business. Nancy and her family rejuvenated an old orchard in the 1970s and have been running Cardigan Mountain Orchard for over 43 years. She says a former owner planted 60 apple trees back in the 1930s and it is this orchard that her family rejuvenated, tended and added to over the years. The result is a wonderful place to visit, whether to pick your own apples or to stop by and purchase your favorite variety at the farm stand on the property. Currently, as of press time, Cardigan Mountain Orchard was offering Macintosh and Cortland

“Surely the apple is the noblest of fruits.” - Henry David Thoreau Versatile, delicious, tart or sweet, the apple, as Thoreau wrote, is indeed a noble fruit. This is the time of year when Lakes Region (and beyond) apple orchard owners invite an eager public to pick apples. Farmers and apple growers have been tending and watching their apple trees for months; now is the time to get out and visit an orchard or farm stand for pick your own or pre-picked apples of all varieties. Apples are ready for picking and families can enjoy an afternoon spent at an orchard where apple picking is fun, as well as wagon rides to the orchards, live music, cider donuts, baked goods and more. Branch and Bloom at DeVylder Farm is located at 563 Pleasant Valley Road in Wolfeboro. The farm began planting apple trees over 38 years ago, and offered are popular varieties for pick-your-own, including Macintosh, Macoun, Empires, Cortlands and Golden Delicious. The farm is open every day from 9 am to 5 pm. Call 5694110 for further information. apples for pick your own varieties and pre picked Honeycrisp and Gravenstein apples. More varieties will be offered as the season progresses. Cardigan Mountain Orchard is open through Halloween for pick your own apples in Alexandria. Call 744-2248 or visit www.cardiganmountainorchard. com. A NH favorite is Meadow Ledge Farm, located at 612 Route 129 in Loudon. The farm has over 60 varieties of apples with many acres for pick your own. Macintosh, Macouns, Ozark Gold, Cortlands, Red and Golden Delicious, Empire and many
other varieties are offered, with many varieties also for sale in the country store on premises. A fun day at Meadow Ledge Farm begins by grabbing one of the big red plastic containers for apple picking. Guests can sit at bright red picnic tables in the back area and enjoy a picnic lunch. On weekends there is live music (country, bluegrass bands, etc.). Also on weekends, wagon rides are offered to the orchards. Signs are posted throughout the orchard to let you know where your favorite apples are available for picking. Once you have your apples, be sure to stop at the country store. If you see a line of eager people waiting to place an order, you know you have arrived at the cider donut area; fresh hot cider donuts are made every weekend and are very popular with visitors. Watch while the Meadow Ledge crew makes your cider donuts right in front of you; enjoy them hot while sitting outside as you listen to the live music. The country store sells baked goods, apple pies, crafts, jams and jellies and a lot more. The orchard is open seven days a week from 9 am to 6 pm until November; after that they are open through the holiday season. Starting in January, the business is open on Saturdays with apples and other goods for sale until the spring season when hours increase once again. Call 798• Apples Continued on page 4

Stone Mountain Farm in Belmont is a high-density orchard, with a focus on growing the fruit. The trees are planted three to 11 feet apart in this method, and most of the apples can be reached without ladders. A large variety of apples are available and a list can be accessed at www.stonemtnfarm.com. There is also a farm stand with 40 apple varieties, as well as pumpkins, winter squash, gourds, corn stalks, maple syrup and more. The orchard is located at 522 Laconia Road in Belmont; call 731-2493. Stone Mountain Farm is open daily from 10 am to 6 pm. Stone Brook Hill Farm at 128 Glidden Road in Gilford is a great place to pick your own apples. The views of the mountains and hills from the orchard are breathtaking and the apples are great! The orchard is open Wednesday through Sunday from 10 am to 5 pm. Bring the family and enjoy a wagon ride to the orchards on Saturday or Sunday between 11 am and 3 pm. The orchard is producing beautiful apples, and as of late September, the Cortlands were great; other varieties also are offered through the fall season. Surowiec Farm at 53 Perley Hill Road in Sanbornton has been in the Surowiec family since 1917. There are a number of apple varieties available, including Macintosh, and Cortlands, Honey Crisp, Macouns and more.
Cider also is available, along with maple syrup, breads and other baked goods. The farm is open seven days a week from 9 am to 5 pm and can be reached at 286-4069 or online at www. surowiecfarm.com. For old-fashioned, delicious apples, head to Smith Orchard at 184 Leavitt Road in Belmont. The orchard has numerous varieties of apples, including Macintosh, Red Delicious, Cortland, Yellow Delicious, Jona Gold, Ginger Gold and MacGown. In the farm stand, apples, jams, jellies, honey and maple products and mixes such as apple crisp mix, are for sale. The orchard is open daily from 9 am to 5 pm, seven days a week. Romac is a family run and operated orchard that covers 98 acres of fi elds and fruit trees. Owner, Wil Cote, who purchased the orchard on his 18th birthday in 2017, had a vision to bring Romac back to life after it had been closed for fi ve years. Since he purchased the property in 2017, Wil has expanded the fruit trees, attractions, and overall picking experience. With pick your own apple varieties, a corn maze, cider, cider donuts, and hayrides on weekends, a visit to Romac is worth the drive to 1149 H Road in Acton, Maine. Rally ’Round the Flag: A Century of Folk Songs from the American Civil War On Tuesday, October 1 from 7 to 8 pm, The Hardtacks will perform songs, tunes, and stories from the Civil War generation as part of Wright Museum’s 2019 Lecture Series. Comprised of Marek Bennett and Woody Pringle, The Hardtacks explore events of the Civil War through song. “This lecture will trace the meanings these songs had through two World Wars to the Civil Rights movement,” said Wright Museum Executive Director Mike Culver. “It is the perfect combination of education and entertainment.” The event will feature banjos, fiddles, bones, frying pans, and other period instruments. “Bennett and Pringle were a big hit last year,” added Culver. “They encourage the audience to participate and join in the fun.” Bennett is an award-winning cartoon-

It was a time when every radio blared out music that was danceable, but sophisticated. Building Realism in Oils Because artist Acacia Rogers limits the number of students to eight for her six-week oil painting classes, and because of her reputation as an excellent artist and teacher, the Lakes Region Art Association Gallery (LRAA) is encouraging all who are interested to take Roger’s class, designed for beginners and intermediate artists, to register now. Roger’s fi rst class begins Tuesday, October 1 in the LRAA gallery class room, and every Tuesday thereafter until November from 11 am to 2 pm. As a self-taught artist, Acacia has mastered a number of techniques, refi ned her painting skills and adopted and tested academic approaches to fi ne art painting. Skills and knowledge she’ll pass on to her art students include materials and how
to choose them, choosing references, using layers to build dimension, how to transfer references to canvas, color mixing and matching colors, how to create realism, preparing the canvas, and more. Roger’s instructional techniques involve side-by-side easel time and constructive and group critiques. Taking a student’s painting skills to a new and higher level is her goal. Music Through the Ages – The Carter Mountain Brass Band The First United Methodist Church of Gilford will present The Carter Mountain Brass Band in a fall concert titled Brass Ensemble Music through the Ages on Saturday, October 5 at 7 pm. The concert will include music from a wide variety of genres and time periods: Gershwin, the Beatles, movie music, the Renaissance, Big Band, Beethoven, and others. Joining the Brass Band will be The Hallelujah Bells, the church’s hand bell choir, and Phil Breton, church organist. The Carter Mountain Brass Band is modeled after American and British brass bands of the 19th century. Brass bands became very popular in the late 19th century as mass production made instruments widely available and affordable. These bands could be found in almost any town or in factories that sponsored bands as a recreational outlet for their skilled workers. The Carter Mountain Brass Band is comprised of 30 members who play brass or percussion instruments.
Members come from all walks of life. Although skilled musicians, they are not professionals in the sense that they make their living making music; rather, they have joined together for the sheer love of playing brass music at a high level. Named for Carter Mountain in New Hampton, NH, the band refl ects the rich heritage of brass music. The suggested donation for the event is $8 and students under age 18 are free. Proceeds will benefi t the missions and ministries of the church. Known to their fans as The Wickeds, six best-selling cozy mystery authors will visit Wolfeboro on the evening of Saturday, October 5. At the event, scheduled from 4 to 7 pm at The Great Hall at Wolfeboro Town Hall, attendees will have a chance to hear from the authors, meet and mingle with them, and have books signed. Sponsored by the Friends of the Wolfeboro Library, The Country Bookseller, and Kensington Publishing, these authors of “cozy mysteries” will help raise money to purchase furniture for the library’s cozy reading nooks. Authors will include Barbara Ross (Maine Clambake Mysteries), Jessica Ellicott (Beryl and Edwina Mystery Series), Sherry Harris (Sarah Winston Garage Sale Mystery Series), Maddie Day (Country Store Mystery Series), Julia Henry (Garden Squad Mystery Series), and Liz Mugavero (Pawsitively Organic Mystery Series). Tickets are $25 each and include
admission to the event as well as wine and light refreshments. Each attendee also will receive a bag of goodies from Kensington Publishing. Kensington has also generously donated a basket of 20 advance copies of mystery books to be raffl ed at the event. Attendees can mingle with the authors from 4 to 5 pm, and author remarks are scheduled for 5 pm. After this, guests and authors can resume mingling, sipping, and snacking. What’s New at The Art Place By Sarah Wright The Lakes Region is full of beautiful scenery any time of the year. Many visitors and residents bring that natural beauty back to their homes with amazing artwork created by local artists. It’s no surprise the scenic vistas that surround us inspire artists to pick up their paintbrushes and cameras to capture a single, breathtaking moment. The Art Place in downtown Wolfeboro always has lovely artwork on display, and also takes care of custom matting and framing for their many customers. (I had a painting framed by The Art Place a few years ago, and I was delighted to see all of their various framing options.) The Art Place represents local and New England artists, and you can fi nd a sampling of the artwork currently available, as well as artist biographies on the gallery’s website
at www.theartplace.biz. One of their most popular featured artists is the very talented Peter Ferber, who unveiled his latest original paintings in a gallery show over the summer at The Art Place. On September 28, customers were delighted to watch him in action when he gave an art demonstration at the gallery. If you’re not yet familiar with Peter Ferber, his paintings are inspired by the rural New Hampshire landscape that he fi rst experienced as a child spending his summers in Wolfeboro. Simple things like the evening light sparkling across a lake, the purity of a white barn in the snow, and the patina of a weathered boathouse, warm Peter’s heart. His illustrations have appeared in national magazines as well as in books. He’s also exhibited in many shows throughout New England and the Midwest, and had more than 40 reproductions made of his work. It’s

no wonder The Art Place has sold countless prints of his pieces! Another notable artist whose work is currently on display is Christine Knight Coombs. Her awardwinning watercolors feature rural scenes of lakes, woods, people, and animals. She has also illustrated children’s books and covers for national sporting magazines and catalogs, such as Down East Books. Christine says, “In my paintings, I wish to document the beauty of the moment. Within that moment is a story. It may be a story that reminds the viewer of a well-known or forgotten feeling, or it may be a story that he or she may wish to escape. For all who experience my paintings, I hope to provide inner nourishment, renewal, and reconnection with the beauty within them and around them.” There are also beautiful watercolors on display by artist Denise Patchell Olson. She was a popular local artist, known for her paintings of countryside settings with a Martha’s Vineyard look. After she passed away, her daughter found some of her mother’s
original artwork in storage, and wanted to share it by featuring the pieces in a show at The Art Place. Much of the inspiration for Denise Patchell Olson’s paintings came from her travels throughout historic New England. They speak to both the reality and fantasy that is the American small town. Her artwork has been exhibited in over 75 shops and galleries across the United States, and purchased by international collectors. If you enjoy photography, there are some amazing photographs on display by Bob Ness. Capturing the beauty of every season, his colorful photographs will inspire you. Bob Ness traces his interest in photography back to high school, although he didn’t pursue this interest until the end of his college years when he began to capture scenes of the world around him. the shapes and lines in the photos. If you’re a fan of fall foliage (who isn’t?), you’ll want to see the photos on display by John Geery. His photographs beautifully capture the vibrant colors of the season, while also showing the softness of autumn scenery. I can easily get lost in his photos, and wish I could transport myself to those places. Originally an easterner, John returned to New England in 1984, after nine years of living out west. He was initially concerned that the east wouldn’t be as photographically inspiring as the grandiose west. He soon discovered that while totally different, the great diversity of seasons and intimacy of the eastern landscape quickly won him over. Other featured artists include Plein Air painter Madelyne Albee; Valerie Schurer Christle, who works with different media; self-proclaimed “outsider” artist Tim Campbell; traditional painter Eric Koeppel; Charlene Lehto, who paints with oil and watercolors; pen and ink artist Gene Matras; watercolorist Helene Pierce; Lauren Sansaricq, a White Mountain School of Art painter; and Corina Willette, who works with mixed media. Visitors to the gallery will also enjoy WaterMark Maps, created by Concord artist, Morgan Walton. She originally started her business with her father when she

was a senior in high school, and since then, she has created maps of over 350 locations. Some of them, like her map of Lake Winnipesaukee (which includes all 262 islands), took quite some time to create. The detail that Morgan captures with her watercolors is unmatched. ‘Cue The Grill Grilled Lamb and Duck Recipes By Chef Kelly Ross Today’s theme is one that many readers will like and that is lamb and duck. Let’s start with the quack-attack protein dinner entrée. How about the classic recipe, Grilled Peking Duck? Those who enjoy duck are generally huge fans, and when done on the grill, like most anything, it is 10fold better. As any duck lover will tell you, duck isn’t really duck without a very crispy skin, and the grill process does help this mentality in a big way. Duck does have a very high fat content, and the fi rst couple of times I grilled this, although the skin was perfectly crispy, there was an abundance of fat underneath, which wasn’t very appealing. With time and some research, I found a few tips to perfect this recipe. One of the key factors is gently working your fi ngers under the skin to separate it from the fl esh. Next, blanch the duck with hot water in order to tighten the skin and begin rendering the thick layer of fat beneath it. After blanching, pierce the duck skin all over to help drain off the fat as the duck cooks. Then you glaze the skin with a soy, vinegar, and honey mixture for fl avor and extra crispness (the honey helps with crisping). Finally, you dust the duck with a combination of baking powder and salt to help remove excess moisture while the duck air dries for several hours before roasting. This works out wonderfully. This recipe is for a whole duck, approximately 5 lbs. that feed 6 or more diners. Again, the process is time consuming. Prep is only ½ hour or so, but it needs to sit under refrigeration for 10-12 hours, and then the cooking process is usually around 2 ¼ - 2 ½ hours. However, it is well
worth it. Talk to your butcher to fi nd a whole duck in this size. Grilled Roasted Peking Duck 1 duck, about 5 lbs ¼ cup soy sauce 2 tbsp rice wine vinegar 1 tbsp honey 2 ½ tsp coarse sea salt 1 ½ tsp baking powder Hoisin sauce, found in the Asian international aisle of any supermarket 6 scallions, thinly sliced Remove the giblets and neck from the duck’s cavity. Starting at the cavity, gently work your fi ngers under the skin to separate from the fl esh. While doing so, get a large pot of water to a boil. Put a rack in the sink for the duck to lie on. Ladle the hot water over the duck. This will tighten the skin and help much of the fat escape. Flip the bird and continue the process until the whole duck has been done. With a sharp paring knife, prick the skin all over, which will again help much of the fat escape during the cooking process. Combine the soy sauce, vinegar, honey in a bowl and microwave for about 20 seconds to help liquefy the honey. Stir the ingredients well and brush the entire mixture over the whole duck. Combine the salt and baking powder well and sprinkle the mixture all over the duck. Refrigerate the duck, uncovered on an elevated rack for 6 hours minimum and up to overnight. The salt/baking powder mixture, as well as being uncovered, helps the skin to air dry, which will help in a huge way during the cooking process. I also love to serve these with mandarin or scallion pancakes which I generally purchase at any local Chinese restaurant. Wrap them in paper towels, a few at a time and microwave for 20-30 seconds per pack and serve. This meal will be an unforgettable one for sure. So, from one extreme to another, from a time intensive whole duck recipe,
now we go to a grilled duck breast recipe that goes together extremely quickly as the whole process takes maybe 40 minutes. It has a nice little spicy bite to it, but wow, the blackberry sauce that accompanies this duck breast is phenomenal. When shopping for duck breasts, again, you are best going to your butcher. True, you can sometimes find them in your butcher case, but I love getting them right from the butcher, not to mention he/ she may need to order them depending on the size of the duck breasts in the case. breasts, so yes, this recipe feeds 6. Grilled Spiced Duck Breast with a Blackberry Sauce ½ cup balsamic vinegar ¾ quart fresh blackberries Sea salt & fresh grind black pepper 6 skin-on Peking duck breasts, 6 oz each ½ tbsp chili powder ¾ tsp ground coriander ½ tsp ground cumin ½ tsp dry mustard powder Let’s go with the sauce, which if preferred, can be done the night before. In a sauce pan, boil the vinegar over a high heat until it has reduced in half, about 4-5 minutes. Add the blackberries and cook, stirring gently until they have just started to soften, about 2 minutes. With a slotted spoon, ladle the berries out of the pan and put into a bowl. Continue to boil the liquid until it has reduced to about 1/3 of a cup. Carefully pour the excess liquid from the bowl of berries into the pan and boil for maybe 30 more seconds. Turn off the heat, season with salt and pepper and pour over the softened berries. Light a well-greased grill to a medium high heat. Using a sharp paring knife, score the skin of the breasts with crisscross patterns. In a small bowl, combine well the chili powder, coriander, cumin and dry mustard. Season the breasts with salt and pepper, and then rub the seasoning mix well into both sides of the breasts. Grill them skin side down to start with, about 3-4 minutes until the skin is lightly charred and crispy. Turn them over and cook for another 4-5 minutes until the breasts are a perfect medium rare. Get them off the grill, let rest for 5 minutes, and slice thinly on a diagonal and transfer to individual plates and top with the blackberry sauce. If you enjoy duck breasts, you are guaranteed to love this recipe. If you want to make the sauce a day prior, let it sit at room temp for 4-5 hours prior. It doesn’t have to be hot, but it shouldn’t be cold either. Time to move on to our curly fuzzy furred barnyard characters. Duck is generally found in 2-3 forms when cooking; whole, in half form or just the breast, similar to chicken. Lamb is also done generally in a few ways: lamb chops, leg of lamb, bone in, and leg of lamb, boneless and butterflied, and maybe most often as a loin of lamb.
I’ll share a few recipes using some of this mentality. One thing I have never understood with the lamb lovers is their fascination with mint jelly. To me this is like serving pork with apple jelly or a steak with ketchup. Be creative, have some imagination! I love the flavor of fresh mint when I use it, but not in jelly form. Utilize fresh mint in any situation instead of the jelly. Mint makes great homemade sauces, or it’s great as is served right on top of the lamb. However, there are dozens of other options for flavoring lamb, as we will get to. First on the lamb hit list is something simple and quick and delicious to all the lovers out there. These lamb chops take all of 10 minutes to prep and maybe 20 to cook, so put those taste buds on hold just a short while for this yummy dish to be ready. Garlic and rosemary are the key ingredients among others in this dish and lamb chops are generally very easy to find in your local butcher case at most supermarkets, or as I say often, just talk to your butcher to specifically order what you need. One thing to keep in mind as pretty much any lamb lover knows is that lamb chops are fairly small, especially in comparison to other chops, but considering how small lambs are compared to pigs and cows, it all makes sense. Most lamb chops weigh in at 3-4 oz per chop, so you want 8 chops to feed 4 people. Garlic Lamb Chops ¼ cup fresh rosemary, chopped 6 cloves garlic, minced Sea salt & fresh grind pepper 2+ lbs lamb chops, 8 total, trimmed of fat 3 tbsp olive oil In a small bowl, combine the rosemary, garlic and salt and pepper. Add the olive oil and make sure it is well blended. Pour the mixture onto a large plate. Press each lamb chop, on both sides, into the mixture and set on another plate. Oil your grill and heat to medium high. Lay the chops onto the grill and cook for about 4 minutes on each side, brushing additional spiced oil if there is any left on the plate. Cook to the desired temp, but most prefer medium rare-medium. The lamb chops do not need mint jelly, trust me! However, this one, although simple, is a great recipe to share and one that most don’t know or utilize. The ingredients are simple in spite of the fact it is one not normally seen in the run of the mill backyard party, but if you have lamb lovers in your family, this is a great way to prepare lamb without taking hours. This recipe makes 8 skewers, and will feed 4-8 depending on side dishes and appetites. This has a great Mediterranean fl are to it, where lamb is a huge staple. Mediterranean Lamb Kabobs 2 lbs boneless leg of lamb, cut into 1 inch pieces, trimmed of fat ¾ cup olive oil 4 tsp lemon zest 1 tsp ground coriander ½ tsp ground cinnamon 3 cloves garlic, minced Sea salt & fresh grind black pepper 2 pints grape tomatoes 32 fresh mint leaves 1+ cup crumbled feta cheese 8 lemon wedges 8 skewers, if wooden, soak for at least an hour Time for basic kabob skewering, but fi rst let’s do a quick marinade for the lamb. Combine the oil, lemon zest, coriander, cinnamon, garlic, and salt and pepper very well. Pop in the lamb chunks and lightly stir them to combine. Refrigerate for 2 hours or so. When skewering, make sure the kabobs have lamb on each end to help keep things from sliding off. Skewer the lamb, tomatoes and mint leaves using 4 leafs per kabob. Once fi nished, let them sit on a sheet pan for 15-20 minutes at room temp. Grease the grill and heat to medium high. Pop onto the grill and cover for 3-4 minutes. Turn them over and cook for another 2-3 minutes until the lamb is almost

medium rare. Put the kabobs back on the sheet pan squished together as best as possible, turn the grill to low, put the pan on the grill and top the kabobs with the feta cheese. Close the lid to help somewhat melt the feta. Once done, plate them up and serve with the lemon wedges and dig in and enjoy. Let’s end today’s column with a great leg of lamb recipe that is truly outstanding. Maybe a little more labor intensive than the last couple, but in the big scheme of things, still pretty easy, and wicked easy to carve. This is a butterfl ied leg of lamb, which is really easy to fi nd. If for some reason you can only fi nd a bone-in leg, ask your butcher to do what he has to do. What makes the butterfl ied leg so ideal to grill is it is very uniformed in thickness, so it should all cook to the same temp, unless you have a couple of crazy hot spots on the grill, which is somewhat common. This recipe will easily feed 8 and is perfect for a special event family dinner, unless of course the family has some lamb hater’s. This needs to marinate for hours, but the cooking process is quick and harmless. Marinated Leg of Lamb 1 ½ cups olive oil ¼ cup fresh squeezed lemon juice 6 cloves garlic, minced 1 ½ tbsp dried oregano 2 tsp coarse sea salt 1 ½ tsp fresh grind black pepper ¾ cup fresh chopped leaves of mint 1 butterfl ied leg of lamb, 4 ½ - 5 lbs 3-4 metal skewers preferably, if wooden, soak them and you will likely need a few more Combine the fi rst 7 ingredients well and pour into a large Ziploc bag. Add the lamb to the bag, squeeze out as much air as possible and shake somewhat to coat the entire leg. Put the bag into a large pan of sorts and refrigerate for at least 8 hours and no more than 16 hours. Try to turn over occasionally during the marinating process. Once it comes to game time, let the leg sit out at room temp for 1-2 hours. As always,
leaves, boil for a few seconds in about ½ cup boiling water until it has reduced to almost nothing. Add this to the gravy and stir all ingredients well, taste, and season as needed. This is really good! Also, here is a very quick mint sauce good for 12 servings. ½ cup fresh mint leaves, fi nely chopped ½ cup boiling water ¼ cup apple cider vinegar ¼ cup sugar ½ tsp sea salt ¼ tsp fresh grind black pepper Once the water is at a rapid boil, add the vinegar, sugar, salt and pepper and stir so the sugar has dissolved. Add the mint, turn off the heat, stir well, and take off the burner and let sit. I prefer the gravy a little more than the sauce, but these are both incredible! grease your grill well and preheat to a medium heat, maybe medium/high if your grill doesn’t cook as well as it should. Pull the lamb out of the bag over the sink, place it on a pan, and skewer it with 3-4 metal skewers about 2 inches apart, lengthwise. This will help you fl ip when grilling. Although this weighs in at 4 ½ - 5 lbs, it is not very thick, so it will cook relatively quickly (maybe 15 minutes total give or take to be where it should be to get to a good medium rare). Pull it early, at about 125 degrees. Move the lamb to a cutting board, loosely cover it with foil for about 20 minutes to let it continue to cook, as the temp will rise closer to 135 over the 20 minutes. Cut across the grain and serve this bunch of deliciousness. To fi nish, here are a couple of quick alternative solutions to mint jelly. The fi rst is one for those who already know how to make a beef gravy. Lay somewhat low on the beef base, make the gravy thicker than usual, and add drippings of the lamb on the cutting board and a few tbsp red wine. A little earlier, chop up ½ cup fresh mint
