RE: “SAFETY ISSUES REGARDING HITCHHIKING” (ISSUE #120) I was surprised and horrified to read the letter written by R.S. on the topic of hitching. How about you view this whole topic from a different perspective? Think of a kollel yungerman rushing in 20-degree weather to be on time for his learning seder. Think of an elderly man trudging through the snow. Think of people walking on the street on a scorching summer day. And what about the countless times these hitchhikers can be mezakeh others to do chesed? The driver, sitting in his temperature-controlled car, can so easily be mekayim the mitzvah of hachnosas orchim!

True, hitchhiking in some dangerous spots is not safe, and both hitchhikers and drivers should be more careful, but to stop this beautiful act of chesed in our community is wrong. There are enough places where hitching is safe and does not interfere with traffic.

And if you find yourself driving behind a “hitched” car, instead of honking impatiently, know that, yes, you’re being kept up for another few seconds, but you are also now part of this great mitzvah!

We should be proud to be part of our wonderful Monsey community that generates so much chesed!

Hello, I would like to respond to the letter from R.S. in last week’s issue regarding safety when hitchhiking.

I must agree that there are several areas in town where it is very unsafe to stop, especially after a turn (though a driver should always be ready to stop after a turn in case there is any unexpected situation, and not necessarily of hitchhiking).

However, I would like to suggest a correction to the statement in the letter. Instead of asking drivers “to stop... offering hitches!” it would be more proper to ask them “to refrain from offering hitches in unsafe situations.”

The NYS law prohibits pedestrians from standing for the purpose of soliciting a ride “in a roadway,” which is obviously considered an unsafe area. Even picking up family members is unsafe in a roadway.

I, personally, as well as other generous Jews, will continue to offer rides at safe areas, off the road, and from parking lots and shuls in a safe and responsible manner.

We inherited from Avraham Avinu midas hachesed and the mitzvah of hachnosas orchim, which was contrary to midas Sedom, “sheli sheli v’shelach shelach” (see this week’s parshah).

A personal suggestion to those offering hitches: In order to fulfill the mitzvah with a good heart and without aggravation, it is not ideal to stop for hitches while in a rush.

Additionally, while already discussing midas Sedom, which is “One benefits while the other one doesn’t miss anything” (zeh nehenah v’zeh lo choser) I would like to bring to attention another situation while driving: Sometimes a car, on a busy two-way street, wants to make a left turn onto a side road (for example, from Rt. 306 to Blauvelt Rd.) and is waiting for the approaching traffic on the opposite lane to clear.

Once the traffic is clear and you now have the right of way to turn left, please wait another two seconds to allow the car from the side road to make a left turn into the busy street. You would certainly be happy when someone does it for you.

MY CLASSMATE WAS FINALLY getting married. She hadn’t been in shidduchim for a particularly long time, but she wasn’t young either. She had always been weak, struggling with a heart issue since she was a baby. After high school, she had moved to Eretz Yisrael, and we, her classmates, wanted to be at her simchah. Since it was financially impossible for all of us to go, we all decided to chip in to buy one airplane ticket. We would then make a goral to send a classmate to the chasunah to represent all of us. A girl named Sara won the goral, but then a classmate who was not included in the goral begged us to allow her to join in and be given the chance to go. We told her she had just come back from Eretz Yisrael and should give someone else the opportunity, but she wouldn’t hear of it. We went to a rav, and he told us to redo the goral in order not to make her feel bad. We followed his instructions and redid it, and the winner once again turned out to be Sara!

CONFESSION: Now that I have been writing this column for several weeks, I want to come clean. I am not naturally the most disciplined person. I am the mother who drives up to the carpool line praying that I am not the absolutely last mom to show up. I am the person who falls asleep with my makeup on, figuring I’ll wash it off in the morning.

I am the one who has over 20 alarms set each day to remind me about things that most people would easily remember to do, such as taking out the office garbage, writing this article, tracking my food or checking my calendar. Yes, I have an alarm that rings to remind me to check my calendar! Don’t make fun.

So how do I stay on top of my game in a job where, when fully booked, I can see as many as 35 clients on a normal day? On the days that I start early or work late, I can be seeing as many as 50 clients or more! And I am not the only one. Most of the nutrition counselors in our nine locations work at a similar pace, though some work only part-time. What this busy (insane?) pace means for me as a self-described non-disciplined person is that I need to be well-rested, well-fed and properly caffeinated. I cannot allow myself the luxury of spacing out for fifteen minutes here and there, because that would translate into providing a less than optimal experience for my clients.

I also need to make sure to keep the passion alive. As you know from my previous articles, I entered this field with a burning desire to help people lose weight, get healthier, and most of all, feel more confident. It is similar to a teacher who is inspired to educate each child and show them love and individual attention. This is what drives me every hour of every day. My worst nightmare would be feeling like my client is just another person on the sched-

ule of the day.

I have always seen each client as a world unto themselves with their own unique personalities, challenges and struggles, and I want to continue seeing them this way. But seeing clients day in and day out, and really caring about each one, takes focus and discipline. So how do I avoid burnout? In short, I take breaks. Lots of them. I take every Thursday off and try to pamper myself a little bit. I take mini vacations several times each winter to restore and recharge. I take looong naps on Shabbos to rest and rejuvenate so I can start the work week refreshed. (Bless my husband’s soul!)

We also do this as a company. Our staff goes out to nice restaurants on a regular basis to just kick back and recharge. When we get together we are like a group of over-excited teenagers.

In the next few weeks, we have a staff weekend planned that combines professional training and loads of fun and relaxation. The work/life balance keeps the passion alive and allows us to continue doing what we love at this intense pace.

I also remind myself that seeing so many clients a day affords me a tremendous amount of experience.

While some nutrition practices may see a complicated case once or twice a week, I see these cases several times a day. PCOS, diabetes, extreme dieters, etc., are all part of what we deal with on a regular basis. This helps me provide advice and guidance that is not only textbook-based, but also based on real-life experience. So when the pace is feeling too intense and I am on my third diet coke of the day (confession number two: I hate coffee), I remind myself that this tremendous amount of experience ends up benefitting my clients in the long run.

PENINA’S HIGH SCHOOL GRADUATION was approaching, and she was growing worried. Penina’s parents had asked her what she wanted for a graduation gift, and she did not hesitate a moment before responding. There was a beautiful pair of gold earrings that she wanted. Desperately wanted. Penina’s parents struggled with parnassah, but they agreed to pay for half if she could save up the other half.

For months, Penina babysat and helped neighbors for a few dollars here and there. It was a week before her graduation when she finally reached the amount she needed. Penina was happily walking down the steps with the money in her hand to go tell her parents she was ready to go get her earrings, when she overheard them talking.

“We just don’t have the money for Sruly’s tutor this week,” said her father. Sruly was Penina’s brother. Sruly had been failing in cheder until it was discovered why: He had a learning disability that made it difficult for him to read.

With the help of his tutor, not only was Sruly finally succeeding in cheder, but his self-esteem had risen as well. He was so much happier and more confident.

“Maybe we can cancel just for this week?” offered Penina’s mother.

“The last time we canceled, the tutor told me that if we keep canceling he will have to take Sruly off his schedule. There’s a lot of demand for his services, and we’re occupying a valuable time slot. But what choice do we have? If we can’t pay, we can’t pay.”

Penina walked into the room at that moment and said, “I apologize for overhearing your conversation, but I want to help. Here’s the money I was saving for my earrings. You can use it for Sruly’s tutor this week.

And you can use the half you were going to pay if it happens again. Sruly’s tutor is much more important.”

In this week’s parshah, Hashem tests Avraham

Avinu to see whether or not he will sacrifice his only son, Yitzchak, as it says, “Vayomer kach-na es bincha es yechidcha… — He said, ‘Please take your son, your only one…’” The Sfas Emes points out that Hashem did not actually command Avraham Avinu to sacrifice Yitzchak — He asked him to. Thus it says, “Please take…”

Hashem was not testing Avraham to see whether he would obey a direct command from Hashem Himself.

Clearly, he would. Hashem was testing whether or not Avraham’s love for Hashem was great enough to make this tremendous sacrifice simply because he knew Hashem wanted him to do so. By adding “your only son,” Hashem made the challenge that much harder.

Hashem was essentially telling Avraham that there would be no more sons after this one. To sacrifice Yitzchak would be to sacrifice all of the generations Avraham hoped would come from Yitzchak — not to obey a command, but simply because it would please Hashem. As we know, Avraham passed the test and did not have to go through with the sacrifice.

Penina’s parents looked at her with shock. Nobody had demanded that she sacrifice her earrings for her brother, but she was willing to do so out of pure love. The very next day, Penina’s father was offered a new position at a higher salary that was more than sufficient to cover the cost of Sruly’s tutor — and Penina’s graduation earrings at full cost.

It is all too easy to fall into the mindset of muttar/assur and forget that we have a relationship with Hashem. The mitzvos are not only Hashem’s commandments for us to fulfill, but His true desire for us.

By doing mitzvos not only because we must, but also to please Hashem, we demonstrate our love for Hashem and elevate our avodah to a higher level — taking it from yirah to ahavah. May we always strive to serve Hashem out of both yirah and ahavah — because that is what pleases Hashem.

Someone who is gluten intolerant will have a variety of symptoms.

Most will have gastro-related symptoms. Many others won’t. That’s why celiac disease goes undiagnosed so often; its symptoms are commonly attributed to a myriad of other causes. Symptoms like indigestion, nausea and weakness, as well as a lack of growth in children are most common. If there is no other explanation for not feeling well or lack of growth in a child, ask your doctor to test for gluten intolerance.

What does gluten do to someone who is gluten intolerant?

The ingested gluten mounts an immune response that attacks the small intestine. These attacks damage the villi, which are small, fingerlike projections that line the small intestine and promote nutrient absorption. When the villi get damaged, nutrients cannot be absorbed properly into the body. That is why a person who is gluten intolerant feels tired or weak. Lack of nutrients also makes it impossible for a child to grow properly.

State Senate Task Force Targets Ticks IT IS A DUBIOUS HONOR, one that New York State would rather relinquish to other locales: having one of the highest rates of tick-borne diseases in the country.

A report released by a State Senate task force on Lyme disease and other tick-borne illnesses indicated that New York’s tick problem was particularly bad this past year, according to The Journal News.

The smallest county in the state, Rockland, has seen a disproportionately high number of cases of Lyme disease in recent years. According to the Center for Disease Control and Prevention, Rockland ranked fourth in the state in the number of reported cases of Lyme disease. The New York State Department of Health said that approximately 8,000 cases of Lyme disease are reported statewide each year.

The state task force is hoping to increase awareness of tick-borne illness and tick bites, including recognizing the signs and symptoms of diseases caused by ticks and encouraging greater testing in illnesses that may be tick-related.

The report also noted that, contrary to popular belief, antibiotics may not cure all cases of Lyme disease.

A statement released by Senator Sue Serino, co-chair of the task force, said that the state needs to step up its efforts to battle ticks.

“It is imperative that the state makes combating these devastating diseases a top priority,” said Serino. “While progress has been made since the formation of the task force, this report provides a much-needed road map to take our work to the next level.”

Orange County Legoland Slated for 2020 Opening IT WILL TAKE $350 MILLION and approximately 17 months, but an all new Legoland theme park is set to open on Route 17 in 2020.

Legoland, which has two other theme parks in California and Florida, had originally hoped to build its first Northeast theme park in Haverstraw, according to The Journal News, but area residents were less than thrilled with the idea of putting a major tourist attraction in their town. With the new park to be located in Goshen, it will still be a relatively close drive for Monsey residents looking for a full-day trip to entertain two- to twelve-year-olds.

A 250-room Legoland hotel will also be built at the site and will have Lego models throughout the property. Trivia questions are planned to be placed in the hotel’s rooms, and guests who supply the correct answers will receive Lego prizes.

The 50-ride park will be open from April 1 through November 1 only, and together with the hotel, which will be open year-round, is expected to generate $283 million in taxes for Orange County over its first 30 years of operation.

Once in 20 Years: What’s the Constitutional Convention All About?

WHILE IN MOST INSTANCES, New York State residents rely on their legislators to propose amendments to the state’s constitution, on this Election Day, voters have the unique opportunity to take matters into their own hands quite literally by voting “yes” on a question that appears on the ballot only once in 20 years: whether or not to convene a constitutional convention.

Known by many as a “con con,” the constitutional convention is a vehicle that gives voters a mechanism to implement changes in the state’s constitution. The three-part process, which was set up as a 20-year cycle in 1846, gives voters the opportunity to decide if they want a convention to be held by answering a question on the back of the voting ballot reading, “Shall there be a convention to revise the constitution and amend the same?”

Only “yes” or “no” votes on the proposal are counted, with blank votes not affecting the final tally. If voters reject the proposal, nothing further can happen until the question is brought to voters again in 2037, but if approved, the second part of

the con con process swings into motion, with voters choosing three delegates from each State Senate district and 15 more at the state level on Election Day 2018. The 204 winners of the statewide vote would meet in Albany on April 2, 2019, to discuss potential changes to the constitution and would have the ability to propose changes to any and all parts of the state constitution as long as they are not in conflict with federal law. The con con would continue until all matters under consideration have been fully covered, with any modifications proposed by delegates appearing on the ballot on Election Day 2019, giving voters final say on whether those changes would become law.

According to the New York Public Information Resource Group watchdog association, New York is just one of 14 states to hold a constitutional convention, and major changes have been made to the state constitution on eight different occasions. Delegates are paid a salary of $79,500, and there is no limitation on what changes can be considered at the con con. Supporters of the process say that

a constitutional convention is an ideal opportunity to update the state’s constitution in keeping with contemporary times, while detractors suggest that those elected as delegates may not be the most qualified to rewrite the state’s governing laws.

A statement released on October 30th

by Agudath Israel of America urged state residents to vote no on the proposal, saying that making significant changes to the state’s convention could jeopardize funding to yeshivos and other religious institutions and could give those with liberal or progressive agendas an opening to contribute to a greater moral decline in New York State. To date, only nine constitutional conventions have been held since 1846. All of the changes proposed at the last con con in 1967 were bundled into a single proposal, which was reportedly rejected by voters because it included public funding of religious schools.

An estimated 1 in 133 Americans, approximately 2 million people, have celiac disease. For these people, eating gluten — a protein found in wheat, barley and rye — triggers an immune response in the small intestine, which over time, damages its lining and prevents absorption of some nutrients.

This intestinal damage often causes diarrhea, fatigue, weight loss, bloating and anemia, and can lead to serious complications. In children, this malabsorption can also affect growth and development.

There’s no cure for celiac disease, but for most sufferers — including those who have a gluten sensitivity or wheat allergy — following a strict gluten-free diet can help manage symptoms and promote intestinal healing. Meticulously following a gluten-free diet can be challenging, and even more so, perhaps, if you live a frum lifestyle. Think of the standard fare served at Shabbos and yom tov seudos, kiddushim and shalom zachors, in addition to matzah on Pesach!

What precautions should be taken when a child’s diagnosis requires a gluten-free diet? How should everyone — from parents and bubbies to neighbors and teachers — deal with these children? Rochel* and Esther* share their personal stories and tips.

Rochel’s Story Two of Rochel’s eight children are gluten-intolerant. About 20 years ago, when her daughter, Aviva* was about a year old, she was diagnosed with celiac and had to be on a very strict gluten-free diet.

Unlike now, there were not many gluten-free products on the shelves.

She was on a gluten-free diet until she was three, and then the doctor said she could go back on a regular diet. When she was about 11, she was retested and went back on the gluten-free diet.

When Rochel’s son, Etan*, was diagnosed with Type 1 diabetes at age 11, the endocrinologist told her it is protocol to test those who have it for celiac. He tested positive.

“At that time, dealing with the diabetes was hard enough, and I was so distraught,” recalls Rochel.

“The endocrinologist was great; he picked up how upset I was and advised us to put the diagnosis aside for now and retest him in a few months since he wasn’t having symptoms. When the doctor said we couldn’t ignore it any more, Etan was put on a gluten-free diet, too.”

Until this day, Rochel makes most suppers naturally glutenfree — for example, she will make chicken or meat and rice or quinoa.

If she makes pasta, she will make both a gluten and gluten-free kind, mainly because the cost of the latter is much more expensive.

“One of the hardest things was when Etan was bar mitzvah age and he was invited to bar mitzvahs,” shares Rochel. “I would get the caterer’s information from the ba’al simchah and call the caterer myself, only because people have no idea what gluten-free really means. I asked what the menu was to find out if there was anything that my son could eat.

“One time, at a bar mitzvah weekend held at a hotel, the caterer assured me that my son would be able to eat most of the dishes for Shabbos dinner, but it turned out that he couldn’t eat the appetizer or the soup,” continues Rochel. “He had to wait an hour and a half until the main course, which he was able to eat, was served. I felt so bad. I learned that I must be more specific and ask about all the courses.”

What advice does Rochel have for

“It’s hard at the beginning, because you feel like you have to work really hard to ensure that your child eats only gluten-free, but you really get used to it,” says Rochel. “It’s very daunting at the beginning, but after becoming familiar with what you can buy, it really becomes so much easier… There is so much available, your family will hardly notice; it’s not as difficult as it was 20 years ago.”

Esther’s Story Esther’s 10-year-old daughter, Devorah*, has been on a gluten-free diet since she was diagnosed with celiac disease at the age of five. Her parents were shocked when the doctor broke the news. She did not have any of the usual symptoms, like doubling over in pain from stomach aches or severe headaches.

“For a while, Devorah was looking very pale,” recalls Esther. “Since I see her every day, I didn’t take note of her unusual paleness until a family member pointed it out. She suggested that I take her to the doctor.

Thinking Devorah was totally fine, I didn’t act on her advice, but one day I started panicking. What if something was wrong with her?”

Esther made an appointment to see the pediatrician the next morning, and he sent Devorah for bloodwork. By 3:30 p.m. that afternoon, the doctor called and urged Esther to take Devorah to the Children’s Hospital in Philadelphia — a oneand-a-half-hour ride from their home in Lakewood.

“When I started asking questions, he told me to leave immediately for the hospital; he would talk to me on the way,” shares Esther. “I was so scared; I had no idea what was going on. While I was driving,

General Gluten-Free Tips • Most stores have a large gluten-free selection; some pizza shops even sell glutenfree pizza.

• Do not toast gluten-free bread in the same toaster that family members use to toast their gluten-containing bread. Even a crumb of bread containing gluten is enough to cause illness in someone with celiac disease.

• Do not prepare gluten-free and glutencontaining foods on the same cooking surfaces and prep areas, and do not use the same common kitchen items such as colanders, dish towels, utensils and baking sheets.

• To avoid mix-ups, use differently colored stickers to distinguish between glutencontaining and gluten-free products in the pantry and fridge, and differently colored utensils.

• Avoid “double dipping” in common condiment jars. Use squeeze containers or label separate jars “gluten-free.”

• Store gluten-free products on the top shelf of the pantry or refrigerator so other foods don’t accidentally cross-contaminate them.

• Don’t buy unpackaged food in bins. The scoops used may have been previously used on gluten-containing foods.

• To ensure cross-contamination didn’t take place during processing, buy glutenfree grains that are gluten-free certified.

• Buy gluten-free flours marked as glutenfree from reputable companies that are more likely to test for gluten.

• Avoid purchasing imported foods. Other countries may not abide by the same gluten-free standards as the United States.

• Vegetables, fruits, meats, dairy, beans and legumes are “safe” foods. For baking,

some gluten-free alternatives are: cornstarch, almond meal flour, potato flour and white rice flour.

• Avoid all canned, frozen food and mixed spices unless marked gluten-free. Even dried grain such as rice or beans can be cross contaminated during harvest or packaging.

• If you are a grandparent of a child on a gluten-free diet, ask the parents to provide snacks, bread and cereal, etc., or have them provide a list of favorite safe foods listed by brand. Keep a backup supply of one of the child’s favorite treats in your cupboard.

• Write letters to your child’s principal, teachers and school nurse to introduce your child and let them know about their food restrictions.

• Don’t let a gluten-free diet keep your children from enjoying fun events and outings with other kids. You want them to see that gluten-free eating is manageable and doesn’t restrict them in any way. Just be prepared in advance with gluten-free food options your child can take along or get at the event.

• Be vigilant of non-gluten served in these venues: home economics class, food craft projects, birthday celebrations, bar/bas mitzvah celebrations, holiday celebrations, field trips, class rewards, etc.

•

Include fun and easy-to-handle glutenfree foods in your child’s school lunch and make sure it is similar to what everyone else is eating so they won’t feel different.

• Beware that some art supplies (e.g. glue, paint, modeling clay) contain gluten.

• Talk with the parents of your child’s closest friends to alert them about your child’s gluten-free diet.

Her platelets were very high, and her hemoglobin was very low. She was tested in the hospital the whole night, and we were dismissed when they ruled out Kawasaki.”

Devorah was put on iron pills for a while. When that same relative told Esther that Devorah still looked terrible, the pediatrician decided to test her for celiac. She tested positive.

“We didn’t put everyone in the family on a gluten-free diet, but we do try to be nice and understanding

of her,” explains Esther, a mother of seven. “If there is a food that she really loves, we try very hard not to bring it into the house. If we can get something similar to it, we ask her if it’s okay. If she tells us that it is something that would really bother her, like knishes, we avoid making it or get a gluten-free version of it. It’s very important to have open discussions and not hide anything from her.”

“It’s very overwhelming in the beginning; it’s important to have somebody for support,” advises Esther. “There is a woman in Lakewood who has been providing tremendous support for me and others for years and years — Gnesha Jaffa.

free. When Devorah was diagnosed, she gave me a list of the main ingredients that I have to be wary of, and I took it to the store. She also told me that it’s very normal for children to get frustrated and angry when first diagnosed.

“In cases where your child doesn’t feel well, be comforted by the fact that he or she will feel better by being on a gluten-free diet,” concludes Esther. “It’s true that it’s hard to stick to it, but you will see a change in your child.”

Gluten-Free Isn’t Always Everything “Sometimes, people respond very well to a gluten-free diet alone, but I find that for most of my patients, there are additional issues that need to be addressed,” says Baltimore-based holistic chiropractic practitioner, Dr. Chana Feldman.

“Sometimes, different areas, such as underlying physical and emotional conditions, need to be looked at, and the patient needs a fuller workup and treatment. They may also need to eat anti-inflammatory types of foods, fish oils and probiotics to help heal up the gut so they can get better.”

• Do not allow Sukkah hopping or mishloach manos candy to be eaten until labels are read. Sort your child’s candy stash into safe and unsafe piles.

Consider exchanging your child’s unsafe stash for a prize, such as a new game or book.

• Prepare a buffet of foods that are 100% gluten-free to prevent accidental cross-contamination at your Chanukah party.

• For Purim, buy gluten-free hamantashen or bake your own. Keep a stash of gluten-free treats to offer your child so he/she won’t feel deprived as all those gluten-containing treats make their appearance.

• Stock up on Pesach’dik products, which are gluten-free, for year-round use, e.g., Panko crumbs, potato starch, Meal Mart frozen knishes, kishka, chopped liver and other items that can be frozen.

• A comprehensive compilation of Halachic guidelines for celiac sufferers, written by Rabbi Dovid Cohen of the Chicago Rabbinical Council, is available: “Celiac: A Guide to Mitzvah Observance,” Journal of Halacha and Contemporary Society 59 (2010), 5-50.

Years ago in my quest to find a solution for my digestive issues, I was advised to try a gluten-free diet. Going glutenfree was life-changing for me, and I was thrilled that my chronic problems no longer plagued me the way they had. I also made many other lifestyle changes, and the benefits I experienced were so dramatic, that it inspired me to become trained and certified in integrative nutrition. As a certified health coach I am dedicated to helping others achieve similar results.

Going gluten-free is not necessary for everyone, but many of my clients need to eliminate gluten even if only temporarily, so I get to answer many questions about gluten all the time. Gluten is a protein found in wheat and many other grains. Gluten-free diets are best known for and identified with people who have celiac disease. What’s

lesser known is that even for people without celiac, consuming gluten can contribute to a whole host of health problems, including chronic fatigue, skin disorders and digestive problems. For many people suffering from these issues, eliminating gluten from their diet can dramatically improve their health.

Today the gluten-free market is

a thriving industry with a variety of products all proudly touting the “gluten-free” label. The health-conscious grab these products off the shelves, assuming that anything gluten-free is inherently healthier than products containing gluten.

This is an erroneous belief.

When you pull a package off the shelf, you already know what’s not in it: gluten. But what is in it? Take a few moments to read the ingredients label on your package of gluten-free cookies. Most often, white flour is eliminated and replaced by starches, sugar and other processed products that have no health benefits whatsoever. Tapioca starch and potato starch, which appear frequently in gluten-free products, can sometimes be as damaging as gluten. They weigh heavily on the glycemic load, can be harmful for people with diabetes and exacerbate any existing digestive problems.

To me, it all feels like a throwback to my days in high school, when “fat-free” dieting was all the rage.

As a teen, my friends and I were completely caught up in the fat-free craze. We assumed that anything without fat must be healthy, and we ate fat-free bars, fat free chips and fat free ice cream. Today, we know better; those fat-free products were laced with chemicals, sugars and other substances that were perhaps even more harmful to the human body than excess fat.

Perhaps the same phenomenon is occurring with the gluten-free craze. After all, not every product that is gluten-free is good for you; some are downright unhealthy.

So what’s the right way to go gluten-free? Ideally, products containing gluten should be replaced by wholesome foods, primarily from plant-based sources. Healthy fats and proteins fit well into this picture. Use grains in their whole, natural form, without processing them into a stripped-down snack version bereft of nutritional value.

I have been following these guidelines for a healthy, glutenfree lifestyle for a long time. And

as a health coach, I’ve guided numerous clients on a gluten-free journey as well. When one of my children developed mono, digestive problems and weakness, I knew that it was important to look at the bigger picture to understand why he wasn’t getting better. My training in nutrition helped me understand the connection between the immune system and mono.

Based on this understanding, I made the decision to take my child down the gluten-free road together with me. Going gluten-free, along with other changes to his diet, helped my son return to health and regain his former energy.

The health-conscious grab these products off the shelves, assuming that anything gluten-free is inherently healthier.... This is an erroneous belief.

When I went gluten-free 12 years ago there were very few kosher gluten-free products available. In the last four years the kosher gluten-free market has exploded. The problem was that I was too educated to even be tempted by most of the gluten-free products on the store shelves. While I wanted to treat my family, including my gluten-free child, to occasional treats and goodies, I knew that most of those products contained at least one ingredient that I preferred to avoid. I felt a bit frustrated; there had to be a better way.

Another challenge for both of us was finding a way to wash and have a kezayis of fresh challah that we could truly enjoy. I responded to these challenges by creating my signature dough mixes.

The first mix I developed was my Oat Dough Mix, which is higher in oats than any other gluten-free bread on the market. It is 55% oats, has no added sugar and contains a smaller amount of starch than any other product. I recommend adding only the best oils for a cleaner, healthier bread product than anything else available.

THE PLACEBO EFFECT I’VE BEEN TOLD by many skeptics that going gluten-free doesn’t actually improve one’s health. When I countered with examples of people who have gone gluten-free and seen improvements, I’ve been waved away by the same skeptics with the dismissive “It’s all in your head!”

This is a well-known argument, referred to in the scientific world as “the placebo effect.” The placebo effect means that a patient who is given a pill will report feeling better, whether the pill contains any medication or is simply a placebo, or sugar pill. Those skeptics who are so dismissive claim that people who experience improved health on a gluten-free diet are simply demonstrating the placebo effect.

While it’s impossible to persuade a true skeptic, a recent mishap with one of my children gave me firm anecdotal evidence to back up the benefits of a gluten-free lifestyle. I accidently packed a spelt sandwich in the lunch box of one of my children who is on a gluten-free diet. He assumed that if I packed a sandwich for him, it was gluten-free, and he ate it on the way to school. Later that morning he called me from school complaining about agonizing stomach pains that had him doubled over in pain, all because of one spelt sandwich he had thought was gluten-free.

Placebo effect? I think not!

IT WAS A ROUTINE WELL VISIT. Well… it was supposed to be a routine well visit. My daughter’s doctor, however, veered away from the script. She ordered some blood work, and one of the things was a screening to see whether my daughter has celiac disease. She didn’t have any symptoms, but since she has Down syndrome and is at greater risk for autoimmune disorders, the doctor checked without telling me. The test results came back positive.

Our next step was to either ignore it or go to a GI (Gastroenterologist). Ignoring it sounded good since she didn’t have any symptoms, but I did the responsible thing and made an appointment. The GI felt bad about how we learned that my daughter has celiac and kept stating that taking her off gluten would mean a major life change. He also did a blood test that looked at certain markers. A week later, he called

Two days later, I was ready to start. I would’ve liked to meet with the principal, too, but she was unavailable. The meeting went as I had expected. The year before I had sent in lunches with her because she had gained too much weight eating the school’s lunches, so we decided to keep everything the same. She would continue to eat the breakfast the school served, but I would send in lunch. I also mentioned that I needed to know about parties in advance so I could send in gluten-free party food. However, the coordinator suggested I just send in something that they could keep in the freezer, which I did. I hadn’t realized they also served snacks, but Hashem was looking after my daughter. I had sent in gluten-free pretzels for when they had a party, and now she ate it for snack instead.

The day she started eating dinner at her afterschool program was the day I went back to making chicken with soy sauce! For Shabbos, I bought glutenfree rolls and stopped putting barley in my cholent.

She was also given gluten-free donuts and crackers to eat while the rest of the family ate mezonos during our breakfast kiddush. I was amazed at the various things I could buy. She definitely didn’t feel deprived.

One of our interviewees for this feature relates sitting at a simcha and being privy to a conversation happening near her. A relative of hers, who was avoiding much of the food at the simcha due to a specialized diet, was being asked by a friend sitting nearby, “Are you seriously off all of that stuff? Do you really believe in all of these ‘things’?”

“I don’t believe in it,” she replied. “It simply works.”

This week, we interview Monsey women, who have each gone glutenfree on their own or for one of their children, for valuable information gleaned through trial and experience.

For the past three and a half years.

What made you go glutenfree?

When my son was diagnosed with celiac disease as a toddler, it was the only way to go.

Which gluten-free bread out there do you like best?

I purchase Udi’s GlutenFree Bread in Costco. My son is quite particular, and he eats his bread only either toasted with peanut butter, grilled with cheese or as French toast.

I’ve found yeast doughs quite a challenge, and I have yet to develop the perfect one. There are a few mixes that my son likes, but he’d only eat the challah fresh out of the oven, so I’m still trying to find something that can last at least until the Shabbos morning seudah.

A friend told me, though, that she finds the gluten-free challah recipe from the Pupa cookbook, which uses rice flour, really delicious. (The recipe doesn’t work well when doubled.)

Are there any tricks you can share when it comes to cooking or baking with gluten alternatives?

I use 1 to 1 Baking Flour by Bob’s Red Mill in place of regular flour in almost anything that I cook or bake, from cheese blintzes to cakes. When I want

to go healthier, I play around with the different gluten-free flours available.

I stay away from storebought products, as I find many of these items use cheaper stuff, like potato starch, and I want my son to have wholesome food.

I find 1 to 1 to be satisfactory in health and great in results.

When I use gluten-free flours, I add vanilla extract to just about anything. And I will usually cut the sugar and oil in the recipe, as gluten-free flours don’t absorb oil like regular flour does. I also like to use cakes that start with a good snow, and that makes up for the substance that wheat flour gives baked goods.

When it comes to cookie batter, I have it sit in the fridge prior to working with it so that the ingredients get absorbed better.

Are there any local eateries that cater to clients with gluten-free needs?

This is one of the many areas where someone with celiac disease differs greatly from one with gluten intolerance. For someone with celiac, the slightest amount of gluten can be unsafe and that’s why we have to be extra careful about cross-contamination and even trace amounts of gluten. Therefore, eating foods without gluten from just any establishment is not an option, as the same dishes, gadgets and ovens are used, and some gluten will be in the food.

I had a wonderful experience at Pita Land, where they change the equipment, put the gluten-free pizza into a separate pan and are very careful to keep it entirely gluten-free, so much that my son, who reacts to the slightest trace of gluten, exhibited no reaction.

What is the most challenging aspect for someone on a gluten-free diet?

I find working things out for my son at cheder difficult.

I send snacks and lunches with my son, but so often, there are other boys — they’re still young — who help themselves to his lunch or snack, or his food gets contaminated with the school’s food in the lunchroom. A rebbe doesn’t see a reaction to celiac disease like they would see a fatal reaction to peanuts, for example, and as such, it is often taken less seriously than other allergies.

Are there any items you use that you want others to know about?

My son likes soft cookies, as opposed to crunchy ones, and Enjoy Life’s mini chocolate chip cookies are a favorite in my home. He also loves Gratify’s pretzels.

I found cooking pasta an issue, since the gluten-free versions easily fall apart, until I discovered Jovial’s brown rice spaghetti and Tinkyada shaped brown rice pasta, which have a great texture.

I use the shaped brown rice for an easy baked ziti that my entire family enjoys: In a 9x13 pan, I place a package of pasta and a jar of marinara sauce. I then fill the empty marinara jar half with water and half milk, and I add it to the pan with another little bit of water. I mix the contents of the pan, cover the surface with pizza cheese and bake it on 400° for just about over an hour.

Some tips while in the food aisle: • Since the FDA is so strict with gluten, I am comfortable that when a product has no gluten ingredients and doesn’t list “May contain traces of gluten” it truly is gluten-free.

• The fact that sugar is allowed on a diet for celiac disease makes it so much easier, as most sweets are really okay, although care must be taken since the

entire licorice line contains wheat.

• Chocolates have to be checked well to make sure they contain no gluten or even trace amounts.

• Not all rice cakes are glutenfree, and they must be checked.

NAOMI: Who in your family is on a gluten-free diet?

4 years Reason for going gluten-free: We were recommended by an expert to take my daughter off gluten, as she was exhibiting gluten intolerance, as well as sensitivities to other foods. Over the years, other foods were slowly reintroduced and she is doing very well and flourishing. So for the time being, we are sticking to a gluten-free diet. Perhaps, one day, that too will be eliminated.

Katz Gluten-Free White Bread.

What do you do regarding challah?

Since we want her to make hamotzi at least on Shabbos, we use Katz Gluten-Free Oat Rolls.

They’re small and two of them work perfectly for a personal lechem mishnah.

Are there any local eateries that cater to clients with gluten-free needs?

Yes, Chai Pizza sells a fantastic gluten-free pizza. We pre-order to make sure it’s available for when we come by. It’s a special treat to

go out with the entire family, and there’s something there for my daughter, too.

What is the most challenging time for your daughter?

When it comes to food-related programs at school, I’m limited in how much I can control. I wish I would be told in advance, so I can prepare appropriately before food-based arts and crafts and treats and celebrations are planned. When I send something beforehand, my daughter has the opportunity to join in, and when there’s miscommunication, it hurts me to see her come home deflated.

Are there any items you use that you want others to know about?

Malt O Meal’s Crispy Rice is gluten-free, and the perfect base for peanut chews. Most glutenfree items, being specialties, are pricey, but this makes a delicious, inexpensive treat for the entire family. For those of you who have WIC, it’s even covered under that program.

I’m also excited about the Glutenwise blintzes, which I find are the only filling blintzes available

that I can send to school without preparation. My daughter loves it and enjoys the cheese blintzes for lunch.

When it came to simchos, it wasn’t easy to sit and look at food that I wasn’t allowed to eat. I had to either bring something with me, or eat at home before or afterward.

I found Popcorners to be an excellent snack and cracker.

Praeger’s herb-crusted glutenfree fish sticks was something I also enjoyed.

At the time I was on a gluten-free diet, I enjoyed Carbolicious’ gluten-free products made of almond flour. (Those should always be checked, as some of their products contain wheat.)

Do you have any tips to share?

I would look out for a ‘“kosher l’Pesach” symbol on products, and knew I was good to go. I’d also stock up on some products that are not available year-round right after Pesach.

What is the most challenging time/occasion for someone on a gluten-free diet?

To sit at a catered meal, and it’s okay to skip the entree and the soup, but when the main dish is served and there’s nothing available in gluten-free, makes sitting at simchos hard.

Were there any items you use that you want others to know about?

For decades, traditional breakfast fare was most commonly warm, oat-based porridges.

The first cold breakfast cereal was introduced to the market in 1863 by Dr. James Caleb Jackson, giving “instant” a whole new meaning.

He baked whole-wheat flour and water, broke it up into pieces, and then baked them again. This cereal, called “granula,” had to be soaked overnight to be chewable in the morning. So much for instant!

When Dr. Kellogg mixed cornmeal and oatmeal into a dough with nuts, and then baked them into biscuits and crumbled them, he called it “granula” too, almost being sued in the process. So he changed the name of his concoction to “granola.”

More than $150,000 and many months of work by General Mills physicist Lester Borchardt resulted in the perfectly puffed, tasty little O’s. It was originally called “Cheerioats,” and was changed to “Cheerios” when Quaker Oats claimed trademark infringement.

The original Froot Loops came in only three colors: red, orange and yellow.

The company recently admitted that all colors, though, are made from the same flavoring concoction, and all taste the same.

These cereals, full of artificial coloring, are actually banned in some countries.

Like so many things that were invented by accident, corn flakes was another wonderful mistake. One day, after cooking some wheat to make thin, rolled crackers, the Kellogg brothers were called away. By the time they returned to the wheat and ran it through the roller, the wheat had flattened into individual flakes. Some time later, they tried the same process with corn, and corn flakes were born. It took a while until sugar was added to the product, and then sales began in earnest, with the cardboard-like taste gone and in its place something palatable and tempting for children.

To promote the cereals as healthy, manufacturers began to add vitamins and minerals. This trend became especially common during WWII, when the government encouraged vitamin and mineral enrichment of foods.

Too much of a good thing is never good, and over the years there were batches of cereals that received an oversaturation of iron. This is in addition to many brands that contain levels of zinc, niacin and Vitamin A that exceed safe levels for children under eight years of age.

What impacted the cold cereal market was when mothers started to work in the 1960s, and in need of a quick breakfast solution, turned to the cereal variety available.

Marketing played a huge role in cereal’s popularity and acceptance as a “healthy breakfast choice.” Many of these boxes are not much more valuable in nutrition than processed and refined grains with way too much sugar. The convenience factor also plays a huge role in its addictive properties: Breakfast is ready in just 30 seconds.

At roughly 30%, cold cereal is the most popular breakfast choice in the busy lives we Americans lead. Interestingly, it is most popular in the Northeast, at 39%, and least popular in the South, at 25%.

Honey Nut Cheerios is the most popular cereal choice to date.

As the world becomes more health-conscious, there are increasing trends in the sales of healthier breakfast cereals and a decrease in sugary cereals.

What scientist call the “Cheerio Effect” is what happens when floating objects are naturally drawn to each other. Pour some milk into your bowl and watch science take effect.

Real Estate Toxic Environments JUST LIKE PEOPLE CAN EXPERIENCE allergic reactions or suffer from painful or chronic conditions that can be alleviated by a change in diet or behavior, believe it or not, sometimes a person can experience chronic illness or feel perpetually unwell due to the conditions within their own home. People are always on the lookout for toxic mold, but what about other toxic chemicals inside and outside of our homes?

This topic brings me back to a conversation I had with a woman who was building a home in South Carolina. It was a “chemical-free home.” The cost was four times the cost of a regularly built home, but because she was concerned about her health — what she ingested, breathed and touched — this was very important to her.

This prompted me to do some research, where I discovered people who suffer from Multiple Chemical Sensitivities.

MCS, as defined by the U.S. Environmental Protection Agency in 2003, is a physical condition where the affected person reports sensitivity or intolerance to a variety of common chemicals, both natural and synthetic, at very low levels. Common irritants include: cleaning agents (bleach, soaps and detergents), paints, varnishes (including sealants, caulks and glues), as well as upholstery, carpet, furniture and cabinetry that have been treated or manufactured with common chemicals such as formaldehyde resins (a known carcinogen), pesticides and other toxic solvents.

• Opt for cabinetry and furniture that use only no-added formaldehyde plywood, particle board and/or medium density fiberboard (MDF) along with low-VOC finishes and adhesives.

• Purchase countertop materials that don’t contain high-VOC glues, resins or other toxic binding agents and can be maintained without the use of high-VOC sealants and cleaning agents.

• Choose untreated natural fibers such as wool, cotton, jute, etc. rather than synthetic fiber materials for window coverings and furnishings.

• Use materials that do not require toxic cleaning agents for routine maintenance.

Unfortunately, home appraisers don’t recognize the added value of a chemical-free home, so although the home most likely would be more appealing to a savvy buyer, the extra costs of these specialized toxic-free products and components would not affect the appraised value, so the return on investment would not be realized.

I personally think that a chemical-free house will be a norm in the future. It’s an idea and way of life whose time has not yet come.
