The List is incredibly pleased to be celebrating one year of vibrant life, with the people of Trondheim and our partners. The city is growing, and so are we! We’ve glided though a year of action-packed events and picked up many amazing writers, illustrators, photographers and partners along the way. We feel blessed to be in Trondheim, a place with no end to activity. This is the inspiration for our increasing editorial and listings sections. Thank-you for contributing dear readers, supporters and friends; you are the most important resource to The List. Fittingly, issue 7 is all about celebrations. We’ve allowed our love of food and drink to guide us through some of the most cherished seasonal traditions at this time of year. Our writers have embarked upon food tasting experiences leading us into obscure stores, new kitchens, and ending with great tips. Whether you give it as a present, plan your ’julebord’ around it, or just plain experiment, you’ll find that it’s the source of most of our socialising. Food and drink is at the core of celebration. A big thank-you is in order to Trondheim’s world-renowned chefs, innovators, and food and beverage producers, They opened their doors…and our palettes. So readers, tuck in.

Cornucopia of abundance Words: Kyle Havlicek-McClenahan Illustration: Iria Isa Samuelstuen

From the family gatherings of ritualistic imbibition, to the presidential Turkey pardon at 1600 Pennsylvania Avenue, Thanksgiving has become the poster child for a holiday of contradictions, excess, and cozy festivities. Up until modern memory a celebration of annual harvest, Thanksgiving left long ago the humility of historical accuracy for a more dramatic take on the colonial settlers’ first harvests. Though this particular history is as contested as it is miserable, and the new American colonists would spend the next two hundred years committing a continent-wide genocide on Native Peoples, it does provide modern merrymakers with the culturally contextualised excuse to give thanks. Thanks for what, then? While traditional celebrations are most often justified on religious grounds,Thanksgiving has maintained its popularity despite being a predominantly secular holiday. This begs the question: are our justifications for celebration meaningful... does that matter? In the past, celebrating a harvest was a near and dear part of survival in the yearly struggle of agriculturally-based societies. The success of the winter and the following year greatly depended on the fall’s crop yield. A bad harvest signified not only tough times ahead, but also the potential to propagate misfortune into the distant future with an anaemic seed supply for the sowings of spring. Oh how much has changed. From my experiences, Thanksgiving was but one

8

THE LIST trd T HE SE VE NT H ISS U E

of many yearly occasions for even greater than normal superfluity. We are constantly indulging more than during even the greatest Thanksgiving of a century ago, and this may seriously affect our sense of entitlement for an increasingly unjustifiable consumption. Without being faced by the immediately existential, how do we differentiate between and attribute meaning to moments as excessive as they are selfish? Despite my vocal opposition, let me reap what I have sown with a bit of equally disheartening honesty. I’m one of them, one of you perhaps, all too worthy of blame. I’m guilty as charged for being a Thanksgiving-loving, fall party-going, “kos”-seeker of the summer’s wane. Now I have become Cornucopia, destroyer of pies. I’ve even done my very best to bring this gravy, whisking, pastry-table pardon of a holiday to a country in no need of another reason for the commemorating of fortunes. But I am in love with being the purveyor of such feasts, and as I baste multiple birds in the oven I rejoice as the sardonicism of overconsumption charges tradition as its raison d’être. Thusly I escape account to become the harbinger of a full holiday table, and oh isn’t it wonderful! But I ask for no defence, only a wish, that we all take a step back this coming holiday season. Traditions are wonderful while spending time with family and friends is to be celebrated. However, in the real world, there is no cornucopia until one has much more than another. Together, we enjoy the heights of comfort that society has to offer, in a golden window of time in which our species has prospered beyond measure.Yet many do not know this to be life. In our world, every day is more excessive than all feasts of fall times past. Though a crucial issue faced by the modern citizen, the realities of hunger and inequality have become tropes of themselves. Diving headfirst into fall with renewed zealousness seems to me the best way to further amplify the problems of our shared world. So, this holiday season, please remember that celebrating family, wellbeing, and joy, means doing it for everybody. Let’s substantiate our toasts in the coming months with renewed focus on solving our world’s inequities, and wait for the highest fruits before we go to harvest.

here is always one day a year when, unmistakably, you feel the difference. Hairs stand on end, the wind bites with a particular sharpness and the sun fades into an incandescence that portends but one thing. Your bones begin to ache, not in reprisal, but rather acknowledgement of the long, impending nights ahead. From time immemorial, human cultures have ushered in the autumnal equinox and fall season with celebrations in gratitude for the bounties of the late summer harvest. Grain stores are brimming, herds are thick in meat and bone, and life, in those precious moments before darkness, seems as rich in comforts as in spirit. A hope exisits. In western cultures, it is the cornucopia; a great horn spilling with food, which has come to represent this hope and time of abundance. What comes to my American mind when thinking of ritualistic overindulgence? Why, Thanksgiving of course.

LOV E

OFFICE Words: Jaya Thomlison Photos: Nina Henriksen Five

Every now and again you may find yourself caught in contemplation of ‘the small things’ in life. Be it the reflective pauses, spontaneous moments of happiness, or perhaps a song that leaves you longing. Instances like, when you capture an expression on a person’s face that you absolutely adore. These are the moments of pure existence that fuel the work of Trondheim’s cherished photographer, and self-proclaimed ‘love-pedagogist,’ Nina Henriksen Five. A sucker for love,The List caught up with Nina to find out just exactly, what is a Love Office? To start with, what, pray-tell, is a Love-pedagogist? You may be able to find hints of it in her work, which has lined various cafes and restaurants in town, such as Søstrene Karlsen. Otherwise, quite simply, apply the fundaments of sociology and focus on behaviours of love. Love 101 from Nina: ”there is nothing in between – if you wonder if you have been in love, than you haven’t – the feeling of being in love doesn’t need to be described because it is so strong and life-overtaking that you know”. ”Everyone should fall in love at least once in their life,” muses Nina Henriksen Five. Nina is from Mo i Rana, having found herself in Trondheim oncoincidental, yet synchronistic measures. Nina was living in Oslo, visitied a friend here in Trondheim, and after an ad hoc suggestion to share a flat, found herself in Trondheim indefinitely. Nina studied at NTNU and was the first to academically study the affect of heartbreak from a sosiological perspective, thereby securing the title ’Love- pedagogist’. Soon afterwards, she was on her way to Copenhagen when a man approached her at a cafe, just to tell her that he thought she was alluring. Unsurprisingly, This man quickly became her husband. Today Nina has collected a big family of all shapes and sizes, complete with four children and two ’bonus kids’. Love-pedegogy is in works at her home ”we love who we have. My own pre.school kids have nieces and newphews younger and older than them. It is not so important who is who. Who is mother, brother, cousins, aunts…we are just one”. Curious about your own state of love? Book a free appointment at Nina’s Love Office. Anybody can book an appointment, think of it as a visit to the type of therapist one actually wants to see. ”And remember, Love doesn’t just mean romance, it could often be a friend wondering about a particular issue to solve”, advises Nina. Keep your senses open for Love Office this fall. You can book your own timeslot for 30 minutes to discuss anything at all love-related, or even just to get a little boost. Come wallow and share your lovesickness, talk about life, plans, jealousy, marriage, friends, anything at all. Just follow your heart’s desire. Love Office

Musings of BrukBar/ Blæst’s booking agent Andrew Christopher Anfinnsen. One of our dearest Trondheim bookers & promoters, Andrew Anfinnsen from BrukBar/ Blæst and Trondheim ElektroVerkstad brings you his take on this year’s best local, independent releases. If you haven’t heard these tracks, get on soundcloud/ youtube/ spotify/ Tidal this very instant

and turn up the bass.

TRONDHEIM RECORD LABELS Everybody loves music. Everybody loves Trondheim! So what could be better than good music from Trondheim? I’ll tell you what; vinyl releases of great music from Trondheim! The List asked me to write some music recommendations for your holiday playlist, and I can’t think of anything better than supporting your local record label. Take a look at their back catalogues for a neat gift idea.

CRISPIN GLOVER RECORDS At this point, Crispin Glover Records could be regarded as the distinguished elder statesman of Trondheim labels, It’s still going strong after a decade-long run now. Find your Motorpsycho-related bands here, like: Spidergawd and Ryanbanden, or brutal noise duo Monolithic. Even the city’s most revered hip-hop group Gode Ord Dør Sist call this their home. Reputable label owner,Torgeir Lund, is still the guy that punk stalwarts like Steve Albini or Jello Biafra want to hang out with when they’re in town! www.crispingloverrecords.com

RIOT FACTORY These guys have played an essential part in the vibrant Trondheim indie scene over the last few years. They look beyond the city limits and encourage all bands to push the envelope, resulting in connections to Oslo, Stockholm and Copenhagen. They have beautiful releases by Dråpe, Gold Celeste, Snøskred, Therese Aune, and Highasakite’s debut record. Also, make sure to search social media for «Alternativ Julekalender» - because every December, they release an excellent online advent calendar. For every day up until Christmas you’ll get a new and unreleased songs recorded by a plethora of great Norwegian indie bands! www.riotfactory.no alternativjulekalender.no

TERRATUR POSSESSIONS Although black metal is one of Norway’s largest musical exports, it still retains its deeply underground, almost mystical status within the country. Rightly so - this label and these bands refuse to do anything besides releasing genuine music. No fancy promotional campaigns, just a beautiful, dark, aesthetic that runs through all artwork and of course the music itself. Unassuming label runner Ole Aune is also behind the black metal festivals: Nidrosian Black Mass in Belgium and Laudata Nex Magicka in Trondheim. Selling out tickets as quickly as his records, all the while staying true to his blackened core. terraturpossessions.com

hatever your faith, December is a time to reward your senses after a year’s hard work. The contrast of dark indigo skies lit up with candles and white fairy lights excite the eyes. The sound of reindeer hooves trotting along fresh snow, of children’s giddy laughter, of carols being sung and of multiple generations planning a festive party fill the air. It might be cold, but December sure does warm the heart. As an adult, the month running up to Christmas is more exciting than the event itself. For children, it’s the undisputed highlight of the year. But young or old, we can all get together and share in the plentiful food and drink on offer at Christmas time. While most Norwegians’ minds turn to the traditional julebord, don’t overlook the region’s Christmas markets as an opportunity to enjoy local food and drink in a fine festive atmosphere. I don’t know the science behind it, but the sweet aromas of roasted chestnuts and mulled wine create a bonkers reaction in the mind. Before you know it your bank account is lighter and you are full of Christmas spirit! Although considered by some as a modern tradition, the history of Christmas markets actually dates back to Germanic Europe in the late middle ages. The earliest on record was Vienna’s “December market” in 1294. That Germanic tradition continues on in much of Europe, with “Frankfurt markets” dominating the centres of many UK cities for example. Yet in Norway, the markets remain intimate and take on uniquely Norwegian characteristics. Despite its remote mountain location, Røros is the unofficial capital of local food in Norway. Reindeer, moose and grouse are plentiful, not to mention incredible mountain berries. There’s a strong heritage of local farmers producing meat, fish, vegetables, and dairy products of the highest quality. If you’ve never taken the two-and-half-hour train journey to Røros, the weekend of 3-6 December is the perfect time to tick it off your bucket list. For just one weekend a year, the former copper mining town transforms into one of the most charming festive environments you will ever experience, made all the more enticing by the tasty local food on offer. The 15,000 fowl and hundreds of cows owned by local producer Galåvolden Gård produce a constant supply of milk and eggs for their unique range of products including Røros cake, Røros ice cream and Røros Cheese. The names might not be the most original, but the quality is indisputable. The Røros Julemarked also allows you to get up

close and personal with another Norwegian christmas tradition, pepperkakehuset; the gingerbread house! In the weeks leading up to the julemarked, schools, clubs and local organisations team up to construct and decorate gingerbread houses, often in the style of local town landmarks. The mouth-watering display is well worth a look, but be warned, it will make you hungry! Another important word of warning, Røros is one of the coldest parts of Norway so wrap up warm, especially if you’re taking young children. Of course, if you want to save your excitement until closer to Christmas, Trondheim’s own julemarked runs from 11 to 20 December centred as always on Torvet, where over 100 stalls and 130 cultural activities make up an action-packed program. Inside the giant lavvo you’ll find risgrøt served with butter, cinnamon and sugar, fishcakes from Ågot, bratwurst from Sæther Gård, Elk burgers from Moen Gård and reindeer from Fjellvilt. You can try the Nisseøl Christmas brew from Inderdøy Gårdsbrygerri or and of course, enjoy a glass of steaming hot mulled wine, or gløgg as its called in this corner of the world. Every evening (yes, even Sunday!) there will be live music at 1600 and 1800. Our recommendation is local act Sugar Louise at 1800 on Thursday 18 December. Their brand of lively pop-punk will keep you warm whatever the temperature. If you’re away from Trondheim in December, you can still get a taste of Christmas at the Trøndelag Folk Museum at Sverresborg on the weekend of 28 & 29 November. See our listings section for full details of this and all the other Christmas events in the region. Further afield, the Jamtli Julemarked in Østersund is Sweden’s biggest Christmas market with over 20,000 visitors each year. The historical buildings at Jamtli create a wonderful setting for the old-fashioned marketplace where children can enjoy sleigh rides, dog sledding and pony rides. This year’s market coincides (4-6 December) with the end of the BMW IBU World Cup in Biathlon, so it could make an ideal pre-Christmas weekend break for the winter sports fan. It’s fascinating to experience another cultures’ takes on Christmas. Throwing yourself into new traditions such as the julebord and julemarked can help to deal with the emotional experience of being away from family and friends at this time of year. The only thing missing from the otherwise magical Norwegian Christmas experience is Santa Claus. Sorry Norwegians, but julenisser just aren’t the same!

he winter season is once again upon us, with its long, dark nights and freezing temperatures. Yet this is also when many cultures and religions celebrate, lighting up the dark skies with fireworks, filling the air with the smell of fragrant foods and decorating the dingy with tinsel and the flicker of a thousand candles. From the American Thanksgiving to the Indian Diwali, from the Jewish Hanukkah to the Christian Christmas, it

is a very busy period to plan for. Shopping for presents, cooking, buying food and, most importantly, eating and drinking! It is the time of the year that I both dread and look forward to, because on the one hand it’s freezing cold – and I’m a Nigerian girl whose idea of cold for some 20 odd years was an average of 20ºC! - but on the other hand it’s a period I still get ridiculously T H E L I ST t rd TH E S EV ENTH ISS UE

excited about! Eat, drink, shop and be merry ‘til we drop and not feel guilty about it. But if there is one thing I have come to realise from living in Trondheim, it is that living abroad changes the way you see and celebrate your cultural and religious traditions. So, do we try and eat what we are brought up on? Or do we delve into what the fjord has to offer? A mixture of both perhaps… with a seasoning of other cultures thrown in for good measure. You end up having a bit of what you remember and choose to celebrate, a bit of how your new home celebrates its holidays, and in some cases such as mine, a little bit of how your partner remembers and chooses to celebrate their holidays. So I get to

try the pickled herring and Aquavit (erm...no comment), participate in julebord and mimic my neighbours by lighting up the house with countless lamps and candles. I might however, have to go without the smell of jollof rice (rice cooked in rich tomato sauce) simmering in huge pots outdoors over the burning firewood, while the men slaughter the cow (apologies to animal lovers) and prepare it for frying. But I will be including some of my partner’s German traditions, especially the eating of sweets such as the Eisenbahnschiene (biscuits baked like a train track with a jam filling and coconut sprinkles) or Baumkuchen (cake baked in layers like a tree). Even though these traditions have evolved in far

TAPS Jorg Solheim and Pål Rolfsen of Taps tell us about the beer tradition in Norway during Christmas and where you can get the best Juleøl in Trondheim.

Norwegians definitely take their juleøl seriously! In fact, beer-brewing and drinking is a very important and regulated part of the traditional Norwegian holiday season dating back to the thirteenth century, when it was illegal if you didn’t brew your own juleøl. According to history, every farm had to brew its own beer and have some sort of party with at least three other farmers in attendance. The beer had to be ready by the first of November. Failure to do so could earn the farmer a warning in the first year of default and the possibility of losing up to half of his property in the second year to the King. (Did I hear you say party town anybody?) When Jorg Solheim and Pål Rolfsen started a microbrewery in Trondheim, along with their friend Bjarke Vang, they didn’t set out to be beer connoisseurs. But that is one word you can definitely use to describe them now. ‘’We were students at NTNU and started home brewing as a way to save money on buying beer.’ ’ seven years down the line they are award winners in the art of beer brewing and run one of the most popular microbreweries in town – Taps with their beer brand called Monkey Brew. And in line with the old Norwegian tradition, they will start offering from November, home-brewed traditional juleøl. ‘’Traditionally, juleøl in Norway is dark and malty (sweet), but we also include spices that reflect the season, such as cloves, star anise and cardamom in our brew. Most of our taps will be dedicated to these types of beers during the holidays.’ ’ And for those who are really interested in the Norwegian beer tradition or maybe just curious, you have the opportunity to book a Christmas Spirit beer tasting package, where you will not only get to try up to six different beers, but will also be taken on a journey detailing the history, origin and the process of brewing these beers. off corners of the world, it is interesting how many share the same desire for sweet and savoury pickme-ups during this period. For example, the Jewish community celebrates the candle festival of Hanukkah in the month of December. Known as Chanukah or the Feast of Dedication, it is an eightday festival commemorating the rededication of the Holy Temple. It involves, amongst other things, the eating of oily foods to commemorate the oil in the menorah (the seven-branched lampstand), which burned for eight days after the temple was destroyed. Latkes, delicious potato pancakes served with sour cream and applesauce, and jelly donuts are the staple of American-Jewish households during this period. The Indian Festival of Lights, Diwali, also falls around this time of year (see Diwali case study). Sweets play an important role in this festival too: mithai are a sort of a cross between dessert and sweetmeats. But as with most traditions they never quite taste the same when you are so far from home. Sulalit Banerjee who used to run the Indian Students’ Forum (ISF) in Trondheim, and who was responsible for organising the annual Diwali celebrations, said he used to carry about 30kg of sweets back from Kolkata each year! Another newcomer to town, Leah, of Jewish heritage, says she makes do with Berliner boller and potato rosti from IKEA. “You can make latkes here, it just depends if you want to grate tons of potatoes yourself!” she laughs. The more people I spoke to, the more crossovers I found between festive celebrations: candles, celebrating light … etc. Intrigued, I took this idea to Professor Ulrika Mårtensson from the Department of Religious Studies at NTNU, and she informed me that there are a good number of different religious groups in Trondheim, many of which have cultural celebrations taking place at this time of winter (see www.trooglivssyn.no). These festivities may today be based on different beliefs or cultural background, but for some, they have the same or similar origins. “Both the Jewish and Christian celebrations are similar types of holiday originating from the Middle East. And actually, the Jews of the Middle East and early Christians would celebrate Hanukkah as the ‘light holiday’,” explains Ulrika Mårtensson. “The Nordic jul celebrations can be traced to the older, pre-Christian holiday of the winter solstice which was the marking of the longest night of the year.” Yule, as it was then called, lasted 12 days and involved the slaughtering of animals for the feast and also the drinking of ale (see Taps case study). Yule is what was transformed into the Christmas

(or jul) celebrations in Norway after King Haakon I rescheduled the date to coincide with the Christian celebrations held at that time. So actually when people say that Christmas has become materialistic and moved away from its Christian roots, they are overlooking the fact that the celebration of beer and plentiful food actually predates Christianity! Pinnekjøtt (lamb), lutefisk (aged fish) and ribbe (pork ribs) are integral to our holiday season, and even the restaurants which celebrate other cuisines are drawn back to these traditional offerings at this time of year, to satisfy that insatiable thirst for cosy, homely food (see NordØst case study). DIWALI Ashutosh Kumar and Nathaniel John Edwin from Indian Student Forum in Trondheim tell us about the Hindu festival of lights. Diwali, also known as the Festival of Lights, is a very important Hindu festival widely celebrated all over India. The exact date always depends on the Hindu calendar: this year it falls on 11 November. It celebrates the triumph of good over evil and is one of the most known of all Indian festivals among foreigners worldwide. As with most legends, there is more than one account of the origin of Diwali. Ashutosh Kumar, the representative of the Indian Student Forum (ISF) in Trondheim explained the origin of this festival. “One account has it that Diwali started as a celebration of the return of Lord Rama to his kingdom after 14 years in exile during which he killed the demon-king Ravana (who had kidnapped Rama’s wife, Sita). To celebrate his return, people took to the streets, lining it with sweets and diya lamps (think Norwegian telys, but fancier), hence why it’s also called the Festival of Lights. Another account has it that Sita, was the reincarnation of Lakshmi, the goddess of wealth, and when wealth comes you light the path to welcome it.” In India, Diwali may last up to five days, with the main celebration happening on the third day. “Diwali is mostly a family celebration, although it is customary to invite non-Hindu friends to join in the meals. We would also pray to the Hindu gods of Lakshmi and Ganesh, for blessings. But the main highlight is the setting off of fireworks which happens in the evening,’ ’ explained Ashutosh. In Trondheim the ISF organises an annual celebration festival, the objective of which is to “provide a place for Indians to celebrate together and also showcase our culture to the Trondheim community”. There will loads of food and a group of Indian musicians from the UK. And because the fireworks are such an important part of the festival, they were able to get a permit allowing the display of fireworks last year (fireworks are usually only allowed on New Year’s eve in Trondheim). This year, the festival will be celebrated along with the International Yoga Day. In partnership with some yoga schools in Trondheim, there will be free yoga classes available to both kids and adults. The ISF Diwali event is actually on 31 October this year, so if you are reading this in time search on The Indian Students’ Forum on Facebook for more information, and prepare yourself for a mountain of sweets. “We have one dinner which is Swedish so I buy the Swedish-type pickled herrings from Ikea and I make meatballs and salmon with a typical Swedish potato dish. And then we have Pinnekjøtt the second day of Christmas. And also (due to English family ties), the third day of Christmas is turkey.” Quite a lot of cooking it seems? “There’s not much else to do because everything else shuts down here during Christmas!” Ikea mentioned twice in an article about Christmas food and drink in Trondhiem? Sacrilege! OK, a guilty secret for many of us I guess, but there is so much more on offer in Trondheim, especially in recent years. This past year has seen Trondheim come of age as a ‘food destination’: Gordon Ramsey’s rave reviews; the opening of Mathall; more visitors to the Food and Drink festival than ever before; independent breweries popping up everywhere; new restaurants to sink your teeth into… the list goes on. Trondheim has always had great ingredients on its doorstep, but the food culture has previously limited their use. “Norway went from being a colloquial, farming community, to being a super prosperous developed society, practically overnight,” elaborates Mark Hall, an Englishman working in the new French charcuterie Alma Mater. “Before the oil money, Norwegians bought fish from the fishermen and potatoes from the farmers. There was not such a culture of small grocers and butchers like in England. It went from farmers to supermarkets. It is only now that people are looking to introduce these small outlets.” This trend is certainly supported by markets like Bondens Market and shops like Mathall, which specialise in making locally produced (and delicious) food available to residents. And earlier this year Trondheim signed ‘The Trondheim Food Manifesto’, which provides guidelines for how local specialities can be included into everyday life. “Trøndersk

NORDØST Håkon Solbakk and Peter Gjerde on spicing up Norwegian Christmas classics. If you didn’t already know, NordØst is that fusion food and cocktail place that opened up in Solsiden last summer and has had a full house every since. As the name implies, the restaurant aims to serve traditional Nordic foods with an Asian twist; a meeting of northern and eastern flavours. ‘’Some of the best seafood produced off the coast of Norway is exported to Asia. We are bringing the Asian tastes and flavours back the opposite way. Our goal is to offer something new and exciting to Trondheim when it comes to high quality fusion food and cocktails,’ ’ boasts 23 year old head chef, Håkon Solbakk. Woah! 23? Isn’t that quite young to be heading an experienced team of chefs and hoteliers? But Håkon has quite an impressive resume himself. Starting out as an apprentice at the Rica Nidelven in 2009 as a chef ’s assistant, he has since gone on to be not just a head chef, but also a member of the Norwegian National Culinary junior team that won bronze at the Villeroy and Boch 2014 World Cup in Luxembourg. He is now a member of the senior team preparing for the Olympics in 2016. Contrary to expectations, Håkon says he didn’t always know he would be a chef. Apparently he could have chosen to be a carpenter! ‘’After high school, I had to choose between going to a culinary school or a building one, I always had an interest in creating things with my hands so I had these two options.’ ’ The List got the chance to go behind the scenes at NordØst where all the food magic happens. Along with Peter Gjerde, the nestleder at the restaurant, Chef Håkon took us through a jul food journey while also teaching us about the food culture around this season in Norway. ‘’Pinnekjøtt is very popular and quite typical in the western areas of Norway at Christmas. It is lamb preserved in salt cooked with potatoes, carrots and cabbage. Ribbe is also popular, especially here in the Trøndelag region as well as Lutefisk.’ ’ And though we were informed that Norwegians like their Christmas food traditional (‘’they don’t want you kidding around with it’’), this winter Chef Håkon will be cooking up some classic dishes with a twist of Asian flavours to it. “We want to challenge Trondheim to be open-minded when it comes to new flavours and presentations of the local produce they know. We think it`s important to offer something different from everyone else, and want to be a clear first choice for those that dare to explore something new and appreciate great food, made by some of the best chefs in Norway,” says Peter. The restaurant is also promoting a culture of pre-dinner cocktails. Their signature cocktails menu, which is in line with the north-meets-east theme, has achieved a 99% buy-in from their guests. “How cool is that for a new place in little Trondheim?” asked Peter enthusiastically. The bartender recommends a Karatespark, consisting of Norwegian potato vodka infused with wasabi, fresh limejuice, sugar and sea salt, topped off with lime zest oil and olive oil infused with spinach and tarragon. Some of the mouth-watering dishes we got to taste include the crispy smoked salmon, the steamed buns with pork belly filling, topped with karve (caraway seeds). Of course the classic Pinnekjøtt was not left out, but this time it was cooked, mashed and fried in tempura. Finally, we were topped off with a dessert of crispy meringue, filled with passion fruits and chilli mango ice cream. For us, tasting these dishes for the first time, it was an amazing new introduction to a whole new generation of Norwegian Christmas food and needless to say there was nothing left when we were done ‘tasting!’ Everything can be ordered to share as a sort of julebord. As Peter explained to us, ‘’julebord doesn’t necessarily mean a sit-down buffet meal at Christmas, but more of a get together with friends, family, colleagues to share a meal.’ ’ Head down to NordØst this Christmas, where carpentry’s loss is very much fine cuisine’s gain. NordØst has been closed for refurbishment and reopens week 45. See nordoest.no to make a booking.

Matmanifest promotes the history of the products, the food traditions of Trøndelag, inspires children and grown ups to explore and use these products more frequently,” states Aslaug Rustad, Daglig Leder of Oi! Trøndersk Mat og Drikke. So it’s very much all change on the Western Front, and also in mine and my partner’s lives, as it is our first Christmas as parents. Our roles at Christmas have changed and our daughter will be visited by the German Saint Nicholas, the Nigerian Father

Christmas and Norwegian julenisse. But it is this overlapping of traditions that make the holidays in Trondheim very interesting, because you get to experience a bit of different cultural and religious celebrations while also keeping your traditions. Fine by me, so long as I get to taste a bit of them all in the process!

Trondheim Documentary Festival From moonshine to Muhammad Ali, from refugees to genocide

Trondheim Dokumentarfestival is in its seventh year, and is serving up a menu of the best documentaries within mediums such as film, photo, art, journalism and radio. This year, they have a total of five exhibitions. Amongst these are an exhibition with pictures of refugees from Syria in collaboration with the Red Cross, with photos being displayed in shipping containers outside Dokkhuset. Some interesting, talented people will visit the festival this year. These include Neil Leifer (US), often referred to as the world’s best sports photographer, famed for his work with Muhammed Ali in particular. Sherwood & Pinch

Two generations of bass culture decend on Trondheim

This year, the dubstep duo released the album Late Night Endless. Electronic dance music, dub pioneer and record producer, Adrian Maxwell, is coming to town. Adrian, better know as Sherwood, is from the UK, has been a member of the band Tackhead, yet considers himself tone deaf. Which is perhaps the motivation behind his focus on sounds and noises, rather than melody. In attendance is collaborator Rob Ellis, better known as Pinch; a dubstep artist from Bristol, UK. He is known for fusing styles such as Reggae, World Music and Dancehall with dubstep. Andrew Arnfinsen, booking manager at Brukbar/

Blæst says: “BrukBar and Trondheim Elektroverksted (the promoters for this booking) have a long history of presenting quality artists of British bass culture to Trondheim. Some would say that BrukBar and its basement club Supa (2008-2014) was built on this foundation. Even though some things have changed throughout the years, we still pay tribute to this longstanding tradition that has spawned countless legendary nights. Sherwood & Pinch are exceptional in that they combine two generations of bass culture: Adrian Sherwood, who started out producing dub already in the 80s, and Pinch, who in his own right is one of the true and original figureheads of dubstep throughout the last decade.” The pair make their way over here off the back of their recent album release Late Night Endless, which

has garnered rave reviews all over the world. Their live show, plugged through Brukbar/Blæst’s epic sound system is sure to be huge and heavy. If you were present for the legendary The Bug show at the same venue, back in January, then you will have at least an inkling what to expect. Dark, heavy and loud, but still something that will make you dance your socks off. Andrew expects that everybody who appreciates bass, electronic music and a great club night to show up. ‘Aight? Feminalen Music Festival A series of concert by amazing female artists The idea to create a feminist music festival was launched on a closed Facebook page in autumn 2013, when a group of women in Trondheim decided to stop talking about the gender differences in the music industry, and instead do something about it. The second Feminalen will be held at Rockheim, 1315 November, presenting not just the best female but some of the best Scandinavian music acts. This year the festival’s focus is women in urban music and will showcase many of the exciting upcoming artists from the Trøndelag region. Local artist Marie Denise’s magical pop universe will kick off the festival, followed by the Angola-born Bergen resident Miss Tati (see pictured), who mixes elements of hip-hop, jazz, and funk into catchy tunes. Trondheim’s Anja Skybakmoen will finish the Friday gigs with her special and mesmerising jazz-influenced pop that combines timbral guitars, synths, and energetic drums. Saturday starts with a primal rock’n’roll roar, when Harøyas Kari Harneshaug enters the stage at Rockheim. Next up is Stavanger’s bæd ass (pun intended!) rap queen Izabell, who hopefully will perform her latest single ‘Bæd’ among radio hits ‘Ka vet du’ and ‘Kontroll’.

Upcoming electronic pop act Ary will then sooth the audience before Saturday’s headliner, the much-loved Swedish rapper Cleo, who knows how to finish off the party. With ten years in the game, she is one of the most respected and well-known rappers in Sweden. “Cleo has received amazing critics, so we are very proud to present her to our audience,” says Feminalen’s Ragni Nergård. Feminalen’s main agenda is to work for an improved gender equality in the Norwegian music scene. “We are all about showcasing diversity and female role models on and behind stage. By doing so we hope to get more females into the industry. We believe that more women working with music will give us both more diverse and exciting music and a better working environment,” explaines Ragni. In addition to the gigs at Rockheim, Feminalen will host panel discussions, music documentary screenings, and club music. Roar Øhlander Photography Exhibition ’En spurv på en snor’ ‘A Sparrow on a String’ is a time-travelling retrospective that brings you, the viewer, through the period when Norway went through changes (mostly for the better), from post-war frugality to oil-ignited wealth. Roar Øhlander has been an active photographer capturing the social and economical changes this city has gone through since the late 60s. His photography takes you on a journey through the 70s and 80s, a period during which culture in the city grew and blossomed, whilst industry and mechanical production largely dispersed. The documentary-styled biography shows the differences between living then and living now, casting the viewer back and forth between two timelines, and bringing an interesting and personal perspective.

Are you in the mood for some spooky experiences in Nidarosdomen? If the idea of a creepy church tour makes you duck beneath the covers and squeel “No way!” then maybe this is not for you. But don’t go calling the Ghostbusters yet, it is just an old church cellar after all…. Or is it?!

largest collection of medieval tombstones in Norway. Not to mention, St. Olav himself is buried in the back of the church’s altar. Olav was canonised in 1031 after it was reputed that his nails and hair had kept growing for whole year after his death. No wonder people think it’s haunted.

All Hallows Eve (or Halloween as we know it) may have come and gone by 1st November, but it can still be spooky if you spend your afternoon wandering around Nidarosdomen catacombs. They have a skeleton which will be a lot more realistic than the plastic one left hanging on your front porch because… well, because it is real. And you have to be at least eight years old to be able to endure this ghostly tour. What cant the seven year olds see? Now I’m getting scared.

Back in the day only a minority of people had the honour to be buried near St. Olav, and now you get to walk around like it’s nobody’s business and experience all the historical treasures Nidarosdomen has to offer. This is a re-occurring event and you can ‘enjoy’ this guided tour every weekend from the 1st of November to the 20th of December. Grab a pal and set the date… but seriously, grab a pal because you don’t want to do this alone. (JS)

Hilde Olsø / Norsk rettsmuseum

The Madness Prison exhibition addresses the handling, confinement and treatment of the dangerously mentally ill in the 20th century. It is the product of collaboration between NUTNU and Brøset Competency Centre within a research project ‘The Mental Machine’. The two correctional institutions, Asylet and Reitgjerdet hospitals, were the first two in Norway to deal with such dangerous and lunatic criminals. The National Museum of Justice building was a correctional asylum for dangerous and extremely mentally ill criminals, from 1895 to 1963. And the hospital Reitgjerdet, that was once part of the correctional facility, is today’s psychiatric department of St. Olav’s Hospital. Humanity has a funny way of learning how to deal with different challenges and one of the most gruesome lessons we learnt was that poking around brains and torturing the mentally ill, whatever they

There will also be fun activities for the kids, including local children’s photographers who will set up a studio to take the kiddies’ photos, and the christmas cards with their faces will be ready for pick up in a week or so! But, best of all, it’s all in the name of a good cause. Amadia International is a local charity started in 2011 – with international projects in Uganda and Ukraine to mention but a few. The last few months they have been working around the clock to collect and send clothing south to help the Syrian refugees arriving in Europe. All proceeds from the event will go towards paying for shipment of a lorry to help refugees, and to support the charity’s own Edessa School in Uganda.

Madness Prison Free and open to all first Sunday of the month Are you interested in crime and psychiatry? Are you a fan of the creepy and the bizarre? Then there is an insane exhibition in the Norwegian National Museum of Justice, free and open to all on the first Sunday of the month. Care to delve inside?

How about a total family-friendly, stress-free Seasonal Faire, where all proceeds go towards charity? Local aid organisation Amadia International, is hosting a no-fuss, fun day where you can not only get your Christmas shopping out of the way, and entertain the kids while you’re at it. There will be hand-made gift for sale – including knitwear, art, ceramics, and homemade edible produce like jams, cookies and all things yummy.

Organiser Ida Bondø Lee-Wright says that all artists and contributors have donated their items and time for free: “I am so grateful, people have jumped at the opportunity to help us. We have got professional photographers Studio Elle Melle to do the photos, and Blink Print will print the cards for us – and all for free! Not to forget all the people who have been making items for us for months already! I think this will be a great event, and the aim is that both parents and kids find it a lovely day – and let’s face it, getting some of the Christmas ‘tasks done and out of they way quite early in the season!” “It is also a great way to learn about a great Norwegian tradition – the Tombola/Åresalg. Like a mini-lottery, where you buy tickets and can win all kind of prizes. It’s a really common thing to find at a Norwegian faire – and lots of fun waiting to see if your numbers get picked!” (IL) 21 N O V E M B E R Digs, Olav Tryggvasonsgate 30 10:30 Free

Christmas at Sverresborg The cream of Trondheim’s seasonal markets Sverresborg is a folk museum that offers many traditional experiences for young and old, especially during the holidays. One of them is this pre-Christmas event where the staff eagerly await you on the first weekend of the Advent. “Christmas music will give you the Christmas spirit. There will be market stalls with Christmas gifts, activities for adults and children, and much, much more,” says Annika Honggard, planning coordinator for Sverresborg folkemuseum. This has become a regular feature on The List’s advent calendar. See you there! (JS) Are you already getting in the Christmas mood? Are you eating porridge with extra cinnamon? Buying ornaments even if you already have three full boxes in the attic? Wishing for snow?! Oh well, seems you are one of those people who are very excited and can’t wait for Christmas. In that case, we have some amazing news! [drumroll] … A pre-Christmas! … [crowd goes wild!] … Christmas Market!

Join Santa and his merry elves in a great festive experience at Sverresborg! Get warm next to a campfire, listen to some music in the Christmas spirit, be there when the tree lights up – it’s magic! Enjoy delicious christmasy food and shop ‘til you drop in the cozy Christmas market. Where better to be and what better to do on the 28th and 29th of November? Don’t answer that, just put down the dates because this will prove to be one of your better seasonal ideas anyway.

Schönheitsabend The je ne sais quoi of great ballet

2015 has been an incredible year for Avant Garden, with recent theatre festivals SPKRBOX and Bastard demonstrating how the artistic medium prevails. In December two of the stars of last year’s Bastard festival, Florentina Holzinger and Vincent Riebeek, who brought us ‘Spirit’ and ‘Wellness’, return with their new production ‘Schönheitsabend’, a dance choreography providing some timely reflection.

THE LIST trd T HE SE VE NT H ISS U E

Guro, an actor and performance artist herself, anticipates a nonlinear, playful, civilization critique, of intense proportions. “Florentina and Vincent are known to create their own crazy logics on stage. Their works are in the meetingpoint between chaos and total discipline. Schönheitsabend creates a playground for their excellent technique and their crazy brains. It is going to be really beautiful and really confusing.” (WL) Maruice Korbel

Schönheitsabend means ‘Beauty Night’, and promises to be somewhat of an homage to the famous ballet dance couples of the early 20th century. Couples such as Vaslav Nijinsky and Bronislava Nijinska, and Anita Berber and Sebastian Droste, who were revered by audiences. They were symbols of perfection, performing night after night, creating the illusion of unattainable exoticism. But even during this reinvigorating period of the art’s development, considered to be a purple patch, the artists were constrained by societal norms and the restrictions of the form. “Ballet dancing is all about having immense control over your body,” explains Avant Garden’s Dramaturg, Guro Hustad Stugu. “Contemporary choreographies however are not always based on body and movements. Dance can be abstract or even outright ugly, or even dealing with just words, but people still expect it to be beautiful.”

challenging the existing norm of what was expected. Florentina and Vincent are going to revisit this tradition and recreate the great couples of the era.”

“From early 1900 to the late 30’s, many choreographers and dancers were looking to non-western cultures for inspiration; the famous Sheherazade for example, which was based on 1001 nights. But the belly dances on the big stages were never going to be as explicit as the originals. Even though some couples like Droste and Berber made their fame through

XMAS Jam Your path to the X-Games (2016) participants with an age between 6-45, hopefully some international, plus an unknown number of spectators!” raves Joakim Ulseth, board member, media guru and ramp designer at TSA. “On the top of everything else we’ve been given the honour and responsibility to qualify two out of total of eight Norwegians to X-Games 2016 pre-qualifications, being held in Oslo for the first time (February 2016).” The weekend promises to be an amazing experience from beginning to end, with top-class skateboarding in both ‘street’ and ‘bowl’, and separate classes for junior, senior, girls and Amateur/Open (this is the top level, those who are on their way to being pro or want to compete against the best). There will be concerts, afterparties, a free BBQ and free entry for both participants and spectators. “We’re also doing nightskate on the Saturday with small, fun contests and film showings for those who are not going to the afterparty. This is mainly those under age of 18. So XMAS Jam will be a lot of fun for all ages,” said Joakim. For more information on this XMAS Jam, other camps and comps, regular events and meet-ups for skaters, kick-bikers and BMXers, check out trikkestallen.no (WL) Know that feeling when the Kommune begins gritting the roads and you start slamming because the gravel gets under your wheels? Or when you turn up to your favourite skate spot and find it has been converted into an ice rink!? Well have no fear, Trikkestallen skate park is just a power slide away and is never short of insane events to keep you buzzing this winter.

XMAS Jam is one of the biggest skateboard contests in Norway, touching down in Trondheim this December for the 16th year in a row. Organised by Trondheim Skate Association (TSA), it attracts skaters and spectators from all over Norway with big tricks and big cash prizes to match (a total of 50,000 kroner up for grabs). “We are expecting between 150-200
