The problem with the current climate of sensationalized reporting is that it is very hard to know what are “real” facts. I understand firsthand how distortion and opinion are built into the news. After having lived in Eretz Yisroel for several years, I see how the events that happen there are reported here according to the agenda of the news agency. Truth becomes relative. Dentistry has been the subject of panic and scares for many years now. Some of the more common irrational fears of the public regarding dentistry include amalgam fillings, X-rays, infectious disease transmission, general anesthesia, and especially fluoride. There is a huge passionate group of anti-fluoride activists who write endless articles about fluoride poisoning our drinking water and even won’t allow fluoride toothpaste in their homes, despite overwhelming evidence that fluoride is safe and effective. Why the great fear of fluoride? The CDC (Centers for Disease Control and Prevention) named fluoride in drinking water as one of the 10 greatest public health achievements of the 20th century! Community water fluoridation is recommended by nearly all public health organizations including the American Dental Association, American Academy of Pediatrics, U.S. Public Health Service and the World Health Organization. The American Dental Association puts out a 71page booklet explaining the positive results of fluoride which is a comprehensive encyclopedia of fluoridation facts taken from over 350 scientific references. When I, and other dentists, give fluoride treatments and encourage our patients to rinse with fluoride mouthwash it is for the benefit of the patient, not the doctor. Fluoride in the water or in vitamin supplements becomes part of the developing tooth, creating a stronger enamel. Fluoride from toothpaste or as applied by the dentist helps speed up remineralization of the tooth enamel. It is a process that kind of reverses the start of a cavity and makes a more favorable environment to prevent new decay. There is a actually a reverse profit motive for dentists to recommend fluoride to their dental patients. When cavity rates go down, both the individual dentists and the ADA are less in demand and less productive. As dentists, our only purpose for recommending fluoride is to improve the dental health of our patients. Common sense should tell you that this is a real fact. moderation. In our society, evidence shows that we may be over-fluoridating due to the high levels of fluoride in prepared food, drinks and dental products. According to all major health resources, caution is advised when it comes to fluoride levels. As the 2010 paper Inadequate or Excess Fluoride: A Major Public Health Concern, put out by the WHO states: The toxic effects of high fluoride intake are due to the fact that it is a direct cellular poison, which binds calcium and interferes with the activity of proteolytic and glycolytic enzymes. In this very document, the WHO cautions against both too little and too much fluoride in worldwide communities. As stated in my article Fluoride: Friend or Foe?, the U.S. Department of agriculture delineates the highest level of daily intake that is likely to pose no risk of adverse health effects for adults and children — intake numbers which are easily bypassed due to the structure of our current society, especially in regards to the pediatric population. The claim that “there are communities throughout the world that have naturally occurring fluoride in their drinking water with concentrations considerably higher than what is recommended by the CDC with no known negative health consequences,” is entirely untrue. In fact, the WHO is dedicated to reducing high fluoride levels in areas with increased fluoride. As the WHO says: Fluoride intake has both beneficial effects – in reducing the incidence of dental caries – and negative effects – in causing enamel and skeletal fluorosis following prolonged high exposure. The ranges of intakes producing these opposing effects are

not far apart. Excessive fluoride intake usually occurs through the consumption of ground water naturally rich in fluoride, or crops that take up fluoride and are irrigated with this water... Such exposure may lead to crippling skeletal fluorosis, which is associated with osteosclerosis, calcification of tendons and ligaments and bone deformities. So while common sense tells us that fluoride in moderation may prove beneficial to public health, common sense also tells us that carefully monitoring our exposure to fluoride in excess is vital, taking into account the variables that exist within our infrastructure — a point that the CDC cautions medical practitioners to carefully weigh before prescribing fluoride supplements, due to the potential harm that comes from elevated exposure. The goal of the article addressing fluoridation was not to instill widespread panic among the masses, but to educate our readership about what exactly fluoride is, and the parameters for safe exposure. Every person has the right to know what is entering their body and how it may affect them both positively and negatively. Sincerely, Ruchy Reese P.S. Alternatively, my four-year-old son had been using a fluoridated toothpaste prior to the article in question and developed the lacy white signs of mild fluorosis — a proof that for some children, at least, the simple combination of fluoridated foods and toothpastes may already tip the scales of safe exposure.

MY DAUGHTER AND I went to visit a neighbor on Shabbos. Her sons were playing a game with some friends that caught my daughter’s attention. When they were done, she asked to play with it. I saw how much she liked it, so a week later, when we were in the toy store, I went looking for the game. I did not know the name and couldn’t find it on the shelves. I tried explaining to the saleslady what I wanted, but she couldn’t help me without the name. About a week later my daughter’s birthday present arrived from my mother-in-law. Inside were two arts and craft projects and the exact game my daughter had wanted. It seems my mother-in-law had ordered it before we even saw the game because the gift took about three weeks to come. I told my neighbor what had happened and she said she had the game for several years and had bought it in Canada!

I’VE BEEN TELLING YOU about my job as location manager and nutrition counselor at Nutrition by Tanya, and giving you an inside peek at the day-to-day operations. From what you’ve read so far (assuming you have been following this column) my job probably sounds hectic, exciting and rewarding. And that’s what it is. Most of the time. But every once in a while I have a day that I would consider a really hard day, because I’m… normal! Today was one of those days. Let me walk you through it. Actually looking back, I should have known that today would be a rough one. I went to bed past two a.m. most nights this week, bringing my total sleep intake to about ten hours since last Sunday. (It is Thursday night right now. I think.) I am not one of those people who can function on no sleep. I need at least five or six hours a night to be at least baseline functional, hence my somewhat obvious clue that today would be a rough one. So, I got to work late because I timed my morning wrong, got stuck in traffic and had two clients already waiting for me by my door when I got to my office. Not professional, and very overwhelming. Adding to the chaos was the fact that our Monroe office is currently understaffed because our amazing secretary left us this week to focus on obtaining her nursing degree, and an appropriate replacement has not yet been found. Some staff members are just irreplaceable. When we are short-staffed, I need to stay on top of checking clients out, booking them for their next session, helping them choose products, ringing up sales, answering phones, making copies and printing out plans, keeping the flow of the clients, and tracking all transactions in multiple places for our records — all tasks usually handled by our amazing secretary. Did I mention that she is amazing? So the day was extra busy, and I was extra tired, but what made the day really

hard was a troubling experience that took place. The story actually goes back to last week when a client’s check bounced. Okay, that happens from time to time. But then today, another check from the same client bounced. So I called her up to tell her about the checks, but instead of apologizing and offering an alternative form of payment, she basically yelled at me for bothering her. Eventually she calmed down and told me she would call me back a bit later, which she did not. I followed up several hours later and she refused my calls. I tried using the credit card we keep on file for such situations but the card was declined. Experiences like this are so troubling for me and leave me with overwhelming emotions. I feel sad for the client, because money must be so tight and she must feel so defensive when people call her collecting payments. I feel confused and hurt because she yelled at me for trying to do my job. I feel frustrated because these situations waste precious time and also money, as banks charge us a fee for bounced checks. And mostly I feel disappointed because it is hard for me to convince myself that two bad checks and an invalid credit card were all unintentional mistakes, as much as I would like to be dan l’kaf zechus. When I got home, I took my children out to the pizza store and we all sat around and discussed our day. I like to have each family member share one negative part of the day, as well as one positive one — a technique that keeps them from just complaining all through dinner. When it was my turn, I shared the difficult client experience, and for my positive experience I told my children, and reminded myself, how thankful I am for my amazing secretaries who save me from overwhelming days like today most of the time! So yes, some days are tougher than others. It can’t all be a walk in the park. I think I’m going to take a nap!

THERE IS NOTHING WE CAN ACHIEVE IN LIFE without using our minds. From lifting a finger to climbing a mountain, every action we take in this world originates in the brain. First, we must have a plan — we must conceive the idea intellectually. Then we must carry out our plan — our brain must send signals down to the appropriate limbs, willing them to move in the prescribed manner. When people speak of even the most physical of achievements, such as climbing Mount Everest, they rarely describe the accomplishment in physical terms. You don’t hear expressions such as, “What strong feet he must have!” Rather, we hear words such as discipline, determination, and courage. All of these attributes are of the mind, not the body. The Baal HaTanya notes that the name Rosh Hashanah means head of the year, teaching us that the days of Rosh Hashanah are related to the the rest of the year in much the same way as the head is related to the body. (Likkutei Torah, Devarim) Just as any accomplishment of the body depends on the mind for success, our entire year depends on Rosh Hashanah for success. The vitality we require for both gash-

miyus and ruchniyus for the entire year are drawn down on Rosh Hashanah. The word shanah, which means year, has the same shoresh as the word shinui, which means change. Rabbi Ephraim Wachsman, shlita, notes that Rosh Hashanah takes place on the first two days of the year and not on the last two days of the year. Rosh Hashanah is about moving forward and making a fresh start. As much as we are striving to do teshuvah from the time of Elul through the aseres yemei teshuvah, we must keep in mind the goal of teshuvah: to change in a positive way. How do we draw down the vitality on Rosh Hashanah that we require to live a life full of positive change? Every moment of Rosh Hashanah has direct impact on every day of the coming year, so we must strive to use every moment to its fullest. Perhaps you have seen those women in shul who maximize every moment by not only staying in shul for the entire davening, but by saying Tehillim at every break, when appropriate. One person


might be at a madreiga where they minimize unnecessary conversation on Rosh Hashanah — another person might converse as usual, but aim to avoid speaking lashon hara. Every person must strive to do his or her own personal best on Rosh Hashanah. We are all familiar with the story of the young boy who came to the Baal Shem Tov’s shul on Rosh Hashanah, but he could not read the machzor. All he knew was the aleph-bais, so he spent the day reciting the aleph–bais over and over again, and he asked Hashem to arrange the letters into the words of the davening. After Rosh Hashanah, the Baal Shem Tov announced that this boy’s tefillos had been accepted above all, and had saved Russian Jewry. I once witnessed a similar story. A young baalas teshuvah came to shul on Rosh Hashanah and was deeply saddened that she could not daven in Hebrew or follow the order of davening. At first she sat outside the shul, telling the ladies about her wish to be inside davening. Then, noticing that some young mothers could not go into shul to daven because they had to stay outside shul with their children, she joyously announced that she would watch all the children so that those mothers could go into shul to daven, and that would count as her davening. I wouldn’t be surprised if her “davening” surpassed that of myself and the others present that day. Ordinarily, when a person sets a goal, they are advised to “be realistic” and take “baby steps.” On Rosh Hashanah, it is the opposite. On Rosh Hashanah, we should dream big. We should place no limits on what we hope to achieve or on who we wish to become. For just two days, be the person you would love to be all year round. Demonstrate your true values by living them to your maximum ability. By being as close to perfect as possible on Rosh Hashanah, we create a living portrait of our spiritual potential, and, in the process, we draw down a greater portion of vitality to help us reach that potential in the coming year. Ramapo Ready to Roll Out Welcome Mat for Amazon’s New HQ2

JUST DAYS AFTER AMAZON announced plans to open a second headquarters to accommodate the company’s exponential growth, Ramapo Town Supervisor Yitzy Ullman wrote a letter to CEO Jeff Bezos to suggest a local site for the proposed facility. CNN reported that Bezos expects to hire as many as 50,000 people at the new headquarters, which he hopes to locate in a suburban or urban area with a population of more than 1 million, in a location that “thinks big.” Amazon invited cities and regional economic development organizations to submit proposals for the planned facility, prompting Ullman to reach out to Bezos and to inform him about a 220-acre site

in Suffern that was the former home of Novartis Pharmaceuticals and the Tilcon Quarry, according to the Ramapo Daily Voice. In his letter to Bezos, Ullman described Ramapo a perfect fit for Amazon, noting that other global corporations have called Ramapo home. “If you are looking for a location near a metropolitan area with more than one million people, a stable and businessfriendly environment, a community that can attract and retain strong technical talent and a plethora of transportation and infrastructure options, this is the ideal location,” wrote Ullman. Ullman also said that he is confident that the town can work with Bezos to “prepare a proposal that will leave you no option but to build Amazon HQ2 right here in Ramapo.” While the Novartis site was sold shortly after Ullman sent his letter to Bezos, as reported by The Journal News, the town supervisor said that he is optimistic that he could work with the new owner on the Amazon proposal. Amazon’s first fulfillment center was actually situated in Bezos’ garage, but today the company has facilities boasting a grand total of 150 million cubic feet of storage located in 12 different countries. Amazon currently has 300 million customers and while you might be accustomed to seeing your Amazon packages show up by truck, the company hopes to be able to use drones that can travel 10 miles or more in order to deliver packages up to five pounds in weight by air.

Overnight/Shabbos Roadwork to Close Maple Avenue to Vehicular Traffic GET READY FOR ROAD CLOSURES in the heart of Spring Valley as repair crews get to work replacing a water main that runs underneath the heavily traveled Maple Avenue. The Ramapo Police Department issued an advisory warning area residents that they can expect Maple Avenue to be closed overnight, from 7:00 p.m. to 6:00 a.m., as contractors for Suez Water will undertake the replacement. Maple Avenue will also be closed during the day on Shabbos for the project, which began on September 12th. The first phase of the repairs will be taking place between Howard Drive and Maple Terrace. Detours will be set up in the area to accommodate motorists. The project is expected to take several weeks to complete, according to the Ramapo Daily Voice.

A slice of delicious, moist and flavorful roast is the perfect meat to enhance your yom tov meal. Roasts are simple to make, can be prepared in advance and are definitely festive. The unique preparation instructions are a chef’s secret tip. You’ll never want to prepare a roast differently after sampling the results of this foolproof method. All roasts should be refrigerated for several hours to cool down completely, before slicing. Otherwise slices will fall apart. To heat a frozen roast, warm slices in its sauce or gravy on low heat or place on blech.

SWEET AND SAVORY CHICKEN ROAST If you enjoy serving a creation that’s homemade from scratch, this recipe is worth a try.

INGREDIENTS: 1 3–4 pound dark chicken roast 1 large onion

2 peaches

3 T. oil 1 T. salt

2 cloves garlic 2 nectarines

1 pear

¼ c. tomato paste 3 T. brown sugar 2 T. water

DIRECTIONS: 1. Slice onions and fruity thinly. 2. Saute onion and garlic in oil for 5–10 minutes. Add fruit and saute until soft. 3. Mix with rest of ingredients. 4. On a flat surface, lay a large piece of heavy-duty foil. (You can also lay two large pieces of standard foil side by side, overlapping about 4 inches in the center, and then repeat with another 2 pieces of foil.) 5. Lay saran wrap over foil. 6. Rinse roast in cold water and sprinkle with salt. 7. Spread prepared sauce over saran wrap. 8. Place roast on saran wrap. Tightly wrap saran and foil around the roast, distributing sauce to cover entire surface of roast. 9. Seal tightly, wrapping with additional foil if necessary. 10. Place in pan and marinate for 12–16 hours in the refrigerator. 11. Bake at 350° for 40 minutes per pound of chicken.

VEGGIE FRENCH ROAST This recipe, with its unique method, is my aunt’s specialty and is enjoyed by the extended family and beyond.

INGREDIENTS: 1 3–4 pound French roast or brisket 1 large onion

3 stalks checked celery 1/2 cup wine Oil

3 cloves garlic ½ red pepper

Salt Black pepper

½ green pepper

2 T. sugar

1 parsley root

DIRECTIONS: 1. Finely chop all vegetables. 2. Rub liberal amount of oil, salt, black pepper and 2 T. sugar on the roast. 3. On a flat surface, lay a large piece of heavy-duty foil. (You can also lay two large pieces of standard foil side by side, overlapping about 4 inches in the center, and then repeat with another 2 pieces of foil.) 4. Lay saran wrap over foil. 5. Rinse roast in cold water and sprinkle with salt. 6. Mix chopped vegetables with wine, and place on saran wrap. 7. Place roast on saran wrap. INGREDIENTS: 1 pickled turkey roll 1 onion 4 cloves garlic ½ cup mayonnaise ¼ c. mustard

DIRECTIONS: 1. Chop onion and garlic. Mix with mayonnaise and mustard. 2. Spread over roast. 3. Place turkey roll in baking pan and cover tightly with silver foil. 4. Bake at 350° for 2¼ hours. 5. For best flavors, turn once halfway during cooking.

HOW DID YOU GET INTO THE KAPPARAH BUSINESS? This year marks 40 years since the day I ventured into this line. Having learned hands-on from my father, who dealt with kapparos in New Square, it was only natural that I was approached by the Belzer Beis Midrash in Monsey before Rosh Hashanah of 5738 and asked if I could arrange the chickens for their members. That first year, upon the Beis Midrash’s request, I bought 15 or 18 chickens to serve the members of their shul. By the time the next Rosh Hashanah rolled around and word had gotten out, I was receiving requests from people in the neighborhood and other members of the community, and from the shy beginning, my order grew to 200 chickens. The third year I branched out to include Viznitz shul, and my order that year included over 500 chickens. The next year, when there was a need for more than 1,000 kapparos, it was time to graduate to a full trailer of chickens. From there, the numbers multiplied annually, reaching the thousands that we order today.

WHAT WERE SOME EARLY CHALLENGES YOU EXPERIENCED? In the early years, the entire process, from transporting the chickens until distributing the slaughtered chicken to homes, was entirely in my jurisdiction. We would purchase the kapparos at a chicken market in Williamsburg, “Allstate Poultry,” trans-

port the truckloads to Monsey, and then each night, we would slaughter and kasher the chickens, a daunting, laborious task. Once the chickens were kosher, we’d have to distribute all of them, and quickly, while they were still very fresh. This was often the most challenging of all, finding people who wanted to take the kosher chickens, immediately. As our numbers grew, the amount of hours of physical labor it took to accomplish this task became extremely difficult. To shecht, kasher and then find a home for 2,000 chickens — the volume that passed through our market at the point — was no small feat, and that was the most challenging aspect of the business. After several years, research I was doing led me to a chicken market in Pennsylvania that offered the option of returning the chickens after the shlugging and left the shechting to the slaughterhouse. We switched over, and besides for lightening the burden in so many ways, it was also a lot more affordable to purchase directly from the farm. The Erev Yom Kippur chickens, though, until today still get shechted locally, as there’s no time to return them to the Beis Hashechita. We distribute the chickens to several big area shuls,


where Monsey’s prominent shochtim slaughter the chickens, and we employ a large staff who clean the chickens on Erev Yom Kippur and then pack them in ice. (This is a delicate balance; we need the right amount to keep it fresh, but they’re not allowed to be saturated in water.) The day following Yom Kippur we salt them, and once they’re kashered, they’re available for pickup.

WHERE DOES ALL THAT KOSHER CHICKEN GO? By now, many people and tzedaka organizations know to come by on the day after Yom Kippur to pick them up, and we are so happy to distribute them free of charge. Anyone is welcome to come by and take some chickens. We have a group of heimishe mashgichim who supervise every detail of the process.

Growing up in America, my memories of Rosh Hashanah recall raisin challah , apple wedges dipped in honey, fish heads, pomegranates and tzimis. Up until recently I was under the impression that the simanim largely practiced in Eretz Yisrael were more of a minhag Eretz Yisrael than anything else. I was surprised to discover that that just is not the case. Dates, gourds and black-eyed peas are actually the original minhag, and have predated the well-known custom of dipping apples in honey by centuries. For the purpose of understanding the evolution of the minhag of simanim, I have listed the individual simanim in chronological order, with the earliest simanim listed first and the most recent additions last. However this is not the order that most machzorim use. The Yehi Ratzon on tapucah b’dvash is traditionally listed first, though some people will make the Haetz on the date first since it is one of the shivas haminim. The source for the minhag of simanim is based on a gemara in Masechtes Krisus, daf vav, amud alef. “Abaye taught: Now that you have said an omen is significant, at the beginning of the year each person should habituate himself to eat kara, rubya, karti, silka and tamari. (Translation by The Complete Artscroll machzor.) The nusach of the Yehi Ratzon’s are from Machzor Yesod Hamalchus.

Kara

Kara refers to the gourd family, as is mentioned in Teshuvas Rav Hai Goan Otzar Hageonim Rosh Hashanah,siman 92, amud 52. However, it is not clear exactly which gourd kara refers to. Many are noheg to either use pumpkin or a white, zucchini-like gourd. The word kara is basically a homonym of both the words yikara (will be torn up) and yikaru (will call out).

Recipe: Note: Thank you to Rebbitzen R. Auerbach, daughter-in-law of Harav Shlomo Zalman Auerbach zt”l, for sharing her age-old simanim recipes with us. This kara recipe uses the light-green gourd, commonly referred to in Eretz Yisrael as kara. Cube 7 medium kara and boil in water until soft. Strain the liquid. Add some water to the pot and 3 tablespoons of sugar. Add one spoon caramelized sugar to the pot. (The caramelized sugar should be light beige, not a dark brown like the caramel you would use for Yerushalmi Kugel or cholent. Prepare the caramel by cooking a spoon of sugar in oil until light brown.) Cook the kara in the sugar-water mixture until it is like a compote. My version: Since my family does not like to eat sweetened vegetables, I prefer to add a shredded kara to my zucchini kugel recipe. Note: Kara is similar to zucchini, but with a firmer texture and a more watery flavor.

Rubya

Lubya, which is Arabic for blackeyed peas, is commonly eaten for rubya. The Aramaic word rubya recalls the Hebrew word yirbu, which means, “May they increase.” During the 17th century the Magen Avraham said that one could eat any food whose name indicates many, and so the minhag of eating carrots (mehern in Yiddish) developed. Therefore, the yehi ratzon said on black-eyed peas can be said on carrots as well.

Recipe: Soak 750 grams of black-eyed peas overnight. Check them. Put the beans in a pot with water and a spoon of lightly caramelized sugar and cook for two hours, until soft. My version: Black-eyed peas can also be served in a tasty tomato sauce. Think baked beans.

Karsi

In Eretz Yisrael, karsi is generally understood to be leeks, however, the Artscroll Machzor says that cabbage may be used for karsi as well. The Yerushalmi minhag is to prepare leek patties for karsi. The Aramaic word karsi recalls the Hebrew word kareis, and we ask that our enemies be destroyed.

Recipe: Makes 25 medium-sized patties 2 lbs. leeks

2 eggs

Oil

Flour

pinch of salt

Cut each leek open lengthwise, separate into individual leaves and rinse. Steam the leeks in a bit of oil and water for about half an hour. Strain the liquid and grind the leeks in a food processor. Add eggs and salt. Then add flour, until a firm batter is formed. Wet hands and shape into balls. Fry until golden brown. My version: Check leeks, dice and sauté them until lightly browned. Place sautéed leeks into a mixing bowl with two eggs, ¾ cups matzo meals,1½ tsp. salt and ½ tsp. pepper. Mix and form into patties. Fry in oil until browned. Sometimes I also add sautéed onions.

Silka

Silka is generally considered to be mangold, (otherwise known as Swiss-chard or beet leaves) some people substitute spinach, and others still use beets. Beet leaves also make a delicious patty.

Recipe: makes 25 medium-sized patties 3 packages Gush Katif beet leaves 2 eggs Flour (or matzo meal) Oil Salt Soak the beet leaves in soapy water and rinse each leaf individually. Steam in a bit of oil and water until soft. Strain and grind in the food processor. Add eggs and flour until the batter is firm enough to form patties. Salt to taste. Wet hands, shape into patties and fry until browned. My version: I like to add sautéed’ onions, 1½ tsp. salt and ½ tsp. black pepper to my beet leaf patties. I also find that matzah meal gives the patties more flavor and a better texture. Rebbetzin Auerbach recommends shaping the beet leaf, and leek patties into different shapes so they will be easily distinguishable.

The Machzor Vitry— authored by a talmid of Rashi, Rabbeinu Simchah ben Shmuel of Vitry, and completed in the year 1208 — mentions that for this reason the Jews of Northern France developed the minhag of eating red apples on Rosh Hashanah. Only later, during the Middle Ages, did Ashkenazi Jews combine the minhag of consuming honey and eating apples by dipping the apple in honey, as is mentioned in the Tur.

The minhag of eating a sheep’s head on Rosh Hashanah dates back to the time period of the Geonim and is also mentioned in the Machzor Vitry as being practiced by the Jews of Southern France. FOR THE GALETTE CRUST: 1 cup + 2 tablespoons rye flour 1 stick (4 oz) unsalted butter, frozen 3 ounces ice cold water 1/2 teaspoon salt 1 tablespoon sugar 1 teaspoon apple cider vinegar 1 egg yolk, mixed with water turbinado sugar, for sprinkling

FOR THE FILLING: 1 Bosc pear, washed and sliced 1 pint fresh figs, washed, stems removed and sliced thinly 1/8 teaspoon freshly grated nutmeg 1/3 cup coarsely chopped almonds 1 1/2 teaspoons all-purpose flour 3 tablespoons dark brown sugar 1 tablespoon unsalted butter, softened 1 large egg white honey, for drizzling 1. To make the crust, combine the flour, sugar and salt in a bowl. Use your fingers to cut in half the stick of cold butter until it is the size of peas. Then cut in the other half of the butter, leaving it in bigger, visible pieces. 2. Add the apple cider vinegar to the water and make a well in the center of the flour and butter mixture. Using a wooden spoon, mix the water into the flour until just combined. 3. If the dough seems dry, add more water a couple of teaspoons at a time. Press the dough together, form into a disc and wrap in plastic wrap. Chill the the dough in the freezer for an hour, or in the fridge overnight. 4. Preheat oven to 400º, with a rack in the bottom of the oven. 5. Finely grind almonds and flour in a food processor. Mix in sugar, butter, then the egg white. Blend until smooth. Cover and chill until needed 6. On a lightly floured surface, flour the chilled disk of dough. Begin to roll it out, rolling in one direction at a time. As you roll it, pick it up and rotate it, to ensure that it doesn’t stick to any surfaces. Use flour as you need to. 7. Roll the dough into a 10” circle and trim the edges. 8. Transfer the galette dough to a parchment paper lined baking sheet. Spread the frangipane filling evenly 9. Lay the pear slices out in a circle, slightly overlapping. Between each pear slice, layer two or three fig rounds. Finish until you have completed a circle and pile 3 or 4 small fig rounds in the center. Sprinkle the nutmeg over the fruit. 10. Crimp the edges together. Brush the dough with the egg yolk and sprinkle liberally with turbinado sugar. 11. Bake for 40-45 minutes on the lowest rack at 400º. Cool before serving. Drizzle lightly with honey.


FROM BLANKIES TO BRIDEGROOMS PARENTS SOMETIMES see their little ones attached to babyhood and worry about their future. Some moms go into panic mode when their child is hopelessly connected to a pacifier, fuzzy blanket, etc. and they may become intent on separating the child from the item. The road from little kid to big kid can be tricky and there is no single path

that works for all. As a mother, I have a G-d-given instinct when it comes to my children. I can sense at what age my baby can be weaned off the bottle. I trust my gut feeling to know when my daughter is ready to stop biting her nails. My son might love dragging his blankie around the house, but as his mother, I may recognize

that it is inhibiting him socially. He’s not as focused on his playmates or the game; instead he’s wandering around the house in a cozy, drunken state. I know that for him to interact and utilize his play skills, the blankie needs to be out of the picture. That is a basic guideline I set for myself. When a child is using objects or behaviors to calm themselves down, I will most likely wean them off it only if it is affecting the child’s behavior or interfering with their quality of life. For instance, if a third-grader is sucking her thumb in school to soothe herself but is being teased about it and has no friends, it is truly time to give it up. When a toddler or even a three- or four-yearold uses a pacifier to calm himself, it is not always a must to take it away


from him. I have to be realistic regarding the age and ability of the child to end this behavior and be really honest with myself over the damage versus benefits. When Mommy tells three-yearold Chaim if he stops using his bottle he’ll get an ice cream, it all sounds so magical. He gleefully chucks the old banged-up thing and tucks his hand into Mommy’s for a trip to the ice cream store. But at night, with the chocolate and sprin-

kles now a distant memory for him and only current for Mommy in the laundry room, he may beg and cry for his favorite blue bottle. At his age, Chaim does not have the capacity to process the grand gesture of giving up his bottle for a reward, no matter how hard Mommy insists, “But I gave you the ice cream, it’s in your tummy! You promised!” An attached Mommy will understand when her child is simply not ready. There are no hard and fast rules here or one size fits all. Children may reach these various milestones at different ages according to their capabilities, but it is usually not a lifetime problem. I have yet to see a chosson sucking his thumb or a kallah clutching her stuffed pink duck named Flumpy under the chuppah. My best bet when helping a child let go of a habit is to create a reward system they are willing to work hard for. I might set up a chart of stickers that lead to an ice cream or a new toy. I tell the child, “Every time you wanted to put your thumb in your mouth and you didn’t, you get a sticker on the chart!” Giving a child a penny for the pushka each time they have a victory is also fun. Depending on the child’s level of understanding, I can even brainstorm with him for ideas on prizes and celebrations. The more interested and invested a child is, the harder she will work for the payoff. The goal is not to eliminate an unwanted habit or behavior for life; it is to celebrate each victory for what it is, which will lead to many more. Imagine if a mink coat is dangled in promise to you if you undertake never to yell at your children again. Forever is a long time. Children may get discouraged by the huge obstacle standing in their way. But if I honor

small triumphs and they experience the sweet taste of victory, it makes the goal more attainable. What to do when a little boy or girl does not respond in a textbook fashion? There are times when I do everything right. I can be super patient and the proud new owner of aisle 4 in the toy store. The child seems to understand our little deal fully. But it is just too hard for him. A few sleepless nights and too many power struggles do not seem worth it in the long run. I will tell the little guy, “Okay, Shimmy, you tried so hard, I’m so proud of you! Let’s try again in a few months, okay? Maybe you’ll be ready then.” The child should walk away from this experience knowing he gave it his all and maybe today is not the day he will accomplish this goal. He should be able to take pride in his attempt and comfort in knowing he will have a chance to try again. Most important is that he knows he is not a failure. I never shame, threaten or make a big fuss over a child’s attachment or action no matter how inappropriate it may seem. This just teaches the child to hide it better, instead of correcting the behavior and filling the need another way. I try to catch my child in a moment where she has not given in to her struggle and praise her highly for it. I then watch the kid try to repeat the victory again and again. Most importantly, I always tell my child I love him no matter what, and that together, with Hashem’s help, we can climb any mountain. There are an estimated 1,000 breeds of sheep, and over 50 of them can be found in the United States. These amount to approximately 1 billion sheep worldwide, 5.5 million in the United States. Sheep prefer to graze uphill and into the wind rather than downhill and with the wind.

Sheep have a split in their upper lip that helps them be selective when they pick leaves off plants while grazing. Amazingly, they have the ability to pick out plants with necessary nutrients to cure themselves when ill. This may mean less work for the vet!

If a sheep falls onto its back, don’t assume it’s enjoying a nap in the sun! Sheep can’t get back up from that position.

Sheep have a wide field of vision, allowing them to see almost entirely behind themselves without turning their head. Though they have one blind spot directly behind their head when their head is up, while grazing with their head down, they can see in all directions.

Ewes (female sheep) and their lambs recognize each other by the sound of their bleating, and a ewe will respond to her bleating lamb who has wandered too far away.

Christopher Columbus introduced sheep to America when he crossed the Atlantic for the second time in 1493. He took sheep and other cattle along with him as a “walking food supply.”

A sheep produces approximately 8 pounds of wool each year, and each pound of wool may mean 10 miles of yarn!

For over a hundred years, until 1987, sheep farming was New Zealand’s greatest agricultural industry, and that’s the reason the country has the highest density of sheep per unit area in the world. In 1982, New Zealand’s sheep population peaked at over 70 million, which compared to its human population of just over 3 million; that’s 22 sheep per person!

Sheep have remarkably good memories. They can remember the faces of at least 50 individual sheep and humans for about two years!


After World War II, the demand for wool in the United States declined due to the growing popularity of cheaper synthetic fibers.

Lanolin, from Latin lÄ na (wool) and oleum (oil), is a fatty, waterproof oil derived from sheep’s wool. It is one of the most valuable sheep by-products, used in cosmetics, moisturizers, topical liniments and more.

WHAT IS IT ABOUT PRESIDENTS OF THE UNITED STATES AND SHEEP? A century later, during World War I, President Woodrow Wilson and his first lady decided to raise a flock of sheep on White House lawns to model what it meant to support the war effort. Sheep grazing in the backyard meant less manpower needed for trimming the grass, and the Red Cross would collect over $50,000 from the proceeds of the White House wool. This noble enterprise lasted for two years, until 1920, at which time the Wilsons had had enough of ailing sheep and a destroyed landscape that was feeding a flock of 48.

George Washington raised sheep on his Mt. Vernon estate, and Thomas Jefferson kept sheep at Monticello. Even more impressively, the jacket James Madison wore at his inauguration was woven from the wool of sheep raised at his Virginia home!

As an aside, the most popular White House sheep was a ram (male sheep) named Old Ike. Old Ike was notorious for being rather mean and forceful, and oddly, he liked tobacco and was often seen chewing on discarded cigars.

Real Estate Hurricane Irma’s Lesson AS I WRITE THIS ARTICLE, Florida is being battered by Hurricane Irma. The pictures of the main roads of Florida turning into rivers and the beaches being drained of water defy words of description. What happens to real estate before, during and after a natural disaster such as this? If someone owns a property, they have complete responsibility. If their property suffers water and wind damage or if mold develops because of the water or if debris gets strewn across a property or if their property becomes unfit to live in or if the home needs repairs, whether major or minor, the homeowner is responsible. That is why they, hopefully, have the proper insurance. For whatever damage that is not covered by insurance, the homeowner can apply to FEMA for a grant or a loan, and they may be a candidate to receive disaster aid and relief; but ultimately, the rebuilding, the maintenance of the taxes, mortgage and other costs are the homeowner’s responsibility. If there is a mortgage on the property, we would hope that the home is properly insured. The mortgage company requires homes in hurricane-prone areas to have wind coverage, and if the property is in a flood zone, flood insurance is also required, and therefore the flooding and other damage should be covered. What happens to real estate before, during and after a natural disaster such as this?

sale can’t occur, the attorneys and title companies will be handling these situations. I am sure there will be sales that won’t occur because of damage, and the buyer will most likely be able to back out depending on how his contract is written. There will be homes uninhabitable or with lasting water damage and a homebuyer may just need to move on. What if one is the middle of purchasing a home? If the closing has not yet occurred, the seller is responsible for any damage. Mortgage companies will not close loans until there is a re-inspection by an appraiser to assess any damage that may have occurred. A lender will not close a loan on a home that is not inhabitable. Anyone who wanted to close on a home now, will most likely not be able to close for a few weeks. This poses many problems. What about rate locks? What about homes being sold that are in distress-like foreclosures and short sales that have deadlines? What about people who are moving from other places that have jobs starting and they have given up or sold their current homes? It is a whole domino effect. If one cannot close on their new home, they won’t move from their old home or apartment. Whoever was planning on moving into these residenc-


es, whether as a tenant or a new buyer, will not be able to move so they won’t move from wherever they were moving from and so on. This causes many inconveniences, and I believe everyone will have to just be relaxed and go with the flow, because the delays in closing is understandable and the timing will be unpredictable. Another problem is that the key players in the closing process may be unable to work or may be crippled from the storm damage. The lender, title company, realtors, appraisers etc., their offices may have been damaged and possibly they won’t be able to do their part of the closing. This will cause delays even if the homes in question have no damage at all. A lesson for the readers, reading this article in comfortable, not-hurricane-impacted New York: Let this be a wake-up call. Call your insurance company to review your insurance coverage to make sure you have the coverage needed in the face of any disaster. If you have areas of the home that have been finished, including basements, in-law suites, Pesach kitchens etc. make sure that your insurance company is aware so that in the face of a disaster your home is covered and can be rebuilt.
