parks License Plate Program reaches a new milestone In 2010, HB 1620 was passed and signed into law establishing a special registration plate to benefit visitors and the New Hampshire State Park System.

The “park plate”, sporting the NH State Division of Parks and Recreation logo, reached total revenues of $1 million on April 30, 2021 with over 14,000 license plates in circulation.

The proceeds from the park plates have provided additional revenue to operate and improve the 93 parks in the NH state parks system and is a popular item with many NH State Park supporters.

“We have been overwhelmed by the success of the Parks License Plate program,” said Philip Bryce, director NH State Division of Parks and Recreation.

“We are the only parks system in the nation that is operationally self-funded.

Programs like the parks plate offer our visitors a great way to explore our parks and support the park system.”

The State Park License Plate Program has seen continued growth since inception in 2010, topping 10,000 plates in May 2019 and has continued to grow in popularity during the COVID-19 pandemic.

The holder of a NH State Parks license plate receives free admission for the registered vehicle and its passengers to 26 day-use parks. The list of NH State Park’s day-use parks that accept the park plates can be found at www. nhstateparks.org/planning/scheduleand-fees/license-plate.

The annual fee for the NH State Parks license plate is $85 in addition to normal registration fees. Of the $85, $5 is retained by the Department of Safety to produce the plate and $80 goes to the NH Department of Natural and Cultural Resources to support NH State Parks. The NH State Parks license plate is available at the Division of Motor Vehicles and its sub-stations.

Town Clerk offices also have the plate available for purchase by state residents.

The Park License Plates does not include parking meters along state park seacoast beaches, camping, Historic Sites, Cannon Mountain Aerial Tramway and Flume Gorge. NH state parks also offers a variety of season passes at www. nhstateparks.org/planning/scheduleand-fees/passes-promotions.

Despite the farm’s remote location, they still get plenty of visitors, at least when the weather is good. “The weather’s the big thing,” Tom said. “We get a lot of people here when the sun is shining, but when it’s cold and rainy, not so much.”

He added, “We try to get people to the other locations [where Sandwich Creamery products are sold], because it’s tricky getting here, particularly in the winter. People should just check in their area to see who’s carrying our ice cream and cheese. It’s good to buy in your community.”

That may be so, but those who make the trip to Hannah Road and the Sandwich Creamery seem to love visiting there, stocking up on the products or simply enjoying an ice cream in the garden.

NH Outside with Emma How Do I Repair My Lawn and Bring It Back to Life?

By Emma Erler Healthy lawns are able to withstand quite a bit of abuse. They can outcompete the majority of weeds and tolerate a fair amount of insect feeding, disease and drought without significant injury. Maintaining a healthy lawn is far from easy though. The drought in the summer of 2020 was particularly hard on lawns without irrigation, leading to decline and dieback on many properties. Here is what you need to know if your lawn is not meeting your aesthetic standards.

Which grass should you grow?

While there are hundreds of grass species, only those that are classified as cool season grasses are appropriate for New Hampshire lawns. Cool season grasses grow best in the spring and fall and grow slowly or go dormant during the heat of the summer. The top choices for lawns are Kentucky bluegrass, perennial ryegrass, tall fescue and fine fescue. Each of these grasses has its strong points and shortcomings, and the scales will tip in their favor depending on the growing conditions of your lawn. Grasses are often combined in mixes to make the turf more tolerant of a variety of environmental situations.

Kentucky bluegrass is considered by many to be the best of the turf grasses for its deep green, fine-textured blades and dense, spreading growth habit.

Kentucky bluegrass is the species lawn owners most prize when they want

to be the envy of the neighborhood.

Kentucky bluegrass is best suited to lawns with loamy soils, full sun exposure, and caretakers who are willing to commit to a large amount of maintenance in the form of fertilizing and watering. It does not hold up to drought as well as other species and requires irrigation during hot, dry spells to keep it from going completely dormant.

Perennial ryegrass is another favorite for New Hampshire lawns, with medium-textured blades and a spreading growth habit. It is usually mixed with other species because it has high wear tolerance and germinates rapidly. It will typically cover the soil and become established rapidly, while Kentucky bluegrass or fine fescues take a while longer to get going.

Tall fescue is a cool season grass that started off as a weed, and is still considered such by some. Tall fescue leaf blades are coarser than other species, and they have more of a bunching growth habit. However, the species is extremely tough and easily the most heat and drought tolerant of the cool season turf grasses. It also grows remarkably well in compacted soils, can stand up to a lot of foot traffic, and requires less nitrogen. Those in the southern part of the state looking to grow a more resilient and ecologically friendly lawn should keep tall fescue on their list.

Fine fescues have the finest textured leaf blades of any of the cool season grasses. They are the most shade tolerant too, and will hold up well to heat, cold and drought. Fine fescues do not need a lot of feeding and will grow just fine in well-drained, infertile, relatively acidic soils. They can be grown on their own or as part of a mix.

Fine fescues germinate much faster than Kentucky bluegrass and can be used to cover the soil while the latter is becoming established.

Buying Seed “You get what you pay for” applies when purchasing grass seed.

Fortunately, grass seed packaging is required by law to list exactly what is contained within. There may be one or more species with several varieties of each. For example, ‘Mystic’ and ‘Adelphi’ are two varieties of Kentucky

bluegrass. You will also see purity listed, which is the percent by weight of each seed component, as well as the germination percentage and the date it was tested. Germination declines significantly as seed ages, so it is very important to purchase the freshest seed of the highest purity and germination rate possible. You’ll also want the lowest possible values of crop seed content, weed seed, noxious weeds, and inert matter.

When shopping for seed, you should also remember what the growing conditions are like in your yard (shade, drought, wet soils, etc.) and which grass species are most likely to thrive in those conditions. For example, a typical mix for an average sunny lawn might contain Kentucky bluegrass with lesser amounts of perennial ryegrass and fine fescue. For a shady spot, a good mix may include a majority of fine fescue or shade tolerant Kentucky bluegrass with a remainder of perennial ryegrass. For a sunny, drought-prone low-maintenance lawn, look for a fine fescue-heavy blend with smaller portions of perennial ryegrass and Kentucky blue grass. Those in the warmer southern parts of the state may also try a 100% tall fescue lawn.

When to Sow Successfully sowing cool season grasses is all about soil temperature and climatic conditions. Cool season grasses tend to germinate best when the soil temperature is between 60 and 80°F and there is abundant rainfall.

These conditions occur in the spring and fall in New Hampshire. However, fall seeding tends to produce better results. Grasses that are sown in the spring (late April through May) will have to face summer heat and drought before they are fully established.

Young, short roots often aren’t up to the task without consistent and frequent irrigation. Additionally, competition with weeds in the spring and summer can be intense. Annual weed seeds tend to be most viable in the spring and are programmed to germinate towards • Outside continued on page 25

Many annual weeds, such as crabgrass, thrive in hot weather.

Renovating and overseeding a lawn tends to work much better after the heat breaks in August and September.

Weed seeds do not germinate as readily then, and grass seeds do well in cool fall weather. A young lawn should be able to survive the winter without issue as long as the plants are at least six to eight weeks old before the first hard frost.

Lawn Renovation Steps 1.

Regardless of whether you are starting a new lawn from scratch or renovating and repairing an old one, you will need to analyze the site and prepare the soil. If your lawn is thin and patchy with weed issues, there is probably a limiting soil factor that needs to be corrected. Examples may include: poor or excessive drainage, soil compaction, acidic soil pH, or nutrient deficiencies. A good place to start is with a soil test, which will tell you the soil pH, availability of selected nutrients, organic matter content and lead level, and give you recommendations on how much lime and fertilizer to add.

2.

Controlling weeds in the lawn is essential. Most broadleaf weeds and crabgrass can be selectively controlled using a commonly available herbicide.

However, it is not safe to reseed immediately after an herbicide has been used unless otherwise indicated by the product label. Pre-emergent herbicides and “weed and feed” products should not be used prior to seeding because they can suppress or kill grass seedlings too. Always read and follow label instructions when using herbicides, making sure the product is labeled for the weeds you need to control and observing how long you need to wait before seeding.

The next step is to correct the

limiting factors that are inhibiting grass growth. This could mean grading the lawn area to reduce the slope or fill in low areas, aerating the soil, adjusting the pH, or reducing the amount of shade on the lawn. Many lawns in New Hampshire have excessively well-drained soils and would benefit from the incorporation of a two-inch layer of compost or a three-inch layer of rich topsoil. If you are renovating an old lawn, you may need to remove the existing turf or till it under in order to incorporate compost, lime and other amendments. After tilling, rake the area to be seeded until it is smooth, and remove rocks or vegetative matter. It can be helpful to finish by rolling the soil with a lawn roller to provide a firmer base on which to work and sow seeds.

If you don’t need to start from scratch, mow the lawn as low as possible and rake away debris. If an excessive thatch layer has developed (greater than a third of an inch), remove it with a dethatcher or dethatching rake. Grass seed needs to have direct contact with the soil in order to germinate and grow properly. Using a rake or dethatcher will loosen the upper quarter inch of soil and prepare it for planting.

5.

Fertilize and lime as indicated by the results of a soil test. If you do not have soil test results, put down approximately one pound per 1000 square feet of nitrogen, phosphorus and potassium each. Be aware that the majority of soils in New Hampshire are already high in phosphorus, so adding this nutrient may be unnecessary and polluting.

6.

Seed the area uniformly by applying seed in two directions perpendicular to each other. Depending on the size of the lawn area, you can spread the seed with a seeder or by hand. The ideal seeding rate will vary based on the species or mix you are sowing, though the majority will fall in the range of three to six pounds per 1000 square feet. Enough seed should

be applied that there are 15 to 25 seeds per square inch of soil.

7.

Rake the area lightly to cover the seed with soil. Pressing the seed into the soil is also helpful by going over it with a lawn roller or lightly tamping it down with the back of a rake. Finish by mulching the area lightly with a layer of weed-free straw to conserve soil moisture and prevent rain or irrigation from washing away the seed.

Post-planting care A newly seeded lawn area needs to be watered lightly and frequently.

Ideally, the seedbed should be kept consistently moist from germination to establishment, which may require running a sprinkler over the area two to three times a day. How long it takes for grasses to become established depends on the species, but you should assume that it will likely take at least three to four weeks. After this time, you can cut the watering frequency significantly, but water deeper, to a depth of four to six inches. By the time the lawn is established, you should

only be watering a couple times a week. Perennial ryegrass is the fastest to establish, and Kentucky bluegrass is the slowest. If you only partially renovated an old lawn or overseeded the entire area, continue to mow the existing grass while the new grass is becoming established. A new lawn area is ready for mowing once it is about three inches tall. Cut with a sharp mower blade to avoid stressing grass, and remove no more than one-third of the blades at one time.

Yester year Kids Take to the Woods: Lakes Region Summer Camps

By Kathi Caldwell Hopper There was a time when city kids rarely ran in the woods, swam in a cool lake, climbed a mountain or sang around a campfire. Transportation to the country was difficult, and many city children spent their summers far away from the clean air and beauty of the woods and rural areas.

All that changed when a new idea sprang up around the Lakes Region and at other wooded settings. Summer camps brought children of all backgrounds to spend a week or longer at rustic retreats where playing games, doing theatrical productions and generally learning about the great outdoors was on the schedule.

The YMCA summer camps have a long history and their programs originated in the late 1800s. Locally, YMCA Camp Belknap, located in Tuftonboro, started in 1903. At that time, roads to the Lakes Region were rough, and when kids arrived for the YMCA camp, they were there to stay for a while.

The aim of the YMCA Camp Belknap was to “make good boys better”. In its literature, Camp Belknap espoused its motto of “God first, the other fellow second, and myself last”.

Nearby, William Lawrence Camp sprang up a few years later in 1913. The

boy’s camp has the distinction of being one of the oldest camps in the United States. Like many camps of the era, William Lawrence Camp was born from a religious affiliation. The Episcopal Church in Massachusetts had a wellrespected Bishop, William Lawrence.

The Bishop believed in camping and good health for youngsters. When the camp was founded in Tuftonboro, it was named after the inspirational Bishop, according to information at wlcamp.org.

Early photos show tents and the 1933 camp Hospital Cottage, which was on a platform tent. The quaint clinic probably provided bandages for mishaps such as scraped knees and lotion for poison ivy.

City girls were also provided for when Laura Mattoon started Camp Kehonka, in 1902 in Wolfeboro. For many years Kehonka was a complete summer camping experience for girls age 7 - 17.

The first site for Kehonka was at Point Breeze in the Wolfeboro area. Mattoon rented space and offered a summer camp experience for six to eight girls.

The camp later was moved to Beaver Brook where eight girls and Mattoon spent the summer.

At Kehonka, the artistically inclined were as at home as the sports minded youngsters. Campers were there for a number of weeks; and they stayed in

Kehonka (which means “call of the Canada goose”) closed some years later, according to history of the camp at kehonka.wordpress.com.

Social workers, clergy and doctors were deeply concerned about getting city children into the country for enriching summer experiences in the great outdoors. The “nature study movement” as some called it had an early advocate in Ernest Berkeley Balch, who opened Camp Chocorua on Chocorua Island in 1881.

Balch was from an influential Episcopal family who owned property in the Squam Lake/Holderness area.

It seemed the perfect area to start a summer camp that would bring boys into the natural world. As well as swimming, tennis, boating, camping trips and dramatics, the boys spent a portion of each day cleaning the tents and washing clothes.

The first summer of Camp Chocorua (1881) saw only six campers. Although it never had a large enrollment, the camp ran for nine years with Balch and his sister Emily in charge. Many look upon Camp Chocorua as the model for all other camps that came after.

Other Lakes Region summer camps soon followed, including Camp Algonquin (which taught grammar and other scholastic studies); Camp Asquam, which also stressed academics; the Groton School Camp, founded in 1893, and Camp Hale, begun in 1901.

Elsewhere in the Lakes Region, Camp Passaconaway (for boys) began on Lake Winnipesaukee’s Bear Island in 1911.

Passaconaway was founded by Wallace E. Richmond and Alfred W. Dickinson, and offered many activities including swimming, canoeing, hiking, baseball and other sports. The camp had a main lodge, dining hall and other buildings. Campers quarters were simple wooden floors with roofs. When it rained, canvas sides could be lowered; this style of lodging was later replaced with cabins.

Eighty boys were attending Passaconaway by 1918, and that presented certain logistical problems because the camp was without electricity at that time. According to “Bear Island Reflections” by the Bear Island Conservation Association, the owners of the camp solved the problem of food to accommodate the group by purchasing a small farm on Meredith Neck where fresh vegetables and milk were plentiful.

Other Lake Winnipesaukee camps

enjoyed a sporting rivalry with Passaconaway in those days. Baseball teams from Camp Idlewild on Guernsey Island, Camp Tecumseh on Moultonboro Neck and The Hill School Camp in Wolfeboro all competed with Passaconaway.

Passaconaway was damaged by the Hurricane of 1938 and forced to close.

In 1948 Colonel William Ellis bought the defunct camp and had big plans.

Unfortunately, his business venture failed. Two years later it was bought by a Mr. Carlson, who made the camp co-ed and renamed it Camp Seneca.

In 1952, a Laconia woman bought the camp and renamed it Nokomis. She ran it until 1962, when it was purchased by the Lawrence, Massachusetts YMCA. Newfound Lake, although smaller, nevertheless had a number of early summer camps, and many are still in existence. The first was Camp Pasquaney in Hebron, founded in 1895

by Edward Wilson of New York. He wrote of his camp, “Special attention will be given to physical development and the individual needs of each boy will be carefully studied, while the finest opportunities are offered for baseball, tennis, fishing and swimming...”

Also on Newfound, Camp Redcroft (for girls) opened in 1900. In 1911, its name changed to Camp Onaway.

In 1903, Mowglis Camp for Boys opened and was a companion camp to Onaway, being located just up the road. Mowglis was begun by Elizabeth Ford Holt, who purchased a farm on the shores of Newfound Lake. She was camp director from 1903 - 1924 and is remembered by those who knew her as “quietly dominant in bearing and character.” While always dressing simply and wearing a straw hat, she commanded respect from the boys under her care each summer. Early on, she obtained permission from author Rudyard Kipling to borrow the names of his Jungle Books, and named Mowglis buildings Toomai, Baloo and Akela, among others. Kipling corresponded with Mrs. Holt and maintained an active interest in Mowglis.

Today many summer camps offering art, sports, drama and outdoor skills thrive in the Lakes Region. Children come from all over the world to enjoy swimming, hiking, playing ball and embracing life in the great outdoors.

Wolfeboro to Hold 4th of July Parade On Wednesday, May 5, 2021, the Wolfeboro Selectmen unanimously voted to give American Legion Post 18 a parade permit for the annual 4th of July Parade contingent on meeting certain health protocols outlined below. The public is encouraged to be vaccinated and to wear masks as well as to socially distance as best as possible.

Since this year the 4th of July falls

on a Sunday, the Wolfeboro parade will start at 1 pm. It will follow its traditional route with floats forming at Lake View Terrace and then marching down Main Street to Clark Road.

Trophies for first, second and third place floats will be awarded at 4 pm at the Wolfeboro Town Hall.

Main Street will be closed to traffic and parking starting at noon. For the safety of the parade and spectators,

Wolfeboro Police Chief Dean Rondeau, in his police vehicle, will lead the parade. A police car will also be the trail vehicle. The Wolfeboro Fire-Rescue Department will have emergency medical stations along the parade route as well as a gator available to move anyone requiring medical transportation.

The public is encouraged to come early. Parking will be available at Town of Wolfeboro’s Municipal lots located on Glendon Street and Lehner Street, and the Kingswood Art Center parking lot. Molly the Trolley will be providing transportation to anyone wanting transportation from the Kingswood Art Center parking lot to downtown Wolfeboro.

The theme of this year’s 4th of July Parade is “Strength through Adversity!” Due to time constraints and the desire to minimize crowding, the parade will be limited in size to the first 50 applicants. Applications will be available at the Chamber of Commerce and the Wolfeboro Town Hall. Parade admission fee of $25.00 must be included with application.

Checks should be made out to American Legion Post 18 and should be mailed to Harold Chamberlin at 820 Center Street, Wolfeboro, NH 03894.

With concern for the health of the greater Wolfeboro Community and visiting spectators, the Wolfeboro Selectmen will finalize approval for the 4th of July Parade on June 18, 2021 provided the following criteria is met: • First, 70% of the population of New Hampshire and other New England states will have received at least one vaccination against the coronavirus.

• Second, for at least two weeks prior to June 18, 2021 there be a decrease in the coronavirus infection rate for New Hampshire.

• Third, for at least two weeks prior to June 18, 2021 there be a decrease in the hospitalization rate due to the coronavirus.

• Finally, there not be a substantial threat from any new variant of the Covid-19 virus.

Hope Ministries Opens Shed to Collect Clothing Cleaning out your closets? Now you can bring your good used clothing donations to Hope Ministries at the First United Methodist Church at 18 Wesley Way (off Rt. 11A near the Rts. 3/11 bypass) in Gilford.

Hope Ministries is partnering with St. Pauly Textile Inc. to provide a wood-frame clothing drop-off shed for community use. This shed is designed to give community members a uniquely clean, convenient, and well-cared-for option to donate their used clothing.

St. Pauly Textile Inc. partners with a network of businesses and various organizations to distribute donated items both here in the U.S. and worldwide, where they are ultimately re-worn by people who need them.

A “Modified” Hebron Fair This Summer With the uncertainty of the pandemic, the Hebron Fair Committee has decided rather than cancel again this year, to move ahead with a “modified” fair on Saturday, July 31. This means the fair will primarily feature a slightly smaller number of vendors and nonprofit organizations to accommodate social distancing guidelines.

Many of the usual church-related booths, such as the white elephant, rummage, auction, books, lunch, food and plants, will not be included at the July event. However, the committee is planning to still have some church-run tents during the July fair, including the Hebron Fair commemorative t-shirts; a “modified midway” featuring the “dunking booth” and a couple of the kids’ games run according to CDC guidelines, plus a table selling drinks and snacks. This is being done to keep the fair within the state’s Covid-19 Reopening Guidance for Festivals and Fairs and to make it manageable with a limited base of volunteers.

The fair committee’s plan has been

approved by the Hebron Selectmen pending the situation with the pandemic. Everyone’s safety is the number-one priority, and a go/no-go date of June 1, 2021 has been set.

In addition, the committee is looking at sponsoring another Hebron Town Yard Sale Day on September 4, the Saturday of Labor Day weekend, similar to the one run last year. The fair committee will consider selling some of the items that would have been sold at the white elephant, rummage, auction and books tents outside on the grounds of the church. Others in the community are invited to run yard sales that day. Concerning the fair, the committee will assess the pandemic situation and safety concerns, as we get closer to the event.
