Despite the darkness and the biting chill of winter, there’s something magical in the air this time of year. Deborah Chu looks into some of the most enchanting wintry experiences to get you out of the house and into the holly jolly mood
There’s no better place to get into the festive spirit than at the Royal Botanic Garden Edinburgh’s annual Christmas at the Botanics event (Fri 23 Nov–Sat 29 Dec), in which a million twinkling lights adorn the trunks and branches of their mighty arbors, and the famous glasshouses are lit up in spectacular seasonal colours. Archerfield Walled Garden will also be transformed into a dazzling setting for the Christmas Fairy Trail (Fri 7–Mon 24 Dec), an immersive theatrical experience set in an ethereal realm where fairies and forest folk roam freely and surprises await behind every corner. Santa Claus will be setting up shop in Paisley town centre for the big Christmas Lights Switch On (Sat 17 Nov). There’ll be live reindeer, a storytelling igloo and a funfair to explore with the whole family, as well as free chocolate-making workshops and performances from Funbox and X-Factor stars, the Cutkelvins. Meanwhile in Glasgow, it’s the Disney film that will not die, so just 'Let it Go' at the Frozen Prosecco SnowBall (SWG3, Fri 28 Dec), a sing-along clubbing experience inspired by the animated smash-hit. Every nook and cranny of the venue will be filled with a thousand gallons of dry snow and falling snow-fetti, as well as stilt walkers dressed as Anna, Elsa, Olaf and co. Fancy dress highly encouraged, of course. Or head out into the countryside at the National Museum of Rural Life’s Christmas Fair on the Farm (Sun 9 Dec) to meet some real donkeys in the nativity display, as well as Santa and his tractor-driving elf. Even if a white Christmas isn’t on the cards this year, never fear: Snow Factor, the longest indoor real snow slope in the UK, is hosting two festive events for young children. Santa and the Snow (Sat 17 Nov–Sun 23 Dec) will take the wee ones through their paces at elf training school before they’re let loose in a custom-built snow play area. Or if it’s little daredevils you’ve got, Dine with Santa (Sat 17 Nov–Sun 23 Dec) will get them a meal in Santa’s Christmas room and a festive tale read aloud by the man in red himself, before the whole gang hits the slopes.

What makes for a Christmas classic, and how do you adapt such timeless tales for contemporary audiences? Gareth K Vile and Lorna Irvine chat with the movers and shakers of the Lyceum’s Wendy and Peter Pan and the Citizens Theatre’s A Christmas Carol to find out how they’re bringing these stories to life

JM Barrie’s fantastic tale of boys who refuse to grow up, pirates and a vengeful crocodile has been a staple of the stage since the reign of Queen Victoria: despite its profound themes of loss and accepting adulthood, it offers a spectacular adventure and the romance of a tough fairy-tale. As the Lyceum’s Christmas production, it fits with the venue’s serious yet playful alternative to the pantomime: using a script by Ella Hickson, Eleanor Rhode’s direction is inspired by its mixture of fun and resonance. ‘I think the fact that, as storytellers, we keep returning to Peter Pan is a sign of how fundamental its themes are to us as human beings,’ Rhode says. ‘It may not be set in the 21st century, but it’s a story of love, imagination and adventure – and those are themes that cross centuries and generations.’ ‘In Ella’s adaptation, not only do the women carry the narrative, they also get to fight, to be vulnerable, to be brave, to be flawed, to be funny – in other words, they’re brilliantly written characters at the heart of the story.’ Rhode sees Wendy and Peter Pan as a point of entry to the Lyceum’s programme for all of the community. ‘We don’t want the theatre to feel like a precious place where you have to reverentially sit in the dark – going to the theatre should feel like an event where everyone is welcome.’ Rhode believes that this is crucial to the impact of the production. ‘It will be spectacular when it all comes together, and the flying will be one of many things that will really bring this fantastical world to life on stage. We have a brilliant, multi-talented company, and there’ll be live music, fast-paced sword fights, and more than a few surprises along the way. Few morality tales endure like Charles Dickens' A Christmas Carol, with its universal themes of poverty, family and changing mindsets for the greater good. Such motifs are safe in the hands of the Citizens Theatre (now of course temporarily relocated to Tramway) whose wry and inventive winter shows are both heartwarming and intelligent. Benny Young, then, is surely the perfect choice to play capitalist curmudgeon Ebenezer Scrooge, with his expressive face and seemingly inexhaustible presence. ‘I've actually done it before three times with the National Theatre of Scotland,’ he says. ‘It seems very relevant today. Dominic (Hill, the director) wants you to come out of it feeling good, and there's certainly that, but it frees the audience to face many difficult truths, if you will, that we still face today. I was recently reading in the Rowntree Report that one in four children in Scotland are living in poverty. It's quite shocking in the 21st century, when we're living in a relatively affluent society, you know?‘ Young believes that, far from being an ogre of a character, Scrooge is simply a product of his times. He elucidates further: ‘I look at Scrooge as a real person. He's practical, within that society. The only thing that makes sense is to make as much money as possible, and to spend as little as possible.’ Working with Dominic Hill is, Young says, a joy. Most recently, he was in the director’s well-received production of Hay Fever. But he's giving nothing away, in terms of what to expect. He simply says, ‘Dominic always has a lot of good ideas, and works with the actors' ideas too. The Scottish Storytelling Storyt Centre does what it says on the tin and has plenty of riveting sessions for the festive period. In Nine Tales and Carols (Sat 15 Dec), Beverley Bryant and Heather Yule bring a Christmas story to life through storytelling and music; Stories Round the Tree is a cosy storytelling session around their decked-out tree (Fri 21, Sat 22 Dec); and A Winter Warmer (Thu 6 Dec) hosts wintry tales presented by the Burgh Blatherers, complete with mulled wine and mince pies.
As usual, the biggest panto in the city is at the Kings Theatre and this year it’s staging the classic fairy-tale Beauty and the Beast (Sat 1 Dec–Sun 20 Jan), starring Grant Stott and Allan Stewart. It is my mother's stout-soaked fruit cake that makes me think of Christmas the most; dense and fruit-laden, covered in marzipan and crunchy icing, passed between us during any lull in the conversation. It is those flavours of dried fruit and warming spice that bring me back to my childhood. Now as a grown up, it is the rich flavours and heady aromas of Oloroso and Pedro Ximénez sherry that bring it all back to me. When you combine those flavours with whisky, you can find the perfect warming dram for a cold night. Glendronach offer some amazing examples from the 12-year-old through to the 21-year-old. If whisky is not your thing, Spanish brandy can be the perfect answer. I would seek out the rich and fruity Cardinal Mendoza.
There's no finer aroma at Christmas than a goose roasting. On Christmas morning, about half an hour after I've popped it in the oven and the skin starts to brown and the fat melt, the rich, sweet smell begins to permeate the kitchen and there's nowhere else I'd rather be. I'll peel the tatties, prepare the brussels sprouts, clean the back of the fridge: any excuse to stay in the kitchen, enjoying the cooking goose. The meat is good to eat, but it's the smell that's sublime. By comparison, any other bird is, well, a bit of a turkey. I'm lucky enough to get hold of a goose from a smallholder in Angus, even if some years I have to help pluck and prepare it. For payment in cash, rather than labour, you should be able to get hold of one from George Bower butcher in Stockbridge in Edinburgh, or online from A Taste of Galloway near Dumfries.

For me, the quintessential taste of Christmas is a simple yet oh-socrucial addition to the Christmas Day feast: a festive take on the humble trifle. Don’t get me wrong, the Boxing Day treat of AGA-cooked golden, flakey sausage rolls dunked into Worcestershire sauce has its place too. But nothing compares to a homemade Christmas trifle, specially when made with The Wooden Spoon’s Tipsy Mincemeat with Brandy (available at Craigies Farm just outside Edinburgh); it's a majestic centrepiece of Cointreau-soaked sponge topped with warmed mincemeat and vanilla custard, finished off with fresh whipped cream. Anything made with mincemeat – laden with warming ginger and nutmeg – is heavenly, but this indulgent dessert created by my mum (undeniably the best home cook there is) really does put shop-bought mince pies to shame. My fondness for it has nothing to do with the generous glugs of Cointreau or the brandy-infused mincemeat inside . . . honest.
It has to be Christmas cake. I inherited [husband] Victor's mother's cake tin. It must be 70 years old. Almost every year since we’ve been married (25 next year), I’ve made a Christmas cake in this tin. I usually make it the first week in December. It has no peel, only dried currants, cranberries and a few sultanas. I bake it over night in my slow oven and feed it every day with a 12-year-old Glengoyne or one of Victor's special Nonino Grappa if he’s not looking, so it’s super fragrant and totally intoxicating. The children get to ice it. It’s an Italian-Scots tradition. It’s important as I feel a connection down the ages. Although it’s not my grandmother's tin, it’s my grandchildren’s great-grandmother's tin with their grandmother's cake recipe. I feel it brings both our families love of good home cooking and tradition together. The children love mixing the ingredients which are all done by hand – a labour of love.

SCOTTISH FRUIT WINE We don’t produce wine in Scotland (apparently grapes need sun) but we do have a long tradition of making fruit wine. There are some fabulously quirky producers around who make wine out of everything from brambles to potatoes, like the endearing vegan-friendly Orkney Wine Company. Their Viking Red is a spicy red wine made from local cranberries, rosehips and aronia berries, or for a twist on the traditional Christmas day port, try
their Black Portent – carefully aged blackcurrant wine which is good with cheese. For an even more traditional approach there’s mead, generally reckoned to be one of the oldest drinks in the world.
