HERE’S TO HAPPILY EVER AFTER

Weddings today are not quite the same as we’ve been used to. You may be inviting fewer guests, and altering your plans for how to entertain them, but one thing you have no need to compromise on is celebration drinks. Cocktails are the perfect drinks to serve at a wedding today. They can look amazing, taste fantastic and bring a feeling of happiness to the whole occasion. In line with our retro take on 2021 weddings here are some cocktails for today with ingredients from the glamorous cocktails of the past jazzed up for the present.

GREEN ICICLE

FROZEN MINTY LYCHEE MOCKTAIL

1 cup ice cubes 118ml 1 lime, juiced lychee lemon sparkling water 10 mint leaves (+extra togarnish) 1 tsp matcha powder (optional) lime slices, to garnish

METHOD –Blend all ingredients in a high-power blender until they form a slushy-like consistency. Spoon into a wineglass and garnish with lime slices and/or additional mint leaves. 45ml vodka 2 tbsp chilled green tea 10ml simple syrup 22ml fresh lime juice 4 slices cucumber 2 sprigs mint

METHOD –Stir three slices of cucumber lightly until scent and water is released. Add mint and stir gently again. Add vodka, green tea, lime juice and simple syrup. Shake with ice and strain into a chilled martini glass. Garnish with a slice of cucumber and mint leaf. To make simple syrup put an equal amount of sugar and water into a saucepan and bring them, slowly to boiling point then cool.

EMERALD ISLE COCKTAIL

30ml Gin 11 tsp green creme de menthe 3 dashes Angostura bitters liqueur METHOD –Put all ingredients into a mixing glass with ice. Stir to chill, and strain the mixture into a cocktail glass.
