Hong Kong mongerels—or tong gau—are smart, loyal and don’t have the health conditions that many purebreds suffer from. If you have a specific breed in mind, poodles, poms and shih tzus can be found in many adoption centers. There are also plenty of cats, rabbits, hamsters and turtles looking for good homes. Once you’ve got your new friend, it’s time to load up on essential pet gear (p.30) and find a healthcare provider. Our listing of vets (p.26) should make the search a little easier. If you’ve got some extra love to give and enough free time to care for an animal, why not provide a dog with its forever home? Judy Wan from SPCA and LAP founder Sheila McClelland tell The List what you need to know.

It really tugs at the heart strings knowing that hundreds of pets are abandoned on Hong Kong’s streets every month. The city’s animal rescue charities do a fantastic job, but they couldn’t do it without you: their next potential fosterer or adopter. So if you’re thinking of getting a dog this year, don’t head to the pet store: visit your nearest rescue shelter and give a homeless animal a loving family. Just make sure to read these need-to-knows before you take the plunge.

Ask the Experts The List: Is it true that lots of pets get abandoned after Christmas? Sheila McClelland: The rate of abandonment is, sadly, a continual

Whatever the time of year, it is a lifetime commitment, so practice “Planned Pet Parenthood”—adding to your family is not a time for surprises. The List: Why should we adopt a dog, rather than head to a pet shop? Judy Wan: Adopting helps suffering dogs and reduces the number

of street dogs. We rescue over 600 homeless animals a month, and we know there are a lot more out there waiting for help. Another problem is substandard breeding. Some breeders neglect animal welfare when they breed the dogs for sale. That’s why we encourage people to adopt a dog instead of buying one.

SM: What makes a person suitable for adoption is like any other

family member coming into your home and life. It’s not a stuffed toy. You have to change your lifestyle to fit the new member’s needs. That might mean coming home earlier to walk them, or even getting someone to look after the dog. JW: We assess the applicant, and check the household for its dog-

friendliness, family background, financial support and experience

in keeping pets. We also try to match the personalities of the adopter and the dog. For example, we would be careful not to let busy people adopt attention-seeking dogs. The List: What should we consider before adopting? JW: It’s a lifelong commitment that can last for 15-18 years. And

remember that healthy dogs need financial support too: you need to spend on their vaccinations and food. Additionally, the adopter should always consider if they will get along well with the dog in terms of personality. The List: What are some practical benefits of adopting? SM: Animals from reputable adoption agencies are health-checked,

neutered, vaccinated and micro-chipped—it’s all done. This is not usually the service you get from breeders and pet shops. In fact, adopted animals are likely to be healthier, as they are already treated against heartworm or tick fever—common dog illnesses and diseases in Hong Kong. The List: Roughly how much would it cost us to adopt? SM: The adoption fee is $1,500 to cover medical costs, such as

desexing and blood tests, as well as heartworm, flea, and tick prevention. We also cover vaccinations up until adoption. Our

training classes have four participants at a time, and cost $2,400 for five sessions. The last session is private to address individual issues. The List: So, we’ve got the dog home, now what? SM: It’s important to give your animal

security and safety, and you can do that by giving them a routine, and a space which is theirs alone. This allows them to know what the boundaries are, and feel safe and secure. It’s also vital to maintain patience with your animal when they are getting used to a new home, as you and your animal grow closer and bond together. Be calm and patient with your new family member; help your new friend through this potentially scary time. 16

He became known to the wider public in 2012 when he went missing and was then discovered in a nearby parking lot 25 days later.

Pui Pui Pui Pui was first spotted in a Yuen Long river back in 2003. The appearance of a real crocodile in the city became headline news and people flocked to the river to catch a glimpse. Dear Mr. Know-It-All, What are those glistening squashed birds I see hanging up in the market? How on earth do you eat them? – Ducked If I Know Ah, the venerable Chinese pressed preserved duck, or 臘鴨 (lap ap): a winter specialty that’s mostly fallen out of favor in a healthier world. You’ll see them hanging up in the colder months, alongside the more common preserved pork and liver sausages. This isn’t the pressed duck of fine French cuisine that’s also known as canard au sang, “duck in blood.” For that recipe, a duck is strangled (to retain the blood inside the

duck, of course) and roasted. Then the bird is carved and the carcass goes into an ornate press, which compresses the blood and marrow into a thick, rich sauce. And they say only Hongkongers will eat anything at all. So, what goes into making a Chinese preserved duck? Time, mostly. The duck is partially deboned, seasoned with spices and wine, salted, and then pressed flat by hand. After that it’s skewered and air-dried for a few days. Simple enough, but the salt, the fat and the drying all combine to keep the meat from spoiling. But is it delicious? Absolutely, and it’s incredibly easy to cook. Try it yourself: Prep a serving of rice in a rice cooker and put a piece of the duck on top. As the rice cooks, the duck steams and the flavor-packed fat renders out of the bird, soaking into the rice beneath. When the rice is done, take out the duck, chop it up and serve with your oily, fragrant rice. You might want some vegetables to go with it: It’s not exactly on the healthiest end of the Cantonese cuisine spectrum. But for a comforting, warming winter dish, lap ap is hard to beat.

So if in 2015 you are planning to find a new place, my one tip to find the right place would be to find an agent that understands what you are looking for and stick with them.
