THE GOLD STANDARD OF SILVER TIP 1 shallot, peeled and quartered 4 cloves garlic, pressed 4 teaspoons olive oil 2 teaspoons dried thyme leaves 2 teaspoons dried sage 3 teaspoons Kosher or coarse salt 1 1/2 teaspoons ground black pepper 1 (4 - 5 lb) silver tip roast, tied Preheat over to 400. In the bowl of a food processor chop the shallot and garlic. Add the oil. Pulse 1-2 times. Remove the garlic mixture to a small bowl. Add the thyme, sage, salt and pepper. Stir to combine. Pat the meat dry with paper towels. Place it in a roasting pan. Rub the meat all over with the herb paste. Cover and chill 2-3 hours. (You can skip this step, but reduce the cooking time. During the last 15 - 20 minutes, cut into the meat to make sure it is not getting too well done.) Bake uncovered for 30 minutes. Lower heat to 350. Bake for 1 1/2 hours or until desired degree of doneness. Don't cook longer than 2 1/2 hours or meat with be tough. Also, keep in mind that meat will continue to cook for about 15 minutes after you take it out of the oven. Let meat stand for 15 minutes before slicing. The juices will return to the center of the roast, making it moist and easier to carve.
How to best freeze your high-quality meat: wrap the meat in butcher or freezer paper. This is a waxy coated paper (the waxy side should go towards the meat, with the paper side out). Then wrap the whole package in an airtight layer of aluminum foil. Add a piece of masking tape or paper tape and write the date and contents on it.

RE: WORKING TOGETHER TOWARD A SAFER COMMUNITY (ISSUE #114) I felt the writer of the letter last week was voicing one of my own thoughts. Monsey drivers seem to be unaware of the law that they must yield to pedestrians at crosswalks. I can sometimes wait a very long time at crosswalks until I am able to get across the street. Not only when turning — even in the middle of Maple Avenue and especially on Main Street in front of Monsey Shoes. In fact, being a bornand-bred Monsey girl, I was surprised to see pedestrians walking straight into the road at crosswalks in Montreal. Cars always yield to pedestrians at crosswalks there. This was enforced by their police department — not their local paper. Still, I’d like to ask all drivers to remember that pedestrians have the right of way at crosswalks and to check if anyone would like to cross when approaching a crosswalk. Yes, I know the Monsey roads have become a pain to navigate and each trip takes longer than it did ten years ago. I also know this law was ignored ten and even twenty years ago on these roads. PRESERVING TZNIUS ON YOUR SPECIAL DAY I am writing this after witnessing something at the wedding of a kallah who I know as a very eidel, tznius’dig girl. My limud zechus is that she just did not think about it before allowing her friends to get her (literally) into the middle of this. The issue is the shtick — or meshugas — called the parachute, which has been appearing on the dance floor of your friends’ weddings. Unlike the maypole umbrella, which (as few people know) has its origins in American Indian avoda zorah, there is probably nothing inherently wrong halachically with this shtick, but tznius and eidelkeit should prevail, especially on the night when you are about to establish your own mikdash me’at. The first time I saw this parachute, I thought that the dancers were picking up the kallah’s gown and dancing under it. If you’d step away from the circle and watch for a few moments, you’ll see what I mean; a big white round shmatta held on by dancing girls, with someone dancing in the middle with the kallah. There are so many creative ideas, if you want shtick and the photos that they generate, that are beautiful yet refined. Think about it. WHEN I MEET WITH a new client at Nutrition by Tanya, one of the first things I do is give them my personal cell phone number and tell them to contact me at any time. And my clients do. So, what’s it like to give your personal cell phone number out to hundreds of clients? It means receiving and responding to dozens and dozens of messages per day. It means that if my phone is dead for an hour, I am inundated with hundreds of messages flowing through it the moment I turn it back on. It means there is never, ever nothing to do. But… I wouldn’t have it any other way. I like to stay in touch with my clients, and allowing them to reach out to me whenever they need makes me feel like I am doing the best I can to be supportive and helpful. There are generally three different types of questions that I receive. The most common type is the easiest to handle. Can I eat Life cereal for breakfast? Do you allow this bread? I missed lunch because I was sleeping; what should I do now? These types of questions are pretty much black and white, and just take a moment of my time. I love these questions because it is great to be able to help someone just by responding quickly and easily. They literally just take moments to answer. The second type of question is more difficult and takes a bit more of my time. Questions such as: Can you help me tweak this recipe to make it TAP approved? Or, Can you give me some more lunch ideas? I am getting tired of the my lunches already. Or, Here is the menu of the restaurant I will be eating at tonight; what are my best options? These questions are really best saved for the client’s next weighin, (yup, this is what weigh-ins are
for), but because the questions can be time-sensitive, I try my best to respond quickly, so my client can go about their day. The third type of message that I get is the Help! I’m eating cake and I don’t know why! Please stop me! messages. Or, I am going on vacation and will be served a 12-course meal three times a day for a week — please advise. Or, I just ate everything I haven’t touched in the last sixth months — all in one sitting. Please help me get hold of myself! These aren’t specific questions but rather appeals for support, which also require a pretty immediate response. I am usually so happy that my client is reaching out for help that I am quick to respond to these as well. Another type of message I get is the Nachas Report. Hi, I wanted to let you know that my doctor just lowered my cholesterol medication, and he thinks that if I can lose ten more pounds he might be able to take me off it completely. Or, Hi, wanted to update you: The dress that I wore to my last son’s bar mitzvah is huge on me! I thought I would be able to wear it again, but apparently I am going to need to go shopping. Or, I wanted to say thank you. For the first time in my life I went on vacation and it didn’t revolve around food! We went boating, took walks, made bonfires and enjoyed each other’s company without thinking about food, food, food. These messages are my oxygen — the fuel that keeps me going. It is what inspires me to keep doing what I do, and what make my job so thrilling. The satisfaction of knowing that I’ve played a part in restoring someone’s health or confidence is what keeps me inspired day after day, and week after week. So keep those messages coming — I’m here and I’m listening!

“SO, WHO WILL BE SEATED beside me this year for the Rosh Hashanah davening?” Rebbetzin Bergman asked her husband. It had become a tradition in Rabbi Bergman’s shul that a different person would be given the honor of sitting beside the rebbetzin during the davening each Rosh Hashanah. The honor typically went to the wives of those who generously supported the shul. “I’m glad you brought it up, because I wanted to ask your opinion about an idea I had. I was thinking of offering the honor to Miss Kraus.” Miss Kraus was a woman in her sixties who had never married, most likely because her cranky personality caused her to be unpleasant company at times. Miss Kraus was a frequent guest at Rabbi and Rebbetzin Bergman’s Shabbos table, and the family worked hard to make sure that her presence was not disruptive to the other guests. Rebbetzin Bergman imagined the scene in shul: Miss Kraus at the front of the ezras nashim, seated beside the rebbetzin? What kind of message would that send? Finally, Rebbetzin Bergman spoke. “This is supposed to be a big honor — I just don’t see it.” Rabbi Bergman explained, “Klal Yisroel needs a good year, and I would like us to do whatever we can to invoke Hashem’s love and mercy on us.” “And seating Miss Kraus next to me will make that happen?” asked Rebbetzin Bergman quizzically. Rabbi Bergman explained his reasoning to the rebbetzin as follows. Parshas Nitzavim begins: “Atem nitzavim hayom kulchem lifnei Hashem Elokeichem… — You are all standing this day before Hashem, the leaders of your tribes, your elders and your officers, every man of Israel, your children, your women and your convert who is within your camp, from woodchoppers to water drawers, that you may enter the covenant of Hashem and His oath, which Hashem is making with you ‘hayom’ — on this day.” (Devarim 29:9-11) The Lubavitcher Rebbe, zt”l, notes that Parshas Nitzavim is always read on the Shabbos before Rosh Hashanah, because each Shabbos is related to the week that follows. Whenever the Torah used the word “hayom,” it refers to Rosh Hashanah, so when the above posukim describe a

covenant that Hashem makes with Klal Yisroel “hayom,” it means that Hashem makes this covenant with us on Rosh Hashanah. It is for this reason that we read Parshas Nitzavim on the Shabbos before Rosh Hashanah, beginning with the words, “Atem nitzavim hayom kulchem lifnei Hashem…” On that day of Rosh Hashanah, all of Klal Yisroel, from the leaders of tribes to woodchoppers, who Rashi says are the Cana’anim who had not been honest in their conversion to Judaism, must stand together b’achdus. When Klal Yisroel stands in unity on Rosh Hashanah, then the above posukim conclude that we enter into a covenant with Hashem, which strengthens the bond between Hashem and His chosen people. The Lubavitcher Rebbe observes that when close friends make a covenant that their love shall endure no matter what the future may bring, then this covenant itself will cause the friendship to endure even when the circumstances that brought about that friendship fade away. During Rosh Hashanah, Klal Yisroel forms a connection with Hashem so powerful that nothing in the world can break this bond. How do we arouse in Hashem a desire to form such a powerful bond with Klal Yisroel? When we overcome our natural inclination to separate people in our minds according to logical categories, such as “leader” versus “woodchopper,” then we prove we are able to give in a way that is above logic. When we demonstrate this high level of love towards each other, Hashem bestows infinite love upon us and bestows His blessings upon the coming year. “Don’t you see? People view Miss Kraus as a nebach, and they seem to only tolerate her presence. If you, in your respected position as rebbetzin, could stand beside her b’achdus, it could inspire the entire shul to unite in love and unity, overlooking the labels that seem to separate us. We could invoke Hashem’s special covenant of love and merit a truly gebentshed year.” Rebbetzin Bergman smiled as she answered, “I couldn’t think of a better person to daven beside me on Rosh Hashanah. I can’t wait to tell her so in person.” May we all strive to stand in true achdus this Rosh Hashanah, and in so doing merit a good gebentshed year.

Airmont’s Jewish Residents Unhappy to Be Excluded from Unity Event A COMMUNITY EVENT designed to bring residents together may be doing the exact opposite after being scheduled to take place on Shabbos, making it impossible for Jewish villagers to attend the gathering. According to The Journal News, Airmont Day will be held on September 16th, a date chosen this past spring by a social media survey and emails sent to approximately 600 village residents. Visitors to Airmont Village Hall and town senior club meetings also had the opportunity to choose whether the festivities should take place on Shabbos, September 16th or Sunday, September 17th. Village officials said that 65 percent of the 110 responses received asked for the event to take place on the 16th.
A letter sent by resident Moshe Katz to the village’s board of trustees said that neither he nor any of his friends in Airmont had received the survey. Mort Becker, another Jewish resident of Airmont and a member of the village’s technology committee, said that the survey email list was out of date and included many people who no longer live in the village. Both Katz and Becker were disturbed by the idea that Airmont would consider holding the event on Shabbos. “An event like Airmont Day, whose main purpose is community inclusiveness, should not be scheduled to exclude an entire community,” noted Katz.
Town of Palm Tree One Step Closer to Reality ORANGE COUNTY LEGISLATORS threw their support almost unanimously behind an agreement that would fold the Village of Kiryas Joel into an all new town whose name pays homage to the Satmar Rebbe Reb Yoel, zt”l. VIN News reported that a county legislature meeting last week included a vote on a measure that would allow residents of Kiryas Joel and Monroe to cast their ballots in November on a proposal that would create a new
town called Palm Tree. The new town would add considerable acreage to Kiryas Joel’s existing boundaries in exchange for a ten-year moratorium on future expansion efforts, among other conditions. The measure passed by a vote of 18 to 3. Representatives of both the Village of Kiryas Joel and the United Monroe citizen’s group say that they are hopeful that the new agreement will finally end years of tension and division in the area.
Changes Made at Difficult Route 202 Intersection A COMPLICATED INTERSECTION on one of the most accident-prone roadways in Ramapo is about to undergo a major change as the New York State Department of Transportation announced a new traffic pattern on Route 202. Ramapo Daily Voice reported that the three-way intersection of Route 202, Lime Kiln Road and Spook Rock Road in Suffern has long been a difficult one for motorists to navigate, as Lime Kiln’s downhill westbound traffic converges with northbound traffic on Spook Rock for the turn onto the fast-moving Route 202. The new traffic pattern will prevent southbound Route 202 drivers from turning left at the intersection, leaving them to use either Wilder Road or Grandview Avenue to travel to the Monsey area. Route 202 is part of a roadway system that was used for interstate travel before the interstate highway sys-

There is nothing like an oven-fresh fruit cake to enhance a festive meal. The basic apple crumb pie is a staple in my home, but I do try to be a bit more creative on yom tov. The two fruit cakes featured are simple, making it the perfect extra to squeeze in on erev yom tov. The apple galette is time-consuming, but definitely worth the effort.

FRUIT CAKES This recipe gets mixed straight in a bowl or disposable pan and yields enough batter for both the pear and summer fruit cake, giving you the luxury of serving double presentations for half the work.
BATTER 2½ cups flour
¼ tsp salt
1¾ cups sugar
2¼ tsp baking powder
1¼ cup oil
Mix all ingredients by hand.
5 eggs
CRUMB TOPPING ½ cup brown sugar
2 T. oil
2 T. flour
¼ tsp cinnamon

SLITTED PEAR ROUND 3–4 medium-sized pears
For this recipe, I used an 11” fluted cheesecake pan with a removable bottom, compliments of Culinary Depot.
DIRECTIONS: 1. Cut a parchment paper the size of the removable insert. 2. Generously spray the fluted rim with baking spray. 3. Pour approximately three-quarters of the batter into the pan. Cake will grow substantially; do not fill more! 4. Peel pears and slice in half lengthwise. Remove the cores and place on cutting board, cut side down. 5. Using a sharp knife, cut into thin slices, being careful to maintain shape. 6. Using a wide spatula, gently lift pear and place over batter, slightly separating and overlapping slices. 7. Sprinkle three-quarters of crumb topping on pears. 8. Bake at 350° for 1 hour.

SUMMER FRUIT CAKE 1/4 of fruit cake batter OR 8 Hungarian plums, for a plum-only version 1 T. confectioners sugar ¼ cup quick oats
For this tart-shaped cake, I used an oblong 14” tart pan with removable bottom, compliments of Culinary Depot.
DIRECTIONS: 1. Dice plums and peaches in ¼” squares. Sprinkle with confectioners sugar. 2. Pour batter into prepared pan as per above instructions. Distribute fruit over batter. 3. Combine oats with remaining crumbs. Sprinkle over fruit. 4. Bake at 350° for 50 minutes.
This is a very handy serving tool. Use serrated edge to cut pie and lift neat slice out of the pan. Available at Culinary Depot.

DOUGH: 4 ½ cups flour

I was introduced to this showstopping pie by my sister-in-law, and although I don’t make it often, it’s a true treat when I do. This was baked on a 14” pizza pan, compliments of Culinary Depot.
Knead into smooth dough and place in refrigerator for ½ hour.
FILLING: 4 Cortland apples
2 T. brown sugar
½ cup oats
5 Ginger Gold apples
1 T. vanilla sugar
1 T. apricot jam
½ cup sugar
1 ½ tsp. cinnamon
1 tsp. oil
¼ cup flour

Egg white
Sugar
DIRECTIONS: 1. Take off approximately 1 cup of dough.

Using a pastry brush, brush the mixture over the apples, being careful not to mess up the design. 12. Bake at 350° for 1 hour and 15 minutes. Cover the center with foil for the last 15 minutes.
SEASONED CHEF: Although I haven’t tried freezing this galette raw, I’ve successfully frozen apple pies raw and then baked them on erev yom tov, and I would feel comfortable doing the same with this. Use extra cup of dough and slices of apples to make a hand pie sampler.

what exactly is the whole buzz around raw honey? Those charming little bears on the supermarket shelves? Their facts are not as sweet as their smiling faces. They don’t hold a candle to their originals. But honey is honey, isn’t it? That may have been true years ago, when everything was done by hand, on a smaller scale than today. But with the mass-production of today, the golden syrup we now call honey is not the true honey of yesteryear. How does mass-production impact quality? To keep up with consumer demand and visual appeal, manufacturers use micro-filtering as well as heat to clean their honey, both which deplete the original honey of its abundant nutrients. The heating is better known as pasteurization, and its purpose is to kill yeast and to prevent crystallization/granulation. Heat is also used to aid in the speed of mass-bottling, since hot honey is easier to work with. Heating certainly degrades the honey. True “raw” honey should not be heated over 95 degrees F (the natural temperature of the hive). Heating reduces the medicinal benefits of honey and its aromatic characteristics. Recent studies have shown a reduction in most of the quality substances including enzymes, antioxidants and other nutrients following heating, even at fairly low temperatures. This is why you should let your tea cool a bit before adding your honey. Additionally, micro-filtering eliminates many of the healthful properties naturally found in honey. Though there is no legal definition, raw honey is described as honey “as it exists in the beehive.” A tour of Rockland Honey attests to just how pure their raw honey is; the only difference is the container in which you will find it. But since the FDA does not regulate the honey industry as it should, brands can get away with consumerappealing words like “raw” and “organic,” though they may be factually incorrect. And since processed honey and raw honey do not differ in their appearance, how can the average consumer discern which honey is the “real deal”? It would be safe to assume that most massproduced honey is the generic, and opt for the locally harvested original.

Frames are then placed in the boxes for the bees to build up the wax honeycomb. A bee colony generally contains one “queen” female, a few thousand male “drones” and a large population of female “worker” bees. THE QUEEN BEE The queen is the largest bee in the colony. She’s the mother of all worker bees and has no control of the hive. Her sole function is to serve as the reproducer, laying her own weight in eggs every couple of hours. THE DRONES Male bees, called drones, are characterized by their eyes that are twice as large as the worker bees and queens. Drones are stinger-less and usually live about 90 days. WORKER BEES Worker bees are the smallest bees in the colony. A colony can have 50,000–60,000 workers! The life span of a worker bee varies according to the time of year. Her life expectancy is approximately 5–6 weeks. Workers that are reared in September and October, however, can generally live through the winter. The reason summer bees have shorter life spans is that they work a lot more than the ones working in the cooler weathers. Workers serve to feed the queen and larvae, guard the hive entrance and help keep the hive cool by fanning their wings. Worker bees also collect nectar and produce wax comb. The comb is composed of hexagonal cells that have walls that are only 2/1,000-inch thick, but support 25 times their own weight! Does honey have an expiration date? Honey stored in sealed containers can remain stable
for decades and even centuries! Modern archaeologists have oftentimes found honey in several-thousand-yearold caves, proving honey’s eternal shelf life! Is your honey organic? Today, it is nearly impossible to ensure that honey is indeed organic. Contrary to popular belief, it’s not just the bees that need to be chemical-free, but all the crops that the bees come in contact with need to be certified organic. And since bees forage on crops within a fewmile radius, it is virtually impossible to ensure that the few surrounding miles are chemical-free. Why does my honey look or taste differently from time to time? Honey comes in many colors and flavors. These are called honey varietals and are determined by the types of flowers the bees visited for nectar, oftentimes depending on the season. Pollen in honey is sometimes analyzed to help determine the primary floral source. Will eating local honey help with my allergies? Though there are no proven clinical studies, there are anecdotal recountings of people claiming relief from allergies by consuming local honey. This stems from the idea that seasonal allergies are dependent on the vegetation within surrounding areas. And since the bees feed on the very plants affecting us, there are traces of the local pollen found in the honey, acting as a form of immunotherapy. In a similar vein, it is also believed that local honey can work in this manner by building up our immune systems against strains of viruses prevalent in the local region. What are some proven benefits of raw honey? Raw honey is a powerhouse of medicinal benefits. It contains antibacterial and antiviral properties that help

ward off viruses and illnesses. The antimicrobial properties act as a natural antibiotic, preventing infection on minor cuts and burns. Raw honey also exerts antidepressant and anxiolytic effects, making for a choice mood enhancer and energy booster. And of course, it’s superior to any over-the-counter cough suppressant. These are merely a select few of its extensive range of benefits. It’s no wonder raw honey was dubbed “liquid gold.” What is one misconception about honey you’d like to clarify? Perhaps the most widespread misconception is that bees “make” honey, like cows make milk. Here’s how they really make honey: Bees drink nectar from flowering plants, and regurgitate the nectar into the comb. The bees add an enzyme called invertase every time they regurgitate their nectar, which helps to break down the nectar. During the ripening process, the bees “dry out” the nectar by fanning their wings, creating an airflow around the honeycomb that helps water evaporate from the nectar. The ripened end result is what we know as honey. What’s your most commonly asked question? It would have to be “have you ever been stung?” everyone asks! But being a beekeeper means being stung every once in a while, and you come to expect it. But we wear protective suits and gloves, and for the most part, the bees don’t sting. Do you offer tours? Yes, we do! We offer private tours as well as educational school tours. All monies are applied as a donation to buy supplies and equipment for our honey bees and our bee program. Tell us more about your upcoming part in the Rockland County Preservation Program. Our part in it will be our bees’ pollination. Other than their honey, bees are also a vital part in the pollination of plants and crops. In order to harvest crops in quality and quantity, you need to have an abundance of bees to aid in the pol-

lination. How do bees pollinate plants? As bees travel from blossom to blossom in search of nectar, they brush against the pollenbearing parts of a flower and pick up pollen. When the honeybee goes to another flower for more food, some of the pollen from the first flower sticks to the second flower. This pollination greatly increases the quantity and quality of many crops like fruits, vegetables and nuts. In fact, according to a recent study, the increased yield and quality of agricultural crops as a result of honeybee pollination is valued at more than $17 billion per year! Why do bees make honey? Humans aren’t the only beneficiaries of their honey! Honeybees store honey as food because it
provides the energy for bees’ flight muscles, and provides heating for the hive in the winter. Fortunately, though, honeybees will make more honey than the colony needs, so it is necessary for beekeepers to harvest the excess, which they bottle. How much honey does a hive produce? The average hive produces 50–60 pounds of honey in a year! In a really productive year, a hive can yield up to 100 pounds! Is there anything else that honeybees produce? The beeswax from the hive is commonly used in skin-care products, cosmetics, as well as in some food products. What is one of the challenges your bee colonies face? Varroa infestations. Varroa mites, also known as Varroa Destructors, are parasitic mites that attack honey bees. They attach themselves to the bees and weaken them with the varroosis disease. Untreated, mite infestations have led to the collapse of many bee colonies across the United States and Canada. To shield our bees, we use only organic pesticides. What does it mean to “care for the bees”? It takes a lot to maintain honeybee colonies. You have to ensure they have enough food to thrive, and be careful not to remove too much honey, as honey is their food source too! The bees also need to be kept safe from diseases and pests. At times, we’ve lost a lot of bees, even with the best care we could give them. It’s expensive to maintain. Do you also offer bee removal services? Yes, we do! Due to the scarcity of honey bees, bee removal services offers us the opportunity to save the bees and have them join our farm. We are in contact with local exterminators, and since they are aware of the declining hon-

Queen bees lay up to 3,000 eggs per day! Honeybees’ wings stroke 11,400 times per minute, thus making their distinctive buzz. The average worker bee produces about 1/12th teaspoon of honey in her lifetime. In order to produce 1 pound of honey, 2 million flowers must be visited. A hive of bees must fly 55,000 miles to produce a pound of honey. Bees leave the hive 15 times per day and visit around 100 flowers each time — that’s 1,500 flowers a day! Honey bees make an average of 1,600 round trips in order to produce one ounce of honey. In their short lifespan, worker bees fly the equivalent of 1½ times the circumference of the earth. Roughly one third of all the food Americans eat is directly or indirectly derived from honey bee pollination.
A word of caution:
Honey may contain Clostridium botulinum spores that can cause infant botulism, a rare but serious disease that affects the nervous system of young babies (under one year old). C. botulinum spores are present throughout the environment and may be found in dust, soil and improperly canned foods. Adults and children over one year of age are routinely exposed to, but not normally affected by, C. botulinum spores. The concern for babies stems from the fact that infants lack the fully developed gastrointestinal tract of older humans.

Since the queen is the most protected bee in the hive, once the queen is captured, the rest of the bees will follow. We may also use a “bee vacuum” that sucks the bees into the hive within.

What’s the difference between honeybees and hornets, wasps, etc.? They are very different! Hornets, wasps and yellow jackets are highly aggressive and are very likely to attack. Honeybees, on the other hand, are not interested in humans, so long as they aren’t a threat to the beehive. The bees that are common visitors in our sukkahs are most likely not honeybees. There’s this common misconception that every bee dies after stinging. This is only true for the honeybee, as the stinger stays in the human’s skin, causing the bee’s death. But the other bees may sting repeatedly. If you do get bitten by a honeybee, don’t squeeze the area, as you will push the venom further into your skin. Instead, use a credit card to the scrape across the stinger, which will usually result in pulling the stinger out to the side. How is the honey extracted from the comb? This is known as the extraction process. The hardened parts covering the comb are known as cappings. Capping the comb is the bees’ way of saying “ready!”. Once capped, the honey is ready for extraction. Cappings are removed with a special knife, and though the honey inside remains soft, it won’t simply run out. To extract the honey, the frames are then placed in a honey extractor, which spins them so that the honey is removed by centrifugal force. Once extracted, the honey is strained to remove any wax that broke off while spinning. What’s left is the golden syrupy goodness, now ready to be bottled. The honey is then fed through a bottling machine, ensuring clean packaging. Capped with cork, and sealed with wax, Rockland Honey’s end results are as raw as you can get! BERRIES BEING EATEN by hungry deer. Rotten, inedible apples rolling on the sidewalk. A dying fruit tree on a beautifully manicured lawn. What do they have in common? In Parshas Shoftim, Hakadosh Baruch Hu gives the Yidden step-by-step instruction on how to go about treating the enemy during war. One of His commandments is not to destroy any of their fruit trees because of baal tashchis. In times of war, it is common practice to cut the food supply of the enemy to force them into surrendering, but even at such times, being careful with baal tashchis takes precedence. There are many halachos involved in caring for fruit trees on a property. Whether for a sukkah, building a home, enhancing a lawn or renovations, one has to ask a knowledgeable posek. Here are just some anecdotes of people who have dealt with such an issue. The rule of thumb is: Ask! Ask your rav before assuming anything.
THE GREENBERG FAMILY “Fungus,” the landscaper declared. The Greenbergs looked sorrowfully at the once-beautiful shady tree that had enhanced their lawn for so many years. “All over Monsey, these cherry blossom trees have fungus.” The Greenbergs had known something was horribly wrong when the tree suddenly grew ugly globs instead of pretty leaves.

Cherry blossom tree? They had a regular red tree, didn’t they? Does that make it a fruit tree? So that’s why the tree randomly grew unidentifiable round red balls. Apparently they were right. These cherry blossom trees go through a process that disables their cherrymaking-ability before being sold, and then they are marketed as a simple leafy tree. The status of these trees are shady (sorry for the pun). Their ehrliche landscaper explained that his rav had told him what to do in these cases. In order to save the tree, it had to be cut to the bark, and it often regenerated the next year. The landscapers got to work, and in an hour, the tree looked like a lonely stick in the ground. The Greenbergs shared the sorry story with a friend later that day. “Really?!” the friend said. “We had the same tree with the same fungus, and our dayan told us not to touch it! It doesn’t pay to mess with a fruit tree.” Mrs. Greenberg was horrified. Did they do the right or the wrong thing? She asked a talmid chacham knowledgeable in the matter. Apparently, there is more than
Since then, the family living in the home had lost a child in addition to many other tragedies. They moved out of the house hoping to sell the house and have a meshane mazel, but the home could not be sold. Everyone stayed far away. It’s been a few years, yet the house is still unoccupied.

The lonely branch came to life. Gorgeous white and pink blossoms grew out of the dead branch, and in one season the tree grew to double its size.
THE WEISS FAMILY Houses in Brooklyn are hard to come by. That’s why it came as quite a surprise to find a well-maintained house, decently priced, in the heart of the city, no less. When the house was still on the market a few months later, the Weisses decided to at least make some inquiries. Could it be that their dream of owning a home in Boro Park was a possibility? Why was the house for sale? Why was it so cheap? Apparently, an apple tree had been uprooted from the property at a certain point. It had been done questionably, and the tree did not survive the transplant.
The Brooks thought they had left city life behind when they moved to a quiet Monsey street — until an ambitious housing developer bought the little house next door. Within a few months, tractors and cement trucks outshouted the birdsongs they had once enjoyed. Then the framers arrived, and a monstrous, three-story, multi-family home went up. The Brook boys took great interest in every detail of the new house. At least the building provided hours of occupation. They noticed one room in the house was built at an interesting angle and raised above ground. The developer told the curious Brooks that there had been an apple tree and he asked a sheila about it. The answer he received was that it was permissible to cut the tree down, but the stump would have to remain. Therefore, one bedroom had to be raised to accommodate the stump. A few months later, the homes were ready. Many people were afraid to move into the home with the raised room. He lowered the price and the expectations. Finally, a large family took the offer, probably because of the affordable rent. Finally, the “tree” house

was occupied. Unfortunately, the family had a tragic accident only a few months later. Everyone survived and is doing well, yet they can’t help wondering… Was it the fruit tree?

For years, the Gross family had a dead, wimpylooking tree at the very edge of their property. The only thing they knew about the tree was that it had never grown a leaf and was a total eyesore. The town wanted to add sidewalks to the street but the tree roots were in the way. The landscaper agreed with the officials, saying that it was completely dead and should be uprooted. Mr. Gross, however, knew that it might not be such a simple matter. He went to ask his Rebbe if it was okay to remove the tree. The Rebbe’s words were clear: “Never touch a fruit tree.” The town officials tried reasoning with Mr. Gross, and the landscaper shook his head in wonder. The very next year, shy flowers peeked out of the tree. For the first time in decades, the leaves came, and a few weeks later the tree sprouted apples. Today, quite a few decades later, the tree is still going (or growing) strong! A dead tree, revived. The tree is still at the very edge of the lawn and often rains apples on the sidewalk, but the Gross’s are grateful. They have a beautiful fruitful family with many simchos celebrated every year. It just reinforces the importance of asking an adam gadol without making assumptions.

INGREDIENTS: 2 cups sugar I recently came across a sheet of math homework. The assignment involved many word problems, one of which I’d like to share with you. It read as follows: You have been given the task of transporting 3,000 apples 1,000 miles from Appleland to Bananaville. Your truck can carry up to 1,000 apples at a time. Every time you travel a mile toward Bananaville you must give away 1 apple to pay tax, but you pay nothing when going in the other direction (toward Appleland). What is the highest number of apples you can get to Bananaville after all taxes? Honestly, this one was totally beyond me. All I could think of was: What in the world are they planning to do with all these apples? If I’d be there I would just keep them all in Appleland and make caramel apples! There’s no better season for caramel apples than early fall. Apples are abundant, and at their very best, crispy, crunchy, perfectly colored and deliciously flavored. So grab a bushel of them (or the whole 3,000), pick your toppings and enjoy! (Still working on that word problem? The answer is 833 apples…)

Stir gently so as not to get the mixture onto the sides of the pot. Cook until it’s amber-colored and a candy thermometer reads 320 degrees (approximately 8–10 minutes).
Remove from heat and slowly add the next four ingredients. Return to low heat and whisk until smooth.

Allow the mixture to cool until the caramel is thick enough to coat the back of a spoon.
While waiting for the mixture to cool and thicken, wash apples well, removing all wax and shine completely. You may even want to use fine grit sandpaper if you have it on hand. Insert wooden sticks into apple centers, pushing ¾ of the way into the apple.

Dip the apples into the caramel and allow the excess to drip off. (If most of the caramel slides right off you may need to let it thicken a bit more before trying again.)
Coat in toppings while the caramel is still warm, and place apples on parchment paper until the caramel hardens. Bon Appetite!

t 20, Breindy was not so old to still be single. Some would consider her quite young but… the situation was starting to get serious. Breindy was beginning to test her boundaries, dabbling in unacceptable behavior and dress. And I was worried about her. I didn’t know how to help her but I hoped that finding a good shidduch, a kind husband and starting to build a home might get her to settle down. And so, I signed her up for Tehillim Kollel, asking them to daven for my Breindy, both for her neshama and that she should find a shidduch soon. A shidduch came up almost immediately. I was so excited, everything seemed wonderful… and then, someone gave bad information about our family and it fell apart. I was devastated. I called up Tehillim Kollel to share our heartbreak and ask for more help. I was so wounded- why would someone do this and hurt us in this way? A few months later, all was clear. My daughter was engaged- to a wonderful, ehrlich boy, a boy who was so much better for my daughter than the first shidduch! etc. All they’re trying to do is selfcalm. They feel the need to soothe or distract themselves from whatever is bothering them. I never tell a child, “Please! This is nothing! Do you know how many children in Africa are starving?!” (Don’t try
this at home — my kids all suddenly perk up and offer their spinach and Brussel sprouts to these poor, sad African children.) The biggest gift I can give my child is to listen. And I mean really listen. Giving endless advice or taking control over the situation does not work. I pay close attention to what my child is expressing and validate her feelings. “Oh wow, it must be really hard to be lonely at recess time.” Then I show the child that I have complete confidence in her ability to pave her own way, because given tools and support, she can and will rise to the occasion. I can say, “You’re such a bright, kind girl. I’m so curious to see how you’re going to figure this one out.” Because we all wish life would come with a foolproof manual. (Anyone
checked the book stores? I’ll be the first one on line to buy it.) But the truth is, some life skills are just not a “paint-by-number” piece. Rolemodeling is the game changer. I show my kids how I deal with my
own struggles. For instance, I’ll tell them, “I really wasn’t sure if that was my best lecture ever. It’s truly hard to second-guess myself. I know I prepared well and did my best; now the outcome is up to Hashem.” These affirmations sit warm and cozy in a child’s center. They come to realize nobody’s perfect and all we have to do is try our very best. A certain quiet calm is infused with this attitude and the groundwork is laid for success. Another 21st century common misstep is guilt. My go-to response can sometimes be the need to have my child be my friend instead of staying strong and confident in my decision and being a mom. Chas v’shalom, I don’t want my children to be yesomim —I want to be an active, living parent for them. I need to pick the right path for my family, with my husband and Daas Torah, and stick to it confidently and firmly. Then my shoulders are broad and strong enough for my children to lean on and be secure in their way. One fundamental building block of childhood is boundaries. Along with the boundaries come natural consequences. This is key in teaching children right from wrong and how things are in the real world, away from Mommy’s frilly apron strings. When a parent sets limits, healthy children will push. Every child will nag endlessly about what he can’t have. Every healthy teenager’s dream is to explore the one option his parents didn’t. This is age-appropriate.
What’s also age-appropriate is experiencing what happens next firsthand. When a child refuses to do his homework and then misses recess to finish the assignment, you can bet your fidget spinner that it won’t happen again. When a teen stays up late yakking with her friends on the phone and fails a test, she will usually be the first to hang up next time and focus on her studies. When a parent interrupts this natural occurrence of events by excusing the behavior and fighting the rules with the teacher, she is depriving the child of a gift—the gift of learning that our actions have consequences. For the younger set, every time you throw your hands up and give in to the nagging, your child learns “Mommy doesn’t mean what she says. I just have to keep whining and I’ll get what I want.” But in fact, Mommy and Tatty cannot always give the child what they think they must have, nor can they always save the day. The child will quickly learn that it’s up to her to pull her weight in this world and only then will she link action to consequence. Giving in to a child’s demands is often the easier option. But looking ahead, these boundaries are in every child’s best interest and in the hope of a bright future. TO PEEL OR NOT TO PEEL?
By removing the apple’s skin prior to eating it, you’re putting approximately half of its fiber and just about three-quarters of its vitamin C into the trash can, along with a pack of other nutrients. The skin also contains antioxidants and compounds that protect your memory, improve lung function and do you a load of good. However, many of the apples in households everywhere have been treated with pesticides. Experts say not to peel them, but to opt for organic produce. If you can’t afford to do so, limit pesticide exposure by washing all produce thoroughly under running water, scrubbing firm produce (like apples, potatoes or squash) with a clean brush, and drying prior to eating with a clean cloth or paper towel. Soap, detergents or produce washes are not recommended.

DON’T JUDGE A FRUIT BY ITS PEEL!
As a general rule, the darker a fruit is, the richer it is in nutrients, but that is true for the flesh of the fruit and not its peel. An apple may look darker than a cantaloupe, but the cantaloup is richer in nutrients. PEELS IN THE COMPOST HEAP
Both banana and orange peels make excellent fertilizers and should be placed on the compost pile instead of in the trash can. In a large-scale experiment, Del Ora, a Costa Rican orange juice manufacturer dumped 12,000 tons of discarded orange peels on degraded land, and the effect was instantaneous. In just a few months, the soil became thick and black, but unfortunately, the experiment was forced to end due to a competitor’s lawsuit. Upon evaluating the land some 16 years later, a team found that the compost heap yielded richer soil, more tree mass and a broader diversity of tree species than the neighboring fields. So although the experiment ended prematurely, orange peels’ fertilizing power was proven.
THAT FUZZY PROTECTION
The fuzz on the peach skin and kiwi peels is said to repel insects who get irritated by it. Ask around, and you’ll learn that it keeps away plenty humans, too, who will opt for nectarines over peaches.
GOING BANANAS OVER BANANA PEELS!
EAT THEM Not only are banana peels edible, they are chock full of nutritional benefits, boasting fiber, vitamin C, vitamin B6 and potassium. In countries like India, they do not get tossed but are rather blended into smoothies, fried, baked or boiled and then consumed. SOAK THEM Let banana peels sit in a bucket of water for several days and use the nutrient-dense water to quench your plants. COOK THEM When roasting meat, place banana peels in your pan beneath the meat, to keep it moist and tender. RUB THEM ...on your teeth for a natural tooth whitener, on your shoes for a great polish (should be followed by buffing), on your silver for natural polish, on your wart to make it disappear and on your itch (bug bites, poison ivy or psoriasis) to soothe it.
USE CITRUS PEELS TO:
• Clean wood surfaces • Polish stainless steel, chrome or copper surfaces • Keep odors at bay: Some orange peels in old hosiery for your musty closet, some peels tossed down your drain to eliminate sink odors, some lemon peels to deodorize your refrigerator. • Prevent brown sugar from forming into rocklike formations by keeping a few orange rinds in the bag. • Build a better bonfire by letting their natural oils act as firelighters • Season different teas and foods with lemon or orange zest, which give a flavor unmatched by any other flavoring. • Enjoy them chocolate-covered or candied. Some people love those delights.

COLONIAL: This style home dates to the 1800s and is one of the most popular styles in the United States. Colonial homes usually have two or three stories. The classic Colonial house floor plan has the main living area — kitchen, living room, dining room and family room — on the first floor and the bedrooms on the second floor. In our area, a colonial is the most desirable floor plan, mostly because of the comfortable living space, and usually full basements for added storage and living space.
Different Varieties, Different Names There are many varieties of apples, all with different names. Some are tart, some are sweet. Some are soft, and some are very hard. Some are red, and others are yellow, green or orange. Some are very small, and others are large. Some are shiny and others aren’t. Basically, if one is in the mood of an apple, you can have your pick! Similarly, there are many types of houses, styles and sizes. A decision on what type of apple one should choose may be minor, but when it comes to a home, this decision is major. Upon doing research for this article I found out that there are more styles of homes that I ever thought possible. We will discuss the most common ones in our area. CAPE COD: This type of home originated back in the 1600s, but was a common style home built in the 1930s. We can see them around our area, in the older neighborhoods. Typically one story — sometimes 1½ stories — the Cape Cod style features a steep roofline. The attics are often finished and used as bedrooms. They often boast dormer windows for added space, light, and ventilation. The cape style home is versatile and is easy to add on to. Many of these style homes in our area have been renovated with added on attached garages, sunrooms and bedrooms.

A decision on what type of apple one should choose may be minor, but when it comes to a home, this decision is major.
RANCH: This style originated in California in the 1930s (hence the term “California Ranch”). It is a home designed so that bedrooms, kitchen, dining room and living space are all on one level. It emerged as one of the most popular American styles in the 1950s and 60s, when the automobile had replaced early 20th-century
forms of transportation, such as streetcars. Now homebuyers who owned cars could move to the suburbs into bigger homes on bigger lots. Most of these homes therefore were built with garages. It is a popular home most especially because it has no steps and therefore can accommodate a handicapped occupant or someone who finds steps difficult.
SPLIT LEVEL: A modern style that architects created to separate — “split” — certain living activities, such as sleeping or socializing, split levels offered a multilevel alternative to the ranch which was typical in the 1950s. The lowest levels were devoted to a garage and family room; the midlevel, which usually jutted out from the two-story section, offered “quieter” quarters, such as the living and dining rooms; and the area above the garage was designed for bedrooms. There is usually a half staircase between each level. In our area, there are many split levels. They are almost as popular as the next style that we will discuss, the…
HI RANCH, also known as a bi-
level or a split ranch. This is one of the most popular style homes built in the suburbs in the late 1950s through the late 1980s and even into the 1990s. It features practical living space and is the most affordable home style to build. A typical hi-ranch has three bedrooms upstairs along with a living room, dining room and kitchen. The lower level has the garages, a family room and sometimes another bedroom. It received its name because it is a more affordable variation of the ranch. Unlike the ranch, it does not have a full flight of steps to the lower level. Typically, the entrance level is “split” between the two levels and there is a half staircase going upstairs and the other half staircase going downstairs.
Some other interesting factoids that I discovered while learning about homes: There are homes with names like the: “salt shaker,” “stick,” and “shotgun.” These homes are named for their shapes. “Salt shaker” homes resemble a salt shaker with a wider bottom than top. The “stick” is an older colonial style which has vertical and diagonal boards which are part of the design, but resemble sticks, while the “shotgun” is a narrow house, usually one level and one room wide, and one rooms leads into another, so if someone was to fire a gun the bullet can traverse every room in the house, front to back! There are many other styles such as Victorian, Tudor, Contemporary or a Farmhouse. These homes are styles and we see them in our area. They refer to the design from that period in history. There are log homes and bungalows. Today a log cabin can be larger and more elaborate than a McMansion! An interesting bungalow style which was very popular 1900–1930, is the craftsman, or Arts and Crafts. It features a bungalow with a lot of interior woodwork, built-in shelving and seating. These are just a few of the homes and styles available for sale and in
our neighborhoods. So next time when you head down the produce aisle and spend a full 10 minutes to choose the apple variety that you wish to purchase; imagine yourself sitting at the table, munching on that apple, as you are perusing all the varieties of homes that are available for sale, knowing that it is greater than a 10-minute decision!
