MINI MEAT-SAGNA ROLLS Flat lasagna sheets are piled with herbed ricotta cheese and spinach, filled with Marino Meatballs, rolled tight and baked in a casserole dish with a robust tomato sauce infused with Italian seasoning, and served sliced as an appetizer. Serves: 6 Ingredients

1. Pre-heat oven to 350° degrees.

2. To make filling; in a medium bowl combine 1⁄2 cup mozzarella, parsley, and ricotta cheese and mix thoroughly. Set aside. 3. Lay par-boiled lasagna and on a clean surface. Spread 3 Tbsp. of the ricotta cheese mixture on each lasagna sheet, stopping just before the end of one side. Place a Marino Meatball on the close end and tightly roll each sheet. 4. In a baking dish, spread a thin layer of sauce on the bottom. Place each lasagna roll in the dish, and top with remaining pasta sauce. Sprinkle with remaining mozzarella, cover with tin-foil, and bake 15 minutes. Remove tin foil and bake an additional 5-7 minutes until cheese is slightly golden. 5. Secure each lasagna roll with a tooth pick and serve.

Cook's Tip Lasagna filling is a great way to experiment with fillings. Try goat cheese for a stronger flavor, or use heavy cream for a richer texture. Add more herbs for an aromatic filling, or kick it up with spicy chili’s or peppers.

Directions 1. Add cream to a saucepan and bring to a light simmer, but do not boil. 2. Add in cheeses, black pepper and salt. Mix well. 3. If too think, add reserved water until desired thickness is achieved. 4. Add tortellini and gently toss.

FRESH TOMATO & BASIL SAUCE Ingredients • 10 Ripe Plum Tomatoes, small dice •

1/3 Cup EVOO, plus more to finish

Pinch of Crushed Red Pepper Flakes

4 Cloves Garlic, minced

Salt & Freshly Ground Black Pepper

1 Tbsp Unsalted Butter

2 Tbsp Parmesan Cheese, freshly grated

6-8 Basil Leaves, washed and dried, stacked and rolled into a cylinder and cut thinly crosswide in a chiffonade

Directions 1. In a saucepan, heat 1/3 cup of olive oil over medium-high heat. 2. Add the tomatoes, red pepper flakes and garlic. 3. Season lightly with salt and pepper. 4. Cook the mxture for 10-15 minutes, until tomatoes are tender and the sauce has thickened. 5. Remove from heat. Add butter, cheese, basil and a drizzle of olive oil. 1. Place prosciutto in a single layer on a baking sheet layered with parchment paper.

4. Next, in a medium mixing bowl beat with an electric mixer the cream cheese, sugar, egg, and vanilla until smooth and creamy.

5. To prepare pastry, place one sheet of phyllo dough on a flat surface. With a pastry brush lightly brush with melted butter. Place another sheet of phyllo on top; brush with butter repeat process using 4 sheets of phyllo. (Keep remaining phyllo covered with plastic wrap or a damp towel. It dries out quickly.)

3. Remove from oven let cool, then break into small bits and set aside.

6. Cut sheets into 5 equal strips about 2" wide and 9 inches long. Spoon 1 teaspoon of filling about 1 inch from the end of each piece, top with a 1/2 teaspoon of fig jam and a sprinkle of the crispy prosciutto. Fold dough over filling to create a triangle, Continue folding, like a flag, until the end. Brush with butter on all sides and place on baking sheet. Continuing with remaining phyllo, butter, and filling. 7. Bake in a 375 degree F oven about 15 minutes or until golden. 8. In the meantime prepare the glaze. Melt butter in a sauce pan. Slowly add brown sugar stirring until completely dissolved. Slow simmer until mixture starts to thicken slightly and then add the bourbon. Simmer for a moment more until alcohol taste has cooked off. 9. Pour over pastry sprinkle with remaining Prosciutto and serve. FRESCO BY FERRARO | PAGE 23

BREADED SHRIMP PERFECTLY PORTIONED, EASY TO PREPARE


FIRECRACKER SHRIMP This quick and easy firecracker shrimp can be served as an appetizer or a main dish served over rice, on a flatbread or pizza.

Ingredients

Directions

1/4 cup maple syrup

1 medium jalapeno, cut in half width-wise

1. Combine 1/4 cup maple syrup, 1/2 of the jalapeno pepper, garlic, vinegar, salt, and black pepper in a mini food processor or small blender jar; blend until smooth.

1 clove garlic, minced

1 tablespoon rice wine vinegar

1/2 teaspoon salt

1/8 teaspoon black pepper

6 ounces of shrimp

salt and pepper to taste

2 teaspoons maple syrup

2. Place shrimp in a gallon-sized resealable plastic bag. Pour marinade on top, seal, and refrigerate for 20 minutes. Remove from refrigerator and let the bag sit at room temperature for 10 minutes. 3. Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper. 4. Remove shrimp from marinade and pat dry. Place shrimp on the prepared baking sheet and season with additional salt and pepper. Slice remaining jalapeno pepper thinly and place on top of shrimp. 5. Bake in the preheated oven for 10 minutes. Brush 2 teaspoons maple syrup onto the shrimp and return to the hot oven. Bake an additional 3 to 5 minutes.
