Welcome... To our fifteenth issue of The Last Bite! I think it is safe to say the past few months have been anything but easy for most. We hope you and your families have been able to stay healthy, safe and (somewhat) sane during the COVID-19 pandemic. As every state is in various stages of reopening we would just like to reiterate that Ferraro Foods remains committed to helping our customers thrive in a post COVID-19 world. As restaurants start to reopen and settle into the “new normal”, you will need to be prepared with the right products. View essential safety and sanitation products on page 13. Ferraro Foods is also feeling the impacts of COVID-19. We had originally postponed our 2020 Spring Food Show but it has become evident that it will be impossible to hold a physical event this year while complying with all necessary safety guidelines. In order to protect the health of our customers, vendors and employees we will be hosting a Virtual Food Show! The show will be open for a whole week from September 14 - 18 for you to attend at your own convenience – no travel required! Learn more about our virtual food show on page 8. On top of hosting our first ever Virtual Food Show Ferraro has more exciting news – we have a new addition to the family! Last issue we announced our partnership with C & F Foods. Since issue fourteen, we have completed another merger with LaRosa Brothers Food Distributors. You can read more about both C & F Foods and LaRosa Brothers starting on page 6. STRONGER TOGETHER Ferraro Foods Announces Partnership with C & F Foods C & F Foods Co., Inc. was originally founded as C & F Dairy in 1958 by Clement Vicari Sr. and Frank DeBenedittis. They learned the art of making fresh Italian cheeses from spending their teenage years working in a small Italian deli and latticini named DeBenedittis Bros. in East New York, Brooklyn. After serving in the U.S. Army during WWII they returned to their jobs at the deli. They began to see an opportunity to supply the growing pizza and Italian restaurant trade with the mozzarella and ricotta they were making at DeBenedittis Bros. They started making deliveries to pizzerias and restaurants. In 1958 they incorporated and C & F Dairy Inc. was born. They began working out of small walk-in refrigerators built in their garages. Soon after they moved into a small store front in East New York. In order to accommodate their growing business they bought their first warehouse in Queens, NY which was later expanded to a 5000 sq. ft. facility. It was in this building that the Papa Moozzi brand came to life. In 1980 Clement became the sole owner of the business. Clement Sr.’s son Clement Jr. had already been working for the company. In 1981 his other son Anthony joined his brother and father at C & F. By 1987 it became obvious that they have outgrown their warehouse in Queens. A year later they moved into their present day 25,000 sq. ft. home in Syosset, NY. With their product line now expanding beyond dairy items the company’s name was changed to C & F Foods Co., Inc. Along with a dedicated staff of longtime employees the Vicarai family and the iconic Papa Moozzi brand have always worked hard to provide their customers with the best quality products, dependable service and value. “We are very excited to start the next chapter of C & F’s long heritage of supporting independent pizzerias, restaurants and food retailers throughout Long Island. This combination will enhance C & F’s ability to meet the growing needs of their customers with a wider array of products and offerings, while continuing to provide the same quality service and personal attention they have come to expect from C & F,” said Michael Giammarino, CEO of Ferraro Foods.


LaRosa Brothers Joins the Ferraro Foods Family If someone were to describe Angelo, Sal and Freddie LaRosa of LaRosa Brothers Foods, the first phrase that would come to mind would be, “Living The Dream”. What started off as a goal in life became the impetus that made LaRosa Brothers Food Distributors of Levittown the company it is today. LaRosa Brothers Food Distributors was a dream of Angelo LaRosa, who graduated with a BA in accounting. A cost accountant in Manhattan, Angelo dreamed of owning his own business. After some discussion with Sal, Ralph, the oldest brother who was in the restaurant business, and later on Freddie, the youngest brother, they agreed on starting a family business. They arrived in Levittown, NY in 1980 to purchase Donny Boy Sausage Company and LaRosa Brothers Food Distributors was born. The business, which grew from hard work, sweat and perseverance, had its humble beginnings in a small building on Wolcott Road in Levittown with 200 sq. feet of retail and 2,500 sq. feet of wholesale storage. They had only a van to accommodate deliveries, which were made from Manhattan to Montauk. In 1983 LaRosa brothers purchased the land next door and built a warehouse. Their attitude was, “The harder you work, the more you’ll be rewarded.” By 1990, deliveries to Manhattan became more and more demanding so they began to focus increasingly on customers who were located on Long Island with the mindset that it was more important to deliver quality and give customers the ultimate attention. As LaRosa Brothers put in the effort, their business grew. The 200 square foot retail deli grew to 2,200 sq. feet and the wholesale to almost 10,000 sq. feet. From the humble delivery van LaRosa Brothers grew to filling three large trucks per day delivering on Long Island. The brothers attribute their success and growth not only to their own hard work and perseverance but also their individual families and their loyal employees and customers. In August 2020, LaRosa Brothers Food Distributors will celebrate 40 years in business, which is quite a milestone. They completed a merger with Ferraro Foods in July 2020. According to Angelo, “We know that merging with Ferraro Foods will benefit all of our customers with competitive prices and a much more diverse inventory.”

Cash and Carry Store Supervisor (Napoli OpCo, CT)

Date of Hire: 7/17/2019 DJ is Napoli Foods Cash and Carry Store supervisor. DJ reports to Napoli’s Operations Team and has been an invaluable and flexible employee and teammate. DJ worked everyday during the Covid-19 crisis. He went above and beyond servicing walk-in customers and staying late to restock and sanitize the store. He willingly and safely dealt with customers directly during what has been the most unusual and dangerous health crisis to take place during modern times. Napoli Foods Cash and Carry operation saw record sales and store visitation numbers during the pandemic and did so under the careful adherence to local Public Health Code rules and regulations. In a company full of valiant and loyal employees over the past few months DJ stands out as truly essential.

Steps to Keep Delivery or Takeout Fresh

Make sure your guests can enjoy their meal to the fullest, no matter where they’re dining.

Separate the Sauces Rule #1 of delivery or takeout is package sauce on the side. It prevents any sogginess and allows the customer to add as much or as little sauce as they want. Ever had a pre-made sandwich in an airport where the tomatoes and mayo made the bread soggy, leaving the sandwich structurally unsound and unpleasantly mushy? Don’t let this happen to your cherished guests. Pack anything that’s high in moisture on the side.

Pierce Containers With A Small Hole If you’re sending hot food to a customer, pierce a small hole in the takeout container. It’ll let some steam escape and prevent dishes from losing their crisp or crunchy texture. Avoid doing this for items that will immediately spill, like soup or saucy pasta dishes. Instead, do it for dishes like fries, paninis, or crispy chicken tenders.

Hot and Cold Items in Separate Bags Keep hot and cold items separate especially when you’re dealing with items that can quickly go bad. If your driver gets lost and the hot and cold food are in contact for longer than expected, it can make for a pretty unpleasant experience for the guest.

Include Reheating Instructions Certain items get less tasty almost immediately after leaving a restaurant kitchen, but their deliciousness can be easily recovered by a quick toast in a toaster oven or even a minute or two in the microwave. Deep-fried items lose their crunch very quickly if they’re packed warm. If you’re known for your crisp mozzarella sticks and you don’t want to exclude them from your online ordering menu, simply include reheating instructions. Tell your guests that a quick zap in a pan, oven or toaster oven will restore them to their former glory. You can include reheating instructions on receipts, a notecard added to the order, or even as part of your packaging. It’s a way to show your customers that you care about the quality of your food for your delivery and takeout customers as much as your in-house guests. Plus, some diners may honestly not know the proper way to heat up cold food and which appliances to use. In this vein, you’ll be helping them out in both the short and long run. Use Containers with Compartments If you’ve had any issue with complaints or reviews saying that food arrived soggy, smushed, or otherwise sub-par, look into containers with compartments. Since they’re more expensive, make sure to only use them when putting together specific delivery items that are better when its elements are kept separate.

Don’t Deliver Everything on Your Menu Creating a delivery and takeout specific menu is important. You don’t have to overhaul the menu completely — you want your food and your brand to come across the same way in-house and off-premise — but it’s in your best interest to remove the items that’ll be irreversibly damaged by time in transit and add a couple of travel-friendly items in their place. You can even market those special travel items as delivery-only on your social channels to attract new diners and entice your regulars to try out your delivery service.

Keep Your Delivery Radius Reasonable You may be tempted to offer delivery to your whole city, but the quality of your food on arrival will suffer. Keep your delivery radius small enough that you can make sure your food isn’t in a car (or on the back of a bike) for longer than an hour. This will keep it from sitting in the danger zone — between 40° F and 140° F — for an extended period of time.

Travel Friendly Foods Cook the pasta for slightly less time to yield a more al dente pasta than you’d serve in the restaurant, as it will continue to cook in transit, softening and absorbing the warm sauce. Greek salad is one of those amazing dishes that gets better the longer it marinates — within reason. Any dish made of a crust baked with toppings on it makes for a perfect delivery food. Charred and juicy steak tips stand up to reheating better than many other cuts of beef, and mashed potatoes travel extremely well.

This goat cheese pasta is an excellent alternative to a heavier Alfredo sauce. The tangy flavor of the goat cheese complements the lemon and garlic notes, while fresh basil and spinach add to the color and texture of the dish.

Gather the ingredients.

Fill a large pot with 4 quarts of water and add 4 teaspoons of kosher salt. Bring the water to a boil over high heat.

Meanwhile, place a large saucepan over medium heat and add the olive oil. When the oil is hot, add the garlic; cook, stirring, for 1 to 2 minutes. Add the chopped spinach and basil and cook for about 2 minutes, or until wilted. Remove the pot from the heat.

Add the pasta to the water and bring back to the boil— cook the pasta following the package directions. Reserve about 1 cup of the pasta cooking water and then drain the pasta thoroughly.

Add about half of the hot cooking water and the pasta to the spinach mixture along with the lemon zest, juice, the pepper, and about 4 ounces of the goat cheese. Place the pot back over medium heat and cook, stirring gently, until the cheese is melted and the pasta is hot. Taste and add salt, as needed.

3 salmon fillets (4 oz each)

1. Preheat oven to 400F.

1/4 cup olive oil

3 tbsp maple syrup

2. Clean salmon and place on plate in fridge until ready to cook.

1/2 tsp chili powder or paprika

1/2 tbsp ginger root, grated

1 tsp garlic minced

1 tbsp apple cider vinegar

1 lb baby carrots

5. Brush half the maple ginger glaze over the carrots. Bake at 400F for 10 minutes. Remove from oven and toss with tongs.

7. Place your cleaned salmon sheet pan. Add sliced peeled shallot and a few slices of lemon between the carrots and salmon.

3. In a small bowl, whisk together olive oil, maple syrup, spices, ginger, garlic, balsamic vinegar and salt/pepper to taste. 4. Place carrots on sheet pan.

8. Squeeze the juice from other half of the lemon over salmon and vegetables. Sprinkle with dash of salt and pepper, then brush the rest of your glaze on top of salmon and carrots. 9. Place in oven for another 7 minutes. 10. Remove pan from oven and rub ground pistachios on top of the salmon fillets, coating evenly. 11. Place back in oven and broil for another 2-3 minutes or until salmon is cooked and vegetables are roasted, but no longer than 4 minutes. 12. Garnish with fresh parsley.

ummer is well underway in every corner of the United States, and the warmer weather has every grillmaster itching to get some beef patties sizzling in the backyard. For restaurants, the summer can also be a great time as well. One thing is certain: everyone is in the mood for a burger. Whether your restaurant is known for killer patties or not, customers are going to be ordering two slices of bread with a thick, juicy slab of beef in the middle more often in the next couple months than any other time of year. This presents a great opportunity for any restaurant to place their own creative stamp on the classic American hamburger. This menu item has been prepared in more ways and with more variations than any other, and yet its popularity still runs strong through most of the American public.

The popularity of the hamburger is a double-edged sword for the restaurateur: you know it will be a strong selling menu item, but everyone is also a backyard burger slinger, which means everyone is a connoisseur. If you’re going to market great tasting burgers to guests for any price higher than McDonald’s dollar menu, you better have a tasty surprise waiting in the wings. Interviewed: Maria Cabrera History: In 2010 Maria Cabrera bought the establishment then known as Fratelli’s and created Cugino’s. Maria remodeled the pizzeria and added a cozy dining room. Cugino’s quickly became a neighborhood hot spot which catered to the local school district as well as the Slate Hill community. Maria filled Cugino’s with a warm and welcoming staff who ensures everyone that comes through their doors feels like family. Every member of the Cugino’s staff has become a part of Maria’s extended family. Some of the key members of her original staff have remained with Maria throughout the years. They are a big reason why Cugino’s has been so successful. Cugino’s is located right next door to Minisink High School and has become Home of the Warriors. They continue to give back to the community with donations and employment opportunities to the students cementing Cugino’s status as a valuable member of the Slate Hill Community.

What is the most popular item on the menu? Cugino’s is known for their specialty pies. Favorites are Chicken Bacon Ranch and Buffalo Chicken, among others. Their Stromboli’s are also amazing - especially their Family Cheese Steak Stromboli. They are also known for their Stuffed Roni Garlic Knots as well as a dessert Knot stuffed with Nutella. Other favorites on the menu are Filet Mignon topped with Shrimp Scampi, Broiled Salmon with Lemon Caper sauce, Juicy Classic Burgers and, of course, their traditional heroes. How has Cugino’s adapted during the COVID-19 crisis? During the first 2 weeks of the COVID crisis Cugino’s immediately offered a 10% discount to all their customers. They then offered Contactless Delivery, Curbside Pickup, and Pizza Kits, as well as family package deals. Maria reached out to local hospitals and essential workers and donated many meals to show her appreciation. A local company, Harness Financial Advisors, donated $2,500 to Maria so she was able to feed anyone in the community that needed a meal. She decided to pay it forward and team up with other local establishments and donate to all the front line essential workers. Because of her generosity and commitment to the community, Cugino’s has received tremendous support during the COVID crisis. Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. The combined 100 plus years of pizza experience that co-founders Joe, Mike & Frank Rocco have is the result of growing up as the children of Italian immigrants in the 1970’s Bronx. Proud of the fact that “Nobody worked harder than our parents,” the brothers fondly recall the long days spent in the family’s Bronx, NY pizzeria making sure that every pizza was the best it could be. What is the most popular item on the menu? Our premium cheese pizza is our number one seller, followed closely by buffalo wings and chicken tenders. How has Planet Pizza adapted during the COVID-19 crisis? Our business was uniquely qualified for the Covid-19 crisis. We have always prided ourselves on fast delivery, convenient carryout and minimum contact. Curbside pickup and contactless delivery were easy adaptations. Why work with Napoli Foods?
