“Negroni Week Launch Party” Independent Wine & Spirit (Thailand) Company Limited and the House on Sathorn at W Hotel, Bangkok
“Negroni Week Launch Party” the celebration of one of the world’s great cocktails and an effort to raise money for Operation Smile Foundation Thailand. Negroni Week is a week-long charity initiative first created in May 2013 by Imbibe magazine (US) with the goal of celebrating one of the world’s greatest cocktails, whilst raising money for charity. Since 2014, Imbibe has teamed up with Campari to present Negroni Week on a global scale. In 2016, Campari will act as the Presenting Sponsor as it did for the past two years, and it has again committed to donating $10,000 to the charity chosen by the bar/restaurant that raised the most money during Negroni Week. Operation Smile conducted its first mission in Thailand in 1997. An international team of medical volunteers conducted two medical missions: one in Bangkok at the King Mongkut Hospital, and the other at the regional hospital in Yasothorn province. The Negroni is an adaptation itself - of the Americano, a simple blend of Campari, vermouth and soda. The story goes that the drink was invented in Florence in 1919 when Count Negroni asked for a slug of gin in his Americano in place of the soda. A leader is someone who definitely has a vision, who has the ability to articulate that vision to his team and has the courage to deliver on that vision. A leader is never going to be able to do everything by himself/ herself, so ability to communicate clearly is a very important factor to the team. Once the team is convinced there is action leading to momentum to execute the vision consistently. That to me is the true role of leadership. Please tell us about your background before joining Banyan Tree? Well, I graduated from The Oberoi School of Management, India. I started my career as a chef and I am still very passionate about food (eating rather than cooking!). I worked myself from the back, starting from a kitchen, of a typical hotel. The experience gave me an appreciation for what it takes to build a successful hotel – that is not only just about fancy rooms, the latest gadgets or its esthetic, but it’s also about the detailed work by people from the background. I was also fortunate enough to get the opportunity to travel a lot by working in different countries with different hotel groups that have their own ethos and philosophies. I have worked across Australia, Cambodia and India and for the past thirteen years I have been in Thailand. I never have enough words to describe about the hospitality in Thailand. It has been a great learning curve for me personally. I have grown tremendously as a hospitality professional as well as a leader. At my current hotel I started off as a chef many years ago and still a lot of the staffs here still address me as a chef! I enjoy that camaraderie.

WHAT IS THE BIGGEST FACTOR THAT MARK YOUR SUCCESS? Consistency is the secret to success. Delivering a consistent product – in my case, it is the style of leadership that is consistent with the vision of the organization. The team has to know that they can rely on you and is someone they can trust. Thailand has gone through many peaks and troughs yet it still manages to be one of the preferred travel destinations globally. I always tell my team that we have lots of things to be happy about things within Banyan Tree organizations. This should motivate them to go beyond what our guests expect. Working for a brand like Banyan Tree the expectations are always high and our quest is always trying to raise the standard. Everyday new hotels are coming up. So, it is important for us to sustain the success by being creative and innovative with our hospitality solutions. What is your vision for Banyan Tree in he next five years? The Banyan Tree Phuket will continue to be the flagship resort of the company since this is where it all started. I am just captaining this beautiful ship momentarily. There will be a General Manager after me so my job is
to hand him an improved place of the hotel. So for the next few years our aim is to go on an upward trajectory both financially and socially, because we want to ensure that employment of local Thais continues along with increasing profitability. As a brand we are growing tremendously. We are expanding globally as well with hotels in Cuba and other parts of the world. We started off with Banyan Tree and now have Angsana, Casia, Dava. Who is your ideal leader? We all look at leaders in different sense. My chairman is a great mentor and role model. He is somebody to emulate. Then there are some sport models. One of them is Roger Federer, who embodies consistency and sustained success. It requires a lot of mental and physical discipline to stay at the top of one’s game for a sustained period and to me those are great values. How do you apply your philosophies on your team and manage them to work towards your vision? I think sharing ideas and philosophies by communicating clearly is a starter. Having a brainstorming session every six months to discuss all my ideas doesn’t really work. You have to be on the floor everyday discussing with your leadership team so that they understand the vision. This is where sometimes leadership fails because when you are not communicating consistently and are not looking at the issue from different angles you tend to look only in one dimension. There has to be a platform of communication where people can question you and you can question them. I believe we at Banyan Tree have been successful in setting up such an open communication workplace where everyone can raise their opinion irrespective of their position. I think it is important to lead from the front and not just say things. For you what is more important – sustaining current standards or keep improving for the best? I think it is...one should always strive to keep evolving. If you are only going to be a caretaker you can hire a robot or a machine have very high commitment and always maintain their standards. What important most for me are energy, imagination and team work to take a hotel on a positive cycle. In my opinion, when one does not challenge the standards to improve, then you run the risk of becoming outdated. Every successful leader should reflect on what can be done to improve his associates or to make the guests happier or to make the hotel experience better.

Ignited Minds How you got into hospitality? When I was young, I was planning to become a lawyer, but my parents wanted me to join the family business. During my university life I had a couple of jobs in the service industry, such as bar tending and waitressing, and I really enjoyed; that was the time when thoughts about hospitality and service industry have crossed my mind, despite my dreams about lawyer career. After my graduation, marriage and birth of first child we moved from UK to Kazakhstan, so that my parents could help me. After a while, we decided to open a small restaurant, but right before that I’ve got an opportunity to open a new resort in the middle of Lake Alakol, and we realized, that’s the chance we will have to take. Central Kazakhstan, in the middle of beautiful nowhere, with astonishing views, mountains, rivers, and of course lake itself, we had to build a resort. I can say with confidence, that it was challenging, but we did it. We started with yurts (Kazakh national houses), as we wanted to do something traditional, and picturesque. By the second year we already had 130 rooms of different types and styles. But the only challenge that we were facing there - weather. Summers in Kazakhstan are hot, and winters are cold, and the wind is too strong, especially during the low season, it’s cold and simply can knock you down. So I decided that I have to expand myself, and move on, as my child was growing up, and becoming more independent, I had more spare time to do something, to create something else, somewhere else, and that’s how I ended up here. Why did you choose Thailand? Actually, Thailand was my favourite destination to visit for vacations. And when we’ve got an opportunity to work here we had no second thoughts.

Now that you are experienced in this sector, what is your vision for Maikhao Dream? We have two properties, Maikhao Dream Villa Resort & Spa, and Natai Beach Resort & Spa. And one of our main visions is to bring smiles to people faces. We love to do that especially with the opportunity of showing the nature, comfort and elegancy of our properties at the same time. It is about creating that dream holiday, that “homeaway-from-home” stay; I would even say that it’s my passion. Do you think you have succeeded in doing so? Well, in my humble belief I do believe that there are a few very happy guests who keep coming back to enjoy their stay once again, which means that we are on the right way. So presently are you looking to maintain your standards or are still looking to improve on it? We are constantly looking into improvement of our services, and finding the ways to improve it. We are not only following the
current trends; we are also looking for ways in which we can set our own trends. How we can make that holidaying more experiential, more unique as nowadays almost every property has beautiful rooms, excellent service and great beach location. There are no limits of ideality, and I am not a person who just dreams about success, I work for it. According to you what makes Maikhao Dream stand out? Each of our Villas is unique, and can be personalized upon to your requests. We own 22 villas, and one of the main tasks, is to ensure that our guests having a family like experience. Our butler team provides a very personalized, discreet and dedicated service to ensure a truly unique and memorable stay, and at the end of your vocation you will realize that you are actually at home, and this one of our main targets. Sometimes the water level of the sea makes it difficult for people to enjoy water activities on the beach. Do you think it acts as a hindrance? It depends the season. There are two seasons – high season and south summer season. And of course our resorts are not only about beaches. Nowadays, we make concentrated efforts on our spa and fitness. By implementing the Maikhao Dream Wellness Program we expanded the borders, and now we can make our guests truly happy, because in the truly happiness a lot depends on the health, and your spiritual harmony. As for some basic activities, our guests can always enjoy the beach activities such as darts, beach bikes, canoeing, private yoga classes with our entrainment team. How do you manage your team to follow your vision? I believe that it is very important to find the right person for the right position in every life. I put a lot of emphasis on selecting the right characters, and those who can work well in a team and able to communicate the vision and mission effectively. This is the first step and after that, it’s always about working hard. I really love working with people and see them growing and developing themselves, and exploring their full potential. We usually do not have many training sessions, but we do have friendly coaching or brainstorming sessions where we sit and share ideas, in open and warm atmosphere. As a woman entrepreneur do you have a role model? I always am looking up to someone but it is never the same person. My mother has a huge impact on me from the very beginning, she is a businesswoman, so she is more strict, and more structural. As for creativity, and inspiration I always looked up to my father. And our CEO is a person worthy of respect, I will always be thankful for all the experience and opportunity that he provided, and for being a constant guide and saviour for me.

But exactly how deep can the 83-year old chairman of a leading global hotel chain go? Read on. While the management of The Oberoi, Gurgaon was finalising the

new restaurant 361, the chairman was asked to choose between three different table tops, each with its own set of cutlery, cruet sets and runners. Old hands will tell you that Oberoi is the chief architect, designer, and planner in every one of his hotels. “The architects and designers are not very amused when I don’t agree with them, which is quite often. They build for themselves and have big egos. I tell them, build for customers,” he says. Consider the latest hotel that’s creating waves in the hospitality sector: The Oberoi, Gurgaon. The octogenarian visited the hotel more than 50 times. “He was involved even at the excavation stage,” says Chopra. Such an encyclopaedic knowledge of the nuts and bolts of a hotel comes from building and operating dozens of them and being a hands-on hotelier for nearly six decades. Even at this age, the chairman likes to get a first-hand feel of his properties. Last year, he visited all of them, barring Bali and Bhubaneshwar. “In the 1980s, I spent a third of my time in my hotels. The only way to improve service is to go to them very frequently,” says Oberoi, who until 1973 literally lived in his hotels. A widely travelled man, even visiting other hotels is no vacation.

He’s constantly seeking out ideas for his own chain. ‘Subconscious observation’ is how Bikki puts it. For example, from Regent, Hong Kong, he picked up the large size of the bathrooms, and from Carlyle, New York, he got the idea for walk-in closets. “We have 70-80 sq. ft. closets in our hotels so that you can hang your clothes, put up your suit and tuck away your suitcase,” he says, “Others are copying us now.”He also makes note of things that are not to be replicated: like using technology that’s too hi-tech. “Recently, I couldn’t locate the bedroom switch for half an hour at a hotel. It was frustrating. User friendliness is one thing but too much technology can be intimidating for guests. You should use technology that people use at home,” he says. Płock, Poland Many of Poland’s best-known electronic music festivals specialise in leftfield sounds, but there’s still plenty of room for more traditional house and techno on the country’s summer calendar. The tenth edition of Audioriver, a 25,000-person festival held annually in central Poland, will host a typically heavy-hitting cast of big-name DJs and live acts in late July. A stacked techno contingent includes Ben Klock, Marcel Dettmann and Karenn, while Tale of Us.
Paris, France Where Weather Festival is a full-on rave, The Peacock Society offers Parisian punters a more refined festival option. Taking place in the lovely Parc Floral De Paris, the festival presents a young crowd with big name DJs like Loco Dice, Dixon and Seth Troxler, plus a well-selected crew of locals, such as Geena, D.K. and Marcelus. There’s a strong live element too, with a varied cast of acts, from Flume to Vril to Answer Code Request, taking to the stage.

Held at a sprawling disused iron ore mine outside the tiny town of Norberg in southern Sweden, it feels like a sound-art exhibition as much as it does a music festival. Alongside summer-friendly styles like dub and ambient, you’ll find drone, noise, drum & bass and a range of 303-wielding acts.
Wales, UK Some small festivals feel more like weddings or family reunions than regular gigs. Freerotation is one those events, not least because it takes place at Baskerville Hall, a cozy hotel in the Welsh countryside (which, as it happens, is often used for weddings). With just a few tweaks to the lineup every year, it’s a beloved annual ritual for everyone involved, which only adds to the superb quality of the music being played: all the artists are looking forward to it all year, and they all bring their A-game.
Gräfenhainichen, Germany Melt! Is one of the most well-rounded bigtent festivals happening in Europe all summer, and their 2015 lineup proves it. In the shadows of epically proportioned heavy machinery, you can catch indie sensations (altJ), pop royalty (Kylie Minogue) and influential veterans (Giorgio Moroder). But the festival’s trump card has long been its dance music, which can run as deep as the offerings at staunchly underground nightclubs.

Buñol, Spain The whole point of this festival is to throw tomatoes at people. Yeah. It’s awesome. Despite its fame and stature, the festival is in fact a short-lived (but very crowded and messy) affair. It begins (rather incongruously) at 11am when a ham is placed on top of a large and greasy pole in the town square, and the tomato fight can begin only when someone is dextrous enough to clamber up and grab this meaty prize from its perch. Cue lots of mayhem as agile Spanish folk scramble on top of another to claim the jamon.
Helsinki, Finland Though quality Northern European festivals are by no means in short supply, Flow still stands out. It’s been taking over the disused Suvilahti power plant each year since 2007, and now stands as Finland’s best-known annual music event. The reasons for Flow’s success are simple: striking venue, great organisation and solid bookings. As usual, this year’s event presents a mixture of electronic and indie talent.
Chicago, USA Music festival featuring popular alternative rock, heavy metal, punk rock, hip hop, and EDM bands and artists, dance and comedy performances and craft booths. It has also provided a platform for non-profit and political groups and various visual artists. From its inception through 1997 and its revival in 2003, the festival toured North America. Japan Obon is an annual Buddhist event for commemorating one’s ancestors. It is believed that each year during obon, the ancestors’ spirits return to this world in order to visit their relatives. Traditionally, lanterns are hung in front of houses to guide the ancestors’ spirits, obon dances (bon odori) are performed, graves are visited and food offerings are made at house altars and temples. At the end of Obon, floating lanterns are put into rivers, lakes and seas in order to guide the spirits back into their world. The customs followed vary strongly from region to region.
Cavertitz, Germany Like it or not, underground dance festivals are big business these days, complete with brand sponsorships, sophisticated promotional campaigns and ever-soaring ticket sales. All of which only makes it more reassuring that something like Nachtdigital is still possible. This lakeside rave began 18 years ago as the work of a bunch of scrappy teenage DJs. By now it’s grown into a twoday festival, and though never without a few big-ish names (Joy Orbison, Ben UFO, Pachanga Boys), its DIY spirit remains.
Pula, Croatia After three momentum-building years at Fort Punta Christo in Pula, Croatia, Dimensions Festival has sold out for the first time. If you’ve been before, it should be no mystery why the festival has become a hot ticket: the lineup is flawless, the site is gorgeous, the sound systems are killer, the boat parties are pure vibes and the crowd is up for every twist and turn the long weekend takes.

s one of the more superior bars on Sukhumvit 22, and certainly a creative anomaly in itself, stepping into Bangkok Betty is like stepping into 1940s America. The atmosphere of an ammunitions factory, a wartorn era and an industrial-chic bar immediately sink into your psyche. The long bar is the focal point, a bomb production line made of stainless steel, with mock blueprints etched into the wooden panels. There are bombs and chrome cylinders dotted everywhere – hanging from the ceiling and propping up the island tables – while wooden plank floors, machine parts, pulleys and clamps, brick walls and archways add to the effect. The dining tables and bar counters reflect stations that operated by machinists; the tops have reproductions of propaganda posters and the little bolt drawers have plaques containing the wartime motto, “Loose Lips Sink Ships”. Adding to the industrial feel are also hooks and chains hanging from the ceiling.
Behind the bar, painted onto the grey brick work is Bangkok Betty herself, a seductive and sweet cartoon pin-up, typical of one you would have found hanging on the lockers of all men, from soldiers to baseball players, in 1940s America. The drinks menu has been created by the celebrity mixologist Joseph Borowski, designed to match the allied forces vibe with names like “Kickapoo Joy Juice” (Ketel One vodka, Chase black currant liqueur, fresh pineapple and watermelon, palm tree sugar) or “Final Approach” (Johnny Walker Black, fresh ginger & lime, homemade lemongrass syrup). Wines by the glass and draft beers are also offered.

I would also say that we have taken the creativity to a next step. Initially we were trying to get to the taste of people more. We are still using vegetables from Thailand but for the recipe we have been more creative. My loyal guests from Thailand, Japan and elsewhere know me well and so now I think I can try innovation being confident that they will follow. They really enjoy the new menu. I now don’t wait for many months to change the menu but rather change it when I am onto something new. This is one of the new introductions and we have more variety for lunch and dinner. Like the new Asparagus dish which is prepared by wholly imported Asparagus straight from France. Asparagus has a bitter sweet taste at the same time and Caviar brings saltiness to the dish. What are the new dishes that you have introduced? Well I really wouldn’t call it new but rather an upgrade to the next step. We renovated our furniture to take it a notch higher with brand new table accessories as well. We have managed to do the same with our products and dishes. I have personally tried and selected the dishes, like for example I had over ten different types of lamb meat imported and tried but selected only one from them which would match with the taste palette of people here.

‘nahm’ was the first venture in the country by Thompson — an Australian-born chef, author and TV personality whose talents secured him the first ever Michelin star for Thai cooking in Europe at ‘nahm’ London. Influenced as much by the street food of Bangkok as by centuries-old cookbooks belonging to private Thai households, his style combines big, bold flavours with meticulous attention to detail, fresh local produce and traditional cooking methods. With the Bangkok outlet, Thompson was able to raise the stakes in the kitchen: ‘Bangkok has allowed me to cook for Thais in Thailand — and that is significant. I use some old favourites from London, such as ma hor. But in fact, most of the dishes here are new. I prepare and cook intensely flavoured dishes attuned to ingredients that simply cannot be found outside of the country. The whole place is also more relaxed than my original London restaurant — much as the Thais are themselves.’
For lunch, ‘nahm’ offers a lighter, shorter version of the dinner menu, and includes a selection of Thai salads, curries and stir-fries. Highlights include a lemongrass salad of prawns with toasted coconut, and minced quail curry with young ginger, Thai eggplants and basil. Both à la carte and set menu are available for lunch.
For dinner, the à la carte menu varies regularly, with highlights including jungle curry of grilled salted beef with wild ginger, kaffir lime leaves and holy basil; prawns simmered in coconut cream served with smoky pork and white turmeric; steamed bamboo fish with Asian celery and yellow beans; and for dessert, durian and sweet sticky rice or crispy coconut cupcakes.
