By Sarah Wright There’s a chill in the air—and I’m not talking about the temperature. Halloween is fast approaching, and the Lakes Region is about to get spooky. You might find yourself walking outside at night, startled by dry leaves rustling in the dark. There are plenty of fun and frightful events around the Lakes Region to celebrate this creepiest time of year…if you dare! Have you ever wanted to experience the Squam Lakes Natural Science Center trails at night? You’ll get your chance at the Halloween Hoot ’N Howl on Saturday, October 19. Enjoy an eerily entertaining 40-minute, guided tour along the trails, which will feature live skits with a seasonal theme. Tours will depart every 10 minutes, from 6 to 7:30 pm. Come in costume and dress for the weather. After the tour, warm up with Halloween games and tasty treats. The Squam Lakes Natural Science Center is located at 23 Science Center Road in Holderness. One of the biggest events in the state that celebrates Halloween is the Pumpkin Festival in Laconia, which will be held this year on Friday, October 18 from 4 to 8 pm, and on Saturday, October 19 from noon to 8 pm. This exciting street festival grows larger every year, thanks to many generous sponsors. Don’t miss this event with its Zombie Walk parade; pumpkin carving; over 60 food and craft vendors; live bands and performers; beer garden; outdoor expo; amusement rides, including a climbing wall and

bungee jump; pumpkin bowling and other games; a mechanical bull; and the Riverside Duck Derby. You can also sign up for the Jumpin’ Jack Car Show, or the Runaway Pumpkin 10K/5K Run/Walk. Of course, the biggest draw to the festival is the 34-foot tower of carved pumpkins. It’s an amazing sight to see, and there’s even a PumpkinEye-View Staircase that you can climb to get the perfect photo. Presented by Camp Tohkomeupog and Purity Spring Resort in East Madison, this exciting event benefits The Laura Foundation for Autism and Epilepsy. This is the 11th annual Halloween Town, which will take place on Saturday, October 26 from 3 to 8 pm. The best part of the “town” is the Trick-or-Treat Trail, over half a mile of lighted pathways winding throughout the camp. with a Wizard of Oz theme, a Dr. Seuss theme, and even a Christmas theme.) Be forewarned, the cabins will get scarier and the path will get darker as you move along the forested trail. (Kids can choose to skip a cabin if it looks too scary.) Flashlights and sturdy footwear are recommended. Other activities in Halloween Town include a bouncy house, petting farm, face painting, carnival games, storytelling, and the Dizzy Dragon amusement ride. When you get hungry, the food court will be serving up burgers, hot dogs, and chicken fingers. Carnival treats like fried onions, apple crisp, pizza, and popcorn will also be available, along with delicious baked goods. Camp Tohkomeupog is located at 2151 East Madison Road. If your idea of a fun night involves trying to solve a corn maze in the dark while people in scary costumes are chasing you, then there is a place in the Lakes Region just for you! Beans & Greens Farm in Gilford has one of the state’s most difficult corn mazes, with miles of turns, dead ends, loops, open squares, and bridges. During the day, it’s tricky,

but you can also try to find your way out on Friday and Saturday nights from 8 to 10 pm during the month of October. As Halloween approaches, the maze will become more and more terrifying. Reservations are required for this popular night maze adventure that is sure to have you screaming! The farm is located at 245 Intervale Road in Gilford, and you can reserve a spot in the night

maze by calling 603-293-2853. Molly the Trolley’s new Thursday night “haunted” tours have proven very popular thus far this October. The 90-minute evening tour combines Wolfeboro’s history with unsolved mysteries and will take place on October 24 and 31. Maude Taylor, a Wolfeboro Falls school teacher from the 1800s (portrayed by Kathy Fairman Eaton) leads the tours as the trolley travels to several locations where travelers get off and step into a piece of the town’s 260-year-old history. Spirits from the past have been known to appear as well. The Haunted History Tours start at 7 pm (guests should arrive by 6:50 pm) at the Wolfeboro Inn. (Please note, this event is appropriate for

those age 12 and up.) Tickets are $25 per person and may be purchased by calling 603-569-1080. Reservations are required. Bring your family and friends to enjoy a friendly Halloween themed stroll through the woods on the Shannon Pond Trail at Castle in the Clouds on Saturday, October 19 from 5:30 to 7:30 pm. Castle in the Clouds has teamed up with the Moultonborough Recreation Department and the Lakes Region Conservation Trust for an event not to be missed. The hike is self-guided so you can walk at your leisure and even do the trail more than once if you wish. The trail will be marked with lighted jack ’o lanterns and you should be sure to look for some not-so-scary Halloween surprises along the trail! It is recommended you bring headlamps or flashlights to help you find your way. Costumes are encouraged. Please note that this is a child and family friendly event, and the Halloween decorations and surprises will not be scary or gory. This will not be a “haunted” walk. Reservations are not required. The proposed hiking trail is easy, family friendly and less than a mile. Wear weather-appropriate clothing and footwear underneath your Halloween costume for this fun adventure. After the hike, warm up by the fire pit and enjoy hot cocoa, and goodies, compliments of Castle in the Clouds, the Moultonborough Recreation Department, and the Lakes Region Conservation Trust. an egg, use hot beeswax applied with a kistka funnel to draw on the egg over aniline dyes, and create a fun Jack-OLantern Halloween decoration. Shannon Wallis, a former elementary school art and nursery school teacher, has been writing pysanky in Vermont since 1994 when she learned the technique from another art teacher. While Shannon has no Ukrainian ancestry, she has fallen in love with pysanky as an art form. Shannon finds both the traditional and modern designs enticing, especially when they involve geometry. She has recently become a juried member of the League of NH Craftsmen in mixed media. Besides being an egg artist, Shannon is a potter and a mother of two teenagers. Students are encouraged to bring the following to the workshop: reading glasses if needed and clothes you would not mind being stained. Please bring the materials fee of $10, cash or check, payable to instructor Shannon Wallis. You can also bring water and a personal snack. Shannon will provide one egg, egg pad, kistkas, dyes, beeswax, pencils, markers, candles, paper towels, egg blower, gloves, spray gloss, leaf or gold findings, stands, handouts and a safe transportation

method for your masterpiece. Space is limited and pre-registration is required. A Basket Weaving workshop with League-juried artist, Ray Lagasse, will take place on Saturday, November 2 from 9 am to 4 pm. In this workshop, you will choose one basket design to make and you will learn the fine craft of basket making using reed and hardwood. You will be guided through the process of constructing your own beautiful and functional handmade basket from start to finish. All tools and materials needed to make your chosen basket will be supplied by the instructor. The class is open to all skill levels and no prior basket making experience is needed. For the class, you will choose one basket design from the following Group 1 choices: Garden Basket or Double Pie Basket, Medium Pack Basket, Woolgathering Basket, Laundry Basket, Herb Basket, or Stair Basket. White, courtesy Ossipee Historical Society The women stare directly into the camera, sure and serene. You cannot help but look right back at them, and it is hard to take your eyes off their gaze. Although dressed in old-fashioned clothing, one young woman has closecropped hair with curls framing her wide forehead. The other woman looks right at the viewer, with a confront-meif-you dare look. The photo was taken years ago, but it could be today if one were to change the clothing from long dresses and lace to jeans and t-shirts. There is something otherworldly and mysterious about this photograph, and it will surely leave you wanting to know more. Who are these people? Where was the picture taken? And who was the photographer? Although we cannot be sure who the women in the portrait photograph were, or exactly when the photo was taken, we do know the photographer was Ossipee-area resident Herbert E. White. According to information at the Ossipee Historical Society and Ossipee Library, White was a resident

of Moultonville, and family members owned various businesses in the vicinity; his brother George was a postmaster and operated a general store. Two other brothers, Orlando and Charles, had started a larger establishment in Center Ossipee, which benefitted from its location near the train station. Herbert was an early partner in this store, called O. L. & C.A. White’s Strictly Cash. But, unlike the purely business minded in the White family, Herbert had an interest in photography. He set up a professional studio in the back of the store and many of his customers

were local people or travelers on the railroad. This is where things get fascinating. We know Ossipee was a bustling place of industry at the time (1800s). The train carried passengers to far away places and brought other travelers into town for a brief or maybe longer stay. If the passengers were changing trains in Ossipee or had a layover they would probably have exited the train to stretch their legs and get some fresh air. And at that time, they might have seen Herbert’s photography shop. It is said Herbert advertised that travelers could get their portrait photo taken at his studio and many seem to have done so. But Herbert’s photographs were not at all typical. He had a true artistic style and an ability to capture his subjects as they were, clearly and with great style. Herbert’s photographs are art and they give us an up-close glimpse into how people dressed, posed and looked over 100 years ago. Rather than being

stiffly composed photographs, the amazing images verify that those who came before us were very human and approachable. Because some of White’s customers were just passing through the area, his photographs show all sorts of people, from young folks to the elderly, who stepped before White’s camera to have their images recorded before getting back on the train. One cannot help but be struck by how much like us these people from long ago really were. The poses were unique for the time, as was the clothing. It adds to the mystery; why was a middleaged, attractive woman dressed for her portrait in a vivid Scottish highlands outfit, plaid from head to toe? And why did a man choose to have his portrait taken dressed in a rather stained and tattered jacket and scarf instead of a pristine necktie and suit coat? He gazes off into the distance, a slight smile on his face. We wonder what was amusing him and if he was as poor as he looked? Was he an eccentric artist, or simply a local person a bit down on his luck. We can conjecture that this might have been how most country, working-class people looked and dressed and maybe these clothes were the best he had for the important photo session. Among the pictures is one of a middle-age man, strikingly handsome and looking daringly and directly into the camera. He has piercing eyes and a roughly handsome face. His is dressed in a thick turtleneck sweater and an overcoat, looking as if he stepped off the pages of “Moby Dick” as a • Yesteryear Continued on page 11

Some photos offer clues, but are still a mystery, such as a rather frightening portrait of a little girl with a tight cap in the style worn by the Shaker women. She has rimless glasses and a frail, rather sickly look about her. She wears an ornate silk dress, and a collection of china headed dolls has been placed all over her skirt and up her arms. A patterned oriental rug covers the floor and the whole affect is startling and odd. Who was she? Was she a child from a wealthy family who showered her with dolls and toys but could not find a cure for her illness? The camera that H. E. White used was a large, wooden box-style version with an expensive lens. The dry colloidal process required a long exposure time compared to modern cameras, but was a dramatic step forward compared to earlier processes, which might require people to hold a pose for one to two minutes. The photographs are from the time period of 1880 to 1920. Some of White’s subjects gaze directly into the camera, but some are looking into the distance on their left or right sides. Some are dressed in high fashion, their hair perfect and their hats ornate. Others, however, feature country people and travelers with less style. These people are perhaps traveling to

the White Mountains for a summer job as a waiter or maid at one of the area’s Grand Hotels, so popular at the time. Here and there, among the portraits, are pictures that touch on the inevitability and nearness of death. At the time White was working, it was a common practice to have a photo taken of a loved one after death. While it seems rather morbid to us, those who lived in that time period viewed death differently. They lived with sudden death due to accidents or illness on a much larger scale than we typically experience. Thus, many people were accustomed to seeing loved ones and friends “laid out” in a coffin and they saw a photo of the dead person as a way to keep something of that person. The photographs of Herbert E. White have a lot to teach us about culture and customs, but they also are true works of art. White may not have meant for the photos to be so attractive and artistic and thoroughly intriguing, but they are real gems of a time period and its people. One can speculate who these people were, but also how White managed to capture each and every person in an intimate and unique manner. ‘Cue The Grill Get Warm with Great Fall Soups By Chef Kelly Ross Today’s article sends us back to the kitchen after a summer of outdoor grilling, for it is now the official start of a classic culinary time of year known as Soup Season. We have a thick soup theme today, but more than anything, we have delicious and in most cases, easy to prepare soups. Today, we’ll work our way through the bread and butter of the thicker soups, or as my Grammy would have always said, “The ones that will stick to your ribs.” First on today’s hit list is a great twist on a chicken stew. I am a huge fan of the Southwest when it comes to cuisine, so that influence is involved in this great recipe, which is a SW Creamy Cheesy Chicken Soup. It has a nice but not overwhelming kick of the Southwest. All in all, it’s not overly spicy, but more than anything, just

a great blend of flavors. The cheese is a huge addition as there is nothing bad about cheese in almost any soup or food in general. This recipe easily feeds 8 as a meal, and many more as an appetizer. It’s a great “Go To” recipe! Southwestern Creamy Cheesy Chicken Soup 2 tbsp olive oil 1 medium red onion, diced 2 red bell peppers, diced 2 stalks celery, finely diced 1 cup chopped baby carrots 1 cup crimini mushrooms, chopped 4 cloves garlic, finely minced 2 lbs boneless skinless chicken breasts or thighs or combo, cubed 1 ½ tbsp chili powder 1 ½ tbsp ground cumin 1 tsp ground coriander ½ tsp sea salt ½ tsp fresh grind pepper One 28 oz can crushed tomatoes. In a large Dutch oven pan, heat the olive oil and sauté the onion, celery, mushrooms, peppers and garlic for 2-4 minutes until the veggies are translucent and softened. In a bowl, toss the chicken with the chili powder, cumin, coriander, salt and pepper and add to the pan. Sautee the chicken in the pan with the veggies for 5-7 minutes until the chicken is cooked. Add the tomatoes and chicken broth and bring to a boil. Lower the heat to simmer and let it go for 20 minutes or so. Remove from the heat, and stir in the cream cheese and Velveeta until well blended. Return to a simmer and stir well. Remove from the heat again, add the half and half, taste, and adjust seasonings to your taste. Put back on a low simmer for 15 minutes. Remove from the heat for the last time. Ladle the soup into the individual bowls, top with chopped tomatoes, onions, cilantro and squeeze a lime wedge over the top and dig in. Scrumptious! Next is a unique combo of Southwestern and New England autumn. I know that has your mind twisting a little, but trust me, this is pretty darn good. This is more of a slow cooker kind of chili that is really not much like any other chili you have ever tried. As I said earlier, make up a huge batch and freeze. This single batch makes about 2 ½ quarts, so plan accordingly. Prep is quick, the slow cooker will take 4+ hours, and all of it is well worth it. Pumpkin and Black Bean Chili 2 tbsp olive oil 1 medium sweet onion, diced 1 medium sweet yellow bell pepper, diced 4 cloves garlic, minced 2 cans black beans, 15 oz each, rinsed

and drained 1 can solid pack pumpkin 1 can diced tomatoes, 14 ½ oz, undrained 3 cups chicken broth, homemade or store bought 3 cups of cubed cooked turkey or chicken 2 tsp dried parsley 2 tsp chili powder 2 tsp ground cumin 2 tsp dried oregano ½ tsp salt 3 avocados, cubed 6 thinly sliced scallions In a large skillet, heat the oil over medium-high heat. Add the onions and peppers and stir until tender. Add the garlic, stir and cook for another minute or so. Transfer to a 5 quart slow cooker, stir in all but the last 2 of the ingredients and cook on a low heat for 5+ hours, stirring occasionally. Once done, taste and season accordingly if you feel that is needed. Ladle into cups or bowls, top with the avocados and scallions and dive right into this pool of yumminess. I have one more untraditional chili to share with you. I personally tried this chili first-hand about 30 years ago at a new restaurant I had just started working at as a mid 20-year-old. I have never met a chili I didn’t love, but this one was so different and so popular, it has forever stuck in my mind. It looks nothing like a chili, although it does have the classic chili flavor, but the theme and look will inspire any chili lover to jump on this like a cowboy on a horse. This is truly a wonderful recipe that has never let me down! The recipe will take about 3 ½ hours and serve 12 easily. White Bean Chicken Chili 1 ½ lbs boneless skinless chicken cut into cubes about 1 ¼ inches in size ½ tsp each of sea salt and fresh grind black pepper ¼ cup olive oil, divided 2 sweet medium onions, diced 2 jalapeno peppers, chopped fine. If

you really like the heat, use the seeds as well. 8 cloves garlic, minced 4 tsp dried oregano 2 tsp chili powder 3 tsp ground cumin 4 cans of cannelloni beans, 15 oz each, rinsed and drained and separated 5 cups chicken broth, homemade or store bought 3 cups shredded extra sharp cheddar cheese 4 avocados, diced 3 cups cherry tomatoes, quartered ¾ cup chopped fresh cilantro Toss all the diced chicken with the salt and pepper until well coated. Heat a large skillet with 2 tbsp of the oil on a medium-high heat and sauté the chicken until browned and cooked. Transfer to a 5-6 quart slow cooker. Using the skillet, add the remaining oil, sauté the onion until tender. Add the jalapenos, garlic, oregano, chili powder and cumin, continue to cook for a few minutes and add to the slow cooker. In a bowl, mash 2 cups of the beans, stir in a cup of the chicken broth. Once well incorporated, add remaining beans and chicken stock to the bowl and slowly mix to combine. Add to the slow cooker and cook covered for 4 ½ - 5 hours until all is cooked and delicious. Once you serve, top all the bowls with the shredded cheese, avocados, tomatoes and cilantro. I guarantee this bowl of

chili will be a favorite at your next gettogether. We have done justice and service to our friends in the Southwest, but now it is time to move to the New England mentality of cooking, which we all know is something special. First, let’s utilize a great butternut squash soup that will completely knock your socks off. I occasionally find a local who is not a fan of butternut squash, which completely boggles my mind. It has such a great sweet flavor and when combined with some other local flavors, it generally means you have another winner worthy of a drooling crowd. This will serve 8 and takes not even a ½ hour, but remember, things taste better when they sit for a while. Creamy Autumn Squash Soup 2 lbs butternut squash, cut and peeled and cut into ½ inch cubes ½ cup chopped sweet onions 2 tbsp olive oil 1 ½ tsp sea salt, divided ¾ tsp fresh grind pepper 1 can pureed pure pumpkin, 15 oz can 2 cups vegetable broth, homemade or store bought 1 ½ cups apple cider 1 ½ cups half and half ½ tsp ground cinnamon ¼ tsp curry powder Preheat the oven to 450 degrees. Spill the bowls’ contents onto a sheet pan of sorts making sure it is all single layer and not crowding each other. Bake for 25-30 minutes. Place the contents of the pan into a food processor until smooth. In a large sauce pan, put the contents of the food processor into the pan, add the pumpkin, vegetable broth, cider and half and half, cinnamon, curry, remaining salt and pepper and mix well. Put the pan on a burner and cook for 12-15 minutes on a low to medium heat until heated

through without boiling. Arguably, the best-selling soup in my restaurant career was a Cheesy Broccoli Soup. This one is not quite that, but very similar and includes potatoes and bacon and is done in a slow cooker that will cook all day while you are at work. Although technically this is from scratch, it does utilize a few store bought items you may not expect. This recipe is crazy popular and is a huge hit with all. No doubt with both parents working in many families, the slow cooker craze makes this one a double positive no-brainer. This will make a gallon or so soup, which will easily feed many, whether as an appetizer or as a main course, and it freezes well for great lunches at work. I know many

Loaded Broccoli and Cheese Potato Soup 2 packages refrigerated O’Brien style hash brown potatoes, 20 oz each in size 4 cloves garlic, minced 4 cups sour cream ½ cup flour 1 ½ tsp fresh grind black pepper ¼ tsp ground nutmeg 6 cups vegetable stock, homemade or store bought 2 packages frozen broccoli florets, thawed, 12 oz per bag 8 cups shredded extra sharp cheddar cheese, separated 2 lbs cooked bacon, crispy 1 cup finely chopped scallions Combine the hash browns and garlic in a 5-6 quart slow cooker. In a large bowl, mix the sour cream, flour, pepper and nutmeg until smooth. Stir in the stock and again mix well. Pour into the slow cooker and stir all the contents well. Cover and cook on a low heat for 6-8 hours or until the taters are tender. At this point, add the broccoli, 6+ cups of cheddar and the bacon and combine well. Cover and cook for an additional 20-30 minutes until the cheese has melted. Once done, serve with a pinch of additional cheese over the top as well as some of the green onions. I guarantee you will have seconds and

maybe thirds on this one. Last on today’s hearty soup hit list is a delicious Creamy Ham & Corn Soup. This is a quick and easy recipe that is outstanding in a toasted bread bowl. This will feed 8-10 people. Creamy Ham & Corn Soup 3 ½ quarts of chicken broth, homemade or store bought 4 cups frozen corn, or better, cut fresh off the cob 2 cups half and half 1 cup sweet chopped onions 1 cup chopped sweet red bell peppers 7/8 cup flour 1 cup cold water 1 tsp coarse sea salt and 1 tsp fresh grind black pepper 2 ½-3 cups diced cooked ham Combine the first 5 ingredients in a large, thick stock pot and bring to a boil. In a separate bowl, combine the flour, water, salt and pepper until smooth, making a roux. Bring the pot’s heat to medium and slowly add the roux to the pot, stirring well while doing so. Once all the roux is in, turn the heat up to a slow boil, continuing to stir well for 2-3 minutes or until it starts to thicken well. Stir in the ham, reduce the heat to a simmer, and cover for 15-20 minutes until all the veggies are tender. Taste and adjust seasonings as needed and serve and smile! Our Hometown Conway Premieres in October Although Conway is not in the Lakes Region, located instead in the Mount Washington Valley, the story of the town is interesting for anyone and will be featured on NHPBS in October. Conway and its many villages is the subject of the latest installment of Our Hometown, the New Hampshire PBS series that explores New Hampshire’s towns and cities through the stories of the people who call them home. New Hampshire author and storyteller Rebecca Rule will introduce viewers to some of the stories shared in this half-hour program which premieres on Thursday, October 24 at 8 pm on NHPBS. Pink and green, those are the colors of the granite that was quarried from the mountain in the village of Redstone. Long-time Conway resident Steve Swanson tells the story of how immigrants came to the village to work in the quarries and how the village, that began as a company town, is now a part of a rich local history. The story of the Conway Scenic Railway is told by two men, current owner David Swirk, and founder Dwight Smith. In 1968, Smith saw potential in some dilapidated buildings, old trains and unused tracks. He, along with a group of dedicated volunteers, brought the old depot and trains back to life. Swirk’s relationship with the Conway Scenic Railway began when he was a young boy on a visit to Conway. After missing the last train of the day, his parents had a creative

solution which eventually led to lifelong dream coming true. Caring, sharing and taking care of each other is a core part of the Conway story, and Our Hometown tells the stories of local organizations, like Jen’s Friends and North Country Cares, which raise money for their neighbors to fight cancer and help kids in need. Today, North Conway is known for skiing, but it wasn’t always that way. Thanks to North Conway lover and Wall Street financier Harvey Gibson and Austrian skier Hannes Schneider, North Conway has become the go-to destination for skiers everywhere. At the height of the Depression, Leon Bolduc built a 17,000 squarefoot building right on Main Street in Conway Village. It became home to his movie house as well as many other businesses, breathing life into the entire area. Today, history is repeating itself, thanks to a local organization with a vision. And finally, learn about some of the covered bridges in the area, from a family whose roots in the region stretch back to the 1700s. The stories generously shared for Our Hometown, shed light on Conway’s past and present. While it was not possible to include all 45 stories in the 30-minute program, everyone’s story will be showcased online at nhpbs. org/hometown, creating a historical archive of life in Conway. The Our Hometown series premiered in 2015 with a focus on Peterborough,

followed by shows about Colebrook, Stratham, Wolfeboro, Milford, and Littleton. The series explores the vibrant culture, commerce, history and people of New Hampshire’s towns and cities.
