The annual dog-walking event by Hong Kong Dog Rescue, Peak to Fong, grows in popularity year after year and it’s now in its 11th edition. AceCGT NutriGene: The Personalized way of Choosing Diet and Lifestyle through Genetics What is AceCGT NutriGene? AceCGT NutriGene (ANG) is a Hong Kong-based company that offers an innovative weight management and lifestyle program that personalizes each plan depending on a client’s genetics. The concept behind the model is the theory that certain genes react differently to what the body consumes and this can affect metabolism; therefore, a diet that may lead to positive results for one person, could have little effect on another. Nutritional Genomics is the science that can inform you whether or not you are eating the right foods for your genetics, and where the idea for AceCGT’s DNA weight management program began. People’s genetic profiles are 99% the same with variation (SNPs) at just 1%, but it’s this 1% that can make all the difference in people’s metabolism and their chances of becoming fat or obese. Indeed, scientists worked out that there are 40 genetic-related factors that contribute towards this.

The Test Procedure The first stage of the test involves the client going in for a meeting in which the whole procedure is explained clearly so they are fully aware of what is happening.

Next the client will undergo the DNA testing by giving a swab sample. From here, the specimen is inspected and data is stored before the DNA samples are extracted. The next step involves making millions of copies of the DNA regions of interest, which are amplified and intensely studied. Then the data is fully analyzed before it is calculated. All information is now passed over to a team made up of dieticians and genetic scientists who will draw up the best diet programs based on such DNA results. The entire procedure takes a total of 21 days, after which a meeting is set up for the client to come and discuss the results and various options available.

How are Dietary Programs Worked Out? Much of this is dependent on the test results but also each client’s individual goals; for example, many customers might be looking to lose weight, while others might looking to have a plan that works towards weight maintenance. The Diet Gene Test works out our ability to metabolize carbohydrates and fats as well as how we respond to exercise. This scientific approach

to dieting ensures that people are immediately placed on the best possible diet to their specific needs without having to go through a whole trial and error process. AceCGT NutriGene manager Terry Chung described himself as being “overweight” at 188lbs at the end of May. After having his DNA tested, he was advised to go on the low-fat slimming diet, and by September he was a much slimmer 159lbs.

The Diet Itself Starting the personalized diet is the first step towards changing your lifestyle. As Genomic Laboratory Director Dr. Billy Chan (PhD) notes, “You can’t change your genes, but you can change your environment and lifestyle.” Each diet, however, has a certain degree of flexibility, and someone advised to be on a low carbohydrate diet, for example, would not be told to cut carbohydrates out altogether as maintaining a balanced diet remains extremely important in the eyes of AceCGT. All food types are listed in their respective categories such as carbohydrates, proteins and fats, and each item has been given a number of points that was calculated by the

The clients receive a recommended number of points they can consume on a daily basis - dependent on factors such as emphasizing age, gender, weight and usual physical activity level as well as if they are looking for weight loss or weight maintenance - and from then they can manage their own diets.

A Little more about Exercise It is stressed that the diet and lifestyle are the key parts of the program, but exercise is also advised. In each individual case, factors such as weight, health, age and fitness are taken into account before an exercise plan which focuses on a recommended intensity is drawn up. However, AceCGT will not select the sports or activities for clients; that is up to them to do themselves based on their personal preferences.

As with food, each sport or activity has been given a MET (Metabolic Equivalent of Task) value linked to the energy cost of physical activities. The MET value was originally drawn up by Stanford University’s Dr. Bill Haskell, and is now used worldwide to assign intensity units to physical activities. In a nutshell, if you are a healthy, active person, you are likely to be advised to partake in high intensity activities, while obese people may be advised to focus more on the diet and just do some light exercise each day.

“Tailor-made doesn’t always mean that a suit is superior to some of the better ready-to-wear suiting options. The key criteria for any suit is that it has a ‘floating canvas’ construction. This means that the internal chest piece is hand-stitched. It will mold better to your chest over time and won’t pucker as a glued or ‘fused’ suit will. The more handwork a suit has the better, though bear in mind that getting a suit tailored is no guarantee of this.”

“The assumption is often that color somehow signifies an advanced dresser. With only a couple of key exceptions, the best-dressed men stick to the basics and do it extremely well. They never have colored button holes, avant-garde collar shapes or other gimmicks. At The Armoury, we encourage people to stick with the classics of navy, gray and brown suits paired with pink, white and blue shirts—garments you will love to wear your whole life. Casual tailoring is a different beast altogether, and more colors should be drawn on, from light blues and pastels in the summer to rust oranges and autumnal tones in the winter. Still, you can’t go wrong with the classics—contrary to the zeitgeist of men’s fashion, not everything requires a twist.”

Hemming and Hawing “Trouser length is personal preference and says a lot about the wearer. I like to wear mine just reaching the top of my shoes with a cuff. It means the trouser isn’t a big mess on top of my shoes and the weight of the cuff ensures the trouser drapes nicely. Sleeve length however has less leeway for personal flair—your shirt should reach the top of the hand and the jacket sleeve should be a centimeter shorter than that. Showing some shirt cuff brightens up dark colors and is a hallmark of showing you know how to dress— jacket sleeves hanging to the knuckles is never a good look.”

Accessorize This “Pocket squares, ties and other injections of color should be considered in harmony with the outfit as a whole. Matching or jarring accessories should be avoided; accessories should look like you’ve thrown them on rather than looking contrived. According to venerable menswear writer Alan Flusser, you can combine as many patterns as you like, provided they are all of a different scale.”

Safe Bets “I may be biased, but I feel that the New World wines—New Zealand, Australia, South Africa and Argentina—are a safe bet in the sense that you’re not going to break the bank but you’ll still get quality. Definitely try cabernet sauvignons from South Africa, and there are very good chardonnays from Australia. There are some interesting wines coming out of Victoria, near Melbourne—try pinot noirs from the Yarra Valley. I would steer clear of sauvignon blanc from New Zealand—it’s just so overdone. New Zealand actually makes great pinot noirs and chardonnays, so experiment with those.”

First Impressions “If you’re going on a date with someone new, start with something fizzy, because you’re marking a beginning. It doesn’t need to be expensive champagne, but a nice prosecco or a cava from Spain goes down well. A lot of the champagnes available by the glass aren’t that exciting—traditionally, the by-thebottle selections are far better.”

Is it Corked? “It’s getting better, but the most recent stats show that one in 12 wines is corked. A corked wine smells musty and moldy—a bit like damp cardboard. But most people who are novice wine drinkers, are new to wine, or are casual drinkers, don’t understand the complexities of the way a wine changes as it ages—they may think that the wine is off or unpleasant because they don’t have that understanding or knowledge. You’re better off sticking to wines made within the past three years or so. So for this year, wines made between 2010 and 2013 would be more suitable.

Ordering for Groups “When eating in a group, say with Asian cuisine or Spanish tapas, you have so many palates and flavor profiles on the table that it’s very difficult to order a wine to suit everything. If there are enough people, you’re better off having two wines available that diners can switch between from one course to another. It doesn’t have to be one red, one white; you can go for a lighter red and a fuller-bodied red, or a sparkling wine and a red. Steak Expectations Sick of serving up slabs of chewy, overcooked steak? Aarik Persaud of The Butchers Club shows us how to cook a perfect piece of meat every time. Step 1: “Choose the right cut. My favorite is a grain-fed Angus rib-eye on the bone, preferably dry-aged. It’s definitely the juiciest, richest, most flavorsome cut and cooking it on the bone is the only way to do it. It should be at least 1.5 inches thick.” Step 2: “Take it out of the fridge an hour before you cook it and let it come up to room temperature. Season with a nice flaky sea salt and freshly ground black pepper 15 minutes before you cook the steak. This helps to ensure a really nice crust.”

Step 3: “Get your grill (or your pan) scorching hot and sear the steak on either side, turning frequently (every 30 seconds or so).” Step 4: “If you’re using a grill, turn the heat down, put the steak on the top shelf and close the door, and cook for 5-8 minutes. If you’re using a pan, transfer the steak to a roasting tray with a wire rack and cook for 5-8 minutes at 220°C.” Step 5: “Place the steak on a cool wire rack so that the air can circulate and it stops the cooking process. Baby Pak Choi

A pregnancy column with Sarah Fung

The Pak Choi Has Sprouted She’s here! She’s here! And now this page transforms from a column about pregnancy to a column about parenting. The first couple of months were a blur of nappies and nipple cream, but now that she’s 11 weeks old (and I’m regrettably back at my desk), I feel just about ready to start writing again. On my personal blog, I’ve written about my birth experience (tiny.cc/ pakchoibirth) and what you need to know about having a baby at the Queen Mary (tiny.cc/queenmary), but for my maiden outing as a newly minted List Magazine mama, I thought I would talk about my observations on being a new parent: Maternal guilt forevermore

The poo-obsessed mum stereotype exists for a reason

The other day, Daddy Pak Choi and I spent an entire cab ride earnestly discussing the consistency, frequency and volume of the Baby Pak Choi’s stool (she’d been constipated for a day). You laugh, but if your kid has poop The first couple of months dysfunction, it scares the crap out of you, so to speak. I never thought were a blur of nappies I’d be so happy and relieved to see and nipple cream a deluge of yellow goo cascading over the top of a nappy, but there you go. Motherhood.

An abbreviated list of things I have already felt guilty about: Leaving Baby Pak Choi in the hospital crèche from 4am to 8am so I could get some sleep; forgetting to burp her after an enormous feed, causing her to puke up her entire meal; taking her to the pub (twice); being too scared to cut her fingernails and making her wear scratch mitts for weeks on end; when the doctor told me that she had lost more of her birth weight than they like and made me feel like I was starving her; spilling rice on her head when trying to eat one-handed; accidentally referring to her as “it.” The list goes on. Breastfeeding sucks You can’t win ‘em all. After a fairly straightforward pregnancy and the kind of labor that makes me seriously consider renting out my womb to eccentric Hong Kong tycoons, breastfeeding bit me on the ass. 50

Why does no one talk about how hard it is!? It’s painful, it’s frustrating for mum and baby alike, and unlike labor, there’s no end in sight. The best tip I ever received was to buy a package with a lactation consultant. Preempting the drama and booking in advance meant that I didn’t have to make a panic-stricken, teary phone call after being up all night with a hungry baby.

It’s awesome! I was worried about whether I’d actually like parenthood; so many mums and dads seem to have nothing pleasant to say about it. I know it’s not been long, but I’ve found myself seriously enjoying spending time with my little sprout. I’ve been enjoying it so much in fact that I’m kind of waiting for the other shoe to drop and for it to turn into the sleep-deprived purgatory I’ve heard so much about, which mercifully hasn’t happened yet.
