n the day of flying back to Thailand from the Mahabharata kingdom, at the hotel I incidentally met a good-humored and tall guy with his unique and attractive skin-head style. He is the first professional hairdresser who charges performing fee starting at $2,280 – $15,000/ time (I couldn’t stop laughing because of the never heard of hair-cut price ever). But those who have had the opportunity to get Rossano Ferretti for creation of hair-style in his own, they would certainly get a feel of the brand. A well-furnished young guy from Parma, a small town in Italy, drove himself with the strong commitment and obvious attitude to be the world-class professional hairdresser. Along with the specific vision in life and passion in what he does, everything was built by his hands. “Rossano Ferretti” moved him up to the highest level in the professional field at the forefront of the world and is well-known till today. The conversation was cordial and simple during breakfast at 9 a.m., as appointed (Have to be on time…because his time is worthy as he has to travel all the time and plan should be clear at the arrangement.) Rossano Ferretti is humble but highly self-confident, so we were sharing opinions which I believed could inspire those who are determined to follow their dreams with a clear goal. “When I was young, I was a very good looking boy…with my long hair tied in a ponytail liked yours. (The Interviewer tied ponytail) When I was in my early 20’s guy, my lovely hair was gradually falling and that was a sign of chrome dome! Then I decided to shave it all off (Laughing) …Do you know what happened? The skin head trend became trendy…well I would say… I invented the trend! I have kept creating my own trend until today. Currently I do not have time to cut hair for anyone. Almost my income will be donated to charity as well as hair cutting for charity. As this stage, I would like to do something for others and return profit back to society. Reincarnations Hindu Gods. Lord Ganesha

Ganesha (also known as Ganesa or Ganapati) is one of the most important gods in the Hindu pantheon. For the Ganapatya Hindu sect, Ganesha is the most important deity. Ganesha is highly recognisable with his elephant head and human body, representing the soul (atman) and the physical (maya) respectively. Ganesha is the son of Shiva and Parvati He was created by his mother using the turmeric paste and earth itself moulded into the shape of a boy. As Shiva was away on his meditative wanderings, Parvati set her new son as guard while she bathed. Unexpectedly, Shiva returned home and, on finding the boy, and outraged at his impudence in claiming he was Parvati’s son, Shiva called for his gang of demons, who fought ferociously with the boy. However, the youngster easily held his own against such fearsome adversaries. This surprised Shiva and the usually peaceful Shiva decided he would have to fight him, and in his divine fury severed Ganesha’s head,

killing him instantly. At the commotion, Parvati ran from her bath and remonstrated with Shiva for so summarily killing their son. Repentant, Shiva ordered a new head to be found for the boy and, as the first animal available was an elephant, so Ganesha gained a new head and became the most distinctive of the Hindu gods. As a reward for his great courage in fighting the demons, Shiva made Ganesha the leader of the bhutaganas, hence his name. A story which explains the god’s association with intelligence and wisdom is his competition with Karthikeya, his brother, to be the first to marry. They set up a challenge that whoever could first encircle the Earth would also find a bride first. Not wasting a second, Karthikeya swiftly mounted his blue peacock and immediately shot off around the world. Ganesha on the other hand, casually sauntered over to his parents’ house, embraced them and quoted the line from the sacred Vedas: “he who embraces his parents seven times (pradakshinas) gains the merit of encircling the world seven times”. Declared the winner, Ganesha promptly married not one but two daughters of Prajapati: Buddhi (Wisdom) and Siddhi (Success), with whom he had two sons: Kshema and Laabha. Ganesha is worshipped on many religious and secular occasions; especially at the beginning of ventures such as buying a vehicle or starting a business. An annual festival honours Ganesha for ten days, starting on Ganesha Chaturthi, which typically falls in late August or early September. The festival begins with people bringing in clay idols of Ganesha, symbolising Ganesha’s visit. The festival culminates on the day of Ananta Chaturdashi, when idols (murtis) of Ganesha are immersed in the most convenient body of water.

Because of his great Godly power, Lord Krishna is another of the most commonly worshipped deities in the Hindu faith. He is considered to be the eighth avatar of Lord Vishnu. Shree Krishna delivered Bhagwad Gita on battlefield to Arjun. He, like Lord Rama, is also known for his bravery in destroying evil powers throughout his life. The Lord is usually depicted as playing the flute (murali), indicating spread of the melody of love to people. The earliest text to explicitly provide detailed descriptions of Krishna as a personality is the epic Mahabharata which depicts Krishna as an incarnation of Vishnu. Krishna is central to many of the main stories of the epic. The eighteen chapters of the sixth book (Bhishma Parva) of the epic that constitute the Bhagavad Gita contain the advice of Krishna to the warrior-hero Arjuna, on the battlefield. Bhagavad-gita, spoken by the Lord, as a treatise has been acknowledged the world over for its unfathomable depth and replete with practical instructions. The world’s foremost western philosophers have paid rich tributes for the priceless wisdom that it offers to mankind. A discerning person will notice that all the instructions contained in the Bhagavad-gita is also contained in all other religious scriptures of the world, but there is higher knowledge, which is not found in any other book of knowledge. Krishna is easily recognized by his representations. Though his skin colour may be depicted as black or dark in some representations, particularly in idols, in other images such as modern pictorial representations, Krishna is usually shown with blue skin. He is often shown wearing a yellow silk dhoti and a peacock feather crown. He is also shown with his childhood devotee Radha. The stories of his play with the gopis (milkmaids) of Brindavana, especially Radha (daughter of Vrishbhanu, one of the original residents of Brindavan) became known as the Rasa lila and were romanticised in the poetry of Jayadeva, author of the Gita Govinda. These became important as part of the development of the Krishna bhakti traditions worshiping Radha Krishna. Lord Krishna is one of the most popular avatars of Lord Vishnu. Krishna is worshiped in many temples around the world. These temples are famous because they are either associated with the birth of Lord Krishna or known for the architecture and history. Even the aura of spirituality has made the temples of Lord Krishna a peaceful pilgrimage for the devotees. Some of the most famous Lord Krishna temples are the ISCKON Temples located at several places around the world including cities like Delhi, Mumbai, Bangalore, Atlanta, Birmingham, Jakarta, Melbourne amongst several others. Another famous temple is the Dwarkadish temple located at Dwarka on the west coast of Gujarat, India. The temple is around 2,500 years old.

Lord Rama

Lord Rama is known as the seventh incarnation of Lord Vishnu. Rama, the perfect avatar of the Supreme Protector Vishnu, has always been popular among the Hindu deities. Rama is the symbol of courtesy and virtue, a man of values and morals. Ramachandra is Maryada Purushottama, which means the perfect man. Lord Rama is considered to have taken birth on the earth to destroy the evil forces of the age. Lord Rama, in the words of Swami Vivekananda, is “the embodiment of truth, of morality, the ideal son, the ideal husband, and above all, the ideal king”. Rama is widely accepted to be an actual historical figure - a “tribal hero of ancient India” - whose deeds form the great Hindu epic of Ramayana or The Romance of Rama, written by the ancient Sanskrit poet Valmiki. Shri Rama was a paragon of virtues. Rama was not only kind and affectionate but generous and considerate of feelings for all around him. Lord Rama had a marvelous physique and captivating manners. Shri Ram had a magnanimous personality. He was extremely noble, generous, chivalrous and fearless. He was very simple and absolutely free from flamboyance. The Demon, Ravana, kidnapped Sita and caged her in his kingdom – Lanka and enforced her to marry him. Lord Rama with the help of Hanuman, Sugreev and Bali and their “Vaanar Sena” (The Army of monkeys) attacked Lanka and after a severe battle, got Sitaji released from the control of Ravana. After this victory of Good over Evil, Rama returned to Ayodhya to reign as king. Rama’s day and time of birth,as well as marriage to Sita are celebrated by Hindus across the world as Rama Navami. It falls on the ninth day of a Hindu lunar year, or Chaitra Masa Suklapaksha Navami. The occasion of victory over Ravana and the rakshasas is celebrated as the 10-day Vijayadashami, also known as Dussehra. The Rama Leela is publicly performed in many villages, towns and cities in India. Rama’s return to Ayodhya and his

coronation are celebrated as Diwali, also known as the Festival of Lights. The latter two are the most important and popular festivals in India and for Hindus across the world. Some of the most famous Lord Rama temples are located at Ayodhya, Bhadrachala Andhra Pradesh, Kalaram Temple Pune, Poddeshwar Ram Mandir Nagpur, Sitaram Temple Dongri.

Lord Hanuman Hanuman, the lord of monkeys, is one of the few gods in Hinduism to be worshipped across caste lines by followers of the Shaiva, Vaishnava and Shakta orders. He is admired for his strength, scholarship, wisdom, humility and celibacy. It believed that Lord Shiva’s element called ‘Eleventh Rudra,’ took a form of a monkey God to arrive on the holy earth as Mahaveer Hanuman. He chose to come through the sacred womb of holy mother Anjanidevi and Holy Father Lord Kapiraj Shri Kesari. Thus, Lord Hanuman is also known ‘Kesari Nandan.’ A steadfast devotee of Lord Shri Ram - Hanuman was destined to worship him and further assist him discharge his holy duties and commitments to the mankind. It is said that Lord Shri Ram too recognized Hanuman to be an incarnation (ansh) of Lord Shiva who chose to take birth specially to serve Lord Vishnu during his avatar as Shri Ram. Hanuman is the avatar of the destroyer Lord Shiva, and Vishnu, born in a royal Monkey dynasty in ancient India. As the God of wind carried his seed before he was born, he is called Son of the Wind too. Hanuman holds the root powers that flow through 3 planes of existence, including this physical world. Due to this, he commands absolute power of supernatural magnitude which make him unconquerable. Thus he can overcome all forms of evil. Saving devotees and saints was his objective and people recite the Hanuman Chalisa to ward of evil and gain success in their tasks. Hanuman Chalisa, or 40 verses on lord Hanuman is a summoning article, meant to summon lord Hanuman, he is believed to usually come in invisible form, turning visible if the devotee is really dedicated and persistent. It is said that such persistent, good souls can see him in action when they recite the Hanuman Chalisa. It is believed that whenever one finds or feels trouble, in supernatural form or in daily practical life, reciting the chalisa will help them overcome. People in India go to temples on tuesdays which is considered to be Lord Hanuman’s day and recite Chalisa at homes and offices.

Aeh Poowadee: Basically, my knowledge and educational background are not in sync with tourism business anymore. I only thought that I should do some business as my family already ran international freight forward business with its own vessels at the time. It was not until one day I had the chance to enjoy familyget-together dinner cruise. As a person who loves traveling so much, I still remembered I felt that the beauty of Chao Phraya River was unspeakably enthralling as I saw tourists heading towards the dinner cruise were bountiful. Then, such sparked my idea to do dinner cruise and saw a channel to grow my business after consulting with my family members to translate my daydream and love of traveling into a tangible business. It took quite a certain period of time before getting it right as I tried to adapt my accounting knowledge into doing business at the earlier stage. The key point was that I wished all foreign visitors enjoy the glimpse of Thainess onboard as much as I enjoyed doing the business.

Ignited Minds It was a crucial time as Thailand was intensively engaged in massive tourism campaign, aiming to enhance inbound tourism and I was lucky enough to get financial and non-financial support from commercial banks for any tourism-related business. It was strategically the right time for me to motivate and steer the family business. What is your strategy and guiding principle for managing the business? Aeh Poowadee: To be honest, just doing with my “Heart” is the magnificent ingredient while trying to understand the mind of travelers as to what they really want is vital. The core element of Chaophraya Cruise is the sense of Thainess that I’ve been continually endeavored to add into it. Simply put, my basic concept is just the saying “Do unto others as you would have them do unto you”. I always place the importance on the quality of service performed by well-trained software or human resource in order to trigger an ultimate dinning moment. And whenever I traveled abroad and spent time on dinner cruising, I would observe and adopted what is good and emulated for the betterment of my cruise business. My cruise business has gone through cornucopia of disheartened comments, the barrage of underestimated discussion, and the score of people who disparaged my kind of business. Only time will tell and it’s 10th year now, the success of Chaophraya Cruise has been proven as we are currently the second to none and the wonderful choice when it comes to dinning on the river. Aside from my heart and passion of doing business, I am also further looking to explore the new foreign market and delve into the customer’s spending behavior. I realize that the element in the market already changed and fluctuated, so we have to strategically change accordingly to maintain the existing customer base and trap more pieces of pie in the market share. I’ve worked nearly non-stop and it’s impossible for this kind of business to take a brake during festive season, making me stronger to challenge with the heap of hinders and able to abruptly disentangle or precipitously solve all unpredictable difficulties as well. How to deal or tackle with the business problems? Aeh Poowadee: Actually, there are lots of glitches and snags while being on the way towards achieving customer satisfaction. What I once though it should be easy theoretically, but it’s not so easy in practice. I felt a bit disconsolate as the business didn’t go as smoothly as the way I planned. Meanwhile, the economy and business environment had been hobbled and

paralyzed by perennial political deadlock and unforeseeable natural disaster. I’ve been faced with such difficulties throughout a decade of running the business. After consulting with my team, we found that the number of foreign customers dramatically decreased during the political disruption, affecting the consumer confidence index, so it was a must that we had to immediately revise marketing strategy and launch tempting campaigns to attract customers, depending on the situation. Frankly, I would like to contribute the success to my entire workforce, I give them my heart as they are group of engine to help steer the success and growth for the company. All staff are indispensable, dropping anyone behind is definitely nono. Hence, the business model has to be reviewed periodically so as to be in compliance with the fluctuating market. I found that Thai people are specially becoming interested in dinner cruise, partly due to our promotional and massive marketing campaign and tailor-made service created to meet the need of all customer groups. As for the natural disaster, I accept that it intermittently happens and is inescapable, but what we can do the best is to face the music and tackle such problem through changing business strategy and adjusting tactic to be in alignment with the wavering investment climate. Furthermore, I regularly told all my staff not to making nag at our competitors, I prefer to let customers decide their favorite choice of dinner cruise and I respect their decision. Anything to suggest readers about business perspective? Aeh Poowadee: We should conduct a thorough feasibility study and understand what we are going to embark on prior to starting business. And don’t forget to leave a space or a room in your heart empty for the possible heartbroken or gloomy business setback as obstacles are not uncommon. You may fall for sometime, but don’t be discouraged and keep on walking. It’s advisable to have the long-term business planning in mind with the measurable direction and such planning should be realistic. Getting as much information as possible before deciding to make the first step is quintessentially fundamental. And please remember that whatever you’re going to do, it should be what you love the most and you should do it with your heart and intention. And if we give the best shot based on realistic, straightforward and uncomplicated business paradigm, the result would definitely be enduringly satisfying.

What can you learn from private homes relations ships when it comes to leadership and inspiration in the business field? Both worlds are based on the same principles: The most important being respect; respect for family members and respect for peers&business partners. Building trust through healthy relationships. Identifying the different personalities and adapt to them in order to keep a balance and achieve win-win situations. What is the most difficult situation you have had to face and how did you tackle it?

I was born and grew up in Switzerland, in a family with a strong musical and hospitality background. After about 10 years at the Conservatoire de Musique, trying to learn piano, i decided that a future in the hospitality field was probably a more viable choice, and enrolled in the Ecole Hoteliere de Lausanne. Almost 30 years ago I graduated from this Hotel Management School and then left the cold climates of Switzerland to join Hilton International at the famous Hong Kong Hilton. After a few years I was then transferred to the Kahala Hilton in Honolulu and lastly the Jakarta Hilton. After some time in Bali at the Oberoi, I arrived for the first time in Thailand and joined the Regent/Four Seasons Hotel as F&B Manager. A few years

later, after an interesting posting at the Sofitel Metropole Hanoi, and some other reputable hotel companies, I joined Central back in 2005, first at the then flagship property in Ladprao, followed by Phuket and since 2010 at the helm of the Centara Grand Mirage Beach Resort in Pattaya. What do you enjoy about this Hotelier Industry? Every day is different: even after 30 years in the industry, every hotel, every destination, every month, and every day is different and presents us with new situations and new challenges. While working as Assistant Director of Catering at the Hong Kong Hilton, a client of mine (who consequently became a close friend) presented me with a business lead for a special event. The New York Philharmonic was going to perform in Hong Kong under the direction of Zubin Mehta, and this event was to be followed by a sit-down dinner for 1000 distinguished guests within the lobbies often Academy of Performing Arts. It was an honor having been selected to cater to this prestigious event. However, these lobbies, in the atrium, were on different levels, of different shapes and different sizes. Not to mention the back of house/kitchen areas, which were non-existent. It took weeks of meticulous calculations and plans with the teams of banquet operation and kitchens to sort out logistics in order to guarantee the same quality of food and service at every level of the building. Needless to say that this event was a success and everyone who was part of it would remember it as a milestone in our careers.

The key to the success for any hotel employee is: hard work and be passionate about it.

What are your strengths and what is your greatest weakness in as hotelier in Thailand, do you consider yourself as a hotelier or business role model? My motto has always been: Nothing great was ever achieved without enthusiasm, which is a famous proverb by Ralph Waldo Emerson dating back to 1841. I would consider myself a Hotelier first, you need the passion, the enthusiasm, the drive. These are qualities which hotel schools can not provide you with. Education gives you the tools, but the drive has to come from within. These are strengths of any hotelier. And because the hotel becomes our only world, our weakness very often is that we find it difficult to keep a healthy balance with the world outside the hotel business. Who according to you is a true leader and why? There are many true leaders in this world, each and every one in a different field, but all with a very strong belief in what they are doing. Being it His Holiness the Pope, former President Clinton, German Chancellor Angela Merkel, the Dalai Lama or Aung San Suu Kyi: They are all very strong leaders with a vision. Their main challenge is to convince the world of their vision, they have all succeeded as we know, as they kept believing in their visions and

did not give up. One such leader is Khun Suthikiati Chirathivat, our Chairman of Centara Hotels, who has tirelessly driven the hotel division from the first property over 30 years ago to today over 40 hotels, internationally. Even at his old age now, he still has the vision and the spark in his eye when telling stories about the beginning of the hotel division in our company and the future projects which he still wants to accomplish. Retirement is probably a word all these leaders will now know, as they will eventually fade away, just like old warriors. To do all the planning, and manage to maintain reputation and financial conditions during slow down period, how do you over come it? how do you find it challenging? A strong team is the key to success of every challenge in any industry. This is not a one-man-show, but a team-show. Everyone has to play his/her role in order for a hotel to achieve any goal, such as finances, standards, reputation, as well as satisfaction for guests and staff and owners. This also applies to manage any sort of crisis, being it political, economical or natural. A strong team will overcome any situation and together reach new heights.

goal together? what would be your advice? Hospitality is not a job like any other. You are married to the job and therefore it is important that you know as much about it as possible before getting into it. It will not take too long to figure out whether this is your field or not though. The problem is that nowadays many people see only the success stories of being a hotelier in the medias. Of course there is an exciting aspect to our field of work, but it represents probably less than 1%. Everyone gets his or her 5 minutes of fame. Today most job seekers are asking: what can the job/hotel do for me. This is not right, we should be asking: what can I do for the hotel? How can i contribute? On average is takes 10-20 years to groom a talented individual into an experienced General Manager. The key to the success for any hotel employee is: hard work and be passionate about it.

I have something to unveil you that I have a tendency towards being stubborn and you can also call me “a wayward person”, so to speak. It’s certainly because I am a person capable of challenging and tackling the incoming pressure and stress at all circumstances. Moreover, I prefer to live my life in the high privacy. You know, I worked under the supervision of boss or employment system for just only three years since I finished my education and I have engaged in selfcontrolled mode of living since then. Thus, I’d say I relish the prospect of being the amateur at any subjects or whatever I am going to do.


Ignited Minds How to get thing sorted out when facing difficulty, snags, or loose end in life. David: Simply put, when I have difficulty getting through something, I will normally think of the crème de la crème or the prodigy of that particular subject so as to approach and ask for some advices. I am quite incredulous, being skeptical of all suggestions even from my parents and teachers, except myself. So, whoever I decide to consult with asking for favors or idea, I will have to first strictly screen the quality of a person based on my “global standard”. For example, a good-looking Thai businessman donning with classy attire and posh accessories can generate only a little net profit in business, but the down-to-earth and easy-going style like Mark Zuckerberg whose innovative idea can reap the huge benefit and gain remarkable piece of success. That’s the way I have used to compare through referring to the global standard in order to find out a real expert that has a lot of savvy, empirical knowledge and experience so that I will absorb such proven valuable knowledge and learn how to solve and settle a problem from the proficient guy that I pick myself to exemplify. One of the good examples that should never be missed to mention is the prominent Tibetan Buddhist figure “Dalai Lama”, the spiritual leader of Tibet, in which I’ve endeavored to access him. Anyway, what I am going to say is that having the chance to meet the mentioned professional or a successful person to discuss about the area of their expertise will naturally infuse you with the inspirationally proven solution and will also provide you with new uplifting idea for managing your life towards the success. If I was asked what the suffering or pain in life is, I don’t know as I might not be familiar with it. And, you know, those who have the knack to inflict me with pain or misery for two or three consecutive days, I will consider they are very skillful (He laughed). So, whatsoever will happen to my life, I will never be apprehensive about, but I will let it be. Why so many people trend to name you as astrologer and historian? David: As I earlier mentioned, I love to involve in different areas of my interests, including astrology, as I consider that being born as a human, it’d be great being able to contribute something beneficial in return to our society and the world we live. I have been a bit of a bookworm and have enthusiastically had various fields of passion to follow, read, and study since I was young. I had an amiable and convivial moment at school, but when I grew up I

was fazed with workaholic people in the hustle society. I’ve met diverse range of people with contrasting attitude in the fast-growing society where we have to inexorably live and work in harness with them. Until then, it’s so much that I’ve come to realize there are still many things that I have to learn from working with other people, especially the reflection of the inner mind of people when I look at them. But the only one thing that we must do is to deliver the best performance at a workplace. Anyway, astrology is part of my passion to study to get through it and contribute beneficial things to the society. Certainly, there might be some fault, inaccuracy or misstep in what I am doing, but I will give the best shot for the better and best outcome in the future. You have been on journey through many foreign countries. Which countries are your favorite and great inspirations? David: Different places have different characteristics and feelings. Each destination has its own unique story and charming background. I remember the time I visited Alaska, the largest and most sparsely populated U.S. state. I was totally mesmerized and enraptured by the beauty of the pristine nature and the enthralling natural surrounding. There was no historical and colonial-style building or even the enticing grand palace over there. So, I’d say that every place is individual and has intriguing feature, it depends on everyone’s appetite and taste of interest and what a person is looking for. I am the one who wants to keep on traveling or voyaging to new places as I always got my idea broaden and perspective inspired at wherever I roamed to. Luminesce: Any advice for enthusiastic readers or young generations? David: Actually, I’m afraid to give advice. But one good point that I would like to remind people in general and the upcoming generations is that when we were born as a human, having better education and better quality of life, it’s better to spend the remaining time of your life doing beneficial and valuable contribution for our society. We are still far behind from the world’s stage of competitiveness and there are still ample rooms for us to have to redevelop ourselves. Once people came up asking me a question as to which kind of business should we do, I mulled and replied “Doing anything that’s bigger and the better the world would be” At the time, I meant that my richness will render or engender the comfortable life and livability in the society. For example, if I operate alcohol and liquor store, such business will encourage bad drinking habit and indefinitely cause incurable health problem to people in the long run. And, of course, my customer’s physical health will be absolutely feeble. In the other hand, if I embark on doing social-advantage business for instead, customer or people in society will evidently have a better quality of life. That’s my principle. Latest and outstanding work and activities? David: Currently, I am the author for historical books and the key writer for many inspiration-related stories. Furthermore, I also launch travel trip to historical sites for those wishing to enjoy traveling while getting priceless knowledge in the same time. I always try to come up with new idea. Travel like royalty on rails When a train journey is usually referred to, a traveller always gets the image of cramped coaches, small berths and hygiene issues. However, when one looks at Palace on Wheels, the only image one gets is of royal luxury and etiquette all rolled into one unique experience aboard this train. Started way back in 1982 and then reintroduced in 1990 with 14 saloons, 2 restaurants cum bars, one lounge and four service cars. All of the saloons are named after princely states in Rajasthan. Exploring Secret Corner in

ave you ever dreamt of this place but you do not know where is it, may not even find the name in your memories, yet the place is there and you always return, even sometimes when you just close your eyes... Walking through the streets of this village I could breath the few hundred years of rich history that has made this place what is it today. Still keeping strong roots on its customs and traditions. Its people, its coast and secret beaches, the fresh fish arriving every morning from the local fishermen just moments before traveling to the best restaurants in the area to indulge in the most delicate of the tastes. And it was the smell of orange blossom mixed with the breeze of the Mediterranean, that took me to this corner of the Spanish island of Mallorca which taught me that there are places that cannot be paid with money, where your most extravagant dreams may become true. Sóller is a town near the north west coast of Mallorca. The town is some 3km inland, from the Port de Sóller, in a large, bowlshaped valley that also includes the village of Fornalux, Port de Sóller and the hamlets of Biniaraix and Binibassi. The combined population is around 14,000. Port de Soller is not the main tourist destination in the Mediterranean, not as popular as other Greek islands or Italian escapades for instance. But Port de Sóller is the little secret treasure that Mallorca keeps for those who understand what luxury means in the pure sense of it.

I arrived at the end of a hot summer, more than usually, to reach the Tramuntana with my aim to start a new life, and for almost a year it became the most special year of my life. The Sierra de Tramuntana is a mountain range running sout west-northeast which forms the northern backbone of Mallorca. On the 27th June 2011 The Tramuntana Range was awarded World Heritage Status by the UNESCO as an area of great Physical and Cultural significance, something that you will discover yourself if you take the recompensed time to go for a hiking trip, alone or with your loved one. Only after the first 2km starting from Port de Sóller, you will reach an old watchtower that was used to protect from the French and Spanish pirates, and that today remains there to share with us its fabulous view on the Balearic Sea. This is just one of the many corners to discover that will bring the visitor to something special and difficult to ever forget. I recommend before you arrive to Mallorca to rent a car in advance, do not use a travel website. Better book directly with the company website. You will find plenty of them in the airport. Getting to Sóller is a bit tricky, however nothing that cannot be solved with a GPS or a transfer organize by your decided host. Another good idea when visiting the island is to bring an international accepted CC, Visa, Master or AMEX. However and anyhow, change your cash directly in the bank, trying to avoid local currency exchanges.

Travelogue Driving from Soller to the west, you will reach a small village called Valldemossa, another well kept secret only for those who expect more. Valldemossa is famous for one landmark: the Royal Charterhouse of Valldemossa, built at the beginning of the 14th century, when the mystic and philosopher Ramon Llul lived in this area of Mallorca. In the 1830s the Spanish government confiscated monasteries, and the historic estate was sold to private owners, who have since hosted some prominent guests. These have included the Polish composer Frederich Chopen, Ruben Dario, Ludwig Salvator among others. My destination was Jumeirah Port Soller, the new hotel that Jumeriah Group has brought to Europe, opening their first resort on the old continent. With not too many rooms, even when there is a 100% occupancy, you still feel in an oasis of peace and freedom, where your main concern becomes to be, how to decide where will you relax today or how will you let the Chefs impress you with. For those experienced travelers who believe they have tried and discovered the best destinations, Mr. Gibaja knows best after years of experience in the luxury tourism market, that Soller is a destination for everyone including experienced travelers as there are always new things and places to discover. The town attracts different markets and is also able to cater for the most demanding travelers. A stay in Sóller has a lot to offer, rent a scooter and ride the curvy roads of the Tramuntana while discovering some the island’s hidden places, organise a trekking excursion in one of the many walking trails, enjoy local cuisine and the best fresh Mediterranean produce or simply relax at the hotel and enjoy the beautiful views from one of the many viewpoints. ince many years I have been travelling for business for over 200 days a year and I also enjoy travelling in my spare time. Gadgets and electronics also pique my interest. Given the development in digital photography I can now combine my passions and create lasting memories. I like landscape and wild life photography. There are many photographers who have done wonderful work and I am still striving to come close to them. I feel photography is like playing golf, one is mostly beaten by its own expectations. I like vivid pictures but try to limit post production in order to not move into “graphic design”, i.e. enhancing reality but not creating a new one.

I started a long time ago by buying a NIKON and now have several bodies (D5, D4, D800) and lenses. For wildlife I especially bought some super tele lenses and other fast lenses. Two years ago I bought a Hasselblad HD5-50c with some lenses. I enjoy both the systems. The Hasselblad is a perfect camera to slow you down and capture amazing details. I am not yet sure if I have developed a style but as mentioned I like colorful and vivid pictures. I try to focus on details and create an overall harmonious composition. While capturing landscapes I like colors and combination of structure and nature. With regard to wildlife I enjoy taking pictures of big cats, if possible in action.


About Kyoto - Japan The former capital of Japan which is famous worldwide for its temples and shrines, Kyoto was the center of politics and culture for 1,100 years. Kyoto Prefecture stretches out from the southeast to the northwest in the central and northern parts of the Kansai region. It has four geographical features, the sawtoothed coastal area around Maizuru Bay in the northeast, the Tanba Mountains around its center, the Kyoto Basin in the southeast, and the Yamashiro Basin. Kyoto became the capital of Japan in the 8th century. It flourished as the center for Japanese politics, economy and culture for some 1,100 years, until the capital functions were transferred to Tokyo in the mid-19th century. There remain many temples and shrines in Kyoto that were built during this long period. Seventeen historic sites including, Kiyomizu-dera Temple and Nijo Castle, are inscribed as World Cultural Heritage Sites. You may meet some ‘maiko,’ young dancing entertainers, who walk in long hangingsleeved kimono in the Gion district, see the townscape characterized with popular 19th century style latticework, and visit the Nishijin where they weave traditional ‘Nishijin-ori’ textiles with vividly colored threads. The festivals in Kyoto are famous not only in Japan, but are also known worldwide. The three major festivals of Kyoto are the Aoi-matsuri Festival in early summer, the Gion-matsuri Festival in midsummer and the Jidai-matsuri Festival in fall. There is also the Gozan-no-Okuribi, more commonly known as Daimonji-yaki, held on the night of Urabon (August 16th). I would also say that we have taken the creativity to a next step. Initially we were trying to get to the taste of people more. We are still using vegetables from Thailand but for the recipe we have been more creative. My loyal guests from Thailand, Japan and elsewhere know me well and so now I think I can try innovation being confident that they will follow. They really enjoy the new menu. I now don’t wait for many months to change the menu but rather change it when I am onto something new. This is one of the new introductions and we have more variety for lunch and dinner. Like the new Asparagus dish which is prepared by wholly imported Asparagus straight from France. Asparagus has a bitter sweet taste at the same time and Caviar brings saltiness to the dish. What are the new dishes that you have introduced? Well I really wouldn’t call it new but rather an upgrade to the next step. We renovated our furniture to take it a notch higher with brand new table accessories as well. We have managed to do the same with our products and dishes. I have personally tried and selected the dishes, like for example I had over ten different types of lamb meat imported and tried but selected only one from them which would match with the taste palette of people here.

Islero Sets New Standard for Spanish Cuisine with Michelin-inspired menu Islero, a new Spanish restaurant on Wireless Road, sets its sight on bringing bold and authentic flavors through beautifully presented dishes. Named after a famous fighting bull that defeated a matador in 1947, the restaurant offers a menu that not only honors classic Spanish dishes but also pushes the boundaries by embracing modern techniques and presentation. Chef Pedro left his previous post as chef de cuisine of the much-praised Aceite Spanish restaurant in Melia Doha Hotel in a sources in Spain and the vast selection of wine is put together by a Spanish sommelier. A cutting-edge “Josper” oven has been installed to make sure all meats will be cooked to perfection. Islero also features a tapas bar called Cava by Islero for after-work unwinding. “Rostit catala” cannelloni is truly appetizing starter. The thin crepe envelops delicate and flavourful stuffing of slow-cooked mix of beef and pork. It’s garnished to perfection with demi-glace, Spanish cheese sauce and truffle.

“Grilled octopus” tentacles served with beans and traditional Castilian stew is another savoury starter. Chunks of octopus go great with tender giant beans, the feathery thin Spanish lardo and aromatic broth. “Lobster rice” is a main course meant for two. Each grains of bomba rice absorbs the delicious flavor of sauce made of seafood stock, onion and tomato reduction to the max. One half a lobster offers juicy sensation. “Suckling pig” another sensational main course to be shared is Suckling pig “Segovia” style. It impresses with crispy skin and tender flavourful meat. The Spanish pig is prepared to perfection in the cutting-edge Josper oven.

“Tocinillo de cielo” with berries and Pedro Ximenez from dessert page is refreshingly sweet. The yellow custard cubes are made of egg yolk and served with delightful contrasts from airy whipped cream and sweet-and-sour jelly drops of blueberry and cherry. “Torrijas” caramelized with ice cream is a heavenly sweet. It’s a traditional dessert served during Holy Week in Spain. Sprinkled with cinnamon, the bread is well soaked in milk before pan-fried with olive oil, resulting in smooth inside and a crispy exterior.

The Kitchen Table T

here is something special about this place. The restaurant provides a stunning atmosphere, the rooms are spacious and decorated with yellow crocodile-embossed walls, and a picture of Krai Thong, a folktale character of Thailand myth to complete the Kitchen Table concept. The location where W hotel is located was once the location of Alligator marsh. The ideal decoration style just brings out the highlight of the concept and is an attraction to customer at Kitchen Table (it actually interests customer quite well though!). Two main course dishes and one dessert seem not too difficult to describe the mellowing flavor of Kouy-teaw-lod filling which tastes like Phad-Thai served with a sticky sweet & salty sauce, explains a lot in such perfect combination, and specifically the unique green foods on every plate present on the table are naturally used Pandan leaves, raw materials invented by Kitchen Table master chef Manoj Kottarathil. Luckily we were presented with the menu recently put out to the market on early Feb!

Can’t forget to mention the delicious finalé unlike any other. Superb quality of Australian Wagu beef steak slowly braised for 3 hours in cherry vinegar until its tender and soft so you get a sweeter flavor, served with rich creamy porcini risotto rice…ummm
