Crispy Yuca Fries with Roast Garlic Aioli

Package of B’gan Tostones C. of mozzarella cheese 2 T. sour cream 1/4 c. scallions diced 2 small tomatoes diced 1/2 avocado diced Small drizzle of Sriracha sauce (optional)

1 package B’gan Yuca Fries

Fry Tostones as instructed on the package. To begin assembling your nachos, place the Tostones into the bottom of a round baking dish or cake pan. Drizzle the mozzarella cheese and sour cream on top. Set your oven to broil and place Tostones nachos onto the top rack for 1-2 minutes or until cheese is bubbly and melted. Remove from oven and add scallions, tomaotoes, avocado and any other toppings of your choice.

ROAST GARLIC AIOLI 3 garlic bulbs 1 c. mayonnaise 2 T. lemon juice 3 B’gan cilantro cubes ½ tsp. cayenne pepper or hot sauce (optional) Olive oil as needed Salt and pepper to taste ROAST GARLIC AIOLI: Cut the top ¼" to ½" off of a whole head of garlic, so that each individual clove should be visible. Make sure every garlic clove is exposed. Place the head of garlic on foil paper. Drizzle the top of the garlic with a bit of oil, about 1 teaspoon. Wrap in silver foil and roast in oven for about 30 minutes, until soft, fragrant and golden. Let the garlic cool. Then squeeze individual cloves out of the skins.

YUCA FRIES: Prepare Yuca according to package instructions. For extra crispiness, bake at 425 degrees for 10 minutes. Turn over fries and bake for additional 10 minutes until slightly brown.

I want to say “thank you” for your Excursions section and booklet. I went to Demarest Farms listed on page 17 of the Pesach/Summer book. Although the book has a $5 general admission fee listed, it didn’t cost anything to pet the animals. There was a train and truck made of wood to climb on. CAN TAP WATER BE PURIFIED? Dear Esty, I read your article about tap water, and while I don’t drink tap water, I do use it to cook. I was wondering if cooking up the water solves the problem and purifies the water, or is that also dangerous? D.G. ESTY WEISS RESPONDS: Whether boiling water purifies it really depends on the contaminant, because while boiling water can kill germs, things like lead, nitrates and pesticides are not affected. Also, since boiling reduces the volume of water, it increases the concentration of those types of contaminants. Tap water is a tricky issue, but not worth stressing over.

WHERE THE FOOD ENDS UP Dear Friends and Neighbors in Monsey; Being that my house is across Suzanne Lake, many people pass by my driveway every day. The trash can that is not too far away is oftentimes used by the people passing through. It’s definitely better than littering on the street. Wonderful! given food to take home with them before they leave. So many times I’ve found food — good, expensive food — that was given to the cleaning help before she left, in my trash can! If you must feed your lady, because she works for you for several hours, by all means, of course do! Offer her meals, snacks and drinks in your house. Don’t waste your money, and cause baal tashchis on food, by offering it to her before she leaves to go home. You might think you’re treating her nicely, and she might even thank you too, but I find the food in my trash can! Whole and intact! I’ve found whole cakes, heimishe, delicious-looking babkas, challah, yogurts (still cold from your fridge!), drinks, fruits, vegetables and assorted snacks. Why they accept it with a smile, and then discard it is beyond my understanding; but this is what happens quite frequently. So, save your money, and don’t be the cause for this baal tashchis of good food. Thanks for your wonderful publication, and lots of hatzlacha! N.W.

THE PERSPECTIVE FROM ABOVE Dear Downstairs Neighbors, Yes, we are the upstairs family you’re upset with. Let me share our perspective: We, baruch Hashem, have lively children that need action. No, they don’t have “issues.” They were just created with a different combination of genes than yours. No; they don’t sleep on Shabbos afternoon, much to their parent’s disappointment. Come 4:00, they have already sat through a seudah, read some books, listened to Mommy’s storytelling, played some quiet board games and now, they want to be free! As much as we warn them to play at the minimum noise level so as not to disturb you, please try to understand how much we’re already confining them. Yes, I know ideally we should be living in a private home or at least on the ground level, but being that you also just moved, you know what it takes to buy a home… We know some people are more sensitive to noise. Take that into consideration when buying (I know someone who turned down a well-priced and perfectly located home because the bedroom windows were facing the driveway). Come winter or a rainy day, our kids have different ideas for unwinding, especially after a long day of school, so we allow scooters, pogo sticks and trampolines in our home. We know it’s hard for you, so please let us know at which hour you put your kids to sleep, and we will try to remember to accommodate you. As for midday naps, well, they do sell earplugs and noise machines. And if you really think we’re all bad, check outside and see who provides the neighborhood with fun! I also wanted to add that as newlyweds, we rented our apartment from grandparents, and our bedroom was right under the room their grandchildren played on Shabbos afternoon, hence no nap for us; yet it never dawned upon us tenants to demand silence from our landlords. It was, to us, an issue of knowing who’s boss over whom. Your Upstairs Neighbors

A SOUND SOLUTION Dear C.B., I can’t help you with the issues of noise coming from outside. However, for noise that is coming through the walls, floors and ceilings from next-door neighbors there is a lot that can be done so that every family has their privacy. When my home was under construction I asked my builder to soundproof the guest bedroom. Sadly, it is as soundproof as your house is. Later when I was doing my basement, I did my research and found that surprisingly, one of the few real soundproofing companies is actually a heimishe company based right here in Monsey (Trademark Soundproofing 845-388-1200). I contacted them, and they helped me with the design and supplied me with materials. What can I say? Whenever anyone comes to our basement, they are amazed by how well the soundproofing works. I am always telling anyone that is doing construction to call them and am passing on the info here l’toeles hatzibbur. A LITTLE RESPECT GOES A LONG WAY Dear Mrs. B. (and other shoppers who may benefit from this message), When you called me to use your store credit from two years ago, I was quick to accommodate you, even though my store officially closed down a year ago. Knowing your situation, that you were homebound after a health event, I packed up leftover inventory for you to choose from and allowed your husband to bring it home to you. It was really hard for me, as I’m going through a health crisis myself right now, but I feel honesty is important and I wanted you take advantage of your credit. I did the right thing, but never once did I hear a “thank you” come from your mouth. Even when you called to discuss your options, you so rudely told me, “None of these things are really interesting for me.” It wasn’t the first time you were rude and condescending… I remember my interactions with you from two years ago, when you bought an item I told you would be too large, but you insisted on purchasing it anyway. I even went out of my way to deliver the specific size to you. Three weeks after the purchase, you woke up and realized you’d made a mistake. When you called me, you were demanding and degrading, insisting I give your money back. I couldn’t do that, but I made an exception, because I wanted happy customers, and issued you a credit. You didn’t even say thank you. I felt so disgusting, cheap even; an unwanted parasite that sucked away your money — even though you made the bad decision to buy an item that I tried to talk you out of. To make matters worse, you spoke with a queenly air, as befitting a woman of royal blood. But yet, your manner of dealing with me was in no way befitting of a bas melech. What happened to hakaros hatov? What happened to treating people with respect? Mrs. B. and other shoppers, remember that the person standing behind the counter is a human being and trying their hardest to make you happy. Treat them with respect and show gratitude. T.T.

FRONT-ROW SEATING These last few weeks have been filled with the nachas of seeing our children and grandchildren graduate from their respective grades. No matter the child’s age or grade, their excitement level is high and we are privileged to join their simcha. This past week I had the honor of attending a granddaughter’s 8th grade graduation. It is a very large class with a huge audience. In order to accommodate the bubbies and mothers, the first few rows of seats had notices on them clearly stating “reserved for grandmothers and mothers.” Although I got to the graduation fairly early, I didn’t manage to find an empty seat (many are privately reserved), until about the 8th row. As I sat down with another bubby friend, we looked around and noticed two girls sitting on “reserved” seats. On my row were two mothers who clearly would have preferred sitting closer to the stage. I politely asked the girls to move farther back, and lo and behold, the bubby with whom they were sitting, put up a fuss and refused to allow the girls to change seats. The girls seemed very embarrassed at her behavior and got up, but the bubby insisted that they had been there before I was, and if they don’t find seats together farther back, they will return. The two mothers were themselves embarrassed to move up (they were afraid of angering the bubby), so my friend and I moved up and sat down. Elders, what are you teaching your children? If there’s a sign clearly stating that this seat is not for you, then don’t sit down on it! A nearby woman leaned over to me and confided that she finds it difficult to go to her einiklach’s Chumash seudos because of the girls who insist on taking the front seats. Perhaps performances should have people in place whose job it is to ensure that front rows are exclusively for parents and grandparents. As much as sisters, aunts, cousins, friends, nieces, etc. want to join the nachas, they should do it from seats farther back. The same goes for yingela performances which are attended by tatties and zeidies. No Back Seat for This Bubby

MY NIECE HAD HER TONSILS and adenoids removed and was in a lot of pain. My sister called the doctor’s office to get a prescription for Tylenol with codeine, but the surgeon was not available. Since she wanted to give it to her daughter immediately, the nurse suggested she call her pediatrician and ask him for it. She could not get through to him either. Desperate to help relieve her daughter’s pain, she called and asked me if I had any for her to give to her daughter. She knew my daughter recently had a bad toothache and was given this medicine. I told her I did have some left, but I would not give her any because a person should not take another person’s prescription medication. My sister wasn‘t very happy with me, until later on in the day when her daughter’s surgeon returned her phone call. He told her that he would not prescribe it, because there had recently been several fatalities of children who were given Tylenol with codeine after this particular type of surgery and he did not want to take the risk.

hot dogs regularly. In fact, if people simply researched what hot dogs are made of — or better yet, if they simply read the label — they would probably put the package of franks back on the shelf. Unless you find all-natural organic hot dogs without the nitrates and chemicals, I highly suggest steering clear of this popular grilling food. The good news is that there are so many delicious things you can grill instead! Whether you like to grill inside or at the park, most of these chicken and healthy meat options are perfectly doable. Especially if you want to slim down, these high-protein meals are a wonderful way to burn off body fat. I would like to share some options with you.

Becoming Weigh Smarter How to Appease Picky Picnickers HAVE YOU EVER PACKED A PICNIC for your kids, and even the pickiest eaters sampled the produce? The honest truth is that some foods — including sliced vegetables, which are not usually kid-friendly — seem like a treat to children when they’re away from home and they watch you prepare them. Now that summer is here, it is prime picnic season. That said, don’t panic if you’re not a frequent park-goer — there are still several ways to lure your kids into eating their vegetables. Grilling Regardless of where you shop or picnic, you can smell the grilling aroma, especially on a Sunday afternoon. Many people grill at home, while others prefer an outdoor grill. Regardless, grilling can be a fun family event, with the added benefit of providing a unique twist to standard cooking. Hot dogs and buns are some of the most popular items to grill. And while I’ve prepared hot dogs for my picky kids, I’ve cut down on them immensely. Personally, my goal is to eliminate this junk food altogether! I mean, is there anything filled with as many chemicals and junk as a hot dog? A long time ago, an old friend told me that every time they had hot dogs for dinner, her mother would make them swallow a few tablets of vitamin C to counteract some of the horrible ingredients in the franks. And these ingredients are definitely a concern, especially if you eat

One idea is to smear a teaspoon of sauce on your meat so you get just a small taste, and your meal won’t be drowning in sugar or high-fructose corn syrup. Parshas Chukas

I ONCE HEARD A BEAUTIFUL MOSHUL. In a small shtetl, Chaim took out his watch to check the time and discovered that the watch did not seem to be correct. Chaim walked to the marketplace and asked if anyone knew the correct time. Three other villagers pulled out their watches, and promptly reported three completely different times. The men groaned. Nobody knew which time, if any, was correct, and it could be months until someone traveled to or from a larger town to find out the correct time, as back then travel was difficult and rare. The villagers went back to business as usual. Chaim continued to wind his watch every day, but the other villagers did not bother winding their watches, figuring they should wait until they find out the real time. Finally, after a year, a rich man from the big city arrived in the shtetl. A small group gathered around him and asked for the correct time. The man took out his golden watch with a flourish and announced the time. The villagers all pulled out their watches to set the time, but only Chaim was able to do so. Because Chaim had continued winding the watch that entire year, the gears were working properly. All the other watches had rusted solid and could no longer tell the time. Parshas Chukas begins, “Vay’dabeir Hashem el Moshe v’el Aharon leimor, ‘Zos chukas haTorah asher tzivah Hashem… – Hashem spoke to Moshe and to Aharon saying, ‘This is the statute of the Torah which Hashem commanded…’” (Bamidbar 19:1-2) The Parsha then goes on to describe the laws of the Parah Adumah. The Ohr HaChaim Hakadosh asks why the To-

rah uses the words “zos chukas haTorah” as opposed to “zos chukas hataharah” or “zos chukas hatumah.” After all, what follows is the specific law of becoming tahor through the Parah Adumah, not laws relating to the entire Torah. The Ohr HaChaim answers that by performing a mitzvah that we do not understand, Hashem regards it as if we have kept the entire Torah. By fulfilling a command that does not make sense to us, we demonstrate that our motivation in performing all the mitzvos is not because they make sense to us, but because Hashem commanded us. Otherwise we would be obeying our intellect, not Hashem. The mitzvah of the Parah Adumah is called a “chok” – a mitzvah that we cannot comprehend. There are other chukim in the Torah, so one might wonder why the Parah Adumah is the chok that is called “chukas haTorah.” Why is this chok considered more incomprehensible than the others? The Kli Yakar explains that the reason for the mitzvah of the Parah Adumah is more hidden from us than other chukim. For example, Shlomo Hamelech understood the reason for every mitzvah except the mitzvah of Parah Adumah. said I will become wise, but it was far from me.” Why was it beyond the grasp of even one so wise as Shlomo HaMelech? The answer lies in that very description: wise. Wisdom, logic and understanding are all tools in the realm of the natural world. The Sfas Emes explains that the reasons behind the mitzvah of Parah Adumah are above the laws of nature, and therefore cannot be accessed through ordinary means. The Sfas Emes concludes that we should accept the mitzvos because Hashem decreed them, regardless of our own understanding. If we do this, then Hashem actually grants us some understanding, which is why Hashem revealed understanding to Moshe. We are not on the level of Shlomo HaMelech, understanding all of the mitzvos except for the Parah Adumah. For most of us, there are many mitzvos that we do not properly understand — not only chukim. While we should strive to understand them all, the reality is that we do not. However, we should try to do those mitzvos with the same z’rizus as the ones we do understand. If a person were to wait until he understands a mitzvah before performing it properly, he would be like the watches that were neglected until the “right” time came. His physical body will have fallen into disuse in the area of that mitzvah, and it would be very difficult to change. If you find yourself faced with a mitzvah that you do not comprehend, tell yourself that you are going to perform this mitzvah with all your heart because Hashem commanded you to do so, and then pour yourself into doing it. In that z’chus, Hashem may just grant you the understanding you desire.

Ullman Named Interim Supervisor for Town of Ramapo. THERE IS A NEW FACE taking on the role of supervisor in the Town of Ramapo, as former Deputy Supervisor Yitzy Ullman was named to the post during a town board meeting.

Ullman, a Spring Valley resident, resigned officially from the town board in order to be appointed interim supervisor. Mayor Fred Brinn of New Hempstead was appointed to the town board to fill the

spot vacated by Ullman. Both Ullman and Brinn have said that they only intend to stay in their new positions until they can be filled in the next November election.

County Legislators Present Awards to Yeshiva Students for Educational Efforts A GROUP OF SIX fourth graders from a local yeshiva were honored by the Rockland County legislature last week after taking part in a yeshiva education expo held in Brooklyn. All six boys are students at Yeshiva Darkei Emunah Munkacs in Monsey and they had the opportunity to visit with county legislators Aron Wieder, Phil Soskin and Toney Earl who recognized them with Certificates of Accomplishment. The education expo was held at the Torah V’Yirah Hall in Boro Park on June 18th and included more than 100 students from 10 yeshivos, including two Monsey schools: Darkei Emunah and Adas Yereim Vien. The event was organized by the Yeshiva Principals Association as part of an ongoing effort to boost general studies programs in yeshivos, as reported by Hamodia.

“We are trying to invigorate and bring a new excitement for general studies within the framework of daas Torah and what is appropriate for our yeshivos,” said Rabbi Avi Greenstein, principal of Imrei Yosef Spinka and executive director of the Yeshiva Principals Association. “Prin-

cipals and teachers would love to have new and fun ways to teach their subjects, and a forum like this helps everybody see that there are interesting and kosher ways to do just that.” Several area rabbonim and elected officials visited the expo, taking time to listen to students share their knowledge. Among the projects at the fair was a display about the effects of drought on local water systems and a diorama depicting the aftermath of a hurricane. Rabbi Shmuel Yaakov Klein of Torah Umesorah discussed the significance of teaching general studies “al taharas hakodesh.” “In everything that a Jew does, he has to be taught a way not just to do it, but to do it according what the Torah requires of him,” said Rabbi Klein.

East Ramapo Board Vows to Discuss Extra Private School Busing for 2018–2019 as Voters Approve Latest Budget THE FEW VOTERS who turned out for last week’s revote on the East Ramapo School budget approved the $232.6 million plan, saving the school district from having to resort to an austerity budget. The vote passed by a relatively slim margin with 2,121 votes in favor of the budget and 1,809 opposed the plan which will fund multiple programs for public

school students but will not restore 14 days of private school bussing for private school students which were eliminated in 2011, as reported by The Journal News. Among the items that will be included in the approved budget are several summer camp programs for public school students, an extended school year program, services for students with interrupted formal education, full-day kindergarten and funding for costs related to capital bond construction projects that are already in progress.

“You can’t use Bianca as a self.” As a self. There was no self. She was feeling so empty. Oh, how she wished she didn’t have a self. Why was she the only one who did not merit, in the camp, to breathe her last, to soundlessly give up and die? It was her will to live. Her powerful, willful will that kept fighting. Fighting for that which is better left alone. Where did it ever take her? But what a silly thought. Always silly, or horrific visions occupying her mind. And it wasn’t her will. It was the Bashefer who had kept her alive. For some reason, for some purpose, she was kept alive. Maybe for Bianca. Maybe for her family. For both? She wished she could stop thinking, and she tried. She did. Cooking, it stilled the mind. Chop, mix, stir, sniff, add, stir, taste, cool. Cleaning, it shushed everything up. Especially last-minute cleaning. Rush, rush the clock to an Erev Shabbos. The beds. The pans. The floors. The windows, always wiping, shining, almost there, almost there. But here she was, in the van. No distractions. Oh… wait. What had Tilla said? She said the entire community was in jeopardy. Henya must find out. And Yosef Yitzchok. He had also mentioned something, but then they changed the subject and spoke about Bianca and they never went back to what was worrying him. A loop of worry. She could get lost in that. Satisfied, Henya sat back into the plush seating that stuck to her, prevented her from sliding back and forth as the vehicle turned. She imagined what that mysterious conversation could be. Yosef Yitzchok had dreams. But he clothed them in reality. What was it now? What was it? The worry; it comforted her as they rode and rode and bumped over the roads. Her back was aching with fatigue when she got home. But she was on time! She could be there for her friend and for her family. She set out spongy placemats on the table and covered the small floral rectangles with cutlery, a dinner napkin and a cup full of milk. When Yosef Yitzchok came in from Mincha and washed for dinner, she was ready. “Yesterday, you wanted to tell me something? About… a problem? In the shtetl?”

She didn’t deserve it. She didn’t. It was too good. “Yosef Yitzchok, is there any reason why you decided not to tell me what you were going to say?” “No. I would never. It’s just… hard. Really hard. Not when the winter frost had made everything seem bleak and she hadn’t believed this town would have people. She felt sad for him. And happy, a glimmer of happy, for herself. They’d move. Sad. He had built his dream. How terrible it was to be at odds with her husband’s direction. To care for him deeply and not for his cause. “I built it. I built it with my own

Everyone has their own classic grilling favorites. Night after night, week after week, until it’s time to clean the grill for good, we basically rotate the same summer suppers. Here I present you with three completely different recipes. This is not your standard grilled meat or chicken wings… I wanted to show you that not only can the main dish be grilled, but you can actually cook the entire supper on the grill and keep the kitchen cool and clean! There’s even dessert…

GRILLED LONDON BROIL This meat is a great option for a weekday supper, because it is relatively cheap and you can slice it on the diagonal and serve an entire family. It is also my go-to Friday night meat; grill it in the afternoon, wrap it in parchment paper and then in silver foil, and it tastes perfectly fresh when it comes to the seudah.

INGREDIENTS: 2 lb. London Broil 1 cup soy sauce Âź cup light brown sugar 3 tablespoons apple cider vinegar 2 teaspoons Dijon mustard 1 teaspoon red pepper flakes

DIRECTIONS: 1. In a large Ziploc bag combine soy sauce, brown sugar, vinegar, mustard and red pepper flakes. Cut diagonal slits in the London Broil, making sure not to cut all the way through and place into bag with the marinade. Let sit for 3–4 hours, or overnight. 2. Heat grill to high. Remove steak from marinade and reserve marinade. Brush grates lightly with oil. Grill steak for 6 minutes, brush with reserved marinade and turn over, brush with marinade again, and continue grilling for an additional 6 minutes, for medium rare. Let rest 10 minutes before slicing.

MINI RED POTATOES ON THE GRILL Grilling these potatoes in foil packets seals in moisture for tasty and tender spuds right off the grill, and best of all – you won’t have to wash a single dish!

INGREDIENTS: 1 lb. mini red potatoes, washed well and cut in half 2 tablespoons oil Salt, pepper, and paprika Chopped fresh parsley

DIRECTIONS: 1. Place cut potatoes on a large piece of parchment-lined foil. 2. Drizzle oil and spices over the potatoes. Fold into a tight packet and grill over medium-high until potatoes are soft, about 25–30 minutes. When done, garnish with chopped parsley.

2 lbs. fresh or frozen blueberries ¼ cup sugar 2 tablespoons water

A grunt is a classic American dessert combining cooked fruit and a fluffy dough topping. This version has this sweet dessert cooking in the skillet, right on the grill, while you enjoy your main course.

1 tablespoon lemon juice

DOUGH TOPPING: 1 cup soymilk + 2 tablespoons lemon juice 1 cup flour 1 teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt 2 tablespoons sugar 2 tablespoons margarine, melted 1/8 teaspoon cinnamon mixed with 1 teaspoon sugar

DIRECTIONS: 1. Heat grill to medium. Combine blueberries, ¼ cup sugar and lemon juice in an ovenproof skillet and place on open grill. Cook for 10–15 minutes, until thickened. 2. In a small bowl, combine soymilk and lemon juice and let stand for 10 minutes. 3. Meanwhile, with a fork, whisk flour, baking powder, baking soda, salt, sugar and melted margarine. Add the soymilk mixture. Stir until a moist dough forms. 4. Spoon 6 heaping dollops of dough over fruit. Sprinkle the cinnamon-sugar mixture over dough. Cover skillet tightly with parchment-lined foil. Cook until dough is set and tops are dry, about 20 minutes.

1. How should STEAKS be prepared for grilling? At which temperature should they be cooked? Steaks and ground beef need to be treated differently when you are preparing them for grilling. While ground beef should be kept cold, steaks should be brought to room temperature to yield the best results. The science behind it is as follows: If ground beef is brought to room temperature, the fat content that keeps the burgers juicy will melt into the fire the moment it hits the hot grill. When a burger is put on the grill cold, the meat fibers have a chance to tighten around the fat molecules before they melt, keeping the moisture in the burger while it cooks. Steaks, on the other hand, need to be room temperature so the outside won’t char and burn before the inside warms up enough to cook thoroughly. 2. HOW DO I CHOOSE THE BEST GRILL? When choosing a grill, there are three important things to consider: GRILL TYPE: Do you prefer a grill fueled by charcoal or gas? Charcoal grills can be bought at a lower price point but require new charcoal or briquettes every time you grill. It takes 15–30 minutes for the flames to reduce before the food can be cooked on the hot coals. Despite the inconvenience, many people believe that there’s nothing like the taste of food coming off a charcoal grill. Gas grills offer convenience and speed, but you’ll pay the price for it. QUALITY: Try and get the best quality for your money. The most important thing to look for when choosing a gas grill is even heat distribution. Hot and cold spots on grills leave some foods undercooked and cause others to burn. When shopping, look for grills with high-quality tube burners — three tubes are optimal, along with a well-insulated hood that locks in heat, and heavy-duty cooking grates that transfer heat. For a charcoal grill, look for a grill that has a good quality, solid exterior and a tight fitting lid to hold in heat. PRICE POINT: Once you’ve decided on a grill type, decide on a budget for your grill. It is better to compromise on size than on quality. Don’t get lured in by extra features you will not use that will significantly add to its price.

3. Do you marinate the steaks, or is the barbeque flavor enough? Marinating is best suited for tougher steaks like skirt and hanger.


These cuts can usually be marinated up to 24 hours in advance, for a minimum of 2–3 hours, and is best done in a non-reactive, non-metallic container. A good choice is a Ziploc bag. Rib steaks do not need to be marinated. The fat contents of anything off the rib has enough flavor to stand on its own. Salt and freshly ground black pepper are the best complements for these steaks and won’t mask the natural flavor. If you prefer something more sweet or savory, brush on a marinade of your choice the last five minutes of grilling, so that you don’t risk the acid in the marinade breaking down the fibers in your premium steak. 4. How do you know when the food is ready? The best and only reliable way to test if the food is ready is with an electronic meat thermometer. 5. What can I do TO PREVENT MY STEAKS FROM DRYING OUT? Buy good-quality, well-marbleized steaks, and do not overcook them. It’s also very important to allow the steaks to rest for ten minutes after you take them off the grill, so the juices can redistribute. 6. Do you have any other tips to share? Grilling is a great way to spend time with your family without the mess inside your kitchen. Try not to over-complicate things. Complex menus and side dishes make it so much less enjoyable and difficult to get everything ready to serve at the same time. Pick one or two basic proteins for each BBQ and save other items for another night. If you have advance planning, marinate ahead of time so all you have to do is throw your chicken or meat on the grill. If you’re short on time, choose proteins that just need seasoning, like burgers, steaks and hot dogs. Cut up a fresh salad or grill some veggies. Let the proteins be the star. Days to Serenity

Hi everybody! Y’know when you see the ads for “Order Your Sukkah Now” and you’re like, “Seriously? Summer just started!” Check out Target when you’re still buying camp paraphernalia and you’ll see the store is full of back-to-school supplies already. It makes you anxious, ‘cuz aren’t you supposed to just relax now and focus on something called summer? It’s a yes and no answer. To plan ahead is the surest way to be calm down the road while you still get the chance to sit by the pool (notice I said sit, not swim) and get that longawaited suntan. Right now I’ll be one of those annoyingly annoying voices in your head and say that it’s 10 weeks to school. We’ll take you on a 10-week ride, five days a week, one job a day to an awesomely organized home which will ensure back-to-school and yom tov preps to be less stressful. You’ll get Wednesday off to pick up The Monsey View for your next week of d’cluttering. THIS ISN’T PESACH CLEANING and we’re not putting any time limit on d’cluttering. Small changes every day have a big impact. For next week, be ready with cleaning supplies, some bins and containers, and an abundance of zest — and of course, ice cream in the freezer never hurt anyone. (Except, umm, my waistline.) But remind me that this is not an article about weight, so it’s totally okay to indulge.

On THURSDAY we’ll start with the fridge. So easy access to that ice cream... The fridge and freezer need a whole magazine onto itself. It is used the most in the house by your children and spouse and a little mouse (or a few). I mean the ones who run into the kitchen and grab the sixth slush pop and feel like superheroes when Mama doesn’t stop them. They always remind me of scurrying mice. I once mentioned it to my first grader. She never scurried again. She did not want to look like a mouse. Now she takes the whole package in one shot and claims it’s for the neighborhood. On FRIDAY we’ll tackle the baking

drawers. It’s a long Friday and I’m sure you’ll be happy to put food in back of your mind and organize instead. Who am I kidding? Food is never in back of the mind. On TUESDAY we’ll have more fun with the toolbox, sewing box, and if you come across more junk drawers that you missed on Monday, we’ll have even more fun! I’m thinking we should auction off everyone’s stuff from all the drawers. The money that comes in goes straight to buying real junk, as opposed to the fake junk you just got rid of. Bastion Falls Kaaterskill falls is the tallest two-tier waterfall in New York, a breathtaking and refreshing destination. It is reached via an invigorating upward hike that scores 5 out of 10 in difficulty. The trail is about two miles up and back, and the round trip takes approximately one and a half hours. On the hike up, you hit Bastion Falls, which is smaller than Kaaterskill, but also magnificent.

Chapter 2

THE WORLD WASN’T CREATED in a day and neither was Gesher L’Talmidim. It began with pangs of identity crisis, a broadening of my heart and shoulders to carry the responsibility of children who did not share my flesh and blood. Of hanging my apron on the kitchen hook, leaving an array of diapers and baby bottles behind for other pastures — pastures which I hadn’t even known ever existed before. Those of hiring and firing, of juggling while struggling a steep mountain climb with only the housecoat on my back. Where every two steps of ascent led to one of descent. And when I least expected it, an unforecasted avalanche would throw me off all the way to the valley’s crevices below. It felt like walking up an escalator that’s moving down, fighting the winds in a hurricane, the tides of a tornado, battling the very force of gravity. Every morning brought new hopes, every evening, new disappointments. But

every cycle of day brought with it yet another one shining brightly behind, and we persevered. Putting my worn slippers one foot in front of the next, a whole new world was suddenly unveiled. One of beautiful accomplishment, a planet where gravity doesn’t pull you down. One of happy faces and gentle smiles. Of little boys skipping to school every day without a tantrum. It marked the answer to our everlasting prayers. But all those answers come with a price tag. Some very steep ones. Living in the East Ramapo School District, private program opportunities are infinitely limitless, in that parents get the honor of emptying their pockets, as well as those of their neighbors, their friends, cousins, uncles and greatgrandparents, to educate a single special needs child. Trying to prevent heart disease on the parents’ end, however, taught me to stretch myself in ways the world’s greatest gymnast could never have done. I needed to stretch my physical as well as mental and emotional limbs so hard, I thought they would snap. I knew I needed help. And fast. And so, with a ketchup stream on my shirt thanks to a two’ing toddler, a smiley-stickered nose for winning my daughter’s best student award, I was suddenly thrust into the world of finances... of borrowing and repaying... of being the only woman in a line of black hats and coats, standing, quivering, at the doors of our community’s amazing philanthropists. Of searching and researching the great line of statistics that would show proof, display the immense need of our community. Proof of the unfortunate future of those who were left to live their lives on the spectrum with no intervention versus those who were treated for their condition and thus, are leading happy and successful lives today. And yet, the fight still was not done. For every day that our children

were blossoming, was a day of pleading for grants, services and charity. But we pushed on. And on. And still on. And while I pushed with my right arm, I reached for my siddur with my left. And I davened. I begged for Hashem’s children, for those who are still in the throes of a bullied, misunderstood, confusing life, filled with more suffering and pain than their Body Mass Index. And Hashem was always there. Helping me up from the mud, from the quicksand threatening to pull me down, down, down... far, far below in hopelessness and despair. And when I thought we had seen it all, I found that the children’s’ ABA home therapy services were cut by the insurance companies. There were so many children out there still, with snippets of their life support being cut off in slow motion. And I knew, without a doubt, that our wonderful Creator had a far better financial plan, for he wouldn’t want me to throw in the towel. He wouldn’t wish for me to give up the place I so delicately built, one brick at a time, for the beautiful future of a functioning Am Yisroel. For the dedicated tatties, the role-modeling zeidies of our next generation. He wanted me to persevere, to pick up the shattered pieces of glass and design a mosaic of dazzling color. To save the children of our forefathers so that they will carry the everlasting chain in the making of Am Yisroel’s history. And I looked at the faces of our precious children, sitting in that classroom, working to be better people with the little tools they possess. And I made a promise right there. Edison was partially deaf, and he saw it as an advantage. He felt he was able to sleep better, and to concentrate on his work without distractions.

Following the death of Thomas Edison, electric lights around the United States were dimmed for one minute. Edison was not one to be deterred by his weaknesses. Since he exhibited a poor understanding of higher math, he hired brilliant mathematicians to help him out when that skill was needed.

Although the incandescent bulb is probably considered Edison’s most important contribution to the modern world, many historians claim that Edison is not deserving of the title “inventor of the light bulb.” They claim he perfected a design that has already been worked on by many scientists, patented it — and then promoted it as his own brainchild.

Henry Ford, of the assembly line and Model T car fame, was a good friend of Edison, and they’d often travel together. Edison’s first major invention was the phonograph, and it was his favorite one, too. The phonograph was the first device to record sound and play it back.

The first words Edison recorded on his phonograph was “Mary had a little lamb.” Edison and his staff were delighted when they actually heard it played back. Edison did not learn to talk until he was four years old. One device Edison made was a machine that would kill cockroaches with electricity.

Real Estate Mid-Year Reflections JULY 4TH, TO ME, signifies the beginning of the second half of the year. To reflect, regroup, refocus and review January 1st through now. There are three areas that I am reviewing: interest rates, housing prices, and changes in mortgage guidelines that affect the qualification of borrowers. INTEREST RATES: In the beginning of the year, housing experts all agreed on one thing: 2017 was going to be the year we would see mortgage interest rates begin to rise. After years of historically low rates and an improving economy, the question wasn’t if they would increase but instead how much they would increase. Some thought we could see rates hit 5–5.5% by the end of the year. However, the exact opposite has happened. Instead of higher rates as we head into the middle of 2017, we now have the lowest rates of the year. Bottom line: No one knows for sure where interest rates will be in six months. However, if you are thinking about buying your first house or trading up to the home of your dreams, you can still get a mortgage at historically low rates RIGHT NOW. MORTGAGE GUIDELINE CHANGES: There has been many guideline changes over the past six months. The following three are the most significant ones affecting my borrowers today. A) The program for self-employed borrowers qualifying for a mortgage loan with just one year’s tax return is still available but with one major change: They must have a five-year selfemployment history. B) Condominiums with auxiliary apartments: Prior to a new change as of last week, it was very difficult to get a loan on a condo with a legal auxiliary apartment. Now, with the new guideline it will be allowed under most standard programs, opening up the possibilities for borrowers needing to purchase or refinance. C) Debt paid by someone else: If someone has a car lease or loan and they are the sole borrower, in the past we were not always able to exclude the debt from the debt ratios even if we could prove that someone else was paying the bill. An example would be an employer or simply another person. Very often parents and siblings will purchase or sign for something for another person and the other party will pay, but because they weren’t on the original contract we were not able to exclude it. That changed for one program, making it possible for more borrowers to qualify for a loan. I recently had a client with five car leases all paid by

HOUSE PRICES: It seems that in our area, house prices have gone up. I say that because we are seeing more homes NOT appraising at the purchase price. An appraisal uses historical data to provide an appraisal report using the comparative market approach to come up with the market value. If the homes are going up in value, the previous sales will not support the new purchase prices. Therefore we are seeing homes not appraising. When a home does not appraise, a few things happen. A new negotiation occurs; either the seller doesn’t go down in price and the borrower can sometimes back out depending on how the contract is written, or the seller lowers the price of the home sometimes to the appraised value or a to a figure negotiated. The bank bases the mortgage on the appraised value on the contract price. If someone buys a home that does not appraise, they have to come up with the difference between the appraised value and purchase price, and will need more money. This causes a strain and a hardship. I am seeing a new trend where buyers are agreeing to waive the appraisal because sellers know that their home will not appraise and they don’t want to be in the position to renegotiate after contracts are signed. There you have it, my mid-year reflections. We will have to revisit what changes occur in the latter part of the year after December 31!
